It’s long overdue, and what better way to enjoy the heat than to visit some of the cool places we’ve got for you right here in the Menu Guide. this magazine is all about celebrating the best eating and drinking on offer in and around Plymouth, and hopefully you will take the opportunity to experience for yourself the ever-growing choice of top quality bars and restaurants right on your doorstep. July 17th 1999: the day a childhood dream to open a restaurant became a reality and the doors to Tanners opened for business for the first time. tanners this year celebrates its 10th birthday!

t

his year the tanner Brothers, Chris and James, celebrate 10 years at the eponymous eatery housed in the medieval Prysten house. ten years on, a huge amount has changed for them and their business. tanners restaurant is renowned throughout the south West, and indeed further afield, for its innovative dishes created using local seasonal produce, extensive selection of wines chosen to complement your meal and exemplary attention to detail for every aspect of the dining experience. three years ago they branched out with their take on a brasserie, the Barbican Kitchen, housed in the world famous Plymouth Gin Distillery on the Barbican. In february 2008 a devastating fire ripped through the kitchen. that was a dark period, but Chris and James were able to retain all the staff and three months later the phoenix rose from the ashes. since then, the Barbican Kitchen has gone from strength to strength. Like its big sister tanners, it is a highly successful concept with 80% of its original staff at the helm. Back to the mothership ‘tanners’. the stunning Prysten house provides a superb setting for the tanner Brothers food. With hundreds of recipes lining their office shelves, this place is uniquely special to the brothers, but more importantly to the people of Plymouth. the Brothers set out with a vision to provide great locally sourced food at an

recently set up an apprenticeship programme for young kitchen talent with City College. this has been a resounding success with a large number of aspiring chefs applying for the 2 available places on a two-year placement. front of house and service is just as important as the food, with all staff undertaking in-house training on a regular basis. ‘sometimes we can hardly believe what’s happened, you have to pinch yourself and ask is it really 10 years?!’ says James. ‘In that time our families have grown which changes your whole attitude and focus in life. some of the staff have also got married and had kids, so it’s been fantastic to watch their lives evolve as well.’ ‘the hours in the business can be brutally long and hard, so it’s very important to enjoy the time when you’re off as much as you can. With young kids, we are even more aware of

ocktails are great. More importantly cocktails are back with not a stereotypical consumer in sight! Gone are the days when colourful mixed drinks were associated with the cherry bopping/umbrella drinking mishaps of Delboy trotter, the debonair allurement of Mr Bond or even more recently the sophisticated luncheons of those four american ladies who liked to have a lot of sex in the city. today, everybody enjoys a good cocktail and we in the south West are demonstrating passion and an unquenchable thirst for refreshing mixed drinks in their diversity! Lavish cocktail bars hosting meticulous mixologists (the posh word for cocktail barmen/women) serving inventive drinks with fresh ingredients are relishing a renewed renaissance in the region, with several reasons to their popularity. firstly and I’m not going to harp on about it, but in our tough economical climate

savouring a cocktail can be seen as one of life’s simpler pleasures. they are colourful and creative, inventive and intriguing, simply they are fun and paradoxically their revival could partially be due the recession. John Clay, Bar Manager for Plymouth Gin Distillery enlightened: “Bizarrely, the recession has affected cocktails positively. a well-made cocktail not only tastes great but it’s intriguing. our customers don’t want normality they want novelty. People are conscious about spending their money and demand fun, affordability and quality equally!” harri Pettitt-Wade, Bar supervisor annabels Cabaret and Discotheque Plymouth concurred: “the south West has been late to pick up the cocktail vibe, but the popularity has finally permeated into the region. the economic downturn, surprisingly has played its part, with people spending less money on alcohol but instead making nights out special with cocktails.”

If you produce cocktails of quality you have to be passionate about your craft and there are a handful of people here that seriously are!” the fourth reason is down to the region’s expectation for quality and taste! Mario hajiyianni Co-owner of Mission and Morgans explained: “With so many good restaurants in the region, consumers are spoilt for choice and are much more aware of what they are eating but also what they are drinking. Tapas have certainly arrived in the UK with restaurants and bars offering a stream of different styles and flavours. They are pretty easy to invent and beat the ubiquitous canapé and “yesterday’s vol au vents” hands down.

