I’m newly pregnant and want to work out through my pregnancy. What can I do? Great news mama! For most healthy pregnancies, you can continue working out the same as you did before you became pregnant. As always, you should consult your midwife or doctor before beginning any fitness routine. When you are exercising for two, you must pay close attention to your body and listen to the cues. One good rule of thumb is: you should be able to carry on a normal conversation without being winded, even during aerobic activity. Drink even more water than normal and stay hydrated. As your belly grows, you will be limited on some of your movements and balance can become an issue. Many mothers continue to work out throughout their entire pregnancies, doing anything from yoga and running to swimming. You can do it!

Tips to Get in Shape One of the most commonly asked questions in early motherhood is: “When will I get my pre-baby body back? ” Well mama, I have some things I’d like to say to you.

First of all, you are not alone. Your body may not be the way it was nine months ago, but YOU aren’t the same either, are you? You grew an entire human. You selflessly gave this little creature room to grow and become what he or she is now. You are amazing and perfect just the way you are. Yes, really.

When you are ready to get back to working out, consider trying an exercise class with baby, like mommy and me yoga. There are always other moms who would like to start working out post-pregnancy, so it might be a good idea to organize a stroll and walk day with a friend who can help keep you accountable.

Feel all that self-love and acceptance? Okay! Let’s talk about feeling better about you and practical things you can do to shed some weight and feel healthy and strong. Eating whole, healthy foods is one of the best things you can do for yourself. When you’re at the grocery store, try to stick near the edges, rather than middle aisles. Vegetables, fruit, whole grains, dairy, meat and healthy fats are where you want to spend the majority of your hunger on. Eat when you feel hungry, and eat until you feel full. Good, whole foods like these will give you energy to care for your family and won’t cause you to crash like sugar or caffeine.

Take it easy at first; give yourself time to get back to where you were before your pregnancy. If you are breastfeeding, it’s a good idea to keep an eye on your supply, and if it starts to dip, nurse the baby more, up your calorie intake and if that doesn’t work, try working out less vigorously. As far as what you do to get back into shape, lots of mothers lift, run, swim, do yoga, walk, jog, take group classes and even partake in aerial silks. Do what you love and what makes you feel alive! n

Respect is having a regard for other people and their lives; it is showing those around us compassion and empathy. Children who show respect will find they are successful in all aspects of life. The sports environment is a great place to grow and establish respect. While involved in sports, your child will learn the importance of respecting their teammates, coaches, opponents and spectators.

Opponents: Being kind to those who oppose you can be difficult. This is a skill taught through sports. Your child will learn how to lose graciously and win modestly. They’ll be taught how to be kind to others even when it’s hard.

Spectators: Perhaps even more difficult than learning to respect our opponents is learning to respect those who watch us. Spectators, both for and against a team, can be very negative towards the players. One of the most valuable things you can teach your child is to be respectful even when others don’t show the same respect. You cannot be successful at a sport without respect. In order to progress, an athlete must be open to the suggestions and criticism of his or her coach. Instead of coming up with excuses and tearing down teammates, a successful athlete takes ownership of his or her actions and learns from them. It is for this reason athletes make amazing role models for children. When your child gets involved in sports, they will be around others who got far through respect and hard work. If you wish to encourage respectful behavior at home, you must lead by example. This means that it’s extra important for parents to listen and respect coaches, build up their child’s teammates and congratulate the other team. When you behave kindly and respectfully, your child is sure to follow in your footsteps! n

Sports are important activities that teach important life skills, but they have the potential to create anxiety for many children. A little anxiety is natural when trying something new. Being pushed outside of their comfort zones can create these feelings. The pressure to succeed and be the best will combine to create more difficult feelings of anxiety. If the anxiety doesn’t seem to decrease as your child gets to know their team, coach, and the rules of the game, it can start to become troublesome.

