t has been an unbelievably busy month in Al Ain, filled with an incredible line-up of events and if you’re thinking it’s over, then think again because November promises to close with a climactic finish. The final week end is poised to be awe inspiring with an entire city preparing a mega birthday celebration for a Nation that has managed to surprise the world in less than half a century with its incredible vision and hunger for development. The UAE has become a major player on the world stage in a very short time and whether you are a citizen or an expat living in this country, there is a great sense of pride associated with calling this land of enormous bounty home. It has been amazing watching the transformation of Al Ain over the past couple of weeks and as I drive past the spectacular display of twinkling lights each evening, I am reminded of how lucky I have been over the past couple of years to be a part of such a beautiful city.
If by any remote chance you have not yet made plans for the week end, then I strongly suggest you stay right here in Al Ain to watch the action unfold on the ground and especially in the air as the Al Ain Aerobatic Show gets under way this Saturday November 30th. Check out our diary and entertainment pages to get up to speed with what and where it’s happening and put on your party faces to join the celebration. There’s a little something for everyone so get out there to pay tribute to a great city in a great country that is celebrating 42 years of innovation and inspiration. Happy birthday UAE from all of us at The Source!

LOWER THE TEMPERATURE AND SAVE!
As one of the biggest appliances in your kitchen, the refrigerator is also one of the most power hungry, accounting for 10%-15% of the average home energy bill each month. Get your fridge running in tip-top shape. First, set the refrigerator thermostat to maintain a temperature between 38 and 42 degrees (F). This temperature will protect your food from spoiling while saving electricity. Condenser coils tend to get dusty, making them less efficient so make sure to take out time at least twice a year to clean the condenser coil at the back of your fridge.

PRETTY LITTLE LIAR!
The wife of Jian Feng before and after
A court in northern China has sided with an angry ex-husband, who sued his estranged wife for marrying him without disclosing her previous plastic surgeries.
Fuming hubby Feng Jian only found out about her wife’s scalpel-aided touch-ups after she gave birth to their baby daughter who was “ugly beyond description,” according to court papers. Feng initially suspected his wife of having an affair. But after DNA tests proved he was the biological father of the girl, she fessed up to having done $100,000 worth of cosmetic surgeries before they met. A court ordered her to pay him $120,000 for his claims of marriage under false pretenses.

Al Ain Dairy launches Tetra Top packaging
Promising a bright future
Shashi Kumar Menon, Chief Operating Officer, Al Ain Dairy, commented: "This is the first time that Tetra Top One Step Opening cartons have been used for fresh milk in the Middle East, although they are commonly used in Europe.” "The four-layered carton is ideal for the region as it keeps milk fresh, offers protection from sunlight which can taint the milk flavor, and is less susceptible to rapid changes in temperature. The new package also offers shoppers greater convenience as it has tamper evidence one-step opening and closure and its shape makes it easier to store in the refrigerator, while the handy pack sizes help to reduce milk wastage”, added Menon. In addition to the consumer benefits of a simple opening and secure closure screw top, the new package has been designed with a low environmental impact by minimizing the amount of raw materials and maximizing the use of natural and renewable paperboard.
The new package should also find favor with retailers because it is simpler, easier and cheaper to transport, store and display. Al Ain Dairy products are 100 percent Emirati with the dairy located on the outskirts of the Garden City where it has a herd of 6,000 Holstein Freisian cows kept in free roaming, open, temperature controlled barns under the watchful eye of Farms Manager Pat O'Dwyer from Ireland.

