Dana White Named Businessman of the Year Canadians can’t get enough of the UFC, so they’re bringing it back to Toronto in December By Sandy Caetano FOR DANA WHITE, PRESIDENT of the UFC, Canada is one of those places he just can get enough of. And in turn, we simply can’t get enough of him either. So much that Canadians voted him the 2011 Top Choice Award recipient for Top Businessman of the Year. While in Toronto for UFC 129 back in April, White was presented with his award following a press conference to media by David Silvestre, CEO of Top Choice Media

and Monica Couto, President of Top Choice Awards. “It’s an incredible honor [to receive this award],” White tells Top Choice Magazine. “I think Canada has the best UFC fans in the world and I love putting on events there. I’d put on events in Canada every weekend if I could.” Having the unwavering support of fans is crucial, since they are what drive the UFC. Anytime the UFC goes to a new city, White says he’s blown away by the response from fans. “This thing is growing so fast and I’m always listening to what the fans have to say,” he says. “My job is to give them the fights they want to see and we work hard to create an experience that is unlike any other. I think that’s a big reason they’ve been so supportive. They know we are listening to their feedback.” Being a successful businessman is easy for White because he’s passionate about it.

BUSINESS GREATNESS He eats, sleeps and breathes it every day and has been doing so for 10 years now. To be successful in anything, White says you have to be able to make sacrifices. That’s the hard part. Being the president of the UFC is a fun job, but it’s also very demanding. White is front and centre and in the public’s eye dealing with fans, fights and media on a daily basis. But it’s what he’s wanted to do his whole life. “The fight game isn’t the easiest business in the world, but there’s no feeling in the world like seeing an arena jam-packed with fans,” he says. “It’ll give you the chills and it’ll make you appreciate all of the hard work you’ve put in. There’s no doubt that this job can be stressful, but I wouldn’t want to be doing anything else.” The most challenging aspect of White’s job, is obviously the hectic schedule, which takes him on the road a lot and away from his family. However, the most gratifying is seeing the arena full of UFC fans on fight night. Nothing can describe the energy inside an arena - you have to be there to really feel the UFC experience. UFC 129 left an impressive economical impact on Toronto and Canada as a whole, with an attendance of 55,000 resulting in a sold-out stadium the night of the big fight.
It also produced an accomplishment of $1.5 million in taxes. “I wasn’t completely convinced we could sell 55,000 tickets, but UFC fans in Toronto proved me wrong, I was blown away,” says White. “The whole city was buzzing that week – with the Fan Expo and UFC 129, UFC took over Toronto. The fans, the media, everyone came together to make UFC 129 our biggest event yet. I can’t wait to get back to Toronto.” After setting North American MMA attendance and gate revenue records in April, it’s been announced that the UFC is returning to Toronto on December 10th for UFC 140. The event will be held at the Air Canada Centre. So where is the future of the UFC headed? “We’re going to make this the biggest sport in the world. Right now, UFC is broadcast in over half a billion homes,” continues White. “With a few deals we’re working on, we’ll be in over a billion homes soon. We are going to take the UFC all over the world.”

SERVICES KERATOCONUS Keratoconus is a corneal disease that occurs when the normally round dome-shaped cornea (the clear outer area of the eye) progressively thins causing a conelike bulge to develop. New treatment modalities are offerred including corneal collagen crosslinking with Riboflavin and intracorneal rings.
INTRAOCULAR TECHNIQUES Intraocular techniques, as the name implies, are done within the eye. Three intraocular techniques are available at the Bochner Eye Institute: Phakic Intraocular Lenses - often referred to as an Implantable Contact Lens (ICL), Refractive Lens Exchange (RLE) and Cataract Surgery
LASIK LASIK, or Laser-Assisted in Situ Keratomileusis, is a type of laser eye surgery for correcting myopia, hyperopia, and astigmatism. In order for light to focus more clearly on the retina, the outer window of the eye and the cornea must be of the proper curvature.
PRK During photorefractive keratectomy (PRK), the surface cells of the cornea, called the corneal epithelium, are removed instead of creating a LASIK flap. The excimer laser is applied to reshape the cornea and correct vision. Visual outcomes are equally as impressive as with LASIK, however, the healing time tends to be longer.

She wanted to get into law enforcement. Two totally different careers - a police officer versus a hairstylist - the latter of the two is the path she grew into loving. Tamburello-Capone started working at a hair salon when she was 16. It was only supposed to be a part-time job to help her pay her way through school. When she graduated from highschool, she took a year off and continued working at the salon. It was then that she realized hairstyling was her real passion. It gave her an outlet to let her creativity flow. “I really wanted to be a cop, not a hairdresser,” says Tamburello-Capone. “After I was done school, things just started getting busy for me, and I began getting a lot of clients, especially bridal parties.” “So I thought this could be a good career, I was really starting to like what I was doing,” she continues. “It allowed me to be creative with up-do’s and especially colouring, mixing shades - it’s artwork.” Hairstyling became more than just washing, cutting and blowdrying - she was given a blank canvas and the right tools, and by the time she was complete, each new client became a new conquered masterpiece. Tamburello-Capone studied at Marca College - Toronto Hair Design and Esthetics School and has been a licensed hair stylist ever since. THERE’S A NEW NIGHTCLUB in town, with extravagance written all over it - both inside and outside. Ivy Social Club is the meaning of elegance. And this is not our opinion, this is what we’re hearing from clients and patrons who are coming in.” “It’s just so unassuming from the outside, and yet when you come inside, the whole scale of the project is just so unbelievable,” he continues. All guests are welcomed and treated as VIPs. Imagine walking in
on a red carpet, being greeted with a friendly smile, enjoying cocktails that won't cost you more than $7 each and a mature crowd that won't have you running out the door in frustration. Unlike most nightclubs, Ivy also has a food component prepared by Mistura Restaurant served until 2am. Ivy also provides a car service - a cost the club absorbs for their clients - for guests who want to come down, grab a booth and enjoy themselves without the worry of having to arrange transportation.

