Carole Coppens Honored as 2018 Woman of Distinction
Senator Fred Akshar and Carole Coppens Senator Fred Akshar recently held a local ceremony to recognize YWCA Binghamton Executive Director Carole Coppens as his NYS Senate 2018 Woman of Distinction for the 52nd Senate District. Each year, the New York State Senate honors women who have enriched the quality of life in their communities across New York. Coppens said, “In all my years working at the YWCA, I never anticipated receiving such an incredible honor and recognition. To have my name listed alongside the most amazing women in the New York State Senate Women of Distinction program for 2018 is simply extraordinary. Senator Akshar’s passion and commitment to this community is directly tied to the services for women that the YWCA provides and makes for a unique collaboration. And for that I will always be grateful.” Carole Coppens has served as Executive Director of the YWCA Binghamton and Broome County since June 2000. She holds a Master’s Degree in Exercise Physiology from the University of Colorado. Ms. Coppens was elected to the Board of Directors for the YWCA USA in 2008 and served two terms ending in 2013. She was also nominated to the YWCA World Service Council in October 2008, and currently serves on the Steering, Nominating and Advocacy committees for the Supportive Housing Network of New York. Ms. Coppens also serves as Chair of the Governance Committee for the Homeless of the Southern Tier. Ms. Coppens has received numerous awards during her career. In 2002, the Broome County Status of Women Council recognized her as a Woman of Achievement. The mayor of Binghamon appointed Ms. Coppens as a founding member of the city’s Human
Rights Commission established in 2011. Recently, Ms. Coppens received several citations for her outstanding commitment to developing innovative supportive housing for the homeless in Broome County from the New York State Office of Temporary and Disability Assistance, Homeless Housing and Assistance Corporation. She was also recognized by the New York State Assembly and Senate for outstanding leadership and dedication in restoring the historic YWCA building. Broome County and the City of Binghamton have cited Ms. Coppens’ work with the YWCA, and she was nominated to serve on the Broome County Family Violence Prevention Council and also inducted into the Binghamton Rotary Club #64. Ms. Coppens maintains a professional membership and certification with the American College of Sports Medicine. Senator Fred Akshar said, “Throughout her career, Carole Coppens has dedicated herself to improving the lives of families across our community. Because of her work, struggling families have received critical support and services in their times of need and more opportunities to help them get back on their feet. I’m truly inspired by the great work she has done for our community and I’m proud to select her as the 52nd District's 2018 Woman of Distinction." YWCA Binghamton Director of Administration Becky Krise said, “Carole is one of those remarkable women that lifts us up every day and fights endlessly for others. She is why the YWCA is still here today, able to effectively serve women and children.” Ms. Coppens currently lives in Apalachin, New York with her husband and cat.

Senator Fred Akshar and YES Safe Choices were joined by local parents, teachers and school administrators to honor 625 Broome, Tioga, Chenango and Delaware YES LEADers at the YES LEADers Change Lives Recognition Reception. YES LEADers are middle and high school students who visit classrooms and use hands-on activities to teach local elementary school students about the dangers of substance abuse, the importance of self-esteem and the value in making healthy choices as they grow up. “I’m constantly humbled by the inspiration our YES LEADers provide to their peers and others,” said Senator Akshar. “From the start, I’ve said that education is the best prevention, and the next generation’s commitment to teaching others about the dangers of drug and alcohol abuse is invaluable to our community.”
As a three-year YES LEADer, Owego Free Academy senior Kennedy Keefer believes the program has helped shape her into the person she is today. “I love doing community service and being a role model to younger kids. The community outreach each year has taught me that little projects can make a difference.” YES Safe Choices is a partnership between Senator Akshar and Lourdes Hospital. Owego-Apalachin, Tioga Central, and Waverly school districts participate in the YES LEADS program. This year’s LEADers, representing 14 school districts, will have presented to over 4,600 elementary students by the end of the school year.

After 35-plus years in one location, you might assume that moving would
not be on the agenda for a successful retailer. Not the case for Home Central’s Candor store. After decades in the same historic downtown building, this family business decided to move less than a mile away and double down on investing in the small town of Candor. The leadership team at Home Central decided that their choppy but quaint rented space in the village of Candor might have been holding back their potential for growth. While the space was reminiscent of a true old-school hardware store or mom and pop lumber yard, the lack of space and inefficient storage outweighed the character that the former feed mill brought to the shopping experience. With the idea of creating a more user-friendly home center, this local company purchased a vacant restau-
rant on Route 96 just south of the village of Candor and constructed a massive 9,000 square-foot store with attached 9,000 square-foot drive-thru warehouse. The facility includes a state of the art paint center, expanded plumbing, electrical and lawn/garden departments, as well as storage for more than quadruple the amount of lumber and building materials as the old facility, plus a propane filling station. In addition to increased space, the new Candor store will have hours to match the other two Home Central locations: Monday through Friday 7:30 am to 7:00 pm, Saturday 7:30 am to 5:00 pm, and Sunday 9:00 am to 3:00 pm. While the new store opened at the end of December, the finishing touches were just completed and the folks at Home Central hosted a Grand Opening Celebration on May 19.

Ribbon Cutting at Teri’s Handmade Crafts A ribbon cutting ceremony was held on June 1 to celebrate the new location of Teri’s Handmade Crafts at 58 North Avenue in Owego. Teri Whitmore’s love for Primitive style décor and wooden furniture made her curious if she could start making them herself. With the help of her husband she got right to work. Over the course of three years sharing what she had made on social media, people started asking if they could buy her pieces. As her business grew with encouragement from friends and family, she soon needed more space. Owner Teri Whitmore and her husband bought the building on North Avenue in December of 2017.
Teri’s Handmade Crafts offers a great variety and also takes custom orders - stop by the store or email her to do so. “If you see something that you like, chances are that Teri can make it,” said Jill Teeter from the Tioga Chamber. “All of her pieces are quality and I love being able to shop local and support a small business owner.” Teri’s Handmade Crafts is open Thursday 3:00 to 6:00 pm, Friday 12:00 to 6:00 pm, and Saturday 10:00 am to 2:00 pm. Teri hopes to extend hours soon. For more information, visit Facebook @terishandmadecrafts or email: terishandmadecrafts@gmail.com.

Avocado Oil Recipes Avocado Oil is not as popular or even as well known as Extra Virgin Olive Oil (EVOO), but has many healthy benefits and an awesome sweet nutty flavor. I came across this culinary gem quite by accident while grocery shopping for a particular brand of EVOO. I had never seen or used avocado oil in the past. So, I did a quick Google search right there in the store. Wow, at a glance I knew it was worth a try. After an avocado oil test run with my favorite salmon patty recipe and doing a bit more research, I decided that avocado oil has now earned the number two spot next to the EVOO in Chef Nick’s kitchen. Before you check out the recipes below and incorporate this delicious oil into your cooking and baking, take a look at the wonderful health benefits you will receive. Avocado oil improves digestion, is heart healthy, eye healthy, reduces prostate cancer risk, fights arthritis, helps with inflammation, is a skin Chicken & Pico de Gallo Salad 4 oz. grilled marinated chicken breast, bite-size pieces 4 cooked asparagus spears, cut in bitesize pieces 4 fresh strawberries, halved 2 cloves garlic, minced 2 T avocado oil 1 T rice vinegar salt and black pepper to taste 1/4 C chow mein noodles Mix all ingredients and enjoy.
