merry christmas. Here in Prague, tradition runs deep. It’s part of what makes the city so special at this time of year. There’s the stunning Christmas tree in Old Town Square, which is shipped from northern mountains and lit with thousands of twinkling lights in a ceremony each year. There’s the handmade souvenirs of the holiday markets, like wooden toys, glassware, and embroidered lace, which recall decades worth of Czech history. Even the Czech traditional Christmas dinner—fried carp—dates back to the 18th century, when it represented the only meal cheap enough for the entire country to eat. Really, there’s no better time to get your fill of Czech tradition than during the holidays, and in this month’s issue, we’re doing just that. Those age-old customs range from feasting on carp to fasting in

the hopes of seeing a vision of the lucky golden pig (zlaté prasátko)—and don’t worry, by the end of this issue, we’ll explain them all. Prague’s world-famous Christmas markets are a wintry marvel every visitor should see, and we’ve put together a guide to all the hits, from Old Town Square and its 31-meter Christmas tree to the nearby smoked meat stalls at Náměstí Republiky. The Czech phrase for Christmas Eve, Štědrý den, translates to “Generous Day,” making December also the month of giving back. It’s not hard to do in a place like Prague, where dozens of local creatives are crafting quality goods, all part of this month’s gift guide. And if you’re worried about the gimmicks that sometimes come with holiday shopping, on page 33, meet Janek Rubes, Prague’s vigilante hero who’s cracking down on tourist scams with his

weekly video series. But Prague wouldn’t be the revolution-born city it is without people willing to push the boundaries of tradition. It’s fitting that New Year’s comes so soon after Christmas—as much as the holidays are a time of appreciating the traditions we’ve built, it’s also a time to look ahead to the history we want to make ourselves. Going into the new year, you can find us wandering the stalls at the Christmas markets, sipping svařák, and frying our carp, and we hope you’ll join us. But we’ll also be racking our brains for ways we can be a better magazine, a better source of community, and even just better people—and we hope you’ll join us on that, too. Tchaikovsky’s Swan Lake was composed in 1875 as a commission by Vladimir Petrovich Begichev, the intendant of the Russian Imperial Theatres in Moscow. Like The Nutcracker, Swan Lake was unsuccessful after its first year of performance. Conductors, dancers and audiences alike thought Tchaikovsky's music was too complicated and hard to dance to. The production’s original choreography by German ballet master, Julius Reisinger, was uninspiring and unoriginal. It wasn’t until after Tchaikovsky’s death that Swan Lake was revived. By Tatiana Cirisano and Sam Spengler Late November through the new year, Prague transforms into a wintry wonderland, with markets across the city offering traditional treats, svařák (mulled wine) and handmade goods. Markets can be found all over Prague, but we scoped out the hits below. Use the circled numbers to correspond with the map on page 18.

It’s no surprise that Old Town Square is home to Prague’s largest and most picturesque Christmas market, complete with a towering, 31-meter-tall Christmas tree, nativity scene and concert stage in addition to its food and gift vendors. The square is a must-visit for holiday shoppers, if not for the photo opportunities alone.

Visiting this shopping hub may be the most efficient way to check off your holiday gift list. Here, time-pressed shoppers can bounce from the decked-out market stalls to the dozens of big name shops and department stores that line the square.

The romantic, intimate Christmas markets at Náměstí Míru are perhaps the only stands frequented by more Czechs than tourists. These markets prize handmade goods like soaps and lotions, wooden toys, and scarves over touristy gimmicks, and the square’s stunning view of the neo-Gothic Church of Saint Ludmila only adds to the fairytale atmosphere. These are also the first markets to kick off Christmas season, with a selection of over 60 stalls.

For visitors looking to take a break from the craziness of Old Town without losing its magic, Náměstí Republiky is the place. Located within walking distance of Old Town Square and Wenceslas Square, Namesti Republiky hosts market stalls on the cobblestoned area in front of the impressive Municipal House and the Palladium shopping center. It’s also one of the best markets for traditional Czech market foods, like barbecued pork and blood sausages.

