lthough we may dream about the perfect Christmas and another year during which we will achieve all our goals, for many of us the reality is quite different. That’s why, in this issue of The Resident Magazine we are doing all we can to ease your seasonal stress. We’ve got party ideas aplenty in our food and drink section. These include canapés that you can make at home, courtesy of an all-star Sussex chef, Ben Goldsmith, and decadent desserts from Nathan Marshall at The Spread Eagle Hotel and Spa. Plus there are a couple of cocktail ideas from a young head barman who works at none other than The Ritz. Well, you wouldn’t expect anything less from The Resident Magazine, would you? And for creating your own winter wonderland, our resident interior designer Catherine Smith has been out in search of the best decorations and lighting to brighten an otherwise dreary time of year. Speaking of January, if it’s usually a time of reflection for you, when you find yourself assessing the direction your life is going, then you’ll want to read the first in a two-part article on finding your calling. Cathryn Hindle,
a Sussex-based life coach, provides a few easy steps you can take today to reach your potential, have a great year and generally live your best life. And if you still need some motivation to get going, you will find all the inspiration you need from Damian MacDonald. After suffering life-changing injuries in a road accident at the age of 16, he has gone on to climb Mount Kilimanjaro and become an active campaigner for charity. Having spent 60 years taking pictures of the events that shaped our history, John Jochimsen has penned his own memoirs. It’s a fascinating account of some decadedefining moments, including war zones and a trip to Kenya on which Princess Elizabeth was made Queen. In a nutshell, this month’s magazine is practically the inspiration issue one that will give you the impetus you’ve been looking for to have a really fantastic 2012. he firm often deals with clients who would like to sell their property ‘quietly’ or ‘off-market’ and this is an area which has become much busier since the market changed in 2008.
‘Many clients who come to me initially want their home to be discretely marketed, for a variety of different reasons’ Peter comments. ‘We always have a healthy number of people looking for individual and unique country houses who are generally cash buyers and willing to pay a good price for the right property. What I am able to offer is the opportunity for a client to see if we have a buyer without the need to go fully on the market. We sometimes produce a floor plan, perhaps take some initial photographs and even produce a draft brochure, it depends on what route the client wants to take. We will generally only offer these ‘off market’ houses to people who are in a position to proceed straight away. Often, we are able to secure a sale which then gives the seller breathing space to find another property without the pressure of a chain pushing things forward.’ At any one time Peter Hughes has between 5 and 10 houses that are not formally on the market and therefore, as a buyer, if you are not registered with his agency then you could be missing out on this ‘secret market’!

Tom James meets Harry, head barman at one of the world’s best and most well-known hotels about how a love of the theatre, and a little bit of maths, helped him become king of cocktails
T
his time of year, most of us are already in the throes of planning or enjoying parties at work or home. Christmas and New Year’s Eve are reasons enough to go the extra mile, really throw down the gauntlet and embrace a touch of luxury. Drinks often take centre stage when planning a celebration to remember, and many of us are a little more willing (after a little Baileys) to channel the inner mixologist in us, as we delve further into the back of the drinks cabinet to wow our guests with exotic cocktails. For advice on the perfect cocktail from a more seasoned shaker, The Resident caught up with one of the leading stars of the UK bar business to give us an insight into the industry as well as some top tips on what you can make in the comfort of your own home, without breaking the bank. Harry Glockler has worked at The Rivoli Bar at The Ritz in London for nearly two years, and has most recently been promoted to Head Bartender at the iconic hotel. 24 year-old Harry was born in Blackheath, London, and his father Geoffrey was Head Barman at The Ritz Club, the world’s most exclusive privately owned casino. Following a move out of London, the family spent a few years on the Isle
of Wight, moving back to London for a short while before relocating to West Sussex, where he attended Boundstone Community College, Lancing (now Sir Robert Woodard Academy). “I’d always wanted to be an actor but I was also interested in maths, which I later studied at the University of Bristol,” Harry told The Resident. “I pursued mathematics for its own aesthetic value and was never interested in its applications (economics, engineering, physics and so on), a career path that would be a traditional route for a maths graduate”. During his final year of study, he started work at Hausbar (www.hausbar.co.uk), an exclusive cocktail bar owned by German bartender Aurelius Braunbarth, and it was there where he first got a taste for the drinks business. “I started reading books like American Bar by Charles Schumann and attended spirits tastings. At this time I was reading - and drinking - a lot. I was so impressed by Auri’s attitude to service – behind the bar he had the precision of a mathematician. He was courteous and knowledgeable on everything from sport to international politics. Hausbar was like a theatre, but (unlike many budding bartenders) Auri let his guests be the stars of the show. Without a doubt, Auri has been my biggest career influencer so far.”

creations too but I can’t divulge details just yet”. Harry’s favourite cocktail is a Negroni. “It’s bitter and dry, but so tasty”. The drink was created for Count Camillo Negroni in Florence around 1920. “It’s simply prepared over ice in an old-fashioned glass with equal parts of Campari, gin and Italian vermouth (Martini rosso for example), and garnished with a slice of orange. Sometimes though, like many of us, I just fancy a beer. I really like German pilsners like Flensburger or Jever”. For entertaining, Harry loves making a Dry Martini, because of the “sheer theatre” involved in its creation. For a great drink to make at home, he suggests an Alfonso. “Place a sugar cube with a few dashes of Angostura bitters into a Champagne flute. Add a measure of Dubonnet and top with Champagne. Garnish the drink with a twist of lemon for a refreshing aroma. For more complex drinks, a mixing glass and barspoon or cocktail shaker is required. I use a Japanese Yukiwa Baron Cobbler Shaker, available online from Cocktail Kingdom (www. cocktailkingdom.com), but you should be able to get hold of one from a good local retailer.”

Harry soon became involved with the UK Bartenders Guild, with which he visited the Champagne and Armagnac regions of France. After two and a half years at Hausbar (after finishing his studies, he took a full-time position there) and some success in local and national cocktail competitions, his big break came when he was invited to work in The Rivoli Bar at The Ritz, London. “As head bartender I have the best job in the hotel,” he gloated. “Just last night I made a Stinger (brandy and white creme de menthe) an incredibly powerful political figure (who shall remain nameless). My main roles include making and serving cocktails and Champagne, welcoming our guests to the bar and ensuring their visit is a memorable one. Our clients have high expectations from The Ritz, and my team and I always aim to exceed those.” In turn, the hotel has high hopes for Harry, who has just finished writing a new drinks list for the bar, which he says he is “exceedingly excited about. It will contain plenty of drinks from what I call the Golden Age of Cocktails, fitting for the glorious Art Deco bar that I work in. I have revived one or two of my father’s

