Fenit Fruit & Veg, owned by Willie and Helen Parker, is a family run business based in Fenit, near Tralee. Established in 2003, it has since become a leading supplier of farm grown produce, prepared vegetables, salads and fruit to the food service, hospitality and retail sectors – delivering throughout Kerry, Cork and Limerick regions. “The Parker family have been farming for generations and it all began in Fenit Island, where my great-grandfather Robert Parker began selling produce throughout Fenit and Tralee,” Willie Parker explained. “My late father, Sean Parker, took over the running of the farm in 1955 and grew his business by purchasing a second farm in 1965 on mainland Fenit. In 2002 I expanded my farm and established the fruit and vegetable business in which I diversified part of the farm to sell potatoes and vegetables. Over the next five years I expanded further and diversified the business to create Fenit Fruit & Veg and it has become one of the leading providers of prepared and non-prepared fruit and vegetables in the food service, hospitality and retail sectors.” In 2019 the business was awarded the status of ‘Highly Commended’ for Achievement, Innovation and Excellence in the SFA National Small Business Awards. On the food service/hospitality side of the business, their customer list is both wide ranging and diverse - suppling hotels, restaurants, gastro pubs, hospitals, nursing homes, wholesalers and catering companies. Sourcing of their produce is from local growers where possible and they partner with farmers throughout Ireland to source produce that is not available locally. Parker’s Fresh Produce is now on sale in local shops and a full list of current stockists is available on their website.
In February, they launched a selection of retail sector products under the new branding of ‘Parker’s Fresh Produce’ – Peeled Potatoes, Home Cut Chips and Chunky Veg Mix which are prepped and ready to cook. “Over the last two years during the COVID pandemic, we saw a significant increase in the demand for our pre-prepared products within the retail sector,” he said. “We know what our customers want – products which are of high quality, fresh, pre-prepared for convenience, competitively priced - saving them time and money. People want to eat good food, but their busy schedules don’t always allow them the time to prepare healthy produce. We decided then to specifically brand some of our most popular retail products.”

Innovation and Inspiration as Young Kerry Entrepreneurs excel in Kerry County Council Student Enterprise Awards!” The County Final of the Kerry County Council Annual Student Enterprise Awards was held on Friday 25 March 2022 at MTU Tralee Outstanding participation levels saw 16 mini-businesses being set up by over 50 second level school students involved in the competition. The students progressed through the establishment of a mini company which trades over a period of months. An exciting and rewarding programme, students get to experience the realities of entrepreneurship from developing a business idea to producing a product, researching the market, promoting the business, managing the books and generating profits. Prizes were awarded at Junior, Intermediate and Senior level. The winners of the County Student Enterprise Awards in all categories will be considered for inclusion in the National Finals to be held in The Helix on 18 May 2022. The winner of the Senior Category was Mearscaoilte Lao – a farm Safety mechanism which allows ropes under tension on a
