Making your own Ice Cream James Day, Head Chef at the award-winning Belle Freehouse in Bassingbourn shares his ice cream recipe.

Royston Model Aircraft Club Interested in Flying?

Our club, The Royston & District Model Aircraft Club (RMAC) was first formed in the 1970’s and is fully affiliated to the British Model Flying Association (BMFA) The primary interest of club members is radio-control models with sports, scale, fun-fly, aerobatic and glider models all being flown regularly. Radio control electric powered flight is also very popular within the club.

The ingredients you will need; 300ml full fat milk 1 vanilla pod, split lengthways (vanilla paste will work just as well) 3 medium egg yolks 75g golden caster sugar 300ml double cream Firstly, gently boil the milk, cream and vanilla together in a pan. Whilst it’s heating, beat the egg yolk and sugar together until it leaves ribbons when you remove the whisk. Once the cream and milk mixture has boiled and cooled, slowly pour it into your egg and sugar mix, stirring until it is fully incorporated. Add your mixture to your ice cream machine and churn until set. You can use this vanilla recipe as a base recipe and add other ingredients such as a strawberry or raspberry purée. Be sure to keep a balance of flavours so that the added fruit doesn’t overpower the vanilla cream. The Belle Freehouse and Restaurant North End, Bassingbourn, SG8 5NZ www.thebellefreehouse.co.uk 01763 250921

The Club has approximately 50 members and welcomes beginners and fliers of all ages. We also provide and encourage tuition for novice pilots which is freely available from our experienced club instructors. If you are a novice, you are encouraged to start with a basic powered trainer, which is usually a high wing aircraft with control on rudder, elevator, aileron and throttle. It is stable in flight thus giving the novice time to correct any mistakes before any damage

can be sustained. Once you have learnt to fly, you can really start to enjoy the hobby – scale modelling, aerobatics, biplanes will all be within your grasp. Club membership in conjunction with the BMFA also includes third party liability insurance, essential if you are going to fly models. The club and BMFA also run a flying achievement scheme designed to encourage safe flying and progression of flying skills within the sport. If you are interested in becoming a member or would just like to pop along to the field & find out more, then please phone the club secretary.

July News

From the Conservators of Therfield Heath and Greens

Therfield Heath supports an incredible diversity of rare flowers and insects. In early June, we found a shieldbug that has not been recorded in Hertfordshire before. In July, the Chalkhill Blue butterfly will be on the wing – a butterfly that is dependent not only on its larval foodplant (Horseshoe Vetch) but also on ants to look after it during its underground chrysalis phase.

There will be a BBQ, tea, coffee, soft drinks, cakes and quiches. Visitors can have fun with the Tombola and Raffle. Have a look around to see the very many different crops that are grown, in very many ways. Chatting to plotholders will start interesting conversations

Royston townswomen report

Replacing the usual slide show with a series of humorous cartoons, our speaker, Andrew Sankey explained European influences in garden design in Britain since the Roman era. The wealthiest Romans introduced into their villa gardens elaborate water features, clipped hedges, topiary and arcades. The Tudors favoured more elaborate gardens with mazes and mounds, known as ‘snail hills’. Some mounds were topped by a banqueting house, a folly or a statue. Guests were invited to walk to the top of a mound to admire the view.

King William and Mary placed emphasis on landscapes and the growing of flowers. At Hampton Court an Orangery was introduced, together with conservatories and green houses to protect new varieties of plants. Royston Townswomen’s Guild meets on the first Tuesday afternoon of each month in The Heritage Hall, Royston Town Hall, 1.45 to 4pm. Contact Pauline Gates 01763 221314. Visitors very welcome.

Curwens Art Exhibition You are invited to preview the works of Graham Rayner, Amy Carter and Sue Sanders. Graham Rayner I have enjoyed working with wood for most of my life, and I clearly remember receiving my first wood working tools at the age of just four years old. I design and make unique pieces of hand crafted bespoke furniture and enjoy making pieces with elegant proportions in interesting timbers. I repair and restore heirloom furniture, and I also make a range of clocks, boxes and turned work, which will be available to view at the Curwens gallery. Amy Carter I re ignited my childhood passion for painting in 2016. Since then I have been

experimenting and refining my style. My work includes large oil paintings of bold flowers. ‘I try to capture the natural beauty of the flowers sometimes painting them after they have started to wilt and decay, this gives a moody feel to the work. Sue Sanders I create landscape and animal portraits to commission. I have run an after school art club for many years, and I do landscape workshops for school children. I also design and paint scenery sets for our annual pantomime. My current work is connected to wordplay and I will be displaying these images as small framed monoprints. I also explore the textures, markings and light of the agricultural landscape near my home, painting in both acrylic and oils Preview evening, Curwens Gallery, High Street, Royston, Thursday 12th July 6-8pm. Exhibition continues until 30th August

