Exciting Times In The Garden The most exciting time after you’ve planted seeds in your garden is the first two weeks. Some seedlings move at their own slow pace but amazing things, especially after only 7 days, start to happen - like magic almost daily! One morning you go to your little garden and a line of baby kale is waving at you as if to say, “Good Morning!” and “We’re Here!” And the garden beans, growing big and strong. They have definitely been my most favorite to watch. Sprouting from that little pod through the dirt making their way towards the sunlight and waving hello to the world. You can almost see them growing right before your eyes. It really is exciting to see the changes, almost like a winning scratch-off lottery ticket exciting. Well, maybe like winning a $50 or $100 scratch-off ticket exciting – ‘cause each one of those little babies growing in my garden is gonna save me $2 to $5 each when they go from the dirt to my plate. Yum yum! We have a little while before that’s going to happen. And a lot has taken place before I’ve gotten to enjoy the miracle of these little seedlings growing each day. Let’s take a step back. First it was plotting out the area that was to be the garden – remember, though, my nine “test” red leaf lettuce plants have been doing well so I’m expanding my garden around them. Now it was the fun, not so fun, time of getting the area ready to plant. It’s all about the shovels and the gloves – oh, our gloves, you’ll find out quickly how much you love your gloves and so do your hands. No blisters for me from this thing called a hobby (manual laboring). Just getting the grass out of the soon-to-be-garden, and shaking all of the soil from it’s roots will take one back-breaking day. But before you can rest, we must till the soil, pull out as many roots as possible that we’ve churned up, add a nice layer of topsoil then water. Rest time! Next, it’s time to carefully plant our little seeds: kale, garden beans,

Brussels sprouts, spinach, carrots, scallions, sweet peppers, and zucchini. These will be my first veggies planted. I actually bought a few more packs of seeds to plant, but we quickly found out that our area was not big enough to start with even though we sketched out our area on paper first. And, even though the seed packages were read, and we thought that the seeds were planted correctly some were planted a little too close together. My dad stopped by to see how things were growing; he asked with a little chuckle if I read the packages. Apparently, my four rows of garden beans aren’t quite spaced far enough apart. My 12 inches a part should have been more like 24 inches a part…ugh! So, they may shade my kale and Brussels sprouts too much, interfering with the 6 hours of sun they need each day. And... my kale is too close together and my zucchini is going to need more room to spread. Crying! But, my dad said it’s something I’m going to have to learn. And with practice, trial and errors, hopefully I’ll have vegetable gardens just as bountiful and beautiful as Bok Tower Gardens – well, maybe just as edible and healthy since we don’t have the full time professional green thumbers like they do. Next, I’m told will be the “thinning” process. Say what! I guess to help the healthy plants flourish; you pluck out the weaklings or thin them if someone, no names, accidentally plants them too close so you have nice strong plants. With my luck all seeds planted will grow healthy and I’ll feel guilty for pulling out perfectly good plants. That’s another day’s problem. For now, I’m content watching my cute little garden grow each day. Pulling out those pesky little weeds that keep trying to grow back, and making sure they have enough water to stay happy and healthy. I think my thumb just got a shade greener.

CORNERSTONE GRILL Lake Alfred’s Hidden Gem

cook.

We decided to try Cornerstone Grill in Lake Alfred,

and I expected a hearty, home-cooked meal.

To our delight and surprise, it was so much more.

A WEALTH OF EXPERIENCE

Prior to returning to his hometown of Lake Alfred,

Matthew Arbuthnot had spent the previous 16 years cooking for a multitude of Disney restaurant venues in Orlando.

“I learned quite a lot,” Arbuthnot remembered.

“Some of the experiences taught me about restaurant

management and others, more about culinary skills.”

Two chefs in particular influenced Arbuthnot’s culi-

nary style; one was French, and one was Austrian.

I personally would love to thank those two chefs.

a burner since 4 AM… it was made for you. “And 85% or more of our food is obtained locally,” Arbuthnot explained with pride.

mitment, he went down the list: Local pota-

toes, peppers, macadamias, and eggs (organic, free range, of course). “We grow almost all of our own herbs, as well.”

