Falconry has evolved from a hunting tradition and is one of the oldest sports, predating the written word. Images sketched in clay show man with a spear in one hand and a falcon in the other. It began as a way for man to hunt winged prey in its natural habitat and is now a favourite pastime of royalty. A falcon would bond with only one man, his handler. The falconer was seen to be as proud and strong as his falcon, and falconry became a show of manly strength and dignity. Although falconry has continued to be popular across the world, transcending cultures or religion, it has become synonymous with the Arab world – a true Bedouin was said to require a camel, Arabian horse, black hair tent, 12
Saluki dog and a falcon. Falcons became gifts to royalty and peace offerings between rival tribes and kingdoms. The 20th century’s rejection of hunting impacted the art of falconry, not allowing for the traditional values and integrity. It was condemned as bloodthirsty but at the same time a central aspect of many cultures was being ignored, whereby the trainer gained a close understanding of nature and their relationship to it. However, much needed restrictions were put on the sport as the hunter was itself becoming endangered. Trapping was restricted or stopped entirely and the falcon’s natural habitat was being destroyed by expanding cities and pollution. Falconry is now no longer used primarily to hunt, but more for speed trials and as traditional displays at cultural events.

Bahrain’s Rich Trading Past Trading timeline
Bahrain was the central site of the ancient Dilmun civilization, with earliest written records dating it to the end of the 4th millennium BC right up to 538BC. The location and length of settlement made Dilmun a perfect trading partner for Tarut Island (Saudi Arabia) and Failaka Island (in Kuwait), as well as further afield such as Elam (Oman), Alba (in Syria), Haittan (in Turkey) and the Indus Valley. In addition to being on the trade route, Dilmun had its very own products to trade such as dates and other palm products – the Island was known as ‘the island with a million palm trees’, boasting no less than 23 varieties. Who inspired your culinary journey? My mother, she was my first inspiration. How did you polish your culinary skills? It took a lot of hard work, a total dedication to my profession and passion. Also, it takes a lot of research for new innovations and trials. Through that practice I will get a lot of knowledge and information to develop myself and my career. I am ready to take any risk to reach my goals, I make sure to complete them within my stipulated time. When did your love for food start? From my childhood, I have always loved cooking and presenting whatever I cook in an attractive and creative way. Also, I am a foodie! I like to taste different cuisines from different cultures and try to make the similar. After my education, I preferred the hotel industry because of my passion towards cooking. What is your most used Spice? I like to use Asian spices without compromising on the flavor of the food. Your favorite dish Kebabs and Machboos. 28

Machboos Recipe Ingredients: SERVINGS 6UNITS • • • • • • • • • •
4 1⁄2 cups water 650g basmati rice 3 tomatoes, quartered 1 -1 1⁄2 kg. chicken 3 onions, finely chopped 1⁄4 cup coriander leaves, chopped 1 green hot pepper, as desired 2 black dried limes 2 tsp. baharat spice mix 1 1⁄2 tsp. turmeric powder

1 tsp. cumin powder 2 tsp. cinnamon 1 tsp. cardamom powder 2 garlic cloves 1 slice gingerroot, cut into small pieces 3 tbsp. butter 1⁄4 cup lemon juice 3 tbsp. rose water 3 tbsp. oil 3 tsp. salt
Directions 1. Cut the chicken in half. In a small bowl, mix the buharat, turmeric, cumin, and cardamom together and add one teaspoon of salt. Sprinkle half of the spice mixture on the chicken halves. 2. Fry the onions until golden brown, add pepper and black limes 3. Add the chicken to the onion mixture and turn it over a few times in the pan. Sprinkle on the chicken a teaspoon of cinnamon and the rest of the mixed spices. Turn all together so the chicken is coated with the spices, cover the pan and let it cook on medium heat for 3 minutes. 4. Add garlic, chopped ginger, and tomato cubes to the pan and turn the ingredients in the pan a few times. Cover for 3 minutes on medium heat. Sprinkle with the rest of the salt and pour on it water while it’s still hot. 5. Cover the pan and let it cook for about 1 hour, or until the chicken is cooked. Add the chopped coriander 5 minutes before you remove the chicken from the stock in the pan. While the chicken is cooking, wash the rice well and soak for 10 minutes in cold water, then drain. 6. Remove the chicken from the pan and put on an oven tray, brush with some oil and sprinkle with the rest of the cinnamon powder and grill in the oven until the chicken is golden brown. 7. Add the rice to the chicken stock let it cook on low heat until the rice absorbs the stock and is almost done. Sprinkle rose water and lemon juice over the rice, place the butter pieces on the top. Cover the pan and cook on low heat for 30 minutes. 8. Serve the rice on a large serving plate and place the grilled chicken halves on the top. 29

