The South West has played its part in the festivities, and left in its wake a renewed sense of pride and community spirit. that Devon chefs welcomed the launch of their own regional chapter of the prestigious and popular networking group for chefs, suppliers and local catering colleges. Headed up by local food heroes Simon Hulstone (The Elephant, Torquay) and Peter Gorton (Gorton’s of Tavistock), The
Chefs’ Forum aims to bring together the three groups and harness the great culinary talent and knowledge in the area as well as offering excellent networking opportunities to young student chefs. The Forum runs all year and is punctuated by quarterly networking events in both Bristol and Devon. The Dolphin Inn in Newton Ferrers was taken over by Matt and Tessa Keniston on the 30th April. The Treasury and The Eastern Eye have set the standard in social impact by supporting a charity that diverts surplus food from producers to charities that feed the disadvantaged. So far,The Devon & Cornwall Food Association has diverted over 20,000 litres of short-date milk that would otherwise have been binned, to 18 local charities thus saving them over £15,000. Almost entirely volunteer -run, the DCFA asked local restaurants for support. The Treasury is donating 20p from every risotto dish and the Eastern Eye is donating a £30 meal-for-two each month. Designer, Eugene Sellors, has been working on the design for Le Vignoble, a unique wine shop, lounge and educational experience, owned and run by accomplished wine connoisseur Yannick Loué. Housing a collection of over 2,000 bottles of wine, Le Vignoble is located within the current Urban Splash redevelopment project at Royal William Yard in Plymouth. Le Vignoble, which means ‘the vineyard’ will focus on sharing a love, passion and knowledge of wine, aiming to advise customers thereby enhancing their enjoyment of the product. This sanctuary for wine lovers will provide a lounge area with soft seating and tables allowing people to relax and enjoy their wine in sophisticated surroundings. I
’ve always been a little wary of restaurants whose menus read more like a novel. There’s always a nagging feeling that the kitchen can’t possibly have all those ingredients fresh and ready to cook, with diners left carefully listening out for the ‘ping’ of the microwave as pre-made meals get a quick heat blast. Thankfully the days of the page-heavy, leather-bound menu look to be over, with many restaurants replacing them with a much more paired-down version that focuses on doing a handful of dishes very well, rather than lots averagely. Nowhere has this trend for menu downsizing been more noticeable than in the rise of the mono-theme restaurant, whose range of dishes has been reduced to almost a single line, while there is also a growing number of eateries which have dispensed with a menu altogether, preferring instead to give guests a knife, a fork and a napkin, and bring out the food. At either end of these extremes, it’s clear that less choice often equates to better quality when it comes to eating out. In the recent years there has been a move towards opening restaurants that specialise in one type or style of food, rather than the everyman-type of venue that is designed to appeal to everyone, yet no-one at the same time. Appealing to small, but distinct sections of the dining community, rather than offering an impersonal, mass-market experience is very much in vogue. And in recessionary times, restaurant-goers want to take the guesswork out of eating out, knowing that they are going to get a consistent quality of meal, and good service, in a relaxed and friendly environment. While smaller menus are all the rage, there are a number of bold food entrepreneurs that have thrown all their chickens into the one
basket, so to speak, by opening restaurants that offer just one or two headline dishes. Burger & Lobster opened in London earlier this year, serving, you guessed it, only burgers and lobster, while the eponymous Meatballs has diners queuing round the block in the back streets of Farringdon in order to sample the five different types of spherical-shaped meat products on offer. Closer to home, and fulfilling the one thing done well brief, is new speciality sausage restaurant Burrows and Wodehouse, which has recently opened on Plymouth’s Sutton Harbour, next to the Cooperage. With more than a dozen different types of local Devon sausage on offer, all served on a bed of fluffy mash and onion gravy, it’s a theme that resonates well with diners looking for upscale home cooking at a good price. The same one-dish principle could be
applied to almost every foodstuff you could think of, from mussels to steak, from pasta to paella, or even the humble sandwich bar, which many establishments have taken to the level of high culinary art. The concept is a simple one, and if it works, makes huge sense to restaurant owners, with narrow stock lines and a speedy order turnaround for a kitchen focused on producing multiple plates from the same base ingredients. Done well, it’s also possible to quickly build up a cult following with customers, as they come back to get a regular fix of a food they clearly love. In these recessionary times, where food nostalgia, and honest home-style cooking is making a comeback, an upmarket pie and mash shop or a retro burger diner can make for an extremely successful business recipe. Pizza chains are, in many senses, already

