On The Road Again A journey is a person in itself; no two are alike. And all plans, safeguards, policing, and coercion are fruitless. We find that after years of struggle that we do not take a trip; a trip takes us. — John Steinbeck “Travel makes one modest. You see what a tiny place you occupy in the world.” — Gustave Flaubert According to Google research all travelers experience five distinct stages of travel starting: Dreaming, Planning, Booking, Experiencing and finally Sharing. These behaviors define our actions before, during and after a trip or vacation. My husband and I are not the best vacation seekers…correction I am not the best vacationer but for the first time in nearly 17 years of marriage, we went on an extended trip exploring the urban wilds of Toronto and the suburban sprawl of Hamilton, Ontario. While Canada might not be the most exotic locales, we managed to walk nearly 50 miles while on our northern safari. DREAMING Our dreaming stage started with the search for accommodations. As this was going to be our first adventure in several years, we decided to try AirB&B like the cool kids. What makes millennials so cool is their ability to see a broken system and then use technology to make it better and AirB&B is the fastest and easiest way to book overnight accommodations. Our condo was in the shadow of the CN Tower and the Rogers Centre and Keith fell in love with the amazing balcony view. The most unique aspect of using the online service is waiting for your guest rating after your stay. Unlike a hotel room, your host posts a personal review of your stay which becomes part of your AirB&B profile. You only gain access to this review after you post a review of your host – akin to a double report card. All of Keith’s extra tidying up paid off as we are the proud owners

of a great review from our host. PLANNING AND BOOKING We did very little planning for this trip with the exception of purchasing the Fodor’s handbook. Usually, I will spend hours planning each excursion down to the minute; however, this trip was very different as I left my notes at home and we went from memory. Had we done a better job of mapping out destinations, I would have made more time for visiting Niagara Wine Country. At the very last minute, I was able to arrange for a three-hour tour of a few key wineries. What I thought was simple car service turned out to be a stretch Lincoln Navigator limo. Our driver was very surprised to see just the two of us and Keith was a little embarrassed but he soon grew to appreciate the roomy benefits of VIP travel. EXPERIENCING AND SHARING We can officially mark Toronto, the CN Tower and Niagara Falls off the bucket list. We are also able to mark off several artists’ works off our list after a visit to the amazing National Gallery of Ontario including a stunning Georgia O’Keeffe exhibit. My husband speed reads the descriptions and he is also the fastest googler in the room. If you want to know anything about Georgia O’Keeffe, ask him as he went from completely out of the loop to expert art critic by the time I made it through one room. In addition to all the important landmarks, history, culture and natural beauty, we learned that Toronto public transit is completely unreliable, getting a soft drink with ice is nearly impossible and Canadian bacon is actually much better in the United States. NUTWOOD Spicing Up Winter Haven
By Amy Sumerlin Photos By Chris Douglas I tried Winter Haven’s newest hip bistro, Nutwood, on a recent, dreary Wednesday evening. It didn’t take long for the trip to the restaurant to brighten my day. GEOGRAPHIC HORIZONS Although new to Winter Haven, owner and Chef Steven Rojas is certainly not new to the culinary industry, with more than 20 years of experience -- he trained in his native California at Le Cordon Bleu, but then embarked on an enviable tour of top-rated restaurants: He worked as Executive Chef at Tru in Chicago, the Patina Restaurant Group in LA, and then learned classic techniques of Spanish cuisine at a three-star, Michelin-rated restaurant in Spain. He came back to the States to work at Saddle Peak Lodge in Calabasas, California. In 2008, he earned his Michelin star, the most coveted award a Chef can attain. “It was definitely my biggest career achievement,” Rojas explained proudly. But sometimes a four-letter word – love – can change everything, and it definitely changed Rojas’ geographic horizons. “While working out in San Francisco, I met my wife, AJ,” he began. AJ was originally from Winter Haven, and the two, once married, wanted to live closer to family. Life in Florida began in Miami, where he worked at the Fontainebleau and then with well-known James Beard Winner, Michelle Bernstein, at the Thompson Hotel. But family was still hours away in Miami, and Winter Haven held potential: “We thought the move might bring a good opportunity to venture out on my own.” “IF I BUILD IT, THEY WILL COME” “Right about this time,” he said, “The Seasoned Stone — Continued Page 8