What are your professional expectations of Bahrain? My passion for restaurant brought me to be part of Lanterns and looking to grow further in hospitality industry. How are you coping with the Bahrain lifestyle? Loving it! It’s extremely safe. I enjoy Middle Eastern food - kebabs, shawarma, tabbouleh, etc. Last Ramadan, although I’m not a Muslim, I decided to fast. I did not smoke or eat from sunrise to sunset. It made me appreciate the culture I am living in and I’m hoping to do it again next year. I was invited by Muslim friends to join them and their families in the “breaking of the fast.” Bahrainis are welcoming and willing to share their hospitality. The only downside is the heat but everywhere you go there is air-
conditioning. From October to April, the island is beautiful. What are your favorite places and activities here in Bahrain? I am a beach person, I like to explore some of the beaches around the Budaiya area. There is one island, Nurana, where you can go diving and swimming throughout the area. What’s really nice is you see fishermen bringing in fresh fish, calamari, etc. In terms of indoor activities, I enjoy socializing. Bahrain Walk Areas Arad Fort Walkway Located between Seef Mall Muharraq, Arad Fort and the end trail of Muharraq corniche is a short walk with access to a public beach area so take off those walking shoes and walk barefoot by the sea.
Muharraq Corniche A walkway adjacent to King Hamad Causeway Bridge and officially named Al Ghous Corniche, enjoy the Manama skyline by the shoreline. An afternoon walk will give you a chance to catch a stunning sunset whilst early morning walking will catch traditional fishermen off to fish.
Arad Bay Protected Area & Park The park and a 3.1 km walkway encloses Arad Bay where the only marine ecosystem conservation is in Bahrain. The park features water fountains, kids play area, a recreational garden with shaded garden, coffee shops and ample parking area. In 2003 Shaikh Abdulla bin Hamad Al Khalifa declared Arad Bay a nature reserve for migrant birds, shrimp and other rare marine life.

Prince Khalifa bin Salman Park A park and walk area combine with kids facilities as well as adult fun like fishing and water rides for rent other than walking and weekend group work out. Located by the side of Hidd Bridge is a 3km walk area and lots more for family days out.
Al Fateh Corniche (Manama Corniche) Waterfront walk area, with kids play ground, grass sitting area and kids entertainment nearby. Al Fateh corniche is also called Manama Walk being situated in the heart of Manama. Walkers can also visit the Bahrain Museum within the walk and even have a chance for fishing.
Andalus Park (Andalus Garden) Crossroads between Adliya, Gudaibiya and Palace Road is an enclosed public walking area of 0.65 km. Suitable for family get togethers, group get togethers or simply several brisk rounds for a longer walk. Kids playground, basketball and volleyball court with ample parking space right next to the entrance. 33

Beit Al Jasra or Al Jasra House was constructed by Sheikh Hamad bin Abdulla Al Kalifa in 1907 and was later taken as a summer residence to Sheikh Salman Bin Hamad Al Khalifa. The house was designed according to the traditional Bahraini architecture to suit the local environment. It consists of several rooms used for different purposes. All the rooms are traditionally furnished. A distinctive feature in the courtyard is the Seyam, a moderately elevated palm fronts terrace used for night rest.