Grossi has been working the nightclub circuit since 1994, so he’s no stranger to the game. But with Ivy, he’s brought the level of nightlife to a whole new level and wanted the name to reflect that. “We chose Ivy because it’s nondescript, it’s generic, yet it conveys a certain level of sophistication,” Grossi tells Top Choice Magazine. Running a business is like playing a game of chess, you need to know your players, know your strengths and know when to make your move. Yes, there will always

Goodbye Z103, Hello KISS 92.5 Toronto radio DJ Dave Blezard bares all about his shocking let-go By Sandy Caetano Imagine having the rug pulled right from under you without any warning. In a matter of seconds you hit the floor in a daze, not realising what happened. The routine you were accustomed to has now halted, your life has been torn apart. Now what? That’s what happened to Dave Blezard, a Toronto-based radio personality. For nine years he was part of the Z103.5 morning show team, which included DJs Scott Fox and Ashley Greco. That was, until he was shown the door - fired without warning. “It was back in January, right after a show on a Tuesday morning, my ex-boss called me in and said, ‘We’re making some changes and it includes continuing the morning show without you’,” says Blezard. “I was really surprised, shocked - I didn’t quite understand. To me, the reason I was given wasn’t satisfactory,” he continues. “I didn’t get a chance to say goodbye, I kind of had no choice, but to accept it. And that was it.” Blezard was locked out of his email and taken off the Z103 website before he even left the office. All traces of Blezard had been erased. Fox and Greco were left to continue the morning show one man down, with no direction and no explanation for their listeners. Not happy with his sudden uprooting, Blezard took matters into his own hands. He posted a message on Facebook telling people he was let go and not happy about it. It created such an outrage, that someone created a Bring Back Dave Blezard Morning Show group on Facebook, which attracted 2,000 members. People were posting messages of anger and disapproval everywhere, including on Z103’s Facebook page. “It’s like wait a second, I didn’t quit, you fired me - it’s not like I walked out and got to leave with my head held high,” he says. “I was never written up, I was never in trouble - they said it was the performance of the morning show. So why is it that only one person (was) being let go?” But the shuffle at Z103 did not end there. In May, Fox was given his pink slip, and Greco was switched to the midday show. A few hours after Blezard was let-go, every radio station was calling him, emailing him or sending him a text message offering support. That also included a call from the national program director from Rogers, who owns KISS 92.5. The following week, Blezard was interviewing at Kiss 92.5 and five other radio stations. At the end of it, he was unemployed for about 24 days before being hired at KISS. “The connection you make with people is sometimes bigger than what you’re doing, and it’s incredibly flattering that people have gone on to the next step with me,” he says. “We’re all going to a new place, we’re all going on together, and our new home is KISS.”

EVERY YEAR, CANADIAN TELEVISION networks stop at nothing to showcase and announce their grand plans for the upcoming fall season. This time around was no different as each network - Citytv, Global and CTV - unveiled a long roster of new and somewhat interesting shows coming to your personal home theatre this fall. And not to worry, it seems that just about all the fan favourites will also be returning for a renewed season too. (Visit Top Choice Magazine’s website for a glimpse into what’s to come on the tube, including more original Canadian programming for all the networks.) Top Choice Magazine was invited to CTV’s 2011 Upfront, which took place at Toronto’s infamous Sony Centre. It was an extravagant party, with chic decor, delicious appetizers and desserts, and of course, an endless flow of beverages. CTV kept their press conference and upfront presentation separate, making it easier for media to file stories on time for deadlines. Those who were there for the press conference, the day began super early and included a big breakfast plus an opportunity to meet with the new president of CTV Bell Media, Kevin Crull. CTV anchor Lloyd Robertson, who after an amazing 60 years in TV news, announced during the upfront presentation that he’s retiring September 1st, with Lisa Laflamme taking over September 5. But the fun for media, TV critics, industry bigwigs and entertainment junkies, was all in the after-party, where we got to mingle and schmooze with one another and all the celebs in attendance to help promote this fall line-up presentation. Photo booths were set up all over the venue where the non-celebs could pose for a shot with the real stars. Big name talent were flown in for the annual schmooze-fest including Anderson Cooper, Christina Ricci, Debra Messing, Whitney Cummings, the four Big Bang Theory players Simon Hedberg, Kunal Nayyar, Melissa Rauch and Mayim Bialik, as well as, the stunning television personality and former girlfriend of Hugh Hefner, Kendra Wilkinson. The cast of Canadian police drama Flashpoint were also on hand for questions and photos, including Hugh Dillon and Enrico Colantoni.

How you look and how you portray yourself not only displays the type of person you are, but it also reflects on your place of work. And the award for best city in the world to live in goes to… By David Silvestre CANADA HAS BEEN REPRESENTED by Vancouver as being named the fourth best city in the world to live in. Congratulations also goes out to Vienna in Austria voted the top city in the world to live in, followed by Zurich and Geneva in Switzerland! With these public results there are a few questions that start to arise and it seems like many people never thought about it or don’t want to think about it, and I start to wonder why?! What exactly makes a city the best to live in? Economic stability? Have you realized how many older people are working at Tim Hortons, McDonalds and all other fast food places? Why is this?

Have you asked yourself why is there more and more students with student loans that work non-stop, but never seem to reach their last payment? Have you asked yourself why is there an increased number or people on welfare? Have you also noticed how there are tv commercials clearly showing that in Canada, children are still suffering from hunger? Many campaigns are encouraging us to help other countries who are clearly in need, but have you looked at your country lately? We need to get more involved and resolve our own problems, then we can strongly help others. What do you say?
I was touched by these questions and started to ask people directly what they think about it. After talking to many business owners, I wished I had never started asking these questions. Do you know that in Toronto many people have no food on their plates? I had no idea until I spoke with one of the Top Choice Award recipients, Mrs. Maria Fernanda of Happy Travellers. In the middle of the conversation, she informed me how every Christmas she has a team of people going straight to people’s houses bringing food and clothing to those who are in need. She says there are many people that have no family and are left abandoned in their little rooms all over

Toronto! But, hey, let’s look good by organizing an event to send money over to poor countries.
So, what exactly makes a city the best to live in? Safeness, cleanliness? Every day people talk about Rio de Janeiro as one of the most dangerous cities in the world to live in. Toronto is safe, so they say! If you compare the 2.48 million people of Toronto and the 12.5 million of Rio de Janeiro, we really are being unfair. It’s obvious that if there are more people, there are more chances of crime. Do you know how many crimes are not even reported in Toronto? Do you even know how many people in Toronto commit suicide due to unbearable living situations including reasons such as financial problems? Cleanliness?! Just remember the last time you had a great swim in Lake Ontario.
So, what exactly makes a city the best to live in? Education? In Toronto, most 20-year-olds I know are in debt with students loans up to their eyeballs. From the minute they start school, they pass every year, even if they do not study. When these students reach college, they have no other way but to try to learn what they never did plus all this new college or university material. So they are trying to do this and work to pay a loan that never seems to end. Why is there such a “careless” base to our education? The experts say that humans learn everything in their first 10 years of life, so should family values not be balanced with school knowledge in the first 10 years of life? Instead they teach them that they don’t have to worr y about failing, because they’ll always pass. No hard work required. And if you can’t handle the pressure once you’re trying to pay your student loans, don’t worry, no stress, there’s always welfare. Anyone can join and be part of this depressed group of people that simply quit the fight! This is when they find you a job at Tim Hortons, or other fast food places. When you file for bankruptcy because you cannot pay your bills. But this is your right, right? I have no doubt that with the way things are going, the government is generating a lot of money. They make sure

We have slowly painted ourselves into a corner and instead of admiting our mistakes, we brag how this is “the coolest corner around”. our children go to school when they are three-years-old, so we do not get the opportunity to spend much time with them, teaching them our ways, showing them our love and educate them as our parents did. Most of us came from other Countries, where the base of the country were family values, and where love between people matters! Do not be surprised when your 10-year-old kid comes home and says, “Mom, Dad, I learned today that you cannot scream at me, it is called verbal abuse. You can’t make me do anything that I don’t want to, that’s called ‘some type of abuse’ also, I’ll call 911. They will
serve me and protect me!” This is what is being put in their heads from the moment they start school. This is perfect for the system, because after they call the police we need a lawyer. The courts need the cash to keep rolling. Millions of dollars circulate because of the “perfect system” that builds people to crash them! Most lawyers try to keep divorced couples away from each other so they have no communication and keep putting money into the system! Though the system seems unfair and imperfect in many ways, and maybe even corrupt to some, it does work and has been working for so long.

So, what exactly makes a city the best to live in? Freedom of speech? Multiculturalism? Why is it that in Toronto, if you carry a knife in the middle of a mall, you are asked by security to immediately remove the knife? However, “some” can carry a knife in the name of their religion and nobody can say a thing to them? Try to ride a motorcycle without a helmet and I guarantee you will get a ticket; but “some” use turbans which is part of their religion, and there is no problem. The other day I walked into a bank and a security guard said: “Sir, please remove your sunglasses, the cameras must see your full face.” I apologized and on my way to the teller I saw a lady waiting in line with ONLY her eyes showing. I asked the security guard if this was a joke. I had to remove my sunglasses because you could not see my eyes, yet her face was fully covered. The only thing the officer said was, “Sorry sir, that is her religion.” Well, I am planning to start a new religion. Stay tuned for the regulations! I hope my regulations allow me to get into the bank next time. Please note, that I have nothing against any ethnic group or religion, but, I do feel that everyone should be treated equally. I promote Multiculturalism, but within the general laws of the country.
So again, what exactly makes a city the best to live in? I believe that everything starts within us, that we are a part of the city we live in. One must look daily to better themselves and to be happy - as result, it will lead to a better and happier family. Many happy families will create a happier community, and many happy communities will create one happy city. We are the ones that make the place we live in, the best one. So do as I just did, say what you think, believe and look for answers. Who knows? Maybe we are wrong. I am open to opinions and to being educated. Send me an email, a letter or just call me. I want to hear what you have to say. We are living a true paradox, because in the middle of all the “world changes,” Canada still offers the opportunity to live a fair lifestyle. Half of the problem in life is that we act without thinking. The other half is that we keep on thinking, without doing the act. •

THE PARADOX OF OUR TIME By Dr. Bob Moore THE PARADOX OF OUR time in history is that we have taller buildings, but shorter tempers; wider freeways, but narrower viewpoints; we spend more, but have less; we buy more, but enjoy it less. We have bigger houses and smaller families; more conveniences, but less time; we have more degrees, but less sense; more knowledge, but less judgment; more experts, but more problems; more medicine, but less wellness. We drink too much, smoke too much, spend too recklessly, laugh too little, drive too fast, get angry too quickly, stay up too late, get up too tired, read too seldom, watch TV too much, and pray too seldom. We have multiplied our possessions, but reduced our values. We talk too much, love too seldom, and hate too often. We’ve learned how to make a living, but not a life; we’ve added years to life, not life to years. We’ve been all the way to the moon and back, but have trouble crossing the street to meet the new neighbor. We’ve conquered outer space, but not inner space; we’ve done larger things, but not better things.
We’ve cleaned up the air, but polluted the soul; we’ve split the atom, but not our prejudice. We write more, but learn less; we plan more, but accomplish less. We’ve learned to rush, but not to wait; we have higher incomes, but lower morals; we have more food, but less appeasement; we build more computers to hold more information to produce more copies than ever, but have less communication; we’ve become long on quantity, but short on quality. These are the times of fast foods and slow digestion; tall men, and short character; steep profits, and shallow relationships. These are the times of world peace, but domestic warfare; more leisure, but less fun; more kinds of food, but less nutrition. These are days of two incomes, but more divorce; of fancier houses, but broken homes. These are days of quick trips, disposable diapers, throw away morality, one-night stands, overweight bodies, and pills that do everything from cheer to quiet to kill. It is a time when there is much in the show window and nothing in the stockroom; a time when technology has brought this letter to you, and a time when you can choose either to make a difference, or to just hit delete...

Same Content, Different Delivery How the digital era is impacting the print industry and what the future holds for books, newspapers and magazines. Adopting the new technological wave, without forgoing the traditional medium. By Sandy Caetano EVER SINCE THE INTRODUCTION of e-readers and tablets, such as the infamous iPad, predictions have been made about the death of print media. Some have guessed that newspapers will be the first to go, with most mainstream papers already downsizing and putting the focus on their online versions. But will newspapers, books and magazines completely disappear and become a part of history? And what does this mean for consumers? “Well, it’s a bit like when web banking came out, branches were supposed to disappear, but instead they’ve actually grown,” says John Cameron, publisher of T.O.Night Newspaper Group. “Now the printed product itself will transition, most likely to tablets, but I think consumers will continue to turn to the brands they trust no matter what format that is, today or tomorrow.” Cameron says it’s not a question of whether or not consumers will adopt to this new digital wave, but more a question of what. The most beneficial switch for everyone, according to Cameron, would be a digital version of the newspaper on a tablet - much like what Macleans and Wired magazine have done with their iPad app. Neil Morton, editor-in-chief of 2forcouples.com, says the shift from print to digital can be empowering for consumers, giving them a wide range of platforms that can help them access their favourite content. However, it becomes a bit more challenging for those content providers - those of us who are writing books, creating magazines and putting out the newspapers. “Naturally, it can be complicated and somewhat dizzying for content providers,” Morton tells Top Choice Magazine. “Basically, you have to learn to re-think how you assign, create and package content to leverage it (at minimal cost, mind you) via many different distribution channels to

People have started falling in love with digital media, whether it’s on the computer, a tablet or a smart phone - but those who have enjoyed books and magazines for years, are not going to forgo this medium for a new technology at the snap of the fingers. They’ll adopt this new wave to a point, and perhaps use a balance of both worlds. Yes, technology has changed people’s habits, some more than others. However, at the end of the day, ultimately, print still has staying power. For years they’ve been saying newspapers were going to whittle and die, but here they are, alive and kicking. “Newspapers were basically like the old Bell or Air Canada monopolies, and given this history, they’ve had the hardest time
adjusting to this change from new entrants or technology. I think newspapers abroad, and some in Canada, are beginning to adjust, but it will take more time to change their business models,” says Cameron. As editor-in-chief of a magazine, Morton is dealing with both the print and digital world on a regular basis, and agree that the two worlds can actually work together. All it really is, is another distribution channel for print. The written word will always be around, regardless of whether it’s on a piece of paper or on a screen of some sort. “For us, we’ve gone all digital now - with digital issues of the magazine on iPad and iPhone. Plus we’ve been far more aggressive on social media, on our Twitter, on building our Facebook numbers,” says Morton. “We’ve learned that social media, in particular Facebook for us, has been a huge driver of traffic to our mothership, 2forcouples.com,” he continues. “Digital isn’t the end of print, but it’s made print more fragmented. Consumers don’t just turn to print anymore, it’s only a small part of their daily access for content.” There used to be a finality factor attached to print, but that’s changed now. This new generation are growing up on digital - to them, digital is where it’s at, and print is kind of old school. In terms of print or digital, it all depends on the individual. We have a lot of choice available to us in today’s day and age. The challenging part for editors and packagers of content is that you want consumers to stay loyal to your brand, but it might not be from only one platform - it could be via your apps, through your website, or it could be your Facebook page. It’s about balance; rebranding your product, but not transforming it completely. Though the world of print seems to be evolving rather quickly, it doesn’t seem like it’ll be dying off anytime soon.

Spring, a time and season for new beginnings, marked the start of something different for Top Choice Magazine - it was an evening of glitz and glam as everyone came together to commemorate this fresh direction with the Spring 2011 issue of Top Choice Magazine. Party-goers came from all over the GTA and other cities like Montreal. They even came from, as far as, the United States, like former marketing maverick Joseph Sugarman, who added to the event’s notoriety. Brazilian Carnival Ball 2011 Baroque - The Beauty of Old Brazil By Sandy Caetano THIS YEAR MARKED THE 45th anniversary of Toronto’s annual Brazilian Carnival Ball, known for its exhilarating charity events that make you feel like you’ve walked into another realm. Some of the city’s most notable representatives of the media, arts, fashion, political and business communities were in attendance at the Metro Toronto Convention Centre on Saturday, April 16, 2011, to help raise awareness and funds in support of the Royal Ontario Museum (ROM) - Canada’s largest museum of world cultures and natural history. To date, the Brazilian Carnival Ball has raised more than $57 million for various causes in research, health care, culture and education. With a baroque period inspired theme, supporting the ROM was an obvious choice to go with the evening’s historic grandeur and glamour. It was a night of music, dance and camaraderie as talented and extravagantly dressed dancers in magnificent costumes from the world renowned Rio De Janeiro Carnival were performing and dancing with guests throughout the evening. “It felt like we stepped into Brazil, right down to the smell,” says Monica Couto, president of Top Choice Awards. “The lights were alive, maybe because the Winners of Rio de Janeiro Carnaval were dancing and passing by while a delicious dinner was being served. There was so much to look at, I couldn’t believe the beauty of my surroundings.” “The luxurious bars outside the main room worked as the perfect networking area ... beautiful ladies passing by and business cards being exchanged,” says David Silvestre, CEO of Top Choice Media Group. “It’s amazing adding a face to a name ... seeing people we haven’t seen in ages, being introduced to new people, and meeting those we’ve been doing business with through phone and email. UFC in Toronto The fight to sanction MMA is over, now let the real fights – and business – begin!!! By Francesca Filippelli The Ultimate Fighting Champion (UFC) left a huge impact on Toronto, as it slammed through town this past April with a show that had Torontonians sitting at the edge of their seats. There’s no doubt that the UFC understands their market, and knows how to deliver their product to them, as seen in Toronto earlier this year. Initially taking root in 1993, and later being obtained in 2001 by Frank and Lorenzo Fertitta along with UFC President Dana White, UFC has quickly become the fastest growing organization in the world. As a result, the UFC transformed from a 2 million dollar operation into a billion dollar entertainment system. In fact, under this new ownership, UFC is now producing a little over $200 million annually, just from live Pay-Per View events alone.

UFC 129 presented itself in Toronto with nothing less of a remarkable and memorable show from each of the fighters and the rest of the team, so much that it resulted in an impressive economical impact on our city. Prior to the event, White told media that originally, only 42,000 tickets were set to go on sale for Toronto. Shortly after, the first 42,000 tickets completely sold out on the first day, leaving White, “absolutely blown away by the response.” This led to another block of tickets being put up for sale. With an attendance of 55,000 and the gate receiving a figure of $11 million, White informed the public that the UFC would ultimately, “be a $40 million impact on the city of Toronto.” It produced a great accomplishment of $1.5 million in taxes.
To White the demand for the tickets was extremely shocking. Keep in mind, this is a man who has witnessed this type of entertainment supply an enormous amount of money in Canada alone. UFC did not only exceed its personal market with just one event, but it also broke the record previously held by the NFL in the Rogers Centre. In fact, if they included the UFC’s event layout, large video screens and the commitment to provide a live UFC show experience, it would be the equivalent of more than 55,000 spectators resulting in absolute capacity. Even though the violent nature of this sport may be criticized, the UFC’s popularity continues to encourage and influence the fighters and promoters to maintain its current success, hence taking this successful organization to the next level. All around the world, UFC is placed within 354 million homes worldwide and can be viewed in over 145 countries and 19 different languages. This quickly growing industry is a large contributor to the current economical business development, especially in North America, thriving on television, online and live sporting events.

For some it’s not only about sampling all the yummy treats, it’s about the cause in this case, it’s about raising awareness and funds to find

a cure for this deadly disease, cancer. On Friday, May 6th, 2011, the Bellagio Boutique Event Venue in Vaughan was transformed into a wonderland for chocolate lovers to experience one of the most elegant and lavish events held in Vaughan. The distinct aroma of chocolate was intoxicating, taking over all your senses from the moment you stepped into the room. Many fundraisers usually have a goal, something they would like to accomplish. Elvira Caria, co-organizer of The Chocolate Ball-Vaughan, said they didn’t have a goal at all.
“We just wanted to donate to our charity of choice. We raised just over $5,200 for the charity,” says Caria. “We were ecstatic with the turnout, it’s only been in existence in York Region for two years now and we are always SOLD OUT, which proves people LOVE their chocolate!” Vaughan In Motion (VIM) is a local charity that has dedicated its time to raising money for cancer care in the community. “In 2010, VIM donated $93,000, thanks to the incredible support of our Corporate community and all of our supporters ... we have raised

KIDS ARE CONSTANTLY GROWING and need our constant unput between the between the day they are born and the day they turn 18. These are the years where we as parents, have to mold them and teach them that healthy eating is essential to their rapid growth and development. Most of us parents are working full-time jobs, and unfortunately don’t always have time to ensure our little ones are eating what they should. Good nutrition is the bedrock of lifelong health and it begins in infancy. Healthy eating can stabilize children’s energy, sharpen their minds and even out their moods. Unfortunately, kids are bombarded by messages that can counteract your efforts. Between peer pressure and the constant television commercials for junk foods. One of Yummy’s most important aspects of healthy eating is enjoying a variety of fresh made-from-scratch foods each day, free from preservatives low in sugar and sodium, with the use of local ingredients and trans-fat free products. Having two kids of my own, how can I get my picky children to enjoy a wider variety of healthy foods? Picky eaters are going through a normal developmental stage, exerting control over their environment and expressing concern about trusting the unfamiliar. Many picky eaters also prefer a “separate compartmented plate,” where one type of food doesn’t touch another. Just as it takes numerous repetitions for advertising to convince an adult consumer to buy, it takes most children 10-12 presentations of a new food before they will openly accept it.
Rather than simply insist your child eat a new food, try the following: • • • • • •

Offer a new food only when your child is hungry and rested. Present only one new food at a time. Make it fun: a game, a play-filled experience. Cut the food into unusual shapes. Serve new foods with favorite foods to increase acceptance. Eat the new food yourself; children love to imitate. Have your child help to prepare foods. Often they will be more willing to try something when they helped to make it. Limit beverages. Picky eaters often fill up on liquids instead.

Preparing for the Next Chapter How a young woman copes with the pressures, concerns and challenges that arise dealing with new experiences in today’s society By Dyvine Silvestre
LIKE ANY PROFESSIONAL MOVING into a new field, career or position of responsibility - overcoming challenges is something we all have to do at one time in our life or another. For me, this new chapter is starting highschool. You may be asking yourself how this article fits in the magazine and why someone would write an article about this topic. My answer is simple: close our eyes and look at where you are now in your life. Now trace back to how it all happened. One way or another, your life started in highschool. Every choice I make from now on, will direct the way my future will turn out - no pressure. But I do have a few tricks up my sleeve that will help me or anyone else starting something new, cope with these difficult transitions. I almost forgot to mention - I’m studying to be a doctor.

Through this article I will go through certain steps to do before and during your new experience, which will make the whole thing a little less stressful and a little more enjoyable.
Being Prepared Many people ignore this step, thinking it’s a waste of time. In my point of view, it is the most important step. It’s like the foundation of a house, you can’t keep building before you have the base finished. When it comes to preparing, start off by brainstorming. Whether it’s for a new marketing plan, ideas for a new story, or a doctor coming up with the best possible treatments for his patients - everyone does it, it helps you come up with real solutions. So brainstorm exactly what you want the outcome to look like. For me, I’ve brainstormed that I should put 100 per cent of my attention on studying (especially the subjects that will prepare me for college/university and of course, medical school). This will help me achieve a greater chance at receiving a scholarship. Once you’ve made a clear picture on how you want your future to look, you can answer these questions of who, what, when, where, why and how. This also includes research and materials, anything you’ll need to make your goal possible. Who? Ask yourself who or what you are dealing with. Ask yourself if you are willing to do whatever it takes to make you successful in achieving your goal. If your answer is the same as mine, yes, then you can continue. Next do your research. This involves researching background information and achievements.
In my case, it involves what types of course electives are right for me and how many years it takes to be a doctor. Did you know that I’ll have to go to medical school for at least 4-6 years? Yikes! That’s a long time, but in the end, it’ll all be worth it. What? How can you go on without the proper materials? When you go on a camping trip, how can you expect to enjoy your time without a tent and bug spray? How can you go to a business meeting without samples, products and the proper attire? It would be a recipe for disaster. That’s why I already have all my pens, pencils, binders and other supplies ready for Highschool. Where? Where is an appropriate place? Whether it’s a family reunion, a business meeting of some sort, or a Highschool - there are different places that you go according to what your doing or looking for. When? When will you start? Right now! Yes, I am only 13-years-old, but every decision I make now will affect how I live as an adult. Every decision you make as an adult, will reflect the rest of your adulthood and will also play a role in your child(ren)’s future. Why? Why are you starting this goal? Why are you moving onto this new chapter? Is it for a feeling of joy, income, to spice up your life? In my case, I love helping people and love being around respected people, and I think doctors pretty much get the best of both worlds. And lastly... How? How will you achieve your goal? How will you deal with the stress and pressure? It’s simple really, follow through with these questions and they’ll give you a great plan. You know what they say, “Fail to prepare, prepare to fail!”
Following Through With Your Plan You may not have noticed, but these questions make a great plan. Now, all you have to do is follow through. I haven’t been able to get to this step yet, because it’s still summer. But once I begin highschool, I will not let anything distract me. Every choice I make will be based on whether or not it will help me achieve my goal. Speaking from past experience, it’s much easier to do something when your organized. That’s why in highschool, we have day organizers and buy things like pencil cases to further organize our materials. Whatever you are doing, make sure you’re organized, so that things can run smoothly.
Look Back The third step is to see if your plan is working successfully. Look back at your original brainstorm - are you getting what you want? If you are, great for you! You are on the right track to achieving your goal and moving forward. If you’re not, go back to those questions you asked yourself, redo them and workout a new plan that can work out better. Looking back will reassure that you are on the right track! This part of my life is excruciatingly important. This is the base of my education, career and more importantly my life. Yes it’s scary, stressful and exciting. I’m sure anyone starting something new has many ideas, doubts, thoughts and questions just like me. Remember, that if you follow these guidelines it will make coping with this new chapter a lot easier. Good luck!

How to Close the Deal
Conducting a business deal perfectly is difficult, but doing so professionally is a must By Sandy Caetano
THE DEAL IS NEVER really done until the cheque clears. Closing a business deal is a process that requires finesse, patience and excellent communication skills. So don’t count your chickens ‘til they’re hatched. Every aspect of the process of conducting a business deal has to be precise. Keep in mind that although every part is of equal importance, until funds have been exchanged the deal is not yet complete. “Verbal confirmations and even signed documents are wonderful to have, especially the latter,” says Wakeel Alli, a Toronto senior financial rep for small businesses. “However, it’s important to always remain focused, and geared towards a positive outcome even after you feel that the deal is done,” he says. “In doing so, you would also be keeping the second deal or contract in mind as business is continuous.” If you’ve ever written ‘excellent interpersonal skills’ on your resume, now would be a good time to employ it. To conduct business perfectly is always hard, but your level of professionalism will determine greatly on whether or not you and a potential client will do business. You may have the best deal in town, the most amazing products and the idea of a life time, but if you’re proving hard to work

with due to a lack of professionalism, you may have to move to another town, keep your amazing products in the box and wait a life time for another client to come your way. “Look your best, take every meeting seriously, and in doing so, your client will return the favour,” says Alli. “The definition of perfectly will differ from client to client, life experience by life experience. The best

Being strategic in your topic choices, will add to your professionalism and will ultimately increase your chances of landing the big
deal. We all do business with people we know, like and trust, so if you can manage the ‘know’ and ‘like’, the ‘trust’ will follow and so will new business. “Invest time with the buyer before the presentation making sure they are truly emotionally connected to your product or service,” says Don Spini, CEO and author of the #1 Best-Seller of Sixty-Seconds to Yes. “Remember the client is there to say yes to something, but if they are not in the high-value state of mind, the cost can seem too much. Build great rapport and truly elevate their perception of value before the presentation.” Business is a part of life, and the same tactics and strategies that you utilized in your life to be happy and accomplish life goals, will be the same that you use in business. Be confident - surround yourself with positive people with proven success. “There is no evidence selling works. Making decisions work because we all make dozens of decisions everyday,” says Spini. “And guess what? We do so without a sales person helping us! Think about that. Influential people know this process and know how to initiate it in others and navigate them to a ‘yes.’”

If this looks like your business plan, it’s time to rethink OPENING A NEW BUSINESS is not a simple task, especially if you don’t have a plan. It’s shocking how many actually crash and fail within the first year. If you’re just starting out, learning how to build a successful and thriving business all begins with a little research. First things first - jot down everything you want to accomplish, from the name of your business to the purpose behind your business. Is it tied to a passion? Will this business help achieve your personal and professional goals? “This is what will navigate them through all the tough work that he or she needs to do to grow the business. If there’s a purpose behind starting the business that’s tied to a passion, they’ll have much greater perseverance,” says Michael O’Grady, founder of Sales-Psychology LLC. Every new business owner must identify exactly what their business purpose is as an extension of themselves, as well as, what the definite chief aim or end result of the business will be. Once your identity has been clearly defined, you’re now in a position to share your vision with others and to focus on where it is you’re going. The vision you have for your business must be

These finance options must be considered carefully. “I’d suggest a new business owner to discuss all the options with a financial advisor before making these decisions,” says O’Grady. “Becoming profitable is probably one of the most important things on a business owner’s mind. But I see many business owners not making the right decisions to become profitable. Time management is one of the biggest obstacles in becoming profitable.” Building your network of people who are important to your business and can help you spread the word, is key. Caldense Bakery has been one of the leading suppliers of some of the finest European pastries and breads serving the GTA since 1968. Dubbed by many as the home of the Portuguese custard tart, otherwise known as the famous pastel de nata, there is nothing Caldense Bakery isn’t committed to doing perfectly. My favourite bread is their padas - a sourdough bun so flavourful you can eat it right out of the oven with nothing else in it. Courense Bakery & Pastry
Courense Bakery is one of my favourite places to stop by for an iced latte and their delicious pastéis de bacalhãu (cod cakes) - that is, next to my motherin-law’s recipe. Another savory treat on their menu are their pastéis de camarão (shrimp patties). For 25 years, this family-owned and run bakery has catered to their multi-cultural community’s events and private parties. They too, have a hot table full of fresh made dishes available on a daily basis, an ice cream bar featuring the famous Sicilian Ice Cream, and are highly known for their extravagant wedding cakes. In fact, their cake decorator who has been working at Courense for 20 years, has been nicknamed “The Toronto Cake Boss.”

When you walk along Dundas St., it’s not hard to find a shop, café, bakery - a place to sit down and enjoy an espresso and a creamy dessert. The trick is finding a good one! This Nova Era location has been a staple in the Portuguese community for over 19 years. Sure there’s been competition around trying to bring them down, but no matter what has been thrown in their way, Nova Era stands tall and proud. Their doors are open to everyone. Walk by on a Friday night, and you’ll be waiting a while to get a seat. They are that popular and that good! They serve all the typical bakery products - coffee, beverages, breads, sandwiches, soups, cheeses, deli meats, cakes and pastries too. The real indulgence here are their custard tarts, warmed up and sprinkled with icing sugar and a few pinches of cinnamon! Bon appetite!

Ciao Roma
Ciao Roma will take you back to Italy, where this Roman pizza originated, recreating a piece of art that is scrumptious to the last bite. Roman pizza is a square pizza served by weight, so you can taste a little bit from each of the various pizzas they serve daily. The quality of the dough is like no other, partly because some of the ingredients, like the flour, are imported from Italy and partly due to the pizza chef’s special techniques. Each pizza takes four days to create, from making the dough and prepping ingredients to the time you eat it. These guys flew to Italy and mastered the art of making Roman pizza with one of the top chefs in Rome, whom they brought back to man their kitchen at Ciao Roma.

Best of Toronto’s Pizzerias Pizzeria Libretto
Pizzeria Libretto makes Neapolitan pizza, pizza napoletana. This type of pizza is typically topped with a tomato basil sauce, cheese and various toppings. The pizza I chose was the margherita with extra cheese and chili oil drizzled over the top. The aroma itself was intoxicating. The crust was thin and soft, so it had to be eaten with a knife and fork. The basil added an earthy flavour to the pizza, while the chile oil gave it a flavourful heat. The pizza was made to order within a few minutes. It took me longer to eat the pizza then it did for the chef to make it! The staff is very knowledgeable about every item on the menu, and when new hires on brought on to join the team, they are required to taste most of the menu. Pizzeria Libretto is also one of the few in Canada to be certified by the Associazone Verace Pizza Napoletana (VPN) in Naples, which promotes and protects Pizza Napoletana.
Terroni
Terroni is a traditional southern Italian restaurant. Everything on their menu is delicious, but what they are highly known for is their pizza. Walk into Terroni at any given day during lunch hour, and you’ll be waiting for a seat for a good while. But once you’ve been seated, the food is well-worth the wait. The front of the restaurant houses a bar area, where you can enjoy your beverage of choice while you wait for a table. The dining room is very authentic looking, and truly has the feel of being in Italy with it’s classic decor. Once seated, your server comes to greet you right away with menus. They get A+’s for excellent service. Not only are they quick to take care of their customers, the quality of both service and food is unbelievable. Terroni must be the only place I know of that offers Pizza Marinara, a simple pizza with only a savory tomato sauce and basil atop of an airy crust. Their sauce is so good it doesn’t need cheese or other toppings to give it flavor.

