Summer time always brings a mixture of feelings to the community especially in our location of Central Florida. The kids are happy to be out of school, even though some get bored quickly and others become slaves to their TVs and couches. Adults look forward to quick weekend beach get-a-ways with friends or planned family vacations to the mountains escaping the heat or cruising by ship to an even more tropical locale. Others, like small business owners, feel the heat of summer in a different way. It means little to no tourists and less of our locals around to spend money. While they are off vacationing in other areas, less money is being spent in our backyard so the economic balance gets stressed. Small business owners often fall to the wayside in this crunch time succumbing to closing their doors or lying off employees. We fall into the Summer Time Blues… These businesses are the backbone of our country; being unique in your community, filling a niche with products and services and being “your own boss” has definite benefits except when it comes to our state during June, July, August and September. It’s always mind-boggling on how drastically the flow of currency changes during this time period. We’re not talking about seasonal businesses – the brick and mortar. They’re the same restaurants, boutiques, and markets here open for business practically 365 days a year. Are people not eating anymore or buying items for their cars, homes or

services for…anything? Most of us are still going to work each day, still shopping at the store for essential items, still visiting with friends and family on the weekends, enjoying “happy hour” a few times a week. Our routines don’t fluctuate that much just because it’s deemed summer, so why does our local economic flow become so stressed like a water hose with a kink in it? Yes, we live in a tourism industry, but we have multi thousands of people that live, work or are retired right here in our county – approximately 650,000 people. I don’t know if people use summer as a time to cut back on their household expenses or are starting to save for that “rainy day”, retirement or even Christmas. Heck, isn’t this why a marketing genius came up with the phrase “Christmas is July” for increasing slow retail sales? Maybe, we, as small business owners, just need to be more creative on how we lure our consumers from their conservative summer time shells. During summer it is definitely a buyers market getting the BEST deals possible on practically everything. Help our county combat their Summer Time Blues. During August and September make sure that you frequent new local small businesses or visit some old favorites. Civil War Recently, I’ve heard people talk about revolution, and a new civil war here in the United States. Obviously, it’s all because of politics, but I’ve been thinking we’ve been in need of a civil war, or perhaps a purge of some sort, for quite some time now…and it has nothing to do with politics. I’m not a violent man, but if I’m sitting at a stop sign waiting for you to pass by me from the left side of the intersection, and you turn right, without using your turn signal, I’m sorting through a lot of vile and obscene things in my brain at that moment, and they are all directed at you. You sir, or madam, are a horrible human being. In fact, your status as a human being is now suddenly questionable. I loathe your existence. Please, don’t think that I would wish death on anyone. That would be a waste of time since we will all die someday anyhow. I’m just wishing for your day of expiration to be expedited. And I silently get satisfaction as I consider the painful ways for you to die. Unfortunately, in this world, there are too many people who don’t use their turn signals. And Florida, for some reason, has a disproportionately high number of those Godless idiots. THIS is why we need civil war. I am sure in my thinking that the people who don’t use their turn signals don’t have the sense to know how to load a gun, much less know which end points away from them. The war would be quick…over in less than two days. And it would be civil indeed. Driving would be much more civil with people using their turn signals, they would be smiling, singing, happy drivers… until they come up on the jackwagon in the left lane driving slower than everyone else. Looks like it’s time for another civil war! I think we need a civil war in these here United States between people who say “thank you” and the people who don’t. My eight year old boy is going to need an exemption on this one…he’s still working on this good

habit. He says “thank you” much of the time (not always, yet), but often times, he says it quietly, so it goes unnoticed. This would make for some great dialogue during battles: Good Guy: Thank you for missing me when you shot at me. Bad Guy: You shot me in the leg! Good Guy: Say “Thank you for only shooting me in the leg, or the next one goes in your head!” There could be many good reasons for a new civil war…and most of them can be found while shopping. Walmart would be Ground Zero for a civil war of manners. In fact, the good guys could just attack each Walmart, one right after another, like Union General William T Sherman’s march to the sea. It would be nice to see the good guys winning battle after battle at Walmarts everywhere…and in the end, we’ll live in a nation where everyone puts their shopping cart in the cart coral, people won’t block an entire aisle with their cart while they’re 40 feet away looking at Fruity Pebbles, nobody will knock shirts off of hangers and just leave them on the floor, there will be nobody pushing a full cart into the 10 Items or Fewer lanes, and we won’t see a bag of frozen peas sitting on top of the Snicker bars in the check out lanes. his month's edition of World Eats takes you on a culinary tour of Cuba, Mexico and Thailand and the passionate people behind the food. The three cultures that are very different however the staple of rice as an ingredient, along with their family ties, binds them together: Black Rice, Spanish (Yellow) Rice and Jasmine (White) Rice. We hope you get out to try some new food dishes and enjoy the tour!

