ong gone are the days when eating out in a restaurant was just about, well, eating out. today we expect far more; today we expect an experience and the design of a restaurant plays an integral role in meeting our expectations. Often the design acts as an initial menu of what’s to come, whetting the appetite and reassuring the customer that the food, like the surroundings and the design, will be of a certain standard, style and presentation. what’s more, the design is literally where fashion meets functionality. From the layout to the lighting, the use of space to the theme selected, the fixtures to the furnishings, the colour codes to the tablecloths, everything has to be meticulously considered to ensure the comfort and contentment of both the customers and staff alike. the design of any restaurant can often help define the popularity and positioning of a restaurant. So where can we go to grasp an alluring ambience and an unforgettable experience, created by intelligent design? SubTLE STYLE Sitting snugly in the heart of Plymouth’s business district, the modern French restaurant Chloe’s has a lifting contemporary design creating elegance and a homely feel. natural wooden floors, host well-spaced tables dressed in beautiful French tableware and warm natural tones including light beige’s and creams prevail. Champagne bottles are placed perfectly and a waldstein Baby grand Piano played every evening offers a rich cosy atmosphere. the stylish simplicity of Chloe’s was purposely implemented, so that the décor did not detract from the dishes. Co-owner Jo

what makes you return to a restaurant? it’s certainly the food, undoubtedly the service not forgetting an agreeable bill at the end of the evening, but could the design of a restaurant also play a part in luring you back? rosalie glendinning thinks so. hocking explained: “it was essential that the interior looked elegant and inviting as this was the essence of our food. we didn’t want the décor to overpower for this would detract attention from the food. the emphasis for our design was always about the food first which is creative, passionate and elegantly crafted. Our subtle design purposely ensured our guests’ attention remained focused on the design of our dishes first and foremost.” EXoTiC And EroTiC Yukisan was the first Japanese restaurant to open in Devon in 2004, and as an innovation in the region the design had to match this.

“as soon as people walk in they absorb the surroundings, it gives them an immediate insight into what to expect. it was vital that our design offered the Japanese experience. it had to be exciting with essences of Japanese culture using bold colours with dignified design. Our design had to be earthy and graceful yet exciting,” advised owner Christine Lam. the design is exotic and mysterious but with an injection of comic quirkiness. there are three distinct dining areas; two spacious oriental dining rooms downstairs and a fantastic Japanese room upstairs, furnished with traditional Japanese cushioned seats at floor level. “People love sitting on the floor, the

innATE grACE the interior to the much-acclaimed tanners restaurant in the heart of Plymouth was designed beautifully by celebrity chef brothers and owners Christopher and James tanner. however, interestingly, the initial selection of the elegant Prysten house, in which their restaurant has resided for the last ten years, was largely due to the fact that they wouldn’t really have to change much in terms of design at all! “although the design has evolved over time, when we first started out ten years ago we were on a tight budget. One of the main attractions of the Prysten house was its character, the beautiful slate

design is authentic, but it’s funky, fresh and fun, we also have an old British telephone booth, where we hang customers coats, blending British design with Japanese décor,” added Christine. Bold, black, white and red colours prevail, whilst wooden furniture, ornate fresh flowers, Japanese carvings and paper screen dividers are placed throughout with subtle blue lighting to imitate water. interestingly, nterestingly, the tables are laid with symmetrical perfection, which is integral to the Japanese ethos. “everything verything has to be balanced, down to the way the tables are laid, the entire design to has to have a natural flow. the he restaurant is spacious with a natural calming energy. the entire experience and that includes the design is about celebrating the mystique and spirit of the Orient,” Christine surmised.

floors and rag stone walls and the fact that we didn’t have to do anything to the design,” the brother’s advised. For Christopher and James the historical aspect to the building was key. the Prysten house is the oldest surviving domestic building in Plymouth built in 1498 and steeped in local history. the ambience is relaxed, convivial and grand with thick medieval walls and original features creating a timeless experience. ““the building is naturally beautiful with the well in one part of the restaurant which was the original drinking source for the settlers of Plymouth. these buildings come along once in a lifetime. Our design was simple really, the guts were all in place, we just added soft furnishings of extremely high quality, which now make the restaurant a complete

