Her journey through Sydney's vibrant restaurant scene honed her skills in Turkish, Middle Eastern, Argentinean, Greek, and Mexican cooking. Chef Alex’s Maldivian adventure began on the local island of Maafushi, followed by her role as Chef de Cuisine at Lux North Male in 2021. Her exceptional talent and dedication led to her promotion to Executive Sous Chef at Jumeirah Maldives Olhahali Island in 2023. This month, she delights us with her recipe for Local Reef Fish en Papillotte, showcasing her passion for culinary diversity (p22).
Lastly, in “Frankly Speaking,” our industry stakeholders share their perspectives on how experienced and educated professionals play a crucial role in expanding and promoting the Maldives tourism sector globally. They discuss the strategies needed to attract and retain such talent within the industry (p23).

Malhufathi Raalhaaelhun highlights the deep-rooted connection between Maldivians and the sea, showcasing how surfing has been an integral part of Maldivian culture long before the term "surfing" existed. Historical research by Sikkagey Dhon Manikufaanu from the 1930s reveals that both men and women were avid surfers, using Malhufathi, thin wooden boards, to navigate the waves. This tradition persisted into the 1980s, with children learning to surf and develop a profound bond with the ocean. While Tony Hussein is often credited with introducing standing surfing, older Maldivians recount that this skill was already present among some gifted individuals in the islands, even without a specific term for it.
RACL Unveils Ambitious Expansion Plans for Maldivian Domestic Airports
Regional Airports Company Limited (RACL) has announced ambitious plans to expand several domestic airports across the Maldives. With 80% of the runways slated for significant enlargement, RACL aims to bolster connectivity, enhance economic prospects, and elevate the nation's air travel infrastructure.
RACL’s Chairman, Ahmed Nasif, elaborated on these expansion plans during a recent appearance on a SanguTV program. Nasif outlined the initiative to extend runways by 1,500 to 1,800 meters at airports currently
under development. This effort comes as a response to the limitations posed by the existing runways, many of which are as short as 800 to 900 meters.
"Many of the Maldives’ domestic airports were initially designed to meet minimal requirements, which significantly limits their capacity and potential," Nasif explained. He emphasized the urgency of runway expansion, warning that failure to do so within the next 20 to 30 years could result in substantial economic
setbacks. The Maldivian government’s aviation policy now mandates that runways must be capable of accommodating Dash-8 class carriers as a minimum standard. Meeting this requirement is seen as essential for sustained economic growth.
Despite facing criticism for its focus on domestic airport expansion, Nasif staunchly defended the initiative. "Accessible inter-atoll transportation within 20 to 30 minutes is vital for the Maldives’ socio-economic fabric. It’s a lifeline for communities and a
gateway for tourists," he stated.
Nasif highlighted that airport development should not only serve to enhance transportation infrastructure but also act as a catalyst for economic growth, job creation, and tourism. "It’s not just about concrete and tarmac; it’s about prosperity," he said, advocating for policies that synergize economic development with infrastructure upgrades.
Further cementing the commitment to improved connectivity, President Dr. Mohamed Muizzu recently announced the development of new airports in Shaviyani Dhiguveli, Shaviyani Milandhoo, and Haa Alif Dhihdhoo, alongside an international airport project in Gaafu Alif Vilingili. A memorandum of understanding with the contractor has been signed, setting these projects in motion.
These expansions are expected to not only improve transportation and accessibility but also stimulate economic activities and foster growth in tourism, further strengthening the Maldives' position as a key destination in the region.
SFD and Maldives Sign $100 Million Fund for Velana International Airport Expansion
In a significant move to boost the Maldives' aviation infrastructure, CEO of the Saudi Fund for Development (SFD), Mr. Sultan Al-Marshad, signed two development loan agreements with the Minister of Finance of the Republic of Maldives, H.E. Dr. Mohamed Shafeeq. The agreements, worth $100 million, will finance the Expansion of Velana International Airport Project. The signing ceremony was attended by the Kingdom of Saudi Arabia's Ambassador to the Maldives, Mr. Matrek Aldosari, along with officials from both sides.
During the ceremony, Minister Shafeeq expressed his gratitude for the continuous support from the SFD, highlighting the importance of the additional $100 million loan for the expansion and upgrading of Velana International Airport.