We started that evening with the Mahi

Nuggets ($7.99). “Good choice; that mahi was still swimming yesterday”, said our

wonderfully perky and efficient server, Misty. I quickly learned that I would have been

quite content to make a meal out of these – the nuggets were delightfully airy, more fish than breading.

But alas, I had to share, so I also ordered

($17.99). Seared and herb crusted, it is served with roasted potatoes, and artisan greens

tossed with herb vinaigrette and lemon butter sauce.

As long as I can get a side of that kale.

Not surprisingly, both of us had a to-go box,

which meant a delightful evening of leftovers in our future.

I forgot to mention: they have wine! (Beer,

too, for the hubby.) Better, I simply asked for

means by “rustic elegance”, which is what he describes as his philosophy for the menu.

a generous 13 ounces, made even better by the red wine onion butter. His steak was served

with garlic mashed potatoes and the freshest side salad you’ll get if you’re not tossing it yourself at the farm.

BACKSTAGE PASS

COUNTRY MUSIC:

It’s not what we do but it’s who we are. It’s only April, but popular local country artists the Josh Blevins Band are having a stand-up year. Besides being booked regularly at many Polk County haunts, the band were recently runners-up in the Runaway Country Artist Search to open for Jason Aldean at Orlando’s Runaway Country Music Fest, which garnered them an opening spot on the main stage for CAM, Thompson Square, Locash and Billy Currington. Local fans invaded Orange County to show their support during the contest phase, and that trend shows no sign of stopping, with numerous fun shows on deck. Learn more about the band then catch them live at one of your favorite venues or events, which include Fool’s Day Regatta at Old Man Frank’s in Winter Haven on April 1st, Ybor Cigars and Spirits in Lakeland, Apple Lounge and Grill in Winter Haven, or at the Rockin’ on the River for Autism event at Camp 10 APRIL 2017

Josh Blevins: Lead Guitarist Bill Masters Drummer - Jamie Owens Bass Guitar - Scotti B. Acoustic Guitar - Jeff King I’m going to be honest with you. I have some of the best musicians that play with me. They are the most

humble guys and easy to work with. Bill is incredible, and Jamie has only been with us for a few months but he is on fire. My bass player, he thinks outside the box, and our acoustic player is so dedicated. They are all dedicated. T&T MAG: Is everyone local to Polk Co.? Where are you originally from? JB: Yes, everyone lives in Polk Co. Originally, I was born in West Virginia and came here via Ohio.

T&T MAG: When did you first pick up an instrument? JB: My dad’s a pastor of a church, so I’ve been singing and playing guitar since I’ve been about 4 or 5 years old. T&T MAG: Why did you decide to play the genre or genres you do? Was it what your father listened to? JB: My dad only listens to gospel music. I was born in West Virginia and so it’s just something I like, nothing else really appeals to me. I do like bluegrass, but country music’s what I love. I was raised country so it has stuck with me. T&T MAG: What has your favorite live-music performance been? JB: I think that has to be when I got to open for Clint Black. That was a 45 minute set and I got to speak with him for about an hour afterward. I’ve been fortunate enough to open for a lot of amazing artists like Kipp Moore, Joe Nichols, Craig Wayne Boyd, Swan Brothers and Tyler Farr.

I’m definitely looking to do those kinds of shows with the guys that are in the band now. T&T MAG: Where do you usually gather songwriting inspiration? JB: One of my songs on my album I co-wrote with Brandon Newell, it’s called Whiskey Stained Glass. My dad called me one day and said he had been praying and was thinking about a lot of people become alcoholics, and the only way you can handle seeing life if you’re in that situation is through seeing through that glass. The whiskey glass. So he was the inspiration for that. He called to tell me he thought it would make a good song title. My album name is called She Ain’t Country Enough, and I wrote that with my wife, Dusty, after coming home from a show where she was trying to put on her makeup while riding in my truck, a big jacked up truck on 38s. It ain’t a smooth ride! She was telling me I needed a new truck and I looked at her and said, you ain’t country enough!

T&T MAG: How did you end up on the chain of lakes, here in Polk County? JB: My dad wanted to retire from preaching and he was always moving

to Florida. I wasn’t going to come originally, but here I am. He was going to retire, well, that didn’t happen, but we’re here. I think I moved here when I was 18 or 19 years old.

