MARGIN LETTER FROM THE EDITOR I’m unsure if it’s more amazing that we found a lake on Mars last year or that the Eagles won the Super Bowl with a backup quarterback. Of course, the big news in Collierville was high schoolers reporting to their $93m campus, tons of new restaurants (which we’ll get to in the following pages), and even the promise of our first local brewery! While 2018 was remarkable, 2019 is filled with hope for our growing town. In this New Year’s issue, we celebrate hope by looking back at holiday gatherings, including a Collierville Christmas (because our town does Christmas like no other), and by remembering the many blessings that came our way in 2018. Finally, the new year always brings hope for creating healthy new beginnings. So, we’ve blended this issue of exquisite local Collierville cuisines with a little resolution advice peppered throughout. As always, we hope you enjoy reading through it as much as we enjoyed putting it together.
LOCATION. LOCATION. LOCATION.

THE
SECRET
TO
MOVING
M O U N TA I N S Over 50,000 American soldiers have been wounded in Iraq or Afghanistan in the last fifteen years. These men and women have courageously sacrificed their lives in order to defend our country. The collateral damage to such sacrifice is significant, both mentally and physically. The Heroes Project was created to help support these wounded soldiers and promotes empowerment by placing injured war vets on some of the highest mountains on Earth. They push them to go beyond the limits of their injuries and achieve what seems to be impossible. Jesus Christ once made a bold statement about a mountain. In Mark 11, Christ proclaims to his followers that if they believe without doubting, they could tell an entire mountain to go throw itself into the sea, and it would be done. Talk about doing the impossible! Suddenly, Mt. New Year’s Resolution doesn’t seem so unattainable. “Truly I tell you, if anyone says to this mountain, ‘Go, throw yourself into the sea,’ and does not doubt in their heart but believes that what they say will happen, it will be done for them.” - Jesus, Mark 11:23 Before we try to pick up any mountains, however, there’s another matter to consider. In the preceding chapter, Mark 10, Jesus is approached by a precocious young man who asks what he has to do in order to gain eternal life. Jesus, appealing to the man’s religious senses, quickly spat off the commandments. This man of apparent wealth confidently told Jesus how he had always been obedient and followed God’s rules. Jesus loved this man and wanted him to have eternal life, so He told him to sell everything that he had so that he might follow Him. We’re told that the young man walked away because he was unwilling to loosen the grip he had on his wealth. Like the young man who approached Christ, we often come to God eagerly desiring His blessings and wanting to go on a mountain-moving adventure. However, we often remain unwilling to alter our lives in order to follow Him. Jesus has a way of making life a whole lot simpler and fulfilling, but He also makes life more demanding and promises that trials will come. 14

Many of us enter 2019 eagerly embracing new beginnings and anticipating the quakes of positive change in our lives. Some may wonder: Can we experience the power and presence of God in our lives as we embark on the mountainous journey of a new year? We absolutely can, but we must also know that God calls us, through faith, to alter our lives in order to wholeheartedly follow Him. Marine Isaac Blunt climbed to the top of the tallest peak in Australia, through The Heroes Project, just two years after having lost most of the lower half of his body. During his trek, Blunt would endure both residual pain from his past injuries and freezing temperatures. Each step that he took was only a few inches, so it took several hours to complete just one mile. Tim Medvetz, the founder of The Heroes Project, was by Blunt’s side the entire journey. Whenever Blunt wanted to turn back, Medvetz was there to refocus him. Whenever underbrush tangled Blunt’s prosthetic legs, Medvetz was there to set him free. Whenever Blunt was discouraged, Medvetz was there to encourage him. “I knew that it was going to be a challenge. I would have to get out of my chair. Have to start doing everything that I’ve been wanting to do.” - USMC PFC Isaac Blunt There will be challenges on our mountain-moving journeys in 2019, but we are not alone. God, of course, is always with those who trust Him. Not only that, He places people alongside us on our life trek. Who is walking alongside you or mentoring you as you take on your mountain? Better yet, whom can you go alongside starting today? If we walk together, stick close to our Guide, and throw off the extras that weigh us down, we can accomplish things that seem impossible this year.

