A SPECIAL THANKS To the brewers, brewery representatives, and distributors who contributed to this beerfest. This is our industry. We grow through a shared desire to promote our craft, our trade, and each other. We know what it takes to contribute beer, take time from your busy schedule, travel significant distances, incur expenses, and jump in with both feet to participate in an event where the immediate reward may not be entirely evident. But that’s not who we are. We’re here to advance Craft Beer through a series of steps. The Great Nebraska Beer Fest is one of these. We thank you from the bottom of our hearts. See you next year!


Welcome to Papillion! For many of us, we call Nebraska home. For some of you, you’d call yourselves visitors. We wish to welcome you to our backyard and the home of The Great Nebraska Beer Fest! Until this festival, our homegrown beer festivals and enthusiast gatherings were largely a collection of Craft Beers that we could already purchase within our local establishments. 2011 marked an important milestone for our festival when we expanded our event so that we can have our brewing brothers and sisters from out of the State pouring their beers alongside us. As this aspect is new, we’ll grow it over time and we hope that you’ll say hello to those brewers and distributors who have helped us grow in addition to the new faces you’ll see this year. We hope you enjoy your visit to not only The Great Nebraska Beer Fest but the area as well. There’s quite a bit to see here and for those of you who’ve travelled in to join us - thank you for the time, effort, and expense of making the trip. We hope to see you next year as well!

Seminars The Great Nebraska Beer Fest is all about American Craft Beer, education on all things craft related, and getting up close and personal with as many brewers, brewery representatives, and distributors of our prod- ucts as possible.

Beer Travel with TheBeerGeek.com PRESENTERS: MERIDETH AND CHRIS NELSON Merideth Canham-Nelson and Chris Nelson have been beer travelers for 20 years, visiting over 700 breweries in North America, Europe, and Australia. During their travels they have explored the world’s major beer centers, including Belgium, Germany, the Pacific Coast, Asheville and Chicago, as well as lesser-known craft beer hot spots, such as Ireland and Australia. In 2008, Chris and Merideth embarked on their biggest beer adventure ever: the “Year in Beer,” which involved visiting a major beer destination each month. Five hundred pints of beer, one hundred and fifty breweries, and seven countries added up to one amazing year. The Year in Beer took them to four of the world’s most renowned beer events—Oregon Brewers Festival, Great British Beer Festival, Oktoberfest, and the Great American Beer Festival—in consecutive months and to all seven Trappist breweries in ten days. The couple believes that beer travel is about experiencing the diversity of beer throughout the world by drinking it at its source. Chris and Merideth’s beer adventures are chronicled using travelogues and videos on the website thebeergeek.com, which boasts an international following. Merideth recently published Teachings from the Tap, a detailed account of their Year in Beer.

Homebrew Troubleshooting Panel MODERATOR: JUNO CHOI, NORTHERN BREWER Juno Choi has worked in the home brewing industry for nearly a decade and has been actively home brewing for over 13 years. He is current Retail Director for Northern Brewer, one of the nation's largest home brew suppliers. He is also a certified judge through the Beer Judge Certification Program (BJCP) and also a certified Cicerone® of the Cicerone Certification Program. When not planning his next homebrew recipe, Juno is owner of Chop Liver LLC, which has organized over 7 craft beer festivals in the

PANELIST: JEREMY DANNER, BREWER @ BOULEVARD Jeremy Danner has been a brewer at Boulevard Brewing Co. for the past four years. During his time at the brewery, Danner has played key roles in keeping current beers consistent, developing new brews, and has become an instrumental spokesperson talking about craft beer to consumers. Danner began his career at 75th Street Brewery and also spent time as a brewer’s assistant at Power Plant Restaurant and Brewery before coming to Boulevard. He’ll tell you himself that he is a beer geek at heart and appreciates what it takes to create a fine ale or lager and enjoys trying all sorts of beer styles. GNBF

PANELIST: ANDREW HOOD, HEAD BREWER @ TALLGRASS Andrew Hood is originally from Orinda California. He has worked in the Craft brewing industry for a number of years. He started off homebrewing while in College in Santa Barbara California. He then moved into an assistant brewers position in 2007 at Island brewing Company. In 2009 he completed his International Diploma in Brewing technology from the Siebel Institute. He has been with Tallgrass Brewing Company since 2010 as Head Brewer. He loves homebrewing and playing around with interesting ingredients.

