So, here we are in March. The year is flying by already. It’s about that time we start heading into spring. I grew up in Western New York and could not wait for spring time. As a kid, as soon as it hit 60 degrees we where in the pool. Not in Florida though. Too cold! Check out this issue for some great St Paddy’s Day parties. I know a lot of our advertisers want to see you at their venue. Be safe and have a designated driver if you choose to partake in the green beer. Don’t miss the Rockin’ On The River Event at the FFA Training Center the beginning of April. Two days of great music, and we love live local music. The Polk County Music scene is awesome. Head over to our Live Music calendar for all the live performances around the county. Until next time! Expect More, Get More, We Deliver. Chris Douglas Publisher/Editor

Professional Boat Racing Returns To Lake Alfred

I

t’s like NASCAR on the water! Watch boats go up to 100 mph as they race on Lake Alfred April 26 thru April 28 as the US Title Series kicks off the season at Lions Park in the City of Lake Alfred. The event will feature one day of testing, on Friday, and two days of boat racing on Saturday and Sunday. Watch as multi-generational drivers push their limits to win this year’s trophy. Safety is key for the drivers. There will be an enclosed race driver capsule escape demonstration and re-certification for capsule drivers. The underwater Houdini exhibit will show the safety features of the enclosed module and that the driver can escape within fifteen seconds in case of any crashes or emergencies happen on the water. It’s a family affair! The boat racing community is like a big family – it’s a community of people that have a passion for racing but also enjoy each other’s company as they travel around to different areas during the racing season. Many boat drivers reside in the north, so of course, their favorite races are the ones that bring them down to enjoy sunny Florida! Many take a couple extra days around the race time to see the sights and soak up the rays. In addition, these race teams are comprised of grandfathers, fathers and now, sons AND daughters – taking up the torch and continuing this racing tradition for many more years to come. About the organization: Race for the Kids Foundation (“RFTK”) is a 501(c)(3) organization to raise money for organizations that help children. The foundation members raise charity money through the venue of boat racing. Their mission is to promote boat racing that benefits groups such as the Lake Wales Kiwanis to help build Barney’s Dream; named for a boy that was

confined to his wheelchair his entire life; Troop 113 Auburndale Boy Scouts; Lake Alfred Little League; Florida Lions Camp – a camp for challenged children; Citrus Center Boys and Girls Club of East Polk County; Autism Speaks; St. Jude’s Children Hospital; The Humana Society of Polk County for its Paws to Read Program; Sunshine Foundation Dream Village and American Diabetes Association for Juvenile Diabetes. This year, the Race for the Kids Foundation will be generating money from the boat races to benefit Autism Speaks and St. Jude’s Children’s Research Hospital. How Race for the Kids Foundation got its start: “Basically, RFTK started with me and my late wife, Mary. She was the one who gave the event its name.” says RFTK President, Gary Levin. He added that RFTK began on the shores of Tiger Lake at the Florida Lions Club and was created as a fundraiser for camp repairs after the 2004 multiple hurricanes. Levin is grateful for all those who have helped make RFTK possible. “What we started, and where we are today could not have been successful without, my late wife, Mary, and good friend, Bill Hosler, who is RFTK Vice-President who is a spry 87 years old. Believe it or not, he was still racing at 82! Both charity and racing are in Bill’s blood.” Race boats are Hydroplane and Runabouts and utilize 2-cycle outboard motors with methanol race fuel mixed with castor-based lubricating oil. There are ten (10) classes of boats that will be racing. A schedule can be found on the US Title Series website: www.USTitleSeries.net Boat racing benefits youth activated projects with