Over coming the first year in the restaurant industry is a big first hurdle. They must have a secret recipe in that small kitchen that keeps the locals coming back week after week wanting more. Juan Carlos Jimenez, and his wife, Bertha migrated to Florida from the Chicago area where they worked in the family restaurant business for 10 years. Ready to escape the cold weather, Juan Carlos and Bertha, along with their children, settled into the Auburndale community. Just a short time later, the Jimenezes created a family-owned and operated business, named after their youngest daughter, Ximena, serving up traditional Mexican cuisine. That secret recipe we fore mentioned is Bertha and her family’s recipes. She comes in each morning to prepare the staples for the day by hand – it’s fresh! Only what is needed is made, so customers get the best tasting food cooked when ordered. However, Bertha does live close so if the restaurant starts running low on some of her items, she’ll pop over to Ximena’s and start making more. Except for the tamales, she only makes them once a day. The tamales are very popular, when they sell out, as they often do, you’ll have to come back (a little earlier) the next day to enjoy them. Juan Jimenez, Juan Carlos and Bertha’s son, is their general manager and also runs the kitchen. He tells that they have very fresh product and great pricing for their customers. Because they keep such low pricing the only food special run each week is the $1 tacos on Mondays – which is a very popular day. Ximena’s Tacos are authentic small tacos with your choice of meat (beef, steak, pork, chicken, chorizo, or cow’s tongue/head) and topped with chopped onion and cilantro. I personally have been a fan of these little tasty tacos for months – the favorite being grilled pork with a little of their house made (green) salsa Verde sprinkled on top. Juan mentioned that two of their very popular menu items are the Gringas and Sopes. All of the entrée dishes are served with rice, beans and salad. Ximena’s Tacos is open each day from 10 am to 8 pm, except being closed Wednesdays, offering a variety of lunch and dinner options as well as few Mexican breakfast options. 20 AUGUST 2017

The bad news is… that was two months too long without a report from the Smith micro farm. For the record, this column is about backyard chickens; however, I want to make a small diversion and talk about tweets…not the sweet cacophony of sounds the songbirds make when they find leftover scratch grains but the annoying use of Twitter and recent hostile tweets from Washington, D.C. Many reading this column may be thinking this is the first generation to have a direct pipeline to policymakers with instant communication on a multitude of topics. While that may be true, what is the cost for sacrificing civility for the delivery of 140 characters? As a supporter of all feathered friends, we could use a lot more bird “tweets” and a lot less Twitter banter. It is Joseph Story, who served on the Supreme Court from 1811 to 1845, whose elegant words and wisdom provide Americans have been given a “noble inheritance.” It is this legacy that deserves more gracious discussion than a rambling tweet or the current all-out Twitter war between

the media and our elected leaders. It is the leadership, knowledge and passion of Samuel Adams, Joseph Story and many other founding fathers that we should be modeling and not this bad reality show/midnight tweet storm rhetoric that has become the new norm. But, this was supposed to be a column about our chickens and urban micro farming and not the vile complications of current politics. It is interesting to note that George Orwell drew many of his conclusions in Animal Farm, a book on the events leading up to the Russian Revolution, from observations made in a barnyard. The phrase “pecking order” is a direct observation of the hierarchy of status seen in groups of chicken. In our flock, Charlotte, who is the largest of our hens, is the dominate flock leader. She commands the best spot on the roosting bar and is the first to eat the tasty sunflower seeds from the scratch pile. While she may be ruler of the roost, Charlotte is the first to sound an alarm when danger is near and she makes sure all of the hens are safe in the coop at night. Like all good leaders, Charlotte does not do her own dirty work, preferring her sister Scarlett to be the punisher/enforcer doling out pecks to our smaller hens when they choose not to conform to the pecking order. The combination of Charlotte and Scarlett is a formidable force in our backyard politics. In addition to the bounty from our backyard flock, we have enjoyed a summer of veggies from our micro garden. We marveled at each harvest of tomatoes, eggplants and peppers noting the sheer magic that comes from being a good steward of the land. Perhaps old fashioned farm wisdom might be of great use in this age of Twitter…we reap what we sow, even when it is only 140 characters. QUESTIONS OR COMMENTS info@todayandtonight.com

