Chefs’ Forum trawling the waves of positivity

pril was a bumper month for Chefs’ Forum events. The most recent Devon event was a butchery and sous-vide master class at City College Plymouth on the 29th April. Catering and hospitality students from City College Plymouth and Cornwall College helped top chefs make canapés and served front-ofhouse at all events. Chefs’ Forum founder Catherine Farinha explains: “More and more top chefs across the county of Devon are engaging with Chefs’ Forum, surfing on all of the positivity being generated by everyone involved. Chefs’ Forum meetings are inspiring and becoming an integral part of South West chefs’ social calendars.” Summer will see further Chefs’ Forum events involving trawler fishing and visits to Devon produce growers! The Dairy now with cream on top The Dairy Bar is proud to announce the addition of a new private Function Room located above the main bar. Previously a residential property, owners Alex Warner and Ian Garton took on the personal challenge of converting the area to a multi-purpose licensed function room, taking inspiration from the original bar space below. “Building on the success of the downstairs, converting the upstairs to the Function Room was a natural progression,” explains Alex. LE BISTROT PIERRE

Le Bistrot Pierre, which opened in Plymouth’s Royal William Yard last month, is sourcing its new seafood menu from local suppliers. Oysters come from the River Yealm; mussels from the River Exe and crabs are caught in Brixham. The restaurant specialises in freshly cooked, provincial French dining using carefully sourced, fresh, authentic ingredients, and with a competitively priced lunch menu (£10.50 for two courses, or £12.50 for three) – that includes Steak-Frites; haddock with asparagus in light mint & lemon butter; and roasted pork with sautéed savoy cabbage, bacon and coarse-grain mustard - has already proved a great hit with diners. The restaurant world is awash with awards, but what do they mean, how do restaurants earn them and who are the judges? Nick Bayly reviews the reviewers

I

f the first thing you think of when you hear the word ‘Michelin’ is of big rubber things attached to the wheels of a Formula 1 car, then you’re probably reading the wrong magazine. However, if the word conjures up images of Gordon Ramsay’s furrowed brow, Masterchef or egg and bacon ice cream, then you’re more likely to know what I’m talking about here. It’s the wonderfully idiosyncratic and somewhat secretive world of restaurant awards. To the casual observer they may seem like meaningless gongs associated with eye-watering prices and impossible-tobook tables, but to those in the know they represent a tangible benchmark of culinary excellence. Awards not only provide a

Stars in their eyes snapshot of ‘current form’ of those working within the industry, but also offer an invaluable guide as to what you, the diner, might expect from a visit to an establishment that has been deemed worthy of one. In the days of internet forums and instant consumer feedback, one would have thought that these awards, whose printed guides line the shelves of many a household, may have had their day, but I for one think they are needed more than ever, cutting through the often ill-informed blogs and blather to deliver a concise, consistent and professional assessment of the marketplace. But how do restaurants earn their stripes, what do the awards mean to the chefs and, more pertinently, how do they impact on the

end user, the paying customer? The two main restaurant awards in the UK are those dished out annually by the Michelin Guide and the Automobile Association. Quite why a tyre company and the self-styled ‘fourth emergency service’ have become the arbiters of taste when it comes to cooking seems like an odd alignment, but it dates back to the mass production of the motor car at the turn of the last century, and the opportunity it afforded drivers to travel the length and breadth of the country stopping for lunch and dinner along the way. Although the Michelin Guide first appeared in the early 1900s, its famed ‘star’ system launched in 1926 was a way of distinguishing the great from the merely good on its growing list of places to eat. Fast-forward some 90 years, and attaining a Michelin star today is widely regarded as having reached the pinnacle of the cooking world. With only 1,800 restaurants in the 22 countries the guide covers having been awarded one or more stars, it’s a truly rarified club. To give an even better understanding of star status on a more local level, only 16 restaurants in the UK have two stars, and only four have the magical three stars (The Fat Duck Restaurant Gordon Ramsay, The Waterside Inn and Alain Ducasse at The Dorchester). The stars have a massive impact on the financial success of a restaurant, with a third star historically boosting profits by as much as 60 per cent, while one and two stars can guarantee that tables are equally hard to

helps provide diners with an indication as to culinary ability at restaurants throughout Europe. The AA’s feared inspectors award the honours to restaurants for the ‘quality and service of their food and demonstrate mastery and excellence in their field’, with the number of rosettes offered from a starting point of one, up to the dizzy heights of five (see fact box). Because of the wider spectrum of award levels, the AA’s one- and two-star rosettes are slightly easier to come by than Michelin’s entrylevel status, with a three-star Rosette perhaps equating to one Michelin star, if there is such a currency exchange in such subjective matters. To perhaps counter any accusations of exclusivity, Michelin has recently introduced a Pubs and Bars Guide, as well as launching a new restaurant award called the Bib Gourmand, which is particularly relevant in today’s economic climate, as it lists some 100 restaurants in the UK which offer a three-course meal for under £28, and that meets the criteria of offering ‘good food at moderate prices’. It may sound a rather flimsy benchmark, but getting on this list is no mean feat, and is hotly pursued by the huge number of restaurants operating in this competitive price range. They are represented in the guide with a tiny ‘Michelin Man’ logo with his tongue hanging out, which seems rather appropriate. And what of the restaurants themselves? Do they think that the toil and tears required to gain industry recognition pays off at the till? Established star Nathan Outlaw, the

The inspectors always visit anonymously, booking under assumed names, and although chefs make it their job to spot the likely types, keeping tabs on such diners can provide an unnecessary distraction from the main task at hand. Men in their mid-40s dining alone with a notebook are a dead giveaway, but often inspectors come in pairs, or even pose as married couples. To confuse matters further, the guide’s editors rotate inspectors around the country, so they might not visit the same area for seven or eight years, making it even harder for chefs to spot their reviewers. Changes in chefs and/or ownership will often set off a return inspection from Michelin, who claim to revisit establishments on average every 18 months in order to keep ratings up to date and ensure standards haven’t slipped, while inspectors always keep a close eye on new openings from talented chefs on the move. While attaining Michelin star status is something most chefs dream about, there are other awards that are equally revered, most notably those offered by the AA’s highly-respected Rosette scheme, which

come by. Conversely, the loss of a star can have a precipitously negative effect, with one of the world’s most revered French chefs, Bernard Loiseau, committing suicide six years ago after reportedly fearing that his restaurant, The Coq D’Or, might lose one of its three stars. It’s a sad story, but one that highlights the intense stress that reaching for the stars can bring upon those that seek them. Interestingly, and what is less advertised, is that less than five per cent of the restaurants in the 1,200-page Michelin Guide have any stars at all, with the vast majority appearing on the basis of positive reviews from the guide’s team of inspectors and recommendations from the general public. These restaurants are local, accessible and affordable, and counter the argument that Michelin-rated restaurants are all about fine dining and starched linen. The restaurant rating system is shrouded in a degree of mysticism, but the criteria by which a star is awarded is perhaps best explained by the editor of the Michelin Guide himself, Derek Bulmer. He says: “The things that we look for when we award a star are firstly the quality of ingredients that are used – they must be of the very highest quality in order to get a star. We then look at the skill and flair in the preparation of those ingredients – that is if you like the talent of the chef. We look at the combination of the flavours. Do they go well together? Do they enhance the dish? We also look at the levels of creativity on the menu – does it suggest that the chef is striving to do something original? “We also look for consistency and that’s in two parts – firstly, right across the menu, to make sure that the chef is not just a great meat cook, but can cook fish and that the desserts are up to the same standard. Secondly, it is consistency over a period of time: stars are not awarded very quickly, over just one or two meals, we will look at an address over a year to 18 months before we consider awarding a star.” In light of the current strained economic climate, Bulmer is quick to add: “Most of the