closed, and that building became available.” He knew the menu would be different for many residents, but he felt the restaurant would fill a need – “I think Winter Haven residents are literally ‘hungry’ for high quality local flavor.”
UNPRETENTIOUS Although Nutwood allows Rojas to pair his European trained skills with Florida’s seasonal produce, the result isn’t a stuffy white tablecloth affair. “We want Nutwood to be a true Floridian bistro – unpretentious and casual – but the type of quality one might find in Los Angeles or Miami,” he explained. “But fortunately,” he continued, “because our overhead isn’t as high as it would be in those locations, “we can bring that quality without the same level of prices.” THE MENU The first thing you may notice is that the menu is not huge – it’s one page, both sides, and that includes the beer and wine list. “We wanted the menu to be small. If it’s too large, quality suffers,” he said. On the evening hubby and I, with our sweet friend Heather, tried Nutwood, the dreariness of the rain amped up our appetite. We started with a cocktail, and Heather and I both chose the Trimbach Pinot Blanc ($12 a glass – all wines are priced the same). Hubby chose one of the $6 beers – the Funky Buddha Floridian. Next, we went for one of the starters. The Belgian white ale steamed mussels were calling my name, and thankfully, my dinner buddies agreed. Served with shallots, baby heirloom tomatoes, blue d’vergne cheese and a slice of grilled sourdough delightfully covered in confit garlic – this was an awesome start to the meal. For my main meal, I chose the Petit Filet Medallions ($27), and was quite pleased. The steak was tender, and the accompaniments – Anna potatoes and a side salad, featuring Rojas’ favorite type of kale – Black Tuscan Kale (“It makes the difference between a good kale salad and a delicious kale salad,” he later explained) – made for a simple, yet refined, evening meal. Hubby chose the Seared Floridian Snapper ($28), one of the menu items of which Rojas is particularly proud. “This dish marries so many wonderful flavors,” he began. “We use true Floridian snapper and

a complex curry broth.” Hubby agreed with his assessment, and so did I, stealing a bite or two. The curry sauce was a lovely blend of coconut milk, ginger, and turmeric. I also stole a bite of the sticky sushi-grade rice – which was a fun blend of sticky and crispy, all at the same time. So that we would try all of the core areas of the menu – steak, chicken, fish – Heather decided upon the Roasted Organic Half Chicken – and it was she who gave Rojas the best compliment of the evening: “This is truly the best chicken I have ever had,” she remarked, between bites. Rojas was pleased to hear it. “I measure the skill of a Chef by how well he or she does chicken,” he contends. He explained that Heather’s chicken dish is deceptively simple, and takes a great deal of time to prepare. He cooks the half chicken on the bone, which allows it to get to the correct temperature without losing flavor or becoming dry. Even the broccolini and cheesy garlic grits that accompany the chicken takes time – the grits alone is a two-hour process. Finally, we allowed our perky waitress to talk us into dessert – to share. The chocolate pot de crème ($7) was an inspired choice. The crème itself was

delightful – made with high quality heavy crème, eggs, and sugar – but its topping – candied walnuts topped with just a touch of chipotle pepper and sea salt – makes it a must-try dessert. NEXT TIME I want to try Nutwood for Saturday Brunch, which is served 10:30 AM to 1:30 PM, and features an intriguing take on Southern cuisine – Country Boneless Fried Chicken with Cheddar Buttermilk Waffles and house made hot sauce and maple butter ($14), or perhaps the Croissant Benedict, featuring hollandaise, poached eggs, smoked bacon, and wilted Arugula – and potato, of course ($12). “Having a restaurant is like having a child,” he explained near the end of our chat. “I am excited to watch this one grow.” FMI: Nutwood, 132 Avenue B SW, Winter Haven. www.nutwoodwh.com or call (863) 229-7770

