Tame the Wild Taste with Heinkel’s Another season-extender some don’t immediately think of: “You can put any of the deer products in the freezer and eat them year round,” says Wes. “We have a lot of customers doing that.” Deer processing in general works out economically (you can process a deer into burger for only $1.05 to $1.10 a pound), but when you add that in, how can you not win? And don’t think it’s limited to our white-tailed friends. Heinkel’s will process all kinds of meat— everything from bear to elk to buffalo, ducks and geese. “We can make just about anything,” says Wes. You can’t call it a best kept secret when it’s a best seller, but outdoor enthusiasts have one heck of a treat right here at Heinkel’s, Decatur’s legendary meat packing company. Yep, the hot dog purveyors take it to a new level every fall, with some of the best deer products out there. Bring them in skinned, boned or just field dressed, and they’ll make your deer products to order – as long as you have a legal permit, of course. The menu is vast and tasty: summer sausage, bologna, jalapeno & cheddar bologna, slim sticks, jalapeno & cheddar slim sticks, Polish sausage, bratwurst, Italian sausage, breakfast sausage, seasoned roasts. The biggest seller? The jalapeno and cheese venison bologna—is it any wonder? But the latest on everyone’s order is something you won’t find anywhere else. “With the success of our jalapeno & cheese – we were Grand Champion in 2013 – we’ve introduced the first ever venison hot dog,” says Wes Heinkel. “ I don’t know anywhere else you can get it.” They process about 2,000 whole deer a year, but don’t think that’s all that’s happening in the fall. “With wiener roasts and campouts and all of the other things going on, we still sell a ton of wieners this time of year,” says Wes. “It’s actually a big season for us.” Sausage stays popular through the cool-down, too, and when the temperature really starts dropping, the Christmas hams come back.
Processing deer with Heinkel’s is easy. They receive deer during the first two shotgun seasons from 7 am to 7 pm all weekend. They keep weekend hours for bow hunting from October 1 to midJanuary. You can bring them to Decatur, or drop at their trailers in Effingham or Vandalia. If you’re dropping in Decatur, you’re typically looking at about 3 weeks turnaround. Southern Illinois dropoffs will be back at the same location for pickup in January. “We pride ourselves on the highest quality at the most reasonable price,” says Wes. As their slogan says, “We tame the wild taste!” So everyone’s a wiener! (Sorry, couldn’t resist.)

Adventures in Art “Do not fear mistakes—there are none.” - Miles Davis I’ve seen students of all ages crumple their paper or squash their creation in disgust, toss it in the garbage, ready to give up. I’ve dealt with tears, shutdowns and even anger when students have become frustrated with their artwork. Often their attitude is that they just aren’t good at this so why try. Because a fear of failing or making a mistake often holds people back, one of the points I stress to my art students, whether they are nine or 90, is that there is absolutely nothing wrong with making mistakes. A mistake in art can become a beautiful success. You can turn that mistake into something you meant to do. You figure out what you need to do to make it work. This problem-solving process is so important and ultimately so rewarding. Having an understanding of art, its language, its tools and their uses gives you the chance to take that mistake and turn it around, to see it not as a mistake but as an opportunity to approach a problem in a new way. This is one of the many benefits of art, and it extends well beyond the creation of art and into all areas of life.

With opportunities to midnight fish at Rock Springs Nature Center, I set out to find a good source for night time fishing supplies. When Mike and Joan at Mikes Tackle World say, "If we don't have it, you may not find it," you better believe them. I was amazed at the sheer volume of fishing tackle in their shop. They have more lighted bobbers than I had room for, so I grabbed two styles. Get geared up and head out to Rock Springs for your next family-friendly midnight fishing outing: Friday, Sept. 19, 10pm - midnight Bring your fishing equipment to Rock Springs Conservation Area for a unique chance to fish the cattail ponds at night. Bring lit bobbers and worms for bait for midnight fishing from 10pm to midnight. Please dress for fishing at the pond; clothes will get wet and dirty. (Meet at the Information Shelter–Rock Springs Nature Center). Fee is $5/person, ages 8+. Fishing licenses are required for those ages 16 and up. Reservations are required.

