Jeuarlet injured herself while doing an activity that she absolutely loves - aerial silks. “In April, I was training aerial rope and injured my arm, but had no idea of the severity. I kept training on it, but could feel something wasn’t right. It wasn’t until I reached out to my daughter’s high school athletic trainer that I realized how significant the injury was.” Jeuarlet came in to see Cheslee Bloyd PA-C and Dr. Ryan Donegan - BGO’s shoulder and elbow specialist. The initial evaluation was two weeks after her injury, and Cheslee felt there was a clear deformity with flexion when comparing right to left. Dr. Donegan was consulted, and to everyone’s surprised, Jeuarlet had a bicep tear. Dr. Donegan remembered, “This was such an unusual injury. When I first examined her, it seemed like a distal biceps tear, but given the situation I just didn’t feel 100% about it. Luckily MRI was arranged and performed quickly and we were able to diagnose and treat the problem rapidly.” Regarding her recovery, Jeuarlet says, “Dr. Donegan was very patient, kind, and understanding. It has now been 5 months since my surgery, and I am completely released and back doing what I love doing!” “Mrs. McClanahan was one of the most motivated patients I have ever worked with. When you step into the Vitamin aisle of your favorite store, you're confronted with a wall of options. But what do you know about these supplements? And more importantly, which ones are right for you?
Multivitamin
For most people, a daily multivitamin is the easiest way to ensure you're getting the essential vitamins and minerals your body needs. Be sure you take a vitamin geared to your unique needs. For instance, there are men's, women's and children's multivitamins, as well as multivitamins tailored for seniors.
Vitamin A A helps with night vision, making red blood cells and fight off infections. It may help prevent macular degeneration and some cell damage.
Vitamin B There are several B vitamins. Each has its own function, but most support your overall energy level. If you need to
supplement your B intake, be sure which kind of B vitamin you need. A B vitamin called folate (sold as folic acid) is especially important during pregnancy! Another, biotin, may support hair and nail growth.
Vitamin C If you're a social butterfly, this is your best friend. While this vitamin is most well-known for boosting your immune health, it also helps your bones, muscles and skin grow.
Vitamin D This vitamin helps your bones stay strong. It also helps your nerves carry messages around your body.
Vitamin E E is a lesser-known vitamin, but still very important! It helps prevent cell damage caused by pollution and UV rays. It also helps keep your blood pumping!
Vitamin K
This supports blood clotting and ensures you have healthy bones. A heads-up: if you take warfarin, watch your K intake; too much can stop the drug from working.

Calcium
You know this helps support strong bones and teeth! But did you know it also helps with muscles – including your heart? How much you need depends on a number of factors, so be sure to talk to your doctor about this important mineral.
Chromium
This mineral may help keep your blood sugar levels steady. Most people get plenty from eating broccoli, grapes, lean beef, wine and whole wheat.
Iodine
Ever notice that your box of salt says it's "iodized?" That's because iodine has been added, helping you get plenty of this mineral in your diet. Too much can be harmful and can affect certain medications.
Iron
This mineral helps you make healthy red blood cells, which in turn carry oxygen to your tissues. This is an important mineral to discuss with your doctor.
Magnesium
Muscles – including your heart – need magnesium to keep moving. It also helps control your blood sugar and blood pressure!
Potassium

This bizarre-sounding nutrient helps convert food into energy. As a supplement, it can help raise "good" cholesterol and reduce inflamation. It has also been seen in studies to prevent migraines!
Probiotics
Anyone with "tummy troubles" has been recommended probiotics at some point. These live bacteria and yeasts help support your gut health.
Turmeric
Curcumin, a compound found in this spice, has been shown to have antinflammatory properties. It is recommended as a supplement for people suffering from arthritis or ulcerative colitis, among others.
