It’s no secret that we humans are creatures of habit. We know what we like and as a general rule, we tend to stick with what we know. The Barbican Kitchen Brasserie, now in its 8th year, has just opened a brand new private dining area following a £60k investment by Chris and James. Where do you work now? MP: Lewtrenchard Manor.

Where do you work now? CH: The Arundell Arms Hotel (Sous Chef).

What motivated you to become a chef? MP: The thing that motivated me to become a chef, was when I was a kitchen porter seeing ingredients come in the back door in the morning in a raw form to being plated in the evening. I recognised the hard work that went into that one dish.

What motivated you to become a chef? CH: From a young age I’ve always had an interest in food. When I was 14 my parents took me on a holiday to Spain and whilst at a restaurant they ordered Paella. The chefs came and cooked it at our table and I was amazed by the colours, smells and sounds whilst they were cooking. This really ignited my passion for food.

Who would you most like to work with? MP: It would have to be Marco Pierre White in his heyday. Tell us about your current menu. MP: My menu always uses ingredients from the kitchen garden as much as possible and ingredients that are in season. For example, my grouse dish uses the beetroot from the garden. The beef dish uses Jerlusalem Artichoke also from the garden. I think its all about selecting a couple of great flavours rather then lots of flavours that may get lost in a dish. Which dish on the menu would you recommend to a customer? MP: The dish that i would

recommend would be the hand dived Devon scallops, Lewtrenchard cauliflower, toasted pine nuts and beurre noisette powder. Which chef has been your greatest inspiration? MP: The chef that has inspired me the most would be my old executive head chef Mark Jordan. What is your favourite local ingredient? MP: The best local ingredient must be the lamb or anything from our kitchen garden.

Why should people visit you? MP: Why shouldn’t people come and visit Lewtrenchard Manor. It’s a beautiful building and the food is showcasing local ingredients which are packed full of flavour. In your experience what is the most important thing about cooking? MP: The important thing about cooking is the quality of the ingredients and the seasoning.

Who would you most like to work with? CH: Tom Kerridge – his food is outstanding and his presentation is unique. After seeing him on the Great British Menu I find him to be an inspirational Chef. Tell us about your current menu. CH: Our current menu is full of local and seasonal produce. At The Arundell Arms Hotel we are very conscious of ‘food miles’ and source as much as we can from within a 10 mile radius. We are lucky enough to be situated on the Devon & Cornwall border so we have access to some of the best farm & vegetable produce anywhere in the UK.

Dave Morgan Which dish on the menu would you recommend to a customer? CH: The Mignon of South Devon Beef. Our locally sourced beef always gets rave reviews from our customers and we are always asked where we source it from. Philip Warren Butchers in Launceston have a nationwide reputation for their great beef.

What is your favourite local ingredient? CH: It has to be the beef. Locally reared, it’s succulent, tender and packed full of flavor. There are so many creative dishes you make from it. The different cuts are so versatile and I truly believe it’s some of the best beef you can get in the UK.

Which chef has been your greatest inspiration? CH: Again Tom Kerridge. Amazing food, presentation and a great personality make him such an inspiration to me as a Chef.

Why should people visit you? CH: Our food is true to its origin, wholesome, tastes great and we also have the surroundings to match. Our restaurant is elegant and we are situated in a pretty village on the edge of Dartmoor.

Where do you work now? DM: Quay 33 Restaurant on Plymouth Barbican. What motivated you to become a chef? DM: I started washing pots as a youngster in the Holiday Inn and loved the hustle and bustle of the kitchen. I was so keen I worked any spare time available watching and learning all the time fascinated by the dishes that went out (most of it food I had never eaten let alone heard of). Who would you most like to work with? DM: Definitely Gordon Ramsey. Tell us about your current menu. DM: Our food is freshly prepared using local produce. We have a varied selection - something for all tastes. Which dish on the menu would you recommend to a customer? DM: Currently I would recommend the Duo of Fillets (meat – fillet steak and pork fillet with caramelised onions) or (Fish – Salmon and Sea Bass). Which chef has been your greatest inspiration?

DM: Gordon Ramsey all the way – his passion and drive is incredible. What is your favourite local ingredient? DM: Hand picked white crab meat – we are so fortunate to live in such amazing place with fresh fish literally on our doorstep. Why should people visit you? DM: Quay33 is warm, friendly, inviting, great freshly prepared food, good value for money, Consistency, taste and presentation.

WHICH ONE SHOULD I GO FOR? By Yannick Loue Proprietor of Le Vignoble

Prior to entering the wine trade, this is a question I always used to ask myself when shopping in the supermarkets or wine retailers. My main issues when choosing a wine were the huge long alleys of wines but a lack of meaningful descriptions and a lack of help from staff. And with prices going up and down like a yo-yo, how would I know what to choose and which label to trust?

