espite launching without any fanfare last year, word has spread about the food offering and it is becoming increasingly difficult to secure a booking, especially at weekends. Proprietors Nic and Steve have spent the winter visiting local farms and traders to build up a truly local supply. Their avowed intent is to produce a menu with every ingredient (apart from spices says Steve!) travelling
only twenty food miles or less into the kitchen. Their lobsters travel a lot less than that as they are caught just in the Sound, but Steve admits that it has been an uphill struggle to complete his mission. “The distribution network here favours London, and I have been in the ridiculous position of having meat transported to London and then couriered back to me. “T
he Miners is up for sale”, my father casually dropped into conversation one winter’s morning as he called from his home in Devon. My husband, Paul and I were attempting to get our five month old daughter ready for a walk in the park. We were happy and quite content with our lot in the west end of Glasgow and the thought of uprooting our life and moving the 500 miles south to deepest darkest Devon had never entered our heads; always thinking that we would be patrons of a trendy west end bar and eatery! So, to find ourselves installing heating and stripping walls and carpets in this 300 year old property some seven months later came as quite a shock for some time after we moved into the pub. Our ancient property has been in my family for over 100 years, with the Honey’s continuing its tradition as a working farm. Its role changed in the earlier part of the last century. The residents of Hemerdon: workers for Hemerdon House and local miners, all shared the responsibility for being hosts of the village cider house, but as one of the largest properties in the middle of the village it made sense for the Honey’s farm to take on the full mantle. For many years only cider and then ale was sold in the front room of the building and animals could still be seen (and smelled!) in the outhouses. It began to be the life-blood of the village and surrounding areas and continued to develop as liquor licences were granted, and upgrades were made to the bar. When we moved in, in 2003, the last upgrade had taken place in the early 1970’s; she was a tired giant of a property in need of some tender loving care. This rewarding, yet difficult job was begun with the installation of our Garden Restaurant; a 110 seater glass atrium and patio to the rear of the building in our expansive gardens.
With views over Plymouth and the surrounding countryside it never fails to take my breath away. It must have had the same effect on our customers who not only use it on a day to day basis but have taken the jump to booking weddings and celebrations with us. The bar area which has the original beams and 2-feet thick walls, has been enhanced, taking care not to strip its ancient personality. We have a fantastic log fire in the cooler months and have live music in the bar most Friday nights with outside events such as our 2007 music festival which will be taking place in the summer utilising the bar to its fullest potential. The large outside children’s play
Sunday lunch that’s fine too, the same menu is available in the bar, restaurant, patio and swing-park. Our dedicated team of chefs headed up by our very talented Richard Stephenson prepare everything we serve from scratch. They take care to source the best in seasonal produce from seafood to local meats, vegetables and cheeses, keeping the food simple yet interesting which allows the main components of the dish to shine through in every case. We take that ethos through to the children’s menu which is also all freshly prepared with healthy options. The Miners Arms is our life and giving that personal touch to our customers unlike so

The improvements on a property of this kind are never finished and every year we try to develop different areas. Having been spoiled with bars and restaurants in Glasgow, it gave us great satisfaction bringing the friendly yet efficient service style we were used to, to the Miners Arms. We change our menu every few days to keep up with the best produce available at that time and to keep it interesting for our customers. We have balanced the menu so that you have the best in flexible dining. If you want to have a three course gastronomic feast in your Saturday night finest, chill out with a beer and burger or bring the family for
many of the faceless pubs and restaurants owned by large conglomerates, is something we are really proud of as a family of three – soon to be four – we can only count our blessings that we have a few years before our new addition starts her own demands to be taken to the swing park! The first rule of choosing what to drink with your meal is that there are no rules. The second is to follow your instincts – they’re usually right, says David Ireland