Nick and Pat came to America from Thailand in 1993 and worked in his sister’s restaurant that was located in Orlando. They moved to Polk County and opened their own Thai restaurant in downtown Winter Haven in August of 2013. Thai Haven provides authentic Thai food. Everything is prepared fresh daily, not frozen, and using only high quality ingredients. Thai is a healthier style of cooking; their sauces are lighter so you can enjoy the flavor of the food. The food is prepared as if they were cooking at home – real Thai. Their food flavors are influenced from Central Thailand. Nick explained that the region definitely influences the flavor or spice profile of the food from upper, lower and middle Thailand. Most popular dishes are Pad Thai and Basil Chicken. Some of the favorite dishes that I enjoy are the Pad Thai Chicken, Lemongrass Soup, Dumplings, Springs Rolls and the Healthy Rolls. On this visit, I was excited to try two new dishes suggested by Nick: Basil Perfect (Chicken) sautéed meat with garlic, basil and vegetables and the Massaman Curry (Chicken), rich sauce with a mild brown curry, stewed meat, vegetables and coconut milk; both served with a side of the beautifully fragrant Jasmine rice. Both were wonderful and so tasty! A flavor party in your mouth. Thailand is a peninsula in Southeast Asia that has food influenced by the Chinese, Indian and Malaysian, as they are a melting pot of cultures. The curry comes from India however the green and red varieties originate from Thailand. They have taken parts from each of these cultures and made their cuisine uniquely their own. The country is known for tropical beaches, royal palaces, ancient ruins and temples. Nick and Pat are only able to go back to Thailand every other year to visit family. They want to make sure that their son, now ten, has a connection to their homeland and culture. For them, family is first. to AUG 26 Roberto Estopiñán Exhibit. Born in Cuba in 1921, sculptor, draftsman, and printmaker Roberto Estopiñán is a celebrated artist and considered a pioneer of modern sculpture in Latin American art. During the 1960s, he featured haunting faces and strained forms filled with despair, conveying his preoccupation with, and compassion for, those who have experienced injustice. These artworks in many ways run counter to his later works that focus more on beauty and the exploration of form. Perhaps the most prevalent subject in Estopiñán’s work is the female torso. Beginning in the late 1970s, these abstracted torsos in his work are reminiscent of the elongated, often swollen forms of European sculptors, but include familiar textures of the artist’s earlier work. These bonelike, somewhat surreal shapes not only capture the beauty of the torso, but also hint at Estopiñán’s struggle to balance texture with the softness of the female form. Yoga It’s so Zen looking, isn’t it? Reaching for the sky in peaceful poses and stretching your muscles in cute pants and shirts in bare feet. Ah; breathe in, breathe out, pose, rest. Low impact. High return. Seemed like a perfect fit for me.

I could work out inside. Yoga seemed the excellent choice, but how can something that looks so fluid cause so much frozen pain? I have always admired the people with natural flexibility. I am not one of those people. I have more compact build that would rather, and do, hike for miles in nature. Yet, with my ever so way to open mind, I swallowed the pill about muscle confusion. “Mix up your routines,” I hear. “Yoga is holistic and connects the body, mind and spirt.” Yes, it does. “Get out of your comfort zone…no pain, no gain.” I must be gaining a lot. I am way out of my comfort zone and my muscles are extremely confused. In fact, they have planned a mutiny. I do think yoga is working on my spirituality. I am suddenly very grateful for simple things, like living so near to a hospital! Don’t let the cute pants fool or bare feet fool you. I do recall in medieval times they used a stretching rack

Before I go any further, I will say that I won’t quit. Yoga is great. It is not great I waited so long to put it into practice. I will heed the good doctor’s advice. Us runner/jogger/ hiker types do those two second, worthless, pull-your-sneaker-upto-your-back-side poses. Yoga has deceptively painless pose names such as, chair, happy baby, downward facing dog, tree, plank and warrior. Here’s some of my corresponding versions: - Grimace while getting out of my chair pose - Why was I ever born, pose? - Tremble like a scared Chihuahua pose - Pretzel leg panic pose - Walk the plank pose - I lost the battle to a Lotus blossom pose Though I miss my runner’s high, I extend yoga my highest regard. I learned another new pose today. It’s the “Help, I’ve fallen and I can’t get up” pose. Namaste…ouch!