W

e have to go back a very long time probably to andalusia in southern spain. this is an extremely hot corner of spain’s Mediterranean coast and home to one of the world’s most famous drinks, sherry. sherry is a lightly fortified wine of some substance currently enjoying a renaissance in bars and restaurants. history tells us that the innkeepers of andalusia used to place a simple piece of bread on top of a glass of sherry or wine to keep the dust and fruit flies out. this was much appreciated by visiting horsemen who no doubt stopped for “refreshment” on their journey. the spanish rarely drink without eating some food so I guess it was inevitable that enterprising innkeepers started to place on the bread small morsels of simple cuisine such as local ham, simple slices of cheese, slivers of fish or perhaps marinated vegetables. these became known as tapas or lid and a culinary gift to the world was born. fast forward to the 21st century we now

taPas tIMe! Most of us interested in good food and wine will have heard the name tapas. But do you know what it means and where it came from? Stephen Barrett gives us an insight. find tapas bars all over spain mainly the simple local bar that is utterly uncomplicated serving an array of colourful dishes to accompany the chosen beverage. When I take Wine tourists to rioja on a Wineholiday (go to www.wineholidays.net for itinerary) we stay in the lovely city of Logrono where we visit the incredible Calle Laurel, a honeycomb of approximately 200 tapas bars and restaurants all brilliantly individual, serving the throngs of locals and visitors until early in the morning. sherry has been replaced with tinto (red) and Blanco (white) wines usually offered very young, often chilled and very moorish. the tintos are made from the grapes tempranillo and Garnacha and have probably seen little of no oak. these are the juicy wines that chill well and match a plethora of foods ranging from

spicy seafood to Garlic laced Mushrooms. spanish whites have come a long way since the (very expensive) oak-aged Blancos or dull inconsistent younger versions, often of no particular breeding. they have all but been replaced with exciting wines from Galicia, rueda, rioja and Penedes. Made with the grapes, Viura, Verdejo, alborinio and Godello these fascinating indigenous wines are now very fresh and carefully made and should be considered as an excellent alternative to your current favourite white wine. try Campo Viejo Viura 2007 around £5.99 at sainsbury’s or thresher showing green apple fruit and lemon scent with a bone-dry finish. Clean and fruity to the last drop. Cava is also an inexpensive alternative to Champagne as a casual sparkler that certainly lifts the spirits and is also a terrific match for

TAPAS AT HOmE Crostinis of Chicken livers with Sherry for four persons Ingredients: 450g Chicken livers, trimmed of any gristle 2 finely chopped onions. Two tablespoons olive oil 100ml of dry sherry Sea salt and cracked black pepper 30g unsalted butter 12 Oven baked Crostinis Wedges of lemon – optional

Slice a medium size baguette into Crostinis. Drizzle with olive oil and bake on either side for 3 minutes in a hot oven.

In a large hot frying pan sauté the finely chopped onion with one tablespoonful of olive oil until transparent.

Dry the Chicken Livers on kitchen paper, season with sea salt and black pepper add to the pan with the other tablespoon of olive oil.

Shake the pan over a high heat for approximately three or four minutes ensuring the livers are starting to brown but still pink in the middle.

Remove to a warm oven whilst adding the sherry to the pan scraping the bottom with a wooden spoon.

Reduce the sherry by half and add 30g of unsalted butter.

Add the cooked chicken livers to the pan and sauté for one minute. Assemble the livers on the warm Crostinis securing with a cocktail stick. Offer lemon wedges.

lthough most words uttered by chefs on telly these days seem to be bleeped out by the censor, the language of the kitchen, and of the restaurant world in general, is packed with jargon, as you’d expect to find in any industry. It’s another world, and as such demands another set of phraseology. some words are made to make the outsider seem ignorant or in some way unprofessional or ingenue, while others are dragged from the depths of culinary history. thus you find tV chefs using poncey phrases like ‘fry off’ or ‘cook off’ when they mean just the same thing without the ‘offs’, while french terminology still litters the menus of restaurants that are much happier serving coq au vin than they are chicken in a red wine sauce. Menus at many restaurants present a further opportunity to confuse customers thanks to pretentious wording and the use of unnecessary foreign or ‘chefy’ words where some plain english would probably do the job just as well. Part of it is borne out of some dated concept that anything remotely foreign sounding must, by its nature of not being english, be somehow exotic, and therefore better. thus ‘jus’ sounds more impressive than ‘heavily reduced gravy’, ‘coulis’ is more enticing that ‘fruit-based sauce’ and ‘legumes julienne’ has more menu appeal than ‘diced mixed veg’. here, at the Menu Guide, we are dedicated to demystifying the joys of eating out, so here is our guide to deciphering the language of the kitchen and the dining room. A la carte: Its direct translation from french is ‘according to the menu’, and it is used to refer to a menu of items priced and ordered separately, rather than selected from a list of preset meals at fixed prices. In direct contrast, a ‘table d’hôte’ is a menu with limited or no choice which is served at a