An Unforgettable Facial Treatment
N
By Maha Mahboob
ever had a facial before? Are you eager to book an appointment but holding back because you don’t know what to expect? Then stick with us, as we help you out with a stepby-step guide that will set you on your way to glowing skin in no time.
Like many people experiencing a facial for the first time, I was a bit concerned about what to expect but my spa therapist, Mary at La Poupee Beauty Center-Al Ain, laid all concerns to rest as she spoiled me with an amazing and rejuvenating procedure! MY FIRST FACIAL TREATMENT: Name of Facial: Lime Clarifying Treatment | Duration: 1 hour | Cost: AED 200
accumulated and also helps to resolve certain skin problems. STEP 3- A lime astringent was then applied to rid my skin of any excess oils and to help reduce future oil production. STEP 4- Irish lifting massage cream was massaged into my skin and left on for 10 minutes. This step tightens and lifts the facial skin, giving it an ultra-firm look. STEP 5- Next came a 10 minute steaming session which I was told would help control and reduce acne breakouts. It also boosts circulation which draws blood to the surface of the skin, giving your face a warm, healthy glow. STEP 6- Mary then proceeded to deal with any of my existing acne using just the right amount of pressure to achieve healthy results. STEP 7- Lime Serum was applied to my skin followed by a green clay mask which was left on for 15 minutes. During this time Mary gave me a relaxing head massage. Serum is the ultimate solution to all skin problems and the green clay mask with its absorption properties draws impurities and toxins from the skin.
NOTE: La Papoupee Beauty Center-Al Ain uses Dr. Renaud’s products that are made from natural fruit extracts and are very gentle on the skin. Mary used Dr. Renaud’s Lime line of products for my combination skin. There is a different line of products for each skin type. Consult with your spa therapist to discover the product best suited for your skin type.
STEP 8- A post-facial lime cream for the face and an eye cream for the eyes were applied to keep the skin moisturized and glowing.
STEP 1- After removing my eye make-up, lime cleanser and toner were used to get rid of excessive impurities accumulated in my skin pores. Both cleansing and toning are important steps in facial treatment to insure healthy, radiant, nourished and hydrated skin.
Now that you have completed this absolutely rejuvenating experience, it is imperative that you practice good maintenance habits. You can't expect the results to last if you go home and sleep in your makeup or wash with a bar of aggressive soap. Be sure to use a cleanser and moisturizer designed for your particular skin type and season of the year. And above all, if you have yet to experience the power of a facial, consider booking an appointment with La Poupee Beauty Center-Al Ain.
STEP 2- A lime exfoliator was applied to my skin and left on for 5 minutes. A facial scrubbing machine was used to evenly massage the exfoliator. This process removes the dry surface skin cells 14

STEP 9- The last step, Laser pore tightening, is a quick, painless and highly effective procedure that tightens the skin and reduces pore size.

t was that time of year again; Eastern Motors, the authorized Jeep dealership in Al Ain and automotive member of Al Fahim Group, held its Jeep Jamboree Family Fun Drive Day Out on Friday, November 15th.
As I lay in bed sleeping the night before the big day, visions of “Wranglers” danced in my head. The alarm rattled me out of my desert dreams and by 6:30 am I was in the shower preparing for a day of serious dune bashing! Last year, I participated with my family and don’t get me wrong, it was a blast, but since my wife and boys had other plans this year, at 7:00 am I was out the door racing to pick up my friend

and colleague Sikkandar, for what was to be a testosterone filled day of pure adrenalin! We arrived at the Al Ain Eastern Motors show room at 8:00 am armed with our trusty camera and as promised, a silver Wrangler awaited us gleaming in the morning sunlight. It was a beast with a full body lift and humungous tires that hungered for a morning meal of desert sand. I was beside myself and couldn’t wait to get behind the wheel of this beauty to steer it towards its natural habitat among the UAE dunes. After a morning snack with coffee and a short briefing, we made our way convoy style toward our destination. We arrived at Al Khazna Camp at 9:00 am where 120 Jeeps with 350 multinational
stuff for men participants prepared to seize the day. Jeeps to the left, Jeeps to the right, no Land Cruisers or Patrols in sight; yes my friends, this was to be a day of “all things Jeep!” The Marshals guiding the groups that were segregated according to their off-road experience, were quick to impart to the drivers and passengers that safety was of paramount importance and with this in mind, we departed and took to the dunes. This being my second Jamboree, I felt extremely confident commanding my machine over the sea of sand. It is also important to note that having more guts than brains, was an essential ingredient for receiving full value from what may otherwise have turned out to be just another boring drive through the desert. So invigorating were my driving skills that at times, I could have sworn I had Casper the friendly ghost sitting in the passenger seat, instead of my Indian buddy Sikkandar. As is the case with any highly anticipated event, it ended all too soon but not before we were able to take full advantage of the scrumptious lunch spread that awaited us back at camp. The campsite was more like a carnival with a lineup of activities for the kids that included beach buggies, camel and horseback riding, jumping castles, DJ and henna painting among other things. The participants received Jamboree T-shirts and hats and special prizes were given away by various sponsors. It was a relaxing drive back to Al Ain spent reliving the high points of an absolutely magnificent day. Luckily, I was able to hang on to my beloved four wheeled friend for the evening and naturally my kids had me take them for an extended ride in a picture perfect Al Ain sunset with the roof off. The next morning my 4 year old son Jonah accompanied me back to Eastern Motors and as I reluctantly handed back the keys he asked, “Why are you giving it back dad? It’s way cooler than our Scooby Doo Van!” So if you’re reading this back at Eastern Motors and find it hard to break a kid’s heart and above all, want to maintain the dignity of a grown man, give us back the Wrangler! I’ll be waiting for your call Glenn...

