ROCKY’S RAISING THE STEAKS They’ve conquered the fish and seafood market, now they’re taking on the steak-eaters. Brothers Tony and Nick Achilies, who own and run Platters on the Barbican, are soon to open a steak and carvery restaurant - just a few doors down. Rocky’s is expected to open in June in memory and in name of their late father, who founded Platters. Tony said the cuts of meat will be fresh and locally sourced. In a similar style to Platters, he said the food will be high quality, simple and reasonably priced.

For six months Dan Thompson and Colin Foster have successfully been running the only Thai and noodle bar in Plymouth, situated in the B-Bar in The Barbican Theatre. New owner Edmond Davari has undertaken a £180,000 refit to create this fifty seater restaurant. He has recruited the hugely experienced John Raines as head chef, who has moved from the Red Snapper in Bristol. As the name suggests, the menu offers a huge selection of seafood dishes that are all sourced daily, fresh from the Barbican. Westcountry steak and vegetarian options are also available. If you haven’t yet visited Langdon Court Restaurant, then simply there is one question you need to ask yourself – Why Not?! The location is enviable; only 5.7 miles from the centre of Plymouth City (I have checked), the service flawless, the food flavour-filled and superlatively fresh. New owners Geoffrey and Emma Ede have injected an energy and innovation that only natural business acumen, years of experience at the highest level and good taste can provide. The restaurant is revitalised and recharged, teeming with inimitable elegance and delicious food! I could think of countless words to describe the restaurant, but heritage, romance, and decadence are three. It resides within the majestic Grade II Listed Tudor Manor House, that is also renowned as a reputable Country House Hotel, oozing Royal, political and nautical history, spanning hundreds of dramatic years. This is much more than a restaurant, this is a destination, leading to an occasion. The drive to it is equally enchanting. The house set in 10 acres of mature gardens and woodlands, indigenously blends in with the timeless beauty of South Ham’s rolling hills and breathtaking beaches. If you want to be whisked away from the fuss of city life, into a retreat providing secluded intimacy that encourages, relaxation at a reasonable price, then this is for you! On entering, a warm genteel greeting and immiscible energy flows, drawn from the passionate owners, to the happy service staff and permeating contented clientele. Lilies aromatise, cool jazz soothes and perfectly placed tables, with crisp white linen and tasteful settings await your presence. The menu continues the blend of traditional and modern, catering for classic and eclectic tastes. Everything is strictly local, with reared meat, game, fish seafood and vegetarian options. A beautiful list of fine wines has been carefully considered, to gratify broad tastes and offering perfect accompaniments to diverse dishes. The range includes New World novelties and traditional classics. (They are also aiming to produce their own local wine, being in the crucial stages of varietal selection.) Initially, palates were ignited with
flavour-filled, wholesome pre-starters, including a rich creamy carrot and caraway seed amuse. Next, the entrées were versatile, boasting delightful and delicious textures. The seared hand-dived Brixham scallops with crispy Parma ham, pea purée and a fresh cucumber and caviar dressing, was bounding in juicy freshness, as was the rillette of salmon, cep mushrooms, shallots with dressed ruby chard leaves and green basil oil. For the main course, the seared fillet of Devonshire beef arrived piping hot, generous and succulent. The dish displayed a richness that can only be found in local produce, with crispy yet fluffy fondant potatoes and crunchy spring green beans drizzled in butter and rich jus. For dessert, turmoil at the table

entertained, when choices had to be made between mouth-watering desserts, the West Country Cheese board or ice-cream and sorbets. After debate and deliberation, the duo of Lemon soufflé with a tangy lemon sorbet was selected, paradoxically providing a refreshing yet comforting conclusion to an immaculate meal. One common denominator prevailed throughout the evening; all the dishes oozed incredible freshness and taste. Geoffrey and Emma, will not tolerate anything less than the best, maintaining a strict policy to grace their guest’s palates’ with the finest local fresh produce and ingredients only! Everything is made from scratch. Additionally, vegetables and herbs lovingly nurtured by Graham Titmarsh (Alan’s cousin), are tenderly drawn from the Manor’s Listed Jacobean garden and delivered to the kitchen in their seasonal prime. This means all dishes possess a natural arrogance rich in colour and taste. Chef Carl Smith enlightened: “I have the ability to literally unearth and work with produce in its freshest form. I can create beautiful dishes with unmatched richness and natural taste.” He also enthused about the newly built state-of-the-art kitchen which he
had input into: “I offered ideas how I would like the kitchen to be planned for the benefit of the cooking.” Geoffrey added: “Every corridor in this house leads to the kitchen, which should have warmth and life as the heart of this beautiful building. When we moved in the heart wasn’t pumping, so we ripped out the old and re-built a state-of-theart new one, to re-energise it.” And it does! Seriously though amidst all that is perfect and polished at Langdon Court Restaurant, I have to admit there are two problems to overcome:

A: Trying not to look too smug when your meal arrives. B: Trying to hide envious eyes when observing other dishes. The Paris basin, chalky white soils, gentle rolling hills, beautifully manicured, fabulous regional food and the world’s most famous wine! It could only be Champagne. Stephen Barrett gives us his insight.
FIZZY HEIGHTS
his is the wonderfully fizzy stuff made in France’s most northerly vineyard designed to make you celebrate life to the full with sensual bubbles racing into the body lifting spirits to often euphoric highs! So what makes this extraordinary beverage so special, after all, the entire world has other sparkling wines that might also do the trick! We must first take a look at its illustrious history starting with the Benedictine monk Dom Perignon who in the late 17th Century, successfully experimented with the then unpredictable youthful Champagne. Pinot Noir and Pinot Meunier. This meant that the still wines made from these grapes were often full of acidity, and rather taught. During this time Champagne was often made with a smidgen of residual sugar left in the ferment, this would lay dormant during the winter but come the spring it often refermented as the weather warmed up. Wines were popping all over the place, wastage and danger were enormous until the legendary monk discovered a way to preserve the bubbles capturing the CO2 and in the process creating a sparkling wine of great distinction. This 17th Century phenomenon was surprisingly usurped by an Englishman, Christopher Merrett, who documented the method of the double fermentation process 30 years before the noble Dom had declared his interest but Champagne was becoming fashionable and indeed more famous in and around the courts of Europe. First Europe then the world as great names such as Moet & Chandon, Taittinger, Mumm, Pommery, Lanson, Krug and Bollinger sold liberally in restaurants, hotels and bars far and wide. The sheer quality of these Champagnes are considered second to none but lesserknown “Growers Champagne”, individual wines often made by small family concerns whose prime aim is quality are just as exciting. These lovely wines can be found in countless villages scattered throughout the district and represent excellent value. Most Champagne comes under the Nonvintage category meaning the blend is made up from grapes/wine from more than one vintage allowing certain house styles to be produced year on year with a “house consistency”. Vintage Champagne is altogether a different beast as grapes from exceptional single years are selected to produce a finer style of Champagne. These wines command a greater price and are expected to last between 10 and 20 years. The final category known as Prestige Cuvees like the legendary Dom Perignon from Moet & Chandon, Crystal from Roederer and Cuvee Winston Churchill from Pommery. They are only made when the vintage condition allows and are often draped in fine livery and luxurious packaging, in other words the ultimate in style and must-have.

