KOREAN SHORT RIB TACOS

Preparation Instructions

FOR THE KOREAN SHORT RIBS: In a mini food processor, blend garlic and ginger until minced. Mix with soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Place short ribs in crockpot and pour 5 cloves Garlic sauce over ribs. Turn crock pot on low 1-1/2 whole Inches Of Ginger, Peeled heat. Cover with a lid and cook for 6-8 hours. 3/4 cups Soy Sauce Remove meat from pot, discard bones. 1/4 cups Plus 3 Tablespoons Brown Sugar Place in the fridge to chill to touch. 6 Tablespoons Rice Vinegar Meanwhile, skim fat off the top of the 2 Tablespoons Sesame Oil sauce. Place in a sauce pan and simmer 1 teaspoon Red Pepper Flakes until thickened. 3 pounds Beef Short Ribs Once meat is cool to touch, pull apart FOR THE CUCUMBER SLAW: with your fingers. Pour about 1/2 cup of the 1/2 whole Hot House Cucumber sauce back into the meat. You may serve 1/2 whole Carrot the extra sauce on the side or discard it. 4 teaspoons Rice Vinegar 1 teaspoon Sugar FOR THE CUCUMBER SLAW: 2 pinches Salt Peel cucumber and chop into match1 pinch Red Pepper Flakes sticks. Peel carrot and shred. Mix carrot and cucumber with rice vineFOR SERVING: gar, sugar, salt and red pepper flakes. 4 whole Tortillas Serve meat on a warm tortilla topped 2 Tablespoons Cilantro For Garnish with slaw and cilantro.

Balmoral Resort Resort Style Living, Even For Just One Night

By Amy Sumerlin I must have driven by Balmoral in Haines City a million times since April of 2017 and really paid it no attention. It was until recently when I started seeing friends post on Facebook about listening to live music, poolside, on Saturday nights that I decided to give it a try. FIRST LOOK Hubby and I decided to check it out one Saturday night we heard Southerndipidity would be playing. I’ve said for years that I take my vacations one hour at a time, and we quickly figured out that Balmoral is great for just that: As we pulled off Hwy 27—we got that vacation vibe almost immediately. Surrounding the clubhouse – where the Bar and Grill is located – you’ll find a group of 24 townhomes. But I later found out that those homes are just the start.

THE RESORT “Those townhomes are the only ones in the resort,” Garrett Kenny, the Resort Developer, later explained. Vacation homes – currently 160 of them, and that number continues to rise (by 2020, there will be 230) – comprise the rest of the resort, and here is

the best part: Each home has its own pool. “We are a unique vacation home resort; I am unaware of any other vacation resort like ours,” continued Kenny. So think about it this way: You are hosting a family reunion and they want to be close to Disney. For $280/night, the price of a nice hotel room with one king, you can rent the families coming in from Ohio a four bedroom home that sleeps 10 people and includes a two-car garage – and all of the bedrooms are master suites, so there’s no fighting about that. The clubhouse area – which includes a water park – is just the beginning of the resort’s amenities. Sprinkled throughout out the complex you’ll find crazy golf, picnic tables, and even open playfields for the kids to run wild. Coming in July is Stage 5 for the resort, the Sports Village, which will include fields for soccer, football, sand volleyball, and lacrosse. They will hold local and international tournaments there – they already have groups from Brazil and China scheduled. Also on the horizon is a sports arena for basketball, other indoor sports, and even E-Sports tournaments for the gamers among us. THE MAN BEHIND BALMORAL Garrett Kenny hails from Ireland – and still has the Irish brogue to prove it – and was a born entrepreneur. Straight out of secondary school, he borrowed money to buy one van to start a transportation company. That expanded to two vans, which eventually became a large fleet of trucks carrying, for example, concert equipment for the biggest names in rock music, such as U2, Meatloaf and Def Leopard. Soon, that company needed warehouses – and Kenny’s venture into property management began. By 1996, Kenny was a very busy man who wanted to find a personal vacation home in Florida to escape Ireland’s often dreary climate. He found one – but it didn’t take long for him to figure out that this could become a business, too. When he wasn’t using the home, of course, he could rent it out – and he knew he could find other international investors who wanted to do the same. He was right: That one home eventually became a multi-resort, multi-billion-dollar business. 8 MAY 2019