As an Optometrist, I think I have the best job in the world, because I get to look into people’s eyes all day. Not only do I help people see better, I help people take control of their overall health as well. You may have heard the saying, “The Eye is The Window to the Soul.” I believe that the eyes are the windows to the body and your health because unlike any other organ in the body, you can actually see into the eye. For example, the only way to know how the heart is functioning is to listen to it with a stethoscope, but you can’t see the heart unless you perform surgery. However, through an eye exam, we can use a microscope to actually see the inside of your eye. Not only does this allow us to evaluate the health of your eye, but it also shows us a glimpse into the health of the rest of your body. Through a comprehensive eye exam, we can often find evidence of many systemic diseases, such as diabetes and high blood pressure, before someone has even been diagnosed. Over a third of all health conditions involve the eye in some way. We can see evidence of nerve damage, nutritional deficiencies, and inflammation just by looking through our microscope at the eye. That being said, it’s very important to schedule an eye exam every year. Until then, here are three tips to get you started! 16
TO U R CO L L I E RV I L L E .CO M
E YES
2019 1. MAKE A YEARLY EYE EXAM A PRIORITY
3. PROTECT YOUR EYES FROM BLUE LIGHT
This is important because, as mentioned, through an eye exam we can see evidence of major illnesses in the body. We are also looking for sight-threatening eye diseases, such as glaucoma or macular degeneration. Many times, a person with an eye disease can see 20/20 on the eye chart, but could be slowly losing their eyesight without knowing it. Through early detection, we can slow the progression of many of these diseases before they affect your vision. So, just because you think you see well, doesn’t mean you shouldn’t have an eye exam.
Blue light produced by computer screens, phones, and tablets can have harmful effects on your eyes. Research indicates that this short wavelength light can damage the eye and lead to macular degeneration and cataracts a lot earlier in life. It has also been proven to cause nearsightedness at an alarming rate in children. Lastly, blue light has been shown to reduce melatonin production in your body, which can affect the quality of your sleep.
2. FIND WAYS TO INCORPORATE MORE FRUITS AND VEGETABLES INTO YOUR DIET Foods that are high in Vitamin A, such as leafy green vegetables, sweet potatoes, and carrots, are great for your eyes. These foods are high in antioxidants which can protect your eyes from diseases, such as macular degeneration. If you don’t like the taste of vegetables, you can still find ways to add them to your foods without necessarily tasting them. For example, spinach has very little flavor when added to soups, casseroles, or omelets. Add a handful of it to your favorite dish, and I promise you won’t know the difference.

“Try to stay away from blue light at least 2 hours before bed, or you can purchase blue light blocking glasses on the internet or from your eye -Dr. Brandon Walley, OD doctor.” When considering resolutions for the new year, don’t forget to add healthy eyes to the list! By incorporating these 3 easy tips, you are setting yourself up for a lifetime of healthy eyes and clear vision!

Hi! I’m
PARKER Let’s cut to the chase. I’m cross-eyed. My story begins when I was found as a kitten on the fourth floor of the Methodist University Hospital parking garage. Only five weeks old, with an eye infection, skin issues and underweight, life was stacked against me. But, luck was on my side that day. The kind people who found me nursed me back to health, and for several years, I was their wonderful, lowmaintenance companion, sharing a house with my humans, their dog and their children. When they felt like I needed a quieter home, my humans were kind enough to find me one with a friend’s grandmother. Unfortunately, my human recently developed severe back problems and can no longer care for me. Now that you know my history, let me tell you a little about me. I’m an eight-year-old boy who still has many years of love to share, and I deliver the perfect combination of salty/sweet love. By that I mean I have just enough cattitude to bring a little spice to my forever home, but I’m also sweet, playful and comfortable in a human’s arms. I’m known as a bit of a character around the shelter because I’m very vocal (I love to talk!) and I headbutt the humans here to get the face rubs, head kisses and the Temptations treats that I crave! I would be most secure in a home with an experienced cat owner, where I would be the center of attention (aka “king of the castle”). Fair warning… I love to be cozy! If a human sits down, I will pop up on their lap for some extra special “us” time. Did you know black cats have the hardest time finding furever homes? I don’t know why, but we typically live in shelters twenty-five percent longer than cats of any other color. Do you have a lap that’s looking for some extra warmth this winter? If so, I would love to be the guy that greets you with soft fur, gentle purrs and extra-adorable crossed-eyes each time you arrive home. Now that we’ve established that you’re great and I’m great, why don’t you consider stopping by the Collierville Animal Shelter? Did you know that you can watch me play in the cat playground and then we can meet up in the family life room and hang out for a while? There are so many wonderful cats and kittens up here (dogs too)! So, even if we don’t exactly match

THE
B E AT
GOES
I am surely showing my age by referencing the 1967 Billboard Hot 100 #6 song by Sonny & Cher, “The Beat Goes On.” The last several years have been good for our community in terms of economic growth. Housing stats have been solid. Commercial development has seen brisk activity. The office market continues to move in our direction. Industrial stats have been impressive. As we close 2018 and look toward 2019, we can take a line from Sonny and Cher, “…and the beat goes on, yes, the beat goes on…”
OFFICE By the time Tour Collierville hits the stands around town, Mueller Industries, a Fortune 1000 manufacturer and marketer of plumbing, HVAC, refrigeration, and industrial flow products and components, will have moved close to 150 team members into their new corporate headquarters in Boyle’s Schilling Farms development. Occupying 38,000 square feet of the Hyneman Development (a 50,000 square foot building), Mueller and Hyneman will be making a $15m investment in our community. This significant office project comes on the heels of Orgill’s new HQ in 2017, Helena Agri Enterprises expansion in 2016, and MCR Safety’s move to Collierville in 2015. With the Memphis MSA continuing to show active office development, especially Downtown and moving east (Poplar & I-240, Germantown, and Collierville), Collierville can anticipate more opportunities. With well over 400 acres of developable land zoned for office

