Happy New Year everyone! Don't you just LOVE the close of each year and the beginning of a brand sparkly new one? Those days between Christmas and December 31st are perfect for us to reflect on the past year. What we did, what we didn’t do that we’d liked to have done, what we did well, what we could have done better…and the list goes on. On the whole I think my 2011 went pretty well. I went on an amazing camping trip in Idaho which took me way outside my comfort zone, my editing, publishing and ghostwriting business accelerated to the point where I now have to turn clients down due to the workload, and I made excellent progress on a massive self help book launching in May 2012 with chapters by 22 luminaries. After the reflection process I then spend all day on December 31st and January 1st looking at what I’d like to achieve in the coming year. I write down all my goals, however big or small, plus what I might need to do in order to reach them. To support my efforts I make a ‘Vision Board’ by chopping images from magazines which illustrate my goals and sticking them on a large piece of card, positioned somewhere I see frequently everyday. This acts as a point of focus and whatever we give our energy to is what shows up in our reality. I have great fun making my annual vision board, especially the part which involves taking down the old one and realising that everything happened as I wanted it to.

It shows him jumping from the top of a mountain in Stryn, rocketing through a gorge as he descends 1,240 metres towards a fjord. His wingsuit features extra fabric under his arms and between his legs to provide extra lift. But one user commented: "That's not flying that's falling with style!"

The Word Up This two-letter word in English has more meanings than any other two-letter word, and that word is'UP.' It is listed in the dictionary as an [adv], [prep], [adj], [n] or [v]. It's easy to understand UP, meaning toward the sky or at the top of the list, but when we awaken in the morning, why do we wake UP? At a meeting, why does a topic come UP? Why do we speak UP, and why are the officers UP for election (if there is a tie, it is a toss UP) and why is it UP to the secretary to write UP a report? We’ve already had the pleasure of eating our first lot of red tomatoes, and the beetroots are doing well, although they’re not as big as last year when I could barely fit them in the saucepan! The celery, carrots and onions are also doing well but the peas have yet to yield! We’re very glad we put plastic down first this year as that’s really helped to keep the weeds at bay. They still pop up sometimes but there are far fewer and they’re easier to pull up too. Cazadores De La Luna Hotel The hotel Cazadores de la Luna, located in the pueblo of Colmenar has new owners who are doing a fabulous job of winning the hearts of customers.

During the meal Xavier was always on hand to help with any requests and he took the time to ensure we had everything we needed and to check we were enjoying our meals.

Fran, Jay, Paul and family took over the rural hotel at the end of September and their hard work has begun to pay off. They kindly invited a couple of members of The Sentinella to sample their culinary skills.

Neither of us had much room for dessert but how could we possibly resist such an enticing selection?! I was drawn to the homemade Death by Chocolate while Kami rather fancied the Pavlova. However when Xavier told her the size of the portion (clue: big) she changed her mind and instead ordered the prune & chocolate cake, freshly made by Fran that very day.

We chose a cold night so imagine our delight when we entered the restaurant of Cazadores to feel the warmth of a burning log fire! Xavier the waiter quickly introduced himself. Kami and I were equally surprised by his excellent English skills and his friendly and fun personality. He presented us with two menus and upon our request brought us two glasses of house red – a rich tasting Rioja Crianza. To accompany the wine he placed a plate of tapas in the middle of the table, including homemade croquetas de shark….buenisimo! After agonising over all the dishes on the menu, Kami and I both chose soups for starters. Kami couldn’t quite believe how delicious her vegetable soup was as she doesn’t usually like it, but that evening she felt unusually daring! My seafood soup was equally yummy and both bowls disappeared in record time. For mains I opted for the cod in beer batter and Kami the chef’s special chicken….special because it contains rather unusual ingredients. For the purpose of this article the ingredients are secret. If you want to know what they are then we’d recommend that you give this dish a try. It’s absolutely divine and your tastebuds will thank you for life!

We gulped as much as our stomachs could possibly hold and after letting it digest for a while Fran showed us around the rest of the hotel. It’s huge, with a brand new swimming pool, sixteen rooms with breathtaking views, a very large and inviting function room (PERFECT for weddings and parties), and not forgetting the incredibly beautiful courtyard! We left Cazadores de la Luna not only with full stomachs but also with full hearts. The team there radiate a special light which just isn’t present in most restaurants. They have a rare gift to touch people not only through the menu and the food, but also through simply being themselves. From Kami and Keidi at The Sentinella we thank you for an outstanding evening. We couldn’t recommend Los Calzadores de la Luna more… go there and feel the natural warmth!