Go Green or Go Broke Last month, I wrote about how the GOP, despite claiming to love “job creators” and the “free market”, often tilt the market in favor of companies that actually create less jobs. This was most evident in their support of fossil fuels over renewable energy. I touched upon this topic briefly in last month’s column (https://bit.ly/2vhogUi), and I wish to expound upon it even further this month. It’s no secret that our current President loves coal. He ran his entire campaign on it. He probably loves coal more than he loves overcooked steak with ketchup. You could serve him a lump of coal doused in ketchup, call it a well-done steak, and he’d probably call it the best meal he’s ever eaten! His campaign promise to bring back coal jobs allowed him to receive overwhelming support from mining communities, especially those in swing states, and undoubtedly allowed him to win the election. Since then, Trump has rolled back regulations on the coal industry with the intent of creating new jobs; yet despite this, more coal plants have shut down in his first two years than in Obama’s entire first term, as The U.S. Energy Information Administration (EIA) reports. Despite Trump’s promise to bring back coal, according to figures from the Washington Post, the coal industry still employs fewer people than businesses like Arby’s, Dollar General, and JCPenney’s. (JCPenney’s is still around? Huh. Go figure!) This decline isn’t just happening in America. Coal plants are shutting down by the hundreds worldwide. Since 2015, the number of new coal plants has dropped by nearly 73%, according to a report by the Sierra Club. Even the biggest coal boss, Robert Murray, in an interview with The Guardian, admits that Trump “can’t bring mining jobs back.” If Trump can’t win with coal, perhaps he can try his luck with

another fossil fuel. Perhaps some bubbling crude. (Oil, that is. Black gold. Texas tea.) Since his election, Trump has also catered heavily to oil companies, promising to lift bans on offshore drilling and even bring back the Keystone XL Pipeline. Let’s ignore the fact that the pipeline carries the potential risk of a massive oil leak that could prove devastating to the environment and native populations. (Actually, let’s not, since that’s a rather big deal!) Even if the pipeline were completed, as CNN reports, it would only provide a grand total of 35 permanent jobs. Only 35! This is job creation? Despite Trump’s best efforts to facilitate them, both the oil and coal industries continue to suffer losses in production and employment. Why? Well, I have a theory. It’s crazy, but hear me out. It could be because—and follow me here!—both coal and oil are extremely finite resources, and being mined for hundreds of years has nearly depleted them. Crazy, I know! Meanwhile, as I mentioned last month, renewable energy sources such as solar and wind are creating jobs 12 times faster than the rest of the economy. Solar alone employs more people than oil, coal, and gas combined, according to a report from the Department of Energy (DOE). So one industry employs less people than Arby’s, another industry creates construction projects that only provides 35 permanent jobs, and another industry creates jobs 12 times faster than the rest of the economy. If Trump and the rest of the GOP were smart, they would support the industry creating the most jobs. Yet they don’t! DERRY DOWN Open Mic Night Continues 50 Year Tradition

O

n December 10, 1964, the doors to a whitewashed barn were opened along Fifth Street in Downtown Winter Haven. From these doors emanated the latest music played by young upcoming musicians. One of these musicians was Gram Parsons, grandson of the owner, and who would grow up to become famous for his unique blend of country and rock known as “Cosmic American Music.”