Developing Coordination Through Skating

Whether it’s playing sports or simply walking, coordination is fundamental in your child’s development. It’s never too early or too late to increase coordination. As soon as your child learns how to walk, you can start building this skill. Skating is a fun and effective way to increase your child’s coordination. Skating is something children can start participating in as soon as they are able to walk. Here are some of the things that increased coordination through skating can do for your children:

Teach them to multitask: As parents, many times we think of multitasking as getting dinner made while also

keeping the kids out of the cupboards. However, multitasking can be as simple as learning to roller skate, balance yourself and look where you are going at the same time. Multitasking is a necessary skill, made easier by coordination.

Increase their reaction time: Reaction time is the amount of time it takes the brain to comprehend a situation and prepare the body for what is about to happen. For


example, stopping before you skate into the person in front of you. With increased coordination, the body takes less time to prepare for an event.

Build muscle memory: When you do an activity enough times, you don’t even have to think about it anymore. Tying our shoes or walking around no longer takes as much concentration to accomplish because of muscle memory. When your child gets comfortable using skates, muscle memory will allow help them keep their balance in everyday situations. As your child becomes more coordinated, simple activities will become second nature.

Set them up for a healthy life style: You can burn up to 600 calories an hour by roller skating, and the activity works nearly every muscle group, including your glutes, quads, abs, calves and arms. As coordination increases, not only will your child be able to enjoy a multitude of different physical activities, but they’ll also find these activities less difficult and more fun.

Boost their confidence: There is a certain amount of confidence that comes with being able to do an activity well. Your child’s self-esteem will only increase as their newfound abilities help them excel.

This is the place they can come to feel comfortable and motivated.” Do you have advice for other moms? Jessica: “Walk in the door and take the first step. That’s why we’re here. Sioux Falls didn’t need another gym, but they needed a Koko.”

Why did you want to do the challenge? “I knew back in February. I remember feeling miserable, I hated how I looked, and I was uncomfortable. I decided when I was filling out the application for the challenge that I was going to do this whether I win or not.” Amanda kept to her word, and despite the fact that she was not originally the winner of the Mommy Gets Fit Challenge, she began Yoli and signed up for the gym.

What’s been your favorite part so far? “Clothes fitting better is always a fun part. I feel good, I feel healthy, and I feel strong. I never wanted to be skinny, I wanted to be fit and strong. Feeling strong makes you feel good about yourself.” The clothes Amanda wore for the photoshoot were provided by Paisley Pod. Paislely Pod is a mobile boutique owned by three sisters from Brandon. They travel to vendor shows and events across the area bringing the latest styles.

Some can’t even walk in because they don’t know what to do and they don’t feel comfortable. We have a unique ability to really offer an answer for someone in that position.”

What’s been the biggest challenge? “The biggest challenge is just getting up early, I’ve never been a morning person, I never wanted to be a morning person. But one morning while driving, I realized this is the only time I get to myself and I need to enjoy it. It didn’t take long to get used to it and now I get up before the alarm.”

Do you have a favorite exercise? “I love my really heavy strength days. That’s my all time favorite. I want to lift heavy!” When it comes to gym itself, Amanda says, “I always loved anything that was fast and efficient. This is fast, effective, and only 45 minutes. This is what every mom needs, or dad for that matter.”

What is your favorite healthy treat? “The Yoli protein bars! They are so good! It’s like a cookie, and the kids love them.”

How has your family supported you? “My husband goes in late to work. He sacrifices that time in the morning so I can workout, and my kids are supportive no matter what!”

Do you have any advice for other moms? “I think the biggest thing is just starting. Putting one foot in front of the other, make small changes at first if you have to. Ask for help and ask people to support you. I think that’s probably why I started even though I didn’t win, because I had people willing to support me.” n

Lindsey Uthe is a stay at home mom who runs Brick Photography in downtown Sioux Falls. Lindsay and her husband Jason have two boys, Lucas (5) and Elias (2). In her free time she enjoys taking photos of landscapes and doing art with her two boys.

Terra Roth is also a stay at home mom who sells origami jewelry on the side. In her free time, she enjoys being with her family. Terra and her husband Mike are a busy family with six children. Her oldest is Seventeen and her youngest is three.