‘Seize the day’ is the advice from Damian MacDonald, who suffered life changing injuries in an accident. He has since climbed Mount Kilimanjaro and that’s just the beginning, he tells Martin Read
O
n reaching their 40s some people might start to slow down in their sporting endeavours - but not Damian MacDonald. He is upping his game with some serious mountain climbing, and cycling from London to Paris. Proud achievements for an able bodied man, but particularly remarkable for someone with an artificial leg. At just 16 years old, while living in South Africa, Damian was involved in a motor biking accident, which left him in a coma for two weeks and resulted in 12 operations and the amputation of his leg. Missing out on activities enjoyed by his friends, and denied the chance to attend university (when a place seemed assured), made him angry and resentful. At the time nobody would have predicted that an accident would lead to such achievements. Over a long period, various people helped Damian come to terms with physical aspects of his disability. But the psychological scars took longer to heal and it was only when Damian finally accepted that he had to take personal responsibility for his rehabilitation that he really turned the corner. Eventually, he returned to England, receiving a significant boost from college courses in Durham. A year of rowing with elite amputees spurred him on, building confidence and creating the impetus to follow their lead. Back in Sussex after living in various places in the UK and on a visit to Brighton to get a new leg fitted he picked up a flyer describing the activities of LimbPower. The charity, based in Lingfield, is dedicated to helping amputees accomplish their goals and reach their potential. “I was so interested in the work that the organisation did. It sounded inspirational. The next thing I did was fly to Glasgow to attend a conference on sporting prosthetics, where I met iconic amputees who were massively motivating”, Damian told The Resident. Attendance at LimbPower’s annual Amputee Games (at the Stoke Mandeville stadium next to the spinal unit supported by the late Sir Jimmy Savile) opened up further possibilities for Damian. He drew inspiration from seeing participants go on to become paralympic athletes. LimbPower and The Douglas Bader Foundation, both committed to rehabilitation and campaigning for the rights of those who have lost limbs, became causes close to Damian’s heart and through them he made close friendships with some of their organisers. He learned about events to raise much-needed funds for LimbPower and soon found himself training for a walk up Mount Kilimanjaro. Despite subsequent reservations about his
decision, he took part in gruelling training expeditions, cycling long distances on the Isle of Wight and in the Black Mountains of Wales. To prepare, Damian joined Horsham Cycling on their Sunday morning rides. The members encouraged and motivated him, providing tips on riding techniques and he was soon clocking up 60 miles in their events. The seven-day Kilimanjaro walk was daunting, but Damian’s determination pushed him to the summit, raising thousands of pounds in the process – he was the only one of the six amputees to get to the top. Along the way he forged lasting friendships, leading to a commitment to enter a team to cycle from London to Paris. Damian had by this time abandoned his unfulfilling job and with a gentle nudge from his father, Adrian, he became a full time singer and DJ (a life-long dream). These days, discos, parties, pub evenings and working with a local choral group are all part of his busy schedule. These talents were used to raise money to support LimbPower’s work, with, for example, a gig at Faygate’s Frog and Nightgown pub. Having achieved more than many an able bodied person, Damian MacDonald could be forgiven for settling for an easier life. But, he’s now planning a fund raising cycling marathon in Ireland – from the southern tip to the northern extremity – and woe betide anyone attempting to dissuade him: “The elation I feel when completing these challenges is unbeatable and it’s raising much needed money for such a worthy cause”, he said. And only the foolhardy would bet against him. Rehabilitation has been a long and bumpy road with setbacks aplenty, both physical and psychological. “It took me over 20 years to convince myself that I was physically valid”. I don’t wish the accident never happened. I was destined to become a safe, steady accountant, but now I am a Trustee of LimbPower and a fundraiser and feel that my own experiences can help others in the same predicament. I am very lucky. My wife Karen shares my passion for music, I have a job I love and three great young children keeping me busy. I lead an active, satisfying life”. And his philosophy? “Just seize the day. Opportunities don’t usually fall into your lap. Make things happen! Life is different for an amputee, but everyone has something to offer. While many are gearing up for the party of the year, Bridget James shudders at the thought of another New Year of broken promises – and dirty dishes
T
en, nine, eight, seven…’ and what we hope is going to be an amazing year begins. I will write my best selling novel and surely become Sussex’s answer to J K Rowling. Even a fraction of her wealth would benefit me hugely, and my wardrobe. I will also learn to conjure up sumptuous meals at the drop of a hat instead of staring into other people’s baskets at the supermarket looking for inspiration. And I will adopt interminable patience with my children, able to solve any family matters with a soft, soothing terminology that has so far eluded me. We all do it, start of a new year and all that… things will be different, I will be different. In some cases they are but in most cases we trundle on the way we usually do, stalwartly facing any new challenges that come our way. New Year’s Day is the closest thing to being the world’s truly global holiday. A time to reflect, to change, to perhaps alter our perspectives for the good, and yet I still find myself emptying the dishwasher instead of picking up that pen and starting the best selling novel. Is it because I would rather stick to familiar territory than venture out into the brave new yonder? No, I think it’s because I haven’t got a literary agent and we actually
need clean plates to eat from at the next gastronomic festive feast. The Romans dedicated New Year’s Day to Janus, the god of gates, doors and beginnings. January is named after him. He had two faces, one looking ahead and one looking backwards. In fact a sculpture of him sits outside the gates to Goodwood Estate. And I think that is a fairly realistic summary of New Year. We really intend to keep looking forward, with new goals but we do still have to glance back now and again - the shopping, the bills, the school fees, they all need to be met, they don’t just melt away at the stroke of midnight. So I won’t berate myself because I am not on the last chapter yet, the fact that I am on the preface of this new novel is surely enough. After all it’s taken me years to realise that the best place to be at the stroke of midnight is with people who matter to you. Whether it’s a nip to the cinema, followed by a take away, a crisp winter’s walk and then a cosyup round a roaring fire or a sensational party with champagne on tap. As long as it means something that’s the main thing. Otherwise those chimes at midnight will sound decidedly hollow. So charge up those glasses, stick on good old Big Ben (that’s the clock not some local party entertainer) and get ready to belt out Auld Lang Syne, preferably without a mouthful of crisps... Not attractive. 64