Sometimes a little therapy session over a drink or two is just what the doctor’s ordered. Step three; a bartender is basically Jack of all trades not just someone that hands a drink across the bar. There have been many places over the years that we have gone only on certain nights, because of a specific bartender we enjoyed the company of. One of my top beloved bartenders, was such a class act, she could manage a full room all on her own. We swore she had eyes on the back on her head. In the middle of a conversation, she would politely excuse herself, grab a tray, step from behind the bar sweep the room for empty glasses, greet new guests that have entered and refill drinks. It was like a ballet. She never got cross with anyone and was always even tempered. I never saw her become overwhelmed or frustrated. She respected her guests and they respected her. As a bartender, she managed her space really well, got to know her product, perfected her martinis, and took a special interest in her clients. She was the true definition of a bartender. Even though her career ended, like in a fairytale of a woman meeting her prince charming, she was a beloved bartender, admired and appreciated. Cheers! Strange Names Recently, I made the long drive from Florida to Ohio for a little vacation…a drive that is infinitely longer with an eight year old boy in the back (not the trunk…I wouldn’t do that…thought about it…but wouldn’t do it). Along the way, I had a few opportunities to really notice things…particularly, the names of some places. For starters, Wawa…the gas station and convenience store. I love Wawas. I love RaceTrac’s too, but c’mon, Wawa is so much more fun to say. I did a little research (ala the Google), and found out that Wawa is named for Wawa, Pennsylvania, which I never even heard of before. And the word Wawa is an Ojibwe word for goose. Before this, the only time I had ever heard “wawa” was from Chachi Arcola on tv’s “Happy Days”. Whenever he saw an attractive girl, he would say, “Wa-wa-waaa”. I drove past Gainesville, and while the city’s name isn’t really odd, I always think of the old dog food, Gaines Burgers, every time I drive by. Alachua almost always elicits the response, “Gesundheit!” O’Leno State Park…is this named after the Irish relatives of a certain former Tonight Show host? The Georgia-Florida Line…nothing amusing about this boundary, but it would make for a stupid name for a stupid band someday. My wife and I always chuckle when we go by Flippen, Georgia. You can go to Flippen, Georgia, go to a Flippen restaurant, order a Flippen Burger, and a Flippen Pepsi, and use their Flippen restroom. You’ll have a flippin’ good time in Flippen. North of Atlanta some distance, there is a neighborhood called Cinderella Hills. This to me, sounds more like the name of a blonde actress in late-night Cinemax movies than a place to live. North of Knoxville, Tennessee, I noticed a Savage Garden Road. For
you music aficionados, you may recall there was an Australian male pop duo named Savage Garden in the 90s. I cannot confirm that the road runs truly, madly, deeply. Oddly, there is a Disney Spring, Tennessee. An actual spring, that’s been there long before the one just off of I-4. Yeah, there’s probably a lawsuit out there somewhere. There’s Stinking Creek Road, which is named for Stinking Creek. I don’t know if the creek stinks, but one would have to surmise that it doesn’t smell too pleasant for someone to name it that. Or maybe someone didn’t want to say, “Go down to the flippin’ creek”, and chose the more polite, “Go down to the stinking creek”, and the name just stuck. And of course, everyone who has travelled I-75 in northern Kentucky knows about Big Bone Lick off of Beaver Road. But we’ll just leave that one alone. This edition is always a favorite for both the Today & Tonight Magazine’s staff and our readers. This year over 2,000 votes were collected and the results were tabulated several times as one vote made the difference for several of our contest winners, and for the first time ever there were several ties. We are adding many new names to our roster of winners this year and we are glad to welcome them to our growing list of talented professionals. Don’t forget to also check out the “honorable mentions” page for a list of others that were nominated as well. The time-honored tradition of Polk’s Beloved Bartender feature started with the very first edition of the magazine and we added the voting component a few years later. Throughout the contest’s history, the magazine has collected more than 32,000 votes from dedicated readers wanting to give back to their favorite hospitality professionals. Bartending can often be a thankless job and this contest is one of the ways we are giving back to the men and women who work hard each day to provide superior customer service in this noble profession. To celebrate 2017, we went back to the basics with our questions providing each beloved bartender with the chance to share a bit of humor, personality and their unique life perspective. We learned so much from this amazing class of talented industry professionals and the drinks… well, DELICIOUS is the first word that comes to mind. We encourage our readers to get out and explore the wonderful “watering holes” Polk County has to offer and say hello to each of our winners. If you could only eat one thing for the rest of your life, what would it be and why? Beef or chicken tacos.... I love Mexican food! 5. If you won the lottery tomorrow, what’s the first thing you’d buy and why? I would pay off my vehicles, pay the bills, buy a new house and plan a very awesome family vacation! 