Look out for December 5th, a holiday known to English-speakers as St. Nicholas Day. In the U.S., this holiday is celebrated in some families by an elf who puts candy in children’s shoes overnight. In Ireland it is recognized with a mass. The Czechs have a slightly different, and scarier way of celebrating. Widely recognized and practiced across the country, this holiday is completely separate from Christmas, when St. Nick (a.k.a St. Mikuláš) doesn’t even appear. In the evening, children wait for St. Mikuláš to arrive at their front door accompanied by an angel and one, sometimes two, devils. The mythological guests then ask the children how they behaved that year, and unlike the American Santa Claus, the costumed guests (often friends of the children’s parents) know the answer. They may even ask the children to sing or recite poetry. Good children will receive a basket of presents containing candies and fruit. Bad children might receive a lump of coal.

Christmas Eve is the main day for celebration in the Czech Republic and when most families gather together. During the day, families decorate their Christmas tree with glass ornaments or the less expensive straw decorations. After sunset a large dinner is served that often contains fish soup, fried carp and potato salad. Leading up to Christmas, markets often have large tanks full of carp. Families select their carp from a large tank and let the storekeeper do the filleting himself. Unlike many other Germanic and Englishspeaking countries, it's baby Jesus (Ježíšek) who brings Christmas presents for the children. Families eat in a different room than the Christmas tree, and during dinner baby Jesus will magically put gifts under it. As dinner finishes, a bell might ring signalling that the gifts have arrived and children will rush off to open them. In the evening, religious families often go to midnight mass.

Christmas Day is more low-key here. When Czechs think of Christmas, they typically think of December 24th. The day after is still recognized, however, and families will spend it winding down and visiting the side of the family they did not see on Christmas Eve.

Historically, St. Stephen's Day (Sv. Štěpán) was a day when the poor children, students and even teachers would go to people's homes singing Christmas carols. More recent, the tradition of jumping into a cold lake or river has been come popular. If you want to watch (or participate), it normally happens in Prague near the National Theatre.

bathtub carp & GOLDEN PIGS: Czech Christmas Facts For a country with an estimated 75% of the population religiously unaffiliated, the Czech Republic practices a surprising number of religiously-based traditions. Saint Nicholas day doesn’t only strike fear into children hoping to receive baskets of presents. The elaborate costumes and masked strangers walking down the street are enough to strike fear into the hearts of many travellers. Some will fast all day on Christmas Eve in hopes that they will see a vision of the “golden pig” or “zlaté prasátko” before dinner; a goodluck sign for the coming year. The Christmas meal dates back to the 18th century when carp was cheap enough to be a common tradition among all Czechs. It’s not the most delicious meal, but it’s a tradition representing a Czech national unity.

Even today in some of the villages, many Czech families buy a live carp and let it swim in their bathtub for up to a week or so before Christmas in order for it to be as fresh as possible, if not for the wonderment of the kids. Unlike other traditions, the person who brings the presents (baby Jesus) does not have a specific image. Czechs imagine him as a magical, incorporeal being. And, if you're hungry for a full meal, try next door, the food at sister restaurant Parnes is as amazing as the views from their deco. 

A beautiful courtyard with vines climbing the wall, classy coffee bar, and cool hispter vibe make this place noteworthy. Add in a vegetarian menu, and it's devine.  

Czech Every one of our Czech friends tell us this is exactly what their grandmother's food tasted like. Their amazing food and great beer is probably why Lokal has expanded to three locations. This is the biggest location and our favorite. 

Walk-up Food In Czech it means "Not for Vegetarians". Okay, not really... but Nase Maso is the go-to for delicious and fresh meats, including dry aged beef and pork sausages.  

Café Arrive early to this traditional Czech bakery in the trendy Karlin District—their homemade kolachees, frgale and other goodies are known to sell out by lunchtime, so get there early!  