Whether it’s a particular ambition or simply living everyday to the full, reaching your potential is your birthright. James Hood passes on advice from an expert in part one of our series on how you can live your best life
F
inding your calling’ might sound like a phrase you would hear on an American daytime talk show, but the idea of fulfilling your true purpose on this planet is no longer just for backpackers and those who leave their banking job to build a school in Borneo. Finding your calling is big business - there has been a boom in the number of corporations hiring experts to help their employees with goal mapping (the process of taking small steps to achieve a great big goal) and then there are individual life coaches, who help people on a more personal level achieve the life they long for. If you’re uncomfortable with (somewhat wishy washy) term, let’s call it something else: Reaching your full potential, achieving your goal, finding your passion, living your very best life. It’s that time when many people wonder if they are living their best life. It’s only natural to feel that a new year brings with it new opportunities to finally reach all those goals we set. In her column on page 64, Bridget James talk about the promises we make ourselves for a new year, and how they often fall by the wayside when life gets in the way. But don’t let that stop you finding your true calling. Whatever label you put on it, once you start to think about it, you will find that there are signs everywhere helping you along the way. And if that fails, and you are still stuck in a rut come June, well, there are plenty of professionals out there who can help. One of them is Cathryn Hindle, a life coach. Cathryn helps people to reach their goals and provide them with the tools and motivation they need to make a positive difference in their life. She says: “Life coaching will help you to find your way. By exploring the issues that you are facing, working with a life coach helps to bring clarity to your life, aid decision making, balance your work/life or whatever it is that you want to achieve. Life coaching gives you the opportunity to sit back, take stock of where your life is currently, what you like, what you don’t and what your aims are, so that you can move forward positively”. Finding your calling doesn’t have to align with your profession. Countless people will tell you they have fulfilled their life’s ambition with volunteering work, travelling, or being a parent. We are all different, and sometimes
it is not always obvious what our calling is. Cathryn said: “I believe there is a perfect job out there for each of us, where we can do what we most enjoy. When we do what we love, it often doesn’t feel like work at all!” The life coach added that the first step towards finding our calling is to discover what you would really love to do and that making notes is crucial. “Explore what really interests you. To do this, set some time aside and think back to things you’ve done in the past that you really enjoyed doing. Write down everything you’ve ever done where you really felt fulfilled, whether in your personal or working life. Next, think about films or television programmes you’ve watched, or books you‘ve read where you’ve thought ‘I’d love to do that’. Write those down too. Next, think back to your younger years, what did you always dream of doing? It’s important in this exploratory phase that you write down everything, without dismissing any idea, as in this first stage we’ll be looking for patterns or common themes, which will give some clues as to what you love – what really interests you.” Next up is asking yourself what you’re really good at. Cathryn added: “Ask yourself what comes naturally to you. These special talents also give us an indication of our calling. You might want to ask people who know you really well – they may be able to give you feedback on how they see you, and what they believe you are good at. And the next step involves reviewing everything you’ve written, and looking for common themes or patterns. This is where working with a trusted friend or a life coach, or perhaps using a book on ‘finding your dream’, will really help you explore your options.” Taking action to find out what your passion is in life could be the first steps to achieving your goals, living your best life, finding your calling or whatever you’d like to call it. CREATIONS Impress your party guests or hosts with some fabulous finger food you can make at home, courtesy of star chef, Ben Goldsmith
chestnut
EGGYBREAD You will need
What you need to do
Cocktail sticks, a sift and a hand blender Unsliced bread about two or three days old - you can use fresh though, cut into 2.5cm squares For the chestnut custard: 240g milk 25g double cream 2 egg yolks 20g caster sugar 50g cooked chestnut or chestnut puree A jar of Cranberry jam
To make the custard – place cream and milk in pan and bring to the boil. Meanwhile, beat the yolks and sugar together with the chestnuts. Once the milk is boiling, pour gently over yolks and mix it together. Place back in the pan and heat over a low heat until cooked. This will coat the back of your spoon and will only take a minute. Once ready, sift into a bowl and through in your diced bread to soak up the mix, this can be left for a day to really soak up. To serve, fry your soaked bread in a little butter to crisp up the edges, place a little cranberry jam on top and place on a cocktail stick.

ROULADE You will need
1 pack 350g long sliced smoked salmon (trimmed so fully rectangular and save cut-offs for your mousse) 100g salmon trim 1 pinch of cayenne 150g double cream 2 lemons 1 cucumber 1 tub of salmon caviar
What you need to do
Roll out a piece of cling film long enough to place your biggest piece of smoked salmon on. On that place the peeled cucumber, leaving a 2cm gap for moving, (do this by first removing green skin and then peeling down long strips on one side and then the other, discard the center). Then, for your smoked salmon mousse, combine salmon trimmings, cayenne, cream in food processor and buzz. Spread this onto your cucumber slices and roll, creating a salmon ‘sausage’. Refrigerate for an hour. When ready to serve cut on the angle and top with salmon caviar.
SMOKEDDUCK marmelade, crisp bread, celeriac coleslaw
You will need
What you need to do
1 smoked duck breast, sliced orange Marmalade 2 slices of bread, remove crusts celeriac coleslaw – grated celeriac (you will only need 1/6), bound with mayonnaise, lemon and a little apple
Roll out your bread until wafer thin, cut into 2cm squares and bake in a low oven 5 to 10 mins until crisp and cool. Place a small amount of coleslaw, followed by sliced smoked duck, topped off with a small amount of marmalade. 69

You will need
What you need to do
A double boiler (a pan with a small amount of water, with large metal bowl on top) 4 medium eggs 1 extra yolk 150g caster sugar 3 lemons, zest and juice 125g double cream 50g butter Sweet Tartlet cases or some pastry
In your bowl whisk together all the ingredients, (except the butter) over the double boiler, and keep whisking every minute or two until thick. Once thickened remove from the heat and whisk in your butter and pass through a sieve then allow to cool. Divide between the tartlet cases. To serve, why not be a little ‘cheffy’ and glaze the tarlet with a blowtorch and a little caster sugar, then top with a little mascarpone?

MUFFINS You will need
What you need to do
A mini muffin tray and sift 140g plain flour 1 teaspoon of baking powder 1 large egg 115g milk 80g of grated parmesan Butter for greasing
Sift together the dry items. Whisk the egg and mix together with milk and gently incorporate the milk and eggs on the flour, leaving it quite rustic. Add the parmesan and divide among the mini trays. Cook at 180c for about 12 to 15 minutes, until they have risen well. Serve with a small dollop of creme fraiche and sprinkle of chives.

A small packet of Puff pastry For the stuffing: 2 peppers to roast or buy a small jar and drain and chop 80g of black olives, pitted and chopped A small jar of Pesto
Roll out the pastry. Then scatter the stuffing evenly and roll, into a ‘sausage’ shape. Once rolled, chill in the fridge until cold (an hour should do) and then slice into discs about ¾ cm wide, place on baking tray and cook at 170 for 8 to 10 minutes. 70

Ben Goldsmith got his first job in a kitchen at the age of 15. He has since worked in some prestigious venues across the South and was awarded Young Chef of the Year by the Sussex Food and Drink Awards in 2008. He has hospitality in the blood – his grandparents owned a high-end catering business, called Goldsmith Catering, in the 80s, when he was growing up and they have since opened and run a successful hotel. He said: “I went from the first restaurant to cooking in the kitchens of a gastro pub and it went from there. Now, here I am semi-grown up as a full-time chef. Ben is one of the country’s best. Currently working at Whites in Steyning, he is also planning to open his own restaurant and recently joined
Matt Gillan and seven other chefs at an All Stars evening at South Lodge Hotel. Ben says he is mostly self-taught, and his speciality – fun food. “I think food should bring a smile to your face from the moment you read the menu to when you actually eat it.” The star chef also believes that fun is the reason he loves his choice of career. “It’s always hard work. It’s been tough to get to this point and I put in some serious hours, but I love it. I think it’s important and if you don’t enjoy your work, you shouldn’t be doing it.” Ben lives in Sussex with his wife and two children. Boil together the milk, cream and orange zest. Whisk together the eggs and sugar, then pour on the milk whisking all the time, and pass through a chinois (a fine sieve). Butter the dishes and then layer with Panettone, raisins, chocolate and custard, fill right to the top, then sprinkle with Demerara sugar. Bake in the oven in a water bath. To serve re-heat and then brush with hot apricot jam.
½ pt Milk ½ pt Double cream 4 egg yolks 4oz sugar Grated zest of 1 orange 25ml Grand Marnier
Boil together the milk cream and orange. Whisk the egg yolks and sugar until white, pour on the boiling cream whisking all the time and return to a clean pan. Then carefully cook until the custard coats the back of a spoon, pass through a chinois. Then add the Grand Marnier.

