A Note From the Editor Sometimes it feels greedy to enjoy the beach so much during the fall season. The summer crowd is gone leaving behind light traffic, a more tame sun beaming down at 92 degrees or less, little to no wait at your favorite seafood restaurant, football on a flat screen at every oyster bar, watering hole, or hideaway of choice, and miles of beautiful, white beaches sparsely dotted with human forms. Indeed, I’m sure it IS greedy being a local this time of year. September kicks off a seven month stretch of bliss for locals. Visitors and vacationers may believe they’ve moved their clocks to “beach time” during their summer trips, however the locals know that September to March is the time to enjoy “island life” with thousands of restaurants and businesses at their fingertips. It is our pleasure to bring to you our very first stand-alone publication of Beach Bits. Inside, you will find everything you love about our previous tabloid-sized publication combined with money saving deals from our popular Coupon Bytes. We’ve added more content and coupons for our readers and advertisers alike, making Beach Bits an interesting read and a prime location to showcase local businesses. We would love to hear from you! Preparation:

Naturally Making all natural household, beauty products...

Why pay for a storebought face mask when you can use basic ingredients found around the house to make your own simple, hydrating masks and scrubs? Masks should stay on for 10-15 minutes. I love washing masks off with a steaming hot washcloth. Run the washcloth under hot water, squeeze out the excess water and then press to your face for a full minute. Then, gently wash off the mask in a circular motion.

Oatmeal and Yogurt Face Mask

This face mask is suitable for all skin types and is super simple to prepare. It will cleanse and rejuvenate your skin. Prep Time: 3 minutes Total Time: 3 minutes Ingredients: 1 tbsp oatmeal, finely ground 1 tbsp live, organic yogurt (skip the flavored stuff) A few drops of honey Preparation: Add the yogurt to the oatmeal in a small bowl and mix together. Warm a few drop of honey. To do this, warm a spoon under hot water for a minute, then add a few drops of honey to the spoon. Stir the honey into the yogurt and oatmeal mixture. Apply the mask to the face. Leave it on for 10 minutes, then rinse off with several splashes of warm water. Follow with a warm washcloth. Apply moisturizer.

Coffee & Cocoa Facial Mask for All Skin Types

Coffee and cocoa masks have long been a favorite of beauty aficionados. As a combination, they decrease puffiness in the face and the eye area, brighten skin and wake up a dull-ish complexion (hello caffeine!). What I love most about this mask is that the ingredients are so readily available in the average person’s kitchen and you can use so many substitutions based on what’s currently in your cabinets or fridge. While coffee and cocoa powder are the staples of this popular mask, you can tailor it for your skin type by adding yogurt or cream and honey if you have dry skin or lemon juice if you have oily skin. If you have super dehydrated skin, oils work as a substitute for dairy. Ingredients: 4 Tbsp. finely ground espresso or coffee beans (I use my own grinder, but already ground coffee and even instant coffee work, too) 4 Tbsp. unsweetened cocoa powder (your basic Hersheys is perfect here) 8 Tbsp. dairy product. Choose whole milk, heavy cream, yogurt (must be unflavored!), almond milk or coconut milk. Use less dairy if you like a thicker paste. Substitutions are allowed: Try an egg instead of dairy if you are an egg mask lover, or substitute oils, such as olive oil, extra virgin coconut oil or almond oil if you have dehydrated skin. If using oils, halve the amount or it will be too runny. 2 Tbsp. honey (if you have dry skin) or lemon juice (if you have oily skin)

If you have whole beans, finely grind beans in a grinder. Remember, beans should be finely ground so they don’t scratch your face. If you just made coffee, you can use the freshly brewed coffee grounds, although they won’t contain as much caffeine. Mix coffee and cocoa powder in a bowl. Add the dairy product and stir until a smooth paste forms. You can use less dairy if you like a thicker paste. Stir in the honey. (I like to warm up the honey in a warm water bath or in the microwave so it mixes better). Apply the paste to your clean face and neck. Let the mask dry. Wet a washcloth and press it to your face to loosen the mask, then rinse with warm water. If you have sensitive skin, you should avoid rubbing your face because the coffee grounds could potentially scratch your skin. It’s really up to you, you’ll get a feel for what your skin can take and how finely ground the coffee is. You can store the leftover paste in the refrigerator for several days.

10 Ways to Organize your Back to School Home

N

ow that the summer is almost over it is time for families to start thinking about back to school ideas for their fall home. While many parents think back to school organization only involves the kids’ rooms and play areas, the reality is “back to school” time affects your entire home. From the moment you wake up in the morning and rush to get the kids out to the bus stop to when your kids come home and do their homework, organization is key in your family home. If you’re trying to think of how to organize your back to school home, look at these 10 ways that are sure to start the year off right!

