Create some fun summertime LTOs for your menu that celebrate everyone’s favorite season, while catering to those on the go who may not have the time to sit down for a meal. An Emphasis on Grilled Foods with Layered Flavor

Try layering flavors to create a fusion taste by marinating or glazing your meat before hitting the grill. Restaurants are recently leaning into an asian, latin and middle eastern taste profile when grilling, as customers are becoming more adventurous in what they eat.

Fresh grilled eggplant, peppers, summer squash, onions and mushrooms are perfect add ons to many delicious menu items - such as paninis, pizza, center of the plate protein garnishing and more.

Light & Refreshing Salads with an Option of Protein

People are generally more cautious of what they eat this time of the year. If you do not have a salad option for their meal, you may be missing out! Tip: Offer a salmon or chicken option with the salad to capture more revenue.

Fresh pizza toppings make any pie not only taste delicious, but add a pop of color that draws you in. Whether you are into it or not, the Corn Pie always seems to gain popularity over the summer months. Try a white pie topped with cherry tomatoes and corn and finish with some ricotta or goat cheese. If that

1. 2 peaches, ripe halved and stoned

Directions

STEP 1

Brush the peach halves with oil then grill until charred and caramelised on the surface.

STEP 2

Scatter the arugula on a platter. Drape the prosciutto over the arugula, add the peaches and sit the burrata in the middle. Drizzle the balsamic vinaigrette over the platter. Scatter the basil and pine nuts around the platter. Serve with crusty bread, if you like.

GRILLED ROMAINE CAESAR SALAD

Ingredients

1. 2 hearts of romaine, sliced in half lengthwise

Directions

STEP 1

Preheat grill for indirect cooking using two-zone grilling method. Target 400 degrees F in the cooking chamber.

STEP 2

Drizzle bread with olive oil.

STEP 3

Place the romaine hearts, lemons, and baguette slices on the grill on direct heat and cook approximately 2 minutes per side, flipping often. Stay close, these will all cook at slightly different times. Remove when the bread has a nice toast, the lemons have darkened and have a nice char, and the romaine has a nice char (but not burnt).

Step 4

Remove from grill. Serve with the Napoli Creamy Caesar Dressing, parmesan cheese, and bacon.