1pt milk 4 eggs 2 yolks 4 oz sugar Vanilla
Boil together the milk and vanilla, whisk together the eggs, egg yolks and sugar, pour on the boiling milk and whisk, then pass through a sieve. Make a dark caramel and pour a little into each dariole. When cool poor on the custard, place in a water bath with a lid and cook at 140c for 25 mins (approx). 3 stalks of rhubarb, trimmed of leaves and root ends 3 Victoria plums A small handful of blueberries or blackcurrants (optional) A handful each of blackberries and raspberries 50g of unsalted butter, diced 150g of caster sugar 2 cinnamon sticks 6 star anise 2 vanilla pods, split lengthways 3-4tbs dark rum (optional) Heat a heavy pan over a medium heat. Add the diced butter and heat until foaming, then add the rhubarb and plums. SautĂŠ the fruits for about five minutes until they start to soften, then add the blueberries or currants (if using), the sugar, cinnamon sticks, and star anise. Scrape the seeds out of the vanilla pods into the pan and drop in the pods too. Give the fruit a good stir and add the rum (if using), then cook for a further five to eight minutes. Take the pan off the heat, remove the whole spices and vanilla pods and fold in the blackberries and raspberries. Then cool. 74

NATHAN Nathan Marshall’s first ever job in a kitchen was washing the pots and pans at one of Historic Sussex Hotel’s venues - the Spread Eagle Hotel. He was just 16 and soon progressed to helping with food prep work before being offered a position as a commis chef. ALL I WANT FOR CHRISTMAS is sensational skin

ove it or hate it, ‘that’ time of the year is upon us once again. There is so much pressure to find the perfect outfit for the office party, the perfect gift to give on the perfect Christmas morning, while serving the perfect festive food and being the perfect host or guest. Time for a reality check... you trudge round the shops with an endless list, buying anything because you feel you have to. And you seem to join the slowest queue every time. Then, when you find the perfect outfit, you wonder how quickly you can drop 7lbs. You buy in enough food to feed the 5000, because the shops are closed for just one day and you might run out. And when you think the end is in sight, you end up wrapping, writing or stuffing until two in the morning. The season to be jolly can really take its toll on us, and especially on our skin! So, to help, here are my top tips for giving yourself an instant (non-surgical) lift, this Christmas and New Year. REFRESH To help repair any damage, drink plenty of good old fashioned plain water before you pass out into bed. REPLENISH With all of your products this season, ingredients like shea butter, vitamin A,C,E, joboba oil and panthenol will all hydrate, nourish and protect your skin whether you are skiiing, sunbathing (with your spf15 on!) or dodging the winds and rain in the UK. ANTI-PUFF For puffy eyes, put some cucumber slices in the freezer for five minutes and then place over your eyes. TIME SAVING HAND SAVER If you’re pressed for time, whether it’s washing up or doing the housework, dab cuticle cream or handcream into your nails and hands, then pop on your rubber gloves. This will nourish and condition your hands with the warmth of the water and you can still keep on top of those chores that have to get done. DARK CIRCLES BE GONE Looking like Herman Munster’s relative with
dark circles around your eyes? Apply a very thin layer of moisturiser with a light pressure, using your ring or little fingers, press along from the inner corner of each eye, to the outer corner of each eye and then down to the ears to drain any fluid away, repeat three times. You can also do the same just below the eyebrow to the ears - just like the facial massage in last month’s issue. FOR HAPPY LIPS, NOT CHAPPY LIPS For lips and skin that are wind-burnt from the cold and snow, burning sun or in-flight dryness, you can’t beat using a product in a stick form, that contains an environmental shield of Anti-Ozonate Complex, Shea Butter, Oat Extract or Vitamin E. In addition, it doesn’t hurt to have pamper night in either to help clear your energy field of negativity, run your normal temperature bath and add a handful of rock salt, and soak for 20 minutes. Light some candles, add a little chill out music and drink a couple of pints of plain water (lay off the alcohol for this night.) While you are in there, add a fab hydrating mask, the warmth of the bath, opens the pores and allows the mask to penetrate deeper. Lotion yourself all over & slip into bed for a well deserved early night. Finally, smile, remember to have fun and unleash your inner child. F
rom presidents to royalty, war torn regions to stunning scenery, John Jochimsen has taken pictures of them all. The professional photographer has seen one historical event after the other unfold in front of his very eyes, and fortunately, in front of his camera. John was born in the late 1920s and his career began after the Second World War, when his father (a journalist for The Times) inspired his decision to work in the media. Soon after joining the RAF he took a photography course, which, although he didn’t know it at the time, would provide him with the skills necessary for a career that spans more than 50 years. Since that time he has been devoted to the breaking stories of the day. Often working alone, John has risked his life to document some of the
world's conflicts and most significant decadedefining moments, enabling the public to see the world from the perspective of others. Some of his assignments have included long spells in the Sudan, Kenya, Liberia, and in Malaya, where he was caught in a firefight between British troops and terrorists. He said: “I had my camera round my neck and the gun slung over my shoulder. They had put me in the middle of the platoon for safety, but as it happened it was the worst place to be when the shooting started. The day had been going well, as I had taken quite a few pictures and had just reloaded the camera when the bullets started to fly like buzzing hornets”. He has also been on assignment with members of the royal family and accompanied the Queen (although a Princess at the time) to Kenya, where they were when the King died.

In the early days of his career, John worked on Fleet Street, doing news photography for papers such as the News of the World. He also worked for the Central Office of Intelligence and on numerous PR jobs. He has travelled much of the world on assignments, many of them long before the days of tourism. He said: “Much of my work was done in far off places you could only dream of going back then. It was wonderful. It was important work too. We were telling the story really, we would do picture stories in the days before television. Being with the Queen as a young Princess in Kenya was a real career defining moment for me. I don’t think that there are many of the press team from that assignment still around. I’m thinking of sending her a book.” 83

John’s memoirs and some of his work have been published in a new book, called 80 Years Gone in a Flash. The book follows his story, from the early days on Fleet Street to the jungles of Malaya. John added: “It has taken two years just to find and get hold of the photographs. It has been really great to go through my collection and portfolio. But it wasn’t easy to pick out which ones should be used. Each one of them has memories for me. The Royal images were obtained from an organisation that protects the rights of such images and it belongs to the Queen. They were very helpful.” The book documents some of the most prominent events of the 20th century and those that shaped global politics and our society today. Here, John shares one of the chapters from the book.

