Welcome... To our nineteenth edition of The Last Bite Magazine. These past few months have brought such relief to those who had been itching to get out. Despite the elation we may feel, there has been a ripple effect as food and labor shortages put yet another obstacle in front of us. Ferraro Foods is here for you during this difficult time. As some of you may know, we recently joined forces with another quality food distributor. Legacy Foods has now joined the Ferraro Foods Family. Legacy Foods will be operating out of Ferraro’s 150,000 sq. ft. Aberdeen, MD facility in the near future. This collaboration aligns with our continued efforts to partner with strong distribution centers servicing the independent pizzeria/trattoria and casual dining restaurant from Maine to Miami. You can read more about this on page 5. This edition will highlight trends that are relevant today and how to leverage them. The pandemic sped up the integration of technology with day to day operations in the industry. Some trends have emerged from the pandemic such as the implementation of QR codes (see page 101). This edition will also showcase customers we interviewed in each of our territories along the east coast. We hope you enjoy reading and feel inspired. Lastly, we’re happy to announce that our live events are back! Our first in-person food show will take place September 27th at the Hard Rock Hotel & Casino in Atlantic City, NJ. A few weeks later on October 25th we will be taking over Mohegan Sun in Uncasville, CT for our second food show of 2021. Stay tuned for more announcements to come! ete Kirtses and Tom Amrein built strong service oriented distribution centers independently for over 30 years. As each looked to expand their own business, they realized in order to be relevant in the marketplace it was necessary to unite the families, creating Legacy Foods.

Over the past 2 1/2 years, Legacy Foods succeeded in the everchanging environment by working together to successfully market themselves uniquely in the competitive foodservice world. It is with that same mindset that Legacy Foods has decided to join forces with Ferraro Foods. Since the start, Legacy Foods has operated out of two buildings. Legacy Foods South, located in Joppa, MD and Legacy Foods North in Wilmington, DE. History: “Alberto Argueta came to the USA from El Salvador with a dream and in October 2003 the dream started coming into place. He opened his first Margherita’s Pizza location in Kingsville, Maryland and I was lucky enough to be there by his side. During the next 18 years we have built our family along with our business. We now have three beautiful daughters and four Margherita’s Pizza locations. We have family who work for us and helped us grow our business to what it is today.”
What is the most popular item on the menu? “Crab Chesapeake Pasta, Margherita Salad, Spaghetti Pizza, and our Homemade Dinner Rolls.” What do you enjoy most about owning a restaurant? “I would say what we love most about owing and operating a restaurant is the connections we make with our customers. We have customers who have become like family to us and have been supporting us since day one. We are so grateful for the support we have received from all of the communities we are located in, especially this past year.” Any advice for other restaurant owners? “Always remember you started this for a reason and to never forget what your dream was. There will be bad days and good but always keep your head up. Restaurants are hard work but can be very rewarding if you put the effort in and always remember what your dream was.”
What sets your restaurant apart from the competition? ”We try and use the best quality and freshest ingredients while also trying to keep our prices reasonable. Also we make all our breads and dough in house every morning. We strive for great customer service and a family atmosphere.”
How has your business given back to the community? ”During the pandemic we had the opportunity to donate food to many of the essential workers. We also do fundraiser nights for many of the local school and sports teams along with gift card donations.”

Challenging a Ubiquitous Industry
using Produce on Pizza “Produce is the primary driver of innovation,” says Brian Sullivan, executive chef and senior vice president of culinary innovation for California Pizza Kitchen.¹ In the past decade we have seen a growth in pizza chains differentiating themselves by claiming to offer fresh, locally sourced ingredients. A few to mention are Rise Pie, California Pizza Kitchen and Fired Pie. These businesses do a great job emphasizing the quality and artistry put into each pizza pie and positioning themselves as the higher end pizzeria. This shows how customers value quality, fresh ingredients - even in their pizzas. In a saturated market, be the restaurant to stand out from the crowd through innovation using not your typical pizza toppings. Unique produce for toppings could make for a higher value menu item. Adding produce will increase the perceived value of your food, especially if ingredients look fresh.

Raspberry Vinaigrette: • 2 cups raspberries • 1/4 cup wine vinegar red or white (Ferraro# 5020321) • 2 Tbsp olive oil extra virgin (Ferraro# 360175) • 1/2 tsp salt (Ferraro# 2040050) • 1/4 tsp black pepper (Ferraro# 2000035)
Directions 1. Add the spinach to a large bowl. Add the strawberries, raspberries, blueberries and almonds. Toss well. 2. Before serving, add the raspberry vinaigrette and toss once again. The Raspberry Vinaigrette: 1. Rinse the berries thoroughly and mash them with a fork. 2. In a small saucepan, heat the raspberries on low to medium heat for about five minutes. 3. Let cool. Put into a bottle and shake well.