Melatonin
Can't sleep? Melatonin is a hormone that your brain naturally produces in response to darkness, helping you feel sleepy at the appropriate time of day. People who struggle to fall asleep often find this supplement helpful... especially if they have to sleep outside of "normal" sleep hours, such as nurses who work the graveyard shift.
Collagen

is beautiful, well-spoken and could literally stop traffic with her beautiful curly locks and vivacious smile. She’s a woman on a mission, having pounded the pavement as a reporter for WHAS TV and marched down the runway on an international stage. She is Elle Smith, Miss USA 2021, and she is ready to take on the world!
She
Elle fell in love with pageantry when she was 15 watching a friend navigate the process. “She was smart, beautiful, and involved in everything. She didn’t limit herself,” remarks Elle. “I wanted to be like that. I wanted to expand my interests–go explore the world. I also saw the opportunities that the Miss USA Organization provided her.” Growing up, her mother and family encouraged her to be well-rounded and explore opportunities. Elle became involved in a multitude of activities that would help prepare her for the journey. “My family always wanted me to be outside of the house, so they had me in every activity possible. I did volleyball, basketball, tennis, and swimming. I also did theater. I took those skills from theater to reporting, and then I took those communication skills from reporting to being Miss Kentucky USA to being Miss USA.” Upon graduating with a degree in journalism from UK, Elle became a reporter for WHAS TV in Louisville. It was an adviser at UK who had encouraged Elle to pursue a path in journalism. “I don’t think you can really appreciate the role of a journalist until you’ve worked in a local market,” states Elle. “I will be forever grateful for my time at WHAS TV because they took a girl who was right out of college and put me in a top 50 market and trusted me even when I didn’t trust myself.” With those skills, Elle forged a path toward Miss Kentucky USA and Miss USA. She looked at each step of the process, watched and took notes. But in the end, she also wanted to enjoy the experience. “I walked in wanting to have fun. But I don’t think anything can prepare you for the nerves that will set in. I remember during prelims, right before I walked out for the first time on stage, I almost froze!” Overcoming a bit of stage fright, Elle would go on to win Miss KY USA on her very first try! Next up for her was the title of Miss USA. “I think the prep for Miss Kentucky USA is at a different level, but then the prep for Miss USA just takes it five times higher,” remarks Elle. Elle entered in the arena having prepared but also wanting to have a great time with the other amazing contestants who had become her friends. “I’d already met the contestants at a retreat at Nizuc Resort and Spa in Mexico a couple of months prior to Miss USA. So I knew the girls that I was competing against; it didn’t feel like a competition.” It may not have felt like a competition, but Elle brought her game

to the pageant with confidence. “So they called a top 15, and we went through swimsuit, evening gown, and then the top eight did the round table discussion and then, the final question. I’m going to be honest; I didn’t have time to think,” Elle remembers. “So they called my name, and you can see I was in complete shock!” After her blissful win, there was little time to reflect as Elle was immediately thrust into preparations for Miss Universe. “I flew to Houston the day after the pageant. Then that next day, I got on a flight to Israel.” Elle would then have to quarantine for 72 hours before joining the other contestants who had already been there for a week. “I was a little nervous, but, thankfully, everyone was really welcoming.” Elle and the other contestants would eventually round out their final competition at 2:00 a.m. in Israel so that it could be aired live here in the United States. “But, it was fun,” Elle laughs. “I got to meet Steve Harvey, so it was a good time. We had been awake all day, and I think I got my makeup done at midnight! Then we filmed from 2:00 a.m. to 5:00 a.m.” Elle went on to advance to the top ten. Although she did not walk away with the title, she is excited about what the future holds as Miss USA 2021. “It was a winwin situation for me either way because being Miss USA is such a great honor. My reign has just started. I get to move to LA,” says Elle. “I’m going to have a year of endless opportunities!” Elle will not only spend her year focusing on networking in the entertainment world but also promoting the national partnership between Miss USA and organizations like Best Buddies and Smile Train. “I’ll also be working with the National Cervical Cancer Coalition to push out content to bring advocacy and education in regard to cervical cancer throughout my year.” Cervical cancer is an issue close to Elle as she lost her Grandmother to the disease in 2015. Elle has already started creating change. Not too long after her year of service began, she had the opportunity to work with First Lady Brittany Beshear on the tornado relief efforts. “We went to Taylor County. It was the first time that I got to see the devastation in person. I saw endless amounts of pictures and videos, but to see it in person, I don’t think anything can prepare you for that. There, the perseverance, the strength, the resilience was so incredibly evident, but also the support that they’re going to need long term was also evident, as well.” Elle is excited about getting on the road to travel our nation. However, Kentucky will always be first place in her heart. “I’m proud to represent Kentucky on the national stage. I am Kentucky proud, through and through.” •

each morning when I’m having my coffee and lately that’s become an unenjoyable experience. I know the markets can rebound and have many times in the past, but it’s giving me a little heartburn as the numbers continue to drop. Do you have suggestions for getting through this uncomfortable market?
