his month in Our Citizens, we look to the people who produce and peddle this delightful guide that you find yourself perusing with interest and intrigue. We thought we’d put several topical questions to some of the team in light of this month’s goings-on. So here’s a little insight a little mind-grab if you like - of what’s on the minds of the TG Crew…

TG MEDIA There’s always so much going on where we live; whether it’s a new restaurant opening or an intimate must-see gig, we asked the team – what are you looking forward to this October? Rich – “Chas & Dave at Princes Hall on 31st October. Don’t ask me how they ended up on my musical bucket list…” Alex – “Dizraeli & the Small Gods at The Boileroom 23rd October or Martha Tilston, again at The Boileroom on the 25th October. Both absolute musical gems. Well worth checking out.” Amy – “Autumnal walks in the Surrey Hills” Joe – “I am desperate to try out Steak and Lobster in Guildford, but Arthur Brown at the Boileroom will be excellent…” Fiona – “A night at the Volunteer pub in Abinger Hammer, sitting by their open fire enjoying one of the many traditional meals like steak and kidney pudding.”

Not content to rest on our laurels and being firm believers that change can be a good thing, we asked the team – what one thing would you change about the area that you live in? (Spoiler alert – “more independent business” seems to be a recurring theme) Chloe – “More street cafes and riverside cafes and bistros. Also, more independent shops. I think Guildford Borough Council should offer 10% of the retail space in the town centre to independent businesses with a 20% discounted rent and business rates to encourage new trade and local people to become more involved with the town. Also, I would make the little ice cream shop in Stoke Park into a really cute 50’s themed stand that did cakes and amazing hot chocolate in the winter.” Fiona – “I would love to see some more pop up restaurants and more weekend events such as themed markets and music festivals.” Alex – “The return of some semblance of independent businesses that operate on Guildford High Street. I’m pretty sure you can count the number of business’ on less than one hand. And an independent cinema would be a most welcome addition.” Amy – “More independent bars in Woking!” Sam – “More independent retailers selling fresh produce – butchers, fishmongers, green grocers.” Joe – “An independent pub-restaurant in Woking town centre would be a welcome addition.”

OUR HISTORY: A Pig Named Sue by Will Knowlton So we’ve all heard the phrase “pigs might fly”. But, thanks to one Surrey resident who had a penchant for practical jokes, there seems to be some truth in the matter…

L

Charity Spot: Youth homelessness is a huge issue nationwide – but charities like Step by Step in Aldershot are helping to tackle the issue on a local level…

t’s a startling fact that nearly half of England’s entire homeless population are aged between 16 and 25. The clichéd view of the homeless individual as a fifty or sixty-something male is often far from the truth, and young people who find themselves without accommodation are a particularly vulnerable group.

Step by Step works primarily with this age range, providing them with accommodation, training and support. They don’t simply put a roof over the head of homeless youngsters, but instead see through their progression 92% of the clients Step by Step accommodate are stabilised and advance! It’s a telling statistic, and highlights the important of organisations such as this.

Step by Step began in 1987 when a local mother, Bridget Crowther, encountered a man who was homeless and diabetic, and in need of medical attention. “He told us that he was on medication, so we went through the battered brief case that he was carrying” she says. “It was heartbreaking. All his possessions were in that little case. Even a pair of slippers.” The experience haunted Bridget and in December 1992 the Blackwater Valley Accommodation Projects opened a 10 bed hostel. In 2011 Step by Step moved into a new purpose built premises in Crimea Road in Aldershot, helping positive client outcomes to soar.

“We help over 1000 young people each year” explains Gill Butler, part of the Step by Step fundraising team, “and in our building we accommodated a total of 130 young people last year. But for every bed that we

a structured combination of services, young people are offered a bed to sleep in, training programmes to prepare them for when they move into their own flat and, most importantly, lots and lots of support.”

CASE STUDY Stephen is 21 years old. He was born in Ireland, but his father committed suicide when he was just 2. By the age of 13 he was drinking, smoking and taking drugs, including heroin. After 5 years of this, he made the decision to enter rehab. Following that he moved to London, to distance himself from the people he had spent time with and got a job on a building site. When he was made redundant, he ended up homeless. Stephen came to Step by Step at the end of 2013 and quickly progressed. He now has his own bedsit and works at Farnborough Airport. Stephen says “I wouldn’t be where I am today without the support and expertise of the staff at Step by Step”.

