America is a culture that loves good food. The proliferation of successful cooking shows on TV like “Master Chef” and “Chopped” has given rise to the “celebrity chef.” Yet perhaps the most beloved chef since the advent of television isn’t on TV anymore. That’s Julia Child.

• After graduating, Child tried her hand at advertising while working for a successful home furnishings company. It didn’t last long, as Child was promptly fired for “gross insubordination.” • When World War II broke out, Child volunteered for the Office of Strategic Services (OSS) in Washington, D.C. She performed assignments all over the world, including stays in China and Sri Lanka. • While in Sri Lanka in 1945, Child began seeing her future husband, Paul, a fellow employee of the OSS. Child and Paul married after the war in September of 1946. • Paul and Child moved to France in 1948, when Paul was assigned to work at the American Embassy in Paris. It was there that Child’s love for cooking came into full bloom. She was quoted as saying, “The whole experience was an opening up of the soul and spirit for me . . . I was hooked, and for life, as it turned out.” • In Paris, Child enrolled in the world-renowned “Le Cordon Bleu” cooking school. After six months of training, she chose to open her own school with two fellow classmates. • They named the school “L’Ecole de Trois Gourmandes,” which translates to “The School of the Three Gourmands.” • Child and the other two founders of the school set out to create a cookbook of French cuisine that might be understood and employed by regular folk. • The two-volume cookbook was released in 1961, entitled “Mastering the Art of French Cooking.” The book was incredibly successful, remaining the bestselling cookbook for over five years.

A Favorite “Child” (continued): • “There were some famous women novelists in those days,” Child said, “and I intended to be one.” Alas, though she wrote often and submitted manuscripts regularly to the New Yorker, none were ever published.

• The book has since become a favored teaching tool at cooking schools throughout the world. Yet there was a time when it looked like it might never be published at all. • The writing of the book was a grueling and frustrating 10-year process for Child and her collaborators. She would spend months trying to perfect recipes for just a single ingredient. She wrote to her principal collaborator, Simca Beck, during her frustration: “I’ve just poached two more eggs and thrown them down the toilet.” • The initial draft of the book was turned down by the first publisher, as were many subsequent drafts. Only after offering it to a different publisher, Alfred Knopf, was it picked up for publication. Continued on page 7

Cat Q & A Dr. James Olson - The Meow Doc

Feline Upper Respiratory Infection A cough, a sneeze, snotty nose, eye discharge, trouble eating, not eating and drinking, laying around sleeping, and trouble breathing are all signs that are related to upper respiratory infections in cats. The duration of clinical signs persist for a week to 10 days and then may relapse in the future. The upper respiratory infections are common, highly contagious and infect young cats/kittens in humane shelters (similar to human/infant day care), large breeding operations, outdoor roaming cats or just a casual encounter with a virulent wild strain. Some cats carry the virulent ‘bugs’ for a lifetime and never show clinical signs and other cats show recurring signs. The cat’s immune system and upper respiratory vaccination make the difference in avoiding these diseases. The major clinical signs are troublesome, debilitating but they are often transitory and self-limiting in most cats. Some cats get a single infection with lifetime immunity, others have off/on respiratory flare-ups and a small population have life long serious, chronic, persistent problems with eye discharge, sneezing/coughing, mouth infections and are generally unthrifty. 80% of upper respiratory infections are caused by 2 viruses – 40% have herpes viral infections and about 40% have calici viral infections. The other 20% are caused by Chlamydophilia felis, Bordetella bronchiseptica or other secondary bacterial invaders. To complicate matters underlying feline retroviruses (feline leukemia - FeLV and feline immunodeficiency viruses - FIV) can affect a cat’s immune response and actually trigger chronic upper respiratory infections. The viruses and bacteria can be passed by direct contact or grooming between cats, contaminated food/water dishes or by airborne sneezing. Infection can also be spread from an infected queen to kittens while pregnant or through grooming. Treatment is individualized to the patient. Depending on what is causing the upper respiratory infection, that will determine the treatment plan. Recent advances in DNA (PCR) diagnostics can tell us what is causing the upper respiratory infections. It is important to know what the causative agents are. If herpes virus is the main problem then anti-viral supplements can help, an anti-viral medication is available, immune stimulants, hyper-immune serum, antibiotics for secondary bacterial infections, nebulization and good supportive care are needed. If calici virus is the main problem then immune stimulants, pain medications for mouth ulcers, supplements, antibiotics for secondary bacterial infections, nebulization and good supportive care are needed. Once cats are infected with these viruses the cat has them for life. Primary vaccination yearly can help boost immunity to prevent outbreaks of clinical signs. Every three year vaccine protocols for upper respiratory disease are not sufficient to fully protect against new exposures. Dr. James K. Olson is "The Meow Doc", a nationally recognized veterinarian specializing exclusively in cats. Dr. Olson holds the title of Diplomate, Feline Specialty, from the American Board of Veterinary Practitioners. He is certified to practice nuclear medicine by the State of Colorado Department of Radiaton Safety. His practice is located in Castle Rock, Colorado. The precious and lovely demantoid is the most expensive kind of garnet on the market today. Gemstone lovers value it because of its rarity and its incredible luminosity, brilliance and fire; perhaps that’s why its name means “diamond-like”. Some gemstone lovers claim that a demantoid will continue to glow even in the shade. There is an explanation: the demantoid has a very high refraction – which means it splits the light which comes in through the facets and breaks it down in to a rainbow of colors. Some say it does this better than the diamond. Demantoid specimens come in several shades of green, with the rare deep emerald green being the most precious. Large demantoid are seldom found and always expensive. Most are very small, usually less than two carats and most barely exceeding one carat. Demantoid are found in Russia (the most sought after) and Namibia.