HAPPY BIRTHDAY

to a “42 Year Overnight Success” Story he United Arab Emirates consists of seven independent city-states: Abu Dhabi, Dubai, Sharjah, Umm al-Qaiwain, Fujairah, Ajman and Ra’s alKhaimah. Four-fifths of the UAE is desert but has contrasting landscapes—from the towering red dunes of the Liwa to the rich palm-filled oases of Al Ain, from the precipitous Hajar Mountains to the more fertile stretches of its coastal plains.
Though small in size (similar to the State of Maine), the UAE has become an important player in regional and international affairs. In 1971, the late President His Highness Sheikh Zayed bin Sultan Al Nahyan unified the small, underdeveloped states into a federation— the only one in the Arab world. wealth was used to develop the UAE into one of the world’s most open and successful economies. In 2004, His Highness Sheikh Khalifa bin Zayed Al Nahyan became president and has since continued to strive towards an ambitious vision for the UAE. GLOBALIZED AND OPEN : In just over four decades, the nation has transformed from a tribal culture reliant on agriculture and fishing to an entrepreneurial success story with world-class infrastructure. The leadership has improved education (effectively eliminating illiteracy), advanced health care and embraced change as the UAE modernizes, consistent with its history and cultural values. The UAE is also strengthening institutions of government to ensure a transparent legal system with full regard for the quality of life of all citizens and residents. Four members of the Federal Cabinet are women. The UAE is a member of the United Nations, the World Trade Organization, the Arab League and the Gulf Cooperation Council.
Dubai yesterday
Today the UAE is a strong, vibrant and modern nation that is open to the world. HISTORY: The UAE’s rich history is rooted in trade and tied to Islam, which came to the region in AD 630. Its location between Europe and the Far East attracted merchants from India and China and was prized by Europeans, in particular the Portuguese, the Dutch and the British. While Europeans sought control of the coasts, inland, the ancestors of the Bedouin made the sandy deserts of Abu Dhabi and Dubai their home. The town of Abu Dhabi became an important center. In the 19th century, the British signed a series of agreements with the individual emirates that resulted in the area becoming known as “The Trucial States.” They agreed not to dispose of any territory except to the United Kingdom and not to enter into relationships with any foreign government other than the United Kingdom without its consent. In return, the British promised to protect the coast from all aggression by sea and to help in case of land attack. The pearling industry thrived in 19th and early 20th centuries, providing income and employment to the people of the Gulf. Many inhabitants were semi-nomadic, pearling in the summer and tending date gardens in the winter. But the economic depression in the late 1920s and early 1930s, coupled with the Japanese invention of the cultured pearl, irreparably damaged the industry. NEW BEGINNINGS: In the early 1930s the first oil company teams conducted geological surveys. In 1962, the first cargo of Abu Dhabi corniche, 1954