What do you most like about British Culture and what do you like the least? It’s hard to define a British culture. I love most everything about these islands. The things I hate are prevalent everywhere, like sexism, so I guess I find it hard to singularly love or hate large groups of people lumped together. The music has been both the best and the worst in the world for sure. Remember the opening ceremony at the last Olympics? Then remember the closing?

How is that scamp, Cartridge Davison, your time travelling sausage dog (from Tony’s ‘Dog of Time’ tour)? Poor bugger has gone blind now. Blind scamp.

What jobs did you have prior to stand-up comedy and what was the worst? Shedloads. Worst, easily working in the pork abattoir sorting guts. Oh and at the royal parks clearing up rubbish.

Tony Law has become one of the most talked about comics in the country in the last few years, thanks to his storming success at the Edinburgh Fringe Festival in 2011 (with show, ‘Got Mr Tony Go!’, winner of the Amused Hi Tony. Don’t mean to be rude Moose Laughter but what are you exactly? Award). His appearance on Nevermind the Buzzcocks shortly after won him a whole new army of fans, rallied by his demented brand of surreal lunacy. And awesome face fuzz.

Canadian? Irish? Scottish? Your accent’s a little all over the place… Well see, what does it even mean? Where are any of us from? My first 19 years were mostly in Canada but also Trinidad. My Dads from Norn Iron, my mum’s Trini. Then I moved to London 23 years ago but I’ve spent about 3 years of that abroad in various places. So I’ve lived longer in London than anywhere else. So now I am from London I guess. Or all of those places.

Do you find it hard to turn off after a gig? Do you ever call family or friends after and just blurt crazy at them? Nope. I’m really buzzing and happy and then I phone my wife for a lovely chat. If it’s been a tough one she teases me which reminds me of reality.

After Glastonbury in 2008, and many festivals since, why do you think young people have taken Chas & Dave to heart? They see the honesty in what we do. We’ve always been there but they’ve discovered us for themselves. I can’t think of a single gig we’ve done where they haven’t been shouting for an encore. And it’s just us, me and Dave. We pride ourselves on being excellent musicians, and we love playing live, so it’s a winning combination. Last year’s album That’s What Happens is an intimate and diverse homage to the rock and roll and skiffle you grew up playing. How did the album come about?

CHAS & DAVE Chas Hodges and Dave Peacock need no introduction. Veteran session musicians in the 60’s and 70’s, the pair struck gold as ‘Rockney’ duo Chas & Last year was your 50th year in the music business and 40 years Dave. Stirring together as Chas & Dave. It’s become part of my life, like eating and sleeping. If I don’t do at least a gig a week, I feel like I’ve missed out on a day’s food or a night’s kip. But it’s nice to be able to pick and choose what we want to do now. In the early days you grabbed absolutely everything, but then it was all worth doing in the end.

As they say in the business: what comes first is the phone call. Which was Warner Brothers asking if we’d do a record. So we went into the studio with a rough idea of what we wanted to do, ended up only doing a few and lot of those other songs were done off the cuff. That’s how magic happens in studio. It was producer Joe Henry who helped create the relaxed atmosphere that really comes across. You clearly love what you do but are there any plans to retire yet? Blimey, no! You only retire from things you don’t like doing, and the older I get the more I enjoy what I do. It’s part of me life. What can the audience expect from your show at Aldershot? In the first half we take you back to the days when we started out, when we were doing the pubs and clubs. One or two of our own songs, the odd obscure rock and roll song and then into the 70s with ‘Gertcha’. Then in the second half it’s Chas & Dave in the 80s with songs like ‘Rabbit’, ‘Ain’t no Pleasing You’ and ‘Snooker Loopy’, interspersed with some of the new songs from the new album. Finally, which of your songs gets the biggest reaction live? They all do. The audience drowns us out, singing our songs at the top of their voices. We have to stop half way and let them take over. It’s absolutely fantastic to think we wrote all those songs that they want to then learn and sing along to.