PANELIST: TYSON ARP, HEAD BREWER @ NEBRASKA BREWING After pounding nails for several years as a carpenter, Tyson turned his homebrewing hobby into a career by volunteering his way into the Assistant Brewer position at Nebraska Brewing Company in 2007. After 18 months of dedication to learning the trade and striving to improve NBC’s beers and processes, Tyson was promoted to Head Brewer where he has been rewarded by continuing growth in the popularity and critical acclaim for their beers. Tyson also fostered the birth and growth of the Reserve Series and Inception Series barrel aging programs. Though technically he doesn’t ‘homebrew’ anymore, he does have the pleasure of firing up the NBC pilot brewing system regularly to try out new recipes and ideas. In the rare event that he’s not at the brewery or a beer event, Tyson enjoys baking, getting outdoors, and getting high scores at disc golf.

Internet's Role in the Growth of #craftbeer PANELIST: STEPHEN JOHNSON, NEW BREW THURSDAY Stephen Johnson, host of New Brew Thursday, has been drinking craft beer since the early 90’s. Repulsed by the flavorless mass produced American Light Lagers he was pushed into a journey of amazing international beers roaming through Germany, Belgium and the UK via his local beer store. In Portland he discovered the amazing beers that were being produced in the US. When he finally landed in California he discovered the wonder of hops and became determined to share his love of craft beer with the rest of the world. In an effort to “convert” a friend from BMC beers, he’d bring a new beer that neither had ever had on Thursdays when they hung out. First they started sharing their beer on Flickr, then Twitter and eventually they put a camera in front of them and the crazy antics of New Brew Thursday was created.

PANELIST: BRYAN MYRON, THEBREWBROS.COM By day Bryan is a software development manager for a major airline and by night a crusader for craft beer and the craft beer industry. He was first introduced to “craft beer” while spending time in the Dusseldorf area of Germany in the mid-80s during his senior year of high school – of course in Germany it was just known as “beer”. Since that time he has tirelessly sought out great craft beer – which has become easier over the last 5 years. During the last year he’s merged my interests in technology, social media and craft beer as a writer and promoter for TheBrewBros. com web site. Additionally, he has combined my love of travel and craft beer and do a fair amount of “beer destination” travel.

Internet's Role in the Growth of #craftbeer (continued) PANELIST: RICHARD STUEVEN, BEERME.COM Richard Stueven started homebrewing in 1990, and had so much fun that he decided to give up his career to become a professional brewer. But before leaving the software industry, he created the beginnings of what evolved into beerme.com; it's now the oldest surviving beer-related web site. While working in brewpubs for ten years, he also attained the rank of National BJCP Judge.

PANELIST: NATE BELL, NEBRASKABEERBLOG.COM Nate Bell has been an avid craft beer fan for more than 15 years. Nate started homebrewing in college after several enjoyable trips to Lazlo’s of Lincoln and experiencing what real beer tastes like. He has continued to homebrew to this day and has gone as far as opening a homebrew shop in Ansley, Nebraska called Brew Bums. Shortly after opening the homebrew shop and realizing while living in Broken Bow Nebraska has its perks, access to craft beer and knowledge of craft beer events is not one of them. After some digging he realized that he wasn’t alone and even folks in Omaha and Lincoln didn’t have a central location to find out what was going on in craft beer. Because of this he created the Nebraska Beer Blog in 2007 to fill that need and quickly asked an Omaha local, Nick Spies, to help get information out. A lot has changed since 2007, both with craft beer in Nebraska and in social media. Nebraska has doubled the number of breweries in the state, and Facebook and Twitter have exploded with craft beer news. Social media is a great channel for breweries to communicate with their consumers. The blog now has 4 dedicated contributors and continues to grow. Nebraska Beer Blog looks forward to continuing to be the source for all craft beer information in Nebraska well into the future.

Beer and Food Pairing PRESENTER: CHRIS SPRADLEY, RAHR BREWING Chris Spradley is a geek for both good beer and good food. A native Texan, Chris received a thorough indoctrination into craft beer and the industry as a resident of Los Angeles from 2007-2011. There he founded the Los Angeles Ale Club, covered craft beer as the SoCal Craft Beer Examiner and began working in the craft beer industry. His passion for food and beer even led him to an appearance as a finalist on Master Chef with Gordon Ramsay. He is a trained draft technician, is studying to be a Certified Cicerone (beer sommelier) and is a consultant with Craft Beer Consultants for breweries, distributors, bars and restaurants with a passion for the consumer side of beer, especially food and beer events and pairings. He is also the host of "Breweries, Bars and Beer Food", a show taking beer lovers behind the scenes of craft beer.

Important GNBF Stuff SERVING SIZE The serving size for samples is 2 ounces. Brewers are instructed not to provide full pours. Please do not ask them to fill your glass. With so many different choices and so little time (and a long day to cover) you do not need more than a small taste of any particular beer. If you want a larger taste, find one of their fantastic breweries and make yourself a customer.