The Tretter family has been in the bar business for more than 90 years. So it’s no wonder this place feels like walking into a 1930’s Paris or New York cocktail bar. With soft lighting, classic decor and bartenders dressed the part in vintage cocktail jackets, the bar has become an institution. The drinks are incredible – custom cocktails and meticulously made classics, some with a new twist. Tretter’s gets absolutely packed, sometimes out of nowhere. The trick is a reservation, so you’ll want to call ahead.

Maybe Parlour doesn’t want to be found – and that’s fine with us. The tiny little bar at the top of Wenceslas Square near the National Museum has a delightful speakeasy vibe to it, though it’s quickly becoming a popular secret. If you should luck out and discover the nearly unmarked entry, inside you’ll find an intimate, dimly lit bar with old jazz and R&B records playing and amazing craft cocktails served in antique glassware. The good news is you don’t have to worry about finding a menu in English—there is no menu. Instead, your bartender will ask what you like and offer suggestions from there.

L’Fleur is just a few doors down from Tretter’s. Even before our first drink, we fell in love with 1920’s feel of the interior, complete with a Mucha-inspired stained glass window towards the back of the bar. The bar has a nice buzz to it inside, and for a while, we almost forgot what year it was. There’s a lot of choices on the drink menu, and the signature drinks all come with their own history, which your bartender is always happy to explain. If you’re feeling a bit more bubbly, try a selection from L’Fleur’s expansive champagne list.

It’s nearly impossible to go into the AnonymouS Bar and not smile. The bar is clever at every turn. You can tell the bartender your likes and they’ll make suggestions, or choose from the secret drink menu printed in UV ink and read with a small blacklight. Reservations are taken only until 9pm.

Prolog is about attention to detail, and they’ve clearly put thought into every aspect of their work. Take the drink menu. An American Physician weighed patients just before and after death in 1907, concluding the weight of the soul to be 21 grams—a moment that inspired Prolog’s 21-drink menu, which serves a reminder to patrons to celebrate life. Seven of those 21 drinks are named after the Seven Deadly Sins, like the Sloth: a concoction of Magellan gin, chamomile cordial and prosecco, all which dawdle on a velvet pillow filled with chamomile.

Le Valmont is a newcomer, just opened in Spring 2016. The Michael Van Cleef Ault concept was inspired by the Milos Forman movie of the same name, and is decorated in 18th-century French fashion with aubusson carpets, antique sofas, and massive crystal chandeliers. Just take note of the strict dress code at Le Valmont—no hats, hoodies, shorts, tank tops or sandals. Reservations are all but required, since the 100-capacity lounge fills up fairly quickly.

Chances are, if you’ve asked around, you’ve already been recommended to Hemingway’s Bar. The Old Town hotspot just made the “World’s Top 50 Bars” for the third time, and with good reason. Imaginative drinks (like cocktails served from tiny gasoline canisters and perfume bottles) and friendly service are two of the benchmarks that make Hemingway’s one of our favorites. The bar’s philosophy is that every customer must have a seat, so you won’t feel overcrowded here. Hemingway’s is almost always busy, so we would recommend a reservation or you’ll find yourself waiting outside.

Nestled in a cozy cellar just across from the Old Town astronomical clock, Black Angel’s will put you in sensory overload. With high cellar ceilings, chandeliers, and ornate decor, it’s a lot to take in. The only downside to Black Angels is the influx of tourists which can pack the place, especially groups.

Bar & Books is the first overseas extension of the famous New York family of bars, with two locations in Prague (the more casual in Manisova and slightly more formal in Týnská). Like its New York counterpart, the bar evokes the feeling of a gentleman’s library. Dim lighting, heavy woods, ornately framed paintings, and of course books (though mostly for visual aesthetics). The cocktails here are serious business, and if you’re looking for a nice Cuban to go with your drink, this is the place to be.