When should we get checked? It’s never too early to go get checked. Since only ten percent of our nerves are pain sensitive, we do not see symptoms until they’ve grown into a problem. Through a chiropractic assessment, you’ll be able to spot an issue before it starts causing you harm. According to Dr. Nate DeJong, “Just because you’re feeling fine doesn’t mean you’re functioning fine.” It’s never too soon to get your infant checked out either. The birthing process is very traumatic on a child’s body, especially on the brain stem that starts

What’s my next step when a problem is found? An assessment of the central nervous system can show where bones have shifted and what nerves have unwanted pressure on them. Celebrating Connections Across Generations

Did you know that National Grandparents Day is just around the corner? In 1978, the United States Congress passed legislation proclaiming the first Sunday after Labor Day as National Grandparents Day (this year it falls on September 11). The month of September is also Intergeneration Month, an annual designation to focus on intentionally connecting generations together. What a great opportunity to reflect on why these relationships are so important. According to the Legacy Project, there are numerous mutual benefits for establishing relationships with multiple generations. For children, intergenerational bonds can result in higher self-esteem, better emotional, improved social skills and higher confidence. One study showed that when a child is mentored by an older adult, they are:

• 46% less likely to begin using illegal drugs. • 27% less likely to begin using alcohol. • 52% less likely to skip school. For older adults, a relationship with a grandchild or young friend offers a sense of freedom to experience

What if we all took some extra time this month to celebrate grandparents and all that they represent? Here are just a few ways to connect generations and celebrate older adults:

• Pokémon Go. This game was launched as a smartphone app in July, and as many of you know, is hugely popular among many age groups. Take advantage of this latest fad and encourage the whole family to tag along in the hunt for Pokémon. It’s a good way to enjoy time together, stay active and explore your community! You may also see others out doing the same thing, strike up a conversation and build those intergenerational connections. • G et a ‘living history’ lesson. Challenge yourself and your children to ask questions about the life of a grandparent or older adult. Prepare questions and interview them about their history, experiences and milestones. Most will welcome the opportunity to share their story and will appreciate the interest. You might be surprised to learn something new, too! • E ncourage intergenerational activities at school and daycare. With school starting, there are many opportunities to benefit both age groups through mentorship activities, special projects, field trips, etc. Get involved and recommend intergenerational programming at your child’s school. • O rganize a neighborhood potluck. Expand your social circle and include neighbors of all ages to get to know them better. You might realize you have more in common than you thought! • Volunteer. Statistics prove that 60% of nursing home residents never have a personal visitor. Contact a local retirement community or nursing home and ask about an intergenerational mentorship program. Stopping by for a quick visit (even bringing the family dog with prior approval) may brighten a resident’s day while setting an example for your children as well. Let’s connect with young and old this month to create memories that will last a lifetime! n

We’ve seen breast cancer affect our young friends, daughters and sisters, and with 1 in 8 women affected by the disease in her lifetime, it’s easy to see why waiting too long for your first screening can be a real fear for many women. So what’s a girl to do? Here’s what you need to know: Breast cancer screening is important. Knowing your personal risk is even more important. Just like fingerprints or freckles - every woman’s breast cancer risk is different. Your personal risk factors can include things such as age, family history and diet and exercise habits among others. So talk to your doctor. Understanding your personal health and risk factors can help you work with your health care provider to address any concerns you may have and develop a screening plan that’s right for you. But don’t stop there, it is equally as important to pay attention to your body and know the warning signs of breast cancer. Although the warning signs can be different for all women, noticing sudden differences is

one of the easiest ways you can prevent breast cancer. Any changes including lumps, swelling or pain could be a possible warning sign and should never be ignored. And if you notice any of these changes? Call your doctor right away. Please don’t wait for summer vacation to be over or to be less busy at work. Early detection is the key to prevention! In fact, when detected early, the 5-year survival rate of women diagnosed with breast cancer is over 99%. Now that’s one number I think we can all agree with. It’s called the sandwich generation—those who are raising their own children, while providing varying levels of care for aging parents. As if the never-ending carousel ride of kids’ activities and providing for basic needs isn’t stressful enough, many parents of young children are also providing supports for parents with temporary or chronic health issues. Reclaiming peace and order for your own life is critical. Here are some tips to help you learn how to handle the obstacles and difficulties that arise, along with letting go of some of the guilt, stress and other energydraining emotions that pull you down and make you feel defeated and exhausted.