crude was exported from Abu Dhabi. With oil revenues growing year by year, HH Sheikh Zayed bin Sultan Al Nahyan was chosen as Ruler of Abu Dhabi in 1966. He undertook a massive program of construction of schools, housing, hospitals and roads. One of Sheikh Zayed’s early steps was to increase contributions to the Trucial States Development Fund. Abu Dhabi soon became its largest donor. In the meantime, HH Sheikh Rashid bin Saeed Al Maktoum, de facto Ruler of Dubai since 1939, developed shipping to replace pearling revenues. When Dubai’s oil exports started in 1969, Sheikh Rashid was able to use oil revenues to improve the quality of life of his people. At the beginning of 1968, when the British announced their intention to withdraw from the Arabian Gulf, Sheikh Zayed acted rapidly to establish closer ties with the emirates. With Sheikh Rashid, Sheikh Zayed called for a federation that would include not only the seven Emirates that together made up the Trucial States, but also Qatar and Bahrain. Agreement was reached between the rulers of six of the Emirates (Abu Dhabi, Dubai, Sharjah, Umm al-Qaiwain, Fujairah and Ajman), and the Federation to be known as the United Arab Emirates was formally established on 2 December 1971. The seventh Emirate, Ra’s al-Khaimah, acceded to the new Federation the following year. Since then, the seven Emirates have forged a distinct national identity. The UAE’s political system combines traditional and modern and enabled the country to develop a modern administrative structure while ensuring that traditions of the past are maintained, adapted and preserved.

ADNOC
T
S PR IT O F A N AT I ON his being an issue of The Source that pays tribute to a country and its achievements over the last 42 years, it just wouldn’t make sense not to tip our hats to the accomplishments of an organization that has facilitated to a great extent, the many hopes and dreams of a nation. That organization is of course, ADNOC and since its inception in 1971 it has become a major player on the world stage of petroleum based giants.
Oil exploration began in Abu dhabi in 1950 with the drilling of the Ras Sadr well, and although this was a failure, the discovery in 1954 of the Bab field quickly catapulted the province into one of the most successful and efficient exploration programs in history. Abu Dhabi National Oil Company (ADNOC) was established in 1971, to operate in all areas of the oil and gas industry and since then has steadily broadened its activity establishing companies and subsidiaries and creating an integrated oil and gas industry in Abu Dhabi. Today, the company manages and oversees oil production of more than 2.7 million barrels a day which ranks it among the top ten oil and gas companies in the world. The Supreme Petroleum Council (SPC), chaired by H.H. Sheikh Khalifa Bin Zayed Al-Nahyan, President of the UAE and Ruler of Abu Dhabi, formulates and oversees the implementation of Abu Dhabi petroleum policies.

Over the past three decades, ADNOC has expanded its business activities, enhanced its competitive position and managed to become one of the world's leading oil companies with substantial business interests in upstream and downstream activities, including transportation, shipping, marketing and distribution. ADNOC's efforts in the exploration and production field have concentrated on assessing undiscovered reserves and optimizing hydrocarbon recovery by improving the reservoir management. ADNOC is committed to sustainable development, ensuring a harmonious balance between people's needs and Earth's resources, while its track record in HSE sets the standard for the rest of the Arabian Gulf. In the last few years significant achievements were made in the expansion and development of gas fields to meet increased demand from industry gas users and gas injection requirements in order to enhance the oil and condensate recovery from the producing fields. ADNOC has 14 subsidiary companies working in the various fields of the oil, gas and petrochemical industry as well as crude oil and gas transport and . They include ADCO, ADMA-OPCO, GASCO, ADGAS, ZADCO, TAKREER, NDC, ESNAAD,IRSHAD, FERTIL, BOROUGE, NGSCO, ADNATCO and ADNOC Distribution. Looking at the UAE today is simply put, awe inspiring when we take into consideration that most everything we see in terms of urban development, mushroomed in less than half a century. And it is safe to say that we owe a great deal of the bounties we enjoy as a country to the success of ADNOC; a company with incredible vision that continues to deliver the needs of today while setting solid foundations of hope for tomorrow!

