HACKOFF2024

HackOff 2024 brings together awesome chefs from Wanaka to battle their Queenstown counterparts with the sole aim to save you food and money.

KiwiHarvest, the local food rescue charity, in association with QLDC’s Waste Minimisation Fund have created the campaign to enable people to maximise the food they already have and may end up throwing out.

Two teams of three chefs from each side of the hill are presented with normal household food that can get wasted, like excess greens, leftover fruit from kids’ lunchboxes and excess bread and they then must demonstrate a hack to extend the life of the item and cook up a delicious meal incorporating it.

The Incredible Importance Of Planted Forests

Forests are wonderful things, providing a huge range of products and services and a home for biodiversity. But the outlook for natural forests is grim. This is why planted forests are critically important. Everything that can be made with fossil-based materials today can be made from a tree tomorrow.

Dr Tim Payn will explain what planted forests can provide in terms of traditional products such as timber, ecosystem services (clean water, recreation, carbon storage) and emerging products to replace fossil-based materials (aviation fuel, bioplastics). Tim is Principal Scientist at SCION in Rotorua, and past Professor of Sustainable Forestry. He chaired the Technical Advisory Committee of the 12-country Montreal Process Working Group.

Ingredients

• 1 can of reduced cream

• 2 packets of onion soup

• 400-500 grams of grated cheese

• 2 loaves of sandwich bread

Method

• 1 onion • 250 grams of cream cheese • fresh chives • 1-2 tablespoons of wholegrain mustard

• Mix reduced cream, cream cheese, mustard, onion, chives and onion soup in a bowl. Add grated cheese and mix through

• Add 1/4 cup of boiling hot water to help mix

• Spread mixture generously over the bread slices

• Roll the bread slices up into logs and then place on a baking tray

• Bake at 180°C oven for 12 to 15 minutes or until golden brown

• Spread generously with butter before eating
