The fences there on the top are broken. Last month when I had gone to Jebel Hafeet, a lot of people managed to get out and were standing on the edge, clicking photos holding kids in one hand, the camera in the other. I was petrified. We all know that artists are passionate about their work and will sometimes go over the top to stand out in the crowd. 32-year-old Luo Dan, painter and designer from Chonqing, China has gone to an extraordinary height to get noticed. Luo has been wearing a deer mask for the past four years and attributes therapeutic powers to the mask. He claims that the bizarre accessory has helped him find inner peace and release the deer within. The fake animal head has also influenced his art, taking a center role in most of his work.

Soon to open hunting lodge in Al Ain receives global interest Mourouj Hotels and Resorts, the developers behind the Middle East’s first hunting lodge Telal Hunting Resort, which is set to open near Al Ain in September, are overwhelmed by global interest in the project and are considering an expansion of similar projects across the Gulf region.

At a cost of AED10, 000 per day, the resorts 15 villas each have a private swimming pool, jacuzzi and sauna. Guests will be able to hunt, cook and eat a variety of UAE wildlife.

Mystery Solved The murder mystery surrounding the death of 23 year old Emirati, Nasser Al Baloushi, who was found dead in his car which plummeted from a rest area on Jabel Hafeet earlier this month, has been solved by Abu Dhabi Police. The police have arrested the two suspects, a 27 year old Emirati and his 26 year old African accomplice, who police believe are behind the incident.

“The feedback has been very encouraging... We got feedback from Australia, from South Africa, feedback from the States. Some have even asked when we are opening and if they can make bookings”, stated Tarek Elsherif, Managing Director of Mourouj Hotels and Resorts. “We are waiting for this hunting resort to take off and then we can talk about other ideas. We are hoping that this will attract some other developers and owners who might think of developing something similar in other destinations like Saudi Arabia, Bahrain or Qatar or wherever and we are happy to offer our services”, he further added.

MURDER

Investigations carried out by the Abu Dhabi Police revealed that the second suspect gave his friend an injection of drugs. When the vehicle that they were driving reached a traffic light in Al Ain city, the head of their friend suddenly fell between the two front seats. The first suspect then made scratches in the fingers of the victim with a razor in his possession to make him bleed in an effort to reduce the level of drugs in his body; however, the attempt failed to resuscitate him. The Al Ain property will be open on a seasonal basis, from September to around April and will not import animals but rather use the animals from the Barari Forest Management, Mourouj’s sister company, which has vast experience in animal breeding programs. “We are not causing any damage to the wildlife and it will be within the guidelines and rules and regulations,” Elsherif concluded.

The two suspects then carried their unconscious friend to a resort villa on their shoulders and spent the night. The next morning they found their friend dead. The first suspect left his own car for his accomplice and told him to take the body and leave it in front of the deceased’s family home. However, the second suspect disposed of the car with the dead body inside by dumping it from Jebel Hafeet, with hopes of hiding the crime and making it look like an accident.

SEHA celebrates International Nursing Day Abu Dhabi Health Services Company (SEHA), celebrated International Nursing Day on May 12, across its entire health system, honoring nursing staff for their invaluable role in healthcare delivery in the Emirate of Abu Dhabi All SEHA hospitals and clinics in Abu Dhabi and Al Ain including Tawam Hospital, Al Ain Hospital, Ambulatory Healthcare Services and its 60 clinics participated in the celebration, honoring over 6000 SEHA nurses for their continued efforts of serving patients and their communities. Expansion of bus routes in Al Ain In response to the growing needs of bus services amongst commuters, The Department of Transport (DoT) has announced that ten Abu Dhabi and five Al Ain operating buses will have their service expanded and altered to meet the increased demand in ridership. “These route modifications are implemented following a comprehensive study conducted on all existing route services with an aim to address commuters’ needs of world-class, convenient and almost around-the-clock bus transportation options to provide a wider geographic coverage through bus services”, concluded Saeed Mohammed Fadel Al Hameli, General Manager of the Bus office, DoT.