package.” Throughout the restaurant the design is subtle, with gentile furnishings to enhance the building that include wooden doors and leaded windows. Beautifully arranged fresh flowers are in abundance, candlelight by night and even their tables are of a bespoke design beautifully made from Cornish ash creating a deliciously refined feel. EnhancEd ElEgancE Set against the glorious backdrop of the Dartmoor National Park in the ancient market town of Tavistock, you’ll find Browns Hotel, formerly a 17th Century Coaching Inn. The hotel has recently been lovingly refurbished with a design that has transformed the building into a stylish town house hotel, brassiere and wine bar where essential English elegance is enhanced with contemporary grace and style. “It was important for us through the design to retain the buildings natural beauty and respect its heritage but enhance the grace of the building with contemporary décor,” said Managing Director Phil Biggin. The beauty of Browns design is that it cleverly offers contrast, accommodating differing tastes. Initially the main bar set in reds and golds is cosy and relaxed with deep comfortable seats, a roaring fire, daily newspapers and a welcoming oval bar creating a homely mood. The restaurant attached is vibrant and modern hosting a range of colourful abstract paintings celebrating the artistry of local Plymothian painter Martin Bush. The conservatory next door is opulent

and airy, with a fabulous focal point in the glorious Roman well, which uniquely provides filtered spring and sparkling water. “This is an incredibly beautiful building and we had to work carefully with its identity to weave in our own design in. We have created separate areas purposely with their own characters so that they can appeal to everyone. From those looking for something with a contemporary edge to those looking for classic elegance. We have embraced the buildings natural layout and design but lifted it with our own personal touches,” Phil added.

ergonomic aspects, such as, the design of the waiters’ stations or the design of the kitchens.” For Edmond it’s all about logistics and allowing for the comfort of staff and customers. “Design is about many things you don’t or shouldn’t see and all those things taken for granted, such as lighting, water, gas and electricity. It is only once this infrastructure is in place that you can begin to have fun with your ideas front of house.” However, once everything is in place, intriguingly, Edmonds designs start with one object and then his vision grows and continues to do so even when the restaurant is

However, Edmond refreshingly admits that having a design that appeals to everyone can be difficult: “There is no formula for success, each type of restaurant appeals to different people, at different times, for different occasions and for different reasons.” However, he continues to add that part of the success to his range of restaurants has been due to design behind the scenes. “Restaurants are all about detail, not just the obvious things such as flowers and tableware. Details also encompasses the

functioning. “My designs often originate from one small item that I may locate in a shop, a market or even in a second hand fair, such as the Moroccan plaques which came from little schools in villages near Marrakech and was the starting point for the design of Asia Chic. Everything else is then built around that.” dramatic dEsign Another innovative businessman who knows what he is talking about when it comes to intelligent interior is Mario Hajiyianni who co-owns restaurants and businesses within Plymouth. One such business includes The Mission, the dramatic bar and restaurant in the heart of the city. This beautiful 19th century building offers breathtaking impact

as soon as you enter, which is exactly as Mario had intended: “We wanted to create a shock in the city, to provide a place that was exciting, fresh, fun and informal but with a sexy edge. This magnificent building is ornate and grandiose and the design had to be an extension of this.” As soon as you enter, there is a sensual almost seductive mood; deep reds and purple tones pervade throughout, a huge ornate bar takes centre stage, elegant paintings are placed alongside ornate vases and dramatic curtains shimmer throughout. The interior has undoubtedly secured the wow factor in the city and is literally breathtaking. “We wanted to create an immediate impact on arrival and to be different to every other place. The food and the cocktails served are modern, colourful and fresh and likewise the design and décor had to reflect and weave in with this. We knew exactly what we wanted as soon as we discovered this auspicious building. The design of the restaurant has played a huge role in defining the mood of The Mission and our customers love the breathtaking decor and the way we have lifted the building into a new modern dimension through the design.”