TODRINK? T
he first thing to remember about matching food and wine is to forget the rules. Choosing what to drink with a meal is not a science and there are no rockets involved. It's largely about common sense, so trust your judgement and follow your tastebuds. While there are no strict rules, there are, however, a few pieces of friendly advice that might add to the enjoyment of a good meal. First and foremost, I’d recommend choosing a wine that you would want to drink even if you weren’t having something to eat. Despite all the guff written about matching wine and food, you will probably drink most of the wine without the benefit of food – either before the food is served or after you've finished your meal. Therefore, you will not go too far wrong if you make sure the food is good and the wine is, too. That way even if the match is not perfect, you will still enjoy what you're drinking. Some wine buffs suggest that mediocre wines can be improved by serving them with the right food. The flaw in that reasoning, however, is the scenario described above. If the match does not quite work as well as you hope, you're stuck with an average wine. So don't try to get a wine to outperform itself. Just pick a good wine in the first place. This is where common sense comes in. The old rule about ‘white wine with fish and red wine with meat’ made perfect sense in the days when white wines were light and fruity and red wines were tannic and weighty. But today, when most Chardonnays are heavier than most Pinot Noirs and even some Cabernets, the old colour-coding rule does not always work. This tried-and-tested approach will minimise real dud choices, but it will also limit the possibility of your having one of those exhilarating moments when an unlikely combination hits the jackpot and creates a truly memorable experience. And while food has got more complicated in recent years, so too has wine. While red wine might once have ranged from Bordeaux

to Burgundy and back again, supermarkets, off-licences and restaurants now stock Cabernets and Pinot Noirs from a dozen different countries in just as many styles. Unfortunately, one result of this huge variety of choice is that the chances of making a bad match are exponentially increased. Red wines as a category are distinct from whites in two main ways: Tannins – many red wines have them, few white wines do – and flavours. White and red wines share many common flavours; both can be spicy, buttery, leathery, earthy or floral. But the apple, pear and citrus flavours in many white wines seldom show up in reds, and the currant, cherry and stone-fruit flavours of red grapes usually do not appear in whites. In the wine-and-food matching game, these flavour differences come under the heading of subtleties. You can make better wine choices by focusing on a wine's size and weight. Like restaurant-goers, wines come in all shapes and sizes. To match them with food, it's useful to know where they fit on a spectrum, with the lightest wines at one end and fullerbodied wines towards the other end. Hearty food needs a hearty wine, because it will make a lighter wine taste weak. With lighter food, you have more leeway. Lighter wines will balance nicely, of course, but heartier wines will still show you all they have. Purists may complain that fullbodied wines overwhelm less hearty foods, but the truth is that anything but the blandest food still tastes fine after a sip of a heavyweight wine. These simple observations explain why a flowery Muscadet or a steely Riesling is a pleasing complement to a plate of fresh oysters, why a robust Cabernet enhances lamb chops and why a meaty Burgundy is great with roast beef. You can add variety to your selections by moving up and down the scale, while remaining roughly in the same quartile. The wine needn’t stop flowing at the end of the main course, so don’t be afraid to carry on quaffing when the pudding trolley arrives
on the scene. Dessert wines are a great way to finish off a meal and can really add to the enjoyment of a third course, whether it be an apple tart, chocolate mousse or cheese selection. Dessert wines, such as Muscats and Sauternes, are a fabulous addition to a sharp fruit salad, while a spicy glass of port will cut through the stodge of a chocolate torte. Although Stilton is traditionally served with port around the Christmas table, why not try a late harvest Gewürztraminer or Riesling? And don’t just stick to whites – there are some fabulous sweet red dessert wines to chose from. While these choices might seem obvious if you are eating in a traditional French, Italian or modern English restaurant, what if you’ve opted for an Indian, Chinese or Thai meal?
Beer works excellently with robust foods like stews and casseroles, or indeed any meal that uses beer as an ingredient, such as a steak-and-ale pie. So don’t be afraid to order a beer, however many Michelin stars are pinned to the chef’s jacket. The other plus for beer drinkers is that a beer generally tastes the same, when and wherever it is drunk. There are no vintages, no good and bad years, so you can be sure of a consistent flavour – which is more than can be said for many wines, even those whose grapes were picked from the same vineyard during the same week. Lastly, if reading a wine list is like looking at a Russian translation of the bible – or you’re too busy chatting to give the wine list much thought – hold up your hands and let
THE OLD RULE ABOUT ‘WHITE WINE WITH FISH AND RED WINE WITH MEAT’ MADE PERFECT SENSE IN THE DAYS WHEN WHITE WINES WERE LIGHT AND FRUITY AND RED WINES WERE TANNIC AND WEIGHTY These restaurants all serve wine, but why do so many of us still opt for a pint of lager or a beer rather than asking to see the wine list? The answer is partly down to an oldfashioned ‘hot food=cold drink’ philosophy, but in reality it is more due to the fact that beer works extremely well with spicy food, and that hot curries and peppery flavours are enhanced by a well chosen lager-beer. If you do fancy a glass of wine with a spicy dish, then there are plenty of options to choose from. If you are sticking to white wines, then those with high acidity levels, like Sauvignon Blanc, will work well with the bold flavours found in spicy seafoods, like prawns. Conversely, red wines with plenty of tannins or a weighty Shiraz are a good match for heavier meat dishes, while something less rich, like tandoori chicken for example, is just as happy with a lighter-bodied Beaujolais as it is with a pint of ice-cold Cobra. In fact there are many meals to be had at many restaurants – not just Chinese and Indians – where a beer is an equally suitable accompaniment to the food as wine.

