From the Fire Hearth: Alla We Da One! Many visitors to Belize are not sure what Belizean cuisine is all about. The truth is we Belizeans are still figuring that out ourselves. Guide books often point to rice and beans, stew chicken and potato salad with fried plantain as our unofficial national dish. Once the Belizean Creole Sunday dinner, this plate of food, while delicious, fails to capture the great cultural and culinary diversity of Belize which is just emerging from 400 years of colonial marginalization. On September 21st we celebrate 36 years of independence from Great Britain.

British influence began in 1638 and British colonialism in our area was based not on farming, as was the case in some Caribbean countries, but on forestry. The British colonial government did not want Belizeans to farm because they needed labor to cut down mahogany and other tropical hardwoods for export to England, Europe and the United States of America. They also discouraged farming until 1862 because before that date the area now known as Belize was part of New Spain and under Spanish ownership. British presence was allowed under a series of treaties that did not allow for the establishment of agriculture, permanent government or housing. Spain required the British to keep their presence limited to logging camps, fed chiefly by goods from ships. The local economy was flooded with cheap imported products from British farms. Barrels of British flour and British salt meat became daily staples, joined after 1880 by tins of canned meat and dairy.

it difficult for the average Belizean to acquire land. This further discouraged farming and ensured continued dependency on imported goods. Farming that did occur was mainly of a subsistence nature, with small scale local trade of any crop surplus. The British colonial government generally ignored medium and large scale agricultural production and distribution until the mahogany market began to falter. Goods from the United States of America joined British imports in the 1800s, with red kidney beans from New Orleans being used as ballast on ships to Belize Town (now Belize City). These beans were sold at such a low price that they outcompeted locally grown black beans, while the now empty boats were filled with mahogany headed for the American market. The culinary history of our country was skewed by colonial policy towards these imported staples.

Today this past is behind us but we are still emerging from centuries of dependency fostered by the colonial enterprise. Our first Prime Minister George Price famously encouraged us to develop our national culinary independence by eating local, telling Belizeans to eat less imported wheat flour and more local foods like corn, pupsi and crana (both freshwater fish). This speech was rejected outright by most Belizeans who had been told for generations that imported products were superior to Belizean ones. Local foods were associated with poverty, while a family who could afford to eat all imported foods gained prestige. This colonial hangover has hampered our transition to Belizean After slavery was abolished, (over a ingredients but things have changed 5 year transition period beginning in a lot since our independence from 1834), laws were passed that made Britain in 1981.

In tourism areas like Placencia Peninsula we still see a tendency to bring in foreign ingredients and dishes, but here and across Belize there are also chefs and restaurant owners who are committed to learning about and sharing the full breadth and depth of our cultural cuisines with their customers. Today we are in an exciting time as Belizean chefs and amateur cooks of all cultural backgrounds learn more about each other’s cultural foods, share dishes and ingredients and join the ranks of professional chefs, crafting new dishes with Belizean ingredients and flavor profiles. We have the interest and the ingredients to create a national Belizean cuisine that reflects our country’s splendid diversity. This September, it’s not just about carnival and waving the flag. I for one will be looking forward to Belizean

cooks and chefs getting creative in the kitchen. Let’s put our national pride on our plates with a Belizean cuisine that truly represents our unofficial motto “Alla we da one” (All of us are one). Love all the details around her spot - from local art to quiet nooks for everyone to hang out and must read a book. I loved her colour schemes, her eye for patterns and I think I asked her 10x where she got things...from art to drapes. You can tell she's an artist.

Casa Placencia is lovely and kept quite clean with daily room re-freshening. The management is both friendly and helpful to get you something you need (like beach towels) or help arranging a taxi to the airport. If I were to go back to Placencia, I would absolutely stay with Jacki again!"

Community Support for the PHS by Patricia Calenza

WHAT’S HAPPENING WITH PHS IN SEPTEMBER Mark Saturday, 16 September on your calendar for PHS’ monthly vet clinic. Dr. Orlando Baptist, his staff, and PHS volunteers welcome you in the PHS building on the Lagoon opposite Los Porticos, providing spays/ neuters/surgeries, exams, shots, and other professional services. Please call 604-8676 to schedule all surgeries. From noon to 2 pm, open clinic for non-surgeries. BZ, U.S dollars, and checks accepted for payment of your pet’s vet bill. Stay in the know. Check us our website at www. placenciahumanesociety.org And like us on Facebook at www.facebook.com/ PlacenciaHumaneSociety

PHS does not function in a vacuum. We count on community support, both far and near, to live out its mission of providing professional compassionate vet care for our pets and animals in our midst. That means financial support. It means volunteers working monthly clinics. It means its elected volunteer board

members responding 24/7 to issues and emergencies. And it means individuals simply rising to very special occasions.