Al Ain’s Al Shehi invents Al-Ma Al Ain based 31 year old Emirati entrepreneur, Abdullah Al Shehi has received a patent by the International Patent Consult in the UK for his unique invention, a sea-borne water collector that helps in providing clean water to arid regions like the UAE without having to resort to desalination.

“The cost involved with desalination is huge as it requires energy. This invention can help reduce the cost drastically. An Al Ma would take up to 20 square miles and it can collect up to 253.6 million liters a month, serving many households in the UAE,” stated Abdullah Al Shehi.

The invention named Al Ma (meaning water in Arabic), is an apparatus that can be used to collect airborne moisture such as rain water, dew or mist over water bodies such as seas or lakes. The water, once collected, is pure and does not require desalination for commercial usage.

“This is a unique invention with great potential for countries with poor water resources like the UAE or other regional countries. I am planning to seek investors to commercialize this invention and market it to countries that can benefit from it. As an initial step, we will seek to present it soon to environmental bodies,” Al Shehi explained.

Al Shehi first filed the application in August 2011 and in February 2013 it was approved.

The unique invention is not mass produced yet and Al Shehi is approaching government authorities to help fund his endeavor.

First festival of food at Galeries Lafayette Lafayette Gourmet, the renowned international food hall at Parisian department store Galeries Lafayette, last week hosted its first ever innovative food festival in Dubai. A 33 year old Asian man, MZ, assistant electrical technician for a general maintenance company was allegedly stabbed to death by his compatriot SSR in Hili Industrial Zone, last week. Al Ain Police arrested the suspect less than four hours after the crime was reported by a man who found the victim's body in a pool of blood in a remote location in Hili Industrial Area. Brigadier Hamad Ajlan Al Amimi, Director of Al Ain Police Directorate revealed that the murder took place over a dispute of personal differences following an argument that motivated the suspect to plan the crime. The accused tempted the victim to the remote area where he drew a knife and fatally stabbed him several times in his abdomen. “The alleged killer, also the colleague of the victim had pre-planned the murder”, said Al Amimi, noting that the suspect had planned to flee the country after committing the murder. Investigations showed that the suspect had collected all his wages and end of service benefits from his company, and had also relocated to Al Niyadat neighborhood, where he was arrested by the Crime Investigation officers before he was scheduled to leave the country.

UAEU honors first pharmacy graduates Last week marked the graduation of the first batch of students from the Doctor of Pharmacy (PharmD) program at the College of Medicine and Health Science (CMHS) at UAEU. A total of 12 students from across the country took part in a one of a kind program in the UAE, which is geared towards producing licensed pharmacists and new pharmacy graduates who in the future will develop into medical experts and integral members of hospital healthcare teams. The UAEU Provost & Chief Academic Officer, Professor Mohamed Yousef Baniyas stated that, “UAEU is committed to the for-

Tawam Hospital enhances its Customer Service A state-of-the-art Interactive Voice Response System that integrates voice, text, and e-mail communications in a bilingual (Arabic and English) platform has been implemented at Tawam Hospital, last week. Patients and visitors calling the hospital will now experience increased customer service efficiency that the new system provides in terms of reduced 'on hold' waiting times, faster processing and scheduling of appointments, medical tests and other hospital services. "We became aware of patient and visitor requests to increase the efficiency of our telephone services through our customer satisfaction and Mas'ool initiatives”, explained Maisaloon Al-Tammam, Senior Call Centre Officer at Tawam Hospital.

Monster Jam Abu Dhabi: a roaring success

It was an evening of high octane Monster Jam excitement at Zayed Sports City Stadium last week, hosted by Flash Entertainment. A thrilling mix of monster truck racing and freestyle stunts, quad bike racing and FMX motocross. Thousands of fans young and old, packed into the stadium to see ten trucks - including 11-time World Finals Champion legend, Max D with driver Tom Meents and arch-rival Grave Digger, driven by Carl Van Horn - go pedal to the metal in the first ever Monster Jam World Tour event to be held in the GCC. Carl Van Horn left the crowd speechless with a perfect display of freestyle stunts that made the 4.5 tonne Grave Digger look positively graceful, while also destroying all competition in the knockout racing tournament.

The stadium was transformed into a playground for the Monster Jam trucks which were shipped half way across the world, to put on a one of a kind event. Earlier in the afternoon, fans walked the course, met the stars of the show, and took a close look at the 4 meter tall trucks during the Pit Party, a Monster Jam tradition that

New Al Ain stadium to be named Hazza Bin Zayed Stadium His Highness General Sheikh Mohamed bin Zayed Al Nahyan, Crown Prince of Abu Dhabi and Deputy Supreme Commander of the UAE Armed Forces, today visited the site of the new stadium in Al Ain Sports Club which is currently under construction. Sheikh Mohamed reviewed the construction progress of the project which began in June 2012. The 25,000 seat stadium will be the new home grounds for Al Ain Football Club's first team. His Highness toured the new stadium, and viewed the facilities under construction, including the latest and most modern football stadium in the UAE, which will be delivered in October and officially opened in December 2013. Sheikh Mohamed named the stadium 'Hazza Bin Zayed Stadium' during his visit, in appreciation of the efforts made by His Highness Sheikh Hazza Bin Zayed Al Nayhan, National Security Advisor, and Deputy Chairman of Abu Dhabi Executive Council, in supporting sports, streamlining efforts, launching programmes, projects and initiatives that serve the sports industry. The initiatives have had a positive effect on the results and achievements of Al Ain Club's sporting journey. The Hazza Bin Zayed Stadium has been designed to reflect cultural Emirati elements, such as the date palm - shaped facade of the stadium, whilst embracing elements of modernity with LED panels. The purple-themed stadium is the perfect balance of innovation and tradition, ensuring it offers the highest level of hospitality to its visitors. The design of the stadium also includes modern features and capabilities, aligned with FIFA requirements, which will help to attract regional and international sports and entertainment events.

It embarrasses me to admit to the amount of time and energy I have exhausted in the past worrying and complaining about the things in life that couldn’t be changed, when I could have been busy focusing on the many things in life that can be changed and improved. Christina has clearly focused her time and energy in miraculous ways and meeting her and ProVita’s team of remarkable men and women, has reassured me that there are real life angels on earth and the biggest comfort of all, is knowing that they live right here among us. eing a mother of three young children is more than a full-time job. I have little to no spare time to myself, so when I do get a couple of hours of freedom; I am very particular about what I do with it. he next big thing to hit the world of mobile tech is Google Glass.

Glass is a bit different than your typical smartphone, it is worn like a pair of eyeglasses. It is capable of recording video and projects information visible only to the wearer. It debuted last year when the development team at Google unveiled Project Glass on their Google+ site. Fast forward to this month and Google has just shipped hardware to the lucky few developers who were chosen via a lottery and paid the $1500 price tag. Google Glass specs read like a typical smartphone. It has a camera mounted to it, which is capable of capturing photos up to 5 MP and video at 720p. It has Wi-Fi and Bluetooth capability, and 16 GB of built-in flash storage. It utilizes a curious method of producing sound, Bone Conduction Transducer, which transmits sound to the inner ear through the bones of the skull. It's not as creepy as it sounds. It is similar to the technology used in some hearing aids. Giving it the advantage of maintaining sound clarity while not blocking outside noises. The wearer controls the device by speaking commands to it. For example to start recording video, one simply says, "ok, glass, record a video." It can translate for you as well, so if you want to say 'where is the nearest mall' in Arabic, just say, "ok, glass, say where is the nearest mall in Arabic." In fact it has quite a few commands it can recognize. Aside from video and translations, it can display the weather forecast, get flight information, send messages and find and display directions. It can display information to you via a prism screen that is located on the upper right of the glasses. It projects the equivalent of a 25 inch high definition display from 8 feet. This has the advantage of overlaying data on top of your vision. When paired with your smartphone using the MyGlass app, you can have directions

displayed for you without taking your eyes off of where you are going. You have the ability to read and reply to messages and with real-time translation and transcription, communication can be greatly simplified. With it currently in the hands of developers, a whole bevy of new and innovative apps are sure to start popping up. Some examples of apps were demonstrated by Google, such as one that pulls in headlines and pictures from the New York Times. Google has stressed that apps should not overwhelm users with excessive information and that apps were to be free of ads and for the time being are to be released free of charge. Google Glass is expected to be available for consumer purchase at the end of 2013. However, recent comments from Google's Eric Schmidt during a BBC radio interview, stated that it may not be available for another year. Of course with any new technology comes the discussion of privacy. The ability to wear a device that can constantly record video and snap photos has some worried that it can be misused. Google claims that everything that Glass can do already exists in current smartphone devices. Whatever your personal views on the matter, it's clear the technology of science fiction is now becoming a science reality. The way in which we consume and interact with our world is rapidly evolving.

