N

othing says pretentious like Sauvignon Blanc (abbreviation - SB). Pronounced, “saw vee nyon blahnk,” the mere word conjures up images of stuck-up wine snobs drinking exclusive wine from crystal glasses. This scene played out in my mind… Pompous middle-aged men in outdated suits, their hefty stomachs straining against shirt buttons in a desperate attempt to escape confinement, sit behind starched white–clothed tables, strewn with long-stemmed crystal glasses, in a stuffy opulent palace. Voluminous drapes, pinned back by thick tasselled cord, frame lofty windows overlooking manicured gardens. The room is bordered by gilded, flamboyantly patterned furniture pieces, while gleaming marble surfaces mirror priceless antiques. Vivaldi’s spring concerto plays discreetly – the only audible sound except the faint reverberations of gurgling and expelling of wine into spittoons while a chorus of pens furiously scribbles tasting notes. With spectacles perched on the ends of reddened noses, their sweating bald heads betray their strain. That vomit-inducing pretentiousness is enough to put any wine devotee off drinking forever. Once you taste SB though, you will discover her genuine charisma which is nothing like this supercilious personality. Erase that nightmare with this… You are lying on a tropical beach. The dazzling yellow orb of the sun at its zenith is tinted bronze by your shades. The ocean is a clear tranquil translucent azure – starkly contrasting the fine bleached white sand. A gentle sea breeze tenderly rustles palm fronds while your ears are caressed by a Bob Marley tune wafting down from the bar. An ice bucket sits beside you, a bottle of frigid Sauvignon Blanc floating in its icy embrace. Tiny frosty drops of water condense on the outside of the bucket, making their way languidly down to the table to gather in an exhausted puddle. You feel idyllically lazy, but your mouth waters in anticipation of a chilled glass of wine. You pop out the cork and pour in one synchronised movement. The luscious wine touches your lips, softly kissing your tongue and… Whoa! We are descending into a “Fifty Shades of White Wine” moment. Let’s move along. Sauvignon Blanc means “Wild white.” I know where you’re going with this, but this has nothing to do with pink fluffy handcuffs and whips. One of the great French varieties, its unique herbal characteristics set it apart. SB thrives in cool climates - even though South Africa isn’t - we produce some fine SBs. The Constantia, Durbanville and Darling areas produce fantastic SB with the cooler Elgin region creating some spectacular wines. The most dominant style is unoaked. These wines are young and fresh - fermented in stainless steel or concrete tanks. Some wine maker’s do barrel ferment SB which imbues a rich creaminess, but this is uncommon. SB is like the chilled out surfer dude of the wine world - a Cape Town surfer though - where the sea is brisk, chilly and invigorating. It’s perfect served ice cold (8°C) next to the pool or around the braai as an aperitif. Anticipate a tangy, tart and refreshing wine with a bracing acidity which is complemented by herbs and fruit. Primary aromas and flavours include herbal characteristics of freshly cut grass, basil, lemon grass and green pepper. On the next taste layer you can expect tart and sour – anything from gooseberries, Granny Smith apples, limes, asparagus and grapefruit. Traces of tropical fruit like melon, pineapple, kiwi, papaya, passionfruit or guava add balance. SB is known for its high acidity, but this should not overwhelm the fruit and delicate herbaceous nuances. Stony mineral flavours are also a hallmark of SB. Think chalk or wet concrete. And before you scoff, go and lick a piece of wet concrete. SB is a versatile food wine which loves fresh seafood, poultry and salads with mild vinaigrettes. The acidity in SB adds zippiness and lifts the food like a dressing does on a salad. As a general rule, let the acidity of your SB match the dish. Overly acidic food overpowers a delicate wine. Goats’ cheese, green vegetables - asparagus, marrows, peas and artichokes (or a salad made with all of these) is excellent. Delicate fish like sole or oysters and poultry or seafood dishes with tangy sauces like mayonnaise are delicious. SB is generally one of the more inexpensive whites, but beware the nasty excessively acidic wines lurking in the budget section! So take a chance on a young, beautiful, innocent SB this weekend and enjoy your own “Fifty Shades of White Wine” moment. I won’t judge.