T&T MAG: What do you do outside of playing music? JB: I like to spend time with my family on a boat. I have 2 kids, a boy, Josh, I call him Bubba, and a girl, Austin, I named her after a Blake Shelton song. We also ride horses, but we hang out on our pontoon boat on the chain of lakes a lot.

T&T MAG: What is your favorite thing about living here? JB: The best fans are here. When we did Runaway Country we had over 300 people drive out there, to Kissimmee, for the contest. That’s some dedicated friends and fans. Nobody does that. There is never a loss of places to play or dedicated people. No matter what they do they show up and give, it’s amazing. T&T MAG: Who are your favorite musicians in the area? JB: Well my band. They are so talented. And I love Jim and Judy [ Taylor, of Jim and Judy’s Big Ass Jam]. They are great people. And I really enjoy going out to hear B. Haven. It’s nice when other artists are happy to have you come hear their shows, and they are all good people. T&T MAG: What is your dream gig? JB: My dream is that I want to play on the Grand Ole Opry. I don’t even care for how many people. T&T MAG: If you were stranded and could only have 3 albums to listen to forever, what would they be? JB: I would pick Garth Brooks’ No Fences, George Straight – The 2-pack, 50 Greatest Hits, and anything by Chris Young. Those are my top 3! BRIAN’S BRAIN

Wasting Away Test-1-2. Testing-1-2-3. Is this thing on? Okay…just wanted to make sure my keyboard was working. I watched a program the other day about the TV show, Gilligan’s Island…one of my alltime favorites. It was said that Alan Hale Jr, who played Skipper on the show, was 43 years old when he took the part. When I was kid watching the show, I always thought of the Skipper as, “old”. At this time, I am 46 years old. I am as old as the Skipper was when the show ended. Heck, Jim Backus, aka Thurston Howell III, was only 50 when the show started. I am now officially old. Not that I had any doubts, but the truth hurts. I have had many signs of my ancient status. My hair is heavily grayed. Actually, I prefer to think of it as silver. Silver sounds so much more refined than gray. Battleships are gray, sports cars are silver. Some of the freckles on my arms have morphed into what might be described as age spots. Although, I think I shall think of it as melanin patina. My bones crack every morning when I get out of bed. Either that, or we have a bubble wrap rug in our bedroom. My muscles ache. Not that I have a lot. In fact, I suspect that if you cut my body open, my muscles would basically look like a series of knotted rubber bands wrapped around my cracking bones. While you’ve got my body ripped open (the one time I could truly say that my body is ripped), take a look at my organs. I don’t drink alcohol, so I guess my liver would look alright. Or at least, as good as a liver could look. My kidneys would be Diet Dew stained. My stomach would have at least two slices of undigested pizza, I’m sure. I still have my appendix, but I still have no idea what it does. Probably a slightly chubby mass, much like the body it inhabits. My

heart would probably smell like bacon. I don’t know what condition it would be in. Everyone tells me that it would probably be filled with grease, and barely functioning from all of the fatty cooked foods I eat. I think it’s probably one of the healthiest hearts the world has ever seen, and here’s why. People work to build muscle, and make their body more attractive, right? To do that, they work out often, push their body to the limit. Well, I do the same with my heart. They say cholesterol builds up in our veins, making it harder for the heart to work. Well, my heart is getting a work out constantly. So I figure, my heart is one sexy, sculpted beast. Sorry…I lost track of what I was talking about. That’s another thing about my aging process. I forget things all the time. I’ll be talking to somebody, and suddenly, I’m lost in my own dialogue. Oh, and that reminds me. I’m forgetting things all of the time. I’ll be talking to somebody, and suddenly…oh…my eyesight too. Glasses, yep, I have to wear them. I really only need them to read, but I wear glasses all the time. Truth is, they make me look smart. Now, I’ve always been a genius, but I’ve always looked goofy. So the glasses help level my brains and beauty. Oh, and the worst part about getting older is that I’m always forgetting things. The power of the Chain of Lakes is the vibe it gives to our community.” Just a few years ago, Worthington says many people thought accessibility to the lakes was confined to needing a boat or living on a lake. But that’s changing due to all of the entrepreneurs trying to make it more accessible to everyone. Companies are offering boat tours and rentals of paddleboards and kayaks. Economically, access to the Chain of Lakes does provide an increase in the tourist base and

recreational events help bring people to the community, says Worthington. Whether it’s fixing boat ramps, bringing in businesses, or holding events, we need to zero in on the chain, says Thompson. “It’s what makes us unique. It’s our history. It needs to be cherished and brought to the forefront.” Chain Life is a volunteer-based organization and the commit-

tee consists of all walks of life, such as a fireman, professor, Realtor and psychiatrist. “Everybody loves the lakes,” says Thompson. “We all have different reasons for loving the lakes. “You can never market the Chain of Lakes enough,” she explains. “It’s a grassroots effort.” So go and see if life really is better on the lake!