MERCHANDISE All breweries and sponsors are encouraged to provide for sale their own merchandise and any other cool stuff that will help you to remember them. We will not provide a central Merchandise Tent this year so be sure to check out the individual displays and ask if your favorite brewery has anything for sale.

SMOKING We understand that people differ greatly in their opinions about smoking, but this is a beer fes- tival - and not an event where tobacco may have an op- portunity to interfere with aromas and tastes. It is true that this is an outdoor festival but we ask that for our event, please refrain from smoking near the brewer’s tables. If you wish to smoke, please do it away from the event. You can exit and re-enter with a proper festival wrist band.

FESTIVAL END TIME IS 6PM The festival ends at 6 PM. All Brewers MUST stop serving samples at that time because our license stops promptly at 6 PM. PLEASE, do not endanger the future of the festival by asking to be served past this point. Please proceed promptly to the exits. We encourage you to take advantage of taxis, hotel shuttles, and remember that you might have arrived with a designated driver.

Beer Tasting Serving Temperature Beer should be served at the temperature intended by the brewery. Generally, a serving temperature of 45-55°F will enable you to perceive beer flavor most easily.

Look First, look at the beer and make note of it’s appearance. Does it retain its head? Is it dark or light? How opaque is it? Does it look appealing?

Smell Second, swirl the beer in the glass, releasing carbonation. Smell the aroma given off by the beer. Is it pleasant. Does it smell sweet, like malt? Does it smell flowery, like hops? Does it smell fruity, like raspberry, apple, banana, grapefruit, or pear?

Taste Third, taste the beer. “Chew” the liquid so it gets to all parts of your tongue. Where do you perceive flavor characters? Sweetness is perceived on the tip of the tongue. Saltiness and sourness are perceived at the sides, and bitternes is perceived only at the back of the tongue.

Taste Again! Take another taste. Now what are your impressions? Ask yourself: Is the bitterness in balance with the sweetness? Does the beer feel thin or thick? lightbodied or full bodied? Is there a pleasant aftertaste? Is there pleasant carbonation? What types of flavors stand out?

ABV, IBUs & Gravity When possible, breweries have provided specific technical info about their beers including alcohol content, Alcohol by Volume, (ABV) and bitterness based on the International Bittering Unit (IBU) scale.

ABV - Alcohol By Volume

Original Gravity and Final Gravity

ABV is a standard measure of how much alcohol is contained in an alcoholic beverage, expressed as a percentage of total volume. The average ABV for most beer is around 5%. Session beers are generally lower in alcohol around 3-4%. Imperial or barrel aged beers may be as high as 10%.

Gravity refers to the specific gravity of the wort at the beginning of fermentation (original gravity) and end (final gravity). At various stages in alcohol fermentation, the density of the wort varies. By measuring differences between original sugar contents and final readings, a probable alcoholic content may be derived.

IBU - International Bittering Unit IBU provides a measure of the bitterness of beer, which is provided by the hops used in brewing. Bittering units are measured through the use of a spectrophotometer and solvent extraction. A light American lager might be as low as 5 on the scale, while a barley wine can range up to 100. The bittering effect is less noticeable in beers with a high quantity of malt, so a higher IBU is needed in heavier beers to balance the flavor. For example, an Imperial Stout may have an IBU of 50, but will taste less bitter than an English Bitter with an IBU of 30, because the latter beer uses much less malt than the former. The technical limit for IBUs is roughly 100 but there is no real gauge after 100 IBUs when it comes to taste threshold.

This is our take on a Belgian White. The voluminous white head results from a high percentage of raw wheat used in the recipe. Aroma is of orange zest and ginger combined with hints of saffron. The finish is dry with a supple tartness.

Weathervane distinguishes itself from big name wheat beers by pointing in the direction of a more traditional recipe (40 percent raw wheat) and a nearly forgotten brewing technique called “turbid mash decoction.” Fancy stuff for the beer nerds, but fully satisfying for beer drinkers of all sorts.

We produce this crisp, refreshingly bitter pale lager from domestic cereals and lemony Strisselspalt hops. The name remembers “Robber’s Cave,” a bandit’s hideout that was enlarged with pick & shovel in the 1870s for lagering beer – beer which was likely comparable to Robber’s Pils.

Hopbursting is a relatively new brewing technique in which the vast majority of hops are added to the kettle late in the boil in order to achieve enhanced extraction of hop components (i.e. Hopbursting gives you tons of hop flavor and aroma!) Our Hopburst IPA has a substantial malt base, balanced with huge additions of our unique hop blend. This creates an incredibly flavorful beer, with smooth bitterness and hoppy goodness.

Our Coffee Stout is rich and smooth with just a hint coffee flavor. It is crafted using five different malted grains, which results in dark color and flavors of chocolate and heavily roasted malt.
