Ingredients 1 pound boneless, skinless chicken breast, cut into strips ¼ cup pesto ¼ cup mayonnaise 3 Tbsp. finely chopped red onion 2 Tbsp. extra-virgin olive oil 2 Tbsp. red-wine vinegar ¼ tsp. salt ¼ tsp. ground pepper 6 cups mixed salad greens 1 pint grape or cherry tomatoes, halved

1. Sprinkle ¼ tsp. salt over chicken breast. Place chicken in base of

SmartSteamer base over water tray, cover and microwave on high power 8–10 minutes or until juices run clear and internal temperature reaches 165°F/75°C. Lightly shred with fork. 2. Combine pesto, mayonnaise and onion in a medium bowl. Add the chicken and toss to coat. 3. In the Quick Shake Container add oil, vinegar, salt and pepper, shake to mix. 4. Add greens and tomatoes to a medium bowl, add vinaigrette and toss to coat. Divide the green salad among 4 plates and top with the chicken salad.
