F there’s one time of year that conjures up images of delicious food and indulgent drinks, it has to be Christmas. For the pastry: 250g plain flour 100g refrigerated butter, cubed Pinch of salt 2 1/2 tbsp cold water Icing sugar to dust

For the mince pies: Preheat the oven to 220c. Place the flour, butter and salt in a bowl and rub together until it resembles fine breadcrumbs, but try to prevent it becoming too warm. Bind together the dough with the water and then chill it for 30 minutes.

Roll out two thirds of the dough on a floured surface until about 5mm thick. Cut out circles to fit your muffin tray. Fill the pastry circles with one heaped teaspoon of mincemeat. Cut out smaller circles for lids and place on the pies. You can crimp the edges with a fork for decoration, or cut out stars and other shapes if preferred. Bake for 15 minutes or until golden brown. Leave to cool and then dust with icing sugar.

❄225g plain flour ❄150g granulated sugar ❄120g butter ❄1/8 tsp salt ❄ 1/2 tsp baking powder ❄ 1 tsp pure vanilla extract ❄1 large egg, beaten ❄ Icing sugar and selection of food colouring

Method

Preheat the oven to 180c and cover a baking tray in greaseproof paper. Whisk together the butter and sugar in a large bowl until pale and fluffy. Beat in the flour, baking powder, salt and vanilla essence and then gradually add the egg and bind into a smooth dough. Refrigerate the dough until firm and then roll out to one centimetre thick. Cut out the cookies into Christmas shapes, put on the baking tray and bake for about 10 minutes or until golden brown at the edges. Place on a wire rack to cool, before icing with all your favourite Christmas colours.