calving jack to be instantly released. This company was set up by Katelyn Curtin and Orlaith Buckley from Presentation Secondary School, Castleisland. The winners of the Intermediate Category was Kicks On Wheels – a remote control to drive the kicking tee and was set up by Ruairí Brosnan, Killian Dennehy, Josh Daly and Evan Greaney from St. Patricks Secondary School, Castleisland. The Junior level winner was Roley Poley – an outdoor seat with cover & a retrofit rotating seat cover set up by Cait Daly, Brid Curtin, Kirsten O’Connor, Ellie Curtin and Laura McShane from Presentation Secondary School, Castleisland. Lillian O’Connor from Presentation Secondary School, Tralee won the coveted award for Entrepreneurial Educator of the Year and St. Patricks Secondary School Castleisland won the Best New Comer School award.The Creative Video Winner – Recharge Nutrition was won by Nicole Walker of Presentation Secondary School, Tralee
– a Sports Nutrition Ap.My Entrepreneurial Journey Junior Category was won by Nancy O’Connor from Intermediate School Killorglin –with her business Bosca Cliste – an Irish learning tool for kids. Tomás Hayes, Head of Local Enterprise Office said “I am pleased to see the level of innovation, resourcefulness, planning and development of all 16 projects in this year’s awards. This is a real life exercise. It involves idea generation and actual trading. Profits are generated and
finance is secured. Margaret Murphy, Kerry Programme Coordinator emphasised “This was a very strong programme in 2022 requiring extensive work by teachers, mentors and staff which was made a lot more difficult with remote working and teaching. Kerry College mark European Action Week Against Racism Teresa Elumely from Tralee International Resource centre (TIRC) gave a most eye opening talk about her experience of racism and heighted students awareness of anti-racism movements in Ireland. Through her talk students became aware of how of how easy it is to have bias that we are unaware of, perceptions of cultures and races and were encouraged as they enter the working world to stand up for diversity. Over 1500 Attended The Kerry College Open Week... A Huge Success! OVER 900 students, career changers and jobseekers attended Kerry College’s Open Week last week at its Campus locations in Listowel, Clash Road and Monavalley in Tralee. A further 600 attended the Apprenticeship Open Evening and Parent/Guardian/ Applicant Information Session on Thursday. In the Clash Rd and Listowel Campus locations, visitors had an opportunity to talk to teachers and current learners in relation to courses for progression and employment. Career Guidance Counsellors were on Campus to give advice to prospective learners and to answer any career related queries they may have had. Principal of Clash Rd, Denny Street and Listowel campuses, Mr. Stephen Goulding, was delighted with the event. “This was a great opportunity for visitors to come and visit the Campus in person and speak to learners and staff on site.
They could see first-hand what the Kerry College experience is like.” He was also delighted with the parents/guardians/ applicant’s information session on Thursday evening in the Clash Rd Campus where guest speaker Dr. Eddie Murphy, Clinical Psychologist spoke to parents about his career path and the transitions we all make in our lives. In the Monavalley Campus visitors had the opportunity to try their hand at a variety of new skills as there was a host of practical skills based demos throughout the day. A top favourite for the week was stone carving. They also had the opportunity to experience virtual reality with Wind Turbine Maintenance instructor Andy Cane’s assistance. Kerry College’s state of the art Digital Skills Centre was available to the public to record a radio sound bite or vox pop. The Killorglin Campus team were also on site in the Monavalley