A bit of background info is in order methinks… Cove Brook Greenway Group is an environmental group in Farnborough which looks after the Cove Brook. Cove Brook drains off the hills west of Aldershot in north east Hampshire and runs north through the area, and is a valuable asset both for people and wildlife. The group seeks to improve the greenway for all and sundry, and is open to everyone. So why not partake in a spooky little quiz, which includes tea and coffee and cakes. Frankenstein South Hill Park, Bracknell 30th October & 5th November Not a clumsy re-hashing of the classic gothic tale but the very famous theatre performances, screened for you to enjoy in all their glory. This Danny Boyle production was a sell-out hit at the National Theatre in 2011, and the broadcast has since become an international sensation, experienced by almost half a million people in cinemas around the world. A perfect Halloween treat… Jonny Lee Miller and Benedict Cumberbatch swapped roles for each performance of Frankenstein and ‘The Creature’ respectively, and to much critical acclaim. The former plays the titular character (NOT his monster – a common mistake) on the screening on the 30th, while the latter takes on the role on the 5th November’s showing. Homemade Halloween Treat

Toffee

Apples This is a really great traditional treat that children will love making during the lead up to Halloween. And you can have some fun by adding multi coloured sprinkles to the apples as the toffee sets.

Method 1

Put your apples into a large bowl 4 at a time and cover with boiling water. Leave for 3 minutes then remove and dry well with kitchen towel. Remove the stalks and push a lolly stick into where the stalk was.

Place a sheet of baking paper next to your hob and stand your apples on the paper.

Put the sugar into a heavy pan with 100ml of water and turn your hob to medium. Cook for around 5 minutes until the sugar has dissolved. Now stir in the vinegar and syrup. Place a sugar thermometer in the pan bring the mixture to the boil until it reaches 140°c.

Turn off the heat and then, working quickly, dip each apple into the toffee making sure that each apple is well covered. Allow any excess to drip off then place each apple on the baking paper to harden. Remember; if the toffee starts to cool down and become too thick simply reheat.

Let the apples cool before eating.

8 apples 400g caster sugar 100ml cold water 1 tsp vinegar 4 tbsp golden syrup 8 lolly sticks (available from good kitchen shops like the steamer trading company)

Large bowl Kettle of boiling water Large sheet of baking paper Sugar thermometer Heavy pan

Tip

Now you have made these glorious sweet treats you may be wondering how in the heck you are going to deal with the sugar stuck to your pan. Simply fill the pan with water and place any utensils you have used in it. Bring to a gentle simmer and the sugar will be dissolved making it safe to dispose of down the sink.

RECIPES: Thank Go

October is here and so surely this is means an excuse to indulge in some classic comfort food. Here we have two recipes for the ultimate in culinary comfort: pie. Both our recipes use pre-made pastry as, to be honest; this wonderful autumn weather is making us somewhat lazy. And anyway, who really knows how to make puff pastry from scratch?

HEARTY MUSHROOM PIE This recipe makes either one large pie or 4 individual pies

METHOD 1.

Preheat oven to 180 C / Gas 4.

Heat oil in a frying pan over medium-high heat. Add the onions and leek and cook until they start to soften. Add the mushrooms and sauté until they are brown.

Add the flour and stir for around 2 minutes until the mixture is well covered. Pour in vegetable stock and stir. Bring to the boil, then cover and simmer for 8-10 minutes until the sauce has thickened.

INGREDIENTS • • • • • • • • • • • •

2 tablespoons olive oil 150g diced onion 125g mushrooms (any variety), sliced 50g button mushrooms, quartered 400ml vegetable stock 1 tsp of wholegrain mustard 1 medium leak, diced 2 tablespoons plain flour 1/2 teaspoon dried thyme 250g puff pastry, thawed if frozen 1 egg 1 tablespoon water

Remove from heat and stir in the thyme and mustard.

Pour the pan contents into a well-buttered pie dish. In a small bowl, whisk egg and water to form an egg wash. Use this to cover the edge of the pie dish then place a piece of pastry you have cut to fit the dish over the pie.

Use a fork to press down the edges and seal the pie.

8.

Use the remaining egg wash to cover the pie and use a sharp knife to create a steam hole in the top of the pastry.