O N” uses, most being in Schilling Farms, along the Houston Levee corridor, and at Byhalia and SR-385, coupled with corporate America’s appetite for updated and reconfigured office space, the future is bright for office development in our town.
INDUSTRIAL As the proclaimed “Distribution Capital of America,” Memphis has an abundance of warehouse space. Very little warehouse space has been developed in the Collierville market though, and our current warehouse spaces are becoming old and outdated. Most of the new, larger developments have been in DeSoto and Marshall Counties in Mississippi. The completion of the I-69/I-269 corridor and the increasing e-commerce wave have placed Collierville in a perfect position to take advantage of the coming industrial development spike. The recent news of the first spec warehouse building in Memphis in over 10 years, a 425,000 square foot building near the Memphis International Airport, was a welcomed sign for the area. Collierville has over 300 acres of developable land zoned industrial, with the majority at the I-269/SR-385 /US 72 crossroads. The Dunavant Enterprises Glenn Farms Industrial Park calls for seven 50,000 square foot spec warehouse buildings to be constructed on Shelby Drive, in the town’s southeast industrial corridor. The grading and drainage work has already been completed on the first two buildings, with completion of these properties slated for the 2nd quarter
of 2019. In an industrial market with hardly any new 100,000 - 250,000 square foot spec industrial spaces, we expect others to follow the Dunavant lead with new construction of smaller, more specialized spaces heading our way. With our game-changing infrastructure, adept workforce, and strategic location, our industrial partners Carrier Corporation, IPS, CCL Label, American-Marsh Pumps, Philips Lighting, and Exact Commerce can expect some new neighbors in 2019.
COMMERCIAL This past summer, the town conducted an informal survey of new residents. We wanted to know where people were moving from, where they were moving to, what they did for a living, family dynamics, and their primary reason for the move. In a ten week window, for example, from mid-May through August 1st, we saw an average of almost 20 families per week moving to Collierville. That equates to roughly 50 people per week making Collierville their new home - our version of Nashville-like population growth metrics! With our new $93m high school in a highly educated town, with elevated median incomes and home values, you can imagine that our commercial development has been brisk. New restaurants have opened with more on the way: Raven & Lily, P.O. Press Public House and Provisions, Wolf River Brisket, Freddy’s Steakburgers & Frozen Custard, The Collierville Commissary, The BarB-Q Shop, and Cheffie’s are just a handful of the new dining
choices in town. U-Haul is constructing a beautiful 95,000 square foot facility at Byhalia and Winchester. The 90,000 square foot Villages of Porter Farms, with their adjoining Springhouse Village residential development, is adding senior housing choices at Shea and Winchester. John Green & Co. is redeveloping buildings off the Historic Town Square on Washington, now called Washington Square, with Lost Pizza Company inbound. As our affluent and educated population continues to surge, you can expect continued commercial development in all parts of our thriving community. Residential construction is strong all over town, especially south of SR-385 and in and around the Town Square. The town continues to elevate infrastructure in advance of commercial development. The 2040 Growth Plan, a highly vetted and thoughtful long-range development plan, positions our community for appropriately planned growth for years to come. Sing it with me now: “…and the beat goes on, yes, the beat goes on…” John D. RETHINK
THE
NEW
YEAR’S
RESOLUTION It’s that time of year again for so many of us to set our New Year’s resolutions. Whether to lose weight, save money, quit smoking... we are all guilty of having the best intentions, only to see those goals fall to the wayside as soon as things get tough. Have you heard of the “False Hope Syndrome?” It could be the reason only 8-10% of people actually succeed their lofty ambitions. False Hope Syndrome is basically our unrealistic expectation of how difficult self-change will be. We picture this incredibly smooth and obstacle-free process to get to our goal, but what we typically find is the journey is much more tumultuous than we imagined. No one escapes any kind of personal growth or lifestyle change unscathed. We all have to go through some muck to get there, but the muck is what makes us appreciate it in the end! So why do well-intentioned goals fail? The devil really is in the details. We plan these big, sweeping changes and we cram them into short, arbitrary time frames. For example, “I want to lose 20 pounds by my wedding next month,” or “I want to lose 30 pounds before Christmas. Yes, I know it’s October, but I’ll do it!” As the new year is here, we thought it was the perfect time to help you understand why big, arbitrary goals don’t work and what to do instead.
#1: WE TRY TO CHANGE EVERYTHING ALL AT ONCE What to do instead: Resist the urge to implement a rigorous diet AND exercise program right away. Instead pick one and focus all your attention and energy there. Give 100% to that aspect and tackle the other one when you’re ready.
#2: WE FOCUS ON OUTCOMES (WEIGHT LOSS, INCHES LOST, ETC.) What to do instead: Set up a clear action plan and focus on the daily behaviors that will get you there. If you know you need to eat more real food and less processed food, focus on that one behavior, and it will eventually elicit the outcome. If you only focus on the scale every week, you will quickly be frustrated! Weight loss is never perfectly linear.

