A Dog's Life At the risk of sounding like the beginning of Don McLean’s classic song, “American Pie” or the opening of every Star Wars movie, here comes this month’s Brian’s Brain article… A long, long, time ago…back in 2005, my wife wanted a dog. Not just any dog, she wanted a black Labrador puppy. This sounded like too much responsibility. I thought we should start with something easier. Like a kid. At that time, I was working for the radio stations in Lakeland, and every Wednesday, the SPCA of Lakeland would bring in a Pet of the Week, one of their cats or dogs who were up for adoption. I also wanted to have employees from Hooters to come in on Thursdays, and we could do a Hooters server of the week, but that one never got the okay. I personally think the idea of adopting a Hooters server is brilliant. On one particular Wednesday, the Pet of the Week was a Shepherd-Husky mix named Sonic. He was a very fine two-and-a-half year old dog who had the markings of a German Shepherd, and the body of a Siberian Husky. Kind of. He was probably the runt of his litter, only topping out at 50 pounds. When my wife brought up the idea of going to the SPCA to take a look at Lab puppies, I agreed, but I told her I wanted her to see Sonic. We took Sonic in the SPCA yard area, where people could play with dogs to see how they feel about a particular pooch. Sonic had no interest in my wife or me, choosing instead to see how many places he could pee in the small fenced-in yard. We went back inside and looked at a black Labrador puppy. It was a very cute pup, as all Lab pups are. My wife liked what she saw. I on the other hand, was still thinking about Sonic. I explained to my wife that Lab pups are notorious for chewing on everything, and as they grow older, their tales are weapons of

I truly believe Labs share much of the same DNA as Tyrannosaurus Rex. On top of the damages we would have to deal with, much of our time would be devoted to house training a new Lab pup. In contrast, if we were to choose Sonic instead, we would be getting a calm dog, likely past any chewing stages, and we had already seen that he had mastered peeing outside. Amazingly, we left the SPCA that day with Sonic as our new family member. And after one month, I was talking to an employee of the SPCA about Sonic’s calm personality. She told me that Sonic was probably still in mourning, because his previous human companion had passed away from cancer. She said he would probably start being playful in the near future, and she was right. Sonic was the best dog a family could ask for. Didn’t bark much, didn’t jump on people, and was as playful as a pup through his entire life. A life which unfortunately came to an end on Valentine’s Day. He had cancerous tumors removed twice in his last six months, but the third time had spread too much, and we knew the time had come for him. Joel Vann loves barbecue competitions, and he is good at it. The Lakeland resident has competed in the Florida Barbecue Association (FBA) for over 30 years, and also competes in KCBS Professional BBQ competitions with his partner, Bobby King. And when people taste winning barbecue – and Vann’s team won a lot – they want more of it. The result, in 2006, was downtown Lakeland’s Good Buddies BBQ and Catering. That iteration of Vann’s restaurant career ended in 2011, when Pitmaster Vann had the itch to compete full time. “That’s the best way to learn more about good barbecue,” he said. Full time competition – and catering – lasted until 2016, when a downtown Lakeland bar, Tony’s Studio B, approached Vann about serving lunch at their location. By December 1 of that year, The Lakeland BBQ Company took over the location entirely – and five days later, opened a second location in Polk City. The second location offered Vann an opportunity to service an additional part of the county – and perhaps even more important to him, more kitchen space for the catering portion of his operation, which was experiencing a growth rate directly in proMARCH

portion to the rate the barbecue team hung competition trophies on their wall. Not even a full year later, Vann was looking to expand again. “Back in November,” he remembered, “I was catering an event near Dundee, and I arrived early.” Thinking he hadn’t checked out the town of Dundee in a while, he began to drive around. As he turned on Main Street, “I saw the owners of Sweet T’s Barbecue taking down their signs – they were closing.” Those signs hadn’t been down long when Vann got with the landlord to execute a deal. “That kitchen is awesome,” he explained. He knew that an expanded kitchen would be great not only for a local eatery, but also that catering business that continues to grow. The Dundee BBQ Company opened December 1, 2017 – exactly one year after The Lakeland BBQ Company took over that Lakeland location full time.