revenue generated from admissions, vendors and sponsors. Race Teams will set up their pits starting on Friday, April 26, from 10 am to 5pm. Practice runs occur on Friday from 1 pm to 5 pm. Practice runs are held Saturday morning beginning around 10 am. Race times on Saturday and Sunday are from 12 noon to 5 pm. This race is estimated to generate $250,000 to $500,000 for the local economy. Admission is $5, free parking and kids 10 & under are Free! Thank you to the City of Lake Alfred, Polk County Sports Marketing and Today & Tonight Magazine for helping make this race possible. If you would like to send a donation to help support the event as well as our benefiting charities, they may be sent to: Race for the Kids Foundation, PO Box 7507, Indian Lake Estates, FL 33855. Give Me Liberty Or Give Me Taxes The only thing certain in life, as Ben Franklin once said, are death and taxes. With millions of Americans receiving their tax returns, only to find out they owe money, they’re probably going to be wishing for the former rather than the latter. I get it. We need to pay taxes. It’s what we pay to live in civilized society, as Oliver Wendell Holmes, Jr. said. We need them to pay for the things we need. Roads. Bridges. Schools. The military-industrial complex. Tax breaks for companies that outsource jobs. That border wall Mexico’s supposed to pay for. Trump’s golf games. (Wait! Where was I going with all this?) Americans, on average, spend more than $16,000 on local, state, and federal taxes, while they only spend more than $9,000 on food and clothing, according to data from the Bureau of Labor Statistics. We spend more on taxes than we do on feeding and clothing ourselves. Even if we need to pay taxes, do we really need to pay so much? Does Trump really need his golf game more than we need food on the table? Further complicating matters is how we have to pay money to pay our taxes. We either have to hire an accountant (which costs money), buy tax software (which costs money), or gain a comprehensive knowledge of our complicated tax code to do our own taxes (which costs time and money). Either way, we’re spending money to pay money! Also, why do we even need to figure out our own taxes? Why do we have to fill out so many forms just to tell the government how much we owe it? We don’t have to calculate how many electric appliances we own and how many times we use them to figure out how much we owe in electricity. The electric company just sends us the

bill. So why doesn’t the government do the same for our taxes? It’s not as if the government doesn’t already know how much we owe. If we even pay one cent less than what we actually owe in taxes, the IRS will find out and clamp down hard on us. Meanwhile, nearly $7 trillion is being stashed away in overseas tax havens—that’s nearly 10 percent of global GDP, as Forbes reports!—yet rather than target the tax-dodging ultra-wealthy, the IRS instead hustles middle and lower class folks like myself to squeeze us for everything we’re worth. I guess someone has to pay for Trump’s golf game! What if instead of having us do all the hard work, the IRS simply told us how much we owe in taxes? What if it just sent us a bill and allowed us to add any applicable tax deductions? Sounds like a radical idea? It isn’t. It’s called return-free filing. That’s how taxes are done in other countries like Germany, Japan, and the United Kingdom. So why not here in America? Simple. Because companies like H&R Block and TurboTax benefit from our complicated tax code, which is why they lobby to keep it complicated. They wouldn’t have customers otherwise! Who knows? Perhaps one day the government will actually serve “we the people” rather than special interest groups by simplifying the tax code for the lower and middle class and actually going after the real people with money. Unfortunately, that seems as likely as our current president spending more time in the Oval Office than on the golf course. Until then, the only thing certain in life are death and taxes—and many of us anticipate the sweet release of death! QUESTIONS OR COMMENTS Info@todayandtonight.com MARCH 2019

fter just being together since December, Fire Jass Trio is heating up the music scene in Winter Haven. This trio focuses on songs from the 1920s and early 1930s commonly known as the “jazz age”. Fire Jass Trio plays at the Fire Restaurant in downtown Winter Haven on Wednesdays from 6 p.m. to 8 p.m. “The jazz we play is more melodic and accessible,” says guitarist George Grosman. “We talk about the music and educate the audience. We get people involved and love to interact with them.” The band also includes bassist Holly Cordero and drummer Sam Farmer. Brittany Fox, with Fire Restaurant, describes the band as phenomenal. “It’s great music with a nice crowd,” she says. Fire, a upscale casual dining restaurant, specializes in steaks and has a variety of specials every day. “It’s a good hour to eat and enjoy the music.” After living in Winter Haven for a year, Grosman, a longtime singer, guitarist and songwriter, began exploring the local music scene. “I was delighted to find quite a thriving music scene 10 MARCH 2019

greatest musical jazz genius. My other influences growing up were the Beatles, Rolling Stones, The Who and later BB King and Muddy Waters.

here in Polk County,” he says.

