When the Government recently announced that electrification of rail between Pukekohe was a step closer, I was ecstatic; even more so after man about the house and a friend decided to take themselves by train to Sylvia Park. Well, what a ballyhoo that was! All up, travel time amounted to four and a half hours! The pair admits some of the delay was their own fault. Having boarded at Pukekohe, made the change at Papakura and waiting to leave the station, they decided a toilet stop was wise before departing. Subsequently, they missed the train. However, that resulted in only a minor delay.

The worst, they said, was changing a second time at Papatoetoe with a 30-minute wait between trains – there is no direct rail route from Papakura to Sylvia Park – madness!

We’re looking for a new senior stylist to join our team!

Sometimes the train went via Newmarket and other times via the waterfront and Orakei, but there was no need to change anywhere as the line just ‘split’ so to speak. I believe the creation of a new Manukau station (east line) is responsible for the route change. However, I’ve also been given to understand that with work due to commence any day on major redevelopment of Puhinui station, which will link to Manukau, a direct route from Papakura (and eventually from Pukekohe) through to Sylvia Park and onward to the city will be established, possibly within four years – Hoorah!.

All up their trip from Puke’ to Sylvia Park took 90 minutes. So, what about the return journey? Three hours from the mall to finally turning the key to our front door. They were not happy chappies. “We’re taking the car next time,” they grumbled. When I was young and holidayed

WITH NEW OWNERS OF LANDMARK HOMES AUCKLAND SOUTH & FRANKLIN

Prestigious building franchise, Landmark Homes Auckland South & Franklin recently came under the new ownership of Michael and Colleen Walters who have extensive experience in the home construction business including local developments. ‘New home’ hunters will find them to be knowledgeable and committed to meticulous craftsmanship and service. SOUTH asked the Walters about their plans for the company’s future. What is it about Landmark Homes which compelled you to buy the franchise? Landmark Homes has always been renowned for quality homes with a strong sense of tradition. We decided the opportunity to buy such a respected company was too good to miss – being at the coalface of designing and building contemporary homes which, nevertheless, encompass both character and superior workmanship made sense to us. What building or associated background experience do you bring to the company and is it a full time job for you both; if so what roles will you will? We have both been in the industry for quite some time in various roles including owning, at one time, our own plumbing and roofing company in Whangaparaoa. Michael is a craftsman plumber by trade and through his extensive knowledge of the roof sector, he also sits on the boards of RANZ (Roofing Association of New Zealand). The company will be managed by Colleen who has worked for a leading group house builder for the past seven years so, taking on this role, makes sense. Those who know Colleen also know she is more than capable of fulfilling the role and will be supported by an experienced team and subcontractors. The nationwide catchphrase for Landmark Homes is, ‘Don’t just Build a Home, Build a Landmark!’ What does this mean to you? Each home we build is unique just like its owners. Discerning home hunters usually want a house which is different from others. In order to provide them with a

true ‘Landmark’ we see our role as bringing their vision and ideas to life while guiding their choices where needed. new era Big changes have been afoot at The Franklin Club, Pukekohe including a makeover of the restaurant now under the management of Jamie Logan from Logan Catering. At a special evening to celebrate the interior makeover, and to highlight the new direction and services at Franklins, the restaurant, guests sampled the canapÊ menu and saw how the club’s entertainment lounge could be beautifully set up for a wedding or festive event. ‘Clubbing’ IN ST YLE!

Members of The Franklin Club have always known it’s pretty special. But with the growth of new subdivisions, and more folk moving into the area, the club wants new residents (and others) to find out what makes it the district’s ‘premier club’.

There’s no time like now to join the Franklin Club. Last year Cliff Downes was appointed manager and since his arrival there has been a whole lot shaking going on – in more ways than one! First up, decor has been refreshed – it’s lighter and brighter. There’s also been a big upgrade in the restaurant – new management (now in the care of well known local company, Logan Catering), new tables, new chairs, al fresco dining area and new menu which will change every three months. What’s more, the restaurant now offers waiter and wine service. Better still, non-members are