More than 50 years later, this small concert hall has since been renovated to its former glory, and continues to provide a venue for local talent, ranging from fresh-faced students from local art academies, to silly elderly couples singing silly songs. The Gram Parsons Derry Down, as this venue has since been renamed, hosts local talent of all ages and abilities from its stage during it monthly Open Mic Night, hosted on the first

Derry Down volunteer, Marcus Brixa, helps a young musician get ready to perform. Monday of every month from 6 p.m. to 9 p.m. Jamie Beckett, a local musician who has been instrumental in the efforts to refurbish the Derry Down back in 2014, has also helped to maintain and continue the venue’s open mic night as to preserve its old tradition of providing a platform for upcoming young talent. As someone who has been a professional musician himself up until the age of 29, Beckett has a real affection for both music and musical history. He was especially intrigued when he learned about the Derry Down and its connection to famous musicians such Gram Parsons, and jumped the bandwagon to help see the old venue restored to its former glory.

“I think it is important for a city that values tourism and quality of life to respect its own history, and the Derry Down is certainly a significant part of Winter Haven’s history,” he said. “It was lost for decades, I am really proud that it is back again, and it is a great volunteer crew that [made] this happen.” The original open mic night at the newly refurbished venue was set up by two staples within the local music community, Nat West and Rider Smith. Originally, the event started out weekly for a year before going on a two-month hiatus and later transitioning to a monthly event, explained Marcus Brixa, another local musician who volunteers at the Derry Down. As someone who has been work-

ing at Carlton Music Center for 24 years within the instrument repair shop and as a guitar instructor, Brixa knows a good musical opportunity when he sees it, and he certainly saw it, along with his friend Jamie, in the Derry Down for its Open Mic Night. “The fact that it is happening once a month I think gives people more of a setup to get out there,” he said. “We are seeing really good turnouts. We are seeing some new variety of players. We have regulars from back when it first started, but we also get people that are brand new and coming in and playing, all age groups, and all talent levels.” When open mic night first started on a weekly basis, the event attracted only four to five attendees; since becoming monthly, it now attracts a much larger crowd ranging from 35 to 65 attendees, some who play and others who listen and participate, Brixa said. Many open mic night regulars include such local talent as the elderly comedy duo “The Dried-Up Chili Peppers”, acoustic guitarist Stephen Kraig, county singer Duke Bird, and Jerry Lindsay, a veteran musician who performed when the Derry Down first opened and who knew Gram Parsons personally, Brixa said. While many big names often perform there, the venue offers a platform for musicians of all ages and talents, including those who are just starting out for the first time. One such young musician was a student from Harrison School of the Arts in

Lakeland who played as a classic guitarist. She initially wanted to perform at a competition in Lake Wales, but felt nervous about performing there, so Brixa invited her to try performing at open mic night first. Whether you are someone who has been playing music for as long as the Derry Down is old, or whether you are a young and upcoming musician ready to flex your fresh talent, feel free to come on down to the Derry Down and take the stage for a chance to share your musical abilities. Who knows? You might become the next Gram Parsons. “The important thing is that it gives people who want to be performers an opportunity to do that and to learn to do that well in a supportive environment,” Beckett said. “Just come down and watch and listen and see if it is something you are comfortable with. You may meet someone there who you decided you may want to play with or sing with or perform with in the future. You might enjoy the night out. Whether you are a solo artist, a duo, a full band, anything that you want to do in front of an audience, [this] is a great place to do it.” The Gram Parsons Derry Down is located at 297 5th St NW, Winter Haven, FL 33881. People have an obsession with tacos. Americans alone eat 4.5 billion tacos each year. Wars have been waged: hard shells versus soft tortillas. Corn versus flour. Whichever you prefer, tacos are the perfect tool – the edible spoon, to hold a variety of yummy meats and toppings to help satisfy your food cravings. It’s a fun handheld food perfect for a snack in-between meals, a late night “Run for the Border”…as a theme for a dinner party on a Friday night with friends or any day of the week for a quick tasty meal – Taco Tuesdays, anyone? Taco is defined as a Mexican dish consisting of a fried tortilla, typically folded, filled with various mixtures, such as seasoned meat, beans, lettuce, and tomatoes. One of my favorites, Tacos de pescado (“fish tacos”) originated in Baja California in Mexico, where they 18 MAY 2019