ince being bought by local property entrepreneur, John Steven, the beautiful old building, previously a convent, has undergone a year-long transformation to create an elegant and exclusive hotel in the very heart of this historic part of Plympton. It has 15 individually designed bedrooms each with en-suite facilities, some featuring walk-in wet rooms, steam rooms! However, the main feature of the property has to be the bar and restaurant facilities which have a distinctly French feel with a large open plan bar with comfy leather sofas and a dining room for 60, plus a private dining room for parties of up to 40. St Elizabeth’s talented kitchen team is led by Head Chef, Jean-Paul Kiely, who has a Michelin star background. He commented,

What are your names: Pete May and Neil Kinger. Where do you work now? We currently have the joint head chef’s position at the Fishbone Restaurant on Plymouth International Business Park. Where have you worked before? Pete trained in the Navy as a chef for 5 years, cooking in some exotic and some hostile environments whilst serving. Amongst other places, Neil cooked fine dining for an outside catering company called Choice Cuisine. Who taught you to cook? Pete trained mainly under a chef called Matt Schofield in the Navy. Upon leaving he continued training under Greg Smith, head chef for the Commodore of Davenport Dockyard. Whilst Neil probably learnt the most from his former head chef at the Fishbone – Wayne Bowman.

What is your speciality dish? Pete likes to cook herb crusted rack of Lamb with dauphiniose. Neil likes to cook with fish and particularly fillet lemon sole, stuffed with vegetables and served with shallot vinegar and spiced potato terrine. Which chef do you currently admire? We both admire Anthony Bourdain for his honesty in his book Kitchen Confidential: Adventures in the Culinary Underbelly. He’s not afraid of telling the truth. I can also reassure anyone who has read the book that nothing like that happens in our kitchen. Where else do you eat out locally? We both recently ate out at Bella Napoli on the Barbican and enjoyed it very much. The food was lovely and presentation was great along with the atmosphere. Is there anywhere you haven't eaten that you're dying to try? One of our good friends now works at
Chloe’s restaurant and we would like to try eating there. Hopefully mentioning him will give us a good discount when we do get around to eating there! If you could cook for two famous people whom would they be and what would you cook them? Pete has already cooked for the Queen so topping that would be hard. It would be fun to cook for Lee Evans and we would have to do a pasta dish to help keep his energy levels up. We would let Sacha Baron Cohen join him for a fun-filled night in the Fishbone. In your experience what is the most important thing about cooking? We both believe in fresh ingredients and presentation. We make all our own stocks, sauces and desserts, keeping everything as fresh as we can to give our customers a great experience.

I was previously owner and chef for 14 years at the Chambers Restaurant in Notte Street. I spent 10 years in Australia being head chef at Dunk Island on the Great Barrier Reef and was head chef at the Sheraton Hotel in Perth WA. Also, I was a Chef on a luxury yacht in the South of France and spent time working at various prestigious hotels and restaurants.
What is your speciality dish? Our present most popular dishes are: Barbican Fish Pie from the lunch menu, a warm salad of scallops, bacon and avocado with a light Caesar dressing from the ‘specials’ board and Baileys Bread and Butter Pudding from our Desserts board.

