Just as “Popeye” from the cartoon of days gone by ate his spinach for strength, we should eat plenty of leafy green vegetables as part of our everyday diet. This Tidbits look at leafy greens that are good for you, just as your mother said! • The National Cancer Institute reports, “foods rich in vitamins A and C have been associated with the reduced risk of certain cancers.” Many leafy green vegetables are excellent sources of these two vitamins as well as vitamins K and B, calcium, iron, fiber and more. Greens are naturally low in sodium and calories. For example: a cup (0.2 l) of raw spinach has only 14 calories and a ½ cup (0.1 l) serving of cooked collards has only 38 calories. All greens are fat and cholesterol free. • According to Jill Nussinow, registered dietician, culinary educator in Northern California and author of a very informative book, “The Veggie Queen,” “Greens are the No. 1 food you can eat regularly to improve your health.” • Keep these in mind when eating greens: “Green is good. Dark green is better. Organic dark leafy green is best.” If you grow your own — and they are easy to grow — you know how your vegetables have been treated.

The top 10 are: kale, collards, turnip greens, Swiss chard, spinach, mustard greens, broccoli, red and green leaf and romaine lettuces (altogether), cabbage, and iceberg lettuce. • There are other nutritional greens not listed above that are widely available in North America. The information available for all greens is immense. We’ll look at some interesting Tidbits for both highly and less popular greens. • Even though it may sound incorrect, all greens are not green! Leafy green vegetables have much color variety, from the bluish-green of kale to the bright “Kelly” green of spinach, to the light, somewhat white of cabbage. • There is even a black cabbage (Cavalo Nero), which is actually a very dark green that is also called Tuscan kale. It originated from the Tuscany region of Italy where it is grown in most vegetable gardens. Cavalo Nero is an essential ingredient in the very healthy signature soup of the region, ribollita. • The Tuscan region of Italy is famous for many culinary things including the cooking term, “Florentine.” This term can be interpreted as the cooking style used in Florence, Italy, but has also come to describe the cuisine that includes spinach as an ingredient. Florentine cooking also uses fresh herbs like rosemary, basil, parsley and thyme. Since Tuscany is close to the coast, Florentine cooking features seafood dishes as well as local boar, rabbit and beef from the regions’ white Chianina cattle. According to folklore, the association of spinach with Florence may have been because of Catherine de Medici, the Italian wife of King Henry II, who reigned in France from 1560-1563. • Supposedly to honor her Italian roots, Queen Catherine introduced spinach to the Court of France and dubbed any dish containing spinach to be “Florentine.” Whether the story is true or not, Florentine is now synonymous with spinach in dishes such as Eggs Florentine, Oysters Florentine and more. • To make for some confusing terminology, “Florentines” refer to a sweet, baked confection that contains no spinach! These Florentines are a European sweet served as a cake, bar or cookie. Examples: Computers and printers can create fascination and fun for a curious feline. Turn on the printer and your cat may rush over to sit on it, lie on it and play with the paper as it comes out. Your cat may want to be your computer buddy every time the opportunity presents. Whereas your other cat flees in terror when you do computer/printer things. Cats respond differently to sounds depending on their personality, experiences and their survival instincts. Some cats can learn to accept the noise and some cats cannot. Cats respond to noise differently than dogs. Dogs use ‘escape behavior’ to run away and hide from thunder and fireworks (freaking out!) whereas cats are scared of unexpected household noises from dishwashers, vacuums, and construction work retreat and hide. Less often do cats get frightened by thunder and fireworks or they will find a safe place until the disturbance passes. Survival and genetics play a strong role in protecting the cat from harm. Some cats are genetically afraid of most things (such as a feral barn cat) and will never adjust to living with humans. Cats will retreat to a safe place and hide to survive.