Welcome back to “The Sweet Spot”! I’ve been celebrating the Fourth of July for what feels like a month now. I’ve fished, smoked and grilled delicious food, travelled with the family, kayaked, hiked, swam, and kept the tunes rolling. It’s been a great summer. August means it’s coming to the end though. The kids will be back in school and football season is here! My daughter turns two years old this month as well, happy birthday sweetheart. (Of course, she can’t read, but I figure it’s the thought that counts.) Kids rock, I know mine keeps me young and motivated. Coming up, we have a wonderful opportunity to help children AND hear some world-class performers. The second annual St. Jude Concert for the Kids presented by Window World and 97.5 WPCV will be at the RP Funding Center (Formally the Lakeland Center) Wednesday, September 13th. Lee Brice, Jerrod Niemann, Frankie Ballard, Carly Pearce, and a special guest to be announced. I’m assuming the format will be the same as last year. All artists lined up on stage together, sitting on barstools, singing their hits and telling stories. It’s going to be an intimate performance. The money raised will go directly to St. Jude in the fight against childhood cancer. Tickets are available now at the RP Funding center box office and rpfundingcenter.com. This month I want to feature newcomer Carly Pearce. Her debut single “Every Little Thing” is climbing the country airplay chart. Carly’s story began a decade earlier. At age sixteen the Kentucky native dropped out of high school and moved to Pigeon Forge, Tennessee to take a job as a performer at Dollywood. (Dolly Parton’s mountain amusement park. I have some fond childhood memories there myself). In an interview Pearce said, “You really want to get out of your small town when you’re in high school…spread your wings and fly.” Last year’s collaboration with the Josh Abbott Band “Wasn’t That Drunk” introduced her to country radio and opened the door for her solo project. She is currently in the process of working on new material for her album. A release date has yet to be set. At the beginning of this year “Every Little Thing” hit the airwaves. “I wrote this song thinking that no one would ever hear it, about a guy who broke my heart a few years ago,” said Pearce.

When a song has a true to life backstory from the artist performing it, it comes through on the recording. It’s full of ache, longing, and regret. Haunting piano licks grab you immediately. Carly’s voice is earthy and textured as she describes the tortured memories of love lost. It can be a daunting challenge for a female vocalist to have a debut number one, but I believe she can do it! Which brings me to my next point: country music needs more female voices. Miranda Lambert is the only free-spirited, rebellious, superstar that we have in the genre. I love Kacey Musgraves, Ashley Monroe, Margo Price, and Brandy Clark, but they don’t get much FM radio play, if any. Lauren Alaina scored her first number one earlier this year; which was a pleasant surprise and well deserved. Maren Morris is turning into an industry darling. RaeLynn has some quality tracks on her album. Kelsea Ballerini continues raking in hit singles, and Carrie Underwood is still America’s sweetheart and probably country music’s most recognizable woman. So where does Carly Pearce fit in? That is for you, the listener, to decide. One good song doesn’t equal a career. I hope she can keep the traction of “Every Little Thing” and translate that in to longterm success. It is incredibly competitive to break into mainstream country. It requires great song choices, timing, momentum, and good ole fashioned luck. The community came out in a BIG way on Saturday, July 29th to support the Tracey Byrd Benefit hosted at Tanners Lakeside outside at the Tiki/Beach Front area. Tracey Hatmaker Byrd is a wife and mother of two young girls with Stage 4 Breast Cancer. Melanie Brown along with her team members Traci Coker and Susan Leopard, and Jane Waters Thomas as MC, did a wonderful job of pulling this event together and raising over $30,000 for their friend in her time of need. Thank you to all that participated, volunteered and donated to this event from the Krazy Train BBQ Team and Bonnie Sweets to the awesome music from The Polk County Porch Pickers and B. Haven.