“We could have designed the restaurant with more tables but we wanted to ensure that we could tend to guests needs easily,” he added. The restaurant has a refined, warming, magical feel with an essence of fun. Wooden flooring runs throughout, neatly dressed tables with white linen and red flowers make for an inviting homely feel and a low ceiling with a fantastic blue and white lighting system makes you feel as though you are sitting under the stars by night creating a rich romantic mood. Large glass encased pictures of chilli’s dress the walls creating a fun element and celebrating the spiciness of the Indian cuisine. “The design to the restaurant had to be clean yet cosy with warmth and a welcoming atmosphere, the layout of the room and the décor does not overwhelm the food which is the main reason our guests are here. We wanted to celebrate the spicy inviting essence to Indian cuisine through our decor!” concluded Shelim. Timeless TasTe Lastly, one of Plymouth’s most noteworthy businessmen Benjamin Shearn, the proprietor of the Treasury, Bacaro and The Watering Hole in Plymouth, believes that design for any restaurant should offer an immediate wow factor combined with functionality, practicality

and efficiency. All Benjamin’s restaurant designs derive from a range of fantastically diverse ideas that have been pulled in from natural creativity and worldwide travel. The concept to Bacaro for example was influenced by Venetian waterside cafes, the Watering Hole offers a seaside feel and The Treasury set in a former 19th century converted city treasury was designed from ideas that stemmed from his love of travel and the colonial era. The Treasury is notably one of Plymouth’s most exceptional bar and restaurants within a landmark listed building. The design here is truly breathtaking with large plants, contemporary pictures and paintings, deep leather settees, opulent bay windows, a state of the art bar and lavish ornate furnishings. Not only are Benjamin’s designs meticulously thought through but they are definitely enhanced and complimented by the cuisine. “We wanted to weave our cuisine with the design; Bacaro features Venetian tapas ‘cicetti’. The Watering hole has an emphasis on comfort food and seafood and the Treasury offers classic English cuisine with world infusions,” Benjamin enlightened. However, the success to Benjamin’s designs in all his businesses is his ability for great timeless vision and a knack for offering elegance and appeal that won’t go out of fashion. “We offer originality, quality of furnishings and timeless good taste that absorb the natural surroundings and realise the beauty of the buildings you are working within.” Restaurants in the South West undoubtedly exude creativity and have undeniably created an appetite for ambience. So, with so many places to visit with such a diverse range of fantastic interiors, isn’t it time that you explored and experienced the restaurants in the region that provide a fabulous feast for all the senses including the eye?

Family Flair For Shelim and his family, the design to Nibana their refined Indian restaurant in Crownhill Plymouth, was all about equal family input and creating a harmonious inviting restaurant together. “We all have to work here everyday and we all had to like the environment that we worked in, so it was crucial that we all designed the restaurant together to create a happy working environment,” he advised. As soon as you enter earthy natural tones prevail. Tables are placed spaciously to create intimacy but also for the ease of serving guests.

take one creative French chef; mix in warmth and relaxation, affordable prices, generosity and a huge helping of Michelin recognition and then you’ll have – Chloe’s restaurant! So you’ve visited - right? By rosalie glendinning

here are very few restaurants that can adeptly blend and balance all the right ingredients in all the right areas, to provide you with an entirely exceptional experience when visiting for lunch or for dinner. however, Chloe’s restaurant in the heart of Plymouth City, simply does. For those of you who’ve already visited, it will come as no surprise that Chloe’s has secured an impressive reputation in just four short years, nor will its Michelin recognition make you bat an eyelid. what will come as a surprise, however, is that there are still some, who have not yet reaped the rewards of Chloe’s, where outstanding French dishes, served with refreshing friendliness, honesty and at affordable prices are in abundance. “we definitely have loyal, regular guests that return time and time again, but we are looking forward to meeting new customers. everybody is welcome, there’s no pretentiousness and there are no rules, apart from enjoy!” said co-owner Jo. after celebrating their fourth anniversary on July 14th 2009, (coincidentally Bastille Day), the recipe to Chloe’s success has been simple. the first ingredient has been in Chloe’s city central location in the heart of the business district, a short stroll from the main shopping hub and just around the corner

a warM weLCOMe awaitS

from the theatre royal. the second, in their warmth, where relaxed staff meet your needs with cheery grace, ensuring relaxation in an informal environment. “Our aim has been to create an entirely relaxing experience, where all guests get the feeling that they have just walked into an inviting living room in the heart of the city and amongst friends,” Jo added. the third reason is in the relaxing ambience created by their subtle décor and design. warm earthy tones are lifted with natural colours, clever lighting, scattered green plants and perfectly placed beautifully dressed tables. By day Chloe’s is casual and bistro, by