As well as the perfect celebration drink Champagne is simply wonderful with food; try Pinot Noir based Champagne with spicy Asian dishes or Chardonnay based styles with shellfish and seafood. Aged vintage Champagne will match Duck breasts or Pheasants perfectly while dessert Champagne, known as demi-sec, is a wow with classic French patisserie like Tarte Tatin or Crème Brulee. With versatility like this it’s no wonder that sales are soaring. New parcels of land have recently been designated as official vineyard status enabling the owners to plant the prescribed grapes, which, after three years will yield grapes fit enough to make the said fabled fizz.
To source Champagne other than the famous brands your local wine merchant will certainly have a Growers Champagne of note. Prices vary with the style of wine and relative age or aging potential attached to the product. Own-label Champagne from the major Supermarkets tend to be sourced from some of the large Co-operatives or medium sized companies and can often represent excellent value and style. So as you can see there is Champagne to suit all occasions and pockets, I for one love the youthful zest and dynamism of individual Growers Champagne showing the great tradition of French know-how. You, on the other hand, might like one of the highly consistent major brands or when the pocket allows one of the luxury prestige brands like the eponymous Crystal; whichever one you choose will provide mirth and laughter, guaranteed to brighten up the day! It would have to be Chris and James Tanner. Due to the fact they both have a passion for their job. Where else do you eat out locally? I always enjoy going to Chloe’s restaurant in Plymouth. I have worked in various hotels in and around Plymouth such as, Boringdon Hall, The Moorland Links and The Grand Hotel. Who taught you to cook? In 1986 I went to Plymouth College of Further Education and was taught by the late Wilf Martin and Colin Ormston.
Where else do you eat out locally? The Ship Inn at Noss Mayo. The location is great and the food is always consistently good. Is there anywhere you haven't eaten that you're dying to try? There are a number of places, The Savoy Hotel in London and the Dorchester Hotel also in London. I would love to try Raymond Blancs Le Manoir aux Quat’ Saisons in Oxford.
If you could cook for two famous people whom would they be and what would you cook them? A true English hero Sir Winston Churchill. I would love to cook him a traditional Sunday Roast, say a prime roast rib of Devon beef with all the trimmings. Secondly, every chef’s dream The Queen. I think she would like traditional afternoon tea, ribbon sandwiches using homemade preserves. Local fruit, local berries also scones using Cornish clotted cream and homemade assorted cakes all sourced locally. In your experience what is the most important thing about cooking? Using the best in fresh local produce in season and cooking it with passion and dedication. Cooking is not a job it’s a way of life. It should be fun and enjoyable.

In your experience what is the most important thing about cooking? Honesty, simplicity and locality. We are extremely lucky to have such a vast amount of locally produced food on our doorstep. Dishes should be kept simple to allow you to concentrate on the natural flavours of this wonderful food.

As the mighty wooden door swings open and you step into the Boringdon Hall Hotel you are immediately transported back 450 years to the “Golden Age” of Elizabethan England. Helen Wasilewska reports. lassical music dances between the high walls in the Great Hall, and as you climb the wooden staircase to the Gallery Restaurant, which overlooks the Hall itself, it is easy to imagine what life was like for the wealthy dignitaries who enjoyed lavish feasts in this magnificent building. The Boringdon Hall Hotel, which stands on the southern gateway to Dartmoor, close to Plympton, is a beautifully restored 16th Century manor, with medieval foundations. In its heyday, the magnificent estate hosted some of the most influential people of the time, including the seafarer Sir Francis Drake and the poet and explorer Sir Walter Raleigh. The manor was even chosen by Queen Elizabeth herself to rest at when she visited the West Country. From the elevated perspective of the Gallery Restaurant, everything about the prosperous and decadent Elizabethan era is exposed in the Great Hall below – the enormous hanging portraits of distinguished figures; oversized stone doorways; the large chandelier which hangs at gallery height; dark wood panelled walls and heavy carved banisters; and, of course, the giant royal arms which cover an entire wall set above the giant, stone inglenook fireplace. A restaurant setting of such grandeur can

only truly be accompanied with food and drink of the same calibre. And it is soon clear from the presentation of the tables, the excellent service and the carefully crafted antipasto that quickly arrive on our table shortly after we are seated, that the Boringdon Hall’s Gallery Restaurant has created a special fine dining experience. The menu is minimalist yet each dish is an exciting mélange of ingredients presented with an artistic flair. The starters and the mains offer a good choice of meats, fish and seafood and rather than a token vegetarian main course option, there is a full list, equal to that of the non-vegetarian. Head chef Ian Mustill, who has worked at some of London’s top Michelin starred and AA Rosette restaurants, including Hyde Park Hotel and the Dorchester, says the dishes are created using

Starters currently on offer include spiced crab and coconut bisque topped with scallops and scented with coriander and ginger, or fantail of smoked duck served with