welcome to dine – they will be signed in and while there can use all club facilities. But, of course, the best way to take advantage of club prices and the many other advantages (we’re coming to those) is to join. So, for those wanting a taste of shipboard life before getting their feet wet, HELEN PERRY provides a glimpse of two different cruise liners. In part one, this month, she shares her view of the Norwegian Jewel when it docked in Auckland recently. Cruising, as many know, has become a must-have luxury holiday where new destinations, partying, relaxation, good food and entertainment are all laid on without any of the usual hassles associated with moving from one place to another. So, what makes modern day cruising so popular? After many years of the jet-set preferring to fly from one destination to another, a new age of luxury cruising dawned. Now it is one of the fastest growing segments of the travel industry. Cruises around the Caribbean, the Mediterranean, Alaska, Norway,

the Hawaiian Islands, Asia, and of course the Pacific are often filled within a couple of weeks of release dates. Then there are those massive 100-day cruises which take passengers from one side of the world to the other – ardent supporters return year after year. Importantly, more and more ships are visiting New Zealand with 'around the coastline cruises' filled not only with visiting tourists but locals too. Last year more than 125 luxury cruise liners docked in Auckland. More than a few circumvented New Zealand and traversed Australian waters.

Touring the facilities, several groups were reluctant to leave the Mandara Spa while more than a few had their eye on the casino. As a grandmother, I took note of amusements for children – a video arcade, games room and swimming pools to die for. All offered plenty to keep youngsters occupied. In addition, the jogging track, basketball and tennis court plus fitness centre provide opportunities to stay in shape if the wealth of dining options threaten to increase the waistline. stations where a hive of lunchtime activity, I caught sight of generous, casual meals I know two young boys would happily tuck into. On the other hand, more mature guests might find themselves heading for specialty restaurants such as the Teppanyaki Room (one of the most popular options) La Cucina, for a taste of Italy or, perhaps, Le Bistro French Restaurant – the boullaibaisse sounded delicious. But, of course, there were many more cafés and dining gems such as the Brazilian steakhouse or the buffet where talk of the seafood

selection had me salivating. However, it was the accommodation that actually surprised me. I expected to be wowed by The Haven suites – luxurious accommodation with a 24-hour butler and concierge service plus access to private sun deck, pool and Jacuzzi plus its own bar and restaurant. Guests in this area could also avail themselves of everything else on board. Naturally I was envious. But those seeking less palatial surrounds would surely be

impressed by the range of stateroom options. Even the most cost-effective were attractively furnished, entirely comfortable and put paid to my vision of cramped quarters sporting four bunks! I loved that a family of four or six could each have separate rooms. But enough of my enthusing; the motive behind this visit was to allay my own worries about adapting to life shipboard life – all I can say is: definitely no worries now. The space, the size, the facilities were so reassuring. Indeed, it made me eager to shout “Weigh anchor. Greece, here I come!” south | march 2020 | 13

Cakes her daily bread A former flight attendant has hit the ground running after her fledgling cake business was chosen to supply the icing on the cake at the wedding of one of the country’s most successful sportsmen. Confectioner extraordinaire, Jo Bogaart, tells ANGELA KEMP how she grabbed a slice of the action at the celebrity love match. over the years, I’ve become better and better. There are lots of cake decorating programmes on TV now and I love watching Amazing Cakes where they do brilliant work.

For nine years Jo Bogaart flew across the Tasman in her job with Australian airline, Qantas while dreaming of making her hobby her career. She’s been baking cakes all her life both growing up in a big Pukekohe family and then for her six children and subsequent grandchildren.

“My mum taught us all to bake and sew. If we wanted clothes we had to make them ourselves and we weren’t allowed out at weekends unless the cake tin was full.

Just before Christmas Jo turned the dream into reality, resigning from her job to launch Cakes on the Hill. She imagined she’d have a slow start which would give her time to catch up with gardening and other tasks around the home that she’d neglected while working full-time.

“When my kids were born I used to make them the Women’s Weekly cakes that everyone made. “Then, when my grand-daughter was born 12 years ago, I saw a picture of a cake and I thought I’d give it a go. It was my first fondant cake and had little matching cupcakes. I look back on it now and think, what a mess!”