night there’s a romantic rich mood largely created by the natural music that pours from the waldstein Baby grand Piano. the fourth reason is found in their incredible generosity for both lunch and dinner. at lunch times Chloe’s is Bistro orientated with an ever changing rapide menu which is excellent value for money and daily specials that the staff are more than happy to run through for you. astoundingly, the lunch menu offers a main dish for just £9.50, two courses for £13.50 or £16.50 for three courses. the evening experience is equally affordable as there are no hidden extras; no charges for bread and no supplements on any of the a La Carte Menu

dishes, literally what you see is what you get! the evening a la Carte menu offers two courses for £30.00 or three courses for just £35.00! Jo added: “what could be better than simply popping out for lunch in between shopping or business and being able to enjoy affordable dishes with a Michelin seal of approval?” But, it’s the fifth and final reason that has undoubtedly been the crucial ingredient to the success of Chloe’s; the delicious Modern French cuisine prepared inventively by Jo’s fiancé, French Chef, Didier Franchet. all the dishes created by Didier strictly use only the finest freshest locally sourced seasonal ingredients, allowing for the creation of beautiful classic French favourites enhanced with contemporary innovation. From traditional beef bourgignon, roasted French rabbit leg to fresh local lemon sole and wild mushroom pasta gratin, there’s definitely something for everyone. what’s more, Didier ceaselessly adapts and enhances the menu by regularly introducing new dishes to savour and there’s also a beautiful range of devlish desserts and an extensive 28 strong wine list to deliberate over!

Such is Chloe’s popularity, it also comes as no surprise that customers regularly ask if they can purchase items and food from the restaurant to take home with them. Jo said; “From our wine holders to our escargot, we were always getting asked if we sold a variety of items in our restaurant, but they were sourced from France and we didn’t - until now that is. For november 2009, sees the launch of “Petit Marche” our new produce mail order and online site, where people will be able to order French products through us.” Petit Marche will be showcased at the Mount edgcumbe house Christmas Fayre on the 12th and 13th December, along with their luxury Christmas hampers and a cooking demonstration, again illustrating the adaptability of this innovative couple. and adaptable and innovative they are! From birthday parties and Christenings, to anniversary and engagement parties, corporate functions and wedding celebrations, you can even hire the restaurant entirely for private use. “Plymouth registry Office is literally five minutes from the restaurant and we can be hired out with no charge for any wedding party. it’s just a beautiful environment in which

to celebrate any occasion,” Jo added. what’s more if you need to buy a gift for any occasion you can even purchase a novel “Chloe’s gift Voucher” as a bespoke gift. Jo continued; “it’s hard to buy unusual gifts today and our tailormade vouchers offer the gift of a wonderful experience in a beautiful Michelin recognised French restaurant.” Simply, what more could you ask for? if you haven’t sampled French food before, now’s the time to try – at Chloe’s. with such creative dishes, affordable prices and warm hospitality believe me - you’ll wonder why it’s taken you so long! opening hours: Open tuesdays to Saturdays Lunch - 12.00 to 2.00pm. his wonderful part of the westcountry in which we reside is home to a plethora of suppliers and growers who take pride in the freshness and availability of tasty and original products. aspiring chefs and cooks from all sectors of the industry thrive on excellent suppliers allowing them to create signature dishes that are so essential to the originality of their businesses. repeat business in this precarious climate of uncertainty is surely the key to a successful restaurant, café or bistro. television has also played its part with chefs like rick Stein extolling the virtues of outstanding produce that inspire chefs and cooks to be more adventurous and honest with seasonal fare. Menus from most restaurants fall into similar categories with starters, mains, cheese and desserts coupled with wine and coffee or tea. Looking at these categories individually we can evaluate just how local produce can help

sell the dish or restaurant. take soup, which is certainly a must on cold winter nights so why not feature it with a touch of originality and flair. Vegetable Soup is just fine but why not feature the name of the main ingredients, add a spice or two and decorate with fresh herbs or fronds or vegetable tops? the soup then has a life! Like for example, Butternut Squash with ginger, or Leek, Potato and watercress Soup should simply sell themselves with a seriously fresh statement. Same applies to vegetarian dishes; give them an honest name, cook to order and present with style. tamar View from Saltash (01752 848738) are my preferred fruit and vegetable merchant and are always available to advise with seasonal produce that will make up part of these nutritional dishes that have become very important as part of a healthy option on a modern menu. Fish, Shellfish and Seafood are also synonymous with all that’s good about our