Michelin guide is affordable. People always focus on the stars, but it’s only five per cent of the total book. People don’t want to talk about all the hundreds and hundreds of restaurants in the guide that are perfectly good places to go out and eat in, and that’s why most people buy it.” With the judging criteria established, the restaurants are rated following multiple visits by one or more of Michelin’s team of 70 inspectors working in Europe. Their visits are often prompted by requests from the restaurant owners themselves, while others are inspired from the inspector’s local knowledge or a weight of positive reviews from customers, who often send in reviews to the guide’s editors. To provide an idea of the work involved, in an average year each Michelin inspector clocks up over 20,000 miles on the road, eats over 250 meals and spends around 150 nights in hotels and guesthouses. Each visits more than 800 establishments and writes over 1,000 reports. If you like driving and eating, it’s a dream job, but don’t bother applying if you’re

34-year-old head chef at the two Michelinstarred fish restaurant that bares his name in Rock, has no doubt about its positive effect on his business. “Being located in this part of the world does have its drawbacks when it comes to building up a reputation, so earning awards has helped build our customer base up regionally, as well as nationally. For the majority of the year we are relying on locals to book our tables, so you ignore the local market at your peril, but even that is driven by positive reviews in guide books and the press.” Despite the omnipresence of Rick Stein, and the recent arrival of Jamie Oliver, Outlaw’s eatery is one of only six Michelinstarred restaurants in the South West, whose joint top-rated venue is the two-star Gidleigh Park in Chagford, which is run by the inspirational Michael Caines.

The other ‘one-star wonders’ in the region are The Room in the Elephant in Torquay, the Masons Arms in Knowestone, Driftwood, Portscatho, and Paul Ainsworth at No.6 in Padstow, whose eponymous chef is one of the rising stars of the restaurant world thanks to his successful appearances on the BBC’s Great British Menu. Opened in 2006, Ainsworth earned his first star after following in the 2013 Michelin Guide. The Michelin Guide also operates a rating system for those operating just below star status, with some popular restaurants in The Menu Guide’s territory in Plymouth earning their places alongside those of international standing. Tanners, Chloe’s, Artillery Tower and the Barbican Kitchen have all been afforded the coveted crossed knifes and forks, which represents Michelin’s sign of quality, and

have benefited hugely from appearing in its pages, especially when it comes to attracting visitors on holiday, who might otherwise not be aware of their notoriety. Further afield, the widely-acclaimed Horn of Plenty at Galworthy has two AA rosettes and three Michelin ‘knives and forks’ to its name, with the enchanting country house hotel earning plaudits for its ‘classic cooking and exemplary use of local ingredients’. Sadly Peter Gorton moved on in 2011, but under the leadership of new head chef Scott Paton, his high standards are still being maintained at this popular Devon eatery, which won the ‘Best Fine Dining Restaurant’ at the 2012 Food and Drink Devon awards. Ultimately, awards and the guidebooks that support them are, just like The Menu Guide, here to inform and inspire in equal measure. They can unearth a truly hidden gem that lies right on your doorstep, encourage you to take minor and major detours, and, above all, encourage you to experiment and widen your culinary experiences. So if you’re looking for a food-loving present, be it for Christmas or a birthday, a copy of the Michelin Guide or the AA’s Restaurant Guide comes highly recommended, while a booking to go with it might be an even more inspired gift.

Where do you work now? SG: I am currently working at GOTO Japanese Restaurant on The Barbican.