The new menu at Outrage of Modesty is a tribute to the Japanese photographer Nobuyoshi Araki and the stories and inspiration behind each of the cocktails. Enter award winning mixologist and author Greg Seider, the new creative director at Outrage who hails from New York City and who has, over fifteen years, made a name for himself in iconic bars and restaurants in that city, such as Robert De Niro’s Hudson Lounge, Le Bernardin, The Mercer Kitchen and The Box dinner theatre. Seider, with lead bartender Marius Botha alongside, creates the type of unconventional premium cocktails well associated with OoM, and designs his own syrups and liquors and experiments with unique herbal and fruit infusions. Using only the best quality ingredients, he creates the building blocks for an aromatic end product that is best sipped and savoured at an unhurried pace.

Wikipedia acknowledges that there’s a lack of clarity in the origin of the cocktail and its name. In 1806 an American editor Harry Croswell described a cocktail as “…a stimulating liquor, composed of spirits of any kind, sugar, water, and bitters it is vulgarly called bittered sling, and is supposed to be an excellent electioneering potion, in as much as it renders the heart stout and bold, at the same time that it fuddles the head…a person, having swallowed a glass of it, is ready to swallow anything else”. Cocktails have held their own since the days of the very first whisky ‘Old Fashioned’ in 1833. Today, an excellent cocktail, mixed and blended with the right amount of passion, technique and the finest of elements can be a bewitching experience. O

utrage of Modesty (OoM) on 88 Shortmarket Street in Cape Town is not your average bar. Which is just as well, because I am not fond of average. Since opening in 2015 under the ownership of Alliance Brands who also own the famous House of Machines next door, it has established itself as one of the Mother’s City’s ‘It’ after-dark destinations, a stylish sit-down bar where ordinary Manhattans and Margueritas have been replaced by extraordinary drinks with exotic names like The Reach Around, Breaking the Law and Lions in Londolozi. Suffice to say that a cocktail at Outrage is way beyond the usual, upstaging anything you might have come to expect from the typical. Bland combinations like spirits, water, bitters and sugar have been ousted by ‘ground to glass’ combinations like buchu, fennel, cloves, cardamom, rooibos and cinnamon, bringing nature’s flavours into play and creating sublime drinks.


Finding Fabulous with CT DIVA

INSPIRED BY A PSALM… The newly completed Bosjes Chapel on the farm of the same name is undoubtedly the pièce de résistance of the Boland. From a distance it looks as if Sydney Opera House has relocated to the Breede River Valley and up close the wave of white has imaginations running wild. Architect Coetzee Steyn, based in London with his firm Steyn Studio was tasked with designing a place of worship and locale underpinned by Psalm 36:7, “how priceless is your unfailing love, O God! People take refuge in the shadow of your wings,” a verse that adds poetry to the form. Looking for simplicity, he drew some inspiration from the Moravian mission churches of the 1800’s in Mamre and Wupperthal that dispensed with traditional papal paraphernalia and encouraged a heavenward focus.

T

he undulations of the cast iron roof give the building its fluidity, complementing the curls of ‘holbol’ gables so typical of old Cape Dutch manor houses and in sync with the style of the original Bosjes farmhouse that was built in 1790 and still stands today, beautifully restored. The ripple effect also echoes the peaks and valleys of the nearby mountain ranges and the raised tips on each side reaching up into the sky give the impression of wings in motion. At dusk, the chapel looks like it’s floating, an illusion created in part by two strategically positioned reflection ponds out front and by its slight elevation on a plinth that adds to the sense of weightlessness.

The smooth exterior makes people want to run their hands over powdery looking walls. Floor-to-ceiling windows allow for the shifting play of natural light and frame the dreamy views over the surrounding vineyards and gardens. When designing the latter, Herman de Lange of CNdV landscape architects incorporated water features, pergolas, pathways and atmospheric lighting into an environment encouraging exploration and contemplation. Each space is a subtle reference to Biblical elements or events such as the huge water feature that’s symbolic of the Parting of the Red Sea and the winding walkway up the koppie called Mount Sinai that overlooks the entire property. Seeing the Bosjes Chapel is almost a religious experience in itself. It is a work of art that is an ode to divinity and a celebration of creation. or a young, bright-eyed, 18 year old traveller, I am constantly fascinated with exotic destinations and far off lands with new thrills and marvels to be eagerly unpacked and explored, brimming with possibilities and adventure. As I grasp more and more of our ever expansive world and delve deeper into its intricacies, I am struck and mildly disappointed that many of the most bizarre, beautiful and brilliant adventures which we all desperately seek out, and travel hours, days and months to find… lie right here in South Africa. In light of this I am privileged and exuberantly excited to uncover and share with you some of the most intriguing, places, events and experiences in South Africa - my home, my heart and always my destination of choice.

If you are a trail runner, a hiker or a mountain biker, or an avid explorer of our beautiful country, chances are that you have found yourself beneath the canopies of SA’s many plantations or its neighbouring attractions. These plantations are part of a complex ecosystem, and a sector that supports over a half a million people and supplies us with products we use every day (over and above paper and wood!) Forestry South Africa recently launched an information and illustration-rich website, ‘Forestry Explained’

The products of commercial forests touch our lives in a myriad of ways. “From roof trusses and benches, to paper, packaging and tissue and the cellulose used in food and medicine, fibre from commercially grown trees plays an integral part in everyday life,” says Forestry South Africa executive director Michael Peter. “If we were to remove wood and paper-based products from our daily routines, we would soon appreciate the important function they perform.”

AN INDISPENSABLE SECTOR He adds that there is also more to forestry than planting and harvesting trees. “Thorough research, planning and management goes into keeping trees, and the land on which they grow, healthy and productive. The sector also provides jobs and supports communities.” Add to this the diverse animal and plant species that call forestry-owned land home, and you have an environmentally conscious sector that delivers an array of renewable, carbon neutral and versatile end-products. At a local and personal level, forestry touches people – through the products they use every day without even knowing it – and communities, through education and skills

development. Forestry also has a positive influence on climate change mitigation, provides a sustainable alternative to the deforestation of natural forests and is a renewable source of energy and construction materials.

ONE-STOP GUIDE TO FORESTRY The new portal www.forestryexplained.co.za offers itself as ‘a beginner’s guide to forestry in South Africa’ and caters for users of all ages. It covers the basics of forestry and forest products, and everything from water-use to recreation, pest control, ownership and end-uses. This one-stop resource offers in-depth but easy-to-read content supported by well-illustrated infographics and additional links for those who want to explore the industry further. It is ideal for learners and teachers. Sustainably managed commercial forests should be celebrated for the benefits they bring to our daily life. To do this we need to understand them and the complex ecosystems that they are. Forestry Explained does this. It’s well worth a visit. BOM APETITE: AN ESSENTIAL GUIDE TO PORTUGUESE FOOD This Month Amanda Hardy of Trafalgar, tempts us with Portuguese cuisine, I mean who can resist, and she takes us to Spain for a little Flamenco. Ola!

P

ortuguese food doesn’t have the profile it deserves. However, given its delicious repertoire of dishes, from grilled fish to crispy suckling pig and hearty stews, that’s slowly starting to change. And it’s the wine that’s acting as a pathfinder, with refreshing vinho verdes and punchy Alentejo reds often leading to little satellite dishes of seafood tapas (pesticos) served with rich, dark breads to soak it all up. Here, we look at the spirit that guides and inspires Portuguese cooking, and how to navigate around a country that does things a little differently…

That’s not to say there isn’t a base note, however. Onions, garlic and tomatoes are used in almost all dishes (though especially in seafood stews), with coriander working as the staple seasoning; the workhorse condiment. If other herbs are used they’re not usually spicy (though piri-piris are sometimes used to add some kick – especially with the now world-famous piri-piri chicken!), with the most popular including bay leaf, oregano and paprika.

Historically, the Portuguese have always been a proud DIY people, owning small farmsteads and going out to grow or hunt what they could. This produce usually found its way into the kitchen, where all sorts of family wisdom would be brought to bear. It’s this background that ensured Portuguese food became so diverse, with provincial cuisines establishing themselves not only on what was locally available, but on long tracts of family lore, too.

This homely style of cooking makes itself most obvious in its breads. Made by farmers who sought to make use of the Atlantic Ocean’s winds, the Portuguese made broa-de-milho (thick corn bread), pao Alentejano (a chewier ciabatta) and several other styles whose only real competition in the popularity stakes came from pastry chefs. WHY SPAIN IS THE HOTTEST EUROPEAN DESTINATION With an average of over 300 days of sunshine stretching from the Mediterranean coastline to the Costa Blanca and the Costa del Sol, it’s not difficult to see why all things Spanish ticks the boxes with many travellers. When northern Europe is being deluged or is frozen, you can almost guarantee that the south of Spain will be bathed in sunshine. In general, May and October are considered the best months for travelling, as they’re generally dry and not too hot in most regions.

