NEW MENU AT HA! HA!
One of Plymouth’s most popular seafood restaurants is under new management. Tony Achilles has joined his brother Nick at Platters on the Barbican – maintaining a long-standing family tradition. Platters opened twenty-seven years ago and their late father Rocky developed the restaurant’s reputation for fine seafood dishes. It attracts regular visitors from far and wide. Sir Andrew Lloyd Webber even remarked that his dish was “the finest fish I have ever tasted” after visiting a few years ago. The restaurant has undergone a subtle refurbishment and re-branding aimed at modernising the look whilst maintaining its traditions. A WARM WINTER AT THE HALFWAY HOUSE After extensive refurbishment, The Halfway House, Grenofen has once again opened its doors to the public. New owner Peter Storey (formerly of Café Liaison) purchased the Halfway with the intention of turning it into an award-winning bar and restaurant serving seasonal, locally sourced produce. Head chef, Graham Ledwith spent six years working at Tanners with Chris and James Tanner before moving on to The Dartmoor Union as head chef, gaining a rosette and winning Les Routiers Best Pub Food award. Sous chef Richard Nicholls (winner of 2nd place in the UK Young Pub Chef Awards 2006) worked with Graham at both Tanners and The Dartmoor Union. A new and eagerly awaited restaurant has now opened at Sutton Harbour, Plymouth. Bistro Bacchanalia – formerly known as Bistro Bené – opened its doors the June following a complete renovation. The new restaurant is totally unrecognisable from its previous incarnation according to owners Bruce and Lesley-Ann Brunning, hence the name change. The Brunnings also own the Turtley Corn Mill at Avonwick and are delighted to finally find premises in such a high quality location for their new venture. ROMA ESPRESSO BAR
A former hotel on Ebrington Street has reopened as a lively new boutique bar. Reds, the former Trafalgar Hotel, has been transformed by its owners Admiral Taverns. Original features such as the ornate ceiling and doors have been restored and combined with a new bar, flooring, giant plasma screens. Landlord Mike Smith says “the transformation is fantastic – far better than I ever imagined.” Reds has already had a great response from customers and with lots of events planned for the months ahead, Mike hopes many more people will come and see one of the best looking bars in the city.
September saw the opening of Roma Espresso Bar in Berkeley Square (off Notte Street) in the city’s ‘business quarter’. When popular demand outgrew capacity at Café Roma, the alfresco kiosk in the civic centre square, owner Andy Baker decided it was time to expand. Set in a beautiful listed building complete with grand entrance and a statue of Sir Francis Drake, Roma now offers their existing clientele somewhere to enjoy their products without being battered by the elements. The Barbican now has yet another great venue. Lavish is located on Southside Street (where Bar Rhumba used to be) and like the name suggests, it is a classy, but sassy new opening. It is the brainchild of owner Barry Oxinou of Barbican Leisure Bars, and is the product of five months work, the end result of which, is something truly unique. Open throughout the day for food, and with the ability to serve food past the 8pm cut-off point most bars have, it gives you the chance to go to the theatre or cinema and still get a bite to eat. trendy, energetic restaurant is taking the Plymouth dining experience to exciting new heights. Morgan’s Brasserie, found slap in the middle of Plymouth centre, is a city restaurant for city people. Everything about Morgan’s is designed to cater to the demands of those with active lives and who just love eating out. Whether it’s express-service, quality lunches or leisurely three-course dinners the staff will go out of their way to ensure customers have a pleasurable and memorable experience. Morgan’s Brasserie, which opened in July 2006, offers superb, affordable food in a friendly and welcoming setting. It is a large, modern establishment, with a fresh, contemporary vibe. “People feel at ease when they come in it’s important for people to feel relaxed and comfortable as well as enjoy the good food,” said manager Craig Thompson.

The décor is striking and inviting, but not overstated. Customers can choose the alluring, romantic, red side with a low ceiling and soft lighting or the main room, which is light and spacious. With an open-plan kitchen diners can witness the vivacity with which the chefs work. The staff too were a lovely bunch. They knew the menu and were clearly well trained but they weren’t over fussy. After ordering the food they morphed into the background and were almost unnoticeable – the sign of good service. Morgan’s comfortably caters for up to 120 diners on the lunch service. There is a lively and friendly ambiance, people arriving and leaving, chatting and eating – the restaurant really captures the energetic hustle and bustle of city life. And the lunch menu, which has around 15 choices ranging from moules marinieres to a beef open sandwich, is designed to be served within a matter of minutes.