A haven for bluebirds, doves, robins and blackbirds, our backyard is filled with a flurry of feathers as the wild birds enjoy the scratch that the hens leave behind. Until last month, our little chicken coop was worry free, adrift in the happy comfort of flowers, shady trees and plenty of places to find tasty bugs. Our first backyard farming calamity occurred with the combination of two key events: the hatching of our hen Emily’s latest brood of chicks and the inauspicious arrival of a red-shouldered hawk. With backyard chickens, you quickly become accustomed to the variety of sounds the hens make throughout the day. They celebrate each time they lay an egg with a very loud, cackling “egg song” much like a rooster crowing. Scientists are not exactly sure why chickens display this behavior; however, many think it is an instinctive measure to protect their eggs from predators. While extremely cute with their constant cheeping, baby chicks are also quite noisy and like a gigantic megaphone this clamor

attracts predators. We were first alerted to the arrival of the hawk by extremely loud cackling and shrieks from all five of our chickens. At first, we thought it was an extended egg song but as the noise continued, we quickly began to realize this was terror not a celebration. The other neighborhood birds also joined in the commotion sending a loud alarm through the tree tops. After hearing the commotion and realizing the first chick was missing, we quickly spotted the predator perched magnificently upon the telephone phone pole in front of our house. From this vantage point, the hawk was able to see the entire backyard and we gained a new appreciation for the phrase “watched like a hawk.” Hawks are incredible predators and though we tried supervising the flock, they are patient hunters. Out of complete frustration, my husband installed a large plastic owl as a deterrent, but the hopeful decoy was a complete bust. Despite our best tactical efforts, only the neighborhood mocking birds were successful in chasing the hawk away for a few hours. Completely defeated, we lost four chicks in two days and resorted to moving the lone survivor to another farm for safety. Throughout the terrible weekend, I found myself mesmerized by watching this beautiful creature wait for our next move. We had become prey to the power of mother nature and witnessed an emotional hands-on demonstration of Darwin’s survival of the fittest. In the end, we were able to resolve our emotions to accept, despite all of our human interventions, this is just what hawks do. QUESTIONS OR COMMENTS info@todayandtonight.com

WILLIAM: Brew Hounds is a very laid back place and the people that come in are pretty chill and I also work for the best owners anybody can ask for. T&T MAG: What’s your favorite music? WILLIAM: I like anything old school, music today kinda sucks or maybe I’m just getting old. lol. T&T MAG: Where’s your hometown? WILLIAM: I was born in California but raised in Miami. I did all my growing up in Miami so I consider that home. T&T MAG: What’s the craziest thing you’ve seen a guy do or say to try to pick up a girl? WILLIAM: Guys drinking and trying to pick up girls is not a good combination but it is some funny stuff. But I haven’t seen anything crazy T&T MAG: What is something your customers would be surprised to know about you? Do you have any hidden talents/ hobbies? WILLIAM: Well, I think some of my regulars would probably be surprised at my cooking skills and the fact that I can play many instruments. My mother always told me to be the best at whatever I did so here I am trying to be the best bartender. hahaha T&T MAG: When can people come by to see you at your bar? WILLIAM: I’m off Thursdays and Sundays and I only work at night.