—J UM PY JAC K HI JAC K : If you are like me, that morning routine sets the tone for the day, so I get it! You are correct, so far, 2022 has been a challenging year for both high risk and conservative investors alike. The S&P 500 index has officially entered a “correction” and while uncomfortable, these drawdowns are indeed a normal part of market cycles. What is likely more unsettling to diversified investors, is that bonds have not provided the stability they are historically known for. We all saw interest rates hit generational lows in the pandemic, and now stubborn
inflation pressures are causing the Federal Reserve to take a more aggressive stance on rate hikes. This Fed policy shift has sent short-term interest rates markedly higher and bond values, markedly lower. This may feel like a “nowhere to hide” market and that can be a scary feeling. It’s important to remember though, that nothing moves in a straight line forever – neither up nor down. Seeing stocks and bonds trade into such negative territory at the same time is, historically, a rare event and likely not a new regime. One of the ways to get through tough market cycles is to ensure you have proper liquidity planning for upcoming needs without being subject to price risk. In the interim, stick with high quality investments and remember that history tends to reward investors long term far more than they’re punished short term. A 2017 report estimated that the total cost of the opioid epidemic in the U.S. is as high as $622.1 billion. “Substance misuse, particularly the diversion and abuse of prescription drugs along with heroin, methamphetamine and illicit fentanyl, remains one of the most critical public health and safety issues facing Kentucky,” explained Dr. Tran, when asked what motivates the team to do this work. “For years, the annual number of Kentuckians who died from drug overdoses steadily climbed, exacting a disastrous toll on families, communities, social services and economic growth. The chance to have a positive impact on Kentucky as a whole, as well as the stigma of addiction and addiction’s effect on Lexington all drive us to do this work.” Led by Dr. Tuyen Tran and Dr. Marvin Bishop, the clinic has made an ongoing commitment to providing quality care. Cataract surgery is one of the safest and most effective types of surgery performed in the United States today. The most important step to take if your vision has changed potentially due to cataracts is to get a complete, comprehensive eye exam so that you can be evaluated and referred to a surgeon when necessary.