1. Organizing the heart of the home: the kitchen If you count how many times you and your family members go in and out of the kitchen a day, you would be astonished. They don’t call it the “heart of the home” for nothing. On school days your kitchen is the scene for hurried breakfasts, grab and go coffees and in the evening can turn into homework central before dinner. Organize your kitchen based on your family and lifestyle. Depending on the age of your children organize sections of the refrigerator for school-aged children who pack their lunch. For teenagers dedicate a pantry shelf to their food and keep handy “after school” snacks in an area where children can reach them without asking for assistance. Encourage the family to gather around the dining room table for family meals as much as possible. 2. Keep your family room a neutral territory For many families back to school time means a home that is cluttered with school supplies, books, toddler toys and chaotic family belongings throughout each room of the house. Dedicate your family and living rooms to a neutral territory. This will help provide a space where kids and parents can unwind and enjoy television, share a conversation, without the worriment of disturbing other family members. Create essential organization for video games, books, and magazines in storage ottomans, bookshelves, built-in entertainment systems that allow for the family to “hang out” at the right times. 3. Every room in your home can use back to school organization: From your entryway and mudroom to your home to the laundry room or basement, your family goes through a lot of routines during the course of an average school day. Ensuring that each room in your home is decluttered from the summer and is ready for fall is the first step to getting an organized home. Assess your family’s lifestyle and their school schedule to determine what areas of your home should be tackled first. Any room that you and your kids waste time looking for items: kitchen, bathroom, laundry room, kids’ rooms… need to get organized! 4. Point of entry – The key to getting out of the house on time: Believe it or not, the success of you getting out of the house each morning on time rests largely on how organized your home is. In your home assess your front door entry and foyer, mudroom or utility room and/or the back door from the garage. Whichever is the point of entry for

5. Start off small and work up to total organization: Just like getting into a routine for back to school schedules, the same is true for your home’s organization. Start off small by decluttering areas that have old homework such as kids’ desks and take down crafts and artwork from last year to make way for the new. Decide how you want to archive your children’s work. A few pieces can be framed and displayed in your home, while others can be scanned or photographed and kept electronically to keep your home clutter free as the school years go on.

Organizing the dirtiest room of your home, the laundry room: While many would argue that bathrooms are the dirtiest room, the laundry room sees its share of dirt and grime, especially with school-aged children. Back to school time means extra-curricular sports uniforms and playgrounds have their share of dirt and grime for your weekly laundry. Organize your laundry room with individual hampers per family member to keep clothes separate. Consider creating a laundry schedule for the family to avoid excessive traffic in your laundry room. Organize cleaners and detergents in cabinets or shelving above, and have older family members pitch in with the folding and sorting of clothes.

7. Tackling your kids’ closets: Let’s face it, when it comes to back to school organization – getting them out of their rooms is key, right? Start off this season by purging old clothes in their closets. Whether too old, too small, or out of season, these clothes can be donated to charity or given to younger siblings. Go through their closet with your kids, it will solve the “Mom what did you do with my favorite sweater?” yells in the morning and will help them keep up with their own belongings. Organize clothes by school functions, organizations, sports and other activities to ease the time in finding outfits to wear in the morning.

Devise an area now for your kids to be creative but also to study and be productive. Bathroom organization can help you and your kids Children and adults spend more time in the bathroom than almost any room in the entire house. Second after the kitchen, your bathroom and the kids’ bathroom should be given a lifestyle makeover. Meaning, determine what keeps you and your kids in the bathroom so long. Organize toiletries for kids in marked baskets, or fun color washable plastic bins for younger children and their bath essentials. Older kids and teenagers can store hair accessories, styling aids, makeup and other toiletries on high shelving in adjacent linen closets or built-in shelving. Behind the door storage is helpful too and can help cut down time fumbling for bath items in the morning.

Cool Cucumber Salsa Ingredients •2 c. finely chopped seeded peeled cucumber •1/2 c. finely chopped seeded tomato •1/4 c. chopped red onion •2 T. minced fresh parsley •1 jalapeno pepper, seeded and chopped •4-1/2 t. minced fresh cilantro •1 garlic clove, minced •1/4 c. sour cream •1-1/2 t. lemon juice •1-1/2 t. lime juice •1/4 t. ground cumin •1/4 t. seasoned salt •Tortilla chips Directions •In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips. Yield: 2-1/2 cups.

After a few weeks, the cutting should form roots.