Minister Foley welcomes over €190,000 in funding boost for swimming pool operators in Kerry Minister for Education and Kerry TD Norma Foley welcomes the announcement of €190,424.24 in funding for 20 swimming pool and leisure centre operators across Kerry. This funding forms part of the €73.6m in Covid funding to support the sport sector announced by Government last December. The funding allocation is an acknowledgement of the importance of the sector and the impact swimming has on the nation’s health. Welcoming the announcement Minster Foley said: “This funding will provide a much needed boost for swimming pool operators across Kerry.

SWEET AND TANGY SLOW COOKER BRISKET
Total: 8 hrs 30 mins | Hands-On: 30 mins | Serves 12 (serving size: about 3 ounces beef and about 2/3 cup sauce
INGREDIENTS • • • • • • • •
I1 (4 1/2-pound) flat-cut brisket roast, fat cap trimmed to 1/8-inch thickness 1 ¼ teaspoons sea salt, divided ½ teaspoon freshly ground black pepper 1 tablespoon rapeseed oil 1 ½ teaspoons garlic 1teaspoon paprika 3 medium carrots, peeled and cut into thirds 3 celery stalks, cut into thirds

2 large onions, halved and vertically sliced 4 garlic cloves, chopped 1 cup beef stock 1 (15-ounce) can crushed tomatoes 2 tablespoons brown sugar 2 tablespoons cider vinegar 5 thyme sprigs 2 bay leaves Flat-leaf parsley leaves (optional)
METHOD Sprinkle brisket evenly with 1 teaspoon salt and pepper. Heat a large pan over medium-high heat. Add oil; swirl to coat. Add brisket; cook 5 minutes, turning to brown on all sides. Rub brisket with garlic and paprika. Arrange carrots and celery in a 6-litre slow cooker fat cap side up. Return pan to medium heat. Add onions to pan; cover and cook 10 minutes, stirring occasionally. Uncover. Stir in garlic; cook 5 minutes or until onions are tender and golden. Arrange onion mixture over brisket Combine remaining 1/4 teaspoon salt, stock, tomatoes, brown sugar, and vinegar in hot pan, stirring with a whisk to loosen browned bits. Pour tomato mixture around brisket. Place thyme and bay leaves in slow cooker, pressing into tomato mixture. Cover and cook on LOW for 7 hours or until brisket is tender when sliced. Cool slightly in cooker, about 1 hour Place brisket on a cutting board. Trim fat cap; discard fat. Cut brisket across the grain into thin slices. Pour sauce through a sieve over a bowl; discard carrots, celery, thyme, and bay leaves. Return onions to sauce. Serve brisket with sauce. THE waiting is over for thousands of people who are looking forward to flying from Kerry Airport to the 2022 Summer Sun routes of Alicante in Spain and Faro in Portugal with Ryanair.com. The Meitheal delegates were treated to a surprise performance of traditional music and dance from Siamsa Tíre, the National Folk Theatre of Ireland, when they landed at Kerry Airport. Children from the local Knockaderry National School in Farranfore stood for a Guard of Honour as the visitors walked from the Airport to the coaches that transferred them to Killarney. Paul Mockler, Head of Commercial Development from Fáilte Ireland, said: “We are pleased to welcome so many international tour operators and buyers to Killarney today ahead of Meitheal – the longest established and most important two-day trade event
for the Irish tourism industry. There is a warm welcome awaiting them in Killarney along with hundreds of Irish tourism businesses ready to showcase Ireland to them over the next few days.” Management at Kerry Airport are confident that the new summer flight schedule and tourism promotion events, such as Meitheal, will help fuel the recovery in passenger numbers to the pre-pandemic levels.

OF THE YEAR KERRY BACK ON THE CROKE PARK HALLOWED SOD: After the exciting League campaign which culminated with the narrow defeated to Tyrone the boys will take on Mayo this Sunday in Croke Park at 4pm. Just on the time it certainly isn’t ideal for Kerry fans as it will mean a late return on a Sunday night. On the game it’s one that give both sides another competitive outing before the upcoming Championship but the question is how will this impact on the intensity of the game? From a Kerry point of view while they will give the Munster championship the respect it deserves they are hot favourites to win another title. But for Mayo they face a very tricky opening encounter against Galway so will they give this game 100%. Of course the counter argument is that it’s a national title and for players winning medals don’t come round too often. But that is for them to ponder over. Kerry have been impressive and still has a number of players to come back – Gavin White was the first of these with everyone delighted to see him getting a run and scoring the last day. So it’s another opportunity for players to nail down a championship jersey, maybe a chance for one or two more to get some minutes into their legs and of course for the team to get back to winning ways. And looking at the overall picture I think they will do that but not by a wide margin. WARRIOR’S ONE GAME AWAY FROM ANOTHER SUPERLEAGUE TITLE: Garvey’s Tralee Warriors will again be in action on the final day of the SuperLeague season. They booked their place in Saturday night’s decider in the Arena in Tallaght with a comfortable win over DBS Eanna in Dublin 75-57. The Warriors were always in control leading 19-10 at the end of the first quarter, 28-22 up at the half and after a very strong third quarter the Tralee side were 49-35 ahead with the final period to play. Daniel Jokubaitis led the Warriors scoring followed by Aaron Calixte and Eoin Quigley. The final will be another Kerry/ Cork battle with C&S Neptune the opponents once again – this being the side the Tralee side beat in the recent Cup Final. Neptune were surprise winners over TradeHouse Central Ballincollig who easily topped the table after the League phase. The Colin O’Reilly side will be delighted to have another crack at the Warriors as they feel they didn’t perform in the last showpiece. The Neptune scoring was led by Nil Sabata on 21 with Miles Washington and Roy Downey on 14 and Richard Gittens on 13 and these are amongst