But that wasn’t to be as a steady trickle of orders came in along with a rather special request. She received a call from Joyce Trafford, mother of Sally Trafford, fiancee of New Zealand’s top doubles tennis star, Michael Venus. “Sally’s mum was organising the young couple’s wedding cake as the pair were still in England ahead of their New Year wedding at Bombay’s Bracu. Sally had sent a picture of a three-tier, fondant cake which her mum had promised she would make. Joyce decided she wouldn’t have time to decorate it so she asked Maggie and Brendon Harding at The Cake Shop in Glasgow Road, Pukekohe if they could help,” says Jo. “But as they don’t do fondant icing they sent her to me.” Initially, Jo was a little apprehensive as Joyce wanted to supply her own cakes for Jo to decorate which isn’t usual. But she says they turned out to be the perfect height and size to

transform into the A-list wedding cake. The elegant creation involved covering the cakes with white ganache featuring delicate pink marbling and gold leaf decoration. The piece de resistance was to be a gold-coloured, dried floral sprig on the front of the cake which matched the bridal bouquet. But, just days before the wedding, Jo had to use her artistic ingenuity to replicate the design after the original supplied decoration proved to be unsuitable. “The wedding was on January 3 and all the cake decorating suppliers were closed. I had some sleepless nights wondering what I was going to do. “Over New Year we went for a walk at Hunua Falls and I spotted some reeds that looked very much like the ones in the picture of the

wedding cake Sally had sent. I picked them and brought them home before spraying them with edible paint and that’s what went on the cake!” The family were delighted with her ingenious efforts and she received a personal thank you from Michael Venus when she delivered the cake to Bracu. Just days later, Mike was on the court at the ASB Classic in Auckland but his luck was out on that occasion. His past successes include winning the 2017 French Open and making the men’s doubles final at Wimbledon a year later. Jo says she learned how to make her amazing creations through watching cake decorating tutorials on YouTube. “I’d watch things like how to make fondant elephants and slowly,

Jo says she’s had plenty of opportunities to hone her skills with seven grandchildren, extended family and friend’s families. “I love doing novelty cakes and I love it when people say, this is the theme now go for it. But mostly they tell me what they want.” So far her favourite cake is a Halloween-themed cake she made last year for her son and daughterin-law’s 10th wedding anniversary. “It stood well over a metre high and featured things such as a pumpkin and a witch’s cauldron as well as being lit up underneath, Jo says. “It was topped by two dancing skeletons.” While this cake is certainly a standout piece, with Jo’s talent in demand, who knows what will come along in the future and, perhaps, become her new ‘favourite!” www.southmagazine.co.nz

Don’t fret over what went wrong in the past; focus on a happier future. Jeweller says, new ideas are always emerging and it is likely the modern bride and groom will plan their wedding rings at the same time they buy an engagement ring.

“The bride will want her two rings to sit well together and will need to take into account the proportion of the ring to the size of the hand and the shape of the fingers.” He says before starting one’s quest, set the budget, think about style and make a few notes if you want a bespoke design. “Today’s couples often ask jewellers to design and make them matching wedding bands which reflect something which has special meaning to them. Features to consider when choosing the engagement ring: • Type of setting – solitaire (one stone); three stones set side by side; eternity or semi-eternity (stones set around a portion or the entire circumference of the ring) or, perhaps, a central stone, surrounded by smaller stones. Your chosen jeweller will guide your decision. • Type of stone or stones – diamond, sapphire, emerald, ruby, a combination of stones or perhaps another of the many semi-precious stones available. • Cut – square, elongated, round or oval or a variation on one of the traditional cuts. • Metal – gold, white gold, platinum or titanium. Planning is the key to a successful wedding but too often the plan goes awry because it hasn’t been adhered to. Here’s a proven plan to help make your big day run smoothly.

• Decide on the type of wedding, number of guests and budget. • Decide when and where you would like your ceremony and reception to be held, check out venues and book. • Choose and book a celebrant or meet with the minister or priest of your chosen church. • Choose a photographer or videographer and book. • Contact the people you would like as your bridal attendants, best man, groomsmen, etc. • Choose a colour scheme or theme for your wedding. • Begin the search for the wedding gown. If you decide to have one made, choose the designer and dressmaker. • Draw up a provisional guest list.

• Visit your florist to have detailing of bouquets and flowers for church and reception finalised. • Re-confirm all arrangements, eg honeymoon, photographer, car hire, hair and make-up, suits, dresses, flowers, venues, caterers, etc. • Wear in your wedding shoes (bride and groom). • If you’re having a hens’ or stags’ night, do it now – not the night before the wedding! • Confirm with attendants, best man, family or friends, things that need doing after the wedding (eg returning hired clothing, taking care of the bride’s gown, storing wedding gifts, etc) and decide who’s doing what.