My soul is in the sky Hareb Thani Al Dhaheri By Mehak Alam 26
The Source
B
orn and raised in the oasis city of Al Ain, retired brigadier Hareb Thani Al Dhaheri, has flown for more than 30 years, and despite neardeath experiences, constant jet lag and rogue combat planes, he still loves what he does.
After a shining career with the UAE Armed Forces, Hareb Al Dhaheri now serves the Al Ain-based Horizon International Flight Academy as its Chief Executive Officer. “I am an aviator and what better than serving a flight training school. When I got this offer, It was like another opportunity to serve my country”, said Al Dhaheri, who graduated as a pilot in the UAE Air Force in 1983. In the early 90’s he transferred to the navy to establish and assist in the development of the UAE’s naval defense strategy. Half of his career was spent as a navy pilot. He served 4 years in the UK (2005-2008) managing Emirati students enrolled in various higher educational programs. Upon his return from the UK, he retired from the armed forces and in January 2011 took over the leadership role at the region’s leading flight training organization owned by Mubadala Development Company.
al majlis
“Assuming the top management position for this organization was not easy. It is far more difficult than flying between mountains in harsh weather conditions. It's extremely challenging and this is what keeps me on the go.” Hareb believes that it's easy to get caught up in the excitement and romance of aviation, but to impart this to others is very difficult.
and UAE Civil Aviation Authority. “Since its inception in 2003, the goal of the academy has been to provide training solutions that meet international standards in a safe and secure environment. With the increasing demand in the region for pilots, the academy is at the forefront of meeting these demands for both the Military and Civil sectors”, informed Al Dhaheri.
“Ever since my childhood, I wanted to fly and flying in the Armed Forces was a matter of pride and honor. I was extremely thrilled to fly for the first time and it's something that I will never forget”, shared Al Dhaheri. “Whether you are a student, a graduate or an instructor, the motives for everyone in aviation are similar; enjoying the view, the need to continue learning, the challenge of handling the aircraft and enjoying the environment you work in. Every student should possess the same passion in order to succeed in this field.”
To fully appreciate our surroundings, Hareb took us on a tour of his academy and provided a brief description of each department. W e met some of the students and Hareb referred to them as his constant inspiration,” When I see them prepare for their daily missions and accomplish them, it reminds me of why I continue doing what I do.”
During the mid 90’s the UAE experienced a sharp increase in the number of students enrolled in career flight training and in contrast witnessed an equally sharp decline of the same in the early 21st century. When questioned about this unusual fluctuation, Al Dahaeri confidently explained that during the nineties there was very little awareness about the many occupations related to but not directly involving the actual piloting of aircraft. “It is this exposure to the many different career choices related to aviation that has seen students flock to opportunities in avionics engineering and air traffic controlling just to name a few.” “We now have a more complete team of qualifying candidates in all sectors of the industry.” Hareb is currently focused on growing the academy to keep pace with the region’s rapidly expanding aviation sector. His wealth of experience is certain to guide the academy as it continues to grow while maintaining the standards and requirements set by the ICAO
Flying may not be all smooth sailing, but it certainly is worth the effort invested and our goal at Horizon is to smoothly transition every student that invests that time and effort into the region’s rapidly growing aviation sector. As per usual, when meeting with people like Hareb, that have contributed so generously to the UAE in the form of their personal accomplishments, we will leave you with some words of wisdom from a man who continues to serve his country and will undoubtedly carry on doing so for many years to come.