He decided to go on the hunt for local talent and social media helped tremendously. “Musicians are looking for gigs on Facebook but they are now on Instagram too. A lot of them are migrating there,” he explains. “Social media is imperative. I’ve met great people.” In fact, he found Cordero on Facebook. Technology has helped the music scene as well, Grosman says. “It’s great for networking, learning new music and promoting your band.” It can also assist musicians as they play

on stage. “For example, if the bassist needs to play ‘Blue Moon’ in E flat, she can bring up the song in a different key and have the music in front of her,” he says. Q: Why did you start Fire Jass Trio and who were your biggest musical inspirations? I’ve always wanted to have a bare bones jazz trio meaning no keyboards or horn players. I really love jazz. It’s the most versatile you can play, specifically early jazz. My biggest influence above all was Louis Armstrong. I love everything he did. He is the

Q: When did you begin playing music? I was born and raised in Prague then lived in Canada. I studied classical guitar in London at the Guildhall School of Music. I taught music and English in Canada and then pursued music full time in the 1990s. I’ve been doing live gigs ever since. I have about 15 albums out with original music and cover songs. I have written music for others too. I was a rocker in the 1970s and also played the blues. I also play in the band Swing Boutique and work part time as a studio musician at Full Sail University in Winter Park. Q: Do you like the Winter Haven music scene? I like it more and more. I only knew one musician at first and felt kind of isolated. But I met great people. My eyes are opened and I love it now. We’ve been blessed to perform at Fire. The owners are great

and very welcoming. We made jazz Wednesday a success and our fan base is growing. We are proud and hope it continues for a long time. Holly Cordero has played the bass since she was 14 years old. She attended Otterbein University in Ohio and received degrees in jazz studies and music business. Then she obtained her masters in jazz performance at NYU. When Grosman told her about his idea for a jazz trio, she jumped at the opportunity. Q: What do you like about playing the bass and are you enjoying Fire Jass Trio? I can do different styles and genres. I’m always learning something new and it’s always growing as an instrument. Whenever you are in a group and play together, you notice each other’s nuances and learn about what each other does and it sounds whole as a group. At Fire Restaurant it’s a nice, steady, regular crowd and also newcomers. Q: Are you involved in other bands or musical groups? I am in several other groups from country to R & B. I also play for the Imperial Symphony Orchestra. It’s my first year and I love it. It’s a nice community and like a family.

Everyone wants everyone to succeed. Q: Who are your biggest musical influences? Composer John Cage questioned what music was and stretched the boundaries. Bassist Ray Brown wasn’t flashy and had great technique. Most of jazz music isn’t written down. Not every note will be perfect, but it’s still a part of the song. This is Sam Farmer’s first real jazz gig and he never thought music would end up being a career. When he was 8 years old, his dad bought him a drum set and he’s now been playing professionally for 10 years. Farmer is based out of St. Petersburg and also has a band called Someday Honey focusing on Americana and soul. Q: Why did you decide to join Fire Jass Trio and do you enjoy it? I met George and he was looking for a drummer. Jazz is the basis for a lot of music and I try to make every gig a learning experience. Being with Fire Jass Trio is helping me become a better drummer. There is lots of room for creativity. Q: What are your future goals? I would like to play every instrument if I can. If there is an instrument, I want to know how to play it. I never had drum lessons. I learned by ear and by playing with others. Anywhere you want me to play, I’ll be there.

THE GRILLE At Cypresswood: Casual Meets Sophisticated

Black & Blue Burger, fresh angus beef with blackened seasoning topped with blue cheese crumbles.

18 MARCH 2019

By Amy Sumerlin Photos By Chris Douglas

Just yesterday afternoon, right around cocktail thirty, hubby and I were discussing how much we loved our home. “I ain’t moving. Ever.,” I said, as I looked around our backyard. And yes, part of my love for our neighborhood is the house that we made a home, but part of it is the amenities we enjoy in Cypresswood… neighbors who become close friends, safe streets, a golf course, tennis courts. And the restaurant. It may sound silly, but throughout the years, as a working mother, it has been downright comforting to know that those days I forgot to thaw the meat or put the crockpot on – there was still an option, right in the neighborhood – within walking or golf cart distance. And that option got even better in January 2018, when Duncan and Mary Ann Owens took over said restaurant. “That was when the homeowners took over the management of the course,” explained Duncan, “and Cypresswood was going through an extensive remodel – the course, the clubhouse, the landscaping.” THE RIGHT FIT “We knew that the Cypresswood location was going to be a great fit for us,” began Mary Ann. The family’s combined business