Cook in preheated oven for 40 minutes or until pastry is golden and puffy.

Saute the onions and carrots for around 4 minutes. You may need to add a little more oil if needed.

Add the meat back into the pan along with the herbs and stock. Bring the pan to the boil.

Place the meat into a wellbuttered pie dish. Whisk your egg in a cup and use a pastry brush to cover the edge of the dish with the egg wash. Cut a piece of pastry to fit the top of the pie dish and place it over the mixture. Use a fork to press down the edges to seal the pastry to the dish. Make a steam hole in the centre of the pie using a sharp knife. Brush the lid with the egg mixture.

900g / 2 lbs potatoes, peeled and quatered 1 tsp salt 6 tbsp milk 110g / 4oz butter, cubed Salt and ground black pepper

Boil the potatoes until soft but not breaking up - about 20 minutes.

2.

Drain the potatoes in a colander and put to one side.

3.

Place the milk and butter in the pan used to boil the potatoes, return the pan to the heat and warm gently until the butter has melted into the milk.

4.

Add the potatoes and mash using either a potato ricer.

5.

Whip the mashed potato lightly with a wooden spoon. Season with salt and pepper to your taste.

With winter fast approaching, the gym often gets neglected. If this sounds like you, then take advantage of the local countryside and do what comes most naturally – go for a nice long walk…

When you take a moment to consider the beautiful countryside that surrounds us, it’s really very easy to see the appeal of hiking. Who doesn’t like getting out there and embracing the outdoors, filling our lungs with clean air and blowing the cobwebs out? Remember, just like any exercise, walking or hiking gets the blood flowing and helps the brain release endorphins - and it also has the neat side effect of being really good cardio-vascular exercise. The thing is, hooked by these feelings of happiness, enjoyment and satisfaction, that you’ll soon find yourself heading out more and more to areas that offer a bigger challenge. You may start out just taking a gentle stroll, but believe me you’ll soon find yourself assaulting the challenging walks bridleways of Surrey and Hampshire with renewed vigour. Taking up walking for exercise can sometimes be a little more involved than walking the dog on Sundays, so here’s my guide for beginners to get you prepared and keen to crack on…

GET THE RIGHT KIT One of the best things about walking is that it’s free. There are not many other sports that are open and accessible for every one of all ages and budgets. First off, you need to have the right kit for hiking. But don’t go crazy; Start simply. So, let’s start at the bottom; footwear. I can’t say that hiking boots are the most fashionable of things, or the cheapest, but they will certainly offer the best all-round protection from wet feet and twisted ankles on the paths, bridleways and trails of Surrey. A little rucksack is a must as well, to carry all your maps, spare jumper as well as water and snacks. Also invest in a warm, waterproof coat. We Britons know of this strange thing called the weather and its mercurial persuasions!

PAIR UP And speaking of things changing quickly: If you’re a beginner going out and hiking alone should be something to work towards. If you get lost or come into difficulty having someone with you is really wise. Remember the old adage of two heads being better than one. Safety aside, what better way to enjoy the countryside than sharing it with someone?

YOUR MOBILE IS NOT DEEP THOUGHT

The Boy Scout motto is the right one. Before going out for a hike – regardless of how short or long – it’s really important that everything is ready before you step out of the front door. You’d be pretty miffed if you got to the start of your walk and realised you forgot the map! Having said that, don’t fall into the trap I have and pack your bag for every eventuality; it can be like that wack-a-mole game; once you prepped for one thing, another possibility pops into your head and you’ll soon find you’re carrying weights that Soldiers are expected to. With all that unnecessary weight you’ll find your energy gone and your enjoyment with it.

Mobile Phones are absolutely amazing things and help hikers out on a daily, if not hourly, basis up and down the country but mobiles are often the main reason people get lost in the first place, because they’re relying on smartphone map apps. Smartphone maps are not (and this is entirely opinion here) as detailed as a printed map. For one thing, an Ordnance Survey map doesn’t run out of battery.

FOOD AND DRINK It may sound crazy, but make sure you take snacks and water with you. Walking around you’re dehydrating just like when you run, but you don’t notice it because it’s gentle, relaxing and frankly you’re having fun. The only bummer with water is it weighs a lot so again be careful.