What is your name: Ian Mustill. Where do you work now? Boringdon Hall Hotel. Where have you worked before? I spent 3 years working at Hyde Park Hotel in Knightsbridge then a year and a half working at the Michelin star Eastwell Manor in Ashford. I also spent 5 years working at Lanstone House in Winchester. While I was there we earned 2 AA Rosettes. Since moving to Plymouth I have been Head Chef at various restaurants over the past 14 years. Who taught you to cook? I was taught at Westminster College, which is renowned for being the best in the Country. I spent three years there. It was a fantastic experience and I recommend it to anyone. What is your speciality dish? I would have to say fish dishes. Plymouth is renowned for its fish markets and the 14 MENU GUIDE | PLYMOUTH
choice available is enough to make anyone passionate about seafood. I love working with fish. Which chef do you currently admire? It would have to be Raymond Blanc from Le Manoir aux Quat' Saisons, and Anton Mosimann from the restaurant, Mosimann’s. For a short period I was very fortunate to be able to work with these talented chefs. It was a great experience and they taught me some very valuable skills.

Is there anywhere you haven't eaten that you're dying to try? The Rooftop Restaurant and the Royal Garden in London. Both have fantastic reputations. Unfortunately both are far too expensive for me. If you could cook for two famous people whom would they be and what would you cook them? Being that I’m a fanatical Chelsea fan, it would have to be John Terry and Frank Lampard. I would treat them both to Sea bass with a Fennel Froth accompanied with grilled vine cherry tomatoes, with quenelle of smoked haddock mousse. In your experience what is the most important thing about cooking? Knowing your ingredients, most definitely. Using fresh products and doing a taste test before serving is very important. Also having a good kitchen brigade behind you.

Firstly my mentor at Plymouth College, Colin Ormston, who taught me and helped me understand the basics of cookery extremely well. Secondly Philip Burgess, who was my executive head chef at The Arundell who helped to take my cookery to the next level.
Where else do you eat out locally? I Love to eat at Browns Hotel as I live in Tavistock and it is only a short walk home after great food and wine. I also rate Lewtrenchard Manor. It has very good service in a beautiful building with stunning surroundings.
In your experience what is the most important thing about cooking? Sourcing and using the freshest local and seasonal products possible, then using them to create a well rounded, balanced and flavoured dish as my end product, because as a chef that is what I am judged on - my food!!
Is there anywhere you haven't eaten that you're dying to try? The Fat Duck at Bray. I am very intrigued and interested in Heston Blumenthals’ precision and skill of cookery.
What is your name: Lee Holland. Where do you work now? Barbican kitchen (Tanners restaurants) as Head Chef. Where have you worked before? I spent a long time in London working for Hilton hotels, Also the De Vere group including the Belfry home of the Ryder cup, and the Royal Bath hotel Bournemouth. Who taught you to cook? That’s a difficult question there’s been so many different chefs, David Atkinson executive chef of the London Hilton was a great inspiration, But Chris and James Tanner are a massive bonus to my cooking at the moment. They have a fantastic knowledge of food which they pass on daily. What is your speciality dish? Creedy carder duck breast with honey and five spice fondant potatoes, it really is a firm favourite at Barbican Kitchen, but also I love
to cook fresh local fish. Being on the coast we have so much choice, in fact I’d say we’re spoilt for choice really. Which chef do you currently admire? Apart from Chris and James Tanner, Gordon Ramsay who’s very hard, very fair and has a great head for business. You only have to look at the empire he has built, which has all come from hard work. Which chef do you currently admire? Michael Caines MBE, his food is fresh and vibrant and cooked to the highest standard, He prides himself on using the best local produce and is a great entrepreneur as well as a fantastic chef.

TAKES TO THE STAGE
D
espite their knowledge of pubs, the couple longed for a Restaurant and Bistro. Bacchanalia’s waterside location, with its proximity to the fish market, made it the perfect choice for this new venture. The unusual name is the source of much conversation. It was inspired by the wild and mystic festivals held by the Roman God of Wine, Bacchus, in about 200BC and whilst Bruce and Lesley-Ann don’t promise that these ‘orgies’ of food and wine will be replicated on a daily basis they do hope to bring some of that enthusiasm to the table! Lesley-Ann says: “We have found running a restaurant is a little bit more theatre than you get in a pub. It’s our first proper restaurant and it’s been fantastic. We’ve received lots of positive comments and we’re very happy here.” Bistro Bacchanalia’s new look was revealed in June 2007 and since then the menu has undergone some fine tweaking to offer something exceptional. Now, what