•R ecognize when your child may (and likely will) act out. They may feel anxious about what’s going on within the family, sad about the changes their grandparents/relatives are

experiencing, feeling ignored because your attention is elsewhere or scared of what’s going to happen. Recognizing that the household stress is the core of their behavior is the first step toward managing that behavior.

• Evaluate: is the situation really a crisis? If not, take a deep breath and prioritize the tasks at hand. Don’t be afraid to make yourself a priority on occasion too!


• Let go of the guilt. Start each day fresh and know that everything you do today is important and matters, even if it feels you did not complete enough tasks from the to-do list. Identify where other members of your family and support system can help - children and parents included! All kids can help in some way. Helping others makes us feel needed and wanted—and that we matter.

• Let others help: Say “yes” to offers of help. Don’t assume family members aren’t able or willing to pitch in—ask directly and specifically for what you’d like them to do. Check at your child’s school. School social workers and guidance counselors can be a good resource for finding assistance and services for your child and family. Try reaching out—what’s the worst that could happen? Don’t forget your faith community, social media contacts, etc.

• Take a look at what you can let go of. If you’re over-committed, you probably aren’t serving your obligations all that well anyway. Relax your standards—perhaps only temporarily—regarding cooking, cleaning, and other household chores. Your family probably won’t even notice.

•R espite: You NEED to take time for yourself to recharge your own batteries. Get together for coffee with a friend, hit the gym, or enjoy some pampering. Check with home health agencies for respite programs. Colleges and universities are another great place to find young people that want work experiences that will prepare them for their future career. Check with pre-med, nursing, or therapy students to provide occasional respite care for your children or parents.

• Enjoy activities together – many can be multigenerational: Going to the zoo, taking neighborhood or nature walks, bowling, doing an instructor-led painting activity, taking cooking classes, doing puzzles, having board game nights, or gardening.

Knowing Your Child’s Risk of

Sudden Cardiac Arrest It’s that time of year when the kids will once again start participating in school sports. Getting a physical is very important before starting these activities, but one thing often overlooked this time of year is heart health. Sudden Cardiac Arrest, or SCA, is a condition that affects 12,500 children each year, that’s 34 children a day! SCA can strike any number of individuals, regardless of age, race or gender, and it happens often without warning. As scary as SCA may sound, it can be easily prevented with early detection. What is Sudden Cardiac Arrest?

• Dizziness or lightheadedness

SCA is a condition in which blood stops flowing to the brain, causing an individual to lose consciousness or display seizure-like activity. If not treated within minutes of this occurring, SCA can result in death.

• Shortness of breath

Should I be worried?

How do I help someone experiencing SCA?

• Family history of heart disease

SCA is genetic and can affect anyone, regardless of age, race, gender, fitness level or overall health. Many parents are concerned with the possibility their child receiving a concussion, SCA is actually the leading cause of death in child athletes. Many times these children never exhibit any signs of SCA until is strikes.

If someone is experiencing SCA, the goal is to return the normal rhythm of his or her heart. The only way to do this is through electrical shock. Quickly find an automated external defibrillator (AED), most CPR classes teach how to use one, and the device itself will deliver automated instructions on how to use it.

Immediate action is key in protecting your loved ones from SCA. These are the signs that someone might be experiencing a Sudden Cardiac Arrest: • Fainting or seizures • Chest pain or discomfort • Racing heart

Dental Emergency Tips More and more children are active in sports at a young age. Let’s face it: Active kids are likely to have injuries. It is important for parents to know how to respond in the case of a dental injury. Coaches, school nurses and team doctors can be very helpful in determining what should be done in the moments immediately following an accident.