Less is more: Many restaurants are choosing to pare down their menus, focusing on delivering quality rather than quantity, yet still offering value for money for their customers.
operating in this market on a much wider scale, with a succession of dough bases being remarketed with a variety of different toppings, but they hardily represent a unique meal out for the aspirational consumer. It’s all about elevating food that you might well eat at home into something worthy of a shared dining experience, so it’s also about the atmosphere and ambience in the dining room, the attitude of the staff, and the affordable nature of the prices, that makes for a winning combination. It needn’t be cheap, but it has to represent value. The ‘zero option’ or ‘no menu’ restaurant is an equally interesting development in the eating out market, with waiters simply reduced to handing out lists of what diners are going to be eating that night. With no reservations taken, and no hovering around
tables, the staff can get on with the business of cooking and serving delicious food. Much of the thrill for diners is to be had from not knowing exactly what’s going to be on your plate. It’s not everyone’s idea of a fun night out, especially for fussy eaters, but for those with a taste for adventure, it’s certainly makes for a meal to remember. Such places also lead diners into trying foods that they wouldn’t normally choose – the complete antidote to eating the same dish, at the same restaurant, at the same table for the rest of your life. Having been to a couple of menu-free
restaurants myself, the experience is extremely liberating. Instead of holding up a menu and ending all conversation, diners are able to interact more easily, freed from the tyranny of agonising over whether to have the steak or the chicken, or perhaps the salmon, or…you know how it goes. All people want to do when they go out to eat is relax with friends and family, have free-flowing conversation, and eat delicious food. To some people, the absence of choice could be frustrating and disempowering. As contemporary restaurant-goers, we’re programmed into thinking of going out to eat as more like a shopping trip than a dinner party: a series of active choices rather than a relaxed, somewhat passive experience full of surprises. So the next time you go out to eat, even it’s to a regular full-menu restaurant or to your local pub, why not ask the waiter what the chef recommends and see what surprises there are in store. You might never look at a menu in the same way again.

RIVER COTTAGE DELIGHTS Many of the ingredients are sourced from within just 50 miles of the city and the current menu features local delicacies such as Cornish asparagus and Camel Estuary mussels, linecaught mackerel, Dorset Blue Vinny cheese and Salcombe Dairy ice cream. “One of my favourite dishes right now is whole line-caught mackerel from Lyme bay, it will be wood-roasted whole with some salsa verde, green sauce.” says Joe. All this can be enjoyed in one of the finest settings in Plymouth. The Canteen itself is
housed in a stunning, ex-Naval heritage building, right by the waterside in Royal William Yard. Guests who take a seat at one of the outside tables will be treated to spectacular views of the Tamar estuary where submarines, naval ships, ferries and sailing boats throng the water. The Yard is a Grade 1-listed site, a former Navy victualling depot, which could hardly be more appropriate. As one reviewer put it, the place ‘has fresh food in its genes’. Diners inside, meanwhile, can sit at tables