Q: I’m moving into my first apartment, and my dad said that I should have some basic tools around for plumbing problems to keep damage from happening while we’re waiting for the repairman. What are the best tools to have to take care of plumbing emergencies? -- Tamara in Tuscon, Ariz. A: The most indispensible tool in the apartment plumbing toolbox is, in my experience, the plunger. This inexpensive piece of equipment can stop toilets from overflowing and unblock sinks and shower drains without doing damage to the pipes. When choosing a plunger, go for a basic “force cup” model (this is the classic plunger with a simple bell), which works best on sinks and drains. If you want something a little more powerful for toilet clogs, pick up a second plunger with a center cone, which can increase the vacuum when plunging toilets. These don’t fit sink drains very well, though. It’s also good to keep a few more tools around for other plumbing-related work. While many apartment management companies will provide more than emergency repair -- they’ll also install the shower head you want, or help with minor repairs like dripping faucets -- some landlords don’t provide more than emergency service. So add these to your plumbing toolkit: --An adjustable wrench and/or channel-locking pliers, which can fit varying widths of pipe. --Flat-head and Phillips-head screwdrivers. --An “offset” screwdriver to help you reach screws at weird angles. --Spare washers, o-rings and screws. --Electrician’s or duct tape, and plastic or rubber sheeting that can be cut to size and wrapped around a leaky pipe for a temporary repair while waiting for the handyman. --Teflon pipe tape, used to seal pipe threads. If you’re interested or have permission to make more heavy-duty adjustments or repairs, adding a couple of sizes of pipe wrenches to the toolkit is helpful, as is purchasing a valve-seating tool, which cleans valve seats of sink faucets (a handy tool when fixing a leaky faucet). HOME TIP: Group your plumbing repair tools in a separate box from standard home repair tools so that you’ll be able to grab everything you need without sorting through all your tools.

CHILDS (continued): • Child’s first television appearance was on a humble Boston public television station in 1962. She cooked an omelet on air. After a surprisingly positive and vocal response, she was invited to do a series. Her initial pay was about $50 a show. • Child’s show, “The French Chef,” grew quickly beyond those humble beginnings. Soon after its initial airings, the show was syndicated to 96 stations. The show was both a commercial and a critical hit. In 1964, Child was presented with the George Foster Peabody Award for her work on the show. Two years later, she was given an Emmy Award as well. • “The French Chef” was produced and directed by Russ Morash. It ran for 199 episodes between 1963 and 1966. • “The French Chef” was just one of many shows Child appeared on during her long career. Other programs included “Julia Child and Company,” “Julia Child and More Company” and “Dinner at Julia’s.” She was also a regular guest on “Good Morning, America.” • Child wrote many other cookbooks after her initial success. Among these were “In Julia’s Kitchen with Master Chefs,” “Baking with Julia,” “Julia’s Delicious Little Dinners” and “Julia’s Casual Dinners.” Many of these were accompanied by their own TV specials. • Julia Child died on August 13, 2004. She was just two days shy of her 92nd birthday. She was remembered by her family and friends as a person of great generosity who loved to teach others. Though she once mourned her “lack of talent,” Child left an indelible legacy in the kitchens of people around the world. • In addition to inspiring both the book and film, “Julie and Julia,” Child’s life inspired an exhibit entitled “Julia Child’s Kitchen” to be installed at the National Museum of American History. • The installation is 20 feet by 14 feet. These were the dimensions of Child’s kitchen in Massachusetts. Though the walls and floor were created for the exhibit, everything else found there is from Child’s own former kitchen. The arrangement of everything found inside was assembled exactly to replicate Child’s original workspace.