Pizza e Pazzi
St. Clair West has a new pizzeria in the neighbourhood, featuring authentic Neapolitan pizza, certified by the Associazone Verace Pizza Napoletana (VPN) in Naples. On these pizzas you can be sure that you won’t find pineapple on it! Owners Danilo Scimo and wife Sandrelle, welcomed me with hugs and European cheek to cheek kisses. The invited me in to sit and have some food. I ordered a caprese salad, with colourful sliced tomatoes and a huge buffalo mozzarella ball in the middle of the plate. The fresh mozzarella was delicious. Next I had the margherita pizza, which I had the pleasure of watching being made by the pizza chef. Once the toppings were on, it was popped in the six tonne wood burning oven and out within ninety seconds! Mmmm, tasty!

When I went to Rome for my honeymoon, my husband and I were in heaven with the pizza. Every bite was a new explosion of flavour bursting in your mouth. Nothing here could compare to the pizza we had there. That is, until Falasca SPQR opened on Yonge Street south of Eglinton. Open only two weeks, this place already has line-ups for lunch. Roman style pizza is different from the pizza we all know here. It’s square pizzas with a variety of fresh toppings picked up locally, and priced by the weight. So instead of getting one big slice, you can get three or four small slivers of three or four differently topped pizzas. My favourite is a spicy pizza with garlic, cheese and cherry tomatoes. Another interesting pizza has pumpkin sauce topped with porcini mushrooms and cheese. At 6pm, the take-out side closes, and the dining room opens for dinner, where you can sit down and enjoy a thin crust round pizza, a calzone or a bowl of your favourite pasta!

Though you may be waiting a while before getting to place your order, it’s well worth the wait once you’re able to sink your teeth into this delicious roasted chicken. With reasonable prices, Churrasqueira Estrela continues to be a driving force within their market. They also serve up some of the best traditional home cooked Portuguese dishes, giving customers a bounty of choices to satisfy their appetite.

Real Food for Real Kids
Husband and wife duo, David Farnell and Lulu Cohen-Farnell, started Real Food for Real Kids (RFRK) while trying to find a daycare for their son Max that would provide him with a real meal. That meant no chicken nuggets, mac ‘n cheese or fish sticks. So they sent Max to daycare with homemade healthy snacks. Seven years later, RFRK is on a mission to feed kids healthy, all natural food which they serve to over 6,000 kids a day at 135 different locations. All of their meals are made from scratch with fresh ingredients supplied by local farms.

From the minute I walked in the door, I was welcomed with open arms into Gentry Lane Automobiles. After introductions, I was taken on a tour of the building. The stunning cars I had pined over from the gorgeous window front for years, I was finally able to touch, to smell, to sit in, and admire up close. First were the models parked on the drive way, which were nothing less than spectacular - these are definitely high-end cars. Although the owner was busy at first, I got a chance to speak to many of the employees working that day. I was in an environment that left a friendly and relaxed impression on me; feelings that are necessary after you’ve just experienced a car accident. Last Minute Getaways: Europe 5 places to keep an eye on when you are all packed and looking for a deal By Francesca Filippelli SUMMER IS A GREAT season for having fun in the sun, whether it’s in your own backyard or during your travels abroad. But for those of us who just haven’t been able to take a vacation yet, it’s time to give these last minute getaways some serious thought. Before you pack your bags and head to a sunny spot in a tropical paradise to end the summer, take into consideration where you would like to go and what your budget is. The most popular places will continue to be the most expensive, but that doesn’t mean you can’t still experience beauty without having to spend so much. Europe has, and for the most part, will always be a popular place to travel with tons of destinations for a relaxing time away. Though many expect Europe to be very expensive, there are many hot spots in Europe that offer the best prices for last minute vacations, along with gorgeous sites to explore. Now, thanks to a stronger Canadian dollar that provides better value, Europe is a perfect destination. Kristi Bejczak, account co-ordinator for Transit Holiday, tells Top Choice Magazine that there are five must see places to visit in Europe this year.
The Azores PORTUGAL “The Islands of Azores in Portugal is a breathtaking experience,” says Bejczak. “It’s home to green volcanic mountains, mineral hot springs, hydrangea-covered hills, rambling vineyards, white-washed seaside towns and cobblestone lanes.” The best times to visit are between the months of May to September, as this period

A great place to visit from July to September. “Sisteron is an ancient town resembling its beauty with a variety of narrow stepped streets - it is also surrounded by constant festivals and many events throughout the summer months,” says Bejczak.
Istanbul TURKEY The second place on the top five places to visit include Istanbul, Turkey. Here you should visit Topkapi Palace - the palace overlooks the famous Bosphorus and the See of Marmara in Istanbul. The best time to visit this historical place is late in the summer or in winter, mostly to avoid tourist line-ups and crowds. “It’s been an extravagant treasure-rich home of the Ottaman Sultans for over 400 years,” she says. “Today it is one of the most popular and spectacular museums of art since 1924 in Istanbul.”
Ponza Islands ITALY Next is Ponzo Island, Italy for an authentic Italian gateway. It is a fantastic location with a true naturalistic paradise that offers legend and reality, nature and history. Experience this ancient scenery and the magic of this island, that has been attracting people for years.
The Islands of Sylt GERMANY Lastly, we have the Island of Sylt, Germany, known as the “beauty in the North Sea.” In fact, this place is a a popular place for tourists, mostly due to the 40 km long sandy beach that many can enjoy. Sylt offers one of the best and exclusive resorts located in Germany. Most people who are planning a last minute vacation usually cut Europe out due to the challenges that come from planning such a trip. Be flexible on dates and consider the alternatives. “Most of the time, deals apply to days that travellers are less likely to travel on,” she continues. “This works for last minute travellers. Also subscribe to Transit Holidays, it’s the best way to have the information come to you as soon as it is available.” Have a sense of adventure and be willing to take chances. Pack you bags and experience one of these destinations, you may be pleasantly surprised.