Another reason to travel to Spain will be to sample the delicious local cuisine. Think paella, the traditional “tapas”, the “jamón serrano”, the “morcilla”, the “tortilla” and so many other delicious Spanish dishes and you’re spoiled for choice. The famous paella is a rice dish originally from Valencia. “Paella,” which means frying pan in Spanish and leftovers in Arabic, is eaten traditionally on Sundays.

THE WINE

There are wine growing regions all over the country, the best-known being La Rioja in the north. Visit Jerez to see the home of sherry and check out the little known vintages of the Canaries. Spain has produced worldrenowned painters ranging from classical Velazquez to surrealist Picasso. Madrid has some of the finest art museums in the world.

THE FLAMENCO

Undeniably, Spain is famous for its music styles particularly the Flamenco. Move your body with grace to the tune of Spanish music. It delights the heart and frees the mind of troubles as you express yourself on the dance floor. Fiery and sensual, it’s no surprise that Flamenco is one of the world’s most instantly identifiable dances, with its swooshing dresses, thunderous looks and fluid improvisations. Despite its passion, drive and drama, only few understand what flamenco is all about. Here, we offer up some of the history and traditions behind this mysterious dance. Flamenco, which is made up of three main elements: compás (rhythm), song (cante) and dance (baile), arrived with the Romani people when they entered Spain in the late medieval period. Originally set to folkloric rhythms of hand-claps known as “toque de palmas”, some dancers prefer to keep doing it the old way, while others prefer to boost their performance with lyrical guitars and frenzied castanets. There must always be song and this comes in three forms: jondo (grand), intermedio (intermediate) and pequeño (small). Each musician will have their favourite, but jondo always involves intensity and profundity; intermedio is more conversational and pequeño is light, fun and exuberant. Despite the theory, you don’t need a textbook to appreciate this art form. It’s almost everywhere in Spain, from gitana dresses drying on balconies to neon lights of athletic dancers in bar window, not to mention the souvenir stalls. At the heart of it all is Duende, the spirit of evocation. One part intensity, two parts struggle and darkness, this zeal feeds the flamenco fire and inevitably touches the hearts of its spectators. Those seeking the real crème de la crème of flamenco should look no further than Seville. While many are happy to see the dance at bars or cafés cantantes anywhere in Spain, every connoisseur knows that Seville is the place to go. Especially its tablaos, which are small, specially-designed flamenco theatres. If you do end up falling in love with flamenco (as most do), don’t expect the performances to be the same. Just remember: flamenco is emphatically an art with improvisation at its centre. Tekkie Tax raised more than R22 million so far and the impact on ground level is remarkable. Kwathando Care Centre said “We bought a table tennis set for children with autism” and Merewent Cheshire Home said “We used our Tekkie Tax donations to purchase toiletries for our disabled residents.” Freestate Care in Action bought bread for poor and hungry children at school and the SAVF Middelburg Social work office were able to buy groceries for their needy clients. The list is long and these are only a few examples of how the donations were utilised in the past.

There is really no excuse to not participate in this year’s campaign. The Stickers (R10 each) and Tekkie Tag shoelaces (R35) are available from all Clicks, Toys R Us and Babies R us stores. There are also more than 250 participating non-profit organisations selling these items and together they aim to convince every South African to be part of the fun. bservatory is an arty district in Cape Town known fondly by the locals as ‘Obs’. Here one can enjoy the creative juices of various types of people from diverse cultures. In this bohemian area, one can be entertained by live music, unusual restaurants, happy-go-lucky bars and unique art from the residential artists. Reverie Social Table, a proudly South African table d’hôte style eatery is in this zany neighbourhood. Julia Hattingh, chef patron and owner of Reverie Social Table, focuses on social dining. Her extensive culinary knowledge acquired through her travels locally and abroad; have allowed her to work with leading chefs in the business, having influence on her contemporary cuisine. Spending an evening with Chef Julia, at Reverie Social Table, at her 18-seater table, is an absolute treat. Recently, a friend and I, took pleasure in the culinary treasures of Chef Julia’s offering of a five-course meal, which she exclusively creates for her guests. On arrival, we entered the restaurant to be delighted by its stylish, chic and upbeat interior, the table for 18 was