Why is Brushing With Toothpaste Important? Brushing with toothpaste is important for several reasons. First and foremost, a toothpaste and acorrect brushing action work to remove plaque, a sticky, harmful film of bacteria that grows on your teeth that causes cavities, gum disease and eventual tooth loss if not controlled. Second, toothpaste contains fluoride, which makes the entire tooth structure more resistant to decay and promotes r e mineralizat i o n, which aids in repairing early decay before the damage can even be seen. Cindy Rose

20% OFF

Third, special ingredients in toothpaste help to clean and polish the teeth and remove stains over time. Fourth, toothpastes help freshen breath and leave your mouth with a clean feeling.

Is brushing with toothpaste enough to fight cavities and gum disease? No. Although brushing thoroughly after each meal helps, flossing your teeth every day to remove plaque and food particles between teeth and at the gumline is just as important. Studies show that plaque will regrow on teeth that are completely clean within three to four hours of brushing. When you own stocks, you know their prices will always fluctuate. To help ease the effects of this volatility on your portfolio, you could add other types of investments, such as bonds. Yet bond prices will also rise and fall. But there may be — in fact, there should be — a big difference in how you view the ups and downs of stocks versus those of bonds. Any number of reasons can cause stock prices to go up or down. But in the Cindy Rose case of bonds, prices go up and down largely, though not exclusively, for one reason: changes in interest rates. Suppose you purchase a bond that pays 4% interest and then, a year later, newly issued bonds pay 3%. You could now potentially sell your bond for more than its face value because it provides more income to investors than the new bonds. Conversely, if newly issued bonds pay 5% interest, the value of your existing bond would drop because it’s unlikely that someone would pay full price for a bond that provides less income than newer bonds. When you own stocks, or stock-based investments, you want their price to rise because you probably plan on selling those stocks someday — and you’d like to sell them for more than you paid for them. But it’s not so cut-and-dried with bonds. While some people may indeed purchase bonds in hope of selling them for a profit before they mature, many other investors own bonds for other reasons. First, as mentioned above, owning bonds can be a good way to help diversify your portfolio. Second, and probably more importantly, people invest in bonds for the income they provide in the form of interest payments. And here’s the good thing about those interest payments: They’ll always continue at the same level as long as you own your bond, except in the rare case of a default. (Although defaults are not common, they can occur, so you do need to take a bond’s “credit risk” into account before investing.) Thus, if you plan to hold your bonds until they mature, you don’t have to worry about a possible drop in their value. But if you need to sell your bonds before they mature, the price you receive will depend on current interest rates. You can’t control or predict interest rates, but you can help soften their impact on bond prices by building a “ladder” of bonds with varying maturities. Then, if market interest rates rise, you can sell your maturing short-term bonds and purchase new ones at the higher rates. And if market rates fall, you’ll still have your longer-term bonds working for you at higher rates. (Usually, but not always, longer-term bonds pay higher rates to compensate investors for incurring inflation risk over time.) Keep in mind, though, that the investments within your bond ladder should be consistent with your investment objectives, financial circumstances and risk tolerance. Whether you own your bonds until maturity or build a bond ladder, you can do something to protect yourself from price movements. And that type of control can prove valuable to you as you chart your course through the investment world. ¥ Filmmaker George Lucas is arguably best known for his “Star Wars” franchise, but he also directed “American Graffiti.” During the making of that earlier film, he designated each reel of film with an R before the reel’s number, and each instance of dialog was prefixed with a D. At one point during the sound mixing, the sound designer needed to use Reel 2, Dialog 2, and so asked for “R2D2.” Lucas liked the sound of it so much that he used it for the name of a robot character in his later work.