Chapter 8 Eighty Years Gone In A Flash: The Memoirs of a Photo Journalist by John Jochimsen We arrived in Khartoum in the middle of the afternoon, both noticing the distinct change from the lush trees and pasture of east Africa. Flying in to land, the desert sands took over from the green vegetation we had left behind, with sand blowing around as the aircraft came to rest. As we made our way to the arrivals building we looked around, but could see only desert in every direction, making the landscape flat and very uninteresting. Having gone through customs with all the camera equipment, Alistair and I were met by an official from the Foreign Office in the Sudan. He had a car waiting and as soon as the cameras and luggage were aboard, we were taken to the government offices in the town centre. Although this was the Anglo-Egyptian Sudan, all personnel seemed to speak English and we never saw anyone from Egypt during our whole time in the country. As in the other countries, we had a meeting about our stay and the work we had to cover. Finishing at about seven o’clock that evening, we were taken to our hotel, the Grand, overlooking the Nile. Here we were able to have a shower and bath, change our clothes and be ready for a meal with the two people overseeing our itinerary, which started the following morning. Going to my room after our guests had left, I went through the cameras again just for a final check, realising that the sand was going to play havoc with the Rollieflexes because of their winding mechanism. These two cameras would have to be kept covered and used only when the wind was not blowing the sand around. Our first assignment the following morning was further down the Nile, in an area called the Gezira, where cotton was grown due to the nearness of water from the river’s irrigation. Driving down, we were to meet with a farmer who spoke English, who would explain the intricacies of his crop. We passed caravans of groaning overloaded camels kicking up the dust from the desert as they plodded along, all strung together. Further on we came upon a small group of people with telescopes, some as long as ten to twelve feet. Stopping and talking to them, we realised that this day, 25th February 1952, was the day of the full eclipse of the sun, and that we were there at the right time, where it was all happening. Neither of us had been told of this or that most of the world’s top astronomers were there to witness it. Here was a great story neither of us had expected, so while I took the pictures Alistair interviewed some of the scientists. As the light started to fade with the moon covering the sun, the dim light that was left began to turn dark green, with the birds stopping singing as they went to sleep. The Arabs dropped to their knees praying to Allah, making the only sound, while everywhere else was silent. The
full eclipse lasted for three minutes before the light started to change back to its normal colour and the birds awoke and started to sing again. As the locals got up off their knees, excited voices were heard all around from the experts, who were ecstatic at the outcome, saying that it was one of the finest eclipses they had ever seen. I had taken some colour transparencies during the eclipse, showing the peculiar colour of the light, with the scientists glued to their telescopes and the locals all on their knees praying. After that excitement, the rest of the day was taken up with the story on cotton, so having finished late, when we returned to the hotel, I decided to go to bed early again, feeling very tired. Closing the door of my room I spotted something on my bed, looking like a ball of white fluff. It was a small white kitten that was sound asleep, and where it had come from I couldn’t think. Leaving it to sleep, I got washed, undressed and into bed. Being so tired I was immediately asleep, but woke some time in the night with something moving around on the bed. Opening my eyes, I could see in the moonlight it was the kitten, hopping around a large scorpion that was advancing towards my face. Falling out of the bed and grabbing the kitten I opened my door yelling for someone to get rid of the intruder. A servant came almost immediately, and when I showed him the scorpion got hold of it by the tail and took it away together with the cat. I had a quick look round the room and under the bed to make sure there were no more uninvited guests before examining the bedclothes and getting myself settled down again. I remember thinking to myself so much for an early night, as I fell asleep the second time, knowing if it hadn’t been for the kitten I might have had a very nasty bite. From that day to this I often wonder where that little kitten had come from or why it was on my bed, and would probably never know the answer. A few days later, having done a couple more assignments in Khartoum, Alistair and I were walking along the Nile with a man called Terence from the office. It was a sandy foreshore of about six feet wide that ended in a bank, eight to ten feet high. We had all just finished lunch at the hotel and were walking along stretching our legs, talking about the next job, when suddenly, without any warning, a crocodile launched itself off the bank, straight over the top of us, and landed with a great splash in the river. It must have been over six feet long and could have landed on top of us, but luckily it missed with its great leap from the bank. The reason, we were told afterwards, was that we had been between it and its home, the river. Our next assignment was miles away, so we were flown in a De Havilland Dove to the borders of western Sudan
and French Equatorial Africa, to witness the yearly homage paid to the British King by the nomad tribes. This was to be the last gathering ever of its type and the natives hadn’t realised that it was now the British Queen, the King having died earlier, which nobody had told them about. This was due to the difficulty of finding them, as they were always on the move. For two days we were shown horse- and camel-racing, with women dressed in beautiful coloured silks riding and sometimes even racing some of the camels. We both said afterwards that it had been something that very few white people had ever seen, or would ever see again. I got some really great colour shots, together with several black and white as well. We were supposed to pick up a truck to continue our assignments on our way back towards Khartoum, as the aircraft had left. However, I had not been too well for a few days and after managing to complete the assignment I saw the local doctor, who put me into hospital with a bad attack of sinus, together with a high temperature, needing daily injections of penicillin. I was put in a ward that was supervised by a male nurse, who was to inject me with the antibiotics twice daily. As I had experienced this trouble many times before I knew about the injections into the backside, but the nurse could not speak a word of English. He would always come with a long blunt needle, until with an aching backside I induced him to get a new smaller one, my bottom feeling full of holes from its predecessor. Any ordinary person would have realised after the first unhappy exploit that a new needle was required for each injection. But not this one! He tried every time first with the long blunt one, before using a new shorter one. After three days my backside looked and felt like a well-used dartboard, but I had to put up with it till the treatment was completed. For the last two days I gave up trying to tell the nurse and gave in gracefully. Not only did I have to contend with this, but Alistair came in to the hospital one evening to tell me he was going home to his wife, as he missed her so much and couldn’t bear to be away from her any longer. Saying he had managed to get a lift back to Khartoum, he brought in all the relevant paperwork for me to continue the trip with the cameras, while collecting the exposed film to take back with him to London. So there I was, in hospital, my partner going home, knowing I had to finish the rest of the work, including the writing, on my own. I got out of hospital two days after Alistair left. Taking the truck, which had been left for me, I asked the way to my first assignment at El Fasher. I was told that the only way to get there was to follow the countless empty beer bottles thrown down by camel riders, as there were no signposts in the desert. Starting off alone with a brand new vehicle that had sand channels provided and a motorised air pump for blowing up the tyres, I set off towards where I hoped El Fasher was, following the beer bottles, but relying on my compass as well! Arriving at the district commissioner’s house on the outskirts of the township, covered in the sweat that was seeping through my khaki clothes, and blessing the Arab who had told me to hang my water container on the truck’s radiator to keep it cool, I entered, and got the container refilled.
The bag was made from animal stomach, which allowed the water to permeate through the skin and be cooled by evaporation during the forward motion of the vehicle. Meeting the commissioner, I was told I had to dress for dinner, even with just the two of us out in the middle of nowhere. Searching through my clothes, I found my dinner suit at the bottom of the case in a very sorry state, but luckily the Arab servant managed to make it look a bit presentable. After having a bath and as I got dressed, I started to understand why the dinner suit was so important. I felt it was because the man wanted to keep up a civilised way of living and not go native during his time in this out-of-the-way place, having very few visitors to keep him sane over his two-year engagement. We sat, one either end of the table in the candlelight. Just as the main course was placed before us, a great rushing and moaning sound started, the precursor of a sandstorm. As the room filled with fine dust, which developed quickly into a fog, the commissioner opened a drawer in front of him, put his meal in it and shut it, then took the coaster from under his glass and placed it on the top of his drink. I did the same, as if the most natural thing in the world, then began to wonder how I was going to eat my meal. I saw my host quickly open the drawer, take a forkful, pop it in his mouth, and immediately close the drawer again, all without a word. I said nothing, but wondered if my thoughts had been correct regarding the wearing of the dinner suit, or was it just for the British Raj? The next day it was back to prisons again. A new one had been built in El Fasher with British money, this being one subject that I had to photograph and write about. The desert sky seemed always blue, with not a sign of a cloud in sight - in fact it always appeared like that until I was introduced to the local rainmaker. I was told that the man could create a downpour to help people irrigate their crops, but I was not ready to believe this without proof, being very sceptical about the whole thing. There was a pile of rocks that stood about fifteen feet high nearby, which was called a jebel, but nobody could tell me how or why it was there, only that it had been there for many years. The old man seemed to need to climb to the top to make it rain. Struggling to the top, he opened his arms to the sky and started chanting in a kind of singsong voice, while I took a couple of shots, waiting for the rain to appear. I had looked all around the sky before the old man had started, noting that there wasn’t a cloud in sight, but as he threw his arms up for the last time a black cloud appeared as if from nowhere, and it started raining. I was completely flabbergasted. Where had the cloud come from, and the rain that lasted for no more than a couple of minutes? As the latter disappeared, and the old man climbed down, he smiled at me, and walking away almost seemed to say ‘I told you so.’ I had seen the rain and photographed it, but I still couldn’t believe what I had seen, as the sky was now as blue as it had been before, with not a cloud anywhere in sight. The following morning I left, driving towards El Obeid, still wondering what I had or hadn’t seen happen the previous day. suit again, I had hung it in the truck so as not to get it creased. However, there was no need for the care I had taken as nothing was said about dressing. In fact this commissioner seemed to me to be an altogether different type to the last one, a man who I thought could cope with anything. After evening drinks outside as the sun set, he was perfectly normal until the crickets started their clicking. Now he got up and started yelling at them, grabbing a bullwhip and cracking it until they stopped. Then he sat down and carried on with our conversation. The insects’ silence lasted only a matter of seconds before it started again, and with that he went through the same performance, stopping only when the servant came out to tell us dinner was served - otherwise I felt this whole mad episode would have carried on much longer. We ate a really good dinner with the two of us talking about the next day’s assignments in a perfectly rational manner. Then, while finishing coffee, I saw a very large toad flop in through the open door, and as I watched it started eating all the flying insects it could reach with its long sticky tongue. Nothing was said, and when it had eaten its fill it went out. Before I could say anything another came in and did exactly the same thing. As that one disappeared, I couldn’t hold my tongue any longer and asked my host about this peculiar occurrence. ‘They are my friends,’ the man said, ‘the first was Auntie and the second Fred, they come in every night and keep me company.’ After that I thought he was not so different from the other commissioner at El Fasher, and I said no more about the toads, let alone the crickets! I slept that night on the flat roof of the house in a kind of cage that kept insects or burglars out. It had an outside staircase to it and I was told to leave my clothes and cases in the house and go up naked after my bath. This I did and was soon asleep, waking in the morning to the noise of hundreds of camels and the yelling of their masters. Propping myself up, I saw I was in the middle of a camel sale all around the house. Naked, and with nothing to cover myself, and having to negotiate the stairs down in the open, I snatched the bed sheet off and wrapped it round myself like a Roman toga and walked down, looking neither left nor right until I got into the house. My job that day was a new hospital that had only just finished its fitting out, and was controlled by a British doctor with local nurses. It was really modern, the finest I had seen on the trip so far. Photographing and asking questions as I went round with the doctor, we came across a small side ward with four healthy-looking southern Sudanese Dinkas, their skin a lot blacker than that of the Arabs I had seen since arriving in the country. I asked what was wrong with them. The doctor replied, ‘Nothing.’ I was told that the juju man had put a curse on them and the doctor said they would all die tomorrow. I was mystified when told the four perfectly normal and healthy men would die, as I still couldn’t get my head around the African dependence on witchdoctors. I couldn’t get them out of my mind. Why did they believe what they had been told, or was it just a type of hypnosis? The following morning, when I had finished all my work at El Obeid, and was about to drive back to Khartoum, I asked my host about the four men in hospital. ‘They all died this morning,’ the commissioner said. ‘I had a word with the doctor about something else and he told me you’d be interested to know.’ I
was beginning to think that these assignments had some very funny twists and turns, as I drove off once more across the desert, following the empty beer bottles. Back at the hotel in Khartoum, I emptied the truck and got the cameras and suitcase taken to my room. I had a couple of days off, which I felt I had earned, so I started by having a good meal and an early night, hopeful of not having any more problems while asleep. Two days later I was ready for another lengthy trip, a drive to Port Sudan. I started off early in the morning when it was cool, knowing I had to arrive at Ed Damer by nightfall, where I would stop in what was a basic government rest house that night, and be away early, driving to Sinkat for my next assignment. Driving around the bends in the foothills of the Red Sea hills, I was amazed to see a small detachment of British Army troops under canvas. But that wasn’t all. As I stopped I was even more surprised when I saw an officer whom I had known slightly, coming towards me. He had been at RAF Nuneham Park in tri-service photo intelligence. Although the major didn’t recognise me at first, as I had been only a corporal in those days, he soon realised, when we both started talking about aerial pictures, that we had been together back in 1949. ‘This merits a drink,’ said the officer and led me into his tent. Out came the whisky, and soon the conversation flowed as the drink disappeared. I’d had nothing to eat since breakfast, and the whisky had quite a soporific effect on me, so when I was asked if I had ever ridden a camel and would I like to, without thinking I said yes. From somewhere a camel was produced, and I, more than a little worse for wear, mounted. Getting on while the animal was lying down, it half-rose on its front legs, while I leant forward thinking this camel riding was easy. Unfortunately, I didn’t realise it would now fully rise on its hind legs, catapulting me over its head, and landing me facedown in the sand. As I turned over, the camel brought its head down to see what had fallen off its back, giving me a great belch in my face to show its displeasure, while soldiers who had now appeared from nowhere all cheered. Needless to say, I slept that night under canvas, thankful that I didn’t have to drive again that evening. In Sinkat the following morning I was met by another district commissioner, telling me the programme had changed and that now I was to cover the funeral of a very important religious woman, who had just died. Thinking that this wasn’t going to be a load of fun, and wouldn’t make good pictures, we two drove a few miles to the village of Erkowit, high up in the Red Sea Hills. Here I was introduced to the head mullah, who gave permission for the ceremony to be photographed, though a lot of the Arab tribesmen had objected. I had never seen anything like it before. There were at least a hundred women dressed in silks of every imaginable colour, who followed the body, also wrapped in coloured silks. The women who followed were throwing themselves in the sand, then getting up and throwing the sand all over their heads, and at the same time singing, yelling and screaming as the whole procession moved forward. Despite peaks and troughs in popularity, after 125 years in business this beauty brand’s story is one of triumph. Liane Oldham meets one of the company’s reps, and biggest fans
O
n the 15 September this year, Avon, the global beauty giant, celebrated its 125th Anniversary. Not only is it the world’s leading direct beauty seller, but the company has made a huge global impact with its fight against breast cancer, domestic violence and the world’s carbon footprint. Today Avon’s selling power is staggering, with four of its lipsticks and two mascaras being sold every second somewhere in the world. Ginny Ward works a little closer to home and is proud to be part of this well loved company. The Avon representative, from Horsham, first became involved with the organisation last year when she was looking for ways to bring in a little extra income. Something that would be sociable, interesting and that she could devote as much or as little time to as she wanted. “I’d seen some recent TV adverts on Avon”, said Ginny. “I’ve always been very fond of the products, especially the make-up, and have always sought them out wherever I’ve lived. I was struck by how up-to-the-minute they are now with their celebrity ties ins and I looked them up again on Google. I found a write up on my manager, who is now one of the top saleswomen in this country and I thought I’d like to give selling Avon products a go myself.” That was the first step on a very enjoyable journey that has led Ginny to not only becoming a sales representative for Avon but also a sales leader, recruiting her own team of sales reps. She is one of the 6.5 million independent Avon representatives in over 100 countries. “I realised how big a family I’d become part of when I went to the 125th birthday party for Avon over here in the UK”. Says Ginny. “It was held at the NEC in Birmingham in March and it was lovely to know that around 5,000 other people all over the UK were doing exactly the same as me. Some of them have been doing it for over
50 years.” And that is the point about Avon, it is a brand that still holds a huge amount of affection with the public. In some cases it is often handed down from generation to generation. I often come across customers who are the grandchildren of women who bought Avon products back in the 50s and 60s and are still doing it”, Ginny added. Avon has always had a strong philanthropic message attached to it ever since back in 1886, when a forward thinking David H McConnell unleashed a revolutionary idea by creating the California Perfume Company, which he soon rebranded as Avon, following a trip over here to Stratford-upon-Avon. With his flexible door-to-door sales model, he offered women the opportunity of financial independence before they even had the right to vote. A generation of women was empowered by this opportunity and a vast network of spirited, female, microentrepreneurs was born. Ginny told The Resident: “I now have around 60 customers across all ages. My oldest customer is 94 years old, and I have recruited around 40 new reps who range from between 18 to 75 years old”. The close link with ethical causes is still very much part of the Avon tradition today. Even more so, in fact. Not only has the company signed up key celebrities such as Fergie from the Black Eyed Peas who has her own signature perfume with Avon, but also A list Hollywood star, Reese Witherspoon, is their worldwide ambassador and plays a crucial role in helping to raise awareness for Avon’s philanthropic programmes. The company is the leading global corporate supporter of the breast cancer awareness cause. And with almost a billion women worldwide affected by domestic violence, Avon’s Speak Out Against Domestic Violence campaign focuses on education, prevention and victim support groups in a major effort to bring more global awareness to this problem. Similarly Avon is committed to decreasing the world’s carbon footprint in areas including water and energy consumption, waste management and greenhouse gas emissions. 95
Some of the Avon products have been firm favourites for many years, which Ginny found to her amusement when she first started out selling the products in Sussex. “I had left one of my new catalogues on the doorstep of one of my regular customers”, said Ginny. “I usually leave it a little while and then go back, pick up the book with the order form. They usually leave it out for me, my customers are well trained!” She joked. “On this particular occasion I went back to the same customer and found that my catalogue had some how got up and “walked” over to the door step of the next door neighbour. I later found out that she had noticed the new catalogue on my customer’s doorstep, gone over and pinched it temporarily and put an order in herself! Apparently she has always loved the products and really wanted to get hold of a catalogue again.” Some of the lines such as the ‘Skin So Soft’ Body Spray have fans in slightly unusual quarters. “I know that fire fighters up in Scotland, for example, use Skin So Soft.” Says Ginny. “It’s the only product that will keep the midges away, apparently”. “I can still remember the Avon lady coming to the door and my mother duly placing her
order every week but much has changed since those days, in the way that Avon products are sold. “Of course the door-to-door method of selling the products is still the tried and tested method. It is the best way to build up an excellent rapport with your customers, but technology has also had a key role to play in my job. I now have my own Avon link on my Facebook account for example. Also, many of my reps are young, so also do the Facebook thing. One of them is Maltese, so many of her customers are from Malta as well as here in Sussex. There are so many different ways of getting the orders in now. I don’t have to go out in the snow if I don’t want to. But I still love going out and seeing my customers personally. And I can walk the dog and the same time!” So with one in three women in the UK being an Avon customer and six million seeing a product brochure every three weeks, it’s no wonder the life of an Avon rep is a busy one. And also very rewarding. “I absolutely love it”, says Ginny “I have met some lovely people through doing the job and you also have the backing of a brand that has been loved by so many people for so many years.”