BONVIVANT’s CTC 8&

Bonvivant's CTC isn’t huge, but it’s cozy and has a cool 1950’s feel with mid-century wood furnishings, a pressed tin ceiling and a checkered floor. When it comes to ordering, forget the menu and just talk to your bartender. Each is a virtual encyclopedia of drink possibilities and suggestions based on your tastes. Incidentally, the “CTC” in the bar’s title actually stands for cocktail tapas café, and it hits the mark on each one, serving some pretty damn tasty dishes and coffee as well.

Bugsy’s is another bar with a great history, popping up in 1992 just after the Velvet Revolution. The place has seen many changes over the years, but the one constant has been their attention to detail and passion for good cocktails. Bugsy’s also loves their bubbly, and boasts over 130 brands in stock, as well as over 90 single malt whiskeys and 100 types of rum.

High atop the Žižkov Television Tower, Oblaca is making better cocktails through science. Oblaca’s Aleš J. Števlík, genius mixologist gone mad scientist (maybe that explains the drink served in a test tube). Števlík deploys molecular mixology in his cocktail designs, exploring the physical and chemical transformations of ingredients that occur when making a cocktail. And what better laboratory for Števlík to create his unconventional concoctions than high above Prague in one of the most unconventional buildings in Europe.

Perched 40 meters up atop the Hilton Hotel, Cloud 9 Sky Bar and Lounge is more than just a hotel bar. Nestled near several international companies with large expat workforces, Cloud 9 always has a diverse crowd. The drink menu is expansive, with a focus on gin and tonic creations from around the world, enriched by natural ingredients and paired with delicious bites and snacks for sharing with friends. Thursday nights feature DJ events and live performances.

Just around the corner from its older sibling Hemingway’s, this little gem is making its own name with cocktails like Pin-Up Martini, made with passion fruit, vanilla and champagne. It’s an intimate bar, and they don’t take reservations. There’s also no smoking and, you guessed it— the bar doesn’t take credit cards. Oh, and by the way, they do serve amazing hot dogs..

TRETTER'S GALLERY SPIRIT SHOP One of our favourite Prague bars is always full of suprises. First, Tretter's New York Bar began marketing their now famous chips (find them pretty much anywhere). Then, a few months back something even bigger - their own beauiful Gallery Spirits Shop, located on-premises of the famous Prague watering hole. Cross Club is a labyrinth of small bars and dancefloors pumping music from dubstep and techno to reggae. M1 Lounge is a favorite of locals, expats and even passing-through celebrities, and it’s not hard to see why. With millions of online views, Honest Prague Guide's videos help tourists avoid scams, tourist traps and other pitfalls By Tatiana Cirisano It’s a Wednesday afternoon in Old Town Square, and the postcard-perfect scene is already swarming with tourists snapping photos of the historic gothic church and medieval astronomical clock. But Janek Rubes is here on the lookout for one thing only: scams. “Here we are in Old Town Square, the mecca of tourist traps and of bad things happening,” Rubes jokes, pointing out taxi drivers who will charge up to 15 times the legal rate and a currency exchange center that offers customers 12 Czech korunas for one dollar, instead of the roughly 24 korunas the official rate dictates. Rubes, a local videographer whose viral YouTube series “Honest Prague” exposes scams like these, is becoming something of a vigilante against Prague’s notorious tourist traps. With weekly videos that cover everything from where to safely party in Prague to how to leave the airport without getting ripped off, Rubes says he’s helping break down the “wall” between tourists and locals. The 28-year-old made his first big break last summer, when he went undercover as an American tourist and filmed his rides in Prague taxis, some charging him more than $40 for a two-mile trip. The video has since racked up more than 77,000 views on YouTube, and in November, a court trial began for six of the drivers accused of ripping off passengers. In one more recent video with more than 900,000 views, Rubes stood for hours outside the aforementioned currency exchange center, Cheque Point, warning more than 200 would-be customers of the scam and handing them flyers with alternative places to exchange. “If you think about it, this is happening for two decades, three decades, 25 years,” Rubes says, treading Old Town’s cobblestone paths in beat-up Converse. “These same guys are standing on the same corners, the same exchange place, same everything, and they’re getting away with it.” Lifting the lid off these scams is something of a thrill for Rubes, a lifelong skeptic who likes to look for cracks in the status quo—and see just how much he can get away with. Honza Mikulka, a longtime friend of Rubes’ who films the “Honest Prague” series under the internet television channel Stream International, says he admires Rubes’ thirst for truth. “Janek has been living in this city nearly 28 years, and when I say ‘living,’ I mean it,” Mikulka says. “Because he's so into this city and cares about it, he asks questions and he questions the status