Who taught you to cook? I spent five years at Catering College, and worked with numerous chefs along the way.
If you could cook for two famous people whom would they be and what would you cook them? Robin Williams (funniest man on the planet) and Rod Stewart (the greatest rock and roller apart from me!). Three way oriental chicken appetizer (starter) honey glazed welsh rack of lamb (from our specials board) Morgan’s chocolate espresso mouse (dessert board) – all from our present menu.
Where have you worked before? Previously at Boringdon Hall, and worked with Stuart and Samantha opening and establishing the Trading House and now joined up again at Chandlers Bar and Bistro. Who taught you to cook? No one in particular. I’ve worked at many hotels and restaurants and learnt a lot of different methods and styles. I would like to think I’ve pinched the best from each of the chefs I’ve worked for in the past. What is your speciality dish? I prefer using fresh fish. I think it’s something people don’t tend to buy a lot and it’s such a shame, as it’s cheaper than most meats plus you can do so much more with it. Although I don’t have a specialty dish it would definately be a fresh fish dish.
Where else do you eat out locally? Lewtrenchard Manor in Okehampton. Is there anywhere you haven't eaten that you're dying to try? Louis XV in Monte Carlo, a magnificent restaurant owned by Alain Ducasse. If you could cook for two famous people whom would they be and what would you cook them? Gordon Ramsay or Marco Pierre White. I know they would give me a good judgment of the standard of food I’m producing. I would cook a dish combining, Scallops, Lobster and Pasta, as these ingredients seem to be popular for them to give good feedback on. For fun, Shania Twaine as I would love to meet her, and I know she is very fussy and it would be a challenge.

W
ith such a legacy to his name, one cannot help wonder what sort of person takes on the challenge of turning a city such as Plymouth - 20 years ago - into a cosmopolitan and fashionable centre somewhere people want to be seen eating and drinking. He is a charismatic man with a flare for creativity and meeting people, this he tells me is down to his star sign - Pisces. He is also a headstrong and ambitious businessman with a huge ego and a desire to be recognised and known. Edmond's appearance speaks volumes about his personality and his passion for attention to detail in his restaurants. He is immaculately dressed in an expensive threepiece suit, his hair combed and his shoes polished. He tells me: "Good presentation is essential for a successful restaurant." And it is upon this basis that Edmond has built up his empire of vibrant restaurants in Plymouth and Exeter, each one special in its own way. But Edmond hasn't always had life so good. He came to study computer programming in England 30 years ago and lived comfortably on money sent to him from his father in Iran. But when the revolution struck his homeland, Edmond was left with no income and no support. He clearly remembers one desperate day: "I had gone without food for 24 hours and I had no money to put in the electricity meter. I went through my settee and found 23p in pennies. I went to the local shop and thought, 'what can I buy for 23p that will fill me up?' I found desiccated coconut and I took it home and ate the flakes sat at the table telling myself 'mmm it's delicious'." In spite of the hardship, Edmond firmly believes he learnt invaluable lessons during those times. Edmond's first job was cleaning toilets while he was at university. He then went on to become the washer-up boy at a nightclub, in Oxford, and it was here that he got his

lucky break. After an interview as "senior" washer-up boy at another club, he was called back the next day for a second interrogation, where he learnt the company wanted to hire him as general manager. "I couldn't believe it," he said. "I tried to play it really cool and said I would think about it. I went back to my other job and they said I couldn't take it because they wanted to offer me a job as general manager as well." Eventually he accepted the job at Oxford's Downtown Manhattan club. And shortly after, he landed the post of general manager at a leisure club in London. He has never looked back. "In my restaurants, a lot of my senior management are people who have actually started as a washer upper and I am very proud of those people as they have followed the same path that I have. I don't have tailormade managers - most have started at the bottom like me. "I like my staff to be very creative people, almost like artists. They have to have free reins. Once you get someone who has got the personality you have to leave them free to put out their personality. Once I've

"So far I haven't failed," he said. Each of Edmond's restaurants has been new and exciting, introducing another cuisine to the city or a new concept of dining. When he first came to the South West, in 1984, he said all you could get was pizza and pasta. Edmond was working as catering manager at the Theatre Royal but his dream was to have his own business. Every day he walked past an empty premises next to the theatre. His dream was to turn it into a New York-style restaurant where people could pop in any time of the day, before or after a show.
After five years at the theatre he finally went for it. Sardi’s Brasserie opened in 1989 it’s now Lorenzos. The first nine months were very quiet, since Plymouth wasn't quite ready for a "brasserie" - the majority of customers asked if they sold women's underwear. A quick name change - to Sardi’s Restaurant - and business started to boom . "It really had its heyday," said Edmond. "It was the first place you could eat all day and that became our concept." Papa Joe's, in the Barbican Theatre, was Edmond's second restaurant and that became