Prices vary from as little as £4.95 for the vegetarian option of tagliatelle with fresh tomato and basil sauce, to £7.95 for chilli seared scallops. Mouth-watering main courses were even more difficult to choose from, with a symphony of Brixham seafood infused in turmeric sauce and served with wild rice, seared fillet of halibut on root vegetables with red wine sauce and three medallions –
beef, lamb and pork – smothered in wild mushroom sauce. It was tempting to savour the local game, to truly indulge in the dining experience most similar to that of Queen Elizabeth 450 years ago, but I opted for the halibut, which was perfectly cooked and complemented by the smooth wine sauce. All main courses were also very reasonably priced, ranging from £14.95 to £16.95. For many, the dessert is the grand finale of the whole experience, especially when it comes to fine dining, where dishes are painstakingly prepared and look almost too good to eat and at the Boringdon Hall this was no exception. Panacotta with fresh raspberries, indulgent chocolate sponge, pink bavarois with wild berries, white and dark chocolate mousse and a tarte tatin were all extremely tempting. Then for cheese lovers there is another huge dilemma, with a menu in itself devoted to the great cheeses sourced from the West Country. And for those with a weakness for ice cream, a long list of homemade flavours, including crunchy walnut and white chocolate ripple is on offer.
This is what fine dining is all about savouring exciting and exquisitely presented dishes in a truly exceptional venue steeped in magnificent history. Choosing the right venue is the key to the success of any celebration or occasion, from a 40th birthday bash to an intimate private dinner. Nick Bayly looks at the checklist of things to consider to ensure you find your dream destination
f you think back to some of the most memorable parties you've ever been to, they may well have involved a certain amount of alcohol, excellent food and great company, but what is often lost in the haze is that it was probably held in a distinctive venue. The ‘location, location, location’ mantra is trotted out for property, but it’s equally appropriate for party venues. Not only does it have to be geographically suited to your needs, but also meet a whole other range criteria that aren’t so obvious when first considering a venue.

LISTEN TO RUSS! As that sickeningly memorable Russ Abbott song goes, we all love a party with an atmosphere, and finding a venue that sets the right tone and creates the right vibe is essential. Never pick a venue on the basis of a flashy website or a vague word of mouth recommendation. If you’re going to be footing the bill – and even if you’re not – there’s no substitute for checking it out for yourself. If it’s a place you’re unfamiliar with, it will help you get the feel of the place, so try and go at the same kind of time that your party will be held. If you visit during the daytime, you might be upset by the sight of that 20year-old carpet, but with the lights turned low at night you might never even notice it. On the other hand, if you're having a lunch
party, and the room is bathed in darkness and lacks natural light, it will change the whole atmosphere of the day. ROOM TO MOVE Finding a venue that matches the guest list is the key to making a success of any gathering. It’s no use booking an intimate restaurant if you’ve got 50 people turning up (unless you’ve hired out the whole place), and conversely, hiring out an entire bar for 20 of you is going to be just as incongruous. And remember, looks can be deceiving. The space you’ve spotted may look enormous when it's empty, but don't forget tables, chairs, the band or DJ setup, the dance floor, and so on are all going to take up a lot of space. If you have your heart set on a specific venue, you can always work backwards and tailor your guest list to match a space. Start with a rough idea of the number you expect. What are you going to do at the party? Just socialise with drinks and snacks? A full sit-down dinner? Entertainment or dancing? Too big a venue could lack friendliness, too small and it’s sardine city and no fun at all, unless you like confined spaces and are partial to brine. For parties with music/dancing, there should be logical places within the space where everyone can eat, drink, talk, and dance. Can you imagine all of that happening in there? If a room is too small to separate into sections, you may feel cramped, and

For parties with music/dancing, there should be logical places within the space where everyone can eat, drink, talk, and dance. Can you imagine all of that happening in there?
guests who want to sit down and chat will feel marginalised. If it's shaped like an S or some other quirky design, that could compromise your party's flow, as well. PRIVATE INVESTIGATION Privacy varies widely from place to place. If you're having a party in a public venue, such as a bar or a restaurant, be prepared for strangers to be there too. If that’s a problem then find a venue that will host your party in an area that can be closed off, with a ‘CLOSED FOR PRIVATE PARTY’ sign in full view. Be sure to inquire about available security in order to keep potential gate-crashers at bay. That said, don't think that just because you're indoors you're safe from uninvited guests. Hotels often hold more than one party/function at a time. If there'll be other events going on simultaneously in rooms close to yours, you may hear karaoke-loving guests singing their hearts out to Abba through the walls or meet them over the hand dryers in the toilets. If this bothers you, try to schedule your party for a time when there won't be another one next door.
The average private dining space will cater for between 10 and 24 people, but there are ones with much bigger spaces, although that moves into the realms of banqueting. Most venues will charge for the use of a private room on top of the food and drink, but check first to see whether it’s negotiable. PRESENT TENTS Parties can be held virtually anywhere these days, so don’t always think of restaurants, bars and the standard hotels. How about hiring a hospitality suite at your local football club,