the players the Warriors, under coach John Dowling, will have to quieten if they want to secure the double and their first SuperLeague since the 2018/2019 season. The Warriors won’t be the only Kerry interest at the finals. Duagh’s Aine McKenna is also looking to wrap up the double with The Address UCC Glanmire while the Killarney Cougars O50’s Masters get the weekend underway when the face the UCD Lions in their final on Friday night. But it’s Saturday night at 7pm when all eyes will be on the Warriors. The club will again bring a huge crowd of vocal supporters as they have done to all away games. But so will Neptune to what promises to be a cracker. GO GAMES CONTINUE IN THE TRALEE/ST BRENDAN’S AREA: The Go Games in the Tralee / St Brendan’s Board area, sponsored by Kelliher’s Mills will continue this weekend. This is a non-competitive League to give teams games before the County League programmes kick off. In Group A Round 2 the A &B teams of John Mitchels and Ballymac meet as do the sides from Na Gaeil and Austin Stacks. In Group B Kerins O’Rahillys go against Churchill with St Pats having the Bye in this round. In the Senior League there were two back games. Austin Stacks defeated Ballymac 5-06 to 1-10 in Group A while in Group B Ardfert were 6-06 to 2-15 winners over Churchill. The Tralee / St Brenda’s Board was delighted to Austin Stacks Joe O’Connor captaining Kerry last Sunday and wish Jack, Joe and everyone involved the best of luck in the League final this weekend. PARNELLS NEWS: The club is delighted to be back on the grass in Caherslee and players are asked to check the social media pages for training times. Equipment will be available for those that want to see if they like hurling and camogie. The u7 boys and girls and u9 hurling players ended their time indoors and the coaches were thanked for all the work they did while indoors. Well done to Oisin Leen who was named Player of the Week. The club is excited to see its senior team starting out in the Limerick Camogie League. While this will be a challenge for the squad and management it is also a great opportunity. The club also thanks Rory Kerins of Pro-Plan Property Management for sponsoring the bus for the trip to Mungret this week. The senior hurlers were involved in an exciting draw with Lixnaw in round three of the Division 1 Hurling League. Parnells led 3-05 to 1-08 at half time
with the sides tied 4-11 to 2-17 at the final whistle. They play Ballyduff in their next home game on Friday night. The club will hold a table quiz on Friday, April 15, starting at 8pm in the Ballyroe Heights Hotel. The entry fee will be €40 per table of four. There’ll be lots of raffle prizes on the night, so everyone is invited to come along for what should be a fun but competitive night’s entertainment. All money raised will go towards the running of the club. STACKS NEWS: The club is collecting items for refugees from the Ukrainian war with donations being accepted at the club this Saturday and Sunday from 10am to 2pm. Please check with the club to see what items are required and only these should be donated. The underage section are back in action this Sunday at the usual times with the u11’s in Go Games action on Thursday nights. In the 13’s County League Division 2 the boys went down to Firies. The Division 10 also went down to the same opposition. The u15’s will train on Sunday at 2.30pm in the Bishops Field as their County League gets underway. On the Senior side the A’s defeated Ballymac 5-06 to 1-10 in the Tralee/ St.Brendan’s League while the C’s went down to Keel B in the opening round of the County League. The minors defeated Kenmare 1-14 to 0-10 to give them their first win after a draw and a loss. They have two games left in the League both at home. The club wishes its Kerry players and the full squad and management in Sunday’s League final. Date for the Diary – the County Board Cul Camp will be held in Connolly Park from April 4th to 8th of July inclusive. KERRY 17’S BACK IN LOI ACTION: The Kerry 17’s are back in EA Sports Under 17 League of Ireland action when they travel to UL to take on Treaty United with the game kicking off at 2pm on Saturday. AOIFE ON BOB DOHERTY MANAGEMENT DUTY: The Republic of Ireland Schools side are all set for the 2022 Bob Doherty Tournament which takes place over 5 days in Newcastle over 5 days from April 10th. The Girls in Green are the defending champions having won the last tournament in Salou in 2019 having also won the Cup in 2018. The squad is managed by Richard Berkeley and will have the IT Tralee’s Aoife Gibbons doing the Performance Analysis. Ireland will play England and Northern Ireland with England 2, Scotland and Wales in the other Group. DÉJÀ VU TRALEE SET TO BE A HUGE SUCCESS: Part of the Kerry Motor Club’s 50th anniversary celebrations Déjà vu Tralee is set to bring over 150 classic rally cars and their crews to the town. Recovery Haven is the events charity partner and they will benefit from monies raised at the Gala Dinner in the Rose Hotel, the headquarters for the event. This will be the seventh running of the event that recreates legendary rally events from the 1960’s and 70’s. The first event was in Killarney celebrating their link with the Circuit of Ireland rally and since then over e200,000