6. What is your most bizarre or useless talent? Don’t have one… 7. What is your favorite childhood memory? Going to the beach house with my
family and Granny! There was an outside shower under a grape tree and my sister and me thought it was so cool to shower off when we got back from the beach. 8. If you could only keep five possessions, what would they be? Our home, car, phone, boat, and jewelry. 9. If you were president, what is the first thing you would do? I would make limited terms for Congress. 10. What is your favorite quote and who is the author? “One day at a time – this is enough. Do not look back and grieve over the past for it is gone; and do not be troubles about the future, for it has not yet come. Live in the present, and make it so beautiful it will be worth remembering.” Ida Scott Taylor 11. What was your favorite toy growing up? My bike. I enjoyed riding bikes with my friends, all the time. 12. What is the best piece of advice you’ve received? Don’t let your ears hear what your eyes didn’t see and don’t let your mouth say what your heart doesn’t feel. So many of them have become lifelong friends! I enjoy being a bartender because I get to meet and talk to so many people. I have talked to kids on their 21st birthday and told them to be safe and responsible. I have listened to stories of 81 year-olds who have lived life to the fullest or if they could go back and change things they would. I try to learn a little from all of my customers. In my job, you need patience and know when to slow down. I have learned to know when to take a leap of faith even when you don’t know where you will land. 2. Why do you think you were nominated and what makes you a beloved bartender? I just try to make everyone who comes to my bar feel at home and more like a friend then a customer. 3. Are you a cat or a dog person? I am more of a dog person. Cats are too unpredictable for me! I have a Great Dane named Chief and a Pug named Carter. 4. If you could only eat one thing for the rest of your life, what would it be and why? Pizza. Not because it’s my favorite thing in the whole world but I could always change up the toppings so it wouldn’t be eating the exact same thing. You can make breakfast pizza, dessert pizza or whatever you need to change it up! 5. If you won the lottery tomorrow, what’s the first thing you’d buy and why? Wow this is a hard one. My first big investment would be
a big piece of property or a new car. But the first thing is actually spending money on would be an awesome meal at some fancy restaurant with a few drinks! 6. What is your most bizarre or useless talent? No talent is useless! But maybe the fact I can bend my thumb down to touch my arm if I had to choose one. 7. What is your favorite childhood memory? My favorite memories from my childhood would be the ones with my Nan in them. She passed away when I was a teenager but was a wonderful and special woman I wished that I would of had more time with and my children would have been able to meet. 8. If you could only keep five possessions, what would they be? My children and family are the most important things in the world to me. They matter most. Having my house, car, and everything else is second to them but would be what I would like to have to make life easier for us. 9. If you were president, what is the first thing you would do? I would want to help those who really need it. There are so many children and adults in our country who don’t know where their next meal will come from or even when. I can’t imagine what that would be like and I believe all children deserve to have a full tummy every day. 10. What is your favorite quote and who is the author? One of my favorites is by Edward Bok, “Make you the world a bit better or more beautiful because you have lived in it”. I love this quote because it can apply to nature but also to how we treat others and to always make a positive impact in their lives. 11. What was your favorite toy growing up? Probably my mom or my dogs. If I was playing, it was with all or one of them. 12. Would you rather win an Olympic medal, an Academy Award or the Nobel Peace prize and why? A Nobel Peace Prize because I would have made a big difference in the world! 13. What is the best piece of advice you’ve received? To treat others as you want to be treated. You never know