created from reclaimed wooden doors, from where they can watch the chefs at work in the open kitchen, centred around a traditional wood-fired oven. Alongside the restaurant is the River Cottage Deli, where customers can taste and buy locally produced meats, cheeses, jams, chutneys, hampers, drinks and sweet treats. The Deli team work closely with producers who supply them and can give some expert advice on the products. The Deli also sells River Cottage books and DVDs, including copies signed by Hugh, gifts and kitchenware. There are regular Producer Days too, where customers can come and meet the people behind the delicious ingredients that make their way on to shelves and the menu – as well as tasting their wares, of course. The Canteen and Deli is open seven days a week during the summer, serving breakfast from 10.00am on Monday to Friday, from 8.30am on Saturday and from 9.00am on Sundays. Lunch is served daily from 12.00pm, and dinner is served from 6.30pm on Tuesday to Thursday and from 6.00pm on Friday and Saturday. IN PERFECT HARMONY A sister venue to Hugh FearnleyWhittingstall’s highly successful River Cottage Canteen and Deli in Axminster, the Plymouth restaurant is founded on the same uncompromising values. To address this subjectivity I guess we need to start with a virtual Lunch or Supper to understand the balance of taste and the taste experience. With locally sourced foodstuff a major player in the home and restaurant and the summer about to be upon us I thought I would search for dishes of local interest and find some thoughtful slurps to match. So here goes with something to tickle the appetite often called an Amuse Bouche or ‘mouth amuser’. Doesn’t translate as perhaps intended but nevertheless it is often a way to break down barriers especially if you have guests that have not previously met! Greet and Eat as soon as you can will relax and often allow the host to relax too! An intense flavour of a tiny cup (espresso) of Gazpacho chilled to perfection served with an equally cold Manzanilla Sherry is very hard to beat as it tickles the appetite and satisfies the hunger pangs of expectancy. Mini savoury Pannacotta,

Long gone are the days when a bottle of German White and Bulgarian Red will match the Prawn Cocktail and Macaroni Cheese of the heady 1970’s. Indeed persons of a certain age will probably not have even tried both the wines and foods I list! So what is right and what is comfortable when matching food and wine? boat-shaped Toasties of Soused Mackerel or a Grilled Oyster with Chorizo will also stir the appetite. And guess what, the Manzanilla Sherry will match all these dishes perfectly? Once at the table the first course is often awaiting the guests coupled with an array of glasses waiting to be filled with something suitable. Summer starters could include some of our excellent smoked fish from our regions. Created with care they are much Superior to the supermarket bought equivalent. Having sourced your favourite you might wish to set about creating some Pates or Terrines, Mousses or Rillettes all comparatively easy to create given time. The current Taste of the West multi-award winner
with a Manuka Wood Smoked Salmon comes from Mike’s Smokehouse in Loddiswell. Truly beautiful and delicate flavours permeate; important enough to maintain its flavour to the last morsel so to match with a Red wine would probably be far too strong! White wine is the preferred tipple for this kind of dish but which one? I generally crave for an acid/fruit balance with this kind of dish so would plump for either a lightly chilled Gewürztraminer or a Riesling. These wonderful wines can come from many different places with different climates and soils meaning they are affected greatly and need some understanding. This is where Wine Merchants come into their own, and

half-full with water and bring to the boil. Place the Pork in the water bath and cook for around 1 Hour on a gently rolling heat. Remove and rest before removing the cling film. When cool it can be sliced and served with your favourite sauce and vegetable garnish. Any left over will feature handsomely on a cold meat platter or brilliant sandwiches! This wonderful Summer Pork dish can be matched with many different styles of wine but my suggestion would be either a young chilled Devon beauty namely Kenton Bacchus 2011 - Regency Wines Exeter (01392 444123) or maybe a modern Pinot Noir from Chile perhaps the excellent Cono Sur 2011 from most major outlets. Dessert or puddings are a brilliant match with wines to finish the Lunch or Supper. If you choose an Apple-based tart or Strudel the match would be indicated by balancing the acidity of the fruit. By way of a complete change why not plump for a slug of Somerset Royal Cider Brandy available from Crebers of Tavistock (01822 612266 or mail order), served ambient to enhance the marriage of flavours and tastes. My current favourites are Pauletts Riesling from South Australia - intense peach notes - or Gewurztraminer KeĂźhn from Alsace Classic Rose petal and citrus notes - both available from Charles Steevenson Wines Tavistock (01822 616272, mail order or shop). A modern, healthy main course can be made with the affordable Loin of Pork. Trimmed and cut lengthways like Fillet Steak (about 1 kg for four persons) lightly cured and chilled for 48 hours in a mixture of 80% Sugar and 20% Salt, tightly wrapped in cling film, after which you rinse and dry. Blanch some trimmed Savoy Cabbage leaves, refresh and set aside. Stretch some good quality Smoked Streaky Bacon and lay on a large piece of cling film followed by the Savoy Cabbage and finally the Loin of Pork. Neatly wrap all three into the tightly formed cling film and rest in fridge for a few hours. Fill a suitable casserole