experience – Duncan had wide-ranging food industry experience, Mary Ann had a large amount of catering experience, and their daughter, Nikki, was an event planner – was what made the Cypresswood opportunity perfect for them. Additionally, the pair already owned a successful restaurant, the Beef O’Brady’s in Davenport. With the family’s combined experience, and the Cypresswood location – their goal was to create a great restaurant – but one that could also easily service the community’s event needs. “We want to provide a Country Club atmosphere with reasonable prices,” Duncan said. ACTIVITIES Just a short nine months after opening their doors, the Owens family displayed their food prep and event skills with an extremely well-prepared – and well-attended – Winter Haven Chamber Network Showcase. “It was our Grand Opening party,” he continued. Since then, the clubhouse and Grille has become a popular community gathering spot for bridal showers, weddings, meetings, and more, including Bingo – which is open to the public – every Tuesday night. And let’s admit it: Bingo combined with a cocktail (or two) from the Grille’s bar (full service, by the way) is infinitely more fun. Coming up March 16, you can find St. Paddy’s Day here in Cypresswood, as the Grille and the Cypresswood Social Committee teamed up to plan a Dinner/Dance/Party. Of course, you’ll get Corned Beef & Cabbage, new potatoes, carrots, and rolls. Rick Jeffreys will provide the entertainment. Cost is $25 per person… alcohol not included but available! THE FOOD On a recent Saturday, hubby and Mom accompanied me as we enjoyed a stress-free weekend lunch. In the back of my mind, I was already thinking – before I ever sat down – that if we ate enough at this mid-day meal, cooking would not be needed that evening. Therefore, we started out with not one but two appetizers, the Onion Petals ($6.00) and one that you won’t find on the menu… the Fish Bites ($7.00). Fans of the “Bloomin’ Onion” or “Awesome Blossom” or whatever it is called wherever you are will love the petals, which are more substantial than many of the similar appetizers at other eateries – and they are beer battered and fried just right, and

served with Texas petal sauce. The Fish Bites? They were on the menu at one time but rotated off… but the Owens aim to please their regulars – so just ask, and you will receive. They are hand battered with a quality white fish… and none were left on our platter. When it came time to order our main entrée, I guess I was still bummed that I had missed Prime Rib night (every Thursday night, just $19.95) so I chose the Hot Prime Rib Dip Sandwich ($11). I was extremely pleased with my choice, as it featured perfectly prepared prime rib (I’m a stickler), provolone cheese, and creamy horseradish sauce. It all came easily off the bread – I’m a low-carb geek, I admit. Next time, though, I will request additional horseradish because I’m a horseradish geek, too. As my side, I chose the sweet potato waffle fries, which is an upcharge of $2. Mom is somewhat of a regular at the grill, so she didn’t even look at the menu – she knew immediately that she wanted The Club ($9.50) with the Grille’s chips. She’ll tell you they have the best, most crunchy

chips around. Expect a generous sandwich (she was full and still took half of it home), but make sure you ask for crispy bacon, if that’s the way you prefer it. Hubby chose the Bogey Burger, all the way ($9.50) and when I asked him how it was, all he could do was give me a thumbs-up, because his mouth was full… but he later told me it, and the fries that accompanied it, were excellent. NOT JUST FOR RESIDENTS I’m afraid that because I’ve talked about my love for our neighborhood, I ’ve given the impression that the Grille is just for Cypresswood residents – and it’s not. It’s open to the Public – and now that I’ve told you the secret, come get your own order of Fish Bites. And they’ll welcome you like a regular. FMI: The Grille at Cypresswood, 1099 Clubhouse Rd., Winter Haven. Hours: Sunday, Monday, Wednesday, and Saturday, 11AM-4PM. Tuesday, Thursday, and Friday, 11AM-8PM. (863) 324-6174. elixir. It might be too large of leap to connect some of the nation’s struggles to the commoditization of food; however, consumption like civilization is a cycle in which we are losing traction. From a memory standpoint, food holds a powerful connection to both our past and present. Think about your favorite memory and chances are there will be a vivid image of a delicious dessert or entrée. Our brains connect our experiences to the flavors and aromas we experience. Encoded on our consciousness, the first taste of ice cream or the first sip of wine becomes a strong memory. Our human stories are entwined with the culture we embrace, the land that surround us and the sensory images we remember. Looking back through the art, it was the Dutch masters who captured the perfect essence of a pear or lemon. They carefully painted home interiors filled with luminous bowls of fruit, platters of meat and scenes that featured a rich tapestry of life centered around the dining table. Fastforward 500 years, and it is hard to image a generation masterfully painting frozen chicken tenders, flaming hot potato chips and pizza rolls. Could some of the answers to our societal problems stem from our lack of slow food? We are building a generation that does not understand the food we eat determines our culture. Our ability to connect communities is rooted so deeply in the food we eat. We owe it to ourselves to reconnect to the food that nurtures our souls or we will truly be in a pickle. Local Veterans Honored with Lakeland Flight to Honor by James Coulter