westcountry fare. there is simply no excuse not to purchase from our local ports of Plymouth Barbican, newlyn, Brixham or Looe for simply the freshest of day-boat produce. Classical fish dishes such as Dover or Lemon Sole are generally available for perfect grilling on the bone, the more fleshy Monkfish or Pollack can be used for kebabs or sautés whilst local sustainable fish like gurnard, grey Mullet or Skate wings show the chef in a more adventurous mode with a nod to different flavours and textures. with global warming certainly effecting the variety of fish available why not have a go at Octopus, hake or Sardines that have been in abundance this past year? Oysters, Mussels and Clams have also become a very big part of restaurant fare in the past couple of decades so purchasing live shellfish with traceability is to be taken very seriously. My chosen Fish Merchant is Moby nick from Plymouth Barbican (0871 231 2301) who

Every time a restaurant states “We Use Local Produce” it encourages return diners who in turn spread the ever useful word of mouth! If your restaurant uses local produce why not shout about it with a menu banner.

emails me a daily bulletin allowing me to check prices and availability before emailing my order often delivered before i get to work. Meats and Poultry will always be the main body of produce for most restaurants. no doubt each individual chef has probably got a professional relationship with his or her butcher who can often prepare certain dishes with flair and style allowing the final cooking to be completed with ease. Slow-cooked dishes are also something which chefs might wish to pursue enable real tasty stews and casseroles a rightful place on the menu. Ox tail with Celery and Sherry, Belly Pork spiked with thyme and Orange Peel or Lambs Liver Fry can provide fabulously tasty retro dishes that could find new customers returning to the “comfort zone” of yesteryear! game and Veal are also back with gusto as local suppliers can offer truly outstanding cuts of meat that will give added value to those customers wishing to be more adventurous when dining out. Preferred suppliers who simply know their cuts of Beef are Jones and Champion Catering Butcher (01752 665693) Bocaddon Farm Veal (01503 220991) also at Plymouth Farmers Market. Cheeses have made a very welcome return to menus with exceptional westcountry

based dairies producing some of the country’s finest examples. Cheese is also very important as an ingredient or as part of a sauce or winter warming gratin dish. You need go no further than visit Country Cheeses in tavistock and totnes for the very best advice and selection. Cheeses also have seasons when the balance of flavour can vary – this is when your local cheese expert will help with selection. (01822 615035). Desserts and Puddings are truly a must on all menus but why not venture into the traditional with a baked Cornish Cheesecake or a Figgy Duff? Bread Puddings are definitely back with a bang so why not add the very best dried apricots or Dried apple rings and Cloves served with fine Custard of course? all these wonderful westcountry inspired dishes must be washed down with super quality drinks; many sourced nearby and offered year round. Cider is a must as an accompaniment to Fish dishes and Seafood. go to Cornish Orchards in Duloe nr Looe for a fine selection of many different styles of cider all packaged with style with the restaurateur in mind. Fruit juices and brilliant cordials also add quality to the drinks list. Last but certainly not least wine. every restaurant needs a wine Merchant who knows

about current quality products and current vintages. Short, sharp concise wine lists show understanding and know-how. My choice of expert in this field is Charles Steevenson in tavistock (01822 616272) who has a wonderful range of wines including a lovely selection of award-winning Devon and Cornwall wines that are truly excellent. Keeping it local for the locals surely must be the mantra. this will also encourage the many visitors to the westcountry to experience the very best we can offer. the restaurant world is awash with awards, but what do they mean, how do restaurants earn them and who are the judges? nick bayly reviews the reviewers

f the first thing you think of when you hear the word ‘Michelin’ is of big rubber things attached to the wheels of a Formula 1 car, then you’re probably reading the wrong magazine. however, if the word conjures up images of gordon ramsay’s furrowed brow, Masterchef or egg and bacon ice cream, then you’re more likely to know what i’m talking about here. it’s the wonderfully idiosyncratic and somewhat secretive world of restaurant awards. to the casual observer they may seem like meaningless gongs associated with eye-watering prices and impossible-tobook tables, but to those in the know they represent a tangible benchmark of culinary excellence. awards not only provide a