Anybody who has lived in Plymouth for a few years will have heard of Edmond Davari, or at least his legacy of restaurants. In his time in the South West he has opened nine restaurants in Plymouth and also a handful in Exeter. He has played a pivotal role in developing the vibrant gourmet ambience that exists in Plymouth today and his plans for the future are just as exciting. Story by Helen Wasilewska

extremely popular. It was followed by Bougies, Cuba, Shoeless Ed's (Fuel) and the Painter (Chloe's). He then ventured to Exeter and opened Havana, Al Farid and Cohiba. Returning to Plymouth he created Zucca's and Souk on the Barbican, and Fat Mama's on North Hill. Edmond's flare for new and creative restaurants has slowly encouraged others to do the same. Twenty years ago, he went with a Spanish concept, "because that was the hip thing". He has since brought Mexican, Cuban, Italian and Moroccan cuisines to Plymouth, and his forthcoming restaurants are Asian and Catalan tapas. "I try to keep up with the trends and the fashion", he said . And the key to his success? "What I'm good at is manipulating senses. I feel that if a customer's walking through the
door they have to see something that's pleasing to the eye, something that smells good, something that obviously tastes great and the music you play must fit. When you've mastered the five senses you have a successful concept and you've created the atmosphere. "It's also important for me to have a designer restaurant. When I open a restaurant I design it - I have a vision in my head. I design my restaurants around a particular item of furnishing, it could be a cushion or a vase, and then everything evolves around that." Since setting up his first restaurant, Edmond has seen many "great changes" in Plymouth. "I'm glad in a way that a lot of the big national companies haven't realised the potential in Plymouth so local entrepreneurs have been left to get on with it. We've had a free run really, particularly in the last five years. "Plymouth businessmen are taking bigger risks. Before they wouldn't do that. Now, people are more daring and I feel I've been very influential in setting that trend. "Spending ÂŁ600,000 on a new business is a gamble. I've never opened something that's ordinary - I bring something dramatically different. And in a small way, making Plymouth a more pleasant place to eat." Plymouth's future is bright, according to Edmond. New shops are opening and the council's vision for Plymouth is "exciting", he says, although he still struggles with red tape in other areas. "There are a handful of entrepreneurs who are moving the industry forward, and finally the council have realised that the city's dependent on them for its success," he said. So to all those budding entrepreneurs in Plymouth, Edmond's advice is to "follow your dream and don't give up". Look out for Edmond's two new and exciting restaurants coming to Plymouth's Sutton Harbour in May. One is a New Yorkstyle, chic, sophisticated and sexy dim-sum bar, called Asia Chic. The other is a contemporary, Catalan tapas bar called Rocco and Lola.

While many hotels welcome dinner bookings from members of the public, Fishbone is open to all hungry guests at all times and there is no need to book, tables are always set aside for walk-in guests - a novel and ingenious idea which sets it apart in Plymouth's restaurant market. Located on the outskirts of the city, Fishbone is a stone's throw from Plymouth's International Airport and it sits in a prominent position in a fast developing business park. There is ample onsite free parking and thus, the restaurant is aptly placed to cater for all; from the busy and time-limited business person to the celebrating family. The meats too are locally sourced, from a traditional butcher in Gunnislake, in South East Cornwall. Homemade pork and apple sausages, Westcountry rump steak, succulent lamb shanks, Cornish hen and the best-selling Westcountry faggots are all provided by the surrounding farms. True to its name, Fishbone Restaurant & Bar has a good selection of fresh fish - but without the bones. The majority is locally caught and collected daily from the Barbican fish market. Bringing together the best of the Westcountry's fresh and traditional ingredients, Plymouth mussels is a delightful dish. The restaurant scene in Devon has really come on in the last few years too. Of all the recent openings I guess Joined Up Whiting is my favourite because it really is a fantastic reflection of what West Country life is all about. After a tough day at work I love to saunter down to Sutton Harbour. It's such a pleasure

to gaze at the yachts, breathe the sea air and watch the swans gliding around the marina. We generally ask for a window seat so that we can enjoy that beautiful blue light that falls on the harbour just before the sun goes down. My wife always orders their thick fish soup and then a fillet steak while I generally go for oysters or mussels and a fresh lobster. It's not at all expensive and the wine list is really well put together - try the Sharpham, it's a fantastic wine. Inside they've got a great nautical thing going on with sails hung from the ceiling and an oyster bar in the shape of a boat with port holes. The staff are really friendly and you can see the chefs beavering away in the kitchen. Occasionally one of the
kitchen brigade appears to whisk away a lobster from the tank in the restaurant. Yes Sir! As long as Plymouth keeps producing places like Joined Up Whiting I think I'll always be a West Country boy!