Don’t be put off by the name, they don’t just deal in tents; they have a vast array of walking gear and there’s always plenty to see and do at the shop, including a lovely little café. YOUR LOCAL WALKING CLUB: FARNHAM RAMBLERS Farnham Ramblers was founded in 1962 and have an excellent and varied walk programme that caters for its members who number over 400! They run rolling programmes which are aimed at all ages and abilities. They welcome Non-members. This is a club with a well-deserved reputation as a friendly and welcoming group. TEST DUMMY Clay Pigeon Shooting

I

wanted to try something new and different. Something with, as the French say, a certain “I don’t know what”. We all know about cycling, badminton and tennis, but what other ancient pursuits could there be? Well I decided to try my hand at shooting - or more specifically, Clay Pigeon Shooting. So with a spring in my step and my eyes focused, I headed out… The weather had improved slightly on a Wednesday as I drove up to Bisley Shooting Ground. My companion for the day was another company member who had never handled a shotgun before, so I felt this was an excellent opportunity to see how a comparative old hand (me) would fair against a complete novice. Fate, it seems, is not without a sense of irony… For those of you who are wondering, Clay pigeon shooting

involves the art of shooting at special flying targets with a gun. The “clay” is fired from a trap, and the aim is to hit the target as it sails gracefully through the air. Having equipped ourselves, we stood amongst the pines as John, our guide, took us through some basic safety guidelines and basic stances. Then the fun began… The clay sailed out before me, lazily hanging in the air, almost taunting me. I shouldered my gun, breathed easy and slowly deliberately squeezed the trigger. The gun discharged, my shoulder absorbed the recoil - and the clay? Well the clay kept going, didn’t it? The shooting continued and I found that shortly, most clays met their end. Little Mister Amateur who accompanied me however put Annie Oakley to shame. Beginner’s luck I wished, but really it was down to Johns calm, concise and measured

advice. By the end, we were both shooting well and despite me losing a (silly) competition (that I didn’t really take seriously anyway) we had both really progressed. So why not try it? Clay pigeon shooting is a sport that tests patience, coordination but also gets you outside in beautiful surroundings with friends. The nice thing about Bisley Shooting ground is that they are there to introduce you to the sport, its etiquette and benefits. Boris Karloff Boris Karloff was born in the UK but despite spending most of his career over the pond he came back home to Surrey and having spent his last days in Bramshott and was cremated and interred at Guildford Crematorium. In honour of Halloween we invoked Boris’ spirit to catch up with this iconoclast of Horror Films.

I am an actor, dear boy. HOW DID YOUR CAREER GET STARTED?

I spent my childhood in a big family and was destined to join the consular service, believe it or not. But that was more my brother’s thing. I dropped out of King’s College and spent some time as a labourer on a farm. At a bit of a loss, I soon happened upon acting. I started out by travelling to Canada and dabbling in a few stage plays. The rest is, as they say, history.

I did enjoy playing Isopod in The Five Star Final. Yes, Isopod was interesting. Unscrupulous reporters are still a problem now, I understand. WERE YOU MUCH DIFFERENT FROM THE CHARACTERS YOU PLAYED?

Oh very, it is acting after all. DID YOU EVER FEEL TYPECAST?

No, absolutely not. I was always in control of where my career was going. I enjoyed the realm of the macabre and horrific. But I think people forget I didn’t always play monsters.

I was a little worried the family may be embarrassed by my stage and film career so I changed it. I was wrong as it turned out; they were very proud. WHAT WAS YOUR PROUDEST ACHIEVEMENT?

Every character one plays will always have a special place in one’s heart because ultimately, as an actor, one gives themselves to the character every time. I suppose playing the monster in Frankenstein would be an obvious answer, but…

Well these new-fangled effects are very impressive I must say. I liked the comic spin on things and that Vosloo chap really made Imhotep exceptionally scary in my opinion. Yes, top draw.. WHAT WOULD YOU CHANGE IF YOU HAD YOUR TIME AGAIN?

My dear chap, nothing, absolutely nothing. Everything in life teaches you how to handle the next hurdle.