PRIVATE DINING Private dining is a huge growth area in modern hospitality, as it not only takes away the hassles of cooking and washing up, but opens up an array of exciting venues where you are free to enjoy the occasion completely, focus on your friends or clients and leave the catering to the venue. Other benefits of private dining include guaranteed privacy and top-notch service from a team of dedicated waiters. Not all of your favourite haunts will have the capacity to offer private dining, as it requires a separate room from the main dining room, and needs to be properly managed rather than added on as an after-thought.
racecourse or a National Trust property? Or something even more unusual like the Eden Project, an historic castle, or dare we mention it, simply put up a marquee in your back garden (providing it’s big enough!). Marquees are no longer the over-sized canvas tents of times past, with todays grand affairs offering heating, air-conditioning and the complete red carpet experience. From Arabian Nights parties for 50, to sit down weddings for 200, marquees are very much of the moment STICK TO YOUR BUDGET Always start off with a budget in mind, and
never let the promise of the extra ‘wow’ factor turn what is meant to be a fun occasion into a financial disaster. Some venues, especially bars and clubs, will let you have the room for free, or at least section off part of the venue in return for a guaranteed minimum spend behind the bar. All you have to do is hope everyone turns up, or you’re going to be left with a big bill for very few drinks! When booking restaurants for large numbers, choosing set menus will help reduce costs, or at least menus with only two or three choices (including vegetarian options). Also, if holding a party at a public venue, consider buying in your own wines, but be prepared to pay corkage for each bottle. It’s the venue’s way of discouraging bringing your own booze, but a trip to France to buy duty free drinks will save fortunes when hosting a large party. DEPOSITS You usually need to pay a deposit to book a venue in advance, but make sure you’re aware of the terms before handing over any cash. Is the deposit refunded if you cancel the booking within a certain time limit? Are any extra fees payable? If there is a written contract covering the hire of the venue, make sure that the points you agree are covered. Whatever kind of party venue you are considering,– be it a pub, restaurant, hotel or somewhere a little bit different - some time and careful thought (and, of course, a bit of money) spent planning can turn a good party into a truly memorable one. And we can all drink to that.

estaurant owner Edmond Davari has taken on the former Joined up Whiting fish restaurant and given it a new look. It is now called The Fish Market. He said: “I had longed to open a fish restaurant in Plymouth that was elegant and very simple, like the places I remember from my visits to the West Coast of America. Plain whites clothes on the tables, always loads of fresh flowers, dimmed lighting, background jazz music and very little else – apart from the delicious fresh fish delivered by boat to the restaurant. To think that I have achieved that in the heart of Plymouth!” Much of the artwork inside depicts the old Billingsgate fish market in London. “It is expertly documented by the late Stanley Simmonds, already a star attraction by the

Diners who have a passion for fresh fish need look no further. The Fish Market, on Sutton Harbour, is a newly opened fish restaurant, which serves the daily catch on the day it was caught. It even has it delivered, by boat, to the premises every morning. It doesn’t come much fresher than that.

restaurant’s patrons,” he said. The name The Fish Market, he says, was an obvious choice, since that is exactly what the restaurant is. Edmond said: “Apart from anything else, the name was a true representation of what the restaurant was going to be and to offer.” The basic formula is simple. Fresh fish lands outside the restaurant straight out of a boat every morning. The menus are written daily based on the morning’s catch and the fish is served, fresh, that same day. Edmond said: “There is an ever-changing menu featuring what would appear to be the ‘who is who’ of the fish species.” The current chef John Haines has a passion for fresh ingredients, simply prepared and works with many smallholders, fishermen and farmers to source his supplies.
Edmond, who owns Zucca, Fat Mama and Souk in Plymouth, also plans to further develop the social scene in Sutton Harbour with two more exciting restaurants expected to open this summer. They are also both very close to The Fish Market, which he says has already begun to act as a catalyst for similar ventures in the area. Asia Chic, a dim sum restaurant, is due to open in June and Rocco y Lola, a contemporary Catalan tapas bar, will open July. FAMILY Dining at Kitley House you almost feel like part of the family, with children and dogs all welcome at the warm and friendly hotel. Helen Wasilewska reports.