Hungry McGee Smoked Snack Sticks and Jerky Bites Move over, Slim Jim--there’s a new meat stick in town: Hungry McGee Smoked Snack Sticks and Jerky Bites, distributed locally by the Decaturbased Pepsi Refreshment Services, Inc. (one of only two distributors in the state). I found mine at the Billingsley BP gas station in South Shores, but you should be able to find them at other gas stations around town.
The differences in taste are subtle but noticeable. My favorite happened to be Sweet ‘n Sassy since it had a real spicy kick. Jalapeno is nowhere near as spicy as it sounds, and as a fan of bacon plus anything, I also would recommend the Peppered Bacon flavor. I know a meat stick as a snack may sound simple, but that’s one of the benefits of it, too. It’s meat. And it’s a stick. You know exactly what you’re getting. I can respect that. Not all foods have to be fancy or full of complex favors to be appreciated.
Now, I’ve always thought that beef jerky was a snack suitable to many on-the-go outdoor activities, from tailgatin’ at local sporting events to hikin’ the trails to campin’ with some friends. Speaking of friends, any friend of The Food The next time you plan an outdoor adventure, Dude knows that I’m a bit of a “connoisseur” why not give ol’ Hungry McGee Smoked Snack about meat sticks. It all started when I was a Sticks a try? young dude, and I used go fishin’ with Pa Dude and Grandpa Dude. We’d take the boat out onto the lake, and one of our favorite snacks to bring with us was beef jerky. In fact, I had uncles who even made their own. Since the Food Dude is gettin’ on in his years and needs to watch his health, it’s good to know that Hungry McGee Snack Sticks contain no MSG and generally have half the calories and fat of a single Slim Jim (90 calories, 7g of fat vs. 170 calories, 14g of fat). The Hungry McGee website boasts, “Our USDA inspected and approved Snack Sticks are made from lean cuts of tender meat, seasoned using our award winning blend of herbs and spices, and slow wood smoked for natural goodness!” Those herbs and spices have resulted in six flavors – Original, Teriyaki, Jalapeno, Sweet ‘n Sassy, Peppered BBQ and Peppered Bacon. A single smoked snack stick (28g) costs $0.99, and a bag of jerky bites is $2.99. I tried the sticks and the bites, and both are delicious, but I gravitated toward the bites since I like a little somethin’ extra to chew on. Not to mention, more of the flavor comes through when you’ve got bigger pieces to work with.

Get out, get fit, get some fresh air, get some quality time – whatever your motivation, taking a hike can hit all the high points. And you can do it whether you’re a veteran trailer or a newbie just breaking in your boots. Opportunities abound in Decatur and its surroundings, and there’s more than one way to hit the trail.

forest through the trees at one of many nearby outdoor venues. 24 miles of trails await you through the five conservation areas of Macon County Conservation District – Rock Springs and Sand Creek in Decatur, Fort Daniel in Mt. Zion, Friends Creek in northeast Macon County and Griswold in Blue Mound. “The best time to go on the trails is coming up – that’s autumn, when it’s nice and crisp and clear and all the leaves are brightly colored,” says Carl Brady, a volunteer trail monitor. The 2.25 mile River Trail, which Carl monitors, is Rock Springs’ most popular, giving you the chance to see the Turtle Ponds and the site of the old Rock Spring Bottling Plant. Nearby Spitler Woods State Natural Area in Mt. Zion provides another great alternative, with a 150-acre nature preserve and 3 miles of trails for all levels. “Since it’s an old growth forest, there are lots of big trees, some 250 to 350 years old,” says Ranger Mike Vannoy, “and the sycamore trees with their white bark are known as the Ghosts of the Forest.”

The Corn Desert Hiking and Adventure group, a 550-strong meet up group, rallies Central Illinoisans monthly for activities in the great outdoors. “Our members range from 18 to well over 60,” says lead organizer Bonnie Wyatt. “We’re just a bunch of people who enjoy the outdoors…hiking, backpacking, kayaking, white-water rafting, caving, rock climbing.” Founded by a local outdoor enthusiast, the group carries on and thrives through meetup, an online site dedicated to helping neighbors get together to learn something, do something, share something. (Side note: It is not the dating site.) With about 40 members active at any given time, the Corn Desert Hikers strike out across the Illinois terrain. “We’ve got grad
students from U of I who are from foreign countries and people like me who were raised in Central Illinois,” says Bonnie.

Each trip manifesto (posted online) includes suggestions for supplies and equipment, along with descriptions of difficulty and recommended ability levels. They suggest you wear hiking boots (not just tennis shoes), be able to walk 5 miles and be physically able. Beyond that, the more the merrier. “We’ve had people who’ve never camped before,” Bonnie says, “and we helped set up their tent and gave them a list of what to bring. We’re all here to have fun.” Near year-round appeal comes with membership, too, from events like the Black Friday Campout (“When everyone else is out shopping the day after Thanksgiving, we’re camping out.”) and the Freeze Your Butt Off Camping Trip (always on Super Bowl weekend, always in tents and sometimes down to 16 degrees). Bottom line: If you’re looking to explore the great Corn Desert (what the rest of us call central Illinois), you couldn’t get better partners!

Say hello to Glamping, where you can focus on having a fabulous time resting, relaxing, partying and playing. For local Glamper Tricia Sprague, Glamping is a way to take the old and give it new purpose. She calls her style "Comfort Vintage" and brought this campsite to life in about 20 minutes. Whether you’re an aspiring Katniss, an expert marksman or just a sometime shooter, you’ll find your target in Macon County’s many clubs and ranges. In fact, Decatur is home to what most consider the oldest shotgun shooting sports club in Illinois. Founded in 1890, the Decatur Gun Club (DGC) has been around nearly as long as clay targets. Membership at the DGC, which serves food for members every Sunday, is $70 and gets you entry to every league the club offers on its