Pleasure noises: opening a tuna can will bring your cat running from a sound sleep, sounds of play with other cats and opening the refrigerator. Cats adapt to positive noises very quickly and will teach owners to repeat these actions by purring, meows and seeking attention. Cat train people! If your cat is a scaredy cat, let your cat retreat and hide in a safe place of his choosing. Your cat will usually come out when enough time has passed and it is safe to come out. This behavior is natural and this is what happens to cats in the wild. Luring your cat out of hiding by treats or playing with a toy can help soothe the situation. Desensitization with repeated exposures to the noise at low levels and gradually increasing will help adjust your cat to the noise as being normal. Again, some cats will never adjust to certain noises. A newer way of calming cats is by using pheromone collars. Baby boomer trend: asset-based long-term care insurance (Part 2 of 2) These products answer three big questions from consumers thinking about long-term care coverage, says Alyce Peterson, vice president of marketing services for Pacific Life, which introduced Pacific PremierCare in March: What if I need long-term care? What if I never need it? What if I get into this policy and it isn't really for me? What's fueling the asset-based long-term care insurance trend? Slome says today's low-interest rate environment might be fueling some of the demand. Consumers can't earn much on cash they're reserving for emergencies, so they figure they might as well put it into an insurance policy that can provide long-term care benefits worth several times more than the original investment. Or, at the very least, it can provide money to heirs if they never need long-term care. Combination policies have been around since the late 1980s, but they didn't take off until the mid- to late-2000s, when insurers enhanced and repackaged the products. Lincoln Financial Group introduced MoneyGuard Reserve, a universal life policy, in 2005, marketing it as a "live, quit or die" solution with a streamlined application process. Applicants have to answer medical questions, but they don't have to undergo a life insurance medical exam or get blood tests. Last year, Lincoln Financial rolled out MoneyGuard Reserve Plus, now available in most states. The new product did away with elimination periods, so you can collect long-term care benefits as soon as you qualify for them. It also lets you access long-term care when living abroad and provides an option for benefits to increase and keep up with inflation. By the numbers: asset-based long-term care insurance scenario Here's an example of how it works: A 65-year-old nonsmoking man in good health pays a $50,000 premium for a policy to provide up to $180,000 of long-term care benefits. If he never needs long-term care, the policy pays a $56,021 death benefit to the beneficiary. If the insured decides he doesn't want the insurance, his $50,000 is returned upon policy surrender. MoneyGuard sales were up 19 percent in the first quarter of this year over the same quarter in 2011, says Michael Hamilton, vice president of Lincoln Financial Group's MoneyGuard and Institutional Product Management. Peterson says sales of Pacific PremierCare are exceeding expectations. The universal life policy provides two to eight years of long-term care benefits, and it offers inflation benefit options as well as a streamlined application process. A big selling point is the long-term care benefits are tax-free, Peterson says. A consumer who self-insured would have to pay taxes on money pulled out from a 401(k) account to pay for long-term care. Slome says he expects overall sales of combination products to grow as more insurers enter the market, but he doesn't think the products will replace traditional long-term care insurance. Combination policies are out of reach for folks who can't afford to part with a lot of cash all at once. He cautions that most combination products, unlike traditional long-term care insurance, don't include inflation protection, and some offer benefits for just two to three years. Still, he adds, "I think they're a very viable solution today for the right kind of person." Scott McQueen Tsavorite gets its name from the worldfamous Tsavo National Park located in Kenya where only a few mines yield the shining green garnet. In 1967 Campbell R. Bridges, a British geologist was searching for gemstones in Tanzania (East Africa) when he came across some peculiar potato-like nodules of rock. After examining them he realized he had discovered green grossularite, a mineral that belongs to the colorful garnet group. He was impressed at the extraordinary color and superior clarity but the tremendous forces of nature over millions of years had damaged most of the crystals so badly that there were only grains or fragments to be found. Bridges postulated that the geologic seam bearing the gemstones might continue across the border into Kenya. He was right, and in 1971 he discovered tsavorite in neighboring Kenya. Here Bridges was able to register officially and begin to mine the deposit, but Africa would prove a challenge. To protect him self from wild animals he lived in a tree house, and to keep his gemstones from being stolen he used a python to watch over them. Now, thanks to Campbell Bridges, you can purchase vivid green tsavorite at a reasonable price and you won’t have to worry about the python.