The agreement is aimed at expanding Velana International Airport to accommodate up to 7 million passengers annually. This project will not only enhance the airport's capacity but also improve the efficiency of air cargo services, supporting the socio-economic growth of the Maldives. The development loan builds on the SFD's longstanding commitment to the Maldives, with previous loans since 1978 totaling $225 million, all directed towards constructing and upgrading the airport's infrastructure.
Mr. Sultan Al-Marshad remarked on the strategic importance of the project, stating, "This expansion is crucial for meeting the growing demands of international tourism and trade in the Maldives. It reflects our commitment to fostering sustainable
development and economic growth in our partner countries."
The Velana International Airport Expansion Project is expected to bring significant economic benefits to the Maldives by increasing tourism capacity and facilitating smoother, more efficient air travel. This development aligns with the broader goals of enhancing connectivity and promoting economic resilience in the region.
JOALI BEING and Olive Ridley Project Introduces New Raa Atoll Sea Turtle Rehabilitation Centre
JOALI BEING, the first wellbeing island of its kind in the Maldives, stands out from the crowd of luxury properties in the region with its focus on wellbeing and nature, preserving and protecting a place that the team loves the most by shining the spotlight on sustainability. In partnership with the Olive Ridley Project (ORP), JOALI BEING welcomes the new Sea Turtle Rehabilitation Centre in Raa atoll, based on the island.
With sustainability and conservation at its core, JOALI BEING has created several initiatives and partnerships to maintain the preservation of nature and the surrounding landscape. In November 2021, JOALI BEING and the Olive Ridley Project officially joined forces in a partnership aimed at safeguarding vulnerable sea turtle populations in Raa Atoll. This collaboration involves advancing sea turtle research within the atoll, conducting educational outreach tailored for both international tourists and local communities, and the establishment of a dedicated rehabilitation facility at the island to care for sick and injured sea turtles.
In partnership with the Olive Ridley Project, JOALI BEING is proud to welcome the first turtle patient at the new rehabilitation center, named Kurangi. Kurangi is a juvenile Olive Ridley turtle that was found entangled in a ghost net in Shaviyani atoll in August 2023. She was admitted to the Olive Ridley Turtle’s Marine Turtle Rescue Centre, due to injuries to both of her front flippers, with severe damages to the left flipper that required amputation. Following eight months of specialized care from the Olive Ridley Project’s veterinary team, Kurangi made a remarkable recovery from her injuries. Despite her progress, she continues to struggle with buoyancy disorder and is currently undergoing rehabilitation to address this ongoing challenge.
About Raa Atoll Sea Turtle Rehabilitation Centre Serving as a step-down facility of the Olive Ridley Project’s Marine Turtle Rescue Centre in Baa atoll, the new Sea Turtle Rehabilitation Centre in Raa atoll at JOALI BEING is used for the rehabilitation of long-term sea turtle patients who are not in need of the intensive veterinary
care received at the rescue centre. Sea turtle patients will be transferred here from the Olive Ridley Project’s Marine Turtle Rescue Centre when they are nearing their release back to the ocean after treatment by the veterinary team. During their time at the Raa Atoll Sea Turtle Rehabilitation Centre, patients will continue to receive care from the resident Sea Turtle Biologist, Mohamed Shah, under
the direct supervision of the Olive Ridley Project’s veterinary team. Shah previously worked as a marine biologist and did his internship at the Olive Ridley Project’s Rescue Centre where he cared for sick and injured turtles. Currently, Shah is expanding the Olive Ridley Project’s research efforts in Raa atoll as well as conducting educational activities for both guests and the local community.

Alila Kothaifaru Maldives welcomed Dwi Kumalasari to its leadership team as Director of Sales & Marketing. Hailing from Surabaya, Indonesia, Dwi brings with her nearly two decades of experience in the hospitality industry and a career path spanning Indonesia, Malaysia, and the UAE. From foundational roles in Food and Beverage, Dwi transitioned to coordinating and managing events, which ignited her passion for more challenging roles in the field of Sales and Marketing, where she has proven her mettle.
