DIRECTIONS

INGREDIENTS

In large bowl, combine flour, baking powder, and salt. In separate large bowl, with mixer at low speed, beat butter and sugar until blended. Increase speed to high; beat until light and fluffy, about 5 minutes. Reduce speed to low; beat in egs and vanilla until mixed, then beat in flour mixture just until blended, occasionally scraping bowl with rubber spatula. Divide dough into 4 equal pieces; flatten each piece into a disk. Wrap each disk with plastic wrap and refrigerate overnight. Preheat oven to 180°C. Remove dough from refrigerator. On lightly floured surface, with floured rolling pin, roll dough until slightly less than 1/4 inch thick. With floured 3-inch to 4-inch cookie cutters, cut dough into as many cookies as possible; reserve trimmings. Place cookies, 2 cm apart, on two ungreased large cookie sheets. Bake until edges are golden, 12 to 15 minutes, rotating cookie sheets between upper and lower oven racks halfway through. Transfer cookies to wire rack to cool. Repeat with remaining dough. When cookies are cool, prepare icing: Place 1 x egg white in a bowl, beat until soft peaks form. Gradually add 1 cup sifted icing sugar and then add food colouring if desired; then get creative with decorating!

Kelle Sloane is a mother on a mission. The 30-year-old has some big ideas on how parents and young people can live better in Wanaka. Christmas parties are being organised, and as part of the ‘to do list’ you will need to arrange taxis or a ride home. Celebrate in moderation as excessive drinking and silly stuff will only end with unwanted drama. Here is a summary of some of the happenings over the last week: On 29th November, broken glass littering the Wanaka Primary School car parking area was reported. Anyone hearing smashing of bottles are asked to call Police. A local man was charged with burglary and a number of other offences and is off to Court. On 1st December, a theft was reported at a Lakeview Tce, Hawea property by the owner. On 2nd December, three local drivers were suspended from driving for excess demerit points (100 or more). A theft was reported by New World and the person can no longer shop there for two years. On 3rd December, a local driver was involved in a minor vehicle crash in Ardmore St and located in Albert Town. He has been charged with a number of offences including a very high Breath test reading. Later that evening a male was refused entry into a licensed premises due to intoxication and when attempting to climb the back fence, did a face plant into the planter box. He was dealt with by Police. Also that night a young male from Gore was found intoxicated climbing the Xmas tree at the Wanaka Hotel and is now off to Court to explain his poor arborist skills to the Judge. On Sunday the 4th December, a local male driver was charged with Refusing to Provide a Blood Specimen to Police, and heads to Court. On Monday 5th December a 60yr old male was assisted by St John and Coastguard when he became unwell on the Waterfall Creek walking track at Damper Bay.