Wit & Wisdom To reduce dandruff, massage your scalp with aloe vera. A bit of background Aloe vera is a succulent-like plant with gel-filled leaves. This gel is associated with many healing benefits, and can be used both internally and externally. The healing benefits of aloe vera have been recognised by cultures around the world for millennia, and the plant was known as the ‘ultimate panacea’ to the ancient Greeks. Aloe vera is most commonly used for the relief of many skin complaints, including acne, insect bites, burns, warts - and sunburn. Some people like to keep their own aloe vera plants so they always have a fresh supply of gel when needed, but for those who prefer pre-made products, aloe vera is available in pure gel form, and also in a variety of creams, lotions, capsules, juices and other products. How Aloe Vera Helps Sunburn Aloe vera is one of the most popular and effective natural remedies for sunburn. The gel contains a wide variety of nutrients and other substances, including powerful anti-inflammatory agents that have a beneficial cooling effect on the skin. These include aloectin B, a chemical that has anti-bacterial and anti-fungal properties, and also stimulates the immune system. Aloe vera is also good for pain relief. Using Aloe Vera For Sunburn If you are using a fresh leaf for your aloe vera sunburn remedy, cut it open, and apply the pulp directly to the skin. You could also peel off the leaf’s top layer, and rub the inside directly on the skin. Note that there is a yellow sap at the end of the leaves (bitter aloes) - don’t apply this to the skin (or take it internally - it has laxative qualities!). Once applied, the gel has a rapid cooling effect, and forms a protective layer over the burn, reducing the risk of infection. Refrigerating the leaves first (not the whole plant) enhances the natural cooling effect. Reapply as necessary, as aloe has a high water content, and will evaporate. After the initial burning sensation has cooled, it is best to mix the aloe vera with an oil such as vitamin E (just pierce a capsule and squeeze it out), in order to balance out the aloe’s natural astringent effect.

5 Tips for Redfish Fishing Along The Gulf Coast If you plan to target redfish fishing back in the marshes along the Gulf coast, here are some things you need to know. They may just put you on some fast action! The waters within interior salt and brackish marshes across virtually the entire Gulf coast hold red drum throughout most of the year. FOLLOW THE TIDE Periods of slack tide – either on the low end or the high end – are usually best spent taking a nap or returning to the marina for a bite. Just be sure you are back on the water when the tide begins to move again. When it starts to fall, target the creeks and cuts. These can be worked effectively by either moving along their shorelines where the falling water is pulling bait from the recently flooded grass or by anchoring at the point where a cut drains a pond. There, the current created by the water falling through the cut pulls prey from the pond. Redfish are well attracted to these feeding stations. BE STEALTHY As a rule, redfish in open water aren’t all that bright, and some of them can act like they want to be caught. However, if you assume the fish you encounter in the marshes are so afflicted, you won’t catch many of them. If you are averse to paddling, the water’s depth is sufficient and there isn’t a profusion of submerged grass in the area, a bow-mounted trolling motor can be used effectively. But it should be set on the lowest speed that produces headway. Whatever method of propulsion you decide on, go slowly. While that allows you to search for fish more effectively, the main reason is to prevent the boat from creating large pulses through the water that can be detected by the fish, alerting them that something is not quite right. Reds often simply swim out of the way of a boat that is just creeping along, not in the least bit alarmed. Others caught unaware may bolt, but after they dash off a ways they occasionally seem to forget what all the fuss was about. A cast at fish that respond to the boat’s presence in these manners can result in strikes you would have not received had your boat been pushing a large wave through the water. LOOK FOR FISH One of the most exciting things about fishing the waters within interior marshes is that much of it is done by sight. As you move stealthily along, always look and listen for signs of fish. In clear water, redfish can be detected relatively easily beneath the surface. For best results, work the up-wind shorelines where emergent vegetation creates a calm surface. Move along in the direction allowing the best sub-surface visibility. Wear amber or yellow polarized sunglasses and a cap that is dark green on the underside of the bill.

If you are moving along slowly and stealthily, you can spot these fish quite close to the boat, so be prepared for a short, quick cast with minimal movement. PROSPECT IRREGULARITIES Small grass points in a creek’s shoreline may extend into water that is slightly deeper than that found along the adjacent bank. Here any current may be slightly stronger, causing bait to be carried along by the flow. Such a feature makes a good ambush point and should be prospected with a cast or two wherever found. During low tide you may notice some shells on the bank of a creek. These may extend well out into the waterway, providing protection for prey species. Never pass up an accumulation of shoreline shells without making a cast or two across the water next to them. Finally, fish may be found anywhere in ponds where the bottom is carpeted with thinly growing submerged grasses. But places where the grass grows in thick patches – often matting on the surface – tend to limit the area used by the fish. Take plenty of time looking around and casting a pond that has clumps of matted grass scattered throughout it. USE SMALL ‘LOUD’ LURES Some of the hottest lures going these days for reds in interior marshes are spoon flies. They are not really flies but were created for use with fly rods. These lures do look and act like a single-hook spoon. They are very light and sink quite slowly, usually have a mono weed guard. The lures wobble and flash about, emitting audible as well as visible imitations of a baitfish. Though small at 1 1/4 inches, the redfish absolutely love them! But day in and day out, the most reliable lure is a spinnerbait created from a gold, No. 3 1/2 safety-pin spinner, a 1/8-ounce jighead, and a 2 1/2-inch grub. With that you can make a relatively delicate presentation to a crawler, buzz it past a tailer at the edge of a thick patch of grass, or prospect the intersections, points and accumulations of shells along a creek’s shoreline.