I want to say my personality and my “outgoing self” got me nominated. 3. Are you a cat or a dog person? I am a dog person! I have a little dog named Biscuit, and a huge puppy named Roxy. 4. It is what I love and one day, I want to have my own bar. I will accomplish that goal. 6. What is your most bizarre or useless talent? I can’t whistle, it’s sounds like a squealing bird. 7. What is your favorite childhood memory? In Elementary school they would let us play in what they called “the ditch” for fun. We would

An Academy Award, I like to be dramatic and funny so my speech would be one that everyone would remember. 13. What is the best piece of advice you’ve received? Don’t stop chasing what you want, no matter what it is, how hard it is, or how risky it is. I love being around people and meeting new ones all the time and hearing their stories. I have tried a couple of other careers but always come back to the hospitality industry. 2. Why do you think you were nominated and what makes you a beloved bartender? Honestly, I am quite surprised by all of this. While I have been with Chili’s for 2.5 years it is only recently that I started working bar shifts on a regular basis. But my goal each shift is to make the guest ALWAYS feel special!!! 3. Are you a cat or a dog person? I would probably say I am more of a dog person, but we don’t have any pets at this time. 4. If you could only eat one thing for the rest of your life, what would it be and why? HHHMMMM, that’s a hard question. If I had to choose just one thing, I would say tacos. 5. If you won the lottery tomorrow, what’s the first thing you’d buy and why? The first thing I would buy is a house. I am so tired of renting. I feel renting is just wasted money every month. 6. What is your most bizarre or useless talent? Bizarre or useless talent.... none that I can think of at the

What was your favorite toy growing up? I wasn’t much into toys but I loved to read. I could lose myself in a book for hours. 12. Would you rather win an Olympic medal, an Academy Award or the Nobel Peace prize and why? An Olympic medal, so I could be a role model for children all over the world. 13. What is the best piece of advice you’ve received? I don’t even remember who or where I heard this from but it has always stuck with me: Do something. Embrace the fact that you’re living. to AUG 26 - Roberto Estopiñán Exhibit. Born in Cuba in 1921, sculptor, draftsman, and printmaker Roberto Estopiñán is a celebrated artist and considered a pioneer of modern sculpture in Latin American art. During the 1960s, he featured haunting faces and strained forms filled with despair, conveying his preoccupation with, and compassion for, those who have experienced injustice. These artworks in many ways run counter to his later works that focus more on beauty and the exploration of form. Perhaps the most prevalent subject in Estopiñán’s work is the female torso. Beginning in the late 1970s, these abstracted torsos in his work are reminiscent of the elongated, often swollen forms of European sculptors, but include familiar textures of the artist’s earlier work. These bone-like, somewhat surreal shapes not only capture the beauty of the torso, but also hint at Estopiñán’s struggle to balance texture with the softness of the female form. THE SWEET SPOT

Welcome back to “The Sweet Spot”! Summer is in full swing. Lazy days, humid nights, time to post up at the beach or lake with good food, friends, family, tunes, and get back to basics. That’s also the subject matter on the new Zac Brown Band album, Welcome Home. I want to start by going back to 2015. Zac Brown Band had just released the aptly titled Jekyll + Hyde. I dig the album, but I’m an eclectic free spirit myself. There was a cover of Americana traditionalist Jason Isbell (“Dress Blues”) AND an electronic dance beat (“Beautiful Drug”), AND a hard rocking duet with the late Soundgarden front man Chris Cornell (“Heavy is the Head”), AND a reggae infused island jam (“Castaway”) …all on the same record. They pushed boundaries, but there was backlash. Some loyal fans felt alienated, that the group had stretched too far musically from their roots. The album seemed to lack continuity and direction. Summer 2017, radio is heavy with songs using drum machines and synthesizers, so what does Zac Brown Band do? Pick a sentimental, low tempo song about the love for his father as their lead single (“My Old Man”). Welcome Home isn’t a party banger, boozy, or sexy album by any stretch—and that’s okay. This is music you put on during a reflective summer evening on the porch or patio, by the pool, or with the family making memories on the great American road trip. It’s wholesome, it’s hopeful, it’s nostalgic, and it’s fun! Welcome Home, with its Marshall Tucker Band influenced album cover font, feels vintage when you see it. My favorite tracks are “The Real Thing”, a tale of good whiskey and true love, soulful piano, and lyrics like “Gen-u-ine, made in the U-SA, ain’t nothin’ like the real thing”, it’ll get you feeling right. I hope this one becomes a radio single, it would sound great on 97.5 WPCV. “Long Haul” is a mature sentiment of fidelity that lets Brown’s voice shine. It also has radio potential, but there are always quality songs that don’t get the proper promotion. “Start Over” makes me want to skip town to a seedy Mexican motel under an

