With its honest, working class, public sector origins, Plymouth traditionally struggled to produce, and attract, budding entrepreneurs. The same could also have been said about the restaurant scene. While there have always been a selection of top quality places to eat out, the city would probably not have been described as a ‘hotbed’ of vibrant dining. But rest assured, everything has changed. Plymouth and the surrounding areas have firmly stamped their mark as a dazzling dining destination. A huge amount of new talent has appeared on the scene, and the variety of top quality cuisine now on offer is extremely impressive. On the back of this culinary explosion, some big name chefs and restaurateurs have come into to the area, proving that we are, at last, a force to be reckoned with. Even more pleasing is the return of some local talent who have learned their trade at top restaurants around the country, and who are now flocking back to join the revolution. The net result of this influx is that local produce is being used more and more, restaurants are trying out new and unusual dishes and different concepts, and plenty of new venues have opened up. As always, we have an extensive and varied menu of news and features in this issue. If you want to meet some of the new breed of talented chefs that are plying their trade in the region, head over to our regular Chef Profiles slot. And our New Openings section will give you all the information you need to try somewhere new. Steve Barrett takes us down to the olive grove to provide a better understanding of the mighty olive, and if you’re looking for something with a little nostalgia, Chris Robinson opens up a window to the Plymouth of old in his article, City of the World. It’s clear that there’s a real buzz about the area right now. Since I launched this magazine in 2006, every year there seems to be a greater choice of quality venues to choose from, and remember, restaurants are the living soul of any city, so make sure you support them in the quieter months. smallbites A spark of genius at the Treby Arms It may have started life as a humble Sparkwell village pub in the mideighteenth century, but it’s almost impossible to overstate just how good the 2011 version of The Treby Arms is. PAWS for Food Charity Cookbook

P

lymouth is a great place to eat out with some fantastic restaurants. With this in mind PDSA are putting together a charity cookbook to raise funds for the Plymouth Pet Hospital Appeal. PAWS for Food is being officially endorsed by Celebrity Master Chef Peter Gorton. The book will be produced of a very high quality with photos being taken by award winning food photographer Celine Marchbank who will also be including photos of Plymouth to give the book a very local feel. We have already signed up a quarter of the restaurants we need to produce the book. This is a great opportunity to be part of a book, which will be sold to 1000’s of local people whilst raising money to build a brand new purpose built pet hospital for the people of Plymouth and the surrounding area. Wildflower is a breath of fresh air at the Moorland Garden Hotel The Moorland Garden Hotel has announced the appointment of new Head Chef Ross Tregidgo. Ross trained in Plymouth before working at London’s Park Lane Hotel and then as Sous Chef to Master Chef Peter Gorton at The Horn of Plenty near Tavistock. Most recently his position as Head Chef in a Devon Pub saw him leading it to the finals of British Pub of the Year. The Moorland Garden Hotel’s new owners, Brian and Sonia Meaden have a great reputation for owning fine dining establishments. Their pub, The Nobody Inn at Doddiscombleigh, has recently been Pub of the Year in The Telegraph. Ross has big plans for the hotel’s ‘Wildflower Restaurant’ open to residential and non-residential guests; “I have a great team here and we are building strong relationships with local food producers. Hugh Fearnley-Whittingstall is bringing his hugely popular River Cottage’s Canteen and Deli to Plymouth and championing of all things seasonal, local, organic and wild, serving fantastic food with an ethical edge, right here in Devon. Hugh Fearnley-Whittingstall has opened his brand new River Cottage Canteen and Deli in Royal William Yard, Plymouth. “Creating fantastic food in a wonderful location. Rock Salt Café

