• Start time/end time – All boats must start at the dock and be back at the dock at finish time for each day of the tournament – NO Fishing T our na m en t EXCEPTIONS. • All fish must be weighted-in same day as caught. • Fish may not be transferred from one boat to another boat. • Minimum weights apply as stated below. • No change of anglers will be allowed after registration on the Friday evening preceding the tournament. • Maximum number of people per boat is not to exceed the licensing limit for boat. • IGFA rules apply for all qualifying fish. • Prizes are as announced. • No live bait is allowed. Lures only – no bare loose hooks on board competing boats. No cast nets allowed on board competing boats. Items of this nature must be removed from competing boats before boat inspection the morning of the tournament. • NOTE: Anglers are encouraged to obtain a Belize Sport Fishing License in accordance with the laws of Belize. These can be obtained at the Placencia Tourism Center (5234045) in Placencia Village across from Scotia Bank, or at the Coastal Zone Management Authority Institute (223-5739) on Princess Margaret Drive in Belize City. • Any protest concerning conduct or rules violation must be reported to the tournament judges. Judges have the right to inspect tackle or boat if necessary. • Boats are encouraged to carry a scale on board to weigh fish as they are caught in order to catch and release fish that have no hope of making the minimum qualifying weight. ↓ Official Team Registration Form ↓

Placencia BTIA Semi-Annual Meeting On Friday, August 19th, approximately forty members joined the PBTIA board and speakers Karen Bevans and Yashin Dujon for an informative meeting at Wendy’s Restaurant. Reports were given by Chairperson, Jodie Yearwood Leslie, Cleeve Westby, Chris Small and Wende Bryan, Editor of the Placencia Breeze. Karen Bevans, Director of the BTB, followed with information on the upcoming BTB business visits follow by Yashin Dujon of the Ministry of Transport and Tourism. Mr. Dujon spoke on the Placencia Airstrip upgrade which the ministry has assessed to cost much more than originally thought and will not proceed until probably 2017.

Elysia Dial, representative of Barefoot Bar, asked if the BTB has plans to also visit bars, restaurants, and other tourism based businesses such as spas, gift shops etc., that are also a much needed and vibrant part of what makes Belize's tourism product work. "It seems as if sometimes the needs of these businesses are overlooked even though they are also a very important part of Belize’s
tourism product" Natasha Eiley from the Placencia Tourism Center, Jonnell Augustine from the National BTIA office and Hatem (Tom) Al-Ajba from The Placencia Breeze were also in attendance plus Maz Car who took the photographs. A buffet of finger food was available for everyone after the meeting with a cash bar.

Hurricane Earl Hurricane Earl slammed Belize August 3rd close to midnight. Most damage was done to docks and homes in San Pedro, Caye Caulker and Belize City, Extensive wind damage and flooding extended through to Caves Branch and west to Cayo. The lower bridge in San Ignacio was washed away. Placencia fared better with dock damage and Seahorse Dive Shop was washed away. They are now operating from the Placencia Municipal Pier. The weekend after Earl, Doyle E Gardiner took a team to Cockscomb Basin Wildlife Sanctuary to help the park rangers clear fallen trees after Hurricane Earl. The jungle had lost quite a bit of canopy. Thanks to Doyle E Gardiner, Debbie Curling, Betancourt Orlando and volunteers from Projects Abroad, Tiger Fern Trail (the last of the trails to be cleared) is looking much better and the park re-opened later that week.

Lionfish Straws • 6 Lionfish fillets cut into even strips/straws • 200ml/1 cup Vegetable oil • 400g/1lb Flour • 1 Lime, zest (keep juice for lime mayonnaise) • 350ml/1 ½ cups Beer • Rock Salt and Black Pepper • Lay Lionfish filets on paper towel to absorb any moisture.
Sweet Chilli and Soy Sauce: • ½ cup Soy Sauce • 2 tbsp Rice Vinegar • 1 tbsp Asian Style Chilli Paste • 1 tbsp Honey • 1 tbsp grated Ginger • 1 tbsp toasted Sesame Seeds
Page 11 To make the batter, place flour in a bowl with the lemon zest, whisk the dry ingredients then add the beer, slowly whisking all the time.
Season well with the salt and pepper and serve with chilli sauce or lemon mayonnaise. Mayonnaise: • 4 free range egg yolks • Juice of half a lime • 1pint vegetable oil • Salt and pepper
Place the oil in a heavy based pan and heat until a drop of batter sizzles and browns. Dip the strips of fish into the batter making sure they are evenly coated then lay Place the yolks and lime juice in them out in the hot oil and cook a food processor, blend until the them for about 2 minutes until yolks start to pale then slowly they are golden brown. add the oil until it thickens. Add seasoning.
Combine all ingredients in a bowl and stir
Hudut - Garifuna traditional dish Sere: • 11/2 lbs Lionfish filet • 1 Onion sliced and cut in half • 4 cloves garlic minced • 4 tablespoon coconut oil / cooking oil • 2 cans coconut milk • 3 cups water • 2 tsp salt • 1 tsp black pepper • 1 whole Habanero pepper without seeds (optional) • Spices desired Hudut • 2 green plantains • 2 half ripe plantains • 8 cups water • 1/2 tsp Salt
to use spoon to stir milk. Keep the milk in constant movement with spoon. The milk will start to curdle if you do not maintain the constant motion. Add fish. Remove fish after about 5 minutes and put to one side. Let the soup continue boiling and bubble until the soup is thickened. Taste for flavour, add salt and pepper to taste. 5 minutes before you turn off the stove, add the Habanero Pepper to the soup—ensure the pepper is whole and do not break open. After Soup is thickened remove 1/4 cup and add to the plantains in the food processor.
Directions: Hudut Peel and cut plantains. Each plantain should be cut in three or four pieces. Put the green plantains to boil first in 8 cups water. After they are half way done, add the half ripe plantains. Let all plantains boil until they are fully cooked. Remove from water and put them in the food processor. Let them cool a little before processing. You will need to process after Sere is made because you will need 1/4 cup of Sere to add to plantains before processing. Pulse at the beginning and after just process until it is the consistency you prefer. Heat the soup and put the Lionfish back into the fish prior to serving.
Lionfish and Shrimp Fish Cakes with Mango Salsa For the Fish Cakes: • 300g Lionfish, cooked • 200g Shrimp, peeled, de-veined and cooked • 2 medium Potatoes, cooked and mashed • 1 cup Breadcrumbs • 1 handful fresh Parsley • 2 tbs Fresh Parmesan, grated • 1 med Carrot, grated • 1 small tin sweet Corn, drained • 2 Eggs, beaten • Flour for dusting • Seasoning For the Salsa: • 1 large Mango, diced • 1 Red Chilli, finely chopped • 1 small Red Onion, finely diced • 1 large Avocado, diced • Handful Cilantro, chopped • 2 Limes, juice of For the salsa, mix all the ingredients together in a bowl and set to one side. For the fish cakes add all the ingredients, mix well, if the mixture is too dry add more egg, if it’s too wet add more breadcrumbs. Make them into patties and fry in a skillet in hot oil until golden brown on each side.

Simple Lionfish Spaghetti • 1lb 11oz poached Lionfish fillets • 2 tbsp olive oil • 3- 4 garlic cloves, crushed • Seasalt • 9oz cherry tomatoes, cut in half • Splash dry white wine • Handful fresh basil leaves • 9oz spaghetti, cooked al dente, rinsed with cold water in a colander
For poaching: • 2 quarts coconut water • 1 lb coconut flakes • 1 onion, chopped • 4 sprigs thyme, chopped (optional) • ½ habanero deseeded, chopped • 4 oz rice white vinegar or wine vinegar
In a medium sauce pot, sauté the onion until translucent and tender. Once the onion is soft, add the thyme, coconut flakes and pepper, cook until fragrant. Pour in the coconut water and vinegar. Bring the mixture to a boil and reduce to a gentle simmer for 10 minutes. Pour contents into a blender. Blend until smooth, then strain through a finemesh- strainer. Pour back into the pot and set aside.

Bring the poaching liquora to a simmer and add the lionfish fillets, simmer for 5 minutes until tender, strain and set to one side. In a large skillet place the olive oil, and garlic, toss in the white wine, spaghetti, tomatoes and lionfish, heat it all through add basil and serve with lemon wedges. When PHS was alerted that 6 puppies were rescued from a caye and needed to be fostered immediately, and eventually found loving homes, we called the Feldmans. Team Feldman - Rick and Candace are PHS’ go-to frontline volunteers for arranging rescues, fosters, and adoptions in our communities.
Since October, 2015, Rick and Candace have successfully found loving permanent homes for 20 dogs and 9 cats!

The Belize Fisheries Department has implemented seasons and size limits for many commercial species. Protecting our wild fisheries stocks, rebuilds seafood production, preserves our marine ecosystem, and protects the planet.

ercury is a neurotoxin. It bioaccumulates in fish. Some larger species, like shark, show higher mercury levels. Little mercury testing of fish is done in Belize. Shark is used in local treats like panades. So, always ask what fish you are eating. If you are pregnant, be cautious of your fish consumption. The lionfish is an invasive species to the Caribbean. It eats our commercial fish, and has no natural predators here; the best control method is to kill and eat it! It is healthy, delicious, and can be eaten whole or fillet. It tastes like grouper or hogfish. It has very venomous spines, but a scissors easily removes them.

Sea turtles are gentle ocean dwelling reptiles. Slow-growing & late maturing (may take between 12-40 years to reach adulthood depending on the species). Range in weight from 40 kg to 1,000 kg. They are primarily omnivores but the green sea turtle is an herbivore.

Tips
Adult females may nest for two decades or more. A gravid female may lay 2-6 clutches of 80-200 eggs per year. The eggs are incubated in the sand for 50-65 days, during which the temperature plays a crucial role in determining gender of the hatchlings. Mature females return to nesting grounds in 2-5 intervals.
Dim/turn off the lights nearby beaches and nesting sites. Don’t drive on sea turtle nesting beaches. Fill any holes you dig while visiting the beach. Remove all beach chairs, umbrellas, boats or any other furniture from the beach before leaving at night. Remove any trash from the beach when you leave.
