If you live in Polk County, chances are you know who Marcos Fernandez is: Over the last nine years, he has become the darling of all local Foodies who yearn for something local that pushes the culinary envelope. And if you don’t yet know who he is, let me introduce you. MARCOS Although Polk County’s introduction to Miami native Fernandez was about nine years ago at the Lakeland Yacht Club, where he was the Executive Chef for four years, his interest in the culinary arts began much earlier. Some of his experience includes time working in Lima, Peru; at a Denver restaurant group (a French restaurant); and at the Maggiano’s Little Italy chain. “I enjoy mixing styles and techniques from different cultures with my menus,” Fernandez said, as he explained that he believes this adaptation of cooking styles is a nod of respect to his parents, Cuban immigrants who are now American citizens. “When they came here, they had to learn to adapt everything – their way of life, their cooking styles,” he said, proudly. Appropriately, the name “Nineteen61” represents the year his parents immigrated to the United States. NOVEMBER 2019

NINETEEN61: THE BEGINNING Fernandez first struck out on his own in 2015, opening the first Nineteen61 in a cozy (Read: small) location in Lakeland’s trendy Dixieland neighborhood. With only about four booths and maybe ten tables, the place quickly filled up. This small location, I believe, only added to the restaurant’s exclusivity— customers didn’t mind waiting – especially when the food was so good. And oh yes, the food is that good. More about that later. THE NEW LOCATION “We had thought about expanding the first location,” Fernandez remembered, but before he was able to develop a suitable expansion plan, the current owner/landlord approached him about taking over the first floor of the old Posto 9 location. A location which, by the way, is spectacular: Originally built in 1908, the majestically historic building facing Munn Park has housed everything from Preservation Hall to a bank, a real estate office, and a music store. And before Nineteen61 took over, it received a renovation, including new paint, art, lighting, and booths. Even the dramatic bar, a focal point of the dining room, was given a new look with Spanish tile accents, new stools and shelving… all to better represent the flavor of Nineteen61. “Our new location has just been great,” he began. “It gave us a bigger kitchen, a wood burning grill, and more dining space, which has allowed us to triple our volume of customers.”

PARTNERS Before opening the downtown location, Fernandez acquired two new partners, Lindsey Crowley and Emmerson Bamaca. Bamaca, who previously worked with Fernandez at Nineteen61, manages the bar and has created a wine and cocktail (yes, cocktails – the new location has a liquor license!) list that pairs beautifully with the menu’s Latin flavors. How To Support Legal Immigration Earlier this August, I wrote a column with the “shouldn’t-be-controversial” opinion that kids don’t belong in cages (https://bit. ly/33OvzCo). As can be expected, that “shouldn’t-be-controversial” opinion provoked controversy. Most people contended that I only complained about a problem without offering a solution. In my defense, I only have 600 words to express my thoughts. So let me use my 600 words here to actually offer a solution. Here’s what we should do to curb “illegal” immigration: #1: DEPORT CRIMINALS ONLY During Trump’s first 14 months in office, arrests of undocumented immigrants with no criminal records have tripled—spiking 203 percent!—compared to Obama’s final 14 months, according to an NBC News analysis of Immigration and Customs Enforcement data. There’s no reason we should be rounding up and deporting this many people. The only people who should be deported are those who really need to be deported: criminals. By all means, deport the drug dealers, gang bangers, murderers and rapists. Otherwise, if the only crime an “illegal” immigrant has committed was coming here “the wrong way”, if they’re otherwise law-abiding individuals who are contributing to the economy, then they should be allowed to stay here. We should grant them amnesty and offer them a path to citizenship. #2: REFORM THE VISA PROCESS Contrary to popular misconception, most “illegal” immigrants do not cross the border. Rather, most of them do come here “the right way” but overstay their visas. In fact, over the past seven years, visa overstays have exceeded illegal border crossings. In 2017, only 310,000 undocumented border crossers were detained, while more than 700,000 immigrants overstayed their visas, according to a report by the Center for Migration Studies.