StarS in their eYeS snapshot of ‘current form’ of those working within the industry, but also offer an invaluable guide as to what you, the diner, might expect from a visit to an establishment that has been deemed worthy of one. in the days of internet forums and instant consumer feedback, one would have thought that these awards, whose printed guides line the shelves of many a household, may have had their day, but i for one think they are needed more than ever, cutting through the often ill-informed blogs and blather to deliver a concise, consistent and professional assessment of the marketplace. But how do restaurants earn their stripes, what do the awards mean to the chefs and, more pertinently, how do they impact on the

end user, the paying customer? the two main restaurant awards in the UK are those dished out annually by the Michelin guide and the automobile association. quite why a tyre company and the self-styled ‘fourth emergency service’ have become the arbiters of taste when it comes to cooking seems like an odd alignment, but it dates back to the mass production of the motor car at the turn of the last century, and the opportunity it afforded drivers to travel the length and breadth of the country stopping for lunch and dinner along the way. although the Michelin guide first appeared in the early 1900s, its famed ‘star’ system launched in 1926 as a way of distinguishing the great from the merely good on its growing list of places to eat. Fast-forward some 90 years, and attaining a Michelin star today is widely regarded as having reached the pinnacle of the cooking world. with only 1,800 restaurants in the 22 countries the guide covers having been awarded one or more stars, it’s a truly rarified club. to give an even better understanding of star status on a more local level, only 16 restaurants in the UK have two stars, and only four have the magical three stars (the Fat Duck, restaurant gordon ramsay, the waterside inn and alain Ducasse at the Dorchester). the stars have a massive impact on the financial success of a restaurant, with a third star historically boosting profits by as much as 60 per cent, while one and two stars can guarantee that tables are equally hard to

come by. Conversely, the loss of a star can have a precipitously negative effect, with one of the world’s most revered French chefs, Bernard Loiseau, committing suicide six years ago after reportedly fearing that his restaurant, the Coq D’Or, might lose one of its three stars. it’s a sad story, but one that highlights the intense stress that reaching for the stars can bring upon those that seek them. interestingly, and what is less advertised, is that less than five per cent of the restaurants in the 1,200-page Michelin guide have any stars at all, with the vast majority appearing on the basis of positive reviews from the guides team of inspectors and recommendations from the general public. these restaurants are local, accessible and affordable, and counter the argument that Michelin-rated restaurants are all about fine dining and starched linen. the restaurant rating system is shrouded in a degree of mysticism, but the criteria by which a star is awarded is perhaps best explained by the editor of the Michelin guide himself, Derek Bulmer. he says: “the things that we look for when we award a star are firstly the quality of ingredients that are used – they must be of the very highest quality in order to get a star. we then look at the skill and flair in the preparation of those ingredients – that is if you like the talent of the chef. we look at the combination of the flavours. Do they go well together? Do they enhance the dish? we also look at the levels of creativity on the menu – does it suggest that the chef is striving to do something original?

“we also look for consistency and that’s in two parts – firstly, right across the menu, to make sure that the chef is not just a great meat cook, but can cook fish and that the desserts are up to the same standard. Secondly, it is consistency over a period of time: stars are not awarded very quickly, over just one or two meals, we will look at an address over a year to 18 months before we consider awarding a star.” in light of the current strained economic climate, Bulmer is quick to add: “Most of the Michelin guide is affordable. People always focus on the stars, but it’s only five per cent of the total book. People don’t want to talk about all the hundreds and hundreds of restaurants in the guide that are perfectly good places to go out and eat in, and that’s why most people buy it.” with the judging criteria established, the restaurants are rated following multiple visits by one or more of Michelin’s team of 70 inspectors working in europe. their visits are often prompted by requests from the restaurant owners themselves, while

“STArS ArE noT AWArdEd VErY QuiCkLY, oVEr JuST onE or TWo mEALS, WE WiLL Look AT An AddrESS oVEr A YEAr To 18 monTHS bEForE WE ConSidEr AWArding A STAr.” others are inspired from the inspector’s local knowledge or a weight of positive reviews from customers, who often send in reviews to the guide’s editors. to provide an idea of the work involved, in an average year each Michelin inspector clocks up over 20,000 miles on the road, eats over 250 meals and spends around 150 nights in hotels and guesthouses. each visits more than 800 establishments and writes over 1,000 reports. if you like driving and eating, it’s a dream job, but don’t bother applying if you’re scared of motorways and turn green at the sight of liver or squid. the inspectors always visit anonymously, booking under assumed names, and although chefs make it their job to spot the likely types, keeping tabs on such diners can provide an unnecessary distraction from the main task at hand. Men in their mid-40s dining alone with a notebook are a dead giveaway, but often inspectors come in pairs, or even pose as married couples. to confuse matters further, the guide’s editors rotate inspectors around the country, so they might not visit the same area for seven or eight years, making it even harder for chefs to spot their reviewers. Changes in chefs and/or ownership