LASER VISION CORRECTION:
LASIK is a popular elective procedure for folks who desire not to use glasses or contact lenses full time, accomplished by correcting his/her nearsightedness, farsightedness and/or astigmatism. Although LASIK is a life-changing procedure, it’s not ideal for everyone. CENTER ON AGING at the University of Kentucky Leads the Way in the Study of Healthy Brain Aging and Dementia Research Written by: James Haggie and Donna M. Wilcock
T
he UK-Alzheimer’s Disease Research Center (UKADRC) at Sanders-Brown Center on Aging is one of the best Alzheimer’s/dementia research centers in the world, respected internationally and a cornerstone of dementia care in the Bluegrass since the mid-1980s.From a research standpoint, clinicians at the Center follow a large group of individuals from age 70 on. The work done at the Center is having an impact on the search for a treatment and cure for dementia in the Commonwealth of Kentucky, as well as around the nation and the world. What does it mean to be a research volunteer at the Sanders-Brown Center? Each year, the research volunteers visit the Sanders-Brown Center on Aging clinic to complete a battery of memory and thinking tests, give blood for research and, sometimes, spinal fluid if they are willing. In addition, everyone has the opportunity to undergo a brain scan and most people consent to brain donation upon their death. The center is led by Dr. Linda Van Eldik, a neuroscientist who leads the field in the study of inflammation and Alzheimer’s disease. Recruited 12 years ago from the prestigious Northwestern University, Dr. Van Eldik came to Lexington to lead the Center because Sanders-Brown is widely recognized as one of the top dementia research centers in the country with a legacy of robust, careful, and ground-breaking research. When asked what she is most proud of, Van Eldik said, “I am most proud of leading an extraordinary group of researchers who collaborate with a shared goal of finding a way to stop Alzheimer’s disease and related dementias”. The results of the longitudinal study and brain donation program have yielded remarkable insights into brain changes with aging, including Alzheimer’s disease and other dementia-causing disorders. For example, it was once proposed that aluminum causes Alzheimer’s disease, but careful studies by the Sanders-Brown team debunked that hypothesis. By studying the natural history of brain aging in the community, the team at Sanders-Brown has led the dementia field

Because of the Sanders-Brown team, elderly individuals in Kentucky have an extraordinary opportunity to participate in clinical trials designed to prevent dementia. For good reasons, this Center is a world leader in dementia-prevention clinical trials. According to Gregory Jicha, MD, PhD, Director of the Clinical Core at the UKA and Sanders-Brown e do not ha e research participants e ha e patients who take experimental medicines”. The distinction is a subtle but important one he patient is always number one, and science has to take a second seat to that,” explains Dr. Jicha. In partnership with several national and international consortiums and pharmaceutical companies, the center has access to the world’s leading clinical trials on Alzheimer’s disease and related disorders. he research program at Sanders-Brown translates research from the bench to bedside. There are over twenty faculty performing laboratory research spanning fields of study such as inflammation, o idati e stress, memory formation, protein misfolding, vascular changes, and genetics. It is important to understand that more that, unfortunately, a number of different disease conditions can contribute to the clinical syndrome that we call dementia , or Alzheimer’s disease. One of many examples of translational research at the center is the current clinical trial called S A - S r eter elson, , h , is the irector of the europathology ore at the -A r elson is a leading scientist studying Alzheimer’s disease-mimics and he was central to the discovery and description of LATE (limbic-predominant age-related TDP-43 encephalopathy). LATE is a dementia-causing disease with memory and thinking problems like Alzheimer’s, but it is caused by the build-up of an entirely different protein in the brain called TDP-43.