Think On This: Did you know that 80% of your weight is actually what you eat? #3: WE FOCUS ON WHAT WE’RE NOT DOING WELL What to do instead: Every night before bed, write down 3 things you did really well that day. For instance, “I drank all my water. I ate veggies at every meal. I avoided the doughnuts at the office.” Praising your accomplishments will get you much more bang for your buck than constantly berating yourself. Think about how you motivate employees and children. You operate the same way!
#4: WE GIVE UP TOO EASILY What to do instead: Put yourself on the hook by telling all your friends and loved ones about your goals and give them details about your plan. Tell them no matter what, you’re not giving up! There WILL be obstacles and roadblocks, so count on it. Changing the habits you’ve had for years is going to take time and you will stumble. Take it a step further: Get a partner! Having a coach or accountability-buddy will do wonders for your lagging motivation. Let them know your goals and check in weekly with them. The Transformation Doctor specializes in accountability and support - it’s the secret to our patients’ success! Change is hard, but IT IS possible. Seek out qualified guidance and resist the urge to try the same things you’ve done in the past. If they didn’t work then, they likely won’t work now. New year, new path, new you!

Here are our top 5 international destinations: Italy: Tuscany, Italy is on everyone’s bucket list (when it comes to foodies) because you can take cooking classes. From the homemade pasta and rich, meaty tomato sauces, to drinking wine and eating briny olives and antipasto on the terrace overlooking the vineyards, this experience can be found all over Italy. Best of all, there’s no shortage of cooking schools and wine tasting tours. Paris, France: When people plan trips to Paris, they tend to forget that the city is a foodie paradise. There are so many fun, food related things to do that are sure to enhance your trip. You will find that croissants and Croque Monsieurs belong right there alongside the Eiffel Tower and Sacré-Coeur. No vacation to the French capital is complete without trying the many foods that make the country so unique – yes, escargot and frog legs included. England: People often think England doesn’t have any good food, or that it consists merely of fish and chips and pub food, but that couldn’t be farther from the truth. In fact, London is one of the biggest food cities in the world, and you can find every type of cuisine imaginable in the city. Plus, where else in the world can you find tea shops at every corner?
Spain: You may or may not have heard of this one, but San Sebastian, Spain is perhaps the greatest food destination in the world, with more Michelin stars per capita than any other city. It makes our list not only because of the overabundance of haute cuisine, but also because of its incredible views over the crescent bay and the beautiful La Concha Beach. The city is also within easy driving distance of some of Spain’s famed Rioja wine producers. Bordeaux, France: Combine the delicious wines of Bordeaux with the gorgeous scenery, and you have the vacation every foodie has been dreaming about in France! A bike tour through Bordeaux is perfect for wine enthusiasts, foodies, and really anyone who wants to enjoy the countryside, while biking through some of the world’s most beautiful vineyards. Here are our top 5 destinations in the United States for a culinary experience: New Orleans, New York, Seattle, Chicago, and Napa Valley. If you are a foodie or a wine enthusiast and would like to visit several destinations all during the same trip, we suggest a cruise. You only have to unpack once! A food or wine cruise offers the conviviality of traveling with a group of like-minded people and a myriad of private events, dinners, and tastings scheduled onboard the ship and on land. Your cruise is two programs in one - an exclusive group program PLUS all the fun and features of cruising on a deluxe ship. There are several ocean and river cruise lines that are known for their dining experiences and their wine tastings. These cruises have master chefs on board that go to the local markets in each city to collect the ingredients for your specialty dinners. That being said, did you know that you can actually go with them? These cruise lines offer chef guided tours of local markets and restaurants, tantalizing your palate with the ingredients and aromas of your destination. You will get to learn the
techniques for sourcing, preparing, and cooking, then finish the evening with an exclusive galley tour and a specially-prepared dinner inspired by the local cuisine. You can even take shore excursions, which often include unique opportunities to visit a private home for cooking classes. Every meal can be a destination and is its own globally-inspired and locally-sourced experience. You also have wine tours, where you can spend the day exploring wineries and tasting an array of local vintages. Or maybe you would be more interested in discovering some of the destination’s craft beers and taking a private tour to one of its breweries. But, the best part of it all? Retiring back to the ship after a long day of wine tasting to relax on your balcony or enjoy dinner al fresco as you sail off into the sunset, surrounded by sweeping vineyard views. Whether you want to immerse yourself in Livorno’s rich Italian culinary traditions, taste some of Sorrento’s culinary artistry on an exploration of local markets, or discover some of Cartagena’s best craft beers while enjoying a private tour of the Cerveza Artesana Brewery in Spain, there’s a lot you can choose from! Come and savor the taste of the world’s finest food and wine, as these marvelous meals and wonderful wines are often what you remember most when returning from a trip. Why not make it the main focus of your next vacation?