Rock Salt Café Brasserie is the venture of a Plymouth born and bred family. Chef, David Jenkins, has a background in fine dining, most recently 22 Mill Street in Chagford, but at Rock Salt they look to provide something altogether different. The relaxed and informal setting of an

old pub turned into a cosy and friendly meeting place. An intimate yet informal and relaxed high-end restaurant in Tavistock with just 25 covers, Gorton’s isn’t large but what it lacks in size, it makes up for in quality, decor and atmosphere. he Barbican Kitchen is the second business venture of the Tanner Brothers, who have now been cooking great food in Plymouth for over 12 years. The Barbican Kitchen has an exciting, vibrant feel. The cool, funky informality combines with the centuries-old building to create a dining environment that is unique in Plymouth. The vibrant colours and industrial history of the building are accented with artwork personally chosen by Chris and James. The Kitchen room, which incorporates the open plan kitchen and pastry section, contains artwork from Guy Stauber, with Bruce Lee, Yoda, Michael Caine and Monkey Magic watching over the diners. The Bar room is dominated by prints of artwork from one of the South West’s best known urban artists, Banksy. Have you ever wondered what sort of conversation must have taken place in the eateries and ale houses of Plymouth hundreds of years ago? Chris Robinson takes a trip back to memory lane.

A

t the height of the Elizabethan era Plymouth was a small community of around 8,000 (approximately twice the number of people employed by the University of Plymouth today). It was, nevertheless, one of the biggest ports in the country, with most people living within a stone’s throw, or two, of the waterfront, with the sea literally lapping against the side of many waterside warehouses – like it still does at the China House. Most of the quayside roads we know now

had yet to be constructed over the tidal mud flats, and with there being only one parish church, it is likely that most people would have known or recognised each other. Apart from the sailors and the fishermen few people travelled more than a mile or two from home and almost everyone was reliant on locally sourced food and clothing. However, Plymouth had more sailors and fisherman than almost any other port in England and what is more they were generally better travelled than all other seafarers. Remember Drake was the first Englishman

to take a ship around the world, and our fisherman regularly sailed across the Atlantic to Newfoundland. In the 1590s there were 100 English fishing vessels plying the Newfoundland route, of which half were Plymouth-owned. Although a lot of the catches were sold on to European markets, notably French and Flemish, the reality is that dining tables in Plymouth, basic as they were, would have known a greater range of seafood than almost anywhere in England. And with Drake and his contemporaries returning from voyages around all parts of the

globe, it is certain that Plymothians would have been among the first English men and women to taste some of the exotic herbs, plants and spices from the New World countries. John Sparke, a wealthy local merchant and property developer (he built much of New Street) was the first to describe the humble spud, while Sir Walter Raleigh, another celebrated son of Devon, was the first to actually bring the potato to these shores. It may seem odd to us now, in this global village we all inhabit, where television and the internet send pictures and information around the world, that just 400 years ago, so little was known of the planet and its diverse riches. But Plymouth then was at the very cutting edge of the multicultural gastronomic experience. There would have been conversations over a pint of ale and a trencher of food about the weird and wonderful things that peoples of a variety of skin colours and complexions around the world put in their mouths and wore on their bodies. Such gabble and gossip would have been virtually unknown a few miles inland, away from the coastline or riverbank. It is small wonder therefore that Plymouth is still seen by some as a city of the world, and yet that message has yet to be universally digested. When the America’s Cup hit the city in September many of the teams were pleasantly surprised by the quality and range of cafes and restaurants: hopefully they will now spread the word themselves. Of course one of the most remarkable features of the local culinary scene is just how much of it is concentrated around the historic heart of the town, in the very streets that Drake, Sparke and Raleigh would have known themselves. From the fifteenth century Tanners (the oldest Plymouth building in commercial use today) alongside St Andrews,

across to the China House via many eateries in properties old and new, to the Glassblowing House, alongside the old fish market, to the eighteenth century Fisherman’s Arms (with a wall incorporating stonework from the medieval Plymouth Castle), via the Tudor Rose and Shirley Valentines in Jacobean buildings in New Street, to the Gin Distillery and Barbican Kitchen, where much of the stonework doubtless came from the Greyfriars monastery dissolved by Henry VIII. The Barbican is truly a happy hunting ground for the gastronome with a sense of history. Whether it be for a taste of the Orient, the Mediterranean, the Mexican, the South American or something closer to home,