Candle Concoctions

andle light is a wonderfully soft, mood enhancing and magical kind of light and local candle maker Lesley Sparks’s candles certainly create the right sort of atmosphere. Lesley said: “I have always loved candlelight. My Father bought me a candle making kit when I was about ten and I can remember making a beeswax castle and on our first attempt the wax leaked out of the mould and went everywhere! Starting to sell candles came fairly recently though, when I decided to try selling a few at the local farmers market in Pulborough and I haven’t looked back since!” All the candles are made from natural waxes, mostly soy wax. But what makes these candles special is the time taken to research the fragrance, essential oils and herbs that go into the candles to give them that something different. “I spend hours researching the oils and making up the different combinations to add to the wax and I dry the herbs myself where possible – our house looks like an old apocethary at times!” laughs Lesley. “One of our best selling ranges is the candle tart melts. These go into an oil burner, so as the wax melts it releases the essential oils. As there is no wick I can add herbs too, which adds another dimension to the aromas. My favourite at the moment is the Winter Spice Melt, which has orange, cinnamon and crushed
cloves. I make bespoke candles and melts up to order too for special occasions like weddings, dried rose petals are always a favourite ingredient as they look really pretty when they melt in the pool of wax.” With the Christmas season well under way now, Lesley is busy making lots of atmospheric candles with the Yule candle and Frankincense & Myrrh candle in glass containers. “I also make a Chef’s candle in a tin which is fab at disguising unwanted kitchen smells - or wet cocker spaniel smells as it often gets used in our house! I don’t stint on how much oils go into the candles, so they really do fragrance a room.” It must be in the genes, Lesley discovered only a couple of months ago that her great-greatgreat Grandfather was a candle maker and patented the long burning stearin nightlight, which he subsequently sold to William Price of Prices Candles. “My daughter had a school project about ancestors and I knew that my Uncle had carried out a little research into the family history, so we asked him to send us some information about someone interesting – I was amazed and delighted to find another candle maker, or chandler as they used to be called, in the family!” To find Lesley’s candles you can visit Pulborough, Slindon and Wisborough Green farmers markets held every month or visit her website to see what fairs she is attending. www. thehedgewitchesgarden.co.uk 97