Macadamia Nut Crusted Mahi Mahi Ingredients 5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts 1/2 cup panko (Japanese-style bread crumbs) 2 tablespoons all-purpose flour 1/4 cup butter, melted Vegetable oil, for brushing foil 4 (6 to 8-ounce) mahi mahi fillets Kosher salt and pepper 2 tablespoons coconut milk Directions Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside. Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown. Remove from the oven and allow to stand 10 minutes before serving. Total Time: 35 min ~ Prep: 10 min ~ Inactive: 10 min Cook: 15 min ~ Yield: 4 servings

Baked Shrimp Scampi Ingredients 2 pounds (12 to 15 per pound) shrimp in the shell 3 tablespoons good olive oil 2 tablespoons dry white wine Kosher salt and freshly ground black pepper 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature 4 teaspoons minced garlic (4 cloves) 1/4 cup minced shallots 3 tablespoons minced fresh parsley leaves 1 teaspoon minced fresh rosemary leaves 1/4 teaspoon crushed red pepper flakes 1 teaspoon grated lemon zest 2 tablespoons freshly squeezed lemon juice 1 extra-large egg yolk 2/3 cup panko (Japanese dried bread flakes) Lemon wedges, for serving Directions Preheat the oven to 425 degrees F. Peel, devein, and butterfly the shrimp, leaving the tails on. Place the shrimp in a mixing bowl and toss gently with the olive oil, wine, 2 teaspoons salt, and 1 teaspoon pepper. Allow to sit at room temperature while you make the butter and garlic mixture. In a small bowl, mash the softened butter with the garlic, shallots, parsley, rosemary, red pepper flakes, lemon zest, lemon juice, egg yolk, panko, 1/2 teaspoon salt, and 1/4 teaspoon of pepper until combined. Starting from the outer edge of a 14-inch oval gratin dish, arrange the shrimp in a single layer cut side down with the tails curling up and towards the center of the dish. Pour the remaining marinade over the shrimp. Spread the butter mixture evenly over the shrimp. Bake for 10 to 12 minutes until hot and bubbly. If you like the top browned, place under a broiler for 1 minute. Serve with lemon wedges. Total Time: 43 min ~ Prep: 30 min Cook: 13 min ~ Yield: 6 servings

ew i v e R k o o B “Satchel: The Life and Times of an American Legend” by Larry Tye Reviewed by Chris Richcreek Good luck finding a baseball book more enjoyable than “Satchel,” as author Larry Tye does a great job of capturing the entertaining stories surrounding Leroy “Satchel” Paige. Paige’s exploits became famous in the ‘30s and ‘40s even though he was a black man

pitching in the Negro Leagues at a time when Major League Baseball was whites-only. But as Tye explains, “Much that was written over the years about Satchel Paige was engulfed in half-truths and apparitions.” Paige would allegedly do things like tell his outfielders to sit down because he would take care of the opposing batters himself. His fame would help forge an important pathway to breaking baseball’s “color barrier.” In the 1940s, Paige had a key role in a barnstorming tour of black players facing white major-leaguers during the offseason. Those games helped show that blacks could compete with their white counterparts. Tye notes one veteran Negro Leaguer’s observation that although it was Jackie Robinson who opened the door to blacks playing in the majors, it was Paige who inserted the key. Paige would eventually get his own call to “the Show” in 1948, at the advanced athletic age of 42, his greatest years behind him. By the time he finally left a major-league mound behind at nearly 60, he had pitched in the Negro Leagues, Cuba, Puerto Rico and Miami, as well as in six major-league seasons. His on-field exploits fueled only part of the legend. His vices included courting numerous women and spending lots of money. Then there were his famous rules for staying young, the creation of which might have been Paige’s or a helpful writer’s -or both. Yet “Don’t look back -- something might be gaining on you” would become part of American lore. So did Paige, whose life is probably best summed up by a monument at his grave: “Leroy became Satchel. And Satchel became a legend.”