Eating There
One Wednesday night I didn’t feel like cooking, I decided to try out the Dundee location, which is closest to my house. My mom and hubby accompanied me – they didn’t want to cook, either. Evidently, Wednesday is a good day to go, because we walked right in and took a seat. I decided I wanted to try some of everything and therefore chose the Three Meat Combo ($14.99). My three meats were the Chopped Beef Brisket, Baby Back Ribs, and Pulled Chicken (if you already see to-go boxes in my future, you’re right). It also comes with bread (Texas Toast, Cornbread, or a bun) and two sides (I chose green beans and mac-n-cheese). Sweet and Sweet Heat (definitely more sweet than spicy) Sauces are on the table. My favorite of the three were the ribs, which were obviously slow-smoked to perfection using hickory, pecan, and charcoal. It’s

not surprising that his ribs won 2018 Florida State Championship and the 2017 Alabama State Championship. In fact, all three places slowcook their barbecue with hardwood only, no gas allowed. The green beans were deliciously reminiscent of your grandma or favorite aunt who still uses bacon grease to cook her just-out-of-thegarden green beans. Hubby chose the Pulled Pork Meal ($8.99), with BBQ pit beans and potato salad as his sides. Sitting across the table from him, I noticed two things immediately – the potato salad was beautiful, skins on. The skins added a delightful texture and are chockfull of vitamins. “It’s my grandmother’s recipe,” Vann later told me with pride. The second thing I noticed were that his beans looked different – and indeed they are. “I use five different types of beans,” he explained. And that pulled pork? It received my husband’s nod of approval – and with good reason. “We still cook our meat competition style,” he began. That means cooking in pans of butter for four or five hours. “We really babysit our meat, and take pride in it,” he continued. “And we think going that extra mile makes a big difference.” My mom isn’t the carnivore that I am, but the Chicken Tenders ($8.99) called her name, and she chose the Fried Okra as her side. I admittedly stole some of that okra – yum! The Chicken Tenders, which came hand-battered and dipped,
received her stamp of approval, too. Beyond the quality of the meal, its value was impressive. All of the items above – and we all chose a soda to drink – came to a grand total of $43. However, I also must note that we left with not one but four large to-go boxes, which meant lunch for Mom and dinner for hubby and me later that week. “Our value is impossible to beat,” Vann boasted.
The Future
It’s not surprising that Vann and his partner are already looking for additional locations. “We are looking for a larger location, perhaps near Lake Wales,” he explained. So next time you’re hungry for championship level barbecue, give one of his locations a try.

how those variables fit perfectly

acceleration. We are on this tra-
jectory because we fail to understand how much mass we have given to fear and apathy.
Certainly one can make the
argument that the type of gun is
part of the problem. I would challenge that it is not the gun that is
at the heart of the matter but rather why the desire to have such a dangerous weapon is so strong.
The gun is just a symbol. It is the
behavior that is far more concerning. What is missing in our cul-
ture that feeds into this desire for power?
Perhaps what we need to
review is Newton’s third law that states “for every action (force) in
nature there is an equal and opposite reaction.” If we can replace fear, anger and powerlessness with messages of confidence,
civility and empowerment there
would be a transformative social change. Newton’s famous line is “what goes up, must come
down.” Hopefully, we are done
with the down side of the model
and we can start to build a better system.

Lakeland Loft has also attracted customers from all over the state as well, with many coming from Orlando and Tampa.

chandlers, coffered ceiling, and Oxford furniture, and exclaim to themselves, “Wow! We’re in Lakeland?”

Lakeland, they say. This belongs in Chicago or New York…They really look forward to enjoying the environment because they have never seen anything like it.”