If we want to stop “illegal” immigration, the last thing we should do is build an expensive wall in the middle of the desert that isn’t even going to stop illegal border crossings. Rather, we should reform the visa process to allow temporary workers to remain longer, more easily renew their visas, and more easily become permanent residents. Speaking of which... #3: REFORM THE IMMIGRATION PROCESS If we want to curb “illegal” immigration, we need to understand why people choose to immigrate illegally. Why do many people decide to “hop the fence” rather than “wait in line” and “come through the front door”? Simple. Because the line is long and the door is heavily fortified. Immigrants often have to wait years—even decades!—before being approved. A spouse or minor child of a U.S. citizen can expect to wait 5-6 years to obtain a green card and 3-6 years to become a citizen, according to Reason Magazine. If you have no relatives in the country, you can wait up to 11-16 years, but only if you’re a skilled worker; if you’re an unskilled worker, you’re probably stuck waiting forever, Reason explains. Over the years, immigrants have only been waiting longer and longer. Since 1991, wait times have more than doubled from an average of two years and 10 months to five years and 8 months, according to a study by the Cato Institute. When so many immigrants have to choose between finding a better job or starving to death, and when they’re forced to wait in long lines for a better job, can you really blame them for “skipping the line”? We shouldn’t be wasting money building a wall or rounding up people in camps. We should be making it easier for people to come here legally by passing immigration reform. Hosted by the Symphony Guild of Winter Haven, this Americana-themed show will feature patriotic tunes and medleys as performed by the Brass Heart Band and Strings. Not only will this most patriotic concert celebrate our veterans and the country they served, but also celebrate 30 years of the Symphony Guild bringing music to the local Winter Haven community. This year’s event will be hosted at the Ritz Theatre along Central Avenue in Downtown Winter Haven. Having recently undergone a renovation and restoration effort for more than a year, the concert will help show off the newly-refurbished historic venue. The Symphony Guild of Winter Haven decided to host their upcoming event at the 10 NOVEMBER 2019

Ritz Theatre after they were unable to obtain an opening at their old location. While the Ritz does not offer enough space for a full orchestra, they still expect to provide a full performance with only a half orchestra, explained Sherry Anastasio, the Guild’s Executive Board Member. “I think people will enjoy it, people are looking forward to this concert,” she said. “I think that speaks highly of the Ritz and everything they are trying to do to get the Ritz up [and going] with entertainment. So we are jumping

for joy to go in and be a part of it.” Started in 1989, The Symphony Guild of Winter Haven, a local non-profit 501 c3 organization, has been helping support music and the arts within the local community by bringing in live entertainment and raising funds for musical scholarships. “Initial contributions to the guild were made by local residents, Mrs. Jeane Estes, Mr. Raymond Golden, and Mrs. Sarah Hayes. Through their generosity, a 501c(3) status was secured and the first concert season was planned,” their website states. Their season starts every year in the fall with a concert in September or October, followed by a Music of the Season performance in December. Their season ends in the spring with a free concert in April or May as a way to extend their gratitude to their community, their website explains. Their big fundraiser for the year is their Champagne and Shamrocks in March. For the past 25 years, that annual event provides live music and gourmet food, with a diverse selection of musical entertainment through various

bands and orchestras, including many from Tampa and Orlando, Anastasio said. The funds raised through events such as that allow the guild to sponsor scholarships for music students attending Polk State College, Winter Haven High School, and Lake Region High School. Auditions hosted in the fall and three scholarships conferred in the spring, according to their website. “What has contributed to the success of the Symphony Guild has been the support and donations from our supporters to provide the tradition of musical scholarships for eager and energetic up and coming musicians,” said Brent Booher, the Guild President. Booher enjoys being able to host concerts such as their upcoming patriotic show and 30th-year-anniversary celebration. What he appreciates most is being able to help local music students achieve their dreams by providing them with scholarships sponsored by their organization. “It has been a very good experience,” he said. “We are very happy to continue the 30 years of the tradition of providing scholarships for students in Winter Haven and Polk State College...I love making a difference, being able to help those students go after their goals and achieve those goals.” Anastasio joined the Guild in 2000. Prior to joining, her musical experience was limited to performing the trumpet in elementary school. She did take piano lessons, and later offered them to her daughters after purchasing a piano many years ago. Other than that, she has no other musical skills. She doesn’t even sing, she said. Even then, she appreciated being able to participate within the guild and assist it with its many tasks and functions, helping to further its mission to spread music throughout the community. She remained with it for eight years, then left for four years before later returning. She was invited to join once again when the Guild started forming its Board of Directors. “They decided they needed to get members involved [with] more of a board, so they proceeded with that,” she said. “They called me to come back. I said yes. I came back and they made me president.” Currently, Anastasio serves as the Guild’s treasurer and “go-for” person. They have since cycled

through several presidents, which each and everyone offering their own fresh ideas to help better improve the guild and its mission, she said. What she loves most about the Guild is being able to travel to different places, meeting different people, and performing at different venues. Whether it’s a large and lively fundraiser or a small yet patriotic show, the Guild helps bring people together to enjoy good music. “Hopefully, we can continue to keep it going,” she said. “There are so many other things in the area for people to see and do...We are still moving forward. I hope people will come and enjoy it and continue to support the guild.” The Symphony Guild of Winter Haven will be hosting its God Bless the USA Concert on Thurs., Nov. 14 at 7:30 p.m. The concert will be hosted at the Ritz Theatre, located at 263 W Central Ave, Winter Haven, FL 33880. Throughout the seasons of the SGWH, musical experiences have been brought to the community through a series of concerts and performances and have become known as Symphony Guild “Signatures”. Traditionally, our season begins with a fall concert in September or October, followed by a Music of the Season performance in December. In March, the guild’s main fundraiser, Champagne and Shamrocks , is a sellout evening of gourmet food, outstanding music, humorous champagne toasts, and old fashioned community spirit. In the spring, the SGWH says, thank you to the community with a free concert in April or May. This is our annual Young Peoples Concert in which we showcase talented students from Winter Haven area and this concert always serves as an inspiration to us to keep up our mission of outreach to young artists!

Each time the traveler reaches the guru, the reward is a snarky comeback that never answers the question. Those cartoons were infuriating, as I, too, wanted to know the answer. One only has to do a quick web search to find plenty of articles offering solutions related to unconditional love, money, power, family, or security. While love, family, and security are important factors, I want to offer up a more

surprising answer. The secret to life is organization. After 45 trips around the sun, simple organization has become my “go-to” solution for all of life’s problems. Who knew an organized underwear drawer could be a life-altering experience. Organization is not as romantic a notion as unconditional love, but the joy that comes from knowing exactly where to find something is undeniable. The act of organization extends beyond the physical to our mental capacities. Distracted by cluttered thoughts, humans, ultimately, lose focus and determination. One of the reasons social media has become such a nuisance is the cluttered nature of the platform. The constant barrage of information is disorienting, and humans cannot process, categorize and file quickly enough so our brains have become overflowing trashcans. Here is where my advice ends. I know the secret to life is organization; however, achieving that goal is a lifelong struggle. What I failed to realize as a child reading those cartoons is that the traveler is asking the wrong question. Knowing the secret is far different than achieving it. Sturhahn’s work explores notions of the sublime in nature from a contemporary viewpoint, simultaneously considering experience, perception and transformation. Favoring process and experimentation, her practice combines the unconventional with the traditional, incorporating a range of tactile materials to create paintings on cut fabric, ink drawings, and large-scale installations comprised of textiles, such as hand-sewn sequins and painted lace. PIE-TOPIA Which Pie Are You Most Thankful For?

By Tracey Greene November starts the beginning of pietopia. Yes, Thanksgiving means it’s turkey time and, yes, “Tom” is the star of this table, but his co-star is most definitely The Pie! Which pie are you most thankful for that graces your dinner table? There’s a list a mile long of family and regional favorites but 3 ALWAYS reign supreme. Pumpkin Pie…this classic wins hands down across America as the favorite for the season. BUT, a lot of southerners prefer a different orange pie - sweet potato to the more traditional gourd. Pecan Pie…is the second most popular pie for Gobble Gobble time with its sweet gooey center and toasted nutty topping, this is the fave for MY table. Apple Pie…rounding out the top 3 and America’s sweetheart pie! Whether it’s baked with a lattice weaved crust or a crumb topping, apple is the top fruit for the holiday 30 NOVEMBER 2019

season. Our family Thanksgiving holidays always have Pecan and Pumpkin Pies as well as (seafood) Quiche…a savory pie, that we eat the night before the BIG Turkey Day meal. Our Southern relatives, and great bakers, from Tennessee always include the traditional favorites plus cream cheese chocolate brownies, pumpkin rolls and ice-box fruit cake logs with nuts. Some people are purists with their traditional desserts – hence the word traditional, and some have more adventurous palates and like to add a twist or two to their Thanksgiving sweets. 'Tis the Season of FOOD As the calendar turns the page from September to October, the holidays are in full swing. Onward to November and Thanksgiving, the best holiday of the year – born from thankfulness, family and food! Lots of glorious food built on generations of family traditions and familiar recipes that feed the tummy and the soul. Even with the age of technology, when Thanksgiving time is near we dust off those little boxes with yellowed index cards and ingredient stained recipe books filled with extra little slips of papers holding secret family recipes. The menu is set – the same from year to year. Protein and Carb, Carb, Carb! All of our favorite dishes make an appearance together for one glorious meal on one special day! In the kitchen for hours, creating love in those dishes for all of your family and friends to enjoy. The turkey, the southern-style dressing with giblet gravy – of course! The deviled eggs, the broccoli casserole, and the sweet potato soufflé. And, for me, it would not be complete without a pot of chicken n’ dumplings. Oh, and no canned cranberry sauce here…fresh is best. As

I grew up so did my taste buds; only real cranberry sauce not purple sugar in a can. Then, the dinner bell rings, prayers are said blessing the food and all folks partaking in it, everyone descends upon the dishes like they haven’t eaten in days. Within the hour people are stuffed to the brim, pants unbuttoned and ready to pop from all the goodness that’s been consumed. Now, time to gather for old stories from days gone by along with a little nap here and there in the comfy chair while pretending to watch football. Everyone enjoys their time together while waiting for a little more space in the belly for part-two…dessert time. It’s the predictable day that we look forward to each year. If we could only make it last twice as long, it seems to be over in a flash. Only 364 more days before we can enjoy that perfect meal for that perfect day…Thanksgiving. However you choose to celebrate, make the most of your day. Make your memories. Enjoy the food, the fellowship and the love…Happy Thanksgiving!

Veterinarian of the Month Dr. Yoder grew up in an Air Force family where she moved around from place to place before ending up in rural Oviedo Florida. She graduated from Oviedo High School and went on to pursue her degree in Veterinary Medicine at the University of Florida Gainesville. After graduation she moved to Lake Wales where she started her mobile veterinary service. She was the first woman equine veterinarian here in Polk County. In a field once dominated by males she powered on to then open the doors of Ridge Veterinary Hospital where she has been in practice for 31 years. Dr. Yoder has a menagerie of animals! Such as our clinic bird Pumpkin, a salmon crested cockatoo. She is an avid horse lover and Dr. Yoder has many dogs and cats. She also is very passionate about wildlife rehabilitation.