Moving to the central part of a room and very important in a living space, table lamps and floor lamps can add not only an extra lighting dimension in creating warmth to your interior, but again with so many amazing designs available they can offer a piece of sculpture or occasionally some humour to your interior. Katrina Smith believes there is no better time than December to rethink the heart of your home, with tips on renovations as well as table decorations. Plus she tells us about two gifts every cook will want to treat themselves to this year

his time of year, many of us are frantically running around planning everything from what to stuff the bird with, when to wrap the presents and how to get 10 chairs round a table for 6! It used to be that houses had separate dining rooms, and space was always rather limited. Nowadays many of my clients are knocking the wall down between their kitchen and dining room and making one large family area, that will double up as not only dining space, but also somewhere to “chill”, do the homework and to entertain. This room comes into its own at Christmas – no longer is the cook stuck on his or her own sorting out the turkey, whilst everyone else is in a separate room opening the presents and knocking back the sherry. Hopefully it also means that the rest of the family will notice just how much work goes into the Christmas lunch and actually offer to help! But I can’t guarantee that. If you have to bring in chairs from other parts of the house, in order to seat Aunty Maude and granny and grampa you can always bring some uniformity to the occasion by adding a piece of satin ribbon to the top of each chair, with a decoration hanging from the end to keep the ribbon in a straight line. Choose a ribbon that will complement your table decoration. I am quite traditional when it comes to Christmas, so love my reds and golds. So a table arrangement of holly, fir and red roses looks lovely. If you would prefer something more simple, opt for a large glass bowl and simply fill it with red baubles, or whatever colour you choose.
Another way to impress your guests is to use lengths of fir, pine and holly to create a runner along the centre of the table. Then just add candlesticks and baubles or ribbons among the foliage. But do be careful to keep flames away from the greenery. And to finish off, how about Christmas Crackers – it really wouldn’t be Christmas without the crackers. See if you can buy some to colour coordinate with the rest of the table. At this time of year we are probably all pondering on last minute present ideas. How about something for the kitchen? A few of my colleagues told me what they would most like in their stocking and a firm favourite was the KitchenAid Mixer – it comes in some fabulous colours – with equally fabulous names (black storm, candy apple, electric blue, raspberry ice, caffe latte and apple cider to name but a few). It has a smooth rounded design, and is silent, reliable and long lasting. My sister-in-law has one, and I am very envious. I asked her what she liked most about it and apart from the integrity of the design it is its functionality and good looks. My nephew Cameron, who is only 10 also loves it – the iconic value is important to him – all the chefs he loves have one, and on a practical basis he assures me he can whisk for long lengths of time without getting arm ache. Helen Turier described hers as “the Rolls Royce of mixers”. So perhaps it had better go on my (and your) Christmas list this year. Also, I personally, would not be without my wine cooler. Something I had wanted for quite a while. When we added a utility room to our house, and the washing machine was removed from the kitchen, it left behind the perfect space for one.

At this time of year in my line of work I am always busy, ensuring other peoples homes are looking their best ready for the big day. Last year during December I was working on a property in West Chiltington. My client had just moved into the house and sorting out the kitchen prior to Christmas was a priority. Every room needed work, but the kitchen had to come first. The clients were keen cooks, so needed space for cooking, eating, storage for all the cookery books they loved and plenty of light. We knocked down the wall between the small dining room and kitchen to give a lovely open space (see above), which would allow light from the french doors to flood through into the kitchen.

Walnut units were chosen for the kitchen to bring warmth and character to the room, and very unusual – no handles! There was plenty of storage space, which would ensure the kitchen would never appear cluttered. Sky blue glass splashbacks were added to create a breathtakingly simple yet very stylish scheme. Glass splashbacks look sleek, but don’t cost the earth and they come in every imaginable colour. It can be a very daunting task to plan a kitchen refurbishment, not only is it a big upheaval while the work is underway, it is also a huge financial investment. However it really can be worth all the time and effort.

James Hood takes a wander round Haywards Heath to find out why it’s so popular with commuters, families and the cool kids, and talks to a resident who says she may never leave

t’s a place where thousands of commuters escape the big city at the end of the day, where mums and their strollers adorn the numerous cafes on the high street by day and where young people a plenty to choose to call it home because of the excellent night life, which is largely situated along The Broadway. It’s Haywards Heath and although the phrase seems to be overused these days, this town really does have it all. Haywards Heath is first and foremost a wellconnected place. It sits at the heart of Mid Sussex, surrounded by some of the most beautiful countryside on offer in this country, let alone the South of England. With the M23 and A272 close by it offers residents and visitors easy access to Brighton, Horsham, the airport and London. And it is the capitol which is the reason why many of the 25,000 residents chose Haywards Heath as their base. There are countless trains going to and from London every day, which has meant it has gained a reputation for a commuter town. It’s the reason Lucy Chapman moved there initially. She said: “I wanted to be a bit closer to work and the train service was great. For someone who needs to get the train everyday to work it’s the bee’s knees. You can be in London in about 50 minutes!” But, as Lucy agrees, there is more to this town than just a good train service. “When I was looking for somewhere to buy a home, nowhere felt like Haywards Heath. It had a warmth to it, and it was smaller than Hove where I was living at the time and it felt friendlier. So I decided to move here and I’m so pleased I did. I was a bit younger back then and the town has terrific nightlife. The Broadway, where many of the bars are, is really busy at night.” Lucy has lived in Haywards Heath for seven years and now with a young daughter, Thea, she says that she has no need to move anywhere else. “Haywards Heath is really child-friendly. You can walk to most places, the countryside is close by, there are plenty of cafes and shops that are easily accessible. Plus, crime is relatively low.” Those easily accessible amenities include a wide range of both independent and chain shops and restaurants. Café Rouge sits in the centre of the town as well as The Orange Square Bar, Idle Wild, and numerous boutique-style shops. The Dolphin Leisure Centre provides all the sporting facilities you could want for a town this size, and The Orchards is the town’s principal shopping centre. Victoria Park provides plenty of green open space for anyone who wants to escape the bustle of The Broadway. And, for those interested in a bit of history, the parkland is formed from a plot of land originally on Mr Paret’s Meadow and was bought in 1897 by the district council and renamed Victoria Park to mark the Queen’s diamond jubilee.

The train line from Haywards Heath to London was opened as far back as 1841, and just four months later the Brighton line followed.