THE ISSUE Almost half of the world — over three billion people — live on less than $2.50 a day (approximately 9 Dirham). There are 2.2 billion children in the world of which 1 billion are living in poverty. About 21,000 people die every day of hunger or hunger-related causes, according to the United Nations. Géant Brings Gallic Hypermarket Retail Convenience to Al Ain
Renowned French hypermarket brand Géant has brought its inimitable Gallic retailing style to Al Ain. The European favourite - the world’s fifth largest hypermarket chain - has opened up for business with 6,900 square metres of floor space at the new Wahat Hili Mall, promising consumers the largest available selection of fresh and non-perishable produce in the city. The anchor store opened on September 9th and is conducting brisk business, having already established itself among Al Ain’s populace as the go-to location for consumer items, whether food, electrical goods, clothing or household wares.
“Shoppers in Al Ain have long been waiting for a local retail facility that combines convenience and choice with European standards of quality and style and now they have had their patience rewarded with the opening of Géant in the city,” said Mohammad Ashfaq, Group Head, Géant UAE. “The store has already become the most visited indoor market area in Al Ain in the short time it has been open for business and is providing the residents of Al AIn with the widest array of value-for-money goods and services,” he added. Géant is retailing an eclectic range of products at Wahat Hili Mall, including fresh food, frozen food, groceries, clothing, jewellery, sports equipment, cosmetics and garden accessories. The store offers a strong line in household items and fashion wear through the imported French Casino and élan brand of products; the latter Géant’s own label. Customers who enjoy culinary fine arts are well served by an in-store meat counter staffed by professional butchers
who ensure the best cuts of meat, and by a seafood market that brings in a fresh, daily supply of over 150 varieties of fish and shellfish. Confirming the reputation for the excellence of French cuisine, the store boasts a roastery and delicatessen that serves up an extensive selection of hot meals, while a classic bakery à la Paris offers over a hundred varieties of patisserie-style breads and cakes baked fresh every day. The Wahat Hili Mall store opening is Géant’s second in outlet in the UAE. The organisation marked its debut in the country with its Dubai store located at Ibn Battuta Mall, which opened in 2005. The company says that its global success has been built on the twin principles of using its purchasing power to make top international brands available at the lowest prices and offering value-for-money own brand products that are both stylish and fashionable. These retail strengths, it says, are augmented by a company philosophy of providing the best customer service in an consumer-friendly shopping environment. “Our stores incorporate wide aisles for easy shopping cart manoeuvring and clear signage that is simple to understand, making the shopping experience a hassle-free one,” said Yvan Baba, Country Head, Géant hypermarkets. “Our mission is to provide the best quality products at the lowest prices, all presented with the highest standards of customer service. It all adds up to an extremely enjoyable one-stop shopping experience for customers across all income groups,” he added.

Sheikh Zayed Palace Museum
S
Photo by Sikkandar Sharpudeen et in the heart of the oasis city is one of the former homes of the late UAE founder, HH Sheikh Zayed Bin Sultan Al Nahyan (may his soul rest in peace), which was built in 1937 and was later converted (in 1998) into the Sheikh Zayed Palace Museum.
Opened for visitors since 2001, the palace museum which is also known as the Al Ain Palace Museum, strives to maintain the look and feel of the past and does considerable justice to the intention. Now creatively restored the 37-room palace, being the residence of the ruler, contains much information to educate us about his family tree.
32
The Source
The palace consists of many courtyards, each for specific purposes such as wards for guests, children’s housing, meeting rooms or ‘Majlis’, separate for men and women and for the local and foreign visitors. In one of the halls, an elaborate family tree is on the wall, next to oil paintings of the Al Nahyan rulers, including the 19 sons of HHSheikh Zayed. The family tree outlines the first Al Nahyan ruler, Sheikh Eissa bin Nahyan in the 18th century, to the 14th ruler, the late Sheikh Zayed. The current President of the UAE, Sheikh Khalifa, is the 15th ruler. Each room in the palace is clearly marked with to whom it once belonged, and has furniture and other items that were typically in use at the time. Covering an area of 15,635sqm, the red-orange palace is kept true to the way it was originally built, as decreed by HH Sheikh Zayed. He wanted to keep the palace an honest reflection of life in the UAE before oil was discovered and before the seven Emirates united.
my home
Therefore the museum is quickly struck by the simplicity of its interiors. All the rooms are basic, with the only source of entertainment an antique radio unit with two dials. Being built when air-conditioning was unknown, the palace was kept cool through broad square verandas that shaded the main rooms, and decorative perforated stone or wooden screens that allowed the breeze to pass through them. Located on the busiest roads of the city, the museum with a backdrop of 147,000 date palms in the Al Ain Oasis, has often been a site of refuge for travelers from across the desert. However, the first and last thing that visitors will witness at the palace will undoubtedly be the grey colored military Land Rover, parked near the front gate. The 4-wheeler was driven by HH Sheikh Zayed when he used to drive out into the desert to meet the tribes of the country. Thanks to both the construction and way of life on display, a walk
through the courtyards is bound to transport you into an altogether different world; very much in contrast with the bustling life you would have left behind at the gates. Entrance is free. Opening times: Daily 8:30am-7:30pm, except Monday (closed) and Friday:3pm-7:30pm. For more information please call 03 751 7755