espite comprising over half of the world’s population today, women for the most part, take a back seat to men on a global scale.

However, not all women are satisfied with the status quo, some prefer to lead the pack and carve out a new path for themselves. One such woman is 30 year old Hanan Al Mahmoud, Director of Al Jawaher Reception and Convention Centre (JRCC). Born in North Carolina to highly educated intellectuals; her father an architectural engineer with the Sheikh Zayed Housing Programme and her mother a writer; Hanan has always been encouraged to make a name for herself. “I am not from a family that believes that daughters are married off after they finish school or college. My parents were always busy building our educational and intellectual skills.” This helped Hanan land her first job at the Sharjah HR Directorate, shortly after graduating from the University of Sharjah in 2005 with a Bachelors degree in Management Information Systems. Five months later, she joined the Sharjah Ladies Club. “These seven years with the club has given me professional growth and experience. The clubs trust in the younger generation allowed us to learn through trial and error which has made me a better person”, she acknowledged. Endowed with brilliance and a radiant personality, Hanan has quickly rose up the ranks within the club, impressing her senior managers along the way, and proving herself in every role she took on. “I started with

the marketing department and later moved to be the operations manager for the club. Then I went on to work with the business development department which oversaw 40 different facilities of the club. During this time, I learned strategy planning, budget and setting targets, customer service evaluations and more. This has exposed me to the kinds of projects which I now look after at JRCC”, she explained. During her last two years with the club, Hanan took on the role of project manager with the JRCC. She was eventually selected to be the Director of the centre by HH Sheikha Jawaher bint Mohammed Al Qassimi and HE Sheikha Bodour bint Sultan Al Qassimi, Chairperson and Vice Chairperson of the Sharjah Ladies Club, respectively. Hanan is busy climbing the corporate ladder but classifies her current position as a major responsibility. In addition to handling her daily tasks of supervising the clubs services and managing the staff, she is also working to gain brand recognition for the JRCC.

I would like the woman of today to get out of that bubble and do something for herself and society", said Hanan, who while being a successful professional, also takes time out for her family especially for her 2 year old son. “I value my family a lot," she concluded.

“My family supported me in developing my skills and in understanding the significance of family values. They helped me in overcoming the conservativeness attached to females in our society”, said Hanan who is also blessed with a supportive husband.

The Dance

have always loved to dance. It’s one of those activities that has always given me an outlet for creating something new. The first place I met my husband was on the dance floor. I find the possibilities are never-ending when you have your dancing shoes on, and a partner to share the rhythms of the music you love.

In the bi-literate classroom there’s also a dance of sorts going on between myself and my Arabic coteacher. Two different cultures and languages meet in a common place to create something new. What are the steps we are taking? How can two different rhythms create movement in synch? The first is both of us bringing to the classroom our respective educational backgrounds, experiences and personalities. The second is both of us doing our jobs; planning lessons, coming up with resources, working to create an attractive classroom environment, being open to suggestions and new ideas. The third is trusting each other enough to make co-teaching work, coming up with a plan and then setting it in motion. This is the testing ground for the dance. There are going to be times in the classroom when my co-teacher is the lead, she steers the lesson and I follow her lead. Then, there are times, when she turns to me and I take the lead. The fourth part of the dance is closely related to the third, team work. I remember one time some children got into some paint that was within reach of them. I was out of the classroom with some other children and came in to find paint everywhere – it was on the floor, in a trail leading to the bathroom, in a puddle on the bathroom floor and 20