will often set off a return inspection from Michelin, who claim to revisit establishments on average every 18 months in order to keep ratings up to date and ensure standards haven’t slipped, while inspectors always keep a close eye on new openings from talented chefs on the move. while attaining Michelin star status is something most chefs dream about, there are other awards that are equally revered, most notably those offered by the aa’s highly-respected rosette scheme, which helps provide diners with an indication as to culinary ability at restaurants throughout europe. the aa’s feared inspectors award the honours to restaurants for the ‘quality and service of their food and demonstrate mastery and excellence in their field’, with the number of rosettes offered from a starting point of one, up to the dizzy heights of five (see fact box). Because of the wider spectrum of award levels, the aa’s one- and two-star rosettes are slightly easier to come by than Michelin’s entrylevel status, with a three-star rosette perhaps equating to one Michelin star, if there is such a currency exchange in such subjective matters. to perhaps counter any accusations of exclusivity, Michelin has recently introduced a Pubs and Bars guide, as well as launching a new restaurant award called the Bib gourmand, which is particularly relevant in today’s economic climate, as it lists some 100 restaurants in the UK which offer a three-course meal for under £28, and that meets the criteria of offering ‘good food at moderate prices’. it may sound a rather flimsy benchmark, but getting on this list is no mean feat, and is hotly pursued by the huge number of restaurants operating in this competitive price range. they are represented in the guide with a tiny ‘Michelin Man’ logo with his tongue hanging out, which seems rather appropriate. and what of the restaurants themselves? Do they think that the toil and tears required to gain industry recognition pays off at the till? rising star nathan Outlaw, the 30-yearold head chef at the two-star restaurant

that bares his name at the Marina Villa hotel in Fowey, Cornwall, has no doubt about its positive effect on his business. “Being located in this part of the world does have its drawbacks when it comes to building up a reputation, so earning awards has helped build our customer base up regionally, as well as nationally. For the majority of the year we are relying on locals to book our tables, so you ignore the local market at your peril, but even that is driven by positive reviews in guide books and the press.” Despite the omnipresence of rick Stein, and the recent arrival of Jamie Oliver, Outlaw’s eatery is one of only five Michelin-starred restaurants in the South west, whose joint top-rated venue is the two-star gidleigh Park in Chagford, which is run by the inspirational Michael Caines. the other ‘one-star wonders’

in the region are the new angel in Dartmouth, which is operated by chef and tV celebrity John Burton race; the elephant in torquay, and the Masons arms in Knowstone. the Michelin guide also operates a rating system for those operating just below star status, with some popular restaurants in the Menu guide’s territory in Plymouth earning their places alongside those of international standing. tanners, Chloe’s, artillery tower and the Barbican Kitchen have all been afforded the coveted crossed knifes and forks, which represents Michelin’s sign of quality, and have benefitted hugely from appearing in its pages, especially when it comes to attracting visitors on holiday, who might otherwise not be aware of their notoriety. Further afield, the widely-acclaimed horn of Plenty at galworthy has three aa rosettes and three

the awarDS anD what theY Mean... miCHELin STArS * One star denotes a ‘very good restaurant’ in its category - it’s worth a short trip. ** two stars mean ‘excellent cooking’ it’s worth a slight detour. *** three stars offers ‘exceptional cuisine’ and is well worth a special journey. michelin-starred restaurants in the South West: one star: the new angel, Dartmouth; the Mason arms, Knowstone; the elephant, torquay. Two stars: restaurant nathan Outlaw, Fowey; gidleigh Park, Chagford.

AA roSETTES * excellent restaurants that stand out in their local area. the food is prepared with care, understanding and skill, using good-quality ingredients. ** restaurants with two rosettes represent the best local restaurants, offering higher standards and better consistency. greater precision is apparent in the cooking, and there is obvious attention to the quality of ingredients. *** three rosettes are awarded to ‘outstanding restaurants that demand recognition well beyond the local area’. they feature imagination and high quality ingredients, with consistent timing and judgment of flavour combinations.