W

hen going to a wine merchant I was always scared to ask questions as I always felt that I had to choose what was suggested to me and every now and then I was disappointed as the wine selected wasn’t 100% to my tastes. We all have different tastes at the end of the day, so what one person will love another may not. To prevent disappointment I decided to learn my wines and regions - yes I said region, as this is a big part of how your wine will be, to some extent is it all about cool climate and warm climate differences. Cool climate will give you acidity, freshness and minerality; warm climate will give you alcohol and heaviness. Now you would think that red grapes grow only in warm climate and white grapes only grow in cool climate, this is not completely wrong but you have some that go against this rule. Let’s take the example of Viognier, Marsanne and Rousanne white grapes, which are well known in the Rhone Valley and South Australia. These grapes would do particular well in warm climate that will allow them to ripen full of flavour and can be matched with some great strong fish or white meat dishes. If we are looking at red grapes, Gamay and Pinot Noir could easily grow in cool climate and give you some great freshness. Great examples of this are Beaujolais and

Martinborough in New Zealand. These wines are so fruity and juicy that they would be a great accompaniment to strong fish and meat dishes too. This is why it very important to not assume that all grapes would give you the same flavour regardless of where they are coming from. One thing that anyone can do without being an expert is to really focus on 8 grapes, 4 white and 4 red. This would give you enough diversity to keep you interested and you can play around with them, get wine one week from a warm climate and another week from a cool climate. You will see a lot of differences but remember to keep it simple. Now the big question that everybody asks, how much should I really pay for a bottle? Well basic fact for you, if you buy a bottle at £5 the wine you are actually drinking would have a raw cost of about 11p. Now this is what I call scary. Simple maths. £2 for the alcohol duty

in UK, 75p transport, 75p labeling and packaging add 20% VAT then retail margin, which can vary from 15%-30% that doesn’t leave you with very much. Just think of adding the money spent for the headache tablet in the morning to the bottle you’re drinking and the wine you just gave you a great experience and a pain-free morning. love game, it has a great texture and flavour due to the fact the creature has lived a fully functional life as a wild animal. They are not confined to a pen or a shed; they are free to forage for their own food running free through the woods and fields.

to circulate under the feathers. Rabbits and hares are hung by their back legs.

Pheasant: Is quite low in sodium and is excellent source of protein and is a good source of vitamin B3 but it is high in cholesterol.

Trussing a game bird before roasting keeps it compact during cooking to help prevent it from drying out. It also improves the appearance of the bird on the table and makes carving easier.

Hanging pheasant: It is difficult to state exactly how long to hang a pheasant. A young bird shot in October will only need three days, where as for one shot in January, two weeks could be long enough. Make sure the birds are hung singly from their necks, in a cool place where the air can circulate freely. The reason for hanging game is to enable the fibres of the flesh to break down so that the meat will become more tender and also to improve the flavour. There is no hard and fast rule which states how long to hang birds or ground game as much depends on weather and individual taste. Game birds in the United Kingdom are traditionally hung by their necks; the French hang a bird by one leg to allow air

Chef’s Notes: Plucking should be done out of doors in a sheltered spot or in a shed or garage as there are bound to be some flying feathers!

Cooking Game: If your game bird or beast is young and in prime condition then the best thing is simply to roast it with a good sauce as an accompaniment. This does not mean putting it in an oven and forgetting about it. This means careful preparation, trussing it well, barding and larding then basting. Later in the season when the game is a little older it will need braising or stewing. There is no reason why pigeons, partridges and venison cannot exchange recipes. These following recipes can be adapted by you to your own taste.

TIPS FOR COOKING GAME

Use all poultry trimmings such as neck, heart and wings, chop up into small pieces and sauté them and add to your sauce for an extra flavour.

All meat should be left to rest after it has been removed from the oven. The resting time allows the juices to be reabsorbed into the meat, making the meat tender and easier to cut. Always cut the meat across the grain so that it is easier to eat.

Rest all meat and game on a cooling rack or at an angle on the edge of a small plate turned upside down on top of a larger plate. This will allow air to circulate creating an even circulation of juices.

All of us have favourite dishes that have become supper staples – simple, tasty and served up on so many occasions that they have become a bit boring. In Old Favourites, New Twists James Tanner takes wellloved favourite dishes, adds an ingenious twist to make your taste buds explode, and reinvents mealtimes!