smeared all over the walls. The principal came in and questioned, “What is going on in your classroom?” I initially felt inside that the blame should lay at the feet of my co-teacher, but then I realized I share the responsibility. Even though I was not in the classroom, I should have periodically checked in to scan the room. We informed the principal that it would not happen again, and it didn’t. For us, it was the beginning of a new dance. We were both moving to the same rhythm. My co-teacher saw that I was on her side. We were on each other’s side. We were both mutually responsible for everything that went on in our classroom. That day we truly became a team. The beauty of the dance is that the possibilities are endless. There’s no limit to what can be done if we work together. The level of mutuality that develops when we are working things out in our classroom leads to a level of cooperation not common in most education systems. My co-teacher and I have had open conversations about the challenges of having another teacher in the room. We've discussed about the need to always be prepared, how no matter who creates a lesson plan, each of us has to be ready for shared learning. I’ve learned to simplify things when I get too “bogged down” by details. Most importantly, we learned that both of us have so much to offer towards the education of the children, if we work together as a team. The dance brings together two entities of knowledge and creates something unique. Bi-literacy as an education form is new, but even in its infancy, as we develop a common rhythm and stay in tune, there is such potential for artful, meaningful education. The dance becomes the vehicle by which education is delivered.

The Boss is always

y business professor imparted some words of wisdom upon us that she said were the "two golden rules of the workplace". Time and again she would remind us of these rules. To me they depicted the professional world as a place where the employee was beholden to their employer. I believed at the time that my professor was grooming us to be mindless robots whose sole duty was to serve our master. The two "golden rules" as she saw them, that would make our lives as employees easy were: 1. The boss is always right. 2. If you know for a fact that the boss is wrong, refer to rule number one. At the time I failed to grasp just what she was really saying. I never bothered to examine these profound words that would later help me as I entered the working world. As we all know, aside from those we hold dear to us - our family and friends - our boss is someone who is capable of both positively and negatively impacting our world. Get on their good side and you will feel as though you are on cloud nine, get on their bad side and your life will be more like that of Sisyphus. A healthy relationship with your superior is equally as important as the one you have with a loved one. Your promotions, increments, and professional growth revolve around one murky question, “What does your boss think of you?� Newly employed at my first job, and yet to grasp the point of the two rules, I was always in a dilemma when it came to dealing with my boss. Should I go out of my way to impress him? Should I agree to whatever he says? Should I speak my mind, do what I felt was right for the organization, and risk differentiating myself from my co-workers? Will my job then be in trouble? Could I potentially be terminated? I had so many doubts that it left me lost with no sense of direction. I eventually elected to take the path of least resistance, and never voice my opinions. I always agreed with whatever he agreed with and vice versa. I essentially became a "yes-man" All because I failed to comprehend what my professor had taught me. I took her words at face-value.

Thankfully, one of the seasoned veterans within the company came to my rescue. He saw what I had turned into and set out to save me from myself. He helped me realize that I was crippling my chances at a successful and fulfilling career out of fear of losing my job. Most of all, he helped me rid myself of this false impression of "The Boss" that I had come to believe was true. We all walk into the office with a belief that our bosses are our biggest enemies, when the reality is just the opposite. Yes, some may be strict and rigid, and others may carry themselves with an air of superiority. However, why do we tend to forget that our bosses were hired to be leaders, their role is to manage people. They are tasked with getting the job done utilizing a team of people equipped with both knowledge and skill. They are duty bound with ensuring that the organization receives the maximum benefit from every member of the team. A successful manager/employee relationship is one in which both work hand in hand for mutual benefit and for the benefit of the company as a whole. When disagreeing with your managers decisions, ensure that you are professional in your approach. Present them with evidence and alternatives, and show them that you have put forth an effort when evaluating their position. Researching, being prepared, and choosing the right time and manner to differ from their opinion, are skills which play a vital role in how your boss will evaluate you and, if executed correctly, will confirm to them that they were right when they hired you. In the times when your boss’s ideas and direction fails badly and their stress level is on the rise, come to their aid and help put out the fires. Evaluate what went wrong and brainstorm to come up with solutions. Don't use this as an opportunity to take them down a peg, campaigning against them thinking it will further your career. This situation is actually an opportunity for you to become someone your boss would look to as a trusted advisor. Proving that even when they were wrong, by hiring you, once again they were in fact right. When it finally hit me what my professor was really talking about, I was amazed at how shortsighted I was in my understanding of her golden rules. This simple, yet powerful, concept is something we all should strive to understand. Of course your boss will not always make the correct call when needed, however, if you are there to support them and help them make informed decisions then they may just be always right. The Source