fixed price, which explains why the latter is much cheaper than the former. Al dente: often used to negatively describe something that’s a bit raw, al dente (‘to the tooth’) generally refers to pasta or rice when it is cooked so that it offers resistance to the bite, but is not hard. al dente vegetables should be crisp, without a hint of stewed sogginess. Amuse Bouche: the ‘funny mouth’ is usually a thimbleful of cauliflower soup that arrives at the very beginning of a meal “with the compliments of the chef” to make you feel like you’re getting something for nothing. sometimes it can be the highlight of the entire meal, underlining the principle that less can mean more. Aperitif: Not something you need in order to chew, but a drink, generally alcoholic in content, which is offered before a meal. Not to be confused with a ‘digestif’, a drink that is taken after a meal to help settle the stomach. Appetiser: a small dish served before the main courses of a meal, otherwise known as a starter. In some cases the purpose is to stimulate or tease the appetite, but usually the purpose is to reduce the appetite without spoiling it for the main meal. Usually more substantial than a hors d’oeuvre, which are generally bite-sized. Brasserie: once the preserve of backstreet Parisian cafés serving a glass of red with a bowl of cassoulet, a brasserie has come to

Tasting menus allow diners to experience a chef’s repertoire in one extended meal involving up to a dozen scaled-down courses. Ganache (Below) is just one of many French-inspired words that can often leave English restaurant-goers in the dark when it comes to menu choices

typify any establishment that has pretentions beyond being a bistro, but is not quite in the white table cloth league occupied by fullblown restaurants. Particularly prevalent in hotels, brasserie-style menus have left behind their french roots and generally offer homestyle cooking with added ‘juj’. BYO: Bring Your own. there are a limited number of restaurants which will allow you to bring your own alcohol, as they may not have a full licence to serve their own. It can cut the cost of eating out considerably, although some may apply a ‘corkage’ charge. Entrée: often confused with an appetiser, the entrée usually refers to the main course of a meal, but can also mean any major course. Front-of-House: the public spaces of the dining room and sections of a restaurant that are viewable by diners. gravlax: sounding more like a treatment for constipation, this is nothing more sinister than raw pickled salmon. ganache: almost impossible to avoid on the pudding menus at more expensive restaurants, ganache is a rich chocolate icing made of semisweet chocolate and whipping cream that is heated and stirred together until the chocolate has melted. the mixture is cooled until lukewarm and poured over a cake or torte. Haute Cuisine: an outmoded and pretentious expression of french derivation used in the ‘70s and ‘80s to describe food that is over-elaborately prepared. Its modern equivalent is ‘fine dining’, which is equally meaningless. the french word haute translates as ‘high’, but haughty would be more appropriate. Ile Flottante: translated into english as ‘floating Islands’, this super-sickly classic french dessert comprises stiffly beaten, sweetened egg whites that have been poached in milk. these eggy islands are then ‘floated’ on a sea of thin custard sauce. enjoy. Lights: Be careful not to ask for ‘a light’

if you’re in a restaurant that specialises in serving exotic cuts of meat, as you are likely to be served up a sautéed pig’s lung. Lights can also be used in a stew such as civet or in a pate, although we used to ask for them from our local butcher to give to our dog. Yum. maître d’hôtel; the Maitre D’ is the man you need to know in order to get the best table in the house or even a foot in the door at some establishments. they sometimes perform the duties of a headwaiter, although others float around the dining room making sure everyone is happy and the restaurant is running smoothly. Over-easy: Not six balls from Phil tufnell, but a fried egg that has been flipped over, so that the white is cooked on both sides, but the yolk is still runny. ‘over-medium’ results in a solid yoke, which is the preferred method of cooking under hot lamps in motorway service stations. Signature Dish: this is a recipe that identifies an individual chef. Ideally, it should be unique and allow an informed

gastronome to name the chef in a blind tasting, but in practice a chef’s signature dish often changes, and most would rather not be known for producing one particular recipe for fear of being pigeonholed. for instance, snail porridge is one of heston Blumenthal’s trademark dishes, but he may sometimes wish he’d never thought of it. Silver Service: Not a grey-haired waiter, but the name given to a method of table service which involves serving food at the table, rather than bringing it already plated up. silver service waiters use forks and spoons to transfer food to the diner’s plate, but it must always be from the left side. In france, this kind of service is known as ‘english service’, whereas in england we just call it naff. Sommelier: he’s the wine man, and most top-class restaurants will have one to advise on wine choices and menu pairings. Providing there are enough wines by the glass available, try asking for wines to match your courses for a total gastronomic experience. Be prepared to challenge your preconceptions about what wine goes with what food. Sous Chef: Not something you do after getting food poisoning, but the person who is second in command of the kitchen. Yes, chef! Tasting menu: Not an edible piece of paper, but a set menu that comprises a large number of smaller portions, often scaled down from dishes off the main menu. some fine dining restaurants only offer tasting menus, while others offer it as a special option. tasting menus generally offer between six and 10 courses, although el Bulli in spain, voted the best restaurant in the world for the past four years, goes so far as to serve guests 30 courses, so best you skip breakfast.
