FOCUSING ON TRADITION This is our second magazine ‘The Taste of Degens’ and my first time writing the foreword in my capacity as director. I don’t need to tell you that Degens has specialised in developing marinades, grill mixes, herbs, spices and sauces for the traditional fresh food specialist for 80 years. More importantly, on 1 January 2014 we became an independent company operating under Intertaste. For you, this means the following: total focus on the traditional fresh food specialist from the entire Degens team. Why? Because it’s what we’re good Aart de Geus

We are brimming with initiatives! Our enthusiasm is reflected in this second magazine. With three inspiring themes: ‘Familiar Faces, ‘Summer Fancies’ and ‘Quick and Easy’, we show that tradition can go hand in hand with innovation. From a Belgian satay to a piña colada brochette: plenty of inspiration for the coming period, I feel! On page 16, I would also like to introduce you to our team. Brochette / Belgian satay INGREDIENTS

Tip from Chris: If your customer rests the ribeye in aluminium foil for a few minutes after cooking, it will be wonderfully juicy! Marinate for 12 hours; this will improve the taste and tenderness of the meat.

Peel the onions and cut into wedges. 4. Thread the marinated pork on a skewer, alternating with the onions. Tip: For extra flavour, add 40 gr/ kg Ketjap manis (7037163). During cooking, this sweet soy sauce gives the meat a lovely dark colour.

Hawaii burger INGREDIENTS -- 25 gr/kg Premium Hamburger Seasoning Mix (7036480) -- 1 kg lean beef -- pineapple rounds, drained -- cocktail cherries PREPARATION 1. Slice the beef and freeze briefly. 2. Grind the lightly frozen beef through the 8 mm disc. 3. Add spice mix and mix lightly. 4. Then grind through the 3 mm disc and mix again lightly. 5. Shape the hamburger as desired. 6. Place the drained pineapple slices in the burger form. In the middle of the pineapple, place half a cocktail cherry. Top with the meat portion and press down. 7. Garnish with parsley.

Tip Our hamburger mix has been a popular product for years. Over the years, this mix has changed to meet the changing needs of the consumer: free of allergens and MSG.

A butcher’s son with 25 years’ commercial experience in different areas. Geert manages the team and enjoys creating chances and opportunities for customers.

With 18 years’ experience as a butcher and 2 years as a commercial man, Henry is very familiar with the other side of the counter. He uses this experience to provide sound advice and solutions.

Ernst is down to earth and happy to help you make good choices. Has been working for Degens for the past 3.5 years with a hospitality butchery background. Your success is his success.

With 30 year’s experience as a butcher, he has a wealth of knowledge and experience. John is happy to help his former butcher colleagues in this challenging and fine profession.

Arie worked in the butcher's segment for 12 years and has his SVO qualifications. Arie loves to share his knowledge and skills!

Cédric qualified as a chef and did evening classes in Butchery. Add his commercial experience and you know that Cédric will give you good advice.

Yacine is the youngest of our representatives. She has experience in the food industry and has been chef in her own restaurant. Practical experience is still fresh in her mind.

With his butcher’s qualifications, 23 years’ experience at Degens and his motivation, Yves is a barrel of knowledge. He provides added value for the region with his knowledge and skills.

The only woman regional representative has over 20 years’ experience in the food industry. With her chef’s background, she can give you excellent advice.