Central Park Art Festival
40th Annual Festival Covers a Multitude of Art By Elizabeth Morrisey About 90 artists will be gathered in down-
town Winter Haven March 17 and 18 for the
Central Florida Art Festival. It’s the 40th year for the festival covering a multitude of art
categories such as fine art, jewelry, furniture, soaps, ceramics, sculptures and fine crafts.
“It’s a place to go and explore and see nice
fine art,” says Christy Hemenway, executive director of the Ridge Art Association. The
festival features local artists and others from
around the country. And it is one of the largest downtown Winter Haven events.
Marilyn Rackelman has been participating
in the Central Park Art Festival for 30 years. The retired Winter Haven High School art
teacher is a sculptor working with plant and animal life. “It’s a good way to show your
work in the community,” she says. “You get to talk to people about your work.”
Her free-standing sculptures feature birds
and animals with a combination of clay, wood and copper. Some of her work is on display
at Florida Craftsman gallery in St. Petersburg. “I’ve had my hands in clay for a long time.” Lakeland artist Betsy Bohrer works in 2D

Tips On Tipping “Comedians in Cars Getting Coffee” is Jerry Seinfeld’s Netflix offering and it is exactly what it says it is. Comedians get in vintage cars that Seinfeld matches to their personalities. Then they go get coffee and schmooze and kvetch. It is as addictive as caffeine. His guests always comment on the massive tip he leaves. Why not? He is bringing a camera crew and generally disrupting the server. I guess many celebrities imagine their mere presence is enough of a tip, but no, Jerry goes the extra mile and it is appreciated. The idea for this article came from Winter Haven’s own Mario Scifo, who is owner and master stylist of Haircut Naturally. He is very comical, too and we were discussing Europe and our Mediterranean roots while he was restoring my roots to their original color. A little laughter goes a long way. We talked about tipping and were laughing that sometimes a 25% tip was forcibly imposed by fancy restaurants. We thought it should be up to the patron. He added, “I always do my best work, but when someone appreciates it with a tip, I appreciate the gesture. It’s just good. It benefits everybody.” Mario was born and raised in his early days in Malta, lived in California and studied at the Sassoon Academy in London, so he knows about more than hair. He is a renaissance man of the world. Tipping is not something people do all over the world. In the UK and most of Europe, not only is tipping not required, it isn’t desired. They are paid a respectful wage and kindness feels sincere, in many ways, as money is not in the mix of how you are treated. No one hands you a bill with an obligatory 20% smile. In America, we pay less than minimum wage to servers because it is an “industry” where tipping is involved. I don’t see the fairness in this. Let’s look at it another way. When you go to a fancy indoor sit-down-andorder restaurant, where some man with a name like Sven or Claudio comes

This sweet, goofy, friendly boy was found as a stray. He has some great attributes to build on. He is house broken, crate trained and good with new people and other dogs. He would love to be your forever friend
with a napkin on his arm we know the meal is meant to be a gastronomical delight but we also know the tip will be astronomical. Just figure in an invisible diner if you are budgeting the tip. Now this is the kind of place where service is excellent. However, this server is inside in the AC and treats us with a bit of condescension. Hope this doesn’t offend, but there’s some stereotypical truth to that. I don’t want to give a huge tip to someone who told me the only appetizer available is the “chef’s choice of rabbit pate”. This actually happened to me once and when I winced the server got very dismissive. I quietly and politely apologized and told him I could not eat a helpless bunny’s liver and not to bring it to me. He did anyway. Yes, the bill came with a 25% gratuity fee and I was not grateful, nor was the bunny to be sure. Now let’s take the young person, working their way through life as a server and perhaps in a hot, humid outdoor beach bar. How is Sven in his bow-tie worth more than the kid who is schlepping beers across the sticky sand in a cheap summer break crowd in a Harley top and flip-flops? Tip well, live well. Gratitude is an attitude and we should treat everyone the same.