Please enjoy reading these two stories that spotlight just that—in both cases, the care and concern individuals have shown for birds, actually no one’s pets, just nature’s gifts.

We encourage everyone’s involvement in PHS. You can begin by checking out our nonprofit volunteer based group on Facebook at www.facebook. com/placenciahumanesociety and on our website at www. placenciahumanesociety.org

Read how two young gals put the passion in compassion! Ten-year-old Lale Wallace and her bestie, Saphirah Ziegler, saw a nest of eggs one day in a tree in Lale’s Placencia yard. It sparked their care for these birds.

She has two dogs, one of them is a Great Dane. She has rescued many animals, including a baby possum, when a neighbor’s dog ate all its family. Lale and Saphirah sure put passion in compassion!

One day it was storming and raining, and the gals were afraid the babies that were hatching would wash out. Lale and Saphirah decided to anchor an umbrella in the tree to save the babies. Admits Lale’s mom, Rosemary Wallace: “I wasn't as convinced as my child that they couldn't survive the rain, since they are wild birds. However it appears that these girls might've been correct. One of the babies didn't make it out of its egg. However, the other one lived.” Lale Wallace is an animal lover.

facebook.com/ThePlacenciaBreeze by Rebecca Berquist During the second week of June, 2017, St. John's Anglican School participated in a week-long leadership workshop facilitated by high school students from Upper St. Clair High School in Pittsburgh, Pennsylvania, USA. Each morning for three hours, students engaged in lessons, activities, and reflections that emphasized the core values of authentic leadership (i.e. team work, integrity, openness, commitment). Over the course of the week, students were asked to set short- and long-term goals for themselves and create a viable plan to achieve them. Each day's mental and physical activities urged students to practice their leadership skills, as well as

Page 23

St. John’s Leadership Workshop

encouraged them to think about how to become positive leaders in their own communities. The students' instructors were six senior members of Upper St. Clair High School's (USC) Leadership Academy. Inspired by their mission, "Applying knowledge, inspiring leadership, changing lives", the teenagers spent months planning

curriculum and raising funds to prepare for their work in Placencia. USC Leadership Academy has partnered with Mr. Stephen Whyte, principal at St. John's Memorial School, and teachers since 2013, thanks to the generous support of Mr. and Mrs. James and Rebecca Berquist, proprietors of Mirasol Villa. Though permanent Pittsburgh residents, Mr. and Mrs. Berquist saw need for improvements in education and school resources in Placencia, and wanted to give back to the community. Consequently, Mrs. Berquist, Treasurer of Upper St. Clair School District, sought assistance from her district administration in Pittsburgh

to organize help for St. John's Memorial. The result has been a successful partnership between the two schools and their students, inspiring leadership and global friendship along the way. Comments from Mr. Whyte, the principal...to Lou Angelo, Principal at USC High School and Giulia Gouker, Program facilitator and Jared Nicholson, teacher Dear Mr. Lou and Ms. Jennifer, On behalf of the entire St. John’s Memorial Anglican School principal, teachers and students we would like to first thank you for the great effort you all made on making this year 2017 a successful Leadership Program for our students! This year the students that visited our school demonstrated a high level of professionalism, great communication and leadership skills to our students. They were always prepared with their group and also had a good classroom management. Our students were always enthusiastic and eager to know what was going to be the next activity for the day and also the following days. Our students learnt a lot of core values, for example: responsibility, teamwork and honesty when it comes to working with each other. We would also like to thank you for the tokens (especially the principal’s t-shirt and personalized stamp) that was donated to us. We greatly appreciate the help also with the graduation decorations! We eagerly await for another year (2018) fun- fill time with you guys! If you would like more information about the school, please contact Mr. Stephen Whyte at god_lovestephen @yahoo.com

Crocodile Hatchlings

With the rainy/hurricane season in full swing here it's crocodile hatchling season. If you're lucky enough to see some of Belize's next generation croc-stars here's a few things to keep in mind! • Croc moms are the best in the business and stick with their babies after hatching. So, as cute as they are, stay back and admire those cuties from a safe distance. • Baby crocs grow fast! In their first year they can gain up to a foot in length if conditions are good. • They are family! In their first few weeks and months, hatchlings stick together. They form groups which help them stay safe from predators and make it easier for mom to keep an eye on them. Just a few more reasons to love these awesome animals!