• Don’t panic. • Hold a full rehearsal of the wedding ceremony. • Do a dummy run through the journey at the same time and day of the week as the ceremony to be sure transport and timing is correct. Plan an alternative route in case of delays on the day. • Arrange for any hire items to be collected. • Have a facial, massage, manicure and pedicure. • With the preparation over, you can now relax and enjoy your wedding day! • Those giving speeches should be planning what to say!

Ways to help keep short-nosed dogs summer safe: • Always have drinking water readily available for your dog and consider a paddling pool for them to cool off in after a walk. • Be very careful exercising in the heat. Consider walking only early (very early) in the morning or late at night at a slow gentle pace. Any playtimes should be kept short. • Keep your dog slim. Being overweight exacerbates the problem as the harder it is to move around, the harder it is to breathe.

FAIRY TALE IN FASHION! Mirror, mirror on the wall whose are the most beautiful fashions of all – for the ballet, Snow White, that is? Why, those designed by Jean Paul Gaultier of course! Or that’s how SOUTH thinks the dialogue could play out if Angelin Preljocaj’s, dark retelling of the Brothers Grimm fairytale, was a play and not a ballet. But, no words will surely be needed to appreciate, the French choreographer’s interpretation of a well loved tale or the legendary French fashion designer’s skill and imagination in creating a visual spectacle to feature at the upcoming Auckland Arts Festival this month. Boldly seductive, this fresh and sexy take on the timeless conflict between young Snow White and her jealous stepmother, the Queen, is both strikingly sensual and blazingly contemporary – and, courtesy of the Gaultier-designed costumes, breathtakingly beautiful of dress. Combined with towering sets and the symphonies of Gustav Mahler, Snow White is said to be a dance on a visionary scale.

Gaultier has said he was intrigued by Preljocaj’s vision for the ballet and immediately wanted to come on board with costume design. “Angelin gave me all the freedom … [in this case] rather than tutus and tiaras, the queen wears leather, vinyl boots and latex.” Throughout his career, which started with Pierre Cardin in 1970, Gaultier has worked in dance, music and the cinema. His costumes for Madonna’s Blond Ambition tour have left an indelible imprint on the popular culture.

Snow White will be performed nightly, March 11-15, at the Kiri Te Kanawa Theatre, Aotea Centre.

His first collaboration in the cinema was with Peter Greeneway for The Cook, The Thief, His Wife and Her Lover and he has designed costumes for many other show. In 2018 he also presented the Fashion Freak Show at the Folies Bergere in Paris, a revue which tells the story of his life and the 50 years of popular culture through song and dance and fashion.

Garlic, ginger and lemongrass give this recipe an authentic flavour the whole family will enjoy. lemongrass, stirring often until tender. Do not let the mixture burn.

Stir in the curry paste and lime leaves. Stir over a low heat for a few minutes until very fragrant.

Beef and Grain Salad This salad ticks all the boxes its nutritious, filling and extremely tasty! We think its ideal for a summer evening meal. Prep: 30 mins Cook: 20 mins Serves 4

INGREDIENTS Beef • 3 x 200g Quality Mark sirloin steaks (about 2cm thick) Grain salad • 1/2 cup white quinoa, very well rinsed • 1/2 cup Israeli couscous • 2 corn cobs, husks and silks removed • 4 small zucchini, cut into thick ribbons • 1-2 handfuls baby spinach leaves Dressing • 1 tablespoon lemon juice • 1 tablespoon Dijon mustard • 4 tablespoons olive oil To serve • 1 tablespoon sesame seeds, white or black, toasted • 1/4 cup picked mint leaves, finely shredded • 1/4 cup walnuts or pine nuts, toasted, optional • Rocket aioli (see tips & tricks)

METHOD Salad: Place rinsed quinoa in a small heavy based saucepan with 3/4 cup cold water. Cover and bring to the boil, then reduce heat and simmer quinoa until liquid is absorbed, about 15 minutes. Place Israeli couscous into a saucepan of boiling salted water, reduce heat and simmer for 10 minutes, until soft but still retains some bite. Drain and rinse under cold water. Set both aside. Heat barbecue grill until hot. Rub corn cobs with a dash of oil and season. Place on hot grill and cook for 15 minutes, turning regularly. Set aside to cool a little, then stand cob on one end and, using a sharp knife, cut down to remove kernels. Brush barbecue grill with a dash of oil and place on zucchini. Cook until just tender. Season and set aside with corn kernels.