Bistro Bacchanalia is a new restaurant located in the heart of Plymouth’s historic Sutton Harbour. The restaurant was a new challenge for Bruce and Lesley-Ann Brunning whose Devonshire history came in the form of pubs - they currently own The Turtley Corn Mill at Avonwick, and formerly owned a pub in Noss Mayo. was already a well-established restaurant has been transformed into a light, modern one with great food and a fantastic wine list, much of which is available by the glass. The Bistro is very fish oriented; Plymouth has a fantastic fish market and the chefs work very closely with their fish suppliers to ensure they have the very best of what’s available each day. The food is always fresh, local, seasonal produce – what’s in season influences what is on the menu – and all the dishes are made onsite. Although fish does play a big part, there is also meat on offer for the carnivores; it’s very
simple food such as surf ‘n’ turf – a 6oz fillet steak topped with garlic prawns and served with fries, or a confit of duck. They also cater for vegetarians with a selection of pasta and risotto dishes such as creamy asparagus risotto served with locally made bread, or linguine pasta tossed with oven-roasted ratatouille topped with parmesan shavings. The menu is also supplemented by daily specials and at lunchtimes you can choose two courses for a set price. Customers can take their pick from a selection of the starters, main course

and desserts that are on the normal menu. Behind the scenes are three excellent chefs with the executive chef, Chris Whitehead, dividing his time between the Bacchanalia and The Turtley Corn Mill. Alongside the food they have the Enomatic wine system which allows them to offer 18 wines by the glass from a house wine to a premium wine. Bistro Bacchanalia are only the third venue in the country to use this superb Italian system, one of the others being Selfridges in London. It’s especially good because everyone likes different wines and this allows you to have something you have always wanted to try without having to consume the whole bottle! It’s a very important part of what Bistro Bacchanalia is all about - great, fresh seasonal English food and interesting wines,
in a simple stylish location. As for the future “We don’t want to be a multiple operator,” assured Lesley-Ann. “We enjoy being very hands-on and it’s important for us to keep that. “It’s all a bit of a family affair as our eldest daughter, Sam, who is 25, manages The Turtley Corn Mill with her partner Scott Colton. MACKAY VISION THE
Four years ago a pioneering and inspiring ‘vision’ was created for Plymouth by David Mackay – the world renowned architect who revived the fortunes of Barcelona. It advised the council to exploit its wealth of waterfronts, build sky-reaching mixed-use developments and create a European café-culture. Helen Wasilewska looks at how this vision impacts on the Plymouth dining scene.
P
lymouth is surrounded by water, with the River Tavy on one side, the River Plym on the other and the Plymouth Sound stretching out to sea. Speak to anyone in the city and they will tell you they enjoy relaxing by the water, be it eating out or having a few drinks. The city has finally realised there is a huge opportunity to exploit this asset and the council is at last throwing loads of cash into developing many of the waterside sites, such as Millbay, Devonport and Sutton Harbour, that have been neglected for so many years. This is all thanks to the genius architect, David Mackay, who produced a list of

recommendations for the council to revive the city and make it more welcoming and prosperous. Creating a café culture, especially on the waterfront, is at the heart of those plans. There is already evidence of this on the Barbican, where fixed alfresco dining facilities have been erected. But now developments in Millbay and Sutton Harbour are beginning to take shape and the city can expect to see more waterside restaurants filling the ground floor slots of these developments. While this sounds exciting for the people of Plymouth, the few restaurants which
currently boast waterside views will soon face much stiffer competition. Despite this, it seems most restaurateurs are either taking advantage of the opportunity to branch out into new premises, or they are looking at ways of capturing new markets to differentiate from the new competition. Edmond Davari, owner of several city restaurants, has already invested in the Sutton Harbour developments and he now has his eye on Clyde Quay. He said: “I’m all for anything that will move Plymouth forward and turn it into a vibrant city like Brighton. I already have two

restaurants on Sutton Harbour and I have two more set to open in the new Eau 2 building in the next few months – Asia Chic and Rocco and Lola. “I’m always on the lookout for new premises and I will certainly show an interest in the waterside venues in Millbay.” Others are simply glad to see the city making the most of its coastline. Jo Hocking is manager of Chloe’s fine dining restaurant on Princess Street, in the city centre. Although she has no plans to use the new developments as a window to open a second Chloe’s, she welcomes the increased competition. PLYMOUTH | MENU GUIDE 19