Along the journey, Dwi has built a track record of expertise at numerous esteemed luxury properties, including Banyan Tree Bintan, Banyan Tree Ungasan Bali, Intercontinental Bali, Four Points by Sheraton Bali Kuta and Le Meridien Bali Jimbaran. SO/ Maldives Appoints Kam McManamey as Director of Culinary
SO/ Maldives has announced the appointment of Kam McManamey as the new Director of Culinary.
Born in Australia, Kam is trained in Melbourne’s renowned two-hat restaurants, specializing in contemporary Thai, Vietnamese, and Laotian cuisine. His career journey has seen him working in top-end restaurants across Melbourne, Tokyo, Auckland, Adelaide, and Tasmania. For the past seven years, Kam has dedicated his expertise to luxury and premium hotels, holding prestigious positions at Accor, TFE Hotels, and now Ennismore. His most recent role was at a five-star Accor hotel in Adelaide, Australia.
Outside the kitchen, Kam enjoys surfing, savoring fine food, hitting the gym, and immersing himself in electronic music. His diverse interests and dynamic background contribute to his innovative
culinary style and leadership approach.
Expressing his enthusiasm for joining SO/ Maldives, Kam stated, “I feel incredibly fortunate to align myself with a brand with such an excellent reputation and high standards. Legendary NYC DJ Bert Bevans Takes Up Residency in Ifuru Island Maldives as Inhouse Resident DJ
Ifuru Island Maldives has just welcomed the legendary Bert Bevans as their inhouse Resident DJ who will be spinning his tunes for the next 2 months on the island.
The Belize born DJ grew up in NYC where he moved to as a child and has spent a huge part of career playing across the globe. He has DJ’ed in Playboy NY, Studio 54, Xenon’s, Pippins, Bonds, New York, New York, Le Circus, and has worked in promotions for Prelude Records New York before moving to London where he held residencies in Annabelle’s, Embassy Club, Xenon’s, and Camden Palace. During his time in London, Bert joined Justin Berkmann & Humphrey Waterhouse to create “Ministry of Sound” where he was a resident DJ as well as was one of the pioneers of the music label “Ministry of Sound” He has also worked with a number of well known artists such as Kathy Brown, Sheree Hicks, Paul McCartney, Red Hot Chilli Peppers and various others.
40 years on and he continues to wow crowds worldwide with his sets of
classics and bona fide house music.

MATI Shows Full Support for EPA's Measures to Combat Coral Bleaching Crisis
In a concerted effort to safeguard the Maldives' marine ecosystems, the Maldives Association of Tourism Industry (MATI) has thrown its full support behind the Environmental Protection Agency's (EPA) proactive measures to combat the devastating effects of the ongoing mass coral bleaching event.
The EPA's decisive action, as outlined in its recent press release dated May 9, 2024, involves the implementation of stringent measures aimed at mitigating the detrimental impacts of coral bleaching. These measures include an immediate suspension of all major coastal development projects and activities until June 10, 2024.
Among the activities temporarily halted are land reclamation, dredging, beach nourishment, sand pumping, installation of pipelines and cables on reefs, and construction of bund walls. By suspending these activities, the EPA aims to minimize disturbances to fragile coral ecosystems and facilitate their natural recovery processes.
In response to the EPA's directives, MATI is calling upon all its members and stakeholders within the tourism industry to wholeheartedly cooperate and comply with the prescribed mitigation measures. Recognizing the severity of the current coral bleaching event, experts have identified it as one of the most severe on record, underscoring the urgent need for concerted action.
The Maldives, renowned for its breathtaking coral reefs and marine biodiversity, attracts millions of tourists annually, making tourism a vital component of the nation's economy. However, the escalating threat of coral bleaching poses a significant risk to both marine biodiversity and the tourism industry, highlighting the urgency of collaborative efforts to address this pressing issue.
As the Maldives continues to grapple with the impacts of climate change, including rising sea temperatures and ocean acidification, proactive measures such as those implemented by the EPA are essential for safeguarding the resilience and vitality of its marine ecosystems.