Beef: Rub steaks with a little oil, season and place on a hot barbecue grill. Grill for 3-4 minutes on each side for medium-rare. Remove from grill, cover and set aside to rest. To serve: Place cooked quinoa and Israeli couscous in a large bowl, and using a fork, stir through the corn kernels, zucchini and spinach leaves. Pour over dressing, toss gently and place on a serving plate. Slice sirloin steak and place on top of the grain salad and sprinkle with the sesame seeds, shredded mint and nuts if using. Pass around a bowl of rocket aioli (see tips & tricks).

Tips & Tricks • Before slicing cooked sirloin steaks make sure they are well rested. This is important for tender, juicy steak. Remove from barbecue grill and cover loosely with foil or baking paper and a clean tea towel. Set aside for 5-10 minutes before slicing across the grain. • Rocket aioli: Place a handful of rocket leaves in a small food processor and process until roughly chopped. Add 1 small clove crushed garlic, 1 tbsp lemon juice and 1 egg yolk and process until combined. Slowly drizzle in 1/2 cup olive oil through the feed tube until the aioli is creamy. Season and place in a small bowl, cover and refrigerate. • The pairing of beef and walnuts in this dish provides a good daily dose of essential omega 3s.

Dressing: Place all dressing ingredients in a small screw-top jar, season and shake well.

Round-up When it comes to honouring a special occasion, whatever the event, celebrating with a glass of champagne is the real deal – no other word conveys more magic or a sense of celebration when uncorking the ultimate. Although made almost exclusively from three grapes, chardonnay, pinot noir and pinot meunier, sometimes less common grapes are used. The champagne consumed in New Zealand is predominantly vintage and non-vintage followed by brut, cuvee and rose. The difference between vintage and non-vintage is not age as often thought. Tax issues There is, of course, the main IRD website which deals with a huge range of mainly compliance issues. Outside compliance, the first port of call is the IRD media centre, media.ird.govt.nz where the IRD publishes what it considers news for taxpayers. This is a very useful current snapshot of IRD concerns. Current information includes the IRD moving towards a short process for tax disputes and noting its further investigations into undeclared income in the hospitality industry. The second port of call is that part of the IRD called tax policy, see tax. policy.ird.govt.nz.

looking at. Current topics include land taxation and charities so, if you take the work programme as a guide you should anticipate that those topics will move into focus, sooner rather than later. Secondly, they come into focus mostly through ‘officials issues papers’. These papers are on the website and are a detailed analyses of the perceived problem and the policy issues; they also offer options for resolving those issues identified. A current example is the allocation of business purchase prices between seller and buyer. The ‘officials íssues papers’ usually ask for input from the public and the policies are refined before moving into the legislative process.

This looks to the future and is where the ideas for changes and refinements to the New Zealand tax system first come into view from the IRD perspective.

The third and last port of call is more technical but still important. It is the technical tax area of the IRD website which concentrates on existing legislation and how it is interpreted and applied.

Two parts of the site are particularly useful. First, you can see what is on the current work programme. Some of the topics are very technical and esoteric but others give a heads up as to what the tax policy unit is

As tourists seek to push their travel dollar ever further, a Kiwi company is cashing in... big time. While Jucy Snooze has no plans to expand its micro-accommodation pods themselves, it is intent on securing a larger share of the tourist accommodation market. “We have been wanting to move into the Australian market for some time,” Jucy’s CEO, Tim Alpe confirms, “The locations of the new hotels will be aligned with the distribution of our vehicle rental fleet, which provides a more seamless travel experience.” Currently, Jucy Snooze has heavily used pod hotels in Auckland, Queenstown and Christchurch. However, now that Australian-based Event Hospitality & Entertainment Limited (EVENT) has purchased a 50% stake in the business, ‘little’ really could become the next big thing across the ditch and even further afield. “Without this investment, we

would have been able to open a new site every few years, but we now hope to significantly expand the Jucy Snooze offering,” Mr Alpe adds. “EVENT brings significant experience in hotel development, procurement, food and beverage, and operations as well as capital investment and access to new sites in Australia.” EVENT operates cinemas, hotels (including the Rydges, QT and Atura brands) and resorts.