LATE is a frequent cause of dementia in people o er the age of n addition to r elson’s ground-brea ing research, r a - inda Selenica, PhD, studies molecular changes to the protein underlying the accumulation of TDP-43 in the brain, and through her collaborations in the center, she has been able to identify a unique change in the protein structure that could one day lead to a drug to prevent the disease altogether. In the meantime, a collaboration of r elson with geneticists r a id Fardo, PhD, and Dr. Yuriko Katsumata, PhD, yielded a potential target for the treatment of LATE that can be blocked by a drug that is already FDA approved called nicorandil. Drs. elson and icha recei ed funding from the ational nstitutes of ealth as well as a pri ate donor to perform a clinical trial with this drug, the first clinical trial e er designed specifically to target A he trial, called S A - S, began screening participants in April 2022. A frequent question we get at the Center is, what is the difference between normal aging and early dementia symptoms?”. Distinguishing the two at first glance can be difficult Below are some factors to consider:

2 teaspoons extra virgin olive oil 1 onion, diced 1 large sweet potato, peeled and cubed 1 red bell pepper, diced 4 cups water 2 cups low-sodium chicken broth 1 cup lentils, dried 2 teaspoons cumin ¼ teaspoon salt black pepper, to taste 2 cups cabbage, shredded 1 (15-ounce) can cannellini beans, drained and rinsed 4 cups kale, coarsely chopped ¼ teaspoon red pepper flakes Instructions: Heat a large stock pot over medium heat and add the oil, onion, sweet potato, and red bell pepper. Cook for 8-10 minutes, or until the potatoes soften and take on color. Add the water, chicken broth, lentils, cumin, salt and black pepper and bring to a boil, then reduce to low for 20-25 minutes or until the potatoes and lentils are tender. Roasted Veggie Ingredients:
• 1 small head cauliflower, cored and cut into bite-sized pieces (about 4 cups) • 2 broccoli crowns, cut into bitesized pieces (about 2 cups) • ½ red onion, cut into bite-sized pieces • 1 tablespoon extra virgin olive oil • 2 cups kale, torn into bite-sized pieces • salt, to taste • black pepper, to taste • ½ cup shredded green cabbage, or a small handful (green, Napa, or red) • Spiced Chickpeas: (makes 1½ cups) • 1 (15-ounce) can chickpeas, drained, rinsed, and patted dry • ½ teaspoon ground cumin • ½ teaspoon garlic powder • ¼ teaspoon chili powder • 1 teaspoon extra virgin olive oil • Quinoa Bowl Base with Vinaigrette: (makes 3 cups) • 1 cup quinoa, dry (any color) • 2 cups water • 3 tablespoons red wine vinegar • 2 tablespoons extra virgin olive oil • pinch of salt • pinch of black pepper Instructions:
Preheat the oven to 400°F and line a

baking sheet with parchment paper or a silicon baking mat.
In a large mixing bowl, toss the cauliflower, broccoli, and red onion together with the oil. Spread them on the baking sheet, in a single layer (use 2 baking sheets if it is too crowded). Season with salt and pepper, to taste. Roast for 20 minutes, then remove from the oven. Add the kale to the large mixing bowl that the other vegetables were mixed in, to soak up the residual oil left in the bowl. You may need to add an additional drizzle to lightly coat the kale. Spread the kale on top of the partially roasted vegetables, and season the kale with an additional pinch of salt and pepper, and roast for 5 minutes. While the vegetables are roasting, prepare the chickpeas by heating a large nonstick skillet over medium heat and adding the remaining 1 teaspoon of oil. Add the chickpeas, cumin, garlic powder, and chili powder to the skillet and stir the chickpeas for 6-8 minutes, or until fragrant and golden brown. Then set aside. Prepare the quinoa by bringing 2 cups of water to a boil in a medium

saucepan. Add the quinoa, and bring back up to a boil, then reduce to a simmer, cover and cook for 13-15 minutes. Remove quinoa from the heat and let stand for 5 minutes; uncover and fluff with a fork.
To make the quinoa vinaigrette: Whisk together the red wine vinegar and oil in a small mixing bowl, or pour them into a container with a tight fitting lid (like a mason jar) and shake until combined. Stir the vinaigrette into the cooked quinoa, and season with salt and pepper, to taste. To assemble, evenly divide between 4 large bowls: ¾ cup quinoa, ¼ of the roasted vegetables, ¼ of the raw green cabbage and about 1/3 cup chickpeas. Georgetown Bariatrics and Advanced Surgical Services According to a Harvard study in 2020, one out of every 3 adults in the United States is obese. Multiple factors, such as genetics, environmental factors, and lifestyle choices predispose people to obesity, which can cause serious health problems and complications. The life expectancy of a person who is severely obese can be reduced by 5 to even 20 years.