COOKIE TWIST Oreo cookie and blueberry cheesecake A really simple-to-prepare baked cheesecake with a crushed Oreo cookie base and creamy blueberry filling. This was inspired by my time in the US – it’s vintage Americana in a cheesecake! INGREDIENTS - SERVES 8 • 70g butter, plus extra for greasing • 200g Oreo cookies, roughly crushed • 500g low-fat cream cheese • 397g can condensed milk

Preheat the oven to 160°C/325°F/ gas mark 3. Line and grease a 23cm loose-bottomed cake tin with baking parchment.

Melt the butter in a medium saucepan, stir in the crushed cookies until they are coated and start to stick together. Spoon the mix into the tin and press evenly over the base. Chill in the fridge for at least 30 minutes.

Pour the filling over the biscuit base and sprinkle the blueberries over the top. Bake for 1 hour or until set. Remove and set aside to cool then chill in the fridge and serve.

At the Treasury we are always innovating and leading with ideas as we feel it is important the customer sees a choice, variety and rarity of products that they would not see in the supermarkets, chain restaurants or bars. We also like to stock products that are cutting edge in the drinks industry. Often surprising and sometimes educational, there is often a romantic history to a drinks product and we love to relay these ‘gems’ of drinking knowledge to our clientele. For instance we stock Nikka whisky, a Japanese single malt which has recently upset the Scottish whisky producers by winning the title of worlds best single malt whisky 2013. This stunning whisky was started by a young exchange student Masataka Taketsuru, who travelled to Scotland from Japan after the World War to study chemistry before falling under the spell of Scotch Whisky. Taketsuru worked in a number of distilleries and took copious notes before returning to Japan and some thirteen years later, Taketsuru founded his own distillery which produces several whiskies today, the

best known being ‘Nikka’. There are peaty styles, fruity styles and some styles that defy easy categorization because of the use of oak from Japanese forests called Mizunara, which imparts a uniquely spicy finish. It’s hard not to reflect the success of Nikka on the Japanese culture at large: attention to detail, patience and discipline have ultimately always been at the core of whisky production for centuries. As well sourcing the very latest trends in drinks we are equally passionate about local procurement, keeping business within the immediate community. With the popularity and understanding of the benefits to all of locally sourced food produce, the Treasury team are passionate and leading the way in locally sourced drink produce too! Plymouth Gin is the obvious contender in the spirit section as a local producer in Devon and Cornwall, however, smaller distillers are popping up making small batches of truly unique and hand crafted produce, brewed and bottled very often by the same person who delivers the product to our back bar. Take the South Western distillery in

Cornwall, producing the first gin in Cornwall for 200 years. The owner and distiller Tarquin makes small batch quantities with hand picked ingredients, dilutes to bottling strength of 42% with Cornish spring water, seals each bottle with wax, dates it and adds his signature and tasting notes. This Gin is a contemporary take on classic London Dry gin but Tarquin uses fragrant handpicked Devon violets and fresh orange zest to deliver an aromatic sensation unlike any other. Along with Cornish Gin, the South Western Distillery also produces their own take on the French favourite ‘Tarquins Handcrafted Cornish Pastis’ its incredible to taste but is also a truly fabulous play on words. American Style Craft beers are proving a popular alternative to the mainstream beers and lagers throughout the UK; forget Bud and Coors, think Brooklyn lager by the bottle and the ‘Cheers TV show’ legend Samuel Adams on draft. These are probably two of the most respected beers in America and a welcome treat for thirsty customers in the bar. ‘Blueberry Brothers Beer’ is made and brewed by two brothers on Dartmoor from handpicked Blueberries. Grown on their own land from wild strains these beers are unique with only a very subtle hint of blueberry making them very special, look out for this

beer on TV cookery shows soon! Rebel Brewery in Penryn Cornwall is making some fabulous craft ales and stouts which really adds fun to trying a tipple. Some are Rebels own versions of world classics such as Mexi-cola and Bullhorn black lager and with their exciting labelling and refundable bottle to help the environment these are truly worth trying. The passion and enthusiasm in the way that their master brewer talks of his products would normally be associated with the manufacturer of fine spirits so we are organising a talk and tasting early next year in the function room - so look out for this! All of our bar staff and mixologists can advise and recommend drinks for you to try. If you are in a group we can even set up a Treasury Chest for you served at your table. Your chest includes your favourite spirit, a jug of mixer, glasses, fruit and straws. In fact everything you need to share premium drinks with friends! These are proving a very popular and cost effective way of social drinking. Another drinking style we are leading the way in, is the use of Schooners instead of pints. Nearly all our draft beers are served in Schooners now; these are 1/3rd of a pint, the

size of glass widely used in Australia and most of Europe. The benefits are that your ‘last mouthful is as bubbly, cold and refreshing as your first mouthful’ and the price is pro rata so its a welcome surprise when the change is handed back! I encourage you all to try something new the next time you drink out, whether its beer, wine or spirit. Whatever you drink, drink it well...