espite the grandeur of the estate – the long driveway with views of rolling hills and ancient woodland, the splendid symmetrical manor, the elegant stairway, great doorways, magnificent artwork and polished floors – there is something very enjoyable and unpretentious about Kitley which makes everyone feel welcome. While it is primarily a hotel, it also has a lounge bar and restaurant as well as function rooms for conferences, weddings, meetings and family get-togethers, so the place is always bustling with people throughout the year. In fact, being owned and run as a family business, it has almost reverted to its true, traditional purpose – a family home to host friends, relatives and holidaymakers. The manor itself dates back to the 16th Century and evidence of its early history can be seen around the lower floor and basement. The house was substantially remodelled along with the grounds in 1825 and the rich décor of the public areas and the sweeping staircase are testimony to this investment. The family who occupied the

Kitley have a relationship with the famous Yeats Dynasty of County Sligo whose Maternal Mother was a family member. So just as it would have been used then to relax in and enjoy the glorious Devon countryside, Kitley House remains a holiday destination as well as a popular venue for socialising. Today, the bar and restaurant are open to all and diners can relax in the comfy bar sofas, enjoying the spectacular views of the formal gardens, the woodland and the lake while they decide which delicious courses to eat. The restaurant is formal yet friendly – with excellent service thanks to the long-standing staff. The library is a tasteful melange of cultural and modern styles, with deep red walls, heavy fuchsia curtains, ornate gold cornicing, marble pillars, and built-in fullystocked book shelves. Fresh lilies on every table give a familiar sweet scent. The menus are fairly extensive, since the hotel caters for both visitors and in-house residents. And as there are so many families who dine at the hotel, there is also a children’s menu. Even on a Wednesday evening, after the busy Easter weekend, the restaurant was full

and there were families with children of various ages – all impeccably behaved… The lounge and dinner menus change on a daily basis, depending on the local ingredients and the time of year. The evening menu is sure to please all tastes with a good selection of fresh meats,
DISHES AT KITLEY ARE ALWAYS GREAT VALUE FOR MONEY, WITH EACH PLATE GENEROUSLY PORTIONED – IT TOOK QUITE SOME TIME BEFORE I COULD SQUEEZE IN A FINAL COURSE. game, fish and vegetarian courses – all extremely tempting. There are even pre-dinner canapés to tease the pallet, including garlic mussels in a herb crust. After some deliberation I opted for a Parma ham and chicken liver roulade with tasty trimmings, to start. This was a sumptuous and moist meaty starter and also pretty generous. I followed it with a grilled fillet of sea bass with a warm potato and smoked bacon salad and asparagus
spears. The fish was perfectly cooked and was complimented by the smoky tones of the bacon and the creamy asparagus – delicious. Dishes at Kitley are always great value for money, with each plate generously portioned – it took quite some time before I could squeeze in a final course. And I chose the pink bavarois – light and fluffy, delicately sweet and perfectly partnered with a sharp berry coulis. The restaurant menu is extremely flexible – there is even a daily special menu for ‘more relaxed’ dining, which offers a good choice of locally-sourced steaks. Both menus are reasonably priced, at £25 for two courses, £32 for three with extra for canapés and the cheese board. During the day diners have the choice of eating out on the terrace - if the weather permits - in the main library, in the lighter Regency room or beside the log fire in the reception. Light bites start from as little as £4.95 for cream teas or the soup of the day. Others include Devon ham and Cornish Yarg panini for £6.95, honey roast sausages from Modbury with caramelised mashed potato and gravy for £9.95 and Dartmouth roasted salmon and asparagus salad for £10.95. Every week, the hotel also offers and excellent £20 Sunday lunch deal for three courses, with a choice of two meats, fish or vegetarian. All the menus are created with fresh ingredients from local suppliers offering quality West Country food.