it’s all there, and more often than not in a building where, if the walls could talk, they could tell you tales of a world that many thought was flat and where communication via space was only for the gods. And where generation after generation have enjoyed teasing their taste buds with the good, the interesting and the exotic. Sam Rom Where do you work now? SR: Arthouse Plymouth. What motivated you to become a chef? SR: Love of food and the atmosphere of a buzzing kitchen. Who would you most like to work with? SR: Having worked for Gennaro and Jamie I would like to work for someone on the other end of the restaurant spectrum, like Peter Gillmor at Quay in Sydney. His precise cooking technique and attention to detail in plating is phenomenal. He has the ability to create a natural almost organic appearance to each dish. Tell us about your current menu? SR: The Arthouse menu has many influences, I come from a very Italian background and this is obvious on the menu but my love of Thai flavours has had a huge effect on my dishes. I wanted to create a menu and style of dining that would encourage sharing and the involvement of food. I want customers to be as excited by food and flavour as I am. I want to create amazing food that is accessible to everyone. 18 | the menu guide

Abdul Kalam Which dish on the menu would you recommend to a customer? SR: A wise man would suggest a dish with the best gross profit, but I’m a chef so I’m going to recommend one our most complex dishes, The Boii Chicken. This is a salad and it has it all, it’s a flavour sensation. Cooling cucumber and mint, fiery fine chilli, sweet sour Boii Chicken dressing with beautiful shredded moist chicken, each mouthful brings a new level of flavours and textures. Which chef has been your greatest inspiration? SR: There have been many who have inspired me and I like to draw something from each of them. There’s Marco’s intensity and arrogance, Michael Roux jnr knowledge and understanding and passion for nurturing talent. Then there’s Peter Gilmore and Tom Kitchin, both who draw the very best out of each ingredient to produce remarkable food. What is your favourite local ingredient? SR: We are pretty spoilt in the South West, this is one of the main reasons I’m here. Within a couple of miles from my cottage

Where do you work now? AK: Proprietor at The Eastern Eye. What motivated you to become a chef? AK: Cooking is in my genes. My grandfather and father were both involved in the industry for many years. They were both passionate chefs and I am too.

I can hand dive for scallops, fish bass or if the seasons right, walk out my back door and shoot for game. Not forgetting all the local veg grown, from turban pumpkins to Devon chilli. Why should people visit you? SR: A new experience, nonpretentious, amazing atmosphere, amazing food, amazing wines and world beers and it won’t break the bank, which is always nice. In your experience what is the most important thing about cooking? SR: Don’t kill anyone and taste everything! Do not give up and keep trying, learn your flavours and follow your heart, enjoy it.

Who would you most like to work with? AK: I’m a big fan of Ainsley Harriott who came to our restaurant recently and was very impressed with our food. I have always been a big fan of Ready Steady Cook. Tell us about your current menu? AK: My menu has been created using my own personal recipes. We offer highly unique dishes like Kalam Karishma and Kalam’s Delight, which is a sweet, hot and sour dish. These special dishes are very popular with our customers. Which dish on the menu would you recommend to a customer? AK: If they like a mild dish it would have be Mirpurie Patice. If they prefer a medium dish, I would recommend the Baharie Special