quo.” But Rubes’ work as a pseudo-vigilante is only half the job. The videographer also publishes a range of videos with smart, frank advice for tourists on how to deal with phone data abroad, eating on a budget, how to park in the city, and other useful topics. He’s even got a popular video explaining which Czech sweets to avoid, and which are a must-try (hint: skip the trdelník). “We want people to come here, have a fantastic time, want to come back and talk about the city,” Mikulka adds. “The reason is simple—we just love our city and we want other people to share this feeling.” And despite the presence of scams, tourism in the Czech Republic continues to flourish. Nearly 28 million foreign tourists visited the Czech Republic in 2015, an eight percent jump from the previous year, according to CzechTourism, the country’s official travel site. The same report found that each tourist spends an average of 2,769 Kc per day, or about $115. Still, Vit Hofman, a spokesman for Prague City Hall and its tourist marketing organization, Prague City Tourism, maintains that the government’s hands are tied when it comes to regulating

scammers. “We know that some exchange offices in Prague are doing our city bad reputation abroad, but we cannot solve the situation,” he explains over email. “We are drawing attention to this unethical behavior, because the city has no legal possibility to intervene.” With tourism continuing to soar in Prague, Rubes’ role as resident watchdog is more important than ever—and it’s not going unnoticed. Rubes, who has lived in Prague his whole life, has grown used to foreigners stopping him on the road to ask, “you’re the YouTube guy, right?” Walking across the Charles Bridge on a recent October day, an Australian couple stopped to tell Janek that they spent their first few hours in Prague watching the entire “Honest Prague” series in their hotel room. “If you want to ask me, it does bring tears to my eyes,” Janek admits after snapping a photo with the couple. “But please don’t make fun of me for that.”

"I lived in Egypt for some time and even after that I used to return there often. But the Arab Spring came, there was a revolution and my travel agency told me: We don’t fly to Egypt now. We can either refund your ticket or you can choose a different destination. I don’t ski and I wanted to go somewhere hot so I chose Kenya. I flew from Germany – the plane was full of German people, there were just two Kenyans, a woman and a man. My seat was just next to his, obivously. He’s twelve years younger, he was talking to me all night long. I wanted to sleep, my head kept on falling. But I noticed his exceptional frankness and we stayed in contact even since – he lives in Berlin, we´ve been visiting each other for the past seven 34

years and cultivating the relationship. I remember how we used to send each other sms and reveal our affection. Those messages when you write ‚I like you‘ for the first time and what you really mean is 'I could like you if…‘ – because then you wait if your expectations of the other person would come true. Until the ‚if‘ dissappears and ‚I like you‘ remains. The affection arises in time. Just as the flower that needs sun, light and water – and you go to sleep one night, wake up in the morning and see that flower-bud has blossomed. This way, to my surprise, our love has came into bloom as well. Now it seems that in my age I’ll be getting married. And that we’ll move to Kenya together, to his home village.“

"Now I keep thinking: What are you getting into again?! That’s going to be a tsunami! What will people say? I am old – he is young. I am white – he is black. He’s poor – I am from a middle class. But we’ve been through many things together. And we still struggle – he’s at a psychiatry unit at the moment, he had epilepsy. And so it seems that the relationship seems to be so unlikely to paper. But, you know, when I used to ran into an obstacle before, I thought: 'Well, if it’s not possible…‘ – and my former marriage fell apart. But the obstacles I face with him don’t put me off. On the contrary, I take them as challenges. Given the circumstances, I am aware that it’s not reasonable to hope for a happy ending. But I still do anyway.“