Treatment for obesity often includes exercise, modifying eating habits, medication, or nutritional supplementation. Diet and exercise in excessively obese patients typically lead to only a 1% chance of successfully becoming nonobese and staying non-obese for 1 year or longer. However, Bariatric weight loss surgery on a morbidly obese patient results in upwards of 50% chance of successfully becoming non-obese and staying in that state for 5 or more years. Being obese can hinder someone’s quality of life and have serious health consequences, such as heart disease, sleep apnea, cancer, high blood pressure, and type 2 diabetes. Robotic Gastric Bypass consists of separating the stomach into two sections using parallel rows of titanium staples, with the upper segment connected to the esophagus remaining the functional part of the stomach. Leaders in Comprehensive Care for the Hand and Arm
They are a miraculous system of muscles, nerves, and bones and they allow us to do most of the physical things we want to do. They are the main organs needed to manipulate our world, whether grasping a heavy object, driving a car, performing daily hygiene, or simply to touch the ones we love. They are human hands and without them we are at a loss to function. Most of us are fortunate to have two working hands, but not everyone is so lucky. In 1960, Harold Kleinert, M.D., a University of Louisville professor of surgery, took his fledgling hand surgery practice to full-time status. He also launched the Christine M. Kleinert Institute for Fellowship in Hand Surgery. A few years later, Joseph Kutz, M.D. became Dr. Kleinert’s first partner and the two took the practice to a level of national and international prominence that remains with the practice today. In 1967, Dr. Kleinert developed a groundbreaking technique for repairing flexor tendons in the tendon sheath area (also known as “no man’s land” to hand surgeons). Members of the American Society of Surgery for the Hand were in such disbelief that they dispatched a team of medical “inspectors” to review case results. In the end, the findings were proven true, and this technique was hailed as (what would be one of many) groundbreaking procedures developed by the Kleinert Kutz team. Historically one would think that much larger cities like
New York or Los Angeles would be the most important American centers for hand surgery, not Louisville, KY. But that is not the case. In the world of Hand Surgery, Kleinert Kutz is at the top of the field. Known worldwide for these groundbreaking techniques as well as the world’s first successful hand transplants, patients continue to travel from all over the world for their expertise. “Just last week we had a patient here from Costa Rica,” said Lora Mindel, Marketing Manager for Kleinert Kutz. “I have met others from Ireland and beyond. Even during COVID, which made traveling very difficult for our international patients, they still managed to come for these surgeries. Patients are sometimes very overwhelmed and desperate to get their lives back.” Today, Kleinert Kutz has 10 specialists, 5 locations (3 in Louisville, 1 in Lexington, 1 in New Albany, IN), a surgery center and MRI center (in New Albany) and a flourishing fellowship program that currently trains 1518 national and international physicians each year and has trained more than 1600 physicians in total. The Kleinert Kutz team of physicians are fellowship trained general, orthopedic, and plastic surgeons who are dedicated to comprehensive care of the hand and arm. Offering in office and emergency care 24/7, 365 days are year, the team sees approximately 60,000 visits and conducts 10,000 surgeries annually.

As if a high-volume hand and arm practice weren’t enough, Dr. Michelle Palazzo (a trained plastic surgeon and a breast cancer survivor) has also established a well-respected plastic surgery practice providing breast reconstruction to breast cancer patients. “Having gone through that experience herself, Dr. Palazzo has a strong compassion to use her skills to help breast cancer patients in their recovery,” stated Mindel. Kleinert Klutz also offers an onsite orthotics lab office which allows patients to be fitted for custom orthotics at their visits. Therapy is offered by a team of hand therapists at each Louisville office and in New Albany too. Whether it is setting fractures to carpal tunnel, to repairing complex injuries and replantations, one doesn’t have to look far to see the difference this practice makes. Just ask Yolanda Bryant, a recent patient who underwent a total wrist replacement after years of pain and the inability to rotate her arm or wrist.