recipes CHEF - ROBIN HILL
The UAE’s original burger joint has finally arrived in Al Ain and in honour of National Day is serving up camel burgers. If you're up for something a little different and looking to keep all things UAE then head down to Grand Central, conveniently located on Khalifa Street and sample the “Hump-Burger”!
GRAND CENTRAL CAMEL BURGER INGREDIENTS UAE's finest halal Camel meat (preferably 2 hump) | One buger bun |Diced tomato, onions, chopped ice-berg lettuce | Sliced non-processed (we keep everything real) cheddar cheese | Condiments (Heinz ketchup, Hellman's mayo and a dash of mustard) METHOD: • Cut the camel meat into strips and grind the meat through a mincer • Knead the meat together, bedouin style, i.e. using your good old fashioned hands • Refrigerate (never freeze) the meat for a couple of hours (Camel meat is low in fat/cholestral but highly moist, so resting the meat prevents it from disintegrating into pieces later) • Mold the meat into patty balls, once again bedouin style • Place the patty ball onto a hot flat grill and smash the heck out of it asap (this speeds the cooking process and sets off some amazing chemical reactions to give the meat a more burgery taste while keeping the juices in)
• •
•
Season the patty with salt and pepper (once it's on the grill - never before - as salt dries up the beef) Flip the patty over once and season again (never/ever flip a burger twice - it's almost as bad as crossing the streams in Ghostbusters) Add mustard and a slice of real cheese,
• •
just prior to removing from the gril so it can melt. Serve on a soft bun, with your veggies and condiments. Eat, and Yakhi remember to thank these wandering animals, who were around long before our bling-bling automobilies!
PHILLY CHEESE STEAK INGREDIENTS Prime cut of rib-eye steak (incredibly high quality) | 1 hoagie roll | onions, mushrooms, green peppers | cheese sauce METHOD: • Cut the the rib-eye into portioned steaks, then using a meat slicer, slice the meat and weigh off 120g • slice the onions, mushrooms and green peppers and saute it on the grill • Slice the hoagie bun along the side and toast it • fill the insides of the bun with cheese sauce • Place the portioned sliced rib-eye onto the grill (continuosly toss your meat on the grill, so that it does not burn - should be ready in little more than a minute) • once the meat has reached medium well add the grilled onions, mushrooms and peppers and season with salt and pepper • Scoop up the steak and veg and place into the hoagie bun and finish it off with a dollop of cheese sauce to cover the Philly cheese steak • Eat and enjoy the richest cheese steak this side of the Delaware River 34

review Written by Britsih author Graeme H Wilson, Zayed: Man Who Built A Nation tells the story of what the late UAE President did next. A man with little formal education, he was now required to develop the UAE in economic, social and infrastructure terms. The book portrays HH Sheikh Zayed as a leader who used his principals and a personal moral compass to straddle the world stage, representing his nation and going on to prove an effective force for peace. Numerous wars and diplomatic crises were averted through his instinctual diplomacy.

Don’t change the world! Once upon a time, there was a king who ruled a prosperous country. The king had a panel of advisors who would help him make decisions. The only problem was, that none of the advisors were brave enough to stand up against the king and disagree with his opinion as they were afraid of being punished. One day, the king decided to travel to the distant areas of his country on foot along with his servants. Ahmed; one of the king’s advisors was not happy with the king’s decision as he knew this would exhaust the king and his companions. But no one paid attention to him. The king left for the trip and on his return as expected started complaining of severe foot pain as a result of walking on the rough and stony roads of his country. After consulting the issue with his team of advisors, the king ordered his people to cover every single road of the entire country with leather. Definitely, this would need thousands of cows’ skin, manpower and a handsome amount of money.

Ahmed was not at all happy with the king's decision of wasting so much money, time, and most of all, the lives of so many cows. So he gathered courage and dared to disagree with the advising panel. Ahmed tried suggesting a better solution for the problem. “ Why not simply use a small pice of leather and make a pair of leather shoes to cover your feet?” suggested Ahmed. The king was impressed, and agreed with Ahmed’s suggestion immediately. He also asked his servants to make leather shoes for every person in the kingdom. Moral of the story: A) To make the world a beautiful place to live, try changing yourself and not the world. B) Be brave enough to speak your mind.