What motivated you to become a chef? DJ: My motivation came from an early age, making lardy bread with my mum as a nipper, then pushing on as a pot wash and being in charge of banana boats when I was 13, looking at the chefs thinking that what I want to do! Soon as I started chefing I knew it was for me. Who would you most like to work with? DJ: Keith Floyd because I grew up watching on telly, he had a lot of passion and we could enjoy swigging a glass of wine together! Tell us about your current menu. DJ: It’s seasonal, exciting, different, Asian tones and includes the great British classics. Which dish on the menu would you recommend to a customer? DJ: Pork, skate and peanuts. Its my personal preference and we get great customer feedback. The perfect balance of spice, flavour and texture. 22 | the menu guide

What motivated you to become a chef? SG: Cooking is my favourite hobby. It has inspired and gave me a strong motivation to become a chef. I also like to create new dishes with various flavours of Japanese food.

Which chef has been your greatest inspiration? DJ: David Everitt-Matthias, his books are always on my coffee table for inspiration. What is your favourite local ingredient? DJ: The local venison I’m getting at the moment, bang in season and so tasty. I’m sharpening my shooting skills- maybe I’ll get one myself one day! Why should people visit you? DJ: We use fresh local ingredients

in an interesting way! And we like to think it’s a pleasant and unpretentious environment. In your experience what is the most important thing about cooking? DJ: Taste everything! Open your eyes and take everything in, every day is a school day- there is just so much to learn!

Who would you most like to work with? SG: Yoshinori Ishii, who is a head chef of Michelin-starred Japanese restaurant in London. He has created lots of modern Japanese dishes, which are very well known in London. Tell us about your current menu. SG: Our menu, is not only classic sushi which is the traditional Japanese style sushi but also new modern sushi. The special things about new modern sushi is; it is a combination of a wide range of fruits, vegetables and many selections of half way cooked fishes served with my unique recipes sauce which has received great feedback from our customers. Besides Sushi, we serve quite a lot of Japanese hot food.


Craig Arbuckle Where do you work now? CA: Proprietor of Monty’s, on the Barbican. What motivated you to become a chef? CA: It came about due to ignorance of what a chef’s job already was. I used to sit on the other side of the kitchen door, enjoying the food provided (have a good time most of the time), and think to myself, he’s got a good job, how hard can that be? Never been so wrong, yet never been happier. Who would you most like to work with? CA: Mark Hix, I like his style of refined simplicity. For example, Tempura, grilled fishes, chicken and rib eye steak are all served in our restaurant. Which dish on the menu would you recommend to a customer? SG: Well, it’s very difficult to just recommend one, however to choose one I would pick our set menu as it combines many kinds of Japanese dishes from starters to desserts. Which chef has been your greatest inspiration? SG: As mentioned before,

Japanese chef Yoshinori Ishii. Why should people visit you? SG: Because basically to talk about Japanese food, there is not only the taste of the food but also the presentation will imply partly about Japanese cultures and customs. In your experience what is the most important thing about cooking? SG: The most important thing is put the heart into the food, keep learning and try to improve myself every day.

CA: Any fresh fish, we buy ours in daily. Tell us about your current menu. CA: It’s an all day menu that can adapt to most customer requests; it’s open at 9.00am so we provide breakfast, lunch, snacks and early evening meals. Which dish on the menu would you recommend to a customer? CA: The chef’s breakfast is a winner, as are any of our dishes on the daily specials board. What is your favourite local ingredient?

Why should people visit you? CA: We have friendly staff, good food, and sensible prices, it’s the kind of place I would like to go to. In your experience what is the most important thing about cooking? CA: You must realize and understand that somebody has come to you and asked you to feed them. So do the best you can for them and treat the food and the customer with respect.

evon has exceptional food and drink producers and I consider myself very lucky to be able to get well sourced ingredients right on my door step. Devon is fast becoming famous for its award winning restaurants, food festivals, markets and vineyards so eating and cooking seasonal local produce seems the obvious thing to do. Seasonal treats: Wild mushrooms, sweetcorn, tomatoes, crab apples, wild cherry plums, pears, hazlenuts, walnuts, mallard, teal, widgeon, red mullet, mussels, native oysters, wild salmon, pennywort. I believe we should eat as much food in season as we can, the reason why is simple, food tastes better in season, from asparagus to apples to game. Fresh local produce is better to eat than food that has been raised artificially or travelled around the world. Enjoy Devon’s great larder.