Starting on May 27th motorsport heroes and fans from Ireland and across Europe will cover 160km of classic rally stages on the Dingle peninsula starting with a ceremonial start on The Mall in Tralee town centre on the Saturday morning. Some places the cars will visit will include the location of the Ballyfinane Hill Climb which was won in 1903 by Roll-Royce founder Charles Rolls. SWIMMERS CELEBRATE AT AWARDS CEREMONY: Members of the Tralee Bay Swimming Club swopped their swimming costumes for their glad rags as the Irish Long Distance Swimming Awards took place in Galway. And what a night it was for the club as marathon swimmers, organisers and administrators all gathered to celebrate the best of the sport. It was a big night for Elaine Burrows Dillane who was named the Female Open Water Swimmer of the Year and also awarded for completing the Triple Crown and the Blennerville to Maharees marathon swim. Caroline Corkey picked up the Best Newcomer to Long Distance Open Water Award plus the Award and Cert for her Maharees to Fenit marathon swim. Margaret Gilbert was awarded for her Fenit Island to Blennerville and Maharees to Fenit marathon swims. Hazel Wharton and Rory Kirby got their awards for their Fenit Island to Blennerville and Blennerville to Fenit marathon swims respectively. Gerard McDonnell was the first to complete the Fenit to Muchiluch and back marathon swim and got his cert and award for this. Kevin Williams picked up the Johnson Williams Award for the Open Water Coach of the Year as well as the cert for his most recent Blennerville to the Maharees swim. The club operates out of Fenit and is always open to new members. If you don’t want to swim other roles include crew, observers, pilots and kayakers. ON THE GREEN: Tralee Golf Club: In the Junior Golf section the 17 Hole Boys & Girls Singles Stableford was won by Sophie Moynihan on 37 points followed by Emma Vinarick on 34 points. The 9 Hole Boys & Girls Singles Stableford was won by Thomas O’Connor with 18 points. The Par 3 Fun Singles went to Ava O’Sullivan. The next series of the above competitions will take place on April 2nd. The 17 Hole sponsored competition from the blue/green tees was won by Edward Morrison on 42 points. Second was Padraig Moynihan on 40 points, Daniel O’Loughlin was third also on 40 points with Sean O’Keeffe 4th on 38 points with all four playing from the Blue tees. In the Ladies section their Wednesday 17 Hole competition went to Bernie O’Loughlin on 40 points followed by Antoinette Sayers on 37 points. The Sunday 17 Hole competition was won by Brid Halloran on 38 points with Mary Savage second on 35 points.

Pat Healy is remembered in a way he would have liked! On Friday night the 11th of March an AIB Representative GAA Selection came to Kieran O’Rahillys Club to play the Strand Road side in the Pat Healy Cup. Many will remember the late Pat Healy, ex Branch Manager Dingle with great fondness. Pat was only 52 when he passed away in 2007 but his contribution to Strand Road, AIB , Kerry GAA & the GAA Nationally would prove difficult to measure. At the time of his passing, Pat was a hugely respected member of the community in Dingle where he spent almost 8 years as Branch Manager. He was also immersed in GAA with his club Kerins O’Rahilly’s where he was the Club Chairman at the time of his passing and also with AIB GAA & the National GAA Finance Committee. Pat was also a founding member of AIB Sports & Social Club, Bank Inter Firm Competitions, AIB Munster Club Football League and the AIB Intermediate & TRALEE ADVERTISER

To recognise Pat’s contribution to AIB and GAA, the AIB Football Team have played a representative game in his memory every year since 2011. and AIB GAA felt this was the appropriate time to bring the fixture to the Club in which Pat played such an instrumental part in growing and developing over 3 decades. AIB had players travel from all over the country to play in the game and some local talent in the shape of Colm Cooper and Brian Looney ensured a very competitive match was played against the Strand Road side on the night. Strand Road’s bench and strong finish saw them score a few late goals to give them a hard fought win. Captain of Strand Road Cormac Coffey , was presented the Healy Cup by the Healy Family. Lily, Kay & Roisin Healy along with Pat’s grandchildren , Cormac and
Alison represented the Healy Family. To mark the occasion, a post-match function hosted by AIB, took place at the Strand Road clubhouse. Invited guests included Eoin Liston, Ogie Moran, many of Pat’s colleagues from the Strand Road Club executives over the years and past president of the GAA, Sean Kelly MEP. Current Club Chairman of Strand Road, Michael Kierns , welcomed the Healy family