There’s going to be a lot of mischief going on when the 2018 Summer Reading Challenge launches in Hertfordshire libraries this year! To celebrate the 80th Anniversary of the much-loved Beano, this year’s challenge is called Mischief Makers, and will centre round the adventures of the most infamous mischief makers of them all – Dennis and Gnasher! Once again, Hertfordshire Libraries are challenging children to read six library books over the summer and return to the library to tell our staff all about them. They can read anything, including story books, fact books, talking books, and even e-books (available to download for free from our e-library). As part of this year’s challenge, children will use a map of Beanotown to search for a mysterious buried treasure. For each book that they report back on, they’ll collect smelly stickers that provide clues to the treasure’s location. Dennis and Gnasher will be on hand to help them solve these clues, along with their friends Pie Face, Rubi and JJ! The challenge is free to take part in – all children need to do is visit their local library

A huge success with Hertfordshire families year after year, the Summer Reading Challenge is the perfect way to share books together and spark a lifelong love of reading for pleasure. As one parent commented, ‘My son really enjoyed the Summer Reading Challenge 2017; he loved coming to talk to the staff and volunteers about the books he’d read, and enjoyed collecting the stickers. He is already excited for the Summer Reading Challenge 2018 and can’t wait to get started!’

Home & Garden

Think Garden, Think Richard Garden Focus... Large shrub selection Melbourn garden designer, Richard Arnott To continue my series of articles for 2018, designing with plants, this month I am going to look at midsummer hardy perennials, shrub and grass selection. Here a few things to consider: Drifts of the same plant helps to extend the interest and add colour too. Blues and purples look great drifted through a hardy perennial border. The large purple fennel Foeniculum vulgare ‘Purpureum’ drifting through smaller perennials adds height and pretty, fluffy foliage interest. Other tall drifters could be Agastache ‘Black Adder’ or Veronicastrum virginicum ‘Fascination’ with spires of blue and purple flowers they give good vertical form to a border. It is not all about height. A drifting plant could be a filler such as Geranium ‘Wargrave Pink’ or Alchemilla mollis.

Rhythm and repetition of plants is great to draw the eye. This is different to drifting as it is repetition of a plant such as Verbena bonariensis ‘Lolipop’ or a grass such as Miscanthus sinensis ‘Marlepartus’.Our eye is looking to make sense of what we see, so a repeated plant helps draw the eye. This is really helpful to the designer to create cohesion between garden rooms. The mood of a space may be different but repeating plants help to make a link. Why not use the quintessential English summer shrub Philadelphus ‘Belle E’toile’. Its beautiful white flowers and scent stand up to any rose. Colour combinations will give the planting extra interest especially if deliberate. There are many famous gardens that choose a colour theme to make a strong statement. Think white border, think Sissinghurst! I have tended to favour greens, blues, purples, pinks and white, but by adding a splash of red with something like Persicaria amplexicaulis ‘Fire Tail’ or Penstemon ‘Chester Scarlet’ or Crocosmia ‘Lucifer’ you make a strong contrast. Using grasses imaginatively is a great way to add interest and adding the dynamic of movement too. They work really well as drifters and repeaters to give a naturalistic

feel. Think about context too. In smaller spaces for a contemporary feel smaller grasses such as Stipa tenuissima ‘Ponies Tails’ or Pennisetum alopecuroides work well. On a bigger stage with the back drop of a landscape beyond the garden they really come into their own. My plant hero Piet Oudolf is a master in the use of grasses and hardy perennials. I am currently enjoying using Miscanthus sinensis ‘Marlepartus’and Calamagrostis ‘Karl Foerster’. Mixed borders are the modern way to get a balance of shrub and flower. Research shrub selection carefully to avoid big shrubs dominating. I love to use box and lavender in my garden designs as they make great mound forming shape. For vertical interest I would add shrub roses such as Rosa ‘Gertrude Jekyll’ and then in fill with hardy perennials. This is a way to mix shrubs and flowers. It is traditional whereas the naturalistic plant movement is more modern. For more in depth plant advice or garden design help please get in touch

My Local Life What is your favourite book? Why is it special to you? I don’t have time to read books!

RusseLl DavEy

Local butcher Russell Davey has long been a businessman in the area. His popular shop is at Fieldgate Nurseries in Meldreth. With over 40 years in the trade as man and boy there’s not much he doesn’t know about quality meat. We found out a little about him.

What was the last film you watched? Did you enjoy it? I generally only watch films on plane journeys but I love the James Bond films. What are you looking forward to in July? A very busy catering and BBQ season! Hopefully we will have some nice sunshine and England will win in Russia.

Where do you live? I was brought up in Royston but have lived in Meldreth since 1981.

What is the best advice you have ever been given? That the first deal is the best deal!