ooking out upon the landscape of our society we can plainly see that the seeds of knowledge that once grew into strong educated people, are today stunted individuals who no longer posses the eloquence of the written word, and the liberating power that comes with it. It is a damning indictment on us as a whole when we do not sow the desire within our children to thirst for the knowledge that comes from reading. It is further disheartening to see their abandonment of Arabic as a literary form, unaware of its expressional beauty, and of its literal and practical function. Their inability to truly verbalize in the language of their forefathers, is a topic of importance that cannot and should not be swept under the rug. One of the contributing factors, is a dearth of qualified language arts teachers spanning all grade levels. While there are teachers who have the best interests of the children at heart, many more choose this profession with an eye to an effortless career. They believe that because they can speak the language, they can teach the language, and that their lack of qualification will go unnoticed, and unhindered. The second factor is the parents. Nowadays, in order to maintain and even better our lifestyle, both parents are occupied with the rat race that is life. Both, mother and father, often work, long hours into the evening and lack the time or energy to ensure their children realize their full potential. A third factor which, while it does fall under the purview of the parents, is so substantial that it truly warrants its own book. Visual stimulation through television programming, only seeks to keep our offspring spellbound, spiriting them away to far off lands all the while deadening their desires to pursue knowledge in its truest form. A world awaits them in books, both old and new, that will educate and entertain them but it stands no chance against the juggernaut that is T.V. if not given its proper due. 26

As if that was not enough, we now face a new challenge in the battle for their attention, mobile gadgetry. With access to all the knowledge of world literally at their fingertips, our children are, increasingly spending their time hunched over glowing screens, "chatting" with the far reaches of the earth. They spend most of their time using a strange new form of language that those of another generation, who prided themselves on the eloquence of the written word, fail to comprehend, much less use. We need to take on the current curriculum, mold it into something which captures the imagination and attention of our young leaders of tomorrow. They need to be inspired to achieve greatness. At present students sit in class, daily, counting down the minutes until they can escape their "prisons." Schools that are a facade, shiny new buildings with no substance at their core. They offer nothing that leads to passion for learning. The children are the ones caught in the middle of our desire to seem state of the art, while not truly giving them anything that will prepare them for the future. The curriculum needs to be updated for a new generation rather than discarded and replaced in the name of modernization. A renovation that will not pay off, if its purpose is not fully comprehended. The west has surpassed us, not because they are more intelligent than us, nor is it because they are more attuned to the needs of a new generation. It is because they did not neglect those needs to suit their cultures and values, nor did they allow social requirements to be a barrier to advance as a society. They, extolled the virtues of reading and encouraged their children to read through various creative methods. Fostering generation after generation of children who saw books as a means to explore new worlds and ideas all while learning along the way. What have we done as a people to solve this dilemma, that has spread widely and deeply within our society, to a point that it has become near impossible to heal from? We need to self-reflect. Shine a spotlight on our roles as educators, as fathers and as mothers. We need to take stock of our children. Have we given them all the tools to truly succeed in this world? Do we simply give in to their every whim, or will we encourage what benefits them and protect them from what will harm them? While our children are still young we need to capture their attention and guide them to the written word. We live in a era that is radically different than any other time. Advancements in every field of technology are growing by leaps and bounds, year after year. If every member of our society does not seek out knowledge, we risk being left behind while the world races towards success. Our success will not be achieved without that knowledge, and knowledge will not be gained without reading. Let us actively make reading a noble aim. One where we honor those among the new generations who seek it out. To get there, however, we as parents and educators must lead by example.

to boost your energy

o you wake up exhausted in the morning? Do you feel tired throughout the day, wishing you were at home in bed? There are many factors that can lead to this such as, poor sleep, stress and an imbalanced diet.