Arad Fort is one of Bahrain’s most important fortified castles. Due to its strategic location overlooking various sea passages of Muharraq Island, Arad Fort was used as a defensive fortress throughout history, from the time Bahrain was occupied by the Portuguese in the 16thcentury to the reign of Sheikh Salman Bin Ahmed Al-Khalifa in the 19th century. Arad Fort was most recently restored in the 1980’s. In order to maintain the historical authenticity and value of Arad Fort, exclusively traditional materials were used. The most notable feature of the archaeological heritage of Bahrain are the numerous burial mounds, sometimes labled as the world’s largest ancient cemetery, which are scattered at numerous locations over a wide area of Bahrain. In spite of the tremendous urban development witnessed by the Kingdom of Bahrain over the last 30 years, there are several burial mound sites which still remain, like the Burial Mounds of Hamad Town, Buri, Jari al-Sheikh, Aa’li (Royal mounds), Janabiah, Jannousan and Shakoura.

The Barbar temples were discovered in 1954. Its excavations were continued by a Danish expedition until 1962, by which time three superimposed temples had been investigated and dated around 2000 BC, at climax of the Dilmun civilization. Temples 1 and 11 are built on two superposed platforms and are connected to a monumental well and its spring, which apparently played an important role in the local cult. Little remains of the third temple, which includes a large square platform and was apparently larger than the two previous ones.

Seyadi House Muharraq
The archaeological site of Bahrain Fort is one of the largest in Bahrain. Qal’at Al-Bahrain site was inscribed on the UNESCO world Heritage list in 2005, based on its outstanding cultural value. As the capital of the ancient Dilmun Civilization, the Qal’at Al-Bahrain site represents not only one of the most important ancient civilizations of the region, but also Bahrain’s identity as a center of commerce and cultural exchange. Excavations by the Danish and later French archaeological expedition have unveiled the remains of buildings of six cities located around the fort. Timings: Saturday to Friday 8:00am - 8:00pm

Seyadi House is located in Seyadi neighborhood in Muharraq city on the northern side of Sheikh Isa Bin Ali Al Khalifa House. The house was built in 1905 by Ahmed bin Qassim Seyadi. A short stroll from Sheikh Isa’s house in Muharraq is the Siyadi house, which belonged to a pearl merchant in the 19th century. Today, only a small part of the immense residence exists. The steps to the top floor features a salon and antechamber have remarkable ceiling and wall designs, using mirrors to splendid effect.

Known as the Tree of life because of the mystery surrounding its existence in the middle of the desert without any known water source. The fact that is stands alone in this area has further raised the curiosity of visitors and specialist alike for many years. The tree, believed to be from the Acacia family sheds it leave sin the winter but grows yellow flowers, which re apparent in bother spring and autumn. This type of tree is able to withstand harsh environments and can live for many years.

Believed to be the first mosque in Bahrain built during the era of the Umayyad caliph Umar II. The identical twin minarets of this ancient Islamic monument make it easily noticeable as one drives along the Shaikh Salman Road in Khamis. It is considered to be one of the oldest relics of Islam in the region, and the foundation of this mosque believed to have been laid as early as 692 AD. An inscription found on the site, however, suggests a foundation date sometimes during the 11th Century.

The adrenalin rush experience will be available at the world-renowned desert racetrack from October 14. The pair of Clio Cup experiences is sure to give motorsport fans an exciting look into the racing capabilities of one of the world’s most popular sports cars. Just an hour and a half’s flight from Istanbul and you are transported into another world. The landscape is filled with ‘fairy chimneys’, a fantastic natural phenomenon. These rocky sites and the Göreme National Park are UNESCO World Heritage sites. The weather is continental with hot summers and snowy winters. The views are actually what bring most tourists to Cappadocia, the views go on forever. This underestimated area of Turkey is where you can take one of the world’s top ten hot air balloon flights. Waking up for a pre-dawn trip collection (around 4:30am in summer, slightly later in winter), this isn’t your ordinary laid back holiday activity. But once you get past the early hour and your eyes have focused, you are driven to the offices of your chosen hot air balloon company – cheapest isn’t always best, check out reviews and the company’s safety procedures. There you will be provided with tea or coffee, as well as some breakfast pastries. You will then be advised of what the flight entails and how long it will take (approximately one hour). You then sign the obligatory disclaimer, get introduced to your balloon pilot and off you go!