Michelin ‘knives and forks’ to its name, with the enchanting country house hotel earning plaudits for Peter gorton’s ‘classic cooking and exemplary use of local ingredients’. Back in Plymouth, the Victorian grandeur of the Duke of Cornwall hotel enjoys tworosette status, while the Farmhouse restaurant at China Fleet Country Club recently became one of only 640 restaurants in the UK to be awarded one rosette. head chef Marc Slater, echoed the sentiments of many a chef before him, when he says: “it’s a chef’s dream to get an aa award. the Farmhouse is a fantastic restaurant and we all deserve this great accolade for our hard work. we would now like to look for a second rosette in the future.” Ultimately, awards and the guidebooks that support them are, just like the Menu guide, here to inform and inspire in equal measure. they can unearth a truly hidden gem that lies right on your doorstep, encourage you to take minor and major detours, and above all, encourage you to experiment and widen your culinary experiences. So if you’re looking for a food-loving present, be it for Christmas or a birthday, a copy of the Michelin guide or the aa’s restaurant guide comes highly recommended, while a booking to go with it might be an even more inspired gift.

**** Four rosettes highlight cooking that demands national recognition. Dishes demonstrate intense ambition, a passion for excellence, superb technical skills and remarkable consistency. ***** the food at a five-rosette restaurant stands comparison with the best in the world. it is highly individual, displays breathtaking culinary skills, with faultless flavour and texture combinations taking each dish to a new dimension. Three rosette-starred restaurants in the South West: the horn Of Plenty, gulworthy; hotel endsleigh, tavistock; Lewtrenchard Manor, Lewdown; the Orchid, torquay; the abbey, Penzance; hotel tresanton, St Mawes; well house hotel, Liskeard; Driftwood hotel, Portscatho. The 2010 Michelin Guide (Great Britain & Ireland) is available from January at all good book shops, priced £15.99. The 2010 AA Restaurant Guide is available now, priced at £16.99.

have to admit; i am the world’s worst at keeping a secret, share and share alike i say especially if the secret’s worth sharing! So after visiting the Bridge Bar and restaurant in Plymouth Yacht haven and realising i’d probably just stepped into one of the best kept secrets in the region, this fabulous establishment didn’t stand a chance! with its attentive service staff, freshly cooked flavoursome dishes, enviable views over Plymouth’s Yacht haven and the recent appointment of Janette Bashford the business savvy general Manager at the helm, it’s not surprising the secret’s out! “we have seemingly been one of the best kept secrets in Plymouth, mainly due to our unique location however, word has certainly spread, we now have a great following and new customers are appearing all the time!” Janette gleamed. as soon as you enter, there’s a refreshing spaciousness and uplifting airy ambience, as natural light pours in through the floor to ceiling windows that frame views of Plymouths ever-changing yacht haven. the restaurant is based on two levels, both of which offer extended seating areas to relish the outdoors. neatly laid tables are

intelligently placed internally and externally, large green plants enliven corners, pictures with a sea theme dress the walls and two chic bars offering a medley of local beers, ales, spirits and an extensive world wide wine list, offer focal point on both levels. two grandiose pictures of Lawrence of arabia additionally enhance the walls on the stairwell giving cause for conversation. as revealed, Mount Batten was once a rnaS/raF seaplane station and Lawrence of arabia otherwise known as aircraftsmen Shaw was stationed there from 1929-33, of which is undoubtedly recognised and celebrated at the Bridge. everybody is welcome at any time. the doors open at 8am for early birds requiring breakfast or a wake up coffee. then throughout the day a medley of guests arrive from dog walkers, lunching ladies, families, seafaring folk in their colourful variety, dining businessmen and romantic couples to those who simply fancy a few drinks in a chic, unique relaxing location. what’s more, with refreshing dexterity the staff gracefully adapt to meet guests needs for every occasion. are equally tantalising with icecreams, chocolate brownies and cheeses and vegetarian, gluten free and children’s options are available all the time. however, the secret to the increasing success of the Bridge Bar and restaurant is in fact, no secret at all and the concept simple. the service is always strictly courteous and kind, the cuisine of a consistently high standard and the experience for every guest more than enjoyable. as Janette aptly surmised; “the customer is key at all times and the focus of our attention. we listen to what the customer wants and deliver it, let’s face it, it’s not rocket science, it’s simple and really, no secret at all!”