First, plan to see your dentist as soon as possible for evaluation and treatment. If a tooth has been broken, collect any fragments that can be located and bring them along to your dental appointment. These pieces can be useful in determining if any tooth fragments have been swallowed or aspirated (inhaled into the lungs). If a permanent tooth has been knocked out (avulsed), the tooth can still possibly be salvaged. Prompt treatment is critical in this case. A permanent tooth knocked out of its socket should ideally be replanted back into place. The tooth should be handled only by the top (white) portion, briefly cleansed under running

water and placed back into its socket with a firm, steady pressure. If this is not possible, the tooth can be stored in milk or the child’s own saliva for a short period of time until a dentist can be seen. Do not store the tooth in water. The best place for the tooth is in the child’s mouth (along the cheek). Any teeth that may have been fractured in the accident, loosened or knocked out will need careful evaluation and long-term monitoring. This can often include radiographs (x-rays), temporary splinting and root canal therapy.

In many cases, medical treatment often becomes a higher priority than dental treatment. However, if you know the teeth and/or mouth have been involved in the accident, keep these tips in mind:

Keep in mind many injuries to teeth can be avoided, or easier to manage, if a mouth guard is worn during sporting events. These appliances can be custom-made by a dentist or purchased over the counter. Contact your dental clinic if you’re unsure what is most suitable to protect your child’s valuable smile! n

Acupuncture is extremely relaxing and is rarely painful. The needles are very tiny and stimulate the body’s own systems to regulate and help restore proper function. It has been shown to help problems as varied as seasonal allergies, joint and muscle pain, sleep disorders, headaches, digestive disorders, depression and anxiety, sciatica and addictive behaviors as well. The ancient theory behind acupuncture’s effectiveness is it helps to align the body’s natural energy flow and promote better health. It makes sense for chiropractors to offer acupuncture as a complimentary service to help naturally balance all of the body’s systems. There are certain protocols used in acupuncture to help with addictive behaviors, such as eating/food addiction. This can greatly help with weight loss, problems with overeating or emotional eating. To re-center the brain through corrective acupuncture, the mind should be able to calm down those excessive thought processes that are going on unchecked. Depression and anxiety can also play into these problems. So the “weight loss”

protocol for an acupuncture treatment includes points to help with those feelings as well. It is a very well rounded treatment, and can have great benefits if the patient is in a motivated state of mind when they start treating.

The side effects from food addiction acupuncture are: fewer cravings, more energy and feeling full faster. So in general, eating less, making better choices when eating and feeling more energized will help you stay active during the program. n

with Snacks and Meals for Kids Parents know the lure of pre-packaged foods — it’s an easy choice on a day packed with events. But as another school year gets started, it’s important to think healthy when it comes to preparing lunches, snacks and dinner for your kids. “Helping our kids eat healthier is important in so many ways but it does take a little bit more time to plan,” said Muna Ashraf, MD, a Family Medicine provider with Avera Medical Group. A healthy diet is key to maintaining a healthy weight into adulthood. Heart disease is the number one killer of men and women in the United States and obesity among children and adults continues to rise. According to the Centers for Disease Control and Prevention, one-third of children and adolescents in the United States are overweight. Not to mention doctors are still discovering just how close the link is to what we put in our bodies and how it makes us feel both physically and mentally, Ashraf said.

A balanced diet for children should include a range of the food groups — protein, grains, dairy, and fruits and vegetables, with a heavy emphasis on vegetables. It’s also important to stay hydrated with milk and water but to limit sugary drinks like juices and soda. The first step is making healthier choices available instead of go-to snacks such as potato chips. To make things easier, Ashraf recommends planning ahead for healthier meals: • Create a meal plan for the week • Cut up fruits and veggies for snacks and meals


• Prepare healthier treats ahead of time

Ashraf said it’s best to make gradual changes in your family’s food options — they may be surprised to come home and find none of the usual snacks in the house and a fridge full of veggies. While it’s OK to have treats on occasion, Ashraf said to always have healthier options available. If parents serve up cut vegetables and fruit, those will get eaten, too. If your kids are averse to anything green, try incorporating vegetables into the main dish (adding veggies to spaghetti sauce or chili) or adding greens or other veg-