GRILLE
2006
J
im’s Place Grille is the place to be in Collierville. As one of the first “upscale casual” restaurants to open its doors here, Jim’s Place Grille has grown with and become an important part of Collierville’s community. However, Jim’s Place has a long history in the greater Memphis area, serving food to its locals since 1921. Now, nearly a hundred years later, Dimitri “Mimi” Taras and his sons, James and Sam, continue to share their family’s love of preparing and serving great food with Collierville. The story of Jim’s Place begins in the basement of the William Len Hotel in 1921. Two immigrant shoe shiners from Greece, Jim Katsoudas and Dimitri’s uncle, Nick Taras, opened their restaurant in the downtown district of Memphis to much success. They established their brand at this location, at the corner of Main and Monroe, serving a wide array of meats and other Grecian-inspired dishes. With an offering including steak, pork, lamb, and calf ’s liver (an old favorite), it was there that Jim’s Place became known for their library of delicious meats and their famous Grecian style and flavor. I had the chance to sit down with Dimitri and his son, James, before a Wednesday lunch rush to discuss their family’s legacy in Memphis, and more recently, Collierville. Dimitri Taras first became involved in his family’s business in 1967. It was then that Dimitri, alongside his father and brother, Bill and Costa Taras, opened the restaurant’s second location on Second Street. Ten years later, Jim’s Place moved to its most iconic location on Shelby Oaks Drive. Referred to as “The Farm” by their family, Jim’s Place thrived there, serving the Memphis community for thirty-four years, before relocating to Perkins Extended in 2010 and ultimately closing in 2017. However, in 2006, Dimitri and his sons introduced their family’s restaurant to the little town east of Memphis.

James explained, “It was a big step to come to Collierville. We started looking in 2005 at this development, did some urban economic studies, and recognized Collierville as a big area of growth potential, so we opened Jim’s Place Grille in 2006.” Dimitri added, “Our name and our brand helped carry us in the beginning. Fortunately, we had a good name, and I think we continue to have a good name… I’m being immodest, but I think we do.” Collierville welcomed the opening of the new Jim’s Place establishment in 2006. As previously stated, Jim’s Place Grille planted its stake here as one of the first “upscale casual” restaurants that Collierville could call its own. The menu of signature meats and fresh fish was, and continues to be, a delicious choice for Collierville’s families and friends. From their famous, one-of-a-kind pork tenderloin “Souflima,” first cooked by Dimitri’s father in 1967, to more-recently popular dishes like their grilled salmon and, my personal favorite, their Grecian Lamb Burger, Jim’s
Place Grille has found balance between the old and the new - the classic and the contemporary. Not only does Jim’s Place Grille offer an excellent menu, it is also host to a lively bar scene on weeknights and weekends. Here, guests are invited to eat, drink, and order food to go at their leisure. Dimitri, James, and Sam are proud of their bar and particularly enjoy catching up with their regular customers and greeting new faces who line its barstools each night. From the kitchen and its grille to the high-spirited bar scene and its crowds, it’s evident that the Taras family has found something special in Collierville. Dimitri, James, and Sam have embraced their family’s legacy through their commitment to the quality and consistency of their food and customer service. Dimitri and James expressed the importance of having a physical presence at their restaurant. Dimitri said, “The first thing my father taught me, when we got into the restaurant business, is that you need to be here. Someone needs to be here at the physical location all the time.” Dimitri and James further supported this notion, sharing with us stories of their staff’s late-night heroics in the face of inclement weather. James recalled the night that they served a full house with no power after lightning struck nearby. “Those can be dramatic times,”
James Katsoudas pictured outside of the original Jim’s Place.

James, Dimitri, and Sam Taras.
James said. “Not knowing when power would be restored, our team rallied together to take care of our customers, basically in the dark. We certainly earned our stripes that evening.” Dimitri then thought back to a night when most restaurants were forced to close with one of Collierville’s rare winter snowstorms on the horizon. “We had a big snow one year,” Dimitri said. “For some odd reason, we said ‘Let’s stay open,’ and everybody else closed, and then we got blasted. It was like a Friday night, when it was actually a Tuesday night.” These stories serve as testaments to the dedication that this family has displayed during their time in Collierville. When asked what makes Jim’s Place special, James and Dimitri stated that their commitment to their customers is what sets them apart. “It’s consistency. It’s commitment. We’re dependable to people,” James said. Dimitri noted, “We try our best to be as consistent as we can, and I think we are. That’s what we shoot for.”
“IT’S CONSISTENCY. IT’S COMMITMENT. WE’RE DEPENDABLE TO PEOPLE... WE TRY OUR BEST TO BE AS CONSISTENT AS WE CAN, AND I THINK WE ARE. THAT’S WHAT WE SHOOT FOR.” - James and Dimitri Taras