assumed alias with my wife while on the lam from the law. But maybe I’ve just seen one too many movies. This tune is a three-minute vacation. By now, I hope you’ve heard “My Old Man” on the radio. These type of songs, when done correctly, always have staying power and relevance to new audiences for years to come. “Your Majesty”; is it a love song, a worship song, or both? It’s full of double entendre. “Family Table” remembers shared meals with loved ones. It’s encouragement to slow down, unwind and savor. No discontent, stress, and worry allowed when generations break bread. As always, I encourage you to listen to the entire album and find the music that moves you! Dave Cobb is a magician. Familiarize yourself with that name. We can’t talk about Welcome Home without mentioning the architect. Producer Dave Cobb is the ‘it’ guy to mix and master neo-traditional country. Cobb is also behind Chris Stapleton’s latest record From a Room: Volume 1, which I discussed last issue. Some supplemental listening if you enjoy Welcome Home, I also highly recommend the compilation album Southern Family that Cobb produced last year. Catch Zac Brown Band in Tampa Sunday September 24th at the MIDFLORIDA Credit Union Amphitheatre. This is a show I’m patiently awaiting and genuinely excited for, I hope you can make it as well. The Summer Heat Oh, yeah, it’s hot. But oh no, don’t complain about it. We have water, air conditioning, indoor projects and movie theatres. The snow birds are gone and the real native Florida birds have more room to spread their wings. The pros of Summer in Polk County: less traffic, more daylight. There is a reason they call it Winter Haven and not Summerville. Also, Disney has a Florida Resident pass that is NOT good for the summer months. Mickey thinks of everything! Who wants to stand in line for an hour for a two-minute ride? People from other places who aren’t spoiled with the wonderful world of Disney at their back door. Thank you for blacking out the summer days so we don’t pass out from the heat. But beyond our back door, the heat made for some great ingenuity. Did you know that in the United States Capital Building in the National Statuary Hall Collection, Dr. John Gorrie is the Florida recipient of honor for inventing the first machine to make ice? I remember when I saw it, I chuckled and said, “Really, that’s Florida’s finest civil representative? The guy who made ice?” A few moments later, I realized that if it wasn’t for ice, there wouldn’t be a Florida. Until the invention of air conditioning, this was pretty much a pioneer territory. He wasn’t just trying to find a way to cool his brewskis on the back 9 holes either. He lived in Apalachicola where the oysters are. Have oyster? You need ice. Dr. Gorrie also studied tropical diseases. I comprehensively call all summer illnesses here the Florida

crud. I am sure “crud” is the clinical term because doctors don’t seem to know for sure what you’ve got in the summer. Notice Dr. Gorrie did his work near the ocean and not far from the Alabama border. He knew no one could live in Miami well with no AC. So, yes, he’s my pick for Statuary Hall, too. He will enable us to endure global warming a bit better. Like him, we have to change things or embrace them. I always thought if I were truly wealthy beyond my wildest desires, I would chase the spring around the two hemispheres. Until that day transpires, I will perspire. The good news is, I can go inside, hit the button on my ice maker, fill up my glass with ice and purified water. Thank you, Dr. Gorrie for making Florida less gory. JULY 2017