History:
In March of 1978, Angelo Zimbardo, along with his mother, left their hometown in Sicily, Italy, Carini, with the intention of visiting his uncle. He was unaware that this trip would completely change the course of his life. Upon arriving to America, he immediately knew it was where he wanted to be, even at the young age of 14. Angelo did not return to Italy with his mother, but instead stayed with his uncle to learn all about the pizza trade. Angelo worked with his uncle for about 12 years before he decided that opening his own restaurant was the next step in his pizza industry career. Angelo’s Italian Restaurant opened its doors in March of 1990. Angelo’s has consistently served the Midlothian community authentic Italian cuisine for over 30 years. It is with the continued support of his wife Josephine, along with his daughters Silvana Rose and Adriana Maria that Angelo’s has thrived. Angelo stated that the restaurant would not be the same without his family and that they all work extremely hard to make Angelo’s the best it can be. Angelo also described himself as “the luckiest man in the world” to have the staff he has, having worked with some employees for 15 and 20 years.
What do you enjoy most about owning a restaurant?
Angelo loves seeing his customers smile. He enjoys making people happy through good, fresh food.
What sets your restaurant apart from the competition?
Angelo Zimbardo with wife Josephine and family.
Aside from the fresh sauces, bread and high quality food served, Angelo believes the personality of the restaurant truly sets them apart. Everybody feels at home when they walk through the door. Angelo likes to talk to every customer as if they are family. He also believes in going the extra mile. There have even been times when Angelo has fulfilled orders for hungry customers after closing. People do not forget those types of actions.

History: Maurizio Piccolo was born in Milazzo, Sicily. His family immigrated to Brooklyn, New York when Maurizio was 7 years of age. Maurizio never lost his Italian heritage and to this day uses both the Italian and English language. As a young teen Maurizio worked in a family owned pizza shop and learned how to make his very first pizza as well as learning the pizzeria/restaurant trade. He had dreams of opening up his own pizzeria and at the age of 18 opened up his first shop in North Jersey. After quite a few years he decided to broaden his education and horizons and worked in the telecommunications industry in Manhattan for 11 years. At this time he still worked nights moonlighting as a pizza man not to lose what he truly loved to do most. He always knew he would once again open up another pizzeria/ restaurant. While working in Manhattan he met the love of his life, Diane, born and raised in New York, who coincidentally had also worked all her life in the pizza business. From the age of 15 through her college years she worked 6 days a week after her studies learning and loving what she too had dreamed one day to do...open up her own pizzeria/restaurant.

In 2002, Diane and Maurizio were married and in 2003 after putting their family recipes together along with their knowledge of the trade opened their very 1st Maurizio’s Pizzeria & Italian Grille, located in Neptune, New Jersey. After much hard work and determination success followed the twosome who went on to win the Culinary Classics of Ocean and Monmouth County for best appetizer and
entrée. In 2006 Diane and Maurizio opened up their Mays Landing location where they continued to make great pizza and Italian delights winning best pizza of Atlantic County 4 years in a row. Maurizio’s also has their own line of jarred sauces which include classic Tomato Basil, Marinara, Vodka Sauce and Fra Diavolo. Maurizio and Diane always take pride in family and good food. They feel their success is not only due to the delicious pizza and food they produce but because they treat each and every customer as if they were family. On the subject of family, Diane and Maurizio were happy to welcome Giuseppe Pugliese and Domenico Costigliola to the Maurizio’s family in 2015. Giuseppe works tirelessly to make Maurizio’s grow to new heights with his innovative ideas and dedication to growing with the times. Domenico brought his great efforts and ideas to their southern New Jersey location. Together, Maurizio’s Pizzeria & Italian Grille has continued to thrive. They opened up a third location in Egg Harbor Township in January of 2020. Recently they opened a 2nd Maurizio’s Express location in Mays Landing and soon they will open a 3rd in Buena, NJ, making a total of 5 locations.

250 gm linguine pasta 3 tbsp olive oil
2. Cook the pasta according to packet instructions.
6 anchovies, roughly chopped
4. Once the garlic is bubbling (roughly 3.5 minutes), add the anchovies, capers and chilli flakes. With a wooden spoon mash the anchovy into the oil and simmer for a few minutes. 5. Check if the pasta is nearly done, about 80% cooked. If so, proceed to the next step, if not take the fry pan off the heat and wait until the pasta is further cooked.

Ingredients
1. Prepare all of your ingredients.
3. Add the olive oil and garlic into a cold fry pan. Turn the heat to medium and allow the garlic to infuse.

4 garlic cloves, finely chopped 1 tbsp capers, roughly chopped Chilli flakes, to your taste 8 prawns 1 squid tube, cut into rings 1/2 cup white wine 1.5 tbsp tomato paste 1/8 tsp salt or to taste Pepper, to taste 6 cherry tomatoes, halved 2 lemon wedges 3 sprigs parsley leaves, finely chopped
6. Turn the heat up to medium high, and add the prawns and squid into the fry pan. Cook for roughly 30 seconds. 7. Add the wine, tomato paste, salt and pepper. Stir until thickened. 8. Add the pasta straight from the pot and into the fry pan. 9. Gently toss in the tomatoes then taste check for seasoning. Adjust to your preference. 10. Divide into plates and squeeze some lemon juice over the top. 11. Garnish with parsley and serve.

Spread veal cutlets over a work space so that the edges are overlapping. Cover the cutlets with a thin layer of cheese and 4 rows of spinach. Roll cutlets while ensuring that everything stays in place; this can be done with a sushi or plastic wrap. Tie with string starting in the middle and twist the string in such a way as to form a cylinder. Slice meat in between strings to produce the rosettes. To make this easier, you can firm up the piece of meat by placing it in the freezer for 5 minutes. In a frying pan, melt butter at high heat and cook the rosettes (as soon as juice appears, turn the rosettes and repeat procedure, then remove; the meat will be pink.) Deglaze frying pan with demi-glace sauce and season with salt and pepper. Let simmer for 5 minutes. Put sauce through a cheese cloth before serving. Remove strings, coat the bottom of plates with sauce and serve.