The first sight of the take-off area is amazing; with dozens of balloons firing up their fuel and making them look like fairy lights. Balloons can have baskets that hold 8, 12 , 20 or 24 with some choosing to hire out private balloons for special occasions. Take off happens just as the sky is lightening and you head off in the direction of Göreme and the Rose Valley, so called because of the colour a rising and setting sun paints the landscape. A word of advice – dress for cool weather, you’re out early and you’ll be going quite high.

Top ascent will be about 3,000 feet but this all depends on what the wind dictates, it’s wonderful that nature still rules this activity.
It is utterly peaceful when you’re up there, no car horns or raised voices – just the occasional roar of the burner (and you’ll be thankful for the ensuing heat…). You’ll sail over those wonderful rock formations and valleys, peering down in awe. And all around you will be a dozen or so balloons, all drifting along making for some great photo opportunities. 2 day tours that include hot air ballooning depart from Istanbul daily, and will also feature trips to Göreme National Park – where you can visit Pigeon Valley and the historically significant and fascinating Göreme Open Air Museum. Well worth a walk around, the museum features churches, refectories and nunneries hewn out of stone and dating back to the 10th century. Some still have their original painted decoration on their ceilings. Caution - in summer it is best to visit early and avoid midday, as the tour is outdoors and the walking can be tricky. The hike through the Ihlara Valley is also highly recommended, it is not overly arduous (ask to go down the easy way) and the tree-lined river makes for a cool and pleasant 2km walk.

Bahrain is one of the most open-minded countries in the Middle East regarding dress code and social activities, though there are general guidelines that should be observed by both men and women. Modest clothing (Not too short skirts, no transparent or revealing} are expected for both male and female in public areas. Home and private areas are your prerogative. Underwear should be properly covered or kept under the clothes. Swimwear like shorts and bikinis are allowed within private resort or pool area, compound and in your own home backyard/garden. As for public beach area, everyone is advised to dress modestly being around local or traditional Muslim. Do not drink and drive this can result to imprisonment and even deportation. Pork & Alcoholic beverages are not allowed in public area but are available in hotels, bars, licensed restaurants and stores only. Private consumption is at your discretion. Public display of affection is considered impolite and can be subject to imprisonment. Photo and video taking in military areas, government premises and private areas are strictly not allowed. The biggest shock to me was the number of people from all over the world and the liberal life we expats are able to have. I knew I really liked Bahrain but had no idea I would one day call it home, until came and stayed longer. What are your favorite places and things to do in Bahrain? I love going to Adliyah to have dinner with friends and trying s new place often is easy to do. I of course love the night life and being able to dance the night away to a live band. Bahrain has given me an instant postitive vibe from when I arrived at the airport and after a few weeks of being here and visiting the a few places in Manama such as the museum, Al Fateh mosque and the prime areas such as Juffair and Manama, I can feel that Bahrain is a laid back country and very easy going. I was also taken back with the amount of restaurants and coffee shops open in the city and noticed many restaurant brands I have not seen before in other Gulf countries also everyone I have met so far has been very welcoming and hospitable. How do you see yourself in the next 1 year? I see myself still here in Bahrain and since I am enjoying my new post in Sofitel Bahrain Zallaq Thalassa Sea & Spa, I look forward to getting acquainted with more of the expats and locals living in the island and hopefully in a years time I would have gotten the chance to see more of the country. 66