THIS IS A HAMMER By Samantha Mazzotta Shower Head a Leaky Mess Q: I have one of those flexible sprayer shower heads that you can lift from its holder and use. Whenever I turn on the shower, water squirts from the part where the holder attaches to the water pipe, and also runs from the end of the hose where it attaches to the shower head. Do I need to replace it or can I fix this? -- Lorelei D., Atlanta A: Check the shower head attachment points for any visible damage first. A visibly cracked hose or plastic attachment piece often means the entire unit needs to be replaced. However, if you can’t see any damage, you may be able to fix this with just the twist of an adjustable wrench. To avoid damaging or scratching the connector nut -- which attaches the shower unit to the inlet pipe (sometimes called a goose-neck pipe) -- wrap a soft rag around the nut. Use an adjustable wrench that can fit comfortably around the connector nut, and gently turn the nut clockwise just slightly -- one-quarter turn at most. Unwrap the rag from around the connector nut and turn on the shower to see if the leak has diminished or stopped. If it needs more adjustment, replace the rag and gently turn the connector nut another quarterturn. Keep in mind that turning the connector too tight may make the leak worse; that’s one reason to make such small incremental adjustments. Another reason is to avoid damaging the connector nut or the seal. If you notice cracks or other damage to the shower unit, in most cases you’ll need to replace the entire unit (except for some more expensive shower heads, which often offer replacement parts from the manufacturer). To replace the unit, head to the home-improvement store and pick out a shower head of your choice, along with some Teflon tape. Back home, turn off the water feed to the shower. If you can’t find the nearest shutoff valve, turn off water to the house. Unscrew the old shower sprayer unit from the inlet pipe, using your pliers and turning counterclockwise to loosen and remove it. Clean away any old sealant, tape or gunky buildup from the threads of the inlet pipe. Unwrap the new shower unit and take a look at the connection and accompanying hardware. Connectors that come with a rubber washer generally need to be tightly screwed on using your pliers; connectors that don’t generally just need to be hand-tightened. Now, take your new Teflon tape. Wrap it carefully around the threads of the inlet pipe, creating a single layer around the threads from the end of the pipe to just below the end of the threads. (The tape will push upward when you screw on the new shower head, so leave a bit of space.) Press the tape into the threads with your fingers. Carefully line up the connector of the new shower unit with the pipe and screw on, turning clockwise. Use your hand to tighten the connection; if you need to tighten more, protect the finish of the connector by wrapping a rag around it and tighten in small increments using pliers. Turn on water to the shower to test the connection, adjusting slightly if needed until the connection no longer leaks. HOME TIP: Don’t have a set of pliers that fit your pipes? Prior to filing a petition for bankruptcy, you are now required to complete a course and obtain a certificate of completion. The class is called Credit Counseling. While the thought of such a class is typically not pleasant, the actual course is relatively short and generally of some value. The credit counseling course can be completed in a variety of different formats: over the phone, in person, or on the internet. The cost for credit counseling varies, depending on the company you go through, typically costing less than $50.00. After you actually file for bankruptcy, there is a follow up course that must be completed: financial management. The secondary course can be completed in the same format as the first course.

All investments carry risk. But, as an investor, one of the biggest risks you face is that of not achieving your long-term goals, such as enjoying a comfortable retirement and remaining financially independent throughout your life. To help reach your objectives, you need to own a variety of investment vehicles — and each carries its own type of risk. If you spread your investment dollars among vehicles that carry different types of risk, you may increase your chances of owning some investments that do well, even if, at the same time, Cindy Rose you own others that aren’t. As a result, you may be able to reduce the overall level of volatility in your portfolio. (Keep in mind, though, that diversification can’t guarantee a profit or protect against all losses.) To diversify your risk factors, you first need to recognize them. Here are some of the most common types of investment risk: Market risk — This is the type of risk that everyone thinks about — the risk that you could lose principal if the value of your investment drops and does not recover before you sell it. All investments are subject to market risk. You can help lessen this risk by owning a wide variety of investments from different industries and even different countries. Inflation (purchasing power) risk — If you own a fixed-rate investment, such as a Certificate of Deposit (CD), that pays an interest rate below the current rate of inflation, you are incurring purchasing power risk. Fixed-income investments can help provide reliable income streams, but you also need to consider investments with growth potential to help work toward your longterm goals. Interest-rate risk — Bonds and other fixed-income investments are subject to interest-rate risk. If you own a bond that pays 4% interest, and newly issued bonds pay 5%, it would be difficult to sell your bond for full price. So if you wanted to sell it prior to maturity, you might have to offer it at a discount