GLAMPING

Modern Bedouin Settlements

10

I tend to have a horror of the word ‘camping’, with visions of muddy floors, freezing cold tents and horrible meals. But camping, or should I say ‘glamping’ (glamorous camping) in Bahrain’s desert area of Sakhir is a totally different adventure. Here you’ll find huge tents, complete with air conditioning, kitchens, TV’s, awesome sound systems – and very importantly, modern toilet facilities. Add to that a roaring fire and wonderful local food, and you have a winner!

Cover Story

Let’s face it, Bahrainis have been camping for generations – all the way back to their Bedouin forefathers. It’s wonderful that even with today’s busy, urban lifestyle desert camping is still very much practiced – in fact, it’s thriving. Tents are packed with family and friends and there’s even a commercialized aspect – with tents available to rent for those who want to escape city life. Some tents are part concrete to keep out the wind, sand and rains of winter. And there are often ‘double roofs’, which make for a dry ceiling, whether from rain or humidity. This year ‘Tent City’ (tents as far as the eye can see), is located near the famous Tree of Life, with a stunning background of limestone hills. And community patrols are there to ensure that your camping experience is peaceful and orderly. Campers can even find ‘camp’ restaurants that offer anything from Khuboos (Arabic bread), grills, Karak and Gawa (traditional tea and coffee). Add a mobile cold store into the mix and you’re all set. Companies have also realized the popularity and organize tents for their employees or organizing team building getaways. Party organisers rent big camp sites and throw desert nights out. Rent depends on the size and amenities offered at the campsite, averagely rent start from BD80/day on the weekends and BD40 on weekdays. Included will be toilet facilities, generator and wood for the fire. Rent depend on the size and amenities cost can be BD 100 on weekends and BD 200 on weekdays this is like 4 tents in the camp two toilets, generator to supply electricity and woods for the camp fire. Luxurious campsites can include up to 4 huge tents, sleeping facilities and professional kitchen facilities. Also available are experiences like falcon handling, camel rides, belly dancers, dune buggy adventures – and more.

2006 With its design inspired by the gardens of the Royal Arabian Palaces, Al Areen Palace and Spa is located in the southwest part of the Kingdom of Bahrain, surrounded by desert, a tranquil oasis away from the working week. The façade of the hotel reminds us of the famous Middle Eastern architecture - with evident attention to colors and shapes. The lobby is glorious - the warm shades and patterns made us feel at home in an instant. The concierges were very friendly and offered us welcoming smiles. Following a seamless check in, the eager-to-help staff drove us to our villa. The Royal Villa is one of the main attractions of Al Areen; it has two extremely spacious bedrooms, beautifully designed, with a direct flow to the pool area. There is a separate kitchen and receiving area. The villa’s ambiance will definitely give you that sense of serenity that we all deserve after a long week in the city. However, for those of you still eager to connect to the outside world – the wifi speed is fantastic. With tranquility paramount, Al Areen Palace offers the best and most luxurious spa treatments on the Island – from a relaxing massage by their professionally trained masseuse to a wide variety of body treatments for both men and women, indoor and outdoor temperature controlled swimming pools, an

March 1988 Sitra’s Secluded Surprise Want a holiday, but not looking forward to the packing/flights/ expense? Then a staycation is just what you need – and you can’t do better than Al Bander Hotel and Resort. Tucked away at the tip of Sitra, you’ll have a hard time believing you’re only 40 minutes from your front door. Excellent service starts with the reception staff – check in is friendly, professional and quick. You have options from cabana (studio room) or chalet (1/2/3 bedroom, or luxury with own swimming pool). I stayed in the 2 bedroom chalet and it was excellent – clean, bright rooms, very comfortable beds and all the amenities you need for a long weekend. The rooms face either the sea or the boats berthed at the Resort and it is wonderful to hear the waves as you drift off to sleep. The grounds are beautifully maintained, with mature palm trees and wonderfully tended gardens. Parking is plenty throughout the resort. There are several options when you get peckish – either Café Marisol with buffet or a la carte choices and a glorious terrace; The Boatyard Bar with great views over the marina with bowling/pool facilities downstairs; or room service if you’re just too lazy to leave the chalet. But if you really want to treat yourself, head off to

Afterwards you can relax with an incredible massage – I had the Swedish massage and it was very, very good (look out for the spa special deals…). Bio:

Abbas Almosawi has been a professional artist for more than forty years and learned his craft under the talented Bahraini artist, Dr. Ahmed Baqer. As a student Abbas was attracted to the impressionist style of Sabry Ragheb, whom he considers to this day to be the prince of painters. He founded the Art & Peace Project in 1991.

Abbas Almosawi has long been a much-loved Bahraini avant-garde and is now recognized as one of the Middle East’s most renowned artists. His art form is mostly impressionistic, depicting Bahrain’s stories and is a play between nature and the surrounding environment. As a man true to his roots, Abbas adds traditional flavour to his art. He dreams of a house of peace in each country around the world.

The sources for Abbas’s work were derived principally from the old Manama Market, Manama’s suburbs and surrounding villages. Given the irreversible changes of the urban and rural landscape, his paintings provide the viewer with a vital bridge to the past.

KEEPER of the

Anyone can tell you where to go or what to do in Bahrain, but it takes a concierge to give you those insider secrets that lets you experience Bahrain in a way you’d never have imagined

KEYS

By: Khalil Al Yaman Chef Concierge

Mark D. Nadonza (Chief Concierge) The Ritz- Carlton Bahrain Why did you choose to be a concierge? I’m a ‘people person’, I love to help others and provide the best possible customer care; it really is my passion and I’m honoured to work at The RitzCarlton, Bahrain. I love Bahrain and it is a wonderful experience to work here, getting to know the people, the streets and all the events taking place.

Sayed Mahmood Crown Plaza What is your most unforgettable experience with a guest? A negative one unfortunately, but one from which I learnt a big lesson. Years ago there were two sisters staying together. One sister came to the concierge desk and asked for the car, saying she’d left the tag in her room. We provided the car to her but some time later the second sister came to the concierge desk, handed over the tag and asked for the tag. When we explained that we’d given the car to her sister, she was rightly very angry and asked how we could do this without the tag. I now follow procedures very carefully, knowing they are there for the guest’s safety and security.

28

Did you have a chance to make a guest smile and why? One guest forgot her credit car and license in the rental car at the airport, only realizing this when she checked into the hotel. We very quickly called the rental car agency to ask them to keep the items safe, then drove our guest to the airport to collect them. She was overjoyed and since then has been a loyal guest, always arriving with a smile on her face.

How do you calm down a disappointed guest? I take the time to listen to them with my full attention, using empathy and the correct facial and body language. I always use the guest’s name and provide a personalized and sincere apology where necessary.

CHICKEN MACHBOOS Good for 4 guests Ingredients for French Onion Soup • 700 grams White Onions • 4 pcs Cloves • 5 grams Pepper Corn • 4 leaves Bay Leaves • 1.5 L Chicken Stock Ingredients for Machboos • 400 grams Basmati rice • 1 L French Onion Soup • 700 grams “Label Rouge” Chicken. • 15 grams Machboos Spices • 4tbsp olive oil Procedure for the French Onion Soup 1. Stir-fry the onions until dark brown. 2. Add all other ingredient of the soup & simmer for five hours then let it rest off the heat for another hour.

30

Final procedure 1. Quarter the raw chicken then sear its skin on all sides until golden brown. 2. Remove the chicken from the oven proof pot and in the same pot stir-fry the raw rice for few minutes with Olive oil and machboos spices. 3. Place the seared chicken on top of the rice, cover all the rice and chicken with the French onion soup. 4. Cover the pot with a lid then slide the dish in the oven at 160C and bake until all the liquid has been absorbed. 5. Once the rice is cooked, place on the serving plate and arrange with the cooked chicken. 6. Garnish creatively.

Chef Notes The merging of cultures in cooking requires technique, presentation skills and true flavours - it is this that inspired me to take part in Marhaba fil Bahrain’s gastronomy challenge. I was able to use fresh ‘Label Rouge’ farmed chickens from France, combining that with my years in the region and blending French ingredients into a traditional Bahraini dish, that was a great experience. Also learning that roasted onions were one of the base ingredients meant that I could link the flavours, using a great French favourite – The Onion Soup. Many thanks must go to my team and the hotel’s management. Bon appetit!

Marhaba note:

Traditional spices were used and kept the authentic taste that blended well with the French chicken. A great result! 31

CHICKEN MACHBOOS Good for 5 guests Ingredients • Chopped Spring & White Onion • Chopped Garlic, Ginger, leek • Chopped Coriander • Diced Tomato (Without Skin & Seed) • Diced Fried Bean curd • Shimeji mushroom • Japanese 7 kind of spices • Fried Egg • Fried cherry tomato Sauce • Japanese Dried Bonito & Dried Seaweed Stock • Japanese Soya sauce • Japanese Sweet Mirin sauce • Miso paste • Chicken leg (With Bone) • Basmati Rice • Olive Oil (For Saute) 32

Preparation Method 1. Grill the chicken leg on a griller 2. Wash the Basmati Rice and steep in the water for 30 min. 3. Saute the Vegetables (1-7, 9) with olive oil. 4. Put the basmati rice, chicken and Japanese sauce into a pot, voer and cook on medium heat for 12 minutes. 5. Turn off the heat and let it rest for 10 minutes. 6. Transfer to the plate and put 8-12 pieces of chicken on top of the rice. 7. Garnish with deep fried boiled eggs and coriander

Chef Notes I accepted the challenge as I had never been asked to cook a traditional dish from the countries I had worked in, and I found it very interesting. I have learned my culinary skills from family, passed down through the generations so once I found out what dish I’d be cooking, I must admit to doing further research online as I needed to know more about Machboos. I found that we have a similar dish in Japan which we call TAKIKOMI-GOHAN. Both dishes share the use of rice as the main ingredient but Bahraini cooking uses oil, whereas in Japanese cuisine, oil is rarely used. In the ingredients list all spices were traditionally followed with some added Japanese spice (SHICHIMI-TOGARASHI). The chicken was grilled in the Japanese way (ROBATA-YAKI Style). The use of soya sauce and some Japanese condiments added flavor yet kept the traditional Bahraini taste.

Marhaba note:

The finished product was wonderful, full of flavour and surprisingly light (no food coma after this meal). 33

Chef Notes 9. Add the rice at once and toss until well coated with all spices but no longer than 1 minute. 10. Pour 2 cups of the stock over the rice and mix well. 11. Lower the heat to a simmering point and keep on stirring the rice and wait until the liquid is almost all absorbed before adding more. 12. Repeat until all liquid is used up and rice is ready. 13. In the meanwhile in a separate shallow pan fry the sliced spring onions until golden and crisp (4 to 6 minutes) in the remaining oil. 14. After 15 minutes of cooking the rice add the prawns and continue to cook, they will be perfectly cooked in 5 minutes. 15. It takes 20 minutes to cook the rice to an “al dente” point but feel free to cook it at you preferred point (you might have to add a bit more liquid). 16. Add the chopped coriander leaves and the lime juice and stir well. 17. Serve immediately topped with the crisp onions.

Living in Bahrain for some time has allowed me to pursue my passion, cooking good Italian food for food lovers of all nationalities. Traditional Bahraini dishes are rich in flavours; it’s a very unique experience to create a Bahraini – Italian Fusion. I used traditional and fresh spices from the local market as replacement of ready mixed paste or powdered spices and freshly caught shrimp, which is still in its season. My twist on the traditional machboos was to use Risotto rice instead of Basmati, and add some drops of fresh lemon juice.

Marhaba note:

There were some Bahraini guests at the restaurant and they were asked to try the ‘Italian Machboos’ - they gave it 5 out of 5, saying “Chef, you nailed it.” They even asked if the recipe would be added to the special menu – a definite success. 35

Chef Notes I have been cooking for international guests for over 20 years. I believe that as a Greek chef, with Greece’s long history and roots that are strong through the generations, that there’s a very strong connection to the dishes I cook. Our food is part of our culture, it runs in our blood. Taking part in this challenge has been inspirational, allowing me to merge my authentic culinary techniques with a traditional dish of the land I have recently moved to. Great seafood is of course a common factor between Bahrain and Greece and rice is not new to me though it is less used in our cooking. The support of the team made the preparation fun and fast, making all of us feel more connected to Bahrain as we explored how best to make this dish. We of course used traditional spices and a local catch of large prawns helped me with the recipe’s hidden offering.

Marhaba Note:

Chef Thanasis said we’d find a surprise in the dish and it turned out to be delicious prawn pate nestled into the middle of the rice – absolutely delicious. 37

MACHBOOS LAMB Good for 4 guests Ingredients Broth for rice: Onion, garlic, celery, leeks and carrots Ginger, green chili pepper, black lemon Cardamom, cinnamon. Cloves, bay leaves Lamb broth For the Rice; Onions, Garlic, Pepper, Tomato paste Jasmine Rice, Parsley, coriander For the Lamb: Onion, garlic, celery, carrots, mulato chili Tomato paste, bay and avocado leaves Salt and pepper For platting: Baby potato, baby carrots, chick peas, mixed greens For the home-made Baharat: Black peppercorns, cumin and coriander seeds Cinnamon stick, cloves, green cardamom seeds Paprika powder, ground nutmeg 38

Preparation Method 1. Heat the oil in a pan over medium-high heat and sear the Lamb pieces on both sides until is brown and crispy. Transfer the lamb to a plate and leave the remaining oil in the pan. 2. In this pan Sauté pan onion, celery, garlic, leeks and Carrots cook for a minute Add the ginger, green chili pepper, Black lemon, cardamom, cinnamon, cloves, bay leaves and add the lamb broth boil for 15 minutes, strain and use this broth to the rice 3. In a sauté pan Add the oil heat medium, and sauté onions until starting to brown, add garlics, peppers, tomato, tomato paste sauté for 2 minutes add the rice and stir to combine, add the lamb Broth (We did before) cook for another 5 minutes and add the Baharat and simmer for another 10 minutes until the rice is done and has absorbed the liquid, when the rice is ready Finish with fresh coriander and parsley and serve

Chef Notes It was a pleasure for me to cook as part of this experience, this is one reason why I came to Bahrain. I believe that this dish represents much of the personality of the people of this country -very noble yet uncomplicated, with many feelings of sharing within the family. I was very pleased to see that the spices I use in my kitchen now are very similar to the spices for this dish, something I was very pleased to know when serving the South American Machboos fusion.

4. Return the lamb pieces to the sautĂŠ pan along with onion, garlic, celery, carrots, mulato chili, tomato paste and bay leaves Add the Lamb stock and stir to combine cover with avocado leaves. Bring it to a boil, reduce the heat to low and simmer for two hour. 5. For the sauce, reduce the stock used to cook the lamb. On the same stock, blanch the baby vegetables. Let it reduce a little bit more, until it gets a thick and nice consistency. 6. for the plating: placed the rice on the bottom of the bowl, the lamb on top with the sauce, and the baby vegetables and the greens located nicely as garnishes.

Thanks to my home kitchen Cantina Khalo, all the new technology made my preparation easy. Traditionally the lamb meat must be boiled on slow cooked to keep a texture that will melt in your mouth. The rice from the oven can be savoured with all its spices mixed in. Special sauce was the personal signature all the way from Uruguay, which sealed the lamb so as not to lose the traditional flavours. This is a cultural milestone that I will cherish.

Marhaba Note:

Ardently prepared and cooked, with flavours you can savour from the moment it is served. The presentation was sophisticated, but the taste was pure Lamb Machboos – with a slight South American twist. 39

10 Things you should avoid giving as a Chinese New Year gift Celebrating Chinese New Year with Chinese friends can be wonderful but, when the cultural gap is large, it can be really easy to offend by give the wrong gift. Marhaba fil Bahrain’s done some research and come up with items you should definitely not be giving.

1. Sharp Objects Giving somebody a sharp object insinuates that you want to cut off your relationship with them. A common Chinese saying goes “one slash and it’s in two parts”, which means the end of a relationship. 2. The Number 4 In Chinese, the number four (sì /srr/) sounds similar to the word for death (sì). Therefore, anything with the number 4 is considered unlucky — do not give gifts in sets or multiples of four. That is why there is no numbered fourth floor in buildings and hotels. Often a number 8 is added in front of the 4 for hotel rooms on the fourth floor. 3. Shoes Shoes are a bad idea for a present for Chinese New Year because the word for ‘shoes’ (xié /syeah/) sounds exactly like a word for bad luck or ‘evil’ (xié). On top of that, shoes are something that you step on, and are thus not good gifts.

46

4. Handkerchiefs People generally give handkerchiefs at the end of a funeral, and are a symbol of saying goodbye forever. Giving someone a gift like this insinuates you are severing all ties.

5. Clocks In Chinese, saying “giving a clock” (sòng zhōng /song jong/) sounds exactly like the Chinese words for “attending a funeral ritual” (sòng zhōng) and thus it is bad luck to gift clocks or watches. On top of that, clocks and watches also symbolise the running out of time. 6. Pears Giving fruit is a good thing, but pears are taboo. This is because the Chinese word for ‘pears’ (lí /lee/) sounds the same as the word for leaving or ‘parting’ (lí).

7. Cut Flowers Cut flowers are generally presents for funerals, so do not give them on Chinese New Year! This is especially so for Yellow Chrysanthemums and any white flowers, which represent death. White is an unlucky (funeral) color in Chinese culture, so should be avoided.

8. Umbrellas Umbrellas are a bad idea to give as gifts, because the Chinese word for ‘umbrella’ (/san/) sounds like the word for ‘breaking up’ (sàn). Giving somebody an umbrella may insinuate that you feel your relationship with them has fallen apart.

9. Black or White Objects Black and White are important colors in funerals, so avoid presents that are largely black or largely white, or wrapping paper or envelopes in these colors. Red, however, is believed to be a festive and fortunate color and is always a great option for envelopes or gifts.

10. Mirrors Mirrors are a bad idea for gifts throughout much of Asia, as they are believed to attract malicious ghosts. On top of that, they are easily broken and breaking things is a bad omen.

Heavenly Bali – and beyond

Marhaba fil Bahrain recently had the honour of being included in the Indonesian Embassy of Bahrain’s familiarisation trip to Bali and Yogyakarta – here’s our rundown of the incredible things you can experience in a week.

Day 1: Our first stop has to be a visit to see the traditional Balinese Barong dancing. You’ll be swept up in the drama of the show - with incredible costumes, live music and actors portraying scenes of Bali’s mythical past and the eternal struggle of good versus evil. Then it’s on to see Ulun Danu Bratan Temple, situated on the edge of stunning Laka Batur in Bedugul. A very atmospheric site, with wonderful views - it’s easy to find a peaceful spot and reflect. 48

Outbound

came to the village, which is host to numerous artists and artisans – a shopper’s haven, so beware…

Day 5: A ride on a becak (tricycle

Day 2:

It’s off for a full day of watersports in Bali’s Benoa district. With so many options – scuba diving, para-sailing, jet skiing, snorkeling, sea walking, banana boating, surfing – you’re spoiled for choice. The water’s warm most of the year and the sea life is breathtaking – brilliant visibility and gorgeous coloured reefs and fish. After all that activity, we headed off to Kuta beach to enjoy the amazing sunset and sip sundowners in the chilled beachside restaurants.

Day 4:

Leaving Bali and on to Java’s Yogyakarta city, a perfect base from which to explore the island. The most famous landmark is Borobudur Temple, the largest Buddhist temple in Indonesia and with the largest stupa complex in the world; the views are well worth the climb to the top. A fascinating visit with excellent guides. Next up was Wanurejo tourism village. We piled into traditional horse drawn carriages and driven through some beautiful countryside before we

rickshaw) through the streets is unforgettable and a fun way to get to Ngayogyakarto Palace, the base of the Sultan of Yogyakarta. Also a cultural centre for the Javanese, there is a lovely little museum which provides insight into the Royal’s past lifestyles. Another great stop is the TamanSari Water Palace, situated in the middle of Kota Gede, an historical neighbourhood of winding alleyways - with guides providing you with the (often titillating) story behind the Palace and it’s tranquil grounds. An action-packed whirlwind visit, but so rewarding. Incredible locations and landscapes filled with the scent of Frangipani, friendly people and mouthwateringly delicious food (beware, they use chilies in quite a few of their dishes - a lot of chilies…). A week’s visit only scratched the surface of this amazing country, so get your passports out and make your own memories.

Day 3: Ubud bound – famous for its vast array of tourist restaurants and shops, but if you head inland also home to Bali’s iconic rice fields. The views are simply wonderful and as you climb higher into the hills, you can feel the refreshingly chilled air. A must visit is Monkey Forest, just remember to remove anything shiny – especially earrings! These monkeys, although cute and fascinating to watch, are not scared of humans at all and will try and take whatever they fancy from you – my water bottle, for example! Then it’s time for some relaxation at Jimbaran where we thoroughly enjoyed our dinner on the beach. 49

What surprised you since living here in Bahrain? Im originally from Chile and it amazes me how much the Bahraini culture reminds me of home. I love the importance they place on spending time with friends and family. What are your favorite places and things to do in Bahrain? La Vinoteca Barcelona is one of my favorite. I love taking visitors for a Bahraini breakfast at Emmawash. The Saturday morning Farmers Market down in Budaiya Highway is a must do during these cooler winter months. During the hotter months spending time with kids by the pool is on the top of my list. If you could pick one quote or piece of advice to newcomers or anyone moving here in Bahrain, what would that be? Open your mind and heart to this great Kingdom you can truly build a beautiful life here…even if is just for a few years What surprised you the most? I arrived in October this year. The thing that most surprised me is the friendliness of the people, I had been told that people in the Middle East would be arrogant, but I’ve found nothing but smiles and helpfulness. Your favourite place/thing to do in Bahrain? Work has kept me so busy that it’s just been work/home, work/ home. I’m looking forward to exploring the Island this year (2017). Where do you see yourself in a year’s time? A family man – I’m getting married next month. (Marhaba: Congrats Enosh!) As far as career goes, I’d like to see myself in a senior management position within the next few years.

What was your first impression? I had no idea what to expect before coming – when I arrived I was welcomed by the fresh sea breeze but also with the heat as it was summer. That first warmth was also to be how warmly locals welcomed expats. Favourite places and things to do in Bahrain? La fontaine, Al Areen, Hamala beach, Hidd park. And I love salsa dancing. Do you plan to leave Bahrain any time soon? I haven’t made any plans as I got so attached to Bahrain. The sense of security I feel here means that this is now my second home.
