Community Networks Wanaka and LINK Upper Clutha are involved in the Council-led emergency response, with our staff leading the local welfare team and providing direct support and information. Welfare – If you are looking for assistance with food provision, financial issues, accommodation, or simply

Business – The newly formed Southern Lakes Business Response Group provides helpful information for employers and employees on the QLDC website under “Covid-19 Business Support and Advice”. Volunteer – If you want to offer your time or service, Volunteering Central is coordinating that effort with Council, and you can register through www.qldc.govt.nz (click “Offer your support”). thought you may like some cooking inspiration while on lockdown, here are some fabulous recipes from 4 of our local eateries... yum!
PERSIAN CAKE It’s time to treat yourself (like you haven’t already…) We’ve had this Persian cake in Big Fig Wanaka since the early days. It’s basically an almond meringue with goodies packed in – you can use whatever fruit, nuts and chocolate you have in the pantry.
NUTTY SLAW 1/2 head red cabbage, finely shredded 1/2 head white cabbage, finely shredded 4 large carrots, grated 2 cups coriander chopped roughly 1 bunch of spring onion, sliced finely on a diagonal 2 cups roasted nuts (a mixture of peanuts and cashews is good) Mix all the above ingredients together.
DRESSING 1/4 cup siracha 1/2 cup sesame oil 1/4 cup lime juice 1/4 cup pickled chilli (including liquid) Depending on that heat of the chillies you might need to add more or less Salt and pepper Mix all the dressings together and season to taste.
PICKLED CHILLIES 1 cup rice vinegar 1 cup sugar 1 bay leaf 5 pepper corns Heat until sugar has dissolved Pour over 20 thinly sliced chillies This will keep in a sealed jar in your fridge for up to 3 weeks.

225g Egg whites (around 7 whites) 282g Caster sugar 325g Almond meal (almond flour) 125g Dried cranberries 125g Chopped dates 70g Chopped pistachios 70g Flaked almonds 150g White chocolate buttons or chunks 1tsp Rose water
Whip the egg whites until soft peaks form, pour in sugar and keep whipping until it forms stiff peaks. Mix in the rose water.
Allergens: Eggs, Dairy (white choc), Nuts
Combine the rest of the ingredients in a separate bowl. Mix them into the egg white until well incorporated. Pour into a lined 23cm cake tin or swiss roll tin and spread out with a spatula so it’s about 2cm high. Sprinkle with flaked almonds. Bake at 150c for 35 mins.

When it comes to red wine, it may surprise some people to know how perfect it is to use for desserts. Coming under the umbrella of gluten & egg free while also being vegan, we often serve them as a popular dessert option at weddings and dinner parties. We also use poached pears on our boards alongside blue cheese for a delicious and visually pleasing alternative to quince paste. I am a ‘bit of this, bit of that’ kind of cook and encourage you to add and subtract flavours as you please. So long as the sugar to wine ratio is correct then the syrup should reduce correctly. You can try replacing red wine with white and add elderflower syrup. INGREDIENTS: 6 firm bosc pears (But any variety can work) 1 x tsp vanilla bean paste 1 x tsp star anise
1 x tsp cinnamon 1 x whole orange 1 x tsp lemon juice 3/4 cup brown sugar 750ml Pinot Noir red wine
Note regarding pears: Make sure the pears are firm (not completely ripe) or they will soften before they absorb the liquid. Poaching actually improves the taste of pears and the longer they can sit in the syrup after poaching, the better they’ll taste. METHOD 1. In a medium pot (we use cast iron), combine all ingredients, except the pears, and stir together. Cut the whole orange into 1/4 chunks and put in liquid, rind, pips and all. 2. Peel pears as slowly & smoothly as possible. Slice off the bottom of each pear (this is so they can stand upright when plated) If using the pear for a cheese board, core and halve so they are easy to slice. Leave the stalks on, they add to the final beauty. 3. Put pears, on their sides, in the pot – they should just about be fully covered with liquid.
Home-made Lemon Curd INGREDIENTS 2 eggs 2 yolks 150g icing sugar 150ml of freshly squeezed lemon juice 100g butter
4. Bring to a gentle boil, then reduce heat and simmer gently, partially covered, for about 1/2 hour, or until pears are tender but not mushy and a gorgeous red wine colour. 5. Let the pears cool at room temperature and then refrigerate for a few hours in the syrup. Turn the pears often to ensure an even coating. 6. Remove pears and drain liquid through a sieve to remove orange pulp and pips. Return liquid to the pot and bring to boil for 10-15 minutes to reduce down to a beautiful syrup (a little thicker than maple syrup is the key). 7. Serve with a decent dollop of whipped cream and pour over the syrup. If serving on a cheese board, simply slice and serve alongside gourmet cheeses. The last week has been mainly focused on the Covid-19 response, both for Police and the general public. The response from 99% of the population has been amazing, you have really taken this life-threatening epidemic seriously. A massive thanks to you all. At least three weeks to go as we wait for the numbers to drop off. Please keep the pressure on and find new ways to entertain each other and remember to stay in your bubble. No doubt both new and old board games are being brought out of the cupboards and many movies are being watched. This is a great chance to get some exercise daily and upgrade those cooking skills. Many of the incidents local Police have attended over the last week have only required a friendly chat, a reminder to stay in the bubble and stay close to home. A few people are always going to think that this doesn’t apply to them. Those people have included a group that arranged to meet at 4am last Tuesday near Rob Roy Lane. A local male who got drunk and vented his frustrations with the virus in Albert Town. A group of rock climbers who insist it's ok to meet out near the Motatapu River at the climbing area on Wednesday. A local man who became intoxicated and angry enough to assault his 10 year old daughter on Thursday, and lastly a group of mountain bikers driving out to the Treble Cone area on Saturday. A large number of these people are aged under 30 years old! Local Police have attended six family harm incidents over the same period, so if people are finding it difficult at the moment, remember to be kind to each other, be creative and know that if we keep our eye on the ball, we will get through this challenge. It's just that this is new for all of us, it's different, but it will change us for the better. Take care of each other, be kind to each other.

A classic activity for the Easter weekend! Hide eggs (real, chocolate or card) around your home and garden for wee ones to find. Here are some variations of the traditional egg hunt for you to try:
