In 1984, the Mollica Family purchased the original operation, opened at this location, and began their long, dedicated mission to establish Casa Mia today as a place that offers one of Niagara Region’s finest dining experiences. Recently, Casa Mia underwent extensive renovations. This major undertaking has netted a remarkable renaissance, and brings with it an authentic air of subtle elegance that flows through its lively new setting - a trattoria straight from the pages of Mediterranean history. Originally, it was an Indian Trail which later became the route for explorers and traders as they “portaged” between the Niagara River above the falls between Chippawa and Queenston. Thus the name of the thoroughfare today. Beyond its unique ambience, Casa Mia’s essential “ingredient” for providing an unforgettable dining experience, as all regular patrons know and new patrons quickly discover, is our source of culinary magic - Mother Luciana (Lucy) and son, Claudio. Together they coax from the kitchen what our guests come to Casa Mia for - one divine, mouth watering creation after another. Such creations have won a host of medals, innumerable accolades and an enviable degree of customer loyalty. Casa Mia’s reputation has been recognized with two Misty Awards in 1998 and 1999 for Best Fine Dining Restaurant in the Niagara Region. oni Martins was born in May of 1970 in the city of Ludenshied, Germany where he lived and studied until 1983. That year his parents decided to return indefinitely to Portugal, to the city of Chaves, where they are originally from, and open up a restaurant. His transition was difficult, and it took time to get accustomed to the many changes that occurred in his life. He vowed never to leave his country; the idea of immigrating did not convince him at the time. He continued with his schooling attending Dr. Julio Martins and dividing his time between school and work. After completing grade 12, where he met his future wife Manuela, he moved on to university, but it was short lived, as he needed to go to the army (mandatory at the time). He attended service at the Regimento de Comandos in the city of Amadora. Except for weekends, it was a long 24 Month absence from home. When he finally returned he had already married his girlfriend Manuela and had their first child Emanuel. They realized that starting a family in Portugal had become very difficult and after the death of his mother not much held him back. So when Manuela (after having being raised in Canada since the age of three) decided it was time to move he only momentarily hesitated. In 1997 and with the English language, well not mastered but at least understood, he gave Real Estate a shot. He started with a Homelife company where he became top seller of the company the very first year of his career and has continued with this success ever since. After 6 years with the same company it was time to change to a bigger and better name and moved to Re/Max. His success not only grew but so did his knowledge of real estate. Today, Toni has three children, Emanuel, Alex and Ethan and his wife Manuela always behind him one hundred percent. Today as he looks back at his life and thinks of the vow he made of never leaving his country. “It is with great pleasure and appreciation that I thank you all for your trust and support and will continue to serve you with the best of my knowledge”

pression Video Productions was established in 2001. However, prior to its current existence, it was formally known as D. Avelar Video Productions, in which the company was named after its founder Danny Avelar. Since Danny was a child, his curiosity for film making and how television was transmitted was a life learning experience. Throughout his youth, Danny honed his video making skills through family functions such as Christmas and local church festivals. Danny began shooting wedding videos at a very young age, when his dad purchased the family’s first ever VHS camcorder. Without his parents knowing, Danny took advantage of the opportunity and began shooting with the new camera. As he matured, Danny really developed an interest in making movies, knowing that it was time to take action and pursue his career, Danny shot his first wedding video in 1994. A series of small, yet empowering experiences, taught Danny that his work could make an audience laugh and cry. With the mentoring of his close friend Bert Moniz, Danny was taught the basics of shooting weddings. He continued his education by going to college to further polish his ability to produce and create more appealing videos. At the age of 23, Danny decided to incorporate his business and challenge the real world of video production. It was a difficult start at first, but thanks to references from many of his loyal clients and close relationships with other videographer friends; Danny beat the odds and was proud to finally see his passion become his full time business. Today, Xpression Video Productions Inc has become a leading force in the wedding video industry and other commercial projects. In 2006, Xpression Video received an international award through WEVA (Wedding Events Videographers Association). In college Danny also received an award for best produced music video. Danny’s credibility and loyalty to his clients is what has made Xpression Video what it is today. His belief that film-making is not only a memory made up of sights and sounds, comes with many years of professional experience that has taught him that film-making is also a story that evokes feeling. 14

It became a necessary part of my life as I moved through the ranks of football leagues as a collegiate player and finally in the semi-pro leagues of Canada and Europe. At the end of my football career while visiting family in Barrie it dawned on me that this growing city was a perfect fit for me. This was the perfect place to turn my life long hobby into my business.

THE COMPANY In September of 1999 we began pre-selling memberships for Ultimate Fitness at the Georgian mall and by January 2000 we opened our doors (556 Bryne Drive) with 1200 members and have never looked back. Within a year we began providing personal training services to our members helping our members reach their personal goals effectively and faster than ever before. In the process our members bragged about their progress and our membership base continued to climb. Our Mission is to create opportunities for individuals and families

to develop healthy, lifetime habits and improve their quality of life. Creating a sense of pride in our members, our staff, and our community, through superior service and facilities. It is our hope that each person that walks through the doors of Ultimate Fitness, will leave feeling better about themselves and the Club for having done so. After 6 years in the community we took the opportunity to service the community better with a second facility at 79 Bell Farm Rd. The building itself has its own history as one of the first fitness clubs in the city. It was a tennis club in the 1970’s. In meeting with the standards set out in our mission statement we used considerable resources to restore and update the facility to the standard our members have come to expect. We have also been able to create additional opportunities for creating healthy lifestyles with unique programs such as squash, basketball, and most recently the Twin Dragons kickboxing club. I feel we have lived up to our Mission Statement and nothing makes a more compelling argument of that than The Peoples Top Choice Award for 2007!

Let us know a little about your business experience? Before opening Torreense Restaurant in Toronto, I opened my own restaurant at the age of 19 years old in Portugal. Today I make sure that I go back, to visit my roots and realize how much I have learned since then.

What are your most famous meals? Our most famous entrées are “Carne Alentejana”, “Bife a Casa”, and last but not least our seafood platter. Every 12th of November Tia Emila celebrates her existence. She is now 60 years old and when we asked her what is the most secret ingredient of her food? She replied with a tear rolling down her face “LOVE is the best ingredient that I put into my cooking.” What plans does she have for the future? Passing the business to someone she loves or selling are options, BUT when her 41 years (and counting) of cooking are over, her mission will dedicated to the elderly. She wants to befriend those in need, helping them smile during the last days of their lives.

Next is a plan—written or not—to buy or build the products, or develop the service; locate the facilities, hire the people, develop the systems and raise the money to create, market, deliver and service the products. After the doors open, however, the similarities end—businesses tend to go in all sorts of different directions. But long-lasting growth enterprises do share a consistent set of future challenges. As they move along the course of business life, entrepreneurs must face and overcome obstacles relating to hiring, planning, refining, systemizing, evolving and, finally, exiting the business. The key to knowing which challenges are next is to look at your business’s timeline. Depending on whether you’re a startup, in the growing years from two to five, refining your approach from five to 10, maturing from 10 years on or in the final exit stage, you’ll face predictable barriers. The good news is, many entrepreneurs have been there before you, and most of those impediments have solutions that are proven and repeatable.

2ND YEAR TO 5TH YEAR, “TIME TO GROW” After your first year, re-read the business plan you started with. One reason to review it now is to update and, if necessary, revise your goals or schedules. Re-reading your business plan also re-acquaints you with the goals you had in the beginning but may have lost touch with during the hectic startup days. Fix these goals in mind as you enter years two through five. Now is the time to begin formalizing the processes and procedures you’ve developed during your first year. As you enter this first growth phase, you may hire your first employees or begin bringing on new people in greater numbers than before. Foolproof this process by writing job descriptions for all positions new and old. Well thought-out job descriptions help you hire the right people for the right jobs. They’ll also guide you in developing training that provides additional skills to people already hired. Sales and marketing processes also cry out for standardization. Carefully consider the face you want to present to customers. Codify the messages, images and other marketing materials used to present it. Look at everything—from the way service reps answer your phones to the color of your company trucks. A standardized marketing message is vital for differentiating yourself from your competitors and establishing brand identity. At some point, your company is likely to grow too large to manage in the handson way you may have used successfully in the beginning. It’s time to hire a management team, which may mean anyone from a supervisor who will oversee the night shift

to a COO responsible for a wide array of day-to-day decisions. Either way, you’ll have to let go and delegate some authority, and that’s often difficult for entrepreneurs used to signing every check and approving every expense. Make it easier by asking yourself what kind of person you can work with and creating highly specific job descriptions for managers you can truly have faith in. Personal savings, friends-and-family money and bootstrapping suffice to start many a new enterprise, but as your company grows, its needs for capital are likely to outstrip those initial funding sources. The good news is that now you have a track record, you’ll be much more attractive to banks, angel investors and other financing sources. And while you may have been able to borrow from a family member with nothing more than a handshake, it’s important to know that institutional financial sources require more documentation. Prepare for near-future financing needs by moving as soon as possible to institute solid bookkeeping procedures. Generate regular and accurate continued on page 58

accounting reports including income statements, cash flow projections and balance sheets. Bear in mind that banks are most concerned with feeling certain their loan will be repaid, while venture investors are willing to gamble with a higher risk of failure in return for the chance to earn annual rates of return of 35 percent or more through a sale or merger within three to five years. Angel investors, another source of capital for firms at this stage, may be motivated by any combination of those two, along with the simple desire to help an entrepreneur like you to succeed.

5TH TO 10TH YEAR, “GROWING TO THE NEXT LEVEL” After several years in business, it’s not

uncommon to find sales slowing, demand slackening and growth stalling as you extract potential from the products, services, customers and markets you began with. One option at this point is to abandon these tiring horses and go in search of fresher mounts in the form of completely new products, services and markets. It makes more sense, however, for many firms to consider incremental expansion in the form of extensions of existing products and services. Developing a different size, color or packaging is much less risky than coming up with an entirely new product. And slight changes can allow you to sell to 58

significant numbers of new customers in old markets, as well as sell more to existing customers. Companies sometimes change locations to follow markets, customers and even suppliers, but the biggest reason for relocation is the simple requirement for more room. Employees need space to work, inventory needs space to be stored and, at some point, no amount of shoehorning can hide that it’s time to get a bigger place. If you’re considering a new facility, carefully analyze the labor force, transportation, communication, customer markets and other infrastructure issues that will affect the move’s success. These middle years are also a good time to turn the focus away from merely increasing sales and start spending more time and energy reducing costs. Larger organizations contain larger amounts of waste, so the bigger you are, the more you can benefit from improving your productivity. Pencil and paper are your biggest allies here, as you create flow charts, step-by-step instructions and systems diagrams to find out where the bottlenecks are, how you can cut waste and which processes may be eliminated entirely. And unlike sales increases, which only turn into profits after the costs of those sales are subtracted, cost cuts go directly to the bottom line. Only after you really understand your business’s systems should you consider turning to technology as a productivity booster. New computers and more sophisticated software laid over a dysfunctional business system will result in higher costs rather than higher productivity. Once you thoroughly analyze your systems and select technology that will help make them run more smoothly, don’t forget the training. Much of the cost of new technology comes from having to train employees in its use, but so does much of the benefit. Who’s going to pay for these new facilities, new technology and product development efforts? As a relatively mature company with a lengthy track record, you’re now squarely in the sweet spot of banks and private investors. You can negotiate better terms than before, and you may well find financiers competing to do business with your solid, well-established firm. The public markets also open up around this time. While up-front

costs are high, initial public offerings give you access to the lowest-cost capital source of all, the stock and bond markets.

10TH YEAR TO RETIREMENT ”TIME TO MANAGE MATURITY“ With the maturity of becoming a decade-old company comes stability. That’s the good news. The bad news is that while your company stabilizes, markets continue to change, competitors arise, technologies disrupt and the world otherwise evolves. So the primary growth challenge in this era is to keep innovating. You’ve spent years building systems to formalize the way your company is run. Now take a look at what you’ve made with an eye to tearing at least some of it down. Channels of communication that worked well for years will be found to leave important constituencies out of the loop. Department leaders will be seen as more concerned with turf wars than growing the company. Policies that once promoted growth will be recognized as growth-retardants. Markets that once seemed they would expand forever suddenly mature themselves and become slow- or nogrowth ventures. This is often a hard phase for entrepreneurs to endure because everything they’ve built is now being re-evaluated. But the way you’ve always done it may no longer be good enough. Given that, it’s fortunate that now is the time for entrepreneurs to begin grooming a potential successor and initiate the process of stepping back from day-to-day operations. With new leadership coming on board and the founding entrepreneur taking a smaller role, it will be easier and more natural for the organization to embrace new ways of being. The tendency of many entrepreneurs is to select a successor who will do things just the way the entrepreneur would have done them. If the organization is having trouble adjusting to change, however, this is usually the wrong approach. The question is not what kind of person the founder is. The question is what kind of person the company needs. A visionary entrepreneur who can grasp the whole picture but isn’t good with specifics www.topchoiceawards.com