Gary Clark served his country in Vietnam

and Desert Storm. His father before him served in WW2. His family has long honored their country by dedicating their service to it. In turn, their country has honored them and other veterans through various memorials in Washington, D.C. Sadly, Clark’s father passed away before he had a chance to visit the World War II Memorial, which was completed in 2004. To honor his father’s memory, Clark decided to accompany many of his fellow veterans to the memorial through Flight to Honor, for which he serves as Chairman. Flight to Honor is an annual honor flight that flies veterans from Polk County to Washington, D.C. for an opportunity to spend the day at our nation’s Capital and visit its 28 MARCH 2019

many war memorials erected in their honor. This year’s flight will be hosted on April 30. Guests will arrive at 4 a.m. at Lakeland-Linder Airport. There they will be processed through security, have breakfast, and then be boarded onto their plane for their flight. At Washington, D.C., they will take a tour of the war memorials, including those for WW2, Korea, and Vietnam, as well as the Lincoln Memorial. Time permitting, they will also visit Arlington Cemetery for the changing of the guard. At the end of their tour, they will return to the airport and fly back towards Lakeland while enjoying an onboard dinner catered by Mission BBQ. They will then arrive in Lakeland later that evening around 8 p.m. to be greeted by their loved ones. “We raise the money, we charter a flight to do it, and so we take them up and back in one

day,” Clark said. The goal of these flights is threefold. First, offer these veterans an opportunity to visit Washington, D.C. and its memorials in their honor. Second, offer them a sense of community among their fellow veterans, as well as an opportunity for other people to show their appreciation for them and their service. Third, impress upon young people the value of service beyond self and get them to participate in a way to show their participation. “I think in all the previous times, we have been able to accompany those three objectives,” Clark said. Flight to Honor has been hosting their annual flights for the past seven years. Previously, they had chartered these flights out of St. Petersburg. They decided to start departing from Lakeland. slightly more than a commercial service flight anywhere else, since they have to charter their own plane and bring in TSA agents to provide security; nevertheless, the location proves much more convenient for local veterans to travel to, Clark explained. “We found that there were a lot of veterans here in Central Florida,” he said. “So you start realizing that there is too much and too far for them to go or for their family to greet them when they get back, [so] we decided to do it out of Lakeland.” Over the past seven years, they have hosted five flights. Initially, the emphasis was on catering to WW2 veterans. Recent years have included veterans from other wars, especially with the number of WW2 veterans dwindling. Clark himself, having served in Vietnam, considers these flights especially poignant, as they help honor the service of Vietnam veterans such as himself, who never received such honor upon their return at the end of the war, he explained. “We came back, we were spit on, we were called baby killers, all kinds of names,” he said. “I had the opportunity to overcome some of those bad feelings. A lot of these guys have not. And they have been carrying this for 50 years in some cases. So this is a way to hopefully make some of this heal.” These flights have not only provided an

opportunity for veterans to enjoy an inspiring trip to our nation’s capital, but has also

allowed many to volunteer their time showing

their respect to these veterans by helping them out during the flight.

One such volunteer, a young college stu-

dent, befriended a blind WW2 and Korean

veteran who was homeless. She raised enough money to not only pay for his flight, but also accompany him as his guardian.

“It was a beautiful story with what she did,

so much so that she is willing to go again,”

Clark said. “And there are those kinds of stories, we have a number of stories like that.” Another volunteer, Ed Pieniak, started

helping out with the flight five years ago. He initially served as a guardian for a 92-year-old WW2 veteran. Not only does he appreciate helping out the veterans, but also seeing others show their appreciation for these veterans and their service. “One great thrill was arriving in Washington and being welcomed at the airport,” he said. “People had no idea what was going on, but when they asked what was going on and realized that these were veterans who were finally being honored, I think I was really impressed by how they reacted to that.” For more information, visit their website at: www.polkveteranscouncil.com/flight-to-honor.html

ANSWERS

• It’s a well-worn trope that men refuse to stop and ask for directions when they’re lost. That point of view might seem to be supported by the results of a survey conducted by the American Automobile Association, which found that just 34 percent of male drivers admit to stopping to ask for directions. However, the same survey found that only 37 percent of women did the same.