Recipe Of The Month Mediterranean stuffed squid

Ingredients 1kg squid, cleaned tentacles cut off, chopped and reserved 2 tbsp olive oil 100ml brandy 2 clove garlic, chopped 5 tinned anchovies, chopped 3 tbsp capers, chopped 2 chillies, chopped 1 tbsp flour 300ml white wine 2 tbsp parsley, chopped, to garnish steamed couscous

4. Stuff the squid with the stuffing mixture, allowing a little room for the stuffing to expand during cooking. Seal the ends with cocktail sticks.

For the stuffing: 3 tbsp olive oil 1 large onion, chopped reserved squid tentacles, (see above) 3 plum tomatoes 85g breadcrumbs 1 clove garlic, crushed 2 eggs 2 tbsp parsley, chopped salt, and freshly ground pepper

5. Heat the olive oil in a large, lidded, deepsided, heavy-based frying pan and fry the stuffed squid for 2 minutes. 6. Pour over the brandy and carefully set alight. Once the brandy flames have died down, add in the garlic, anchovies, capers and chillies. 7. Sprinkle with the flour and add the wine. 8. Bring to the boil, cover, reduce the heat and simmer gently for 1 hour. 9. Sprinkle over the parsley and serve.

Method 1. First make the stuffing. Heat the olive oil in a heavy-based frying pan. Add in the onion and fry gently until soft and golden. 2. Add the reserved squid tentacles and fry for a further 5 minutes, stirring often. 3. Remove from the heat and add in the tomatoes, breadcrumbs, garlic, eggs and parsley, mixing well. Season to taste with salt and freshly ground pep-

Canillas de Albaida

Canillas de Albaida (pronounced Alb eye da) It is part of the Sun and Wine route and is situated 52 kilometres from Malaga and 24 kilometres from Vélez-Málaga. The name Albaida means white and was named by the arabs who founded the village in the 13th century, because according to legend the town was surrounded by white flowers! 1. Be realistic The surest way to fall short of your goal is to make your goal unattainable. For instance, resolving to never eat your favourite food again could be a bad choice. Strive for a goal that is attainable, such as avoiding it more often than you do now.

Mind, Body & Spirit My piece last month about the dangers and undesirable effects of vaccination seems to have stirred up quite a hornets’ nest, but I have expressed the same view in response to a Facebook post on MMR vaccination. The original comment dismissed the research supporting people’s concern as “discredited,” calling it “old wives' tales.” However, wives -- both young and old, and indeed women in general, with their more intuitive grasp of their childrens’ health -- have been prominent in challenging the “wisdom” of vaccination. Let’s not forget that not too long ago, the ancestors of these “old wives” were accused of being in league with the devil, tortured and put to death for daring to heal with herbs and assisting mothers in labour! Since writing the piece, I have come across the disturbing results of a survey which shows that children who receive multiple vaccinations are two to five times more likely to suffer diseases and disorders than children who don’t. It also revealed that nearly half of all children in the USA (where there is close to 100 per cent vaccination) suffer from a chronic disease or disorder, and 21 per cent are developmentally impaired. Prescription of Ritalin, a behaviourmodifying sedative, is soaring. However, vaccination is not alone amongst modern medical practices which may pose a hidden danger to health or, like a wolf in sheep’s clothing, generate health problems as -- or more serious than -- those they are intended to cure. Treating endocrine disorders such as diabetes or thyroid imbalance by injecting large doses of the relevant hormone may mask the real cause of the problem, whilst

putting the gland itself under increasing stress. This is due to a phenomenon known as cellular resistance. A healthy cell in an organ such as an endocrine gland functions as a unit in a vast community of other cells. Its membrane is loaded with thousands of receptors, ready and waiting to receive vital information from messenger molecules, from which it adjusts its activities and output appropriately. The process is self-regulated via complex feed-back loops, enabling the cell to continually adapt its response to changing demands and conditions. Problems arise when this delicate communication network is “jammed” by foreign chemicals and metals which may be products of a toxic diet or environment, or introduced through medical treatment. Its capacity to process cellular information compromised, the affected gland starts to either over-or under-produce its hormone, at which point a diagnosis of glandular exhaustion or malfunction is made. Hormone treatment is prescribed, causing still further cellular resistance in the beleaguered gland, which may eventually become so stressed that it truly is exhausted. A condition which, in many instances, could have been treated through a programme of detoxification, dietary therapy and environmental management has been turned into a chronic debilitating condition, involving possibly life-long dependency on external support systems. Readers Writes This email concerns a young Spanish man, Javier Valverde who lives in Puente Don Manuel. I recently needed someone to help me tidy my plot of land and Javier was highly recommended by a friend. Javier had spent a week working on my friends garden/plot. With his phone number in hand I called Javier and arranged a day for him to carry out several tasks. He turned up at the agreed time and after a 15 minute brief he set to work, this allowed me to continue painting my house, sorry our house as my wife continually corrects me! As a fairly fit 62 year old I gave what I thought to be a steady days work to Javier. He stopped at 10:30 for the ubiquitous bocadillo and recommenced work some 10 minutes later. By lunchtime Javier was asking me what tasks I had set for the afternoon as he, in his opinion had about one hour's work left. I immediately carried out a military style inspection of his work and it was all completed to a very high standard. During his lunch break I looked for additional tasks and discussed his performance with my wife. As I was keen to complete the painting we decided to employ him for another day's work.