What you eat, when you eat and how much you eat determines how much energy is available to you. We all lead busy lives, trying to pack in as much as we can in each 24 hour day. Between work, household chores and raising a family we find ourselves drained and exhausted. This need not be the case. There are some ways to make your diet work for you to increase your energy levels. Timing is everything Eating gradually throughout the day ensures that you will always have enough energy to get you through it. Just like a car needs a tank with fuel to keep it moving, the body needs its own fuel, food and water, as well. Unlike a car, when you run out of fuel, the body uses its reserves to keep you going. Unfortunately, to accomplish this, the body generally gets it from a source that rapidly releases its stored energy, muscles. Building and maintaining lean body muscle is essential for fitness and it aids in weight loss, so it is vital to ensure that we do not lose it. Maintaining your blood sugar at a steady level by eating small but frequent meals is the ideal way to keep your energy levels up. Avoid overeating as this will actually cause you to feel lethargic. Successfully accomplishing this can be easy, with a little advanced planning by keeping healthy snacks within reach. Building Blocks of Food The calories we get from food come from three primary macronutrients; carbohydrates, proteins, and fats. Carbohydrates, such as starches and sugars, are quickly converted to glucose for energy. By eating a light snack of carbohydrates before exercising, you give your body quick access to energy. However, for longer lasting results, combining proteins (meat, eggs and fish) with your carbohydrates will slow down digestion and give you constant energy over a longer period of time. 28

Adding too much fat in your diet releases chemicals in your brain that cause you to feel sluggish and exhausted. Ideally, you should reduce the amount of fat consumed, however, including a small amount of healthy fats, such as olive oil, is actually good for you. Balancing Act A balanced meal will contain moderate levels of complex carbohydrates, proteins, antioxidants, fiber, vitamins, minerals, and other health-promoting substances all within moderation. Combining these foods, along with small amounts of healthy fats is sure to provide you with energy all day long. There are many foods that, unless eaten to excess, are nutrient dense and contribute to increased energy levels. These include fruits such as berries and mangos; vegetables such as spinach; and legumes such as beans and soy. Eating whole grain foods also ensure your blood sugar levels remain steady, helping you avoid experiencing the lows that come with eating sweets or processed foods. Paying close attention to your diet will reward you each day with an increased feeling of energy, allowing you to work hard, play hard and still have enough left over at the end of the day.

H

ong Kong bristles with such vibrant, non-stop energy that you can fit more into a 48-hour whirlwind tour of ‘Asia’s World City’ than you ever thought possible.

Transformed from a colonial outpost into a thriving, international business centre, Hong Kong is a city of contrasts. A Chinese metropolis with a 156-year history of British rule; a densely packed home to seven million people with islands, jungly undergrowth and creepers; and famous for bright, neon lights, tucked-away temples, high teas and dim sums. Its name means "fragrant harbor", and while Hong Kong’s sensory overload may overwhelm at first, once you get your bearings you’ll find yourself drawn to this teeming hub like moths to a light. Here’s what you can do in 48 hours. DAY ONE A friend who lived in Hong Kong for several years told me, “If you only have time to do one thing, go up The Peak.” Provided it’s not too cloudy or polluted, the views of Victoria Harbour, central Hong Kong and the city’s 260-plus islands are exhilarating. The highest point on Hong Kong Island - its official name is Victoria Peak - was home to many of the city’s early colonial administrators, who wanted to escape the heat and humidity of urban life below. Today, the exclusive neighborhood still attracts the rich and famous, with some of the most expensive real estate in the world. You can ascend Victoria Peak on foot via walking trails or take a bus to the top, but we opted to ride the historic Peak Tram, which climbs the mountain at an astoundingly steep angle. Dating back to 1888, the tram was the first cable funicular in Asia. Don’t be put off by the crowds at the terminus – the journey is a jaunty, visual experience in its own right.