She said: “We have no intention of branching out and setting up another Chloe’s on the waterside because when people come to Chloe’s they expect excellent food and service and we wouldn’t be able to offer that in another restaurant, because we can only be in one place at one time.” She added: “Any self respecting business person knows that competition is healthy because it keeps you on your toes. “For people in Plymouth, if the waterfront is being used to its full potential it will bring more people into the city. Those people won’t always go to the same bars and restaurants every time, so we are bound to benefit from the waterfront being developed.” Around Sutton Harbour, sky reaching residential blocks are springing up with ground floor business space for restaurants. Joined Up Whiting is one of the first to arrive on the scene. The plans for Millbay are set to transform the city. The £350 million development, which includes a tree-lined boulevard from the city centre to the new marina, known as
have put the Millbay plans together. Howard Morris, ECf project director, said: “Our proposals are going to turn a spectacularly located but largely forgotten corner of Plymouth into a focal point for investment, a great place to live and work and a leisure destination any city would be proud of.”

Along the boulevard and around the marina there will be shops restaurants, cafés and bars, making the most of the waterside. Someone who will certainly be competing directly for the new punters is Steve Bowen, owner of The Waterfront bar and restaurant on West Hoe. Despite this, he can only see the good in the changes. He said: “I buy into the Mackay vision for Plymouth whole heartedly. Before I took on the Waterfront I visited Cornwall from
London five years on the trot and never once turned left into Plymouth. I think anything that puts Plymouth on the map in terms of cultural reference, regeneration and places to eat out, is a good thing. “The waterfront is the crown jewels of Plymouth and yet so few people know about it. We need to do everything we can to raise the profile of it.” Embracing the Mackay vision, it appears, will be a win win situation for the city. People in Plymouth will have a better choice of places to socialise on the waterside drawing more diners to the city from far and wide. And restaurateurs all welcome the increased competition. Some chose to be a part of the new vision, buying into the waterside developments, while others are happy to gear up for the increased competition and the growing number of people who are expected to visit the city.

As a rule we, the Brits, are generally pretty poor when it comes to giving positive feedback or constructive criticism – both of which are hugely important to the development of an establishment and future customer service. We think that when someone feels that faint grumble of dissatisfaction they should not feel embarrassed but speak up and this is how you do it…
O
nly occasionally will you hear a dissatisfied customer on the table next to you rant at the waitress about the fact that the chips were cold or that a glass of red wine arrived when white was ordered. And rarely do you find a member of the ‘oh so polite’ British public shouting at staff in a restaurant or even politely complaining to the right people about the faults with their breakfast, lunch or dinner. I’ve done a bit of research and have come to the conclusion that the golden rule is this; if you’ve got something negative to say, say it immediately (not when the bill arrives). I think you will find most restaurants will try and rectify the problem quickly with little objection and minimal upset to your meal experience. In fact it is standard practice for a member of staff to ask you if everything is all right with your meal. This is not just a nicety, it is the ethos of customer service. If you are not satisfied with something, use this opportunity that is given to you. Most of all though, don't be shy - you're the customer and you’re the one paying for a meal to be served to you and cooked to your liking. Here are some situations you might well find yourself in: 24 MENU GUIDE | PLYMOUTH

The food takes forever to arrive. What is 'too long' anyway? The length of time it takes to prepare your meal will vary depending on the type of restaurant. Top quality fine dining is socalled because the food is prepared to order from fresh ingredients; so don’t expect it to arrive in ten minutes. And a well-done steak will take time! That said, if you do think the food has taken much too long, call over the waiter and ask how long before your meal arrives, as you have waited long enough. If they don’t know, ask them to check. If the response they give you is not acceptable then you’re perfectly within you rights to cancel your order, ask and pay for the bill (if you've had
drinks or starters). Or if you are not in such a rush, you can ask for the manager and explain the situation to them, more often than not they will knock an agreed amount off the total of the bill or compensate you some other way.

Your meals arrive at different times. Now this is a tricky one, but not if you speak to the waiter straight away and ask for the other meal. If the response is more than a few minutes, the best option is to return the meal immediately and ask them to be served at the same time. I don't really think this warrants money off the bill total, unless of cause you then progress to scenario number three!

you ever need to order extra once your meal has arrived, bear in mind that some side dishes will take a bit of time to prepare. Ask how long they will take to arrive – there is nothing worse than finishing your plate before the green beans arrive! If you are not eating nouveau cuisine and are disappointed by the size of a dish, then again, immediately get the waiters attention and ask if what you have received is a normal size portion for this restaurant. You are quite within your right to complain to the manager if you think the meal is 'not good value'.