to the original price. However, if you hold your bonds to maturity, you can expect to receive return of your principal provided the bond does not default. Default risk — Bonds, along with some more complex investments, such as options, are subject to default risk. If a company issues a bond that you’ve bought and that company runs into severe financial difficulties, or even goes bankrupt, it may default on its bonds, leaving you holding the bag. You can help protect against this risk by sticking with “investment-grade” bonds — those that receive high ratings from independent rating agencies such as Standard & Poor’s or Moody’s. Liquidity risk — Some investments, like real estate, are harder to sell than others. Thus, real estate is considered more “illiquid” than many common investments. Make sure you understand what type of risk is associated with every investment you own. And try to avoid “overloading” your portfolio with too many investments with the same type of risks. Doing so will not result in a totally smooth journey through the investment world — but it may help eliminate some of the “bumps” along the way. Make an effort to live a green lifestyle and grow some green in your pocket, too. This month, break old habits and take a step away from energy-waste to energy-smart. “By maintaining your appliances regularly, you can extend the life of your investment and save energy,” said Ken Hutson, owner of Mr. Appliance of Douglas County. “The harder an appliance has to work to do its job, the more energy it consumes in the process, which puts a strain on the appliance, the environment and on your energy bills.” Follow these simple 10 tips from Mr. Appliance to make your appliances not only benefit planet earth, but also your pocketbook. 1. Give your refrigerator some breathing room by keeping the appliance at least two or three inches away from the wall. Place your refrigerator away from direct sunlight and appliances that produce heat to make your refrigerator run more efficiently. 2. Do you crave a midnight snack, but can’t decide what to eat? Keep your fridge full, not only to satisfy all of your midnight munchies, but also to help the fridge save energy after recovery from the door being open. 3. Check and care for the rubber seals surrounding the inside of your fridge by using mild soap twice a year to help prevent cracked and torn seals. Use your money to test the seals by placing a dollar bill halfway inside the refrigerator door. If the dollar pulls out easily, then your losing money in more than one way and it may be time to replace the rubber seals. 4. If you notice your food cooking unevenly or it is taking longer than before, it may be time to replace cracked or torn door seals that can allow up to 20% of heat to escape. 5. When cooking up your favorite meal, turn off electric burners two to three minutes before you finish cooking and let the residual heat sauté the rest to perfection. 6. Save yourself a step by planning out your cooking schedule to only bake in the oven instead of preheating. Sometimes there is no need to preheat if the food requires more than an hour in the oven. 7. When tidying up your kitchen don’t forget about your electric and gas burners. Clean burners allow for a more efficient use of energy. 8. Save up to 20 gallons of water by hand -scraping your dishes, instead of running water for your prerinse. 9. Give your dishes a breath of fresh air by turning your dishwasher setting to air-dry or open the dishwasher after the rinse cycle. 10. Give your dishwasher a wash of its own by running an empty cycle with a citric acid-based cleaner. The cleaner will remove soap and calcium build-up that makes your dishwasher work harder than it has to. Follow these do-it-yourself energy efficient tips periodically by adding them to your family calendar. ¥ On Aug. 24, 79, after centuries of dormancy, Mount Vesuvius erupts in southern Italy, burying the Roman cities of Pompeii and Herculaneum. In the 18th century, the cities were rediscovered and excavated, providing an unprecedented archaeological record of the everyday life of an ancient civilization. ¥ On Aug. 25, 1835, the first in a series of six articles announcing the supposed discovery of life on the moon appears in the New York Sun newspaper. The hoax articles offered vivid description: enormous amethyst crystals and lush vegetation, as well as animals such as unicorns, two-legged beavers and furry, winged humanoids resembling bats. ¥ On Aug. 23, 1902, pioneering cookbook author Fannie Farmer, who changed the way Americans prepare food by advocating the use of standardized measurements in recipes, opens Miss Farmer’s School of Cookery in Boston. ¥ On Aug. 20, 1920, the owners of four Ohio League teams -- the Akron Pros, Canton Bulldogs, Cleveland Indians and Dayton Triangles -- meet to form a new professional football league. Football star Jim Thorpe was nominated as president of the new league. ¥ On Aug. 21, 1959, President Dwight Eisenhower signs a proclamation admitting Hawaii into the Union as the 50th state. The president also issued an order for an American flag featuring 50 stars arranged in staggered rows. ¥ On Aug. 22, 1962, President Charles De Gaulle of France survives one of several assassination attempts against him thanks to the superior handling performance of the presidential automobile, the Citroen DS 19. During the attack, a hail of 140 bullets shattered the car’s rear window and punctured all four of its tires. ¥ On Aug. 26, 1974, Charles Lindbergh, the first man to accomplish a solo nonstop flight across the Atlantic Ocean in 1927, dies in Maui, Hawaii, at the age of 72. To reduce weight on the plane during his famous flight, everything that was not essential was left out: radio, gas gauge, night-flying lights, navigation equipment and parachute.