Tourist tram at the Peak At the summit by day, your eyes scan the gleaming skyscrapers, the traditional ferries that dot the waters of Victoria Harbour and an abundance of green landscape stretching all the way to the hills of the New Territories. As the sun sets, the hues change to pink and orange, before melting away to reveal a glittering nightscape that twinkles beneath you. After feasting our eyes, it was time to exercise our wallets at the Temple Street Night Market, which starts around 4pm but really gets going after dark. The emphasis is on fashion, but you can find just about anything, from chessboards to chopsticks. There are quite literally hundreds of stalls stacked high (expect to haggle), and even if you’re not looking for a good deal, it’s worth visiting just for the atmosphere. The night market is also known for its dai pai dongs (open-air food stalls), fortune tellers and deafening Cantonese karaoke.

If you’re really determined to shop until you drop, you could always move on to Mong Kok’s Ladies Market, a one-kilometer stretch of market stalls selling piles of clothing and accessories, as well as home furnishings, CDs and trinkets.

As a grand finale that evening, we couldn’t resist one last look at the city’s glorious skyline, viewed from the waterfront Avenue of Stars. Modeled on Hollywood’s Walk of Fame, we saw the big names from Hong Kong’s entertainment industry immortalized in stone and took a photo with a bronze statue of Bruce Lee.

Rounding the day off with a trip to Lan Kwai Fong, a small square of streets in Hong Kong’s Central District, will give you a taste of the nightlife enjoyed by the city’s expats. DAY TWO The next day we opted not to visit the busy, bronze Tian Tan Buddha statue, known as the Big Buddha due to its size, and instead took a local ferry from Central Pier to the little island of Cheung Chau for a slice of local life. A world away from the suits and skyscrapers of Central District, Cheung Chau is a warren of little roads with few vehicles. It’s all too easy to while away the afternoon strolling around and sipping cold drinks at a seaside café, before heading back.

But, for me, it was watching the city’s lights come on – bringing the iconic skyline into even sharper focus – that was the most memorable. Then, at 8pm, as if we hadn’t been dazzled enough already, the Symphony of Lights set the sky ablaze with lasers.

Berry Tasty Muffins Ingredients 1 cup flour | 1 cup oatmeal | 3 tbsp. sugar | 1 tsp. salt 4 tsp. baking powder | 1 cup blueberries, washed | 1 medium egg | 1 cup low-fat milk | ¼ cup vegetable oil | Non-stick cooking spray Method: • In a large bowl mix the flour, oatmeal, sugar, salt and baking powder. Gently mix in the blueberries and set mixture aside. • Beat the egg, milk and vegetable oil in a small bowl. • Add the wet ingredients to the dry ingredients. Stir with a spatula until just moistened. • Line a muffin tray with paper-liners and grease it with nonstick spray. Fill each muffin cup about 2/3 way to the top and bake for 20 minutes at 200°C. • When baking is completed, take out muffins and let them cool. • Serve and enjoy! (12 muffins) Nutrition per serving: Calories: 136 Kcal, Carbohydrates: 19g, Protein: 3g, Fat:6g

Italian Tomato Soup

Chicken Salad with Greens and Pears Ingredients 120g raw, boneless, skinless chicken breast, cut into strips | 4 cups water | 1 large stalk of finely chopped celery | 2 medium pears, cut into linear | ½ cup low-fat yogurt | 1 tbsp. low-fat mayonnaise | ½ tsp. salt | ½ tsp. black pepper | 4 cups coarsely chopped lettuce | 2 cups cucumber chopped in circles Method: • Boil the chicken in water for 15-20 minutes over medium heat. Remove from heat and let it cool for 10-15 minutes. • In a large bowl combine yogurt, mayonnaise, salt, pepper, celery, pears and mix well. • Add in the boiled chicken and coat it well. • Divide the lettuce and cucumber into four bowls and spoon in the coated chicken. • Serve cold! (Servings: 4) Nutrition per serving: Calories: 158 Kcal, Carbohydrates: 12g, Protein: 8g, Fat: 7g

Add onions, carrots, celery and garlic. Cook until vegetables begin to soften. • Stir in the tomato paste and water, season with salt and pepper. • Reduce heat and simmer the soup for 30 minutes. • Stir in the chopped basil and pasta and cook until pasta is tender. • Serve hot!