I have put in easily a 12 hour day on one single task, and my house is a disaster, the laundry barely caught up, and we had frozen pizza and green beans for supper. And the green beans were just an afterthought since one of my jars didn’t seal for me earlier today. I sometimes find myself forgetting how much work truly goes into canning and preserving the garden. Farmers manage their fields just like you manage your garden, but on a larger scale. They provide their crops with the necessary nutrients to grow and protect them from outside competition. They follow guidelines set forth by the USDA, EPA and FDA every step along the way from field to your table, so you can have confidence that any food choice you make is going to be a safe one. About day four of picking green beans from my garden, I was totally trying to remind myself of how much I love having garden produce in the winter. I was so excited to finally get canning and freezing. But, picking in the garden is hard on your back and your knees. Once I spend an hour getting my beans for the day, I spend another hour at the sink washing them and snapping

them and getting them ready for hot jars and for cooking. As I spend my time in the garden swatting bugs and then carting in all my goods into the kitchen, I can’t help but appreciate those who did this whole process years and years before me. Not because they wanted to, like me, but because they had to. In 1960, one farmer raised enough food to feed 25 people. Today, a farmer raises enough to feed 155 people. My kitchen is perfect for canning. Lots of counter space, a working stovewith four burners, a dishwasher that is perfect for sterilizing jars, top of the line canners. Not to mention having an amazing shelving system in my basement for perfect, easy, accessible storage. And running water right at my fingertips. The process for canning is easy in my kitchen. It amazes me how far along technology has come, and how easy it has made our lives. The agricultural advancements never cease to amaze me. As farmers we have come so far; far enough that I don’t really have to can if I don’t want to. And for the most part it is a lost art. I don’t have to grow a garden if I don’t want to. I certainly don’t have to spend hours upon hours canning all that garden produce in my kitchen.

How lucky are we that these advancements have been made? That it is easy for us to drive to the grocery store and have fresh, affordable foods right at our fingertips. With new technology, farmers can grow more food with fewer resources. Today’s farmers have cut fuel use and soil erosion, and are more sustainable overall than farmers of the past. I encourage anyone to try canning. It’s a great way to preserve that garden or to take advantage of yummy fruit trucks in your area! The whole process can seem a bit intimidating, but it really can be worthwhile. Plus there is a sweet, sweet feeling of satisfaction when you are all finished for the season and your shelves are full. BLACKBERRYCHIPOTLE Jam

Ingredients

• 5 1/3 cup blackberries (1 1/2 pounds) • 1 1/4 cup onion, finely chopped • 2 medium tart green apples, cored, peeled and finely chopped • 1 cup red vinegar • 3 to 4 tablespoons finely minced chipotle peppers in adobo sauce • 2 tablespoons Worcestershire sauce • 1 teaspoon kosher salt • 1 clove garlic, minced • 4 1/2 cups granulated sugar

Directions Wash empty canning jars in hot, soapy water. Rinse jars thoroughly. Put jars in boiling-water canner with enough water to completely cover the jars. Bring the canner water to a simmer (180 degrees). Do not boil. Keep jars in simmering water until needed. Set screw bands aside. They do not require heating or sterilizing. Place lids, the flat, small portion of the two-piece jar closures, in separate saucepan, cover with water and bring to a simmer (180 degrees). Do not boil. Keep lids hot until ready to use.

In a large saucepan, combine blackberries, onion, apples, vinegar, chipotle peppers, Worcestershire sauce, salt and garlic. Over medium-high heat, bring to a boil, stirring occasionally. Reduce heat, cover and simmer until berries soften, 12 to 15 minutes. Stir in sugar. Boil gently, uncovered, over medium heat for 20 to 25 minutes or mixture is thickened and sheets off a cold metal spoon. Stir frequently during last 10 minutes, mashing if a uniform texture is desired. Ladle into jars, leaving 1/4-inch headspace. Wipe rim with a clean, damp cloth. Put on lids and bands. With jar lifter, add jars to hot water in canner. If necessary, add more water to cover jars with 1 inch of water. Cover and bring water to a boil over high heat. Process 10 minutes. Remove jars and place upright on a towel to cool. After jars cool, check seals by pressing middle of lid with

finger. (If lid springs back, lid is not sealed and refrigeration is necessary.) Let stand at room temperature 24 hours. Store unopened jam in cool, dry, dark place up to 1 year. Refrigerate opened jam up to 3 weeks.