Anton Piotrowski or the Jogonathpur Special. For anyone who is new to Indian cooking I would recommend the Kalam Karishma or the Zul Zula. Which chef has been your greatest inspiration? AK: It would have to be Gordon Ramsay for being not only a fantastic chef, but also such a great businessman. I love the way he runs his restaurants. I really like his dedication and being a perfectionist - two things I strive to do with my business. What is your favourite local ingredient? AK: All the fresh vegetables and local organic fruits we use to make our pastes. I believe they really make the difference. Why should people visit you? AK: The Eastern Eye is unique. I believe our love of cooking translates to our food, making it the very best! But you don’t have to take my word for it - come along and taste it for yourself! In your experience what is the most important thing about cooking? AK: It has to be the passion for

the job. You have to love cooking to produce the best tasting food. Cooking is an art, and some say you either have it or you don’t, but becoming a successful restaurant owner and Chef does not happen overnight. I spent years working in several Bangladeshi restaurants. I have also done a lot of research in India and have gained valuable experience working in some of the successful hotels run by members of my family. On top of this, I am lucky enough to have a very good team working around me - two kitchen staff and two front-of-house staff - that make our venue a five star restaurant.

Where do you work now? AP: The Treby Arms, Sparkwell. What motivated you to become a chef? AP: My love for food and that you are always learning something new. Who would you most like to work with? AP: Heston and The Roux Brothers. Tell us about your current menu? AP: We use only local produce, all our dishes reflect the seasons. We have an allotment that my father takes care of. This ensures that we use fruit and veg that meets my standards. We also get our Red Ruby beef from Moostone Farm in Wembury, here we see where our beef comes from and how well they are looked after.

Which chef has been your greatest inspiration? AP: David Everett, Heston and Roux Brothers. What is your favourite local ingredient? Locally shot Venison from Moostone Farm, Wembury. Why should people visit you? AP: We offer something different. In your experience what is the most important thing about cooking? AP: To cook for my customers, not for awards. I love to cook and let people be inspired by food. There’s so much out there that people don’t know about, and so many new flavours being created every day, to me that’s exiting!

Which dish on the menu would you recommend to a customer? AP: I couldn’t recommend just one!! I would recommend our tasting menu that allows you to sample a variety of dishes, each with a different flavour, it enables you to really understand my love of cooking. THE menu guide | 19

The texture of potatoes varies considerably. A potato may be described as having a waxy or floury texture, and there is a scale of 1-10 on which varieties are placed. Waxy potatoes are translucent, and feel moist and pasty. They are good at staying firm and keeping their shape so make great salad potatoes. Do you know the difference between Kalamata and Manzanilla or for that matter Virgin or Extra Virgin? With the popularity of Olives and Olive Oil holding no bounds, Wine and Food Writer and restaurateur Stephen Barrett pens a simple jargon-busting guide to better eating and cooking.

R

ather like other important things in life I bet you can remember the first time you tasted an olive? Some of you would have loved it but many not so. Why I wonder (rather like marmite) is there such a divide in what is essentially a culinary gem eaten by countless thousands in warmer climes often with some great liquid accompaniments. More of that later but first a short historic intro to where the olive tree thrives in the 21st century. The Mount of Olives, surely an iconic place in most Western and Middle Eastern civilizations and an obvious place to start but at around 2000 years ago it was but a mere infant in olive tree growing. We might have to settle for around 4000 BC when farmers in Asia Minor began to understand the cultivation of this unique fruit-bearing tree. It has also been noted that olive trees were also grown sort of commercially on Crete around 3000 BC. An ancient and influential fruit that over the millenniums’ has produced amongst other things Oil for heating and lighting, Oil for embalming, Oil for perfume, Oil for medicines and of course Oil for cooking and flavouring. It’s a wonder product! Fast forward to this century and a few observations on where Olives and Olive

Oils sit in the modern kitchen. First what types of olives are best for eating? In a world where we now know the name of more than two types of Potato, Tomato and Lettuce how come the same doesn’t correlate to the olive? Many jars and tins of bland, dull and downright tasteless olives are often found on supermarket shelves but go to the Deli counter and, hey presto there are countless types ready to open up the taste buds at any time of the day. The main types of quality olives generally available are Kalamata (black) Greek origins with a full-on fruity flavour, Manzanilla,