Veterinarian of the Month Dr. Patricia Mattson came to Lakeland from Albnany, Georgia, her hometown. She grew up with a strong family background surrounded by hunting dogs and owned her own horse since the age of 10. She originally attended veterinary school with the goal of becoming an equine practitioner but opted for our small animal friends instead. She graduated from Auburn University College of Veterinary Medicine in 1993. After working for one year in Georgia, Dr. Mattson decided to return to sunny Florida where she worked for various clinics over the past eighteen years. Ode to the Saint Patrick From a famous saint dying to over-indulging in green beer, corned beef and cabbage and t-shirts with funny sayings…wow, ain’t America grand! March 17th, as most of us know, is the time to dress in green from head to toe; don’t want to get pinched! Enjoy a pint or two (three) of Guinness, eat corned beef and cabbage and make merry with your friends. Also known as, St. Patty’s Day! I mean, St. Paddy’s Day; we embraced the holiday as practically our own (in America) but can’t even get the abbreviation right, ugghh!
Ireland followed with their own parade starting in 1903. So, America celebrated St. Patrick’s Day much larger than the Irish, until the Irish got wise to it…I would say maybe it went a little something like “those
Americans are having much more fun with OUR holiday! And, making a lot more money (from a tourism council member). We are Ireland, we are the REAL Irish so KISS this! We’ll show them how to put on a blimey St. Patrick’s Day party!” I mean, think of the many tourists who may have gone to Ireland to see the “real” St. Patrick’s Day celebrated only to be disappointed that it was a little underwhelming…well, the Irish fixed that. ‘Cause Dublin, Ireland is the place to be in the world for the number one celebration of St. Paddy’s Day. And not one moment after.” We have the Irish immigrants to thank for bringing St. Patrick’s Day to America and making it more of a “party” holiday than it was originally in Ireland. March 17th was a (more quietly) celebrated religious Feast of Saint Patrick on the day of his death; who, after being enslaved by the Irish for many years, escaped, went home, became a priest then went back to Ireland to “save the Irish from paganism” using a (3-leafed) shamrock to teach the Holy Trinity. And, the pubs were originally closed on this day – say it ain’t so! Americans took this holiday and made it into the wonderfully fun, over-indulgent holiday with parades, green beer, girls dressed up as sexy leprechauns, guys wearing “Kiss Me I’m Irish” t-shirts and tons of corned beef and cabbage on the side! The first recorded St. Patrick’s Day parade was actually in New York – not Ireland – in 1762. This was again thanks to the increase of the Irish immigrants to the United States.

Welcome back to “The Sweet Spot”! Singer/songwriter Brett Young is our topic this edition. Young was an SEC baseball player at Ole Miss and was drafted to the big leagues before an injury ended his pitching career. The man had the talent and work ethic to make it pro, he just changed his focus to music. Seven years ago, he was playing house shows in Nashville to tiny crowds. He kept grinding. He kept working at his craft, and now at age thirty-seven he’s finally seeing the fruits of that labor. Not everyone makes it in their twenties. Aspiring musicians…everyone…needs to hear that. There is no timetable for success, it can find you at any time, but it favors those who are relentless in their pursuit! Now, Brett is a budding superstar. He has the ‘It’ factor; the intangible spark, the indefinable characteristic a human possesses that immediately draws you in and holds your attention. He owns the space, as they say in theatre. Do you have a friend who is good at everything? Everyone likes them, they always get the girl, the job, the money, they are good at sports or anything they attempt but are STILL gracious and humble. They are always crushing goals and spreading joy to those around them? Well, Brett Young is country music’s version of that guy. He’s tall, he has the look, he has the right attitude, his voice is soulful, and he can write and play his own songs. I personally sat and watched an entire college sorority drool and swoon like middle school girls over Brett as he signed auto-

Bret Young graphs after our Concert for The Kids last month. This was after he purchased the remaining tickets to make the show a sellout and add more to the donation total for St. Jude. My point is, I really wish Brett Young was my big brother. In all seriousness, the music should be the defining factor whether someone will have success in this industry. Guess what? He could sneeze in an empty room and it would go to number one right now. The dude is on fire. His self-titled debut album has been out just over a year. Brett co-wrote eleven of the twelve tracks, which is impressive by today’s standards. Three consecutive singles, including his first release, all went to number one on the airplay chart. This is all wonderful for captivating a female audience, but Brett’s steel blue gaze and chiseled jaw can only get him so far with half the audience. To become the complete package, he needs what we lovingly call in the business a ‘butt kicker’ (that’s the PG version anyway.) A driving party banger or toe tapper to win over the men. He really let his vulnerability show in this album, there are lots of low tempo breakup songs, so it will be interesting to see what direction he takes going forward. I expect the next five years to be a wild ride to the top for Brett Young, his future is as bright as I’ve seen in some time.