JOE DRAPER Where do you work now? JD: River Cottage Canteen and Deli, Plymouth. What motivated you to become a chef? JD: I always loved cooking and baking, and was doing it at home from a young age. I started working in pub kitchen at the age of fifteen and loved every minute of it. Who would you most like to work with? JD: Marco Pierre White in his younger days. I have worked for him but not with him and I can’t think of anyone else who is as much of a legend as he is. Tell us about your current menu. JD: Our menu changes twice each day, to reflect what is seasonal, local, organic and wild. We don’t always know everything that is going to come through our door each day, which makes it exciting for us and for the customers knowing that it’s fresh and always changing – you’ll never have the same thing twice! Which dish on the menu would you recommend to a customer? JD: From today’s menu I would recommend the whole line-

Which chef has been your greatest inspiration? JD: I have crossed paths with many chefs over the years, but ultimately it would be Marco Pierre White. What is your favourite local ingredient? JD: This week it would be Buttervilla Farms organic sonata strawberries, which taste amazing. Why should people visit you? JD: We showcase the very best of what the South West has to offer, and we stay true to our ethos of being sustainable and doing things a bit different to others. In your experience what is the most important thing about cooking? JD: Enjoy yourself as it’s always a school day!
Where do you work now? AW: Zucca, situated on Sutton harbour. What motivated you to become a chef? AW: My passion for cooking and the fact that every day is different! Who would you most like to work with? AW: Nathan Outlaw, his simple approach but perfect technique goes great together. Tell us about your current menu. AW: I am currently in the middle of putting together a new menu which will consist of local seasonal produce and quality authentic Italian products, big on flavour and pleasing to the eye. Which dish on the menu would you recommend to a customer? AW: It would have to be one of the specials we have everyday. For example today we have seared red mullet with saffron potatoes, basil purée, blushed tomato and red pepper tartlet and chilli oil! Which chef has been your greatest inspiration? AW: Locally, John Raines and Stephane Beneteau who both, in their own ways, taught me a

Tell us about your current menu. JB: Simple, fresh, flavoursome dishes on the specials board that change regularly and some more classic dishes on the main menu. A bit of something for everyone. We are in an area blessed with fantastic ingredients from the land and sea.
In your experience what is the most important thing about cooking? JB: Enjoy it, learn about your ingredients and taste everything. It shows when you eat it.
Why should people visit you? AW: We do simple fresh Mediterranean food with a twist right by the harbour!
Which dish on the menu would you recommend to a customer? JB: Depends on what the customer is looking for? Sit outside and enjoy a light snack in front of the marina or maybe try our tasting of spring lamb from Moostone Farm with a nice glass of red as the evening rolls in.
In your experience what is the most important thing about cooking? AW: Don’t over complicate, don’t be a sheep, follow what you believe in and the main thing is taste, taste and taste some more!
Which chef has been your greatest inspiration? JB: It would have to be people I have worked with! Shay Cooper for his incredible, intuitive cooking and Kenny Atkinson for his organisation and attention to detail.

Taking a new client out to lunch can be as awkward as a blind date, but it needn’t be that scary providing you follow a few simple rules. By Nick Bayly.

Work out why you are inviting someone for lunch and what you’re hoping to get out of it. Are you meeting a new client for the first time? Are you pitching an idea? Are you celebrating a contract? Are you buttering up an existing client? Once you’ve established the reasons for entertaining, it will simplify the decisions regarding where and what to eat.

Choosing your venue is key to making the right impression. Take account of the preferences of your guest and if you are not familiar with the restaurant scene in your area, then don’t be afraid to ask them for suggestions. By empowering them with the decision, you not only take away the pressure of choosing a dud yourself, but also improve the chances of the guest enjoying the meal. If you do choose the venue, then be sure to find out about vegetarians, non-smokers (and smokers) etc. Ask around your colleagues for advice, rather than flick aimlessly through the Yellow Pages for inspiration. Restaurant guides are useful, if they offer the relevant sections on business entertaining.