Tell us about your favourite local shop... I have two very good local shops. Fieldgate Nurseries stocks fresh local products and One Stop in Meldreth is open from 7am -10pm, 364 days a year. It also offers my banking facilities.

Tell us what you love about your job Even after over 40 years as a local butcher we are always meeting new people.

Describe a perfect Sunday Having a great round of golf, watching The Gunners win and roast dinner with my family

Where are you hoping to go on holiday this year? I visited St Lucia early this year and could not believe how the Island had

changed since I last went 38 years ago. I loved the locals and their character. I am hoping to revisit South Africa later in the year - it will be my fifth tour of such a fantastic country. What is your signature dish? I love to BBQ and try out different techniques. Tell us something about you that will surprise us! I was once very fit and athletic and loved to play Rugby. I also represented the East Anglia region at swimming... Davey’s Butchers Fieldgate Nurseries, Station Road, Meldreth SG8 6JP 01763 260 193 www.daveysbutchers.co.uk

Miller Magic with Opus 17 Tickets for our next concert this month are going fast and numbers are restricted due to the bigger space given to dancing, so hurry and get your tickets now.

Those of you that know the history of the band will be aware that we started life around 20 years ago as a 1940s band playing music exclusively from the icons of that era: Glenn Miller; Duke Ellington; Ted Heath and all the other great bands from that time. It’s only in the last six or seven years that we have widened our repertoire to include all of the music that we play today. In order not to forget our roots we have decided that now is a good time to dust off the “Suntans” and bring you a concert of classic numbers from The Glenn Miller Orchestra. We will be playing well known favourites such as: In The Mood; American Patrol; Little Brown Jug etc, plus some of the less played, but equally well known numbers such as : Tail End Charlie and Flying Home.

Doodlebugs as part of her university project five years ago. The group’s repertoire is based around the close harmony vocals of The Andrews Sisters. So it will be a true concert from the 1940s! A beer & wine pay bar will accompany our usual buffet supper and to complete the authenticity of the evening we hope that you will enter into the spirit of the occasion and come along in your best 1940s outfit, although it’s not mandatory!

We will have a photographer on hand to capture the ambiance of the evening and prints will be available. There will also be a small prize, probably alcoholic, for the best dressed individual or couple. From Tallulah’s Kitchen Strawberry Pimms & Shortbread Cheesecake Hello my fellow foodies...

And welcome to July’s edition of The Listing. This month I am excited to share with you a recipe that combines three of my most favourite foods and the quintessential drink of English summer days. This cheesecake recipe is perfect for lazy summer barbecues and picnics. I do love a good baked cheesecake and I have been working on this one for quite a while, I do hope you enjoy it. You will need A 20 cm non stick baking tin, parchment lined loose bottomed would be best, but if you don’t have one line a regular tin with parchment paper but leave plenty of extra paper around the outside so you can lift and remove the cheesecake easily.

Let us begin by making the base. Take the shortbread biscuits and pop them into a clean bag and using your rolling pin “bash” them to the consistency of fine sand. Perhaps you may prefer to use a food processor and that’s good too although you won’t get to work your upper arm muscles or any frustrations you might have! Next pour in the melted butter and mix until the two ingredients are thoroughly combined. Now pour the buttery biscuit loveliness into the lined tin and press down flat and even, I find a serving spoon works well. Cover this and pop into the fridge to chill and firm up for at least half an hour.

When you are ready to serve, remove the cheesecake from the tin and cut into the desired size portions. (I cut 4x4 from my square tin, giving me 16 “polite” sized portions.) Serve with a swirl of piped cream and a fresh strawberry on top. For those occasions where a little more “showing off” is required why not finely dice strawberries and a little cucumber and steep in neat Pimms for an hour and then serve alongside the cheesecake... the choice, dear reader, as always is yours! Until next time my fellow foodies...

Tallulah Le Fey x

Now on with the filling- In your mixer beat together the cream cheese and sugar until light and fluffy. Next, add in the strawberry purée, finely grated zests, Pimms, cream and cornflour and stir everything together. Now, For the base beat in the eggs one at a time and pour the 300g shortbread biscuits resulting mixture on top of the shortbread base. 100g melted butter Smooth over the top and pop into the oven for 25-30 min at 170°C or until very lightly coloured For the filling on top with a tiny bit of “wobble” in the centre. 450g full fat cream cheese When you are happy your cheesecake has 100g caster sugar Finely grated zest of one lemon and one orange got to this stage, turn off the oven and leave to cool in the oven for at least an hour. Resist the 60ml of puréed strawberries temptation to open the door as this may cause 60ml Pimms cracking across the top. 2tbsp double cream

2 eggs from happy and healthy free running hens After cooling in the oven, wrap the cheesecake 25g cornflour in cling film and place in the fridge for at least 4 hours - overnight would be best as the full Extra whipped cream and strawberries for flavour and texture develop with time. garnishing