Dimitri and James also spoke of the love that they have for this restaurant. They both agreed that these last twelve years at Jim’s Place Grille have been some of their most memorable since becoming involved in their family’s business. Dimitri stated, “The last twelve years of work, since I started with James and Sam, have been the most enjoyable years in my fifty-one.” James added, “This particular spot with this combination of ownership has been, I think, the most rewarding of the Jim’s Place history.” Dimitri’s wife, Mary Katherine, stopped by during our interview and, once she realized what we were discussing, insisted that I ask her husband about the number of steaks he’s cut since 1967. Once she left, Dimitri responded, “It was funny. We were talking about that one day, and I said, ‘I don’t know… I know it’s at least a half million.’ I was just guessing. It’s probably more than that, but anyway, that’s no big deal.”
“IT WAS FUNNY. WE WERE TALKING ABOUT THAT ONE DAY, AND I SAID, ‘I DON’T KNOW… I KNOW IT’S AT LEAST A HALF MILLION [STEAKS CUT].’ I WAS JUST GUESSING. IT’S PROBABLY MORE THAN THAT, BUT ANYWAY, THAT’S NO BIG DEAL.” - Dimitri Taras
In summary, their family’s been cutting steaks and chops for nearly one hundred years, but from their perspective, not much has changed. This is business as usual for the Taras family - no big deal. By: Nicholas Cotros

If there’s anything we’ve learned from producing Tour Collierville, it’s that Collierville loves to dine out. New restaurants are typically the town’s most trending social articles and, when one opens, it’s like Black Friday at Target trying to get a table. We’re especially impressed with the amount of local eateries in town and proud to announce “Local Eats,” which will be a recurring theme for Tour Collierville in 2019 continuing from print to our website and social content. In this issue, we kick off the series with a listing of locally-owned restaurants. See you at dinner. If we happened to miss one, please email us at info@tourcollierville.com, so we can add it to our list. 32

“This is my whole life. This is my passion. This is my dream. This is my Grisanti’s Restaurant.” DAVID GRISANTI

I would bet that if you’ve ever lived in the greater Memphis area, you’ve been served a meal by a Grisanti. Whether at Rinaldo Grisanti’s first restaurant in 1909, The Original Grisanti’s sixty years later, Frank Grisanti’s at The Embassy Suites, Ronnie Grisanti’s, and more, we’ve all shared in this family’s wonderful Italian food.
T
he Grisanti’s family of restaurants have been a staple of the greater Memphis area for more than one hundred years, and now, Collierville has a new Grisanti’s restaurant of its own: David Grisanti’s Italian Restaurant.
Rinaldo Grisanti immigrated to Memphis from Italy in 1909. Rinaldo’s two sons, Elfo and John, would take after their father, owning and operating their own Grisanti’s restaurants. Known as “Big John”, John Grisanti was the owner and head chef of The Original Grisanti’s Restaurant at Airways Boulevard and Lamar Avenue. He opened his famous restaurant in 1962, after working for his father’s restaurant, Willie’s Grill, in the ‘50’s. Characterized by his big personality and exquisite expertise for Italian cuisine, “Big John” would go on to become a Memphis legend, and his restaurant, The Original Grisanti’s, is now considered a historic establishment by many. Alongside the many guests who were fortunate enough to have the opportunity to visit “Big John” at The Original Grisanti’s, was a young man folding silverware, washing dishes, and assisting in the kitchen. “Big John” would show him how to properly cook and prepare their family’s famous lasagne, ravioli, and other traditional Italian dishes. At the age of fifteen, this young man is “Big John’s” son, David Grisanti. It was at his father’s restaurant that his love for La Cucina Toscana would begin to grow, under the glowing example of his father and best friend. In recent years, David had been assisting his cousins, Ronnie and Judd Grisanti, at Ronnie Grisanti’s Collierville location. It was during this time that he became familiar with Collierville and Sheffield Antiques Mall. When Judd decided to relocate Ronnie Grisanti’s to East Memphis, David was presented with the opportunity of a lifetime, the chance to honor his father’s legacy with a restaurant of his own. David has been looking forward to this moment since working with his father at The Original Grisanti’s. In October of 2018, David proudly opened David Grisanti’s Italian Restaurant in Collierville. Located in Sheffield Antiques Mall, David’s restaurant is a dream come true.

I recently had the opportunity to meet with David to ask him about his family’s business and his new restaurant. He first thanked Sheffield Antiques Mall, the 78,000 square foot space that hosts David’s restaurant. David began, “Well, first of all, I love the antique mall. They were very supportive of me. They want me to be here. When I told them that I wanted to stay here, they were overwhelmed.”
David preparing one of his weekly specials: grilled salmon served with fried zucchini, Italian tomatoes, and pesto sauce.
tell that David was proud of his customers writing to him, as he quickly hurried out of our booth to print copies of several emails he had received. One guest wrote, “David, the food and entire experience was fabulous! Your family must be very proud. I know your grandfather would have been!” The guest continued, “I was most impressed with the handmade ravioli. It was so much like old ‘Big John’s,’ who prepared our wedding rehearsal meal.” David even dresses his tables with red roses as another callback to his father’s restaurant: “The reason I have roses on the tables is because my dad had a garden at his restaurant. All of the servers would go outside and clip them, and we’d put them on the tables.”
“A lot of my menu is from the old restaurant… the lasagne, I’ve had people come in and say, oh, man, that’s from the old restaurant… and then the ravioli filling, they’re like, oh, that’s the same that you had at the old restaurant… and the manicotti, when they taste it, they’re like, this is from Airways Lamar.” DAVID GRISANTI
David was very emotional during our meeting. Hearing him talk about the realization of his dream of opening this restaurant was heartwarming. He expressed tender feelings for his family, both past and present. With tears in his eyes, David explained, “They’re very supportive of me. My family is so supportive, especially my wife. I’ve struggled all my life to open a restaurant and it finally happened.” Family is and has always been an important part of any Grisanti’s restaurant, and David’s restaurant is no different. He continued, “It’s been so exciting, my wife being part of all this. She loves the history. She loves the family. She never had that opportunity. Now, she’s working here. She gets to see me cooking. She loves that part.” David added, “I wanted this restaurant to be like home and just like my dad’s. This restaurant reminds me of him. Talking to customers, it reminds me of that. I talk to customers, and they love it. That’s what people want when they see Grisanti’s.” David’s menu also takes inspiration from his father’s restaurant, reintroducing his guests to famous Grisanti dishes like his father’s spinach lasagne and everpopular ravioli. In just three short months of being open, David has had guests send him emails praising his food, writing that it reminds them of the food they were served by his father. I could
When asked about Collierville and how he feels about opening his first restaurant here, David replied, “I just have to believe that God put me here for a reason. There’s a reason I’m here, at this place.” You can imagine what David is feeling in this moment. For years, he has held dear the memories of a young man watching his father cook and prepare food in the heat of their kitchen. He’s reminded of his father welcoming and greeting regular guests and new faces alike, while the familiar sounds of forks, knives, and plates ricocheted against one another. Now, these sights and sounds are his own, from his kitchen, to his customers’ smiling faces and friendly employees. David has worked tremendously hard to make this dream a reality for his family. His wife, Robyn, assists in the management of the restaurant, while his son, daughter, and step-sons also work and help where needed. As he experiences the restaurant business alongside his family and friends, David sees himself in his children and is reminded of his days rolling silverware and cooking at his father’s restaurant. We’re proud to welcome David and his family to Collierville, as the newest members of the Grisanti’s family of restaurants, as Collierville’s Grisanti’s, as David’s Grisanti’s. Finally, I asked David, now owner and head chef of his own restaurant, what he’s learned as a Grisanti working in this business for as long as he has. After taking a moment, he proudly gazed upon the sign that hangs at the front of his restaurant - David Grisanti’s and said, “Never give up.” By: Nicholas Cotros j a n u a r y/ f e b r u a r y 2 0 1 9

s we enter a new year, the main objective of creating our ‘resolutions’ list is simply creating new healthy beginnings. From hitting the gym to eating a healthier diet, the goals we set to kickstart those healthy beginnings can easily slip away from us. This year, take a new approach to your healthy resolutions! Taking small steps towards your resolutions can set the foundation for a healthier and sustainable 2019. I would like to introduce the readers in our community to a movement we have in Collierville called “Healthier Collierville,” which is part of the Healthier TN Initiative. Healthier TN is striving to encourage Tennesseans to lead healthier lives through major sectors, such as our communities, workplaces, schools, and places of worship. In short, we’ve created a movement of citizens banding together to encourage these outlets to make healthy options available to employees, residents, and students alike. In more than 100 cities across our state, people are making strides towards a better, healthier quality of life, one community at a time - including our hometown of Collierville. This movement is in place to educate our neighborhood citizens with simplistic, free, and effective ways to help become more active, make healthier nutrition choices, quit tobacco, and educate our children against the dangers of smoking and vaping.
BEING MORE ACTIVE: Physical activity will add years to your life! There are simple steps you can take to start to boost your physical activity level. Just increasing the amount of steps you take per day can help. Take stairs whenever possible and park as far away as possible from the entry of your work, school, grocery store, or wherever it may be. Purchase a pedometer or fitness tracking watch and set daily goals for yourself. Set up “walk” meetings at work with coworkers, or opt for a standing desk. Go for a family walk after dinner. If joining a gym seems intimidating at this point, try athome workouts. Simple body weight exercises can be done in the privacy of your own home.
HEALTHIER EATING / NUTRITION: A healthy diet can provide numerous health benefits, such as reducing disease and maintaining a healthy weight. Instead of making big changes utilizing fad diets that can be daunting and restrictive, start with basic small changes and go from there. Clean up your diet, eliminate processed and packaged foods, and choose whole grains over refined grains. Add more fruits and vegetables to every meal. Eat your fruit instead of drinking them in high calorie juices. Replace soda or sweet tea with sparkling water and drink more water daily, especially first thing in the morning and before meals. Cook at home more often. Bake or roast meats, poultry, and fish instead of frying. Eat smaller portions and use smaller plates for meals. Try a new healthy recipe once a week (*see the nutritious and simple recipe included for Salsa Verde Chicken & Wild Rice Soup). j a n u a r y/ f e b r u a r y 2 0 1 9