If you are using the meal to get across a business plan or expecting an important discussion, then avoid noisy, open-plan restaurants, or places where the tables are too close to each other. An echoing dining room will make it impossible to get yourself heard. Equally, if you’re meeting a new client, then it might be sensible to avoid more intimate venues that offer cosy corners and dim lighting. Your client might get the wrong idea about your intentions!

Be on time. This sounds like plain commonsense, but it’s downright rude to arrive late for a lunch meeting, and

certainly not a good start to arrive later than your guest. Leave your office in plenty of time and, if need be, take a newspaper or even some work with you, so that you can occupy yourself while waiting. Resist the temptation to order a drink and prop up the bar.

Turn off your mobile phone before entering the restaurant. No one around you wants to hear your conversation, and your guest won’t be impressed either. If it’s a call you simply have to take, put it on silent buzz and take the call outside, having first excused yourself from the table.

Make your guest feel special. Limit glancing around the room. It’s a sign that you are looking for something better. There is nothing worse than having a conversation with someone who is half there. Listen intently to their stories and laugh at their jokes.

Drinking during business hours is frowned upon – even banned – by some companies, so ensure you stick to company rules, regardless of your client’s wishes, if that is your employer’s policy. However, if that’s not the case, then let your guest be the guide. If they start off by ordering a pre-meal gin-and-tonic, it would be safe to assume that you could follow that up with a bottle of wine. Unless it is the stated intention before the meal to get blind drunk with your guest, don’t overstep the mark with alcohol.
MAKE YOUR GUEST FEEL SPECIAL. LIMIT GLANCING AROUND THE ROOM. IT’S A SIGN THAT YOU ARE LOOKING FOR SOMETHING BETTER. THERE IS NOTHING WORSE THAN HAVING A CONVERSATION WITH SOMEONE WHO IS HALF THERE. LISTEN INTENTLY TO THEIR STORIES AND LAUGH AT THEIR JOKES. Even if they go down this rocky route, resist the temptation to match them drink for drink. Always order water to reduce the effects.

If your guest is a smoker then it would be considerate to choose a restaurant where they allow smoking throughout, or find a table within a smoking zone. No chain-smoker is going to be able to fully relax if he or she can’t have a fag after a meal.

Match your outfit with the restaurant. Don’t turn up in chinos and a sweater if everyone else, including your guest, is suited and booted. Establish beforehand what you will both be wearing. If in doubt, a jacket and tie will never be over the top.

Let your guest take the lead when it comes to choosing the food. If they ask: “Are we having starters?”, you can take it as read that they would like a starter. Conversely, you’re going to have to give up the sticky toffee pudding if your guest only wants a coffee to finish off the meal. Remember, a business lunch is just a meeting at a restaurant, not an excuse to stuff your face at your company’s expense.

When ordering, remember to choose something that you can get into your mouth, and not on your tie. Don’t order food that is messy or complicated to eat. De-shelling prawns or cracking the legs off a lobster might be sexy with your partner, but having butter dripping off your chin or olive oil all over your front isn’t going to make you look too cool in front of a business client.

Unless you’ve known your fellow diner for years, avoid telling jokes – no matter how amusing that might appear to you. It’s impossible to know what will and won’t offend.

Always pay for lunch with a credit card. Paying with cash is rather flash, and also let your guest work out how much the lunch has cost. A credit card is authoritative and says “I’ve got it”.

If you are eventually going to present the bill to your business as part of your monthly expenses, make sure that the receipt tallies up to the importance of the client that you were entertaining. Taking your postman out for a £200 slap up lunch won’t go down too well with the accounts department.
If you’re going to be presenting a receipt for you meal in your monthly expenses, make sure that there’s nothing on the bill that could leave you open to criticism - like cigars or excessive amounts of alcohol. And remember, always pay with a credit card.