Lemon Sour Cream Pie Ingredients

Directions In a large saucepan, whisk together sugar and cornstarch. Gradually add milk and lemon juice, whisking until smooth. Place over medium-high heat and cook. Continue to stir until thickened and bubbly. Reduce the heat to low; continue to stir 2 minutes longer. Remove from heat. Remove a 1/4 cup of hot mixture and place in a small bowl with lightly beaten yolks. Whisk together, then return egg mixture to the pot. Bring filling to a gentle boil and cook for an additional 2 minutes. Remove from heat and stir in butter.

Allow to cool without stirring at room temperature for about 45 minutes. Stir in sour cream and pour into the baked pie crust. Chill completely in the fridge for at least 3 hours. Whipped Cream Cheese Topping • 4 ounces cream cheese, softened • 1/3 cup sugar • 2 cups heavy cream • 1 teaspoon vanilla

Directions In a stand mixer, whip cream cheese and sugar together until smooth. Stop the mixer. Using a spatula, scrape the bowl periodically. Gradually, add the heavy cream and vanilla and continue whipping. Again, periodically stopping the mixer and scraping the bowl to pull all the cream cheese into the heavy cream. Continue to whip at a high speed until all combined and light and fluffy. Spread whipped cream cheese topping over the chilled lemon filling. Garnish with thin lemon slices, if desired.

CORN AND BLACK BEAN Salsa

Ingredients

• 5 pounds ripe tomatoes • 2 (15 ounces each) cans black beans, rinsed and drained • 4 cups fresh sweet corn (or thawed frozen corn) • 1 cup onion, chopped • 1 cup fresh cilantro, chopped • 1/2 cup white vinegar • 5 cloves garlic, finely chopped • 4 jalapeno peppers, seeded and finely chopped • 2 teaspoons kosher salt • 1 teaspoon ground pepper

Directions

Peel, seed, core and coarsely chop tomatoes yielding about 10 cups tomatoes. Combine tomatoes, black beans, corn, onion, cilantro, vinegar, garlic, jalapeno peppers, salt and pepper in a large saucepan. Bring to a boil. Reduce heat to medium and simmer for 20 minutes, stirring occasionally. Ladle hot salsa into hot, clean, sterilized pint canning jars, leaving a 1/2-inch headspace. Wipe jar rims and adjust lids. Process in a boiling water canner for 15 minutes. Remove jars and cool. Refrigerate after canning.

This profit is subject to capital gains taxes, so a dollar earned is a dollar minus capital gains tax. Real estate’s profitability, on the other hand, comes from an increase in value, cash flow, principle reduction (when a loan is used), and depreciation (tax benefits). Because of the tax benefits from depreciation, dollars earned from real estate are worth more than dollars earned from your job or the stock market. In addition, the ability to use other people’s money for the purchase of real estate, i.e. a loan, gives a better return on your cash investment.

But you don’t have to become a TV-free house to protect your family. By taking these simple precautions you can help protect your child. #1 Secure Flat screen TVs produce a great picture, but the design also creates a tipping hazard when placed on a stand. Mounting these TVs to the wall puts them out of a child’s curious reach. Follow the manufacturer’s instructions accurately when installing a wall mount. Also, select one that has a safety certification by an independent laboratory, such as UL, CSA or ETL. If your TV is larger and heavier, make sure it is placed on a low, stable piece of furniture designed to hold a TV.

#2 Anchor TVs are not the only items that can cause problems. Shelves and other furniture pieces can easily be pulled down or tipped over by children. Be sure to secure these items to the wall using brackets, braces or wall straps. These devices are usually fairly inexpensive and easy to install.