Lakeland TV Is Live As I said in last month’s article I was looking for GOOD news stories in and around Polk County and it came in the form of an invitation to an event at Lkld TV. Chuck McDanal of Lakeland’s new and energizing venture shared the quest to bring you more good news stories. T&T MAG: Could you tell us about LkldTV and its intent and content? CHUCK DANAL: LkldTV is an internet-based TV station headquartered in Downtown Lakeland with a mission to amplify the diverse voices of the Lakeland community by sharing compelling hyperlocal stories that inform, entertain, inspire and transport. We are Lakeland, Florida’s television network for the social mobile age. We share professionally produced feature stories, audio and video streaming, live event streaming and creative online content. T&T MAG: Talk about your station in terms of serving the community. CHUCK: Streaming from LkldTV. com, we look around and see so many interesting stories in Lakeland that haven’t been told. New things are happening every day that grab our attention, too. The traditional news outlets can tell you whether there’s a traffic jam on I-4 or whether it’s going to rain tomorrow. That’s not our style. Stories about things like a local alpaca farm or the classic local drive-in theater are what you’ll see from us. Sprinkled in there regularly are features about amazing people quietly doing amazing things. T&T MAG: I noticed there are other events at the studio location. Tell us more. CHUCK: Located just off Munn Park, LkldTV has a full-featured Podcast Studio, our ever-changeable Studio A, and the performance

venue in Studio B. Whether we have a String Quartet performing wonderful pieces by Mozart, or a local rock band, or a swing-time jazz show, Studio B’s full lights, sound, stage and cameras provide a wonderfully intimate experience. Our Podcast Studio features stations for a half-dozen participants and is wired with cameras to live-stream the recording sessions. Studio A has a green screen and movable sets to allow us to shoot any sort of show we need, with any backdrop, including our floor-to-ceiling wraparound windows overlooking Lake Mirror. T&T MAG: Share with us how LkldTV transpired. CHUCK: The company owner and producer Randy Borden created LkldTV. I am the team leader, President and General Manager. Executive Producer Jen McLaughlin is responsible for all content production and leads a team with a producer, creative director, video editor and a crew of freelancers. LkldTV also keeps a spot open for a paid internship every semester, as well as the summer, so these students can get real-world experience while enjoying the exciting way we focus on Lakeland. Stacy has conducted extensive research on the history surrounding Lake Mirror, including personal visits to the Filson Historic Society in Louisville, Kentucky, the home of two prominent Lakeland founders, Abraham Munn and John Morton. PORCH Dustin Lynch He’s not just another pretty face with a majestic voice, he’s smart too! Did you know that Dustin Lynch has a degree in biology and thought about continuing onto medical school but decided to chase his dream of music instead? Lucky for our ears, those dreams of being a country star came true! Dustin’s first album was very dull to me…there was only one track on the album that I liked a lot, and it was a “bonus track” entitled “Your Plan.” (a powerful song about God’s will). I’m not really allowed to say anything negative about artists or their music…but since that first album was several years ago, I’ll run the risk by saying it was a complete snooze fest. Now his sophomore album was something to write about, and by the looks of his first two single releases off his third and upcoming album… it’s going to be just as amazing! I’m drawn to a man’s deep singing voice with a traditional appeal. Dustin has that deeper tone in his voice and though I wouldn’t call his music “traditional,” I do believe he has it in him to lean in that direction without it sounding fake or forced. Songs like “Where It’s At (Yep, Yep),” “Hell of a Night” (my personal favorite), “Seein’ Red,” and his latest single “Small Town Boy” are proof that Dustin is right where he needs to be and a welcome addition to a country playlist. Some may call Dustin’s music “bro-country” (which is not a compliment to most), and it may very well be; however, it’s not completely “bro”…he’s still walking that fine line between “bro” and traditional. Almost like a modern day Jason Aldean. Perhaps I’m just a sucker for a singer in a cowboy hat? Haha I believe that Dustin came on the scene as a sheep, but after multiple number ones…we are about to awaken that sleeping lion and he’s about to attack the country music format. Dustin certainly has the ability to be one of country’s 32 APRIL 2017

next superstars if he continues to choose the songs he’s recording and never leave that traditional side of him. He has the charm to get the ladies attention and the manliness to make the guys believe that he’s “one of them.” As the website “Taste of Country” writes: “Small Town Boy” (very progressively produced) is hardly an organic country song but like Justin Moore and recently Easton Corbin, he’s learning he can get away with effects as long as he doesn’t lose the thick country accent. The song is a genuine reflection of who the singer is and where he’s at. It’s rooted in traditional country music but not stuck there.” I would have to whole-heartedly agree.