(green) Spanish easy-going nutty often stuffed with pimento, anchovies or almonds. Pichiline (green) subtle and slightly salty and of French origin can be offered with Herbs de Provence, garlic etc. Noyons (black) again of French origin slightly wrinkled and ripe and Gaeta (Black) are Italian, small and when wrinkled might be sun-dried or purple in colour, brine-soaked with a sweetish note. You will note that the colour of olives often denotes firmness as opposed to the ripeness of the black varietal. This is because the green

Extra Virgin olive oil is classed as the very best, which is used as a flavour enhancer (vinaigrettes and dips).

olive is picked unripe and the black to ripeness. To enable the olive to be eaten with the right degree of edibility they are first brined. Several styles and ingredients are used in the brines to cure and release the fruitiness and textures hidden between the skin and stone. In short the better the quality the olive the more care and attention is given in the selection and brining of individual fruit. Olive oil is the extracted oil from the first milled ripe olive after which it is then separated from any water found and graded accordingly. Extra Virgin is simply the unadulterated oil made without any heat extraction methods and measures less that 1% acidity. This is the very best olive oil and is best used as a flavour enhancer (vinaigrettes and dips) as opposed to cooking oils. The low flash point and dense flavours will render the oil bitter; lacking in the often fruity even peppery notes quality oils can give. Virgin Oil is a lesser quality oil that should attain no more than 2% acidity. Having ‘general usage’ this is a good oil to use for sautés and dressings; it lacks the density of Extra Virgin oils. Equal amounts of good quality butter blended together make it an excellent medium for fast-cooking of fish fillets. Pomace oil is heat-treated oil from the pressings after the first and second pressings have been extracted. It can contain other oils and is best used for cooking.

Olives as an ingredient can also be both good and bad. Recipes using low-quality olives in dishes like Salad Nicoise or Tapenade are never going to be as good as using quality fruit from a reputable supplier. How do you know? Ask for a taste, question the age (the younger the better, same for olive oil) look for firmness in green olives and fruitiness in black ones. This is a simple guide but an essential one. Drinks to stand up to the flavours of quality olives can range from chilled Fino, Manzanilla Sherry or White Port as part of a mixed Tapas or full-bodied white wine with a classy usage of oak. Recipes such as Duck with Olives or Moroccan Chicken could take a spicy red such as Bonada from Argentina or Shiraz from Barossa Valley but I would err on the side of a full-bodied white. For a treat try a white Burgundy such as Meursault or a modern estate bottled Macon for a great match. So you see this brief intro into Olives and Olive Oil might pose more questions than answers! As with wine labels Olive Oil and Olives can confuse if not read without a little knowledge. Time to get tasting?

T

he Food Plymouth Partnership, which is led by the Soil Association, Plymouth City Council, NHS Plymouth and Plymouth University, represents over 15 public, private and community sector organizations who have come together to champion healthy and sustainable food as a way to bring positive changes for the city. Earlier this year a Plymouth Food Charter was launched, which highlights five key areas where food can drive real measurable change - a thriving economy; health and well being; resilient and close knit communities; life long learning and skills; climate change and the environment.

A diverse range of over 50 local businesses and organisations are now signed up to the Charter and are committed to help delivering these aims, these include; Diggin’ It, Federation of City Farms, Food is Fun, Riverford Organic Vegetables, National Marine Aquarium, National Trust, Plymouth City College, Real Ideas Organisation, Tamar Grow Local, Tamar View Fruiterers, Tanners Restaurants and Stiltskin Theatre Company. Action Plan Since the launch of the Charter, five subgroups have been identifying key priorities and outcomes needed to deliver it. The resulting Action Plan will be launched to city business leaders and other decision makers early next year. This event will showcase some of the ground breaking work that has been developed this year by the organizations and businesses who have signed up to the Food Charter. It will be a great opportunity to encourage new pledges to the Charter and to engage key decision makers within the city to support its aims.