The function of Slow Food is to advocate the following: Food should taste GOOD: ◆ the franticfast world’s obsessions with unnecessary industrialisation, excessive ‘food miles’, standardisation and homogeneity very often result in bland food that simply doesn’t taste as good as food that has been produced locally with care, pride and passion.
Food should be CLEAN: ◆ it should be produced in a sustainable way, without any negative impact on our environment, and with a minimum of artificial intervention. Food should be produced in a FAIR way: ◆ its producers should not be exploited but should be paid a fair amount for their skill and labour. None of this means that Slow Food is against progress or technological advances. Far from it, Slow Food is a truly progressive concept that seeks to utilise mankind’s ever-expanding knowledge base to retain and develop the diversity of all that is best in our world heritage.

Protecting and preserving the environment is an issue which is today at the forefront of political agendas. From generating renewable energy, building carbon-neutral homes, and recycling domestic waste, there are many ways of reducing the amount of carbon we use on a corporate and an individual scale.
W
hile some firms may feel that an environmental policy is another restraint on the business, smartthinking restaurant owners in Plymouth are realising that creating dishes with a minimal carbon footprint is in fact drawing more customers through their doors. Plymouth is surrounded by a wealth of fresh ingredients. Its coastal position means there is no limit to the amount of fresh fish and seafood available. A matter of minutes from the city centre and you are surrounded by meat and dairy farms, vineyards, orchards and an abundance of healthy crops. By choosing to serve the ingredients that are grown and sourced on Plymouth’s doorstep, some restaurants are considerably reducing the number of miles the food has travelled before it reaches your pallate, therefore minimising the carbon footprint. Not only does this concept support the local farming and fishing economies, it guarantees that the food is fresh and seasonal and therefore of the utmost standard. With more and more pressure from authorities for people to stop and think, and to choose environmentally friendly options, such as energy-saving light bulbs, products with less packaging and low-emission cars, diners too are searching for food, which supports this message.

And the added bonus is that it tastes great. Anthony Loheac, manager of Plymouth’s Piermasters restaurant, on the Barbican, firmly believes in sourcing ingredients from the surrounding area. When the owner of the restaurant took the business on 30 years ago, she couldn’t believe there was nowhere in Plymouth supporting the local fishing and farming economy. Today, however, the restaurant is renowned for its fresh fish reputation, as well as other meats. Mr Loheac said: “We make a point here that everything is really fresh. We don’t have a paper menu, we have a board, as it depends on what catch is brought in. The menu is often changed throughout the day if a new catch is brought in. That’s how fresh it is.” Not only does Piermasters serve fresh fish and seafood, Mr Loheac said that the beef is reared and bought from a Devon farm and the venison is from Exmoor. The vegetables are dependent on what is available at the neighbouring farms. “Nothing travels more than about 30 miles to get to your plate,” added Mr Loheac. Piermasters attracts the crowds because it is such good value for money. Mr Loheac said: “We always tell diners where their food comes from and they are always so surprised at the quality. And they always come back.” He added: “Fishermen and people in
agriculture have suffered so much with mad cow disease and other problems so it’s really important that we support them. I think it would be stupid and suicidal to not work with these people – they are giving us a fantastic product, we would be mad not to use it.” There are many other restaurants in Plymouth which have adopted this ethos and, in a way, it is bringing the local community back together, linking farms to the local traders and restaurants. “I know every farmer who supplies us by name. You can’t get more dedicated than that,” said Tony Bells, owner of the California Inn, in Modbury, just outside Plymouth. The family gusto for sourcing the best local produce, plus an unshakeable enthusiasm for the trade, has transformed the former staging post into a lively pub with a loyal following and a wealth of fresh, seasonable food. The Tanners brothers, Chris and James, are also keen supporters of Devon produce, as is Jo Hocking, the owner of Chloe’s. The modern Fishbone Restaurant at Derriford adds a touch of tradition to its contemporary décor by choosing local butchers and fish markets for its ingredients. And the traditional slap up “pub grub” has taken on a totally new form. The Ship Inn in Noss Mayo, The Rose and Crown in Yealmpton, St Elizabeth’s House in Plympton St Maurice and the Horn of Plenty in Gulworthy – all are magnets for city folk at the weekends because the locally-sourced pub food that they serve is just stunning. So while some firms still fear environmental change as a burden to the running of the company, most in the Plymouth area are beginning to welcome it with open arms, reaping the benefits of quality produce and attracting new environmentally-conscious customers.