immaculately laid and inviting - to take a seat is surely to become lost in what was to come next. We were ushered through to the back courtyard, which was abuzz with the other guests, some whom came from abroad and others local, who were languidly sipping on the chosen Cape wines, which would also be paired with the evening meal. It was a merry group that was seated at Reverie’s Social Table that evening. The meeting of people from diverse places was greatly entertaining, and conversation moved from initial introductions to chats about deeper issues around the world and here in SA, their travels, dreams and the delicious food and wine we were savouring. Chef Julia was an exceptional host, and she explained each flavour-filled, exquisite dish that arrived, whilst the sommelier described the outstanding wines that were being paired to the meal. The dining experience from beginning to end was ‘avant-garde’. Reverie Social Table is certainly a fabulous culinary and dining experience. Chef Julia also offers lunch time dining, with the plat du jour, which is usually inspired that morning. Whichever you choose to experience, Reverie Social Table will have a very special place in your memory!

EXPERIENCE MON CULTURE THROUGH TRADITIONAL SONG AND DANCE. Mon people are considered to be the descendants of Indochina’s ancient civilisations. Visit the Mon State Cultural Museum or temples during the Moon festivals, as Mon dancers perform in beautiful traditional Burmese attire.

WASH AWAY YOUR TROUBLES AT THE Thingyan festival 14 to 16 April. Thingyan is a Water Festival which takes place at the end of the hot, dry season, and celebrates the beginning of the Myanmar New Year. Locals splash water on one another to wash away the sins and bad luck of the previous year and to offer blessings for the year ahead. INDULGE IN LOCAL STREETSIDE TREATS. Mohingya contains noodles and a range of vegetables that is traditionally eaten at breakfast time, and the street food stalls are packed with delicious treats. Grab a cup of sweet tea and an ‘E Kya Kway’ – a light and airy deep-fried bread – or reward yourself with a Bein Mont, a rice flour pancake, topped with white poppy seeds, almonds and fresh coconut, a firm favourite. It can also be washed down with a cup of sugar cane juice.

HIKE TO THE TOP OF DIAMOND HEAD CRATER Diamond Heat crater is over 3,500 feet in diameter with a 760 ft. summit. The crater, originally called “Le’ahi,” translated “brow of the tuna”, got its name Diamond Head over 200 years ago by a British sailor who believed there were diamonds within the head of the crater. Starting in the middle of the crater and climbing 500 ft. up the side, this is a fairly steep but easy hike, that offers breath-taking views.

MOUNTAIN BIKE MT HALEAKALA VOLCANO A circumference big enough to fit Manhattan, this 3,000’ deep crater is seven miles long, two miles wide and 21 miles in circumference. And what better way to conquer this crater then by bike. Situated in East Maui, the volcano dominates the mountain skyline with panoramic views, sublime sunrises and rare fauna and flora. It’s also known as one of the best downhill bike rides in the world.

SNORKEL THE SHORES OF KONA With clear warm waters, low tides and miles of magical coral, Kona is an ideal snorkelling spot. Situated on the west side of the Big Island, the shores are home to the highest concentration of sea life in Hawaii - large parrot fish, jacks and rock sitters, manta rays and even Hawaiian Spinner Dolphins to name a few. Two Step at Honaunau, ealakekua Bay and Kahalu’u Beach Park are just a few of the many recommended snorkelling spots.

THE MUSICAL AT THE FUGARD THEATRE IN APRIL! Eric Abraham and the Fugard Theatre in Cape Town present a brand new Fugard Theatre production of Funny Girl – The Musical. This international smash hit, semi-biographical musical, based on the life and career of Broadway star, film actress and comedienne Fanny Brice features some of the most iconic songs in film and theatre history, including “People” and “Don’t Rain On My Parade”. This musical classic tells the fascinating and bitter-sweet story of Fanny Brice whose vocal talents and comedic ability see her rise from a Brooklyn music hall singer to Broadway star, and her tempestuous relationship with gambler Nick Arnstein. A stellar all-South African cast has been secured for this iconic production that first opened on Broadway on the 26th March 1964 at the Winter Garden Theatre and enjoyed a recent sold-out revival season on the West End at the Savoy Theatre. The original book was written by Isobel Lennart, music composed by Jule Styne and lyrics written by Bob Merrill.