may have founded a company that is now in a mature industry and needs a detail-minded manager to squeeze all possible efficiency from the enterprise. Often the entrepreneur can’t properly ask or answer the question of what the company needs now and should assemble a group of people from inside and outside the company to research it. Even the perfect successor can rarely step into a company and run it as well as someone who has spent time learning how the company does things, what the problems with its products and markets may be, and what solutions have been tried. Of course, sometimes a complete new perspective unclouded by past events is beneficial. But usually a successor performs better if they’re trained in a broad spectrum of jobs within the company in various departments and at various levels over a period of years before he or she is ready to step into the lead role. Identifying and grooming a new successor is the first and most critical step to allowing an entrepreneur to step back from day-to-day company affairs. But it’s not the only one and, in many ways, it’s not the most difficult either. Many an heir apparent has turned out to be more apparent than heir because, when the moment arrived, the entrepreneur had not prepared either herself or the organization by moving toward the change in stages. One way to do this is to start taking vacations—real vacations—of increasing length, during which the successor is left in charge and the entrepreneur is only contacted if absolutely necessary.

MOVING ON: EXIT STRATEGIES The world’s oldest business is a Japanese temple construction company that has been run by the same family since 578 A.D. Your business may or may not last that long, but one thing is sure: You won’t be around to see it. Whether you plan to sell, close or pass the

business on to your children, it’s never too early to think about an exit strategy. Many owners of closely held businesses hope to pass their businesses on to the next generation of family leaders. If that’s what you’re planning, you should have begun grooming a successor during the years your business was maturing as described in the previous section. If not, start today! The process can take years. Having a well-prepared successor isn’t the whole story, however. You must also plan for the way in which you’ll actually hand over the reins. The best way is probably to announce in advance a date on which you’ll retire. When that day comes, leave the business and never return. You may make yourself available for consultation by the new leadership, but returning to the workplace and visibly participating in making decisions will only confuse everyone about who’s really in charge. Selling your business is another popular expectation of many entrepreneurs. Many potential buyers exist for well-run, profitable companies. They include other companies, both larger and smaller, investors in the public stock market, other entrepreneurs and your own employees. No matter who the buyer is, a successful sale usually begins years before the actual transaction. Business buyers are paying for the right to the future cash flows the business will generate. These cash flows must be significant enough to justify the purchase price, which is often based on a multiple of those projected cash flows. And you must be able to document the reasons you expect future cash flows will reach a certain level. That means careful record keeping, well-written operations manuals and thorough marketing and financial plans. Simply closing the business is also a viable choice. If you don’t have a viable successor and the business is unsuitable for sale, this may be your only option. The process is simple: Lay off your employees, sell the company assets, refer your customers to other suppliers, pay whatever bills remain, shut the doors and walk away. This is the most straightforward exit strategy, requiring the least forward planning and preparation and, if done properly, can be a satisfying conclusion to a rewarding entrepreneurial career. •

Celia Cuevas immigrated to Canada from Mexico in 1981. At the time, she left a promising career as a flight attendant for an unknown future in Canada. Upon arrival she worked various jobs in order to obtain that “valuable� Canadian experience. Celia worked as a social worker for Community Services in Toronto for several years and soon realized she loved dealing with people. She decided the best way to make a difference was to get into the insurance industry to assist individuals in obtaining financial protection for them and their families.

s part of nature water is the only substance that you can't break or grab, as a result we have the two ways of experiencing water; the soft way and the hard way!. Water can give or take life, it can help or destroy, so now is your choice to go with the wave or be drowned by it!! Yes, it is official, the computers are technology that will be part of your daily life, Cell phones are transforming into mini-laptops and laptops are becoming minidesktops, putting internet access at your fingertips every moment of the day. We can’t be stubborn and try to avoid it, we must embrace the new wave and use it to enhance our personal life and business. Otherwise, there is no guarantee for the future of your business and the ones you care about. STOP and think for a minute take a look around you and see... children are the future and they will take over the world we left for them, but we sometimes fail to realize that their world is not the same as ours!