While most treatments are a good way to add definition and shape, the small details are what make the difference. MICROBLADING Microblading is a technique used to correct thin eyebrows with fine-point needles and semi-permanent pigment to give the illusion of natural, fuller-looking brows. Brow microblading usually lasts 12 to 18 months, with touch-ups recommended every six to 12 months to keep the color fresh. If you have oily skin, the color on your brows may fade quicker than other skin types, meaning you may need touch-ups more frequently. Microblading is a great option if you’re trying to get rid of thin brows, bald spots, scars, or other brow concerns.

LAMINATION
Eyebrow tinting is the process of applying semipermanent dye to shape and define the brows.
Brow lamination involves straightening and lifting your natural eyebrow hairs using a chemical solution, allowing the hairs to be redirected and set in your desired shape. The result is fuller-looking brows that stay in place when brushed - it’s almost like a perm for brows! Lamination lasts for about six weeks and is great for those who want to fix the appearance of their brows after a bad waxing or threading experience.
The tint is made from vegetable dye or henna that is mixed in to match your existing shade, meaning you can get tinting done at salons or do it yourself with at-home kits. BROW EXTENSION
If you’re looking to add definition, volume, or shaping to your brows without committing, brow extensions could be a perfect option. Brow extensions are applied to the surface of the skin using glue and fibers. Each fiber is individually applied with tweezers and follows the growth pattern of your brows to create shape, which can take up to two hours. If the extensions are attached to existing eyebrow hair, they can last for up to a month, while extensions attached to the skin typically last up to two weeks.
POWDER BROWS
Powder brows, or ombre brows, is a semipermanent brow technique that results in soft, filled-in brows. Powder brows typically last for 12 to 18 months and are accomplished with a digital machine that allows soft pixels of color to be layered onto the brows. Powder brows are great for people with oily skin as the pigment lasts longer than microblading, and for people who already have full brows but want extra definition without having to fill them in daily.
MICROSHADING Microshading is often considered microblading’s gentler sister, as this technique uses small points to shade in sparse areas.
Microshading provides a more airbrushed and powdery brow look than microblading, though the two can be combined for the best of both worlds. The effects of this technique last anywhere from one to three years depending on your skin type and touch-ups may be needed. Though the practice has recently become popular on TikTok, dermatologists have been recommending it for years to quickly heal dry skin and eczema. Ready to try it for yourself? Doctors recommend using CeraVe Healing Ointment, Aquaphor, or even the classic, Vaseline. The main ingredient in these products, petroleum, is occlusive, meaning it creates a barrier on your skin to lock in hydration and result in soft, refreshed, plump skin. How to grill
People ask me all the time, what is the best way to cook their steak? I like to tell people there is no wrong answer. We all like our steaks different and that’s okay. For example, my preference is on the grill and cooked to medium rare. Since I am dealing with the top 3% of steak, I want to experience the bold and rich profile of the meat. With my steaks, I think less is more. I put my VMJ House Seasoning on it before, then after, a small pad of VMJ Butter. The butter is flavorful but not too bold to overpower the meat. First, I take it out of butcher paper about an hour before I cook and set it on a plate to come to room temperature. 30 minutes in, get the grill ready for indirect cooking at 425° At the end of hour, spray steak with cooking spray. Then season on all sides with VMJ House Seasoning. Place steak on grill over indirect heat. If you are cooking on a kettle grill, you should not have to flip. If you do have to flip, wait about 5 minutes then flip. After about 10 minutes check the temperature. If you are using one of VMJ’s Maverick bluetooth thermometers, you can watch from your phone while it cooks. If not, check temperature of steak. For medium rare, you want it to be around 125°. Pull it off grill and let it sit, covered with a pad of VMJ Seasoned Butter for about 10 minutes. It should raise another 5° to the perfect 130° for medium rare. Cooking Temperatures: Rare - 125° Medium Rare - 130° Medium Well - 140° Well Done - 160° Over that - leave on grill over night and come back to check the next morning *As a side note, blackened shrimp is a great add on for summer!