consist of grilled or fried fish or shrimp, lettuce or cabbage, pico de gallo, and a sour cream or a citrus mayonnaise sauce, all placed on top of a corn or flour tortilla. I know that California claims the Baja taco, but it’s Mexico that invented it. Californians probably just slapped some avocado on it and called it their own… However, tacos, along with the meat they are stuffed with, also vary from different regions of Mexico like Puebla (Central), Oaxaca, Guadalajara (Western), Campecha & Tabasco (Southern), Sonora (Northern). Several countries have a similar product that they also enjoy as handheld meals to eat: India uses a flatbread or crepe, China with their egg and spring rolls, Vietnam uses rice paper, Turkey & Italy also use a small flatbread for their handheld protein inspired meals. Costa Rica has a Tacos Ticos. In the U.S., we love our Korean (short rib) tacos. And, in Norway & Sweden, they love the Tacofredag. e can’t forget to pay homage to the Choco Taco! It’s the Good Humor-Breyers ice cream novelty resembling a taco. It consists of a disk of waffle cone material folded to resemble a hard taco shell, vanilla ice cream, fudge, peanuts, and a milk chocolate coating. Remember waiting for the ice cream truck to roll down your neighborhood with its little song blaring? They served specialty ice cream treats. Choco Taco was one of the best! It was invented in 1980 by the Jack and Jill Ice Cream Company and was available by ice cream trucks and in convenience stores by 1984. Today you can also find them in the local grocery stores distributed by under the Klondike brand.

Time for a Taco Party In keeping with this month’s theme, I decided to write about hosting a Taco Party. I love hosting themed parties for my friends to enjoy. One of my favorites is the Taco Party! It’s much more than just a few taco shells and some seasoned ground beef. A taco party is about being social, trying new ingredients, eating a variety of tasty little handheld goodies while also enjoying a few adult beverages, games and adult conversation. Adding a touch of color: first I like to use lots of color, from different bright colored paper beverage napkins, dinner napkins and paper plates to plastic cups. This alone helps brighten up the table and makes everything fun! I also like to use a lot of different size and color bowls on the table to hold all the yummies we are about to eat. Smaller ones for toppings, larger ones for the meats/sides. The meat: I love offering a lot of choices! Some are grilled, some are done on the stove and some in crock pots – which helps save time. The most important thing to remember is to make sure that you do not use the same seasoning for each meat. Seasonings should enhance flavors of the meat not make it all taste the same. Premarinated steak (flank or skirt) is grilled, tilapia is grilled (a panko-crusted fish is also great in the oven), traditional taco seasoned ground beef, and a shredded enchilada flavored chicken cooked in the crock pot. The sides: I always have a black bean, a refried bean, fiesta fire roasted corn, and a Spanish saf-

fron rice. I also make sure to grill veggies for friends that eat healthier: grilled onions, red/green peppers, squash, zucchini. Nachos with salsa and chile con queso. The toppings: Toppings are the key to pulling this fun meal all together. But you must make sure to include toppings to complement each meat. Pickled onions, raw onions, cilantro, red hot sauce, green hot sauce, shredded carrots, tomatoes, jalapenos, shredded cheddar/Mexican flavored cheeses, queso fresco cheese, Cole slaw for the fish, shredded lettuce, Mango salsa, pico de gallo, sour cream, chipotle aioli, sriracha, fresh sliced limes. The shells: You must have a variety! Soft corn and flour tortillas as well as hard taco shells. For those friends that “low carb” it, offer lettuce wraps too. The beverages: Keep it simple. Two Spanish-style beers, one light and one dark. Make a pitcher of margaritas. Spanish red/white wine. Maybe some refreshing red/ white sangria. Sounds delish! Everyone Needs Dessert: I love dessert! Flan, Tres Leches Cake and Churros are perfect Mexican desserts to round out the party. Don’t have time to make them, then order them from Publix or have your bestie (who is a great baker) make them for you! Next time you want to wow your friends, throw a “grown up” taco party.