The waiting staff are rude. My pet hate and completely unacceptable. Always ask to see the manager at end of the meal and explain the situation. I guarantee you any establishment worth its weight will almost certainly be grateful you mentioned it.

The food Is under cooked. This is wholly unacceptable and if dealing with chicken or some types of shell-fish, then it could well be dangerous as well. If this is the case, ask for the manager immediately, explain the situation and ask for a new meal. If this upsets your partner's meal, then don’t be afraid to return it also. Just so you understand though we’re talking about foods that are unsafe to eat raw, not a steak that could be cooked a little more and the problem solved.

Your food is cold - when it's supposed to be hot! Returning your meal (and your partner's if necessary) should be done without thinking. Just don't do this if you've ordered Gazpacho soup!

You can't bear to look at the food let alone eat it! I’ve experienced this one first hand – Ox tongue was the culprit on my plate. I like tongue, but I’m talking fine slithers of it not a tongue in its entirety! The waiting staff are your best source of information here. If you don’t understand something on the menu, or the description is not clear, ASK! Your waiter should be trained to be able to explain everything on the menu. If this fails, and you

didn’t expect the seafood salad to contain fully-fledged tentacles, you should complain and ask for something different. This one takes a bit of bottle, but if you send your meal back and ask for something else make sure you do this immediately and whatever you do don’t eat half of it first. A lot of restaurants will only charge you for the one meal but I urge you to check that this is the case before re-ordering.

The portions are tiny. Giant plates and small portions are common in restaurants these days. I would say though that the small dishes ought to be accompanied by side orders of vegetables or potatoes unless described otherwise. And if
You have been automatically charged for service that was poor. Another pet hate of mine and for many a grey area. If you have had poor service, but haven’t complained, then you don't really deserve to get anything (including a service charge) knocked off the bill. If you don't believe it stated on the menu that the service charge was mandatory however, then ask to see it again (it has to state this fact by law). If it doesn't then you’re quite within your right to refuse to pay the extra charge. Finally. One bad experience does not necessarily make a bad restaurant – particularly if they do everything they can to rectify it. Last of all and most importantly, please please remember to let the venue know if you’re happy with your experience – there are so many great restaurants out there and they will always appreciate hearing compliments! - and then give them a tip at least 10% should do it!

The Menu Guide catches up with Plymouth Argyle's charismatic manager Ian Holloway who shares his views on everything from Cornish Pasties to Gordon Ramsay. Not only is he the perfect gentleman, it seems that his talents extend well beyond the football world.
AROUND THE TABLE WITH

HOLLOWAY MG: What are your top favourite restaurants locally? IH: All of them. I can honestly say that I haven’t had a bad meal since I’ve been in the West Country. That’s probably why I’ve got this little belly on me. MG: What is your favourite meal? IH: I’d never tried a proper Cornish pasty before I came to Plymouth but it didn’t take me long to become a convert. Lovely jubbly. MG: What food do you dislike? IH: I find it hard to swallow some of Gordon Sparks’ jokes. Does that count? MG: Who pays the bill, you or your wife? IH: Are you kidding?
I’m a gentleman, and the gentleman always pays. MG: Do you leave tips and if yes what is the biggest? IH: I always tip. What’s my top tip? Don't waste money buying expensive binoculars - simply stand closer to the object you wish to view. MG: Have you ever complained in a restaurant? IH: Yes – but never about the food. Once or twice, I’ve made a few comments about some rather poor service. MG: Do you consider yourself as a bit of a chef? IH: Only the undefeated Plymouth Flavour Fest champion for two consecutive years – Sparksy’s getting a tiny bit peeved, I think. MG: If you opened a restaurant, what style would it be?
IH: It would be called Ollie’s, naturally, and I’d let the Chef choose the style. I know a few good chefs and I’m prepared to bow to their far superior knowledge. MG: When you played, what was your pre match meal? IH: Always beans on toast. I felt they gave me extra propulsion! Things have moved on a lot since I played, with most clubs employing sports scientists and nutritionists to give the players the best possible chance of playing to the top of their ability.
MG: If you were head chef, who out of your current squad would be working as pot wash? IH: I’m not sure any of them have ever done any washing up in their life. I’d have to pick the one who’d trained the worst during the week – make it a punishment. MG: Would you sign Gordon Ramsay as a right back? MG: What is your view on the local restaurant scene? IH: Brilliant variety, brilliant food, brilliant chefs. Brilliant, really.
MG: What’s your opinion on tv chefs? IH: Well, they are very clever, talking and cooking all these wonderful meals at the same time. I need all my concentration just to boil an egg.