I think that by now you have the background to the story. In essence Javier proved to be a remarkable worker. He is polite, trustworthy, industrious and totally reliable. I would unreservedly recommend him to anyone. What is also remarkable is that he works an 8 hour day (and I mean an 8 hour day) for only 50â‚Ź. Although I have not seen his other skills, he told me that he is a good painter and can do limited construction work. I have had many socalled professionals of varying nationalities come to my house and only one (my Spanish neighbour) has done the work to my satisfaction other than Javier. As a result of his efforts I am hoping that two members of my Spanish class are going to employ him.. However he still needs more work to survive the present economic climate. When a bus arrives, he walks around to the front and looks at the number, then boards the bus. The butcher follows, dumbstruck. As the bus travels out into the suburbs, the dog takes in the scenery. After awhile he stands on his back paws to push the "stop" button, then the butcher follows him off. The dog runs up to a house and drops his bag on the step. He goes back down the path, takes a big run, and throws himself -Whap!against the door. He does this again and again. No answer. So he jumps on a wall, walks around the garden, beats his head against a window, jumps off, and waits at the front door. A big guy opens it and yells at the dog. The butcher runs up screams at the guy: "What in the world are you doing? This dog's a genius!" The owner responds, "Genius? I don't think so. It's the second time this week he's forgotten his key!" ------------------------------------------------------------Police cordoned off Liverpool City Centre this morning when a suspicious object was discovered in a car. Jokes h a h a :) Tired of constantly being broke and stuck in an unhappy marriage, a young husband decided to solve both problems by taking out a large insurance policy on his wife with himself as the beneficiary and then arranging to have her killed. A 'friend of a friend' put him in touch with a nefarious dark-side underworld figure who went by the name of 'Artie.' Artie explained to the husband that his going price for snuffing out a spouse was £10,000. The husband said he was willing to pay that amount but that he wouldn't have any cash on hand until he could collect his wife's insurance money. Artie insisted on being paid at least something up front, so the man opened his wallet, displaying the single pound coin that rested inside. Artie sighed, rolled his eyes and reluctantly agreed to accept the pound as down payment for the dirty deed. A few days later, Artie followed the man's wife to the local Tesco Supermarket. There, he surprised her in the produce department and proceeded to strangle her with his gloved hands. As the poor unsuspecting woman drew her last breath and slumped to the floor, the manager of the produce department stumbled unexpectedly onto the murder scene. Unwilling to leave any living witnesses behind, ol' Artie had no choice but to strangle the produce manager as well. However, unknown to Artie, the entire proceedings were captured by the hidden security cameras and observed by the shop's security guard, who immediately called the police. Artie was caught and arrested before he could even leave the premises. Under intense questioning at the police station, Artie revealed the whole sordid plan, including his unusual financial arrangements with the hapless husband who was also quickly arrested. The next day in the newspaper, the headline declared... 'ARTIE CHOKES 2 for £1.00 @ Tesco ------------------------------------------------------------One day, in line at the company cafeteria, Joe says to Mike, "My elbow hurts like hell. I guess I'd better see a doctor."

"Listen, you don't have to spend that kind of money," Mike replies. "There's a diagnostic computer down at Aldi's. Just give it a urine sample and the computer will tell you what's wrong and what to do about it. It takes ten seconds and costs 10€. A lot cheaper than a doctor." So, Joe deposits a urine sample in a small jar and takes it to Aldi's. He deposits 10€ and the computer lights up and asks for the urine sample. He pours the sample into the slot and waits. Ten seconds later, the computer ejects a printout: "You have tennis elbow. Soak your arm in warm water and avoid heavy activity. It will improve in two weeks. Thank you for shopping at Aldi's." That evening, while thinking how amazing this new technology was, Joe began wondering if the computer could be fooled. He mixed some tap water, a stool sample from his dog, urine samples from his wife and daughter, and a sperm sample from himself for good measure. Joe hurries back to Aldi's, eager to check the results. He deposits 10€, pours in his concoction, and awaits the results. The computer prints the following: 1. Your tap water is too hard.