The Healthier Tennessee initiative is led by the Governor’s Foundation for Health and Wellness, a nonprofit, 501(c)(3) corporation dedicated to enabling and encouraging Tennesseans to lead healthier lives. Based in Nashville, the Foundation brings together a statewide coalition of employers, health insurers, hospital systems, local governments, school systems, and healthcare-focused foundations and community organizations to affect positive, measurable change. The Foundation is funded through a combination of public and private-sector sources and is guided by a board of directors. A staff of 10 professionals has been assembled to direct the Foundation and implement the Healthier Tennessee initiative, which strives to increase the number of Tennesseans who are physically active for at least 30 minutes five times a week, promote a healthy diet, and reduce the number of people who use tobacco. All efforts are being made to promote these goals in Collierville. We are speaking with local businesses and encouraging them to get involved and implement healthier workplace wellness programs, while providing the necessary tools and incentives for employees. Workplace wellness programs give employees social support and the proper strategies to adopt and maintain healthy behaviors. These programs can reduce elevated health risks, reduce health care costs, improve productivity, decrease absenteeism, improve employee recruitment and retention, and sustain higher employee morale. We also hope to have local worship

To serve, place crushed tortilla chips into bottom of bowls, top with hot soup, then top with avo cado slices. Serve immediately .
QUITTING TOBACCO USE: Reduce the risk of disease and save money too while quitting tobacco! Quitting tobacco won’t happen in a single day; it is a journey. It is altering your habits and behavior. Prepare for the day to quit, and decide how you will start this journey. The FDA has approved skin patches, inhalers, gum, lozenges, and nasal spray to help you quit. There are also drugs, such as Chantix and Zyban, that your healthcare practitioner can inform and prescribe to you. Try behavioral support through either group or individual counseling. Self-help materials are readily available online. You may want to try alternative therapy such as acupuncture or herbal supplements.

centers represent this initiative and come up with ways to implement this into their congregation, perhaps, by creating events based on healthy potlucks and more fellowship with active indoor and outdoor activities. This initiative has become an agenda item during the Collierville Chamber of Commerce board meetings and will be promoted through the Chamber of Commerce website, Healthier Collierville’s Facebook page, and community events such as 5K’s, Fun-Runs, and walks. We hope to provide informational talks, grocery store tours, and healthy cooking demos all in the near future. Collierville Schools will be getting involved as well, first by conducting a contest where art students compete to create a new logo to be used to represent Healthier Collierville. We are still in the beginning phase of developing this program, but as we progress, we’d like to share success

FOR As we prepare to ring in the new year, many of us will resolve to make a change for the better. According to The Washington Post, 40% of Americans make a New Year’s resolution. Now, just how many of us actually reach those goals is a topic for another day, but this year when thinking about your goals for 2019, why not consider some New Year’s resolutions for your home? A new year doesn’t have to be just about keeping fit and saving money. It can also be a great time to get your house in shape, and you might just find that it has a greater impact than you expect. Tackling projects at home can lead to a safer environment, a more organized lifestyle, and improve your quality of life. One of the best ways to help you appreciate your home is to spend some time decluttering. Eliminating unnecessary items and creating a place for things is an inexpensive way to help you love your space. There are

several websites and apps available that specialize in organizing your home. Some even suggest a project for each week of the year, taking what can feel like an overwhelming chore and breaking it down into manageable tasks. Having an organized living space can help reduce anxiety, improve sleep, and boost productivity. Other important areas to focus on are maintenance and upkeep. Taking care of the not-so-noticeable areas can have a huge impact on the quality of your home. Developing an annual checklist is a great way to stay on top of maintenance and repairs. Here are just a few areas to include in your plan: Scheduling fall and spring service calls for your HVAC system will help you avoid the nightmare of no air conditioning in July or no heat in February. Inspecting the exterior of your home for chipped paint, rotted wood, or areas that need caulking will help you identify problem areas before

HOME they become major projects. Keeping your gutters clean can protect you from costly repairs, such as rotted wood and water damage. As you establish a maintenance plan for your home, remember to take some safety measures to protect you and your family. Replace batteries in your smoke and carbon monoxide alarms. Clean out your dryer vent. Schedule a chimney sweep to professionally clean your chimney and develop a fire safety and exit plan for your family. These are just a few suggestions to get your home in shape for the upcoming year. And if you happen to find yourself ready to move, your home will be market-ready and you’ll be one step ahead of the game.