SEPTEMBER September marks a turning point in the year. It is the end of the summer and the beginning of autumn. September is an exciting time for chefs because we can start cooking autumnal game and still manage to harvest summer berries, while wild mushrooms start to appear with delicious squashes and autumn berries like blackcurrants, loganberries blueberries to name but a few.

OCTOBER October is the month when the weather starts turning cooler and the early nights are drawing in. I find i’m in the kitchen more experimenting with my team and working out a lot of new dishes. Ingredients not to be missed:pheasant, partridge, grouse, wild ducks, succulent squashes, native apples are in peak condition, celery carrots, red cabbage, jerusalem artichokes, wild sorrel, wild chervil, chanterelles, salsify and of course brussels sprouts, hazlenuts, chestnuts and walnuts.

The Paris basin, chalky white soils, gentle rolling hills, beautifully manicured, fabulous regional food and the world’s most famous wine! It could only be Champagne. Stephen Barrett gives us his insight.

Fizzy Heights

T

his is the wonderfully fizzy stuff made in France’s most northerly vineyard designed to make you celebrate life to the full with sensual bubbles racing into the body lifting spirits to often euphoric highs! So what makes this extraordinary beverage so special, after all, the entire world has other sparkling wines that might also do the trick! We must first take a look at its illustrious history starting with the Benedictine monk Dom Perignon who in the late 17th Century, successfully experimented with the then unpredictable youthful Champagne. Champagne is situated in a somewhat marginal climate for grape growing, temperatures being just about right for

successfully ripening the grapes Chardonnay, Pinot Noir and Pinot Meunier. This meant that the still wines made from these grapes were often full of acidity, and rather taut. During this time Champagne was often made with a smidgen of residual sugar left in the ferment, this would lay dormant during the winter but come the spring it often refermented as the weather warmed up. Wines were popping all over the place, wastage and danger were enormous until the legendary monk discovered a way to preserve the bubbles capturing the CO2 and in the process creating a sparkling wine of great distinction. This 17th Century phenomenon was surprisingly usurped by an Englishman, Christopher Merrett, who documented the method of the double fermentation process 30 years before the noble Dom had declared his interest but Champagne was becoming fashionable and indeed more famous in and around the courts of Europe. First Europe then the world as great names such as Moet & Chandon, Taittinger, Mumm, Pommery, Lanson, Krug and Bollinger sold liberally in restaurants, hotels and bars far and wide. The sheer quality of these Champagnes are considered second to none but lesser-known “Growers Champagne”, individual wines often made by small family concerns whose prime aim is quality are just as exciting. These lovely wines can be found in countless villages scattered throughout the district and represent excellent value. Most Champagne comes under the Non-vintage category meaning the blend is made up from grapes/wine from more than one vintage allowing certain house styles to be produced year on year with a “house consistency”. With versatility like this it’s no wonder that sales are soaring. New parcels of land

have recently been designated as official vineyard status enabling the owners to plant the prescribed grapes, which, after three years will yield grapes fit enough to make the said fabled fizz. To source Champagne other than the famous brands your local wine merchant will certainly have a Growers Champagne of note. Prices vary with the style of wine and relative age or aging potential attached to the product. Own-label Champagne from the major Supermarkets tend to be sourced from some of the large Co-operatives or medium sized companies and can often represent excellent value and style. So as you can see there is Champagne to suit all occasions and pockets, I for one love the youthful zest and dynamism of individual Growers Champagne showing the great tradition of French know-how. You, on the other hand, might like one of the highly consistent major brands or when the pocket allows one of the luxury prestige brands like the eponymous Crystal; whichever one you choose will provide mirth and laughter, guaranteed to brighten up the day!