Local Reef Fish “en Papillotte”
Chef Alex, originally from Sydney, Australia, was born in a multi-cultural wonderland with access to cuisines from around the world and exceptional produce. She gained experience in numerous high-end Sydney restaurants, specializing in Turkish, Middle-Eastern, Argentinean, Greek, and Mexican cuisines. Chef Alex ventured to the Maldives, initially working on the local island of Maafushi before joining Lux North Male in 2021 as Chef de Cuisine. Recognizing her culinary expertise, she was later promoted to Executive Sous Chef at Jumeirah Maldives Olhahali Island in 2023, where she continues to share her passion for diverse cuisines.
Inspiration:
This "en Papillote" technique is a fool-proof method for cooking fish – steaming it gently until tender and allowing the flavours to infuse. Originally created for my Dad, the dish has evolved into something more refined over time. Fresh herbs and a squeeze of lemon bring the dish to life, and the potatoes, soaking up all the flavours, add an extra layer of deliciousness.
CHERMOULA BUTTER
INGRIDENTS :
● 200g Butter, room temperature
● 50g onion, chopped
● 10g ginger, grated
● 1 pinch saffron threads, soaked in 1tbsp hot water
● ½ tsp cumin seeds, toasted & ground
● ½ tsp coriander seeds, toasted & ground
● ½ clove garlic
● 20g parsley, chopped
● 20g fresh coriander, chopped
● ½ lemon zest
● ¼ tsp espelette pepper or chili flakes
● ¼ tsp smoked paprika powder
● 1 tsp sea salt
METHOD:
1. In a food processor, combine onion, garlic, ginger, saffron & soaking water, spices, herbs, lemon zest & salt. Pulse until well combined
2. Add butter & pulse till combined. Check seasoning
3. Place butter mix in an airtight container & store in the chiller or freezer
EN PAPILLOTTE
INGRIDENTS :
● 180-200g Reef Fish Fillets, Skin on – lighter fish, such as jobfish, white snapper, grouper will work best for this
● Maldon sea salt
● Olive oil
● Picked fine herbs, dill, parsley, coriander & chives
● Lemon juice
● Extra virgin olive oil
● Grilled lemon
METHOD:
1. Score the skin side of the fish lightly, so you just pierce the flesh
2. Season well with salt then oil the fish lightly with olive oil
3. Heat a non-stick pan – add the fish, skin side down and weigh down so the skin stays in contact with the pan. After 30 seconds or so, the meat will release and hold the shape. Remove from the pan. This step stops the fish from curling up in the second stage of cooking
4. Prepare a large sheet of baking paper and two lengths of butchers string
SAFFRON BRAISED FENNEL & POTATO INGRIDENTS :
● 2-3 piece banana shallot, peeled & sliced into rings
● ½ head fennel, core removed & sliced
● 20g golden raisins
● 3 piece potatoes, peeled & sliced into 1.5cm rounds
● Sugar (to taste)
● Salt (to taste)
● 2 tbsp Olive oil
● 100ml Non-alcoholic white wine
● 400ml chicken stock
● Pinch saffron threads, steeped in 1-2 tbsp chicken stock
● ½ tsp fennel seeds
METHOD:
4. Heat olive oil in a pan, add the shallots & fennel and sautee until you develop a golden colour. Season with salt & sugar to help develop the caramelisation
5. Add fennel seeds, saffron & raisins
6. Deglaze the pan with non-alcoholic white wine, then add the chicken stock & bring up to simmer
7. Adjust sugar & salt – this is going to season the potatoes so you can be generous
8. Place the sliced potatoes in a deep, oven proof tray. Pour over the hot liquid and vegetables.
9. Cover with baking paper and aluminium foil (or a well-fitted lid)
10. Put into the oven at 180C and cook for 30-40 min. The potatoes should be tender – if you check with a skewer there should be no resistance but retain the shape
11. Remove from the oven and allow to cool
5. In the bottom, arrange a layer of potatoes, fennel & shallots, along with some of the cooking liquid
6. Top with the fish, and 2 tbsp of the chermoula butter
7. Wrap the fish up tightly and secure both ends with butchers string – repeat this with as many portions you are preparing.
8. Cook in the oven at 180C for 12-15 minutes or until the fish is tender
9. Carefully cut open the paper bag – avoiding the steam that is released
10.Plate the fish in the paper bag
11. Lightly season and dress the fine herbs with lemon juice, salt & extra virgin olive oil.
12.Top the fish with the herb mix and serve with a grilled lemon